ho doesn't love desserts?

Whatever your sweet of choice is, it's safe to say everyone has a sweet indulgence that they are drawn to. It could be a cupcake, it could be regular cake, it could be a cookie, fudge, ice cream or anything in between. Regardless of your favorite, it's safe to assume that desserts are one of the few constants in our world. Death, taxes, dirty laundry and desserts. Isn't that how the saying goes? No? Well, it should... When I think of desserts, my mind immediately gets taken to ice cream. Truthfully, it is one of the most dangerous vices in my life. There is very little separating me from a trip to Silver Lining for some of their amazing homespun ice cream. In some cases, all it takes is a casual mention of ice cream and I'm hooked on the idea until I get it. I'm sure all of you can relate to that feeling with your favorite dessert. Ice cream is just the ultimate sweet for me. The winter can sometimes become a dreary few months here in Fargo-Moorhead. With that in mind (and mix in a pandemic too), we thought this month would be a great time to sweeten up the winter. We were so lucky and privileged to be welcomed into various establishments around the metro to place a spotlight on their sweet treats. The goal? To get you, our fair reader, to indulge in your favorite sweet this month. We hope you do just that this February. Embrace the sweetness this month!

Everyone loves a good underdog story in sports. There is just something about an athlete or coach who has to work extra hard to find success within the field of competition. North Dakota State is not without those figures. he notion of starting a custom cake decorating business had never once occurred to Jamie Duray. Like most people, she grew up frosting Christmas cookies with her family and helping out in the kitchen when needed. However, basing her whole life and livelihood on custom cakes and baked goods was never in the realm of possibility. It was not until baking and custom cakes began booming thanks to various television shows did Duray think this could be an industry for her. "I actually fell into it because of the craze with all the TV shows, and I was just getting ready to get married at the time. I was like 'I think I could make our wedding cake,' but I couldn't, it was horrible. I've always been a very creative, artsy person so I learned that I was not going to do our wedding cake, but I'm not going to let that stop me. I kept trying. All of a sudden, my friends and family started asking for cakes. It became just kind of a side hobby for a long time," Duray said of her foray into the cake world. "Then, I got my first request to do a wedding. You have to be licensed and all this kind of stuff to do weddings. That is when I hooked up with Square One and it just kind of snowballed from there. As soon as

I was licensed and had a commercial kitchen, it just grew and grew and grew. Then I quit my job and decided to do this full-time. I was turning down more orders than I was able to take. So it was just the right time to take the leap." That leap turned into the best decision Duray could have ever made. Not only did she do wedding cakes, but she was also tasked with children's birthday cakes, baptisms and other important life events. The influence from cooking television shows also allowed Duray to hone her baking skills. While it may not come through in her finished products, Duray is almost entirely self-taught. "I learned a lot from watching cooking shows and just watching YouTube videos. If somebody wants a specific design, I usually have no idea how to do that. I also have a huge community of cake and cookie decorators via Facebook," Duray said of her baking education. "That's kind of what the whole community is about, just teaching each other because most of us are just stay-at-home moms that want to have a hobby." For Duray, becoming a stay-at-home mom was an important piece to her becoming a full-time cake

decorator. That coupled with creating her own schedule has been a revelation for the mother of three. "One of the main reasons that I decided to even do this and quit my day job is that we have three kids. One is an adult and grown and she is 21. Then we have two younger kids and both have autism. Being able to revolve my life and my schedule around them has really made this the right choice for us," Duray said. With solid name recognition, Duray and 457Cake have become one of the most reputable names in the FargoMoorhead area. From corporate cakes to a children's birthday party, Duray recalls her most rewarding moment throughout the 457Cake's existence. It involved a nine-tier cake, but there have also been other instances of last-minute changes. "I've shown up at delivery and they tell me, 'Oh, by the way, this fivetier cake is going to be hanging from the ceiling.' I look at them and say you are crazy," Duray said.

I love seeing kids' faces when you hand them the cake, that just gives me chills. I just love that," Duray said. "I love being able to just play with my work. Even if it is making little characters. I mean, it's just fun. I'm sure there are lots of people out there that have fun jobs, but I get to be a mom and have a fun job."

The baking world has begun to shift toward cookies too. Duray has added that to her repertoire on top of building and customizing cakes. Much of her corporate work comes in the form of custom cookies. It's following baking trends that have helped Duray gain more business over time. "Businesses love to be able to hand something out that isn't a key chain, so that's been fun to build those relationships through cookies. We just did a big cake for Chick-Fil-A that was fun where they wanted realistic looking food on the cake, but it's dessert, right? I do enjoy the 3-D cakes even though I say that I hate them. I love them when I'm done with them," Duray said about trends. "That's the thing with custom work, you can kind of do whatever you want to. I always have a disclaimer and it's just because you sent me a picture, does not mean it will look identical. I don't love to copy. A lot of people feel like they want something identical to what they have already seen. I always ask, 'What can we do differently? It is a texture on the cake? Or can we do different color?' You know, whatever. We try as a community not to copy too much but cakes can get so trendy." Whether it's cookies or cakes, the fact that Duray

Paisley

&Dash A long-standing dream has come full circle for Paisley & Dash owner Sara Lien.

W

hen people across the world create a business plan, it usually comes in the form of a "lightbulb" moment. One day, they wake up with a great idea and begin their plan of action. While it is by no means easy, it is a somewhat expedited process in many ways.

Sara Lien had the vision for Paisley & Dash long ago. She knew what she wanted the business to look like, what she wanted to build it on and what type of brand she wanted to create for the business. Rather than immediately act upon it, she tucked it away for some time. Much of this had to do with an already established career in financial advising. So this grandiose vision for what would eventually become Paisley & Dash remained in her head. Yet, it always found its way to the forefront of Lien's psyche. This led to a tough decision. Would she realize this vision in her head, but risk a well-established professional life? Or would that creative idea remain in her head forever? Luckily, for her and all of us, she decided to act. The ensuing action became Paisley & Dash. The

company, named after Lien's two dogs, Paisley the Malti-Poo and Dash the Maltese, is centered around custom-made cupcake jars tailor-made for any special moment. Officially created in early 2020, Lien has spent the last year building up the e-commerce business and looks to continue building the Paisley & Dash brand. "Making that decision was the hardest of my life. After working in the financial services industry for 15 years, the tug-of-war I felt in my head and heart to walk away from that, and follow my dream by jumping into an industry that couldn't be more opposite, was something I thought long and hard about. I always jokingly say I went from a suit coat to a chef's coat; and I've often thought about how I used to live and die by the opening and closing bell of the NYSE and now I live and die by my oven timers," Lien said of her big jump. "But my former career trickles over into Paisley & Dash every single day, whether its time management, nurturing relationships or growing our customer base. There are definitely similarities that help shape the decisions I make when running Paisley & Dash, based on my experiences as a financial advisor." While Lien knew exactly what the Paisley & Dash brand would be, she was unsure what the business would do. It was not until she began posting various baked goods on Facebook did the idea come full circle.

"I didn't know exactly what it was going to be, but I'm going to have a Paisley & Dash something. Just shortly after that, I would post creative projects that I had done on my Facebook page. Whether it was baking, home DIYs or whatever. I really put myself out there on Facebook. Somebody that I had known had asked me if I would make him some baked goods. Something that looked good and presentable that he could send to prospective clients," Lien said of the beginning of Paisley & Dash. "For baking, I didn't have any formal training, but I knew how to make things look pretty. So I took some time to put together a logo and a name that I already had. I also already knew the colors because I loved black, white with a



off. I think prioritizing was a big challenge initially," Lien said. "I mean, even shipping, right? That's a whole industry that I've been so naive to before I started this. I needed a lot of sit down talks from the people at FedEx to help me understand that side of things. You really have to find your people. I had to figure out what tasks I could personally handle, but then proactively find the right people, resources and partners, like my shipping partners, website developers and other e-commerce resources, to help with the rest."

From a financial advisor to a business owner, Lien had to take it upon herself to learn every aspect of the business. With the plan to ship her cupcake jars around the country, shipping became a language she needed to learn and learn quickly. That, coupled with other challenges, made 2020 a learning year for Lien. "Even for me, a beginner small business owner like I am, there's so much that comes at me because as a creative person, your mind just never stops. You're in this creative world and it just never turns

The cupcake jars themselves are a perfect product for those looking for a new, fresh custom item. Not only can businesses get their logo placed on the jars, but they also make great gifts for anyone. "Something special and unique to Paisley & Dash is the ability to customize each jar. Whether it's putting a company logo atop each jar to send to your customers or a birthday theme for your 5-year-old's birthday, it's very customizable," Lien said of the cupcake jars. "In the extremely personalized world of today, it's a neat niche. Of course with it being an e-commerce bakeshop, the ability to send a very personal gift to anyone, anywhere in the country is special too." The jars have become all the rave too. Lien has constantly gotten positive feedback from customers clamoring for more of her cupcake creations. "People are so dang wonderful. I mean, they go on Facebook and Instagram and post pictures, or even take it upon


themselves to video themselves opening the jars. Every bit of feedback is just so rewarding," Lien said. "When I see how happy people are when they get their custom gift box of cupcake jars, it makes my heart happy! It is invaluable. I just love the impact that it has." While Lien operates out of Square One currently, she would love to see the business grow to the point where she could have her own space. "I see there being a kitchen area, and then also shipping and receiving. It’ll be an official Paisley & Dash Headquarters. Something I’m mindful of, is that while this is growing, it's a highly personal gift and concept, so I want to make sure that I'm trying to build it in a scalable way, while maintaining the quality that’s expected at Paisley & Dash" Lien said. Knowing that Sara Lien was able to create Paisley & Dash, it is not far-fetched to believe a Paisley & Dash headquarters is on the horizon. The business itself was an idea years in the making and now that it has come to fruition there are few limits on where Paisley & Dash could go in the future. It's been a long time coming. A lot of people have asked me if I regretted not starting sooner. I will forever say no. Because I waited so long for this and dreamed of it for so long, I appreciate it more than you can ever imagine, while never taking it for granted. I love the fact that I have my financial

services background. It taught me so much about building a business and relationships. I wouldn't have had it any other way." Lien said. “15 years as a financial advisor was a wonderful, beautiful chapter. And this next one? Buckle up."

Mehl's Gluten

Free

Bakery An unfortunate family illness has opened the door to serve community members with dietary restrictions.

M

ark Mehl, his siblings and other members of his family are in a group with nearly three million other Americans. They suffer from celiac disease, an immune disease that requires the absence of gluten in a person's daily diet. Not doing so can lead to severe small intestine damage over time. Mehl, his four siblings and 13 other members of his family suffer from this disease. Each Mehl has learned of their celiac disease in the last 12 years. This leads them to a gluten-free diet. Gluten-free diets have become more and more prevalent around the world in the past decade. Mehl and his brother Paul discovered that finding high-quality gluten-free products was difficult. On top of that, they could not find anything that tasted even remotely edible. So, they used that as an opportunity to create Mehl's Gluten-Free Bakery. Using their own distinct brand of flour, the Mehl family's bakery has become a haven for those with dietary restrictions. "We just figured 'hey, it's an opportunity for us to have high-quality, gluten-free food.' We know what it's like to go to the grocery store and pay a premium price for something that's not very good," Mehl said.

"We try to do our best to keep all the prices fair. The ingredients cost more for us and so we figured we would come up with our own flour, and then all of our products become originals."

marketing and advertising budget. Those are some of the challenges that we're trying to figure out better ways of getting the message out that we have this great product."

Creating their own brand of flour was the brainchild of Mark's brother Paul, who was able to create a high-caliber product from which all of Mehl's products are made. "When he puts his mind to something he usually can come up with something. That's just something he really focused on, is the fact that because we had a medical condition and that we essentially were getting taken advantage of by corporate companies because of that," Mehl said of his brother's flour creation. "We figured we'll start something and see what happens with the goal of giving people some normalcy back in their eating. Sure, it's gluten-free, but we believe that you can have a gluten-free food and it can taste as good, if not better, than regular food."

Those challenges also blend into where Mehl's hopes to go in the future. They hope to be able to massproduce their flour and get their product out across the United States and into bigger retailers too. Mark Mehl is confident in the product, it's just getting the right pair of eyes on the product.

As food allergies and dietary restrictions have become commonplace, Mehl's have had to shift their food beyond just gluten-free. "A lot of the time people have more than just the gluten allergy. They have type one diabetes, like four or five of us have type one diabetes, or they have a medical condition," Mehl said. "Since we've opened, we've changed, we've evolved to the point that I would say four out of five items are going to be dairy-free as well. We never used to have any vegan options, now we have vegan options too." Mehl's Gluten-Free Bakery did not open up its retail shop until 2015. The family business officially opened in 2009 just making their unique brand of flour. Now, with a retail shop offering everything from cupcakes to muffins to even pizzas, they were on track to open a second store before the COVID-19 pandemic. In fact, Mehl says 2019 was their most profitable year to date with 2020 shaping up to be even better. "2019 was our best year ever. We had grown about five to 10 percent every year, and that trend was continuing even last year. Then COVID hit. Just like several other businesses, we got hit pretty hard. We've been able to recover, but we honestly feel very thankful and very happy with where we are," Mehl said of the challenges of navigating the pandemic. "We honestly believe we have the best flour in the whole market and some of the best products in the whole market. The challenge is we don't have the equipment to mass-produce it. We don't have a huge

"Our main goal essentially forever is using the flour as a base for everything that we do. That's where the magic happens. Our goal is to get that out on a national level. We want to get in with some of these companies that we really think could benefit. It would benefit us and them and customers around the country that don't even know about us at this point," Mehl said. "We believe that even if one of the bigger guys saw the benefit of using the flour it would be huge. Even if we can't get to the point where we can mass-produce it. If somebody sees the positive impact this could have on people and they see that they also could financially benefit from it as well, it could be a win-win situation for everybody."

et ready for locally made gourmet puppy chow to knock your socks off as your new favorite all-time snack! We met Clayton Cottman this last year and have now discovered our new obsession: Uncle Charlie’s Red Velvet Chow.

Tell us a bit about yourself: Well, I grew up in Washington, D.C., and moved to North Dakota about five years ago. My background is in the arts. Performing arts, culinary arts, etc. I’ve known for years that I wanted to create a successful business model for myself, my family and my community. Now that I’ve done that, to be honest, I don’t have time for a lot of hobbies. My dream is actively coming true, so I try to focus most of my attention on that. I do enjoy trying new foods though, as well as watching good documentaries. But mostly, I’m learning about business and experimenting with new flavors and ideas. What you create under Uncle Charlie's Gourmet Snacks?

Uncle Charlie’s Gourmet Snacks makes five flavors (Banana Split, Brownie Truffle, Cotton Candy, Orange Creamsicle and Red Velvet) of a gourmet spin on what is known regionally as “puppy chow.” We start with rice squares, coat them in gourmet chocolates and our proprietary blend of flavors, then toss them in powdered sugar. Each batch is handmade right here in Fargo and we take great pride in that. We are

also releasing a line of Charlie’s Chocolate Crunch Bars this fall 2021; they’re going to knock your socks off! Tell us where your name came from? “Uncle Charlie” was actually my greatuncle, Dr. Charles Carter, Ph.D. He led a very fascinating life — one of the first black clinical psychologists in the nation. A member of the famed Buffalo Soldiers of World War II, he went on to earn his master’s degree, then doctorate; became a Howard University Professor; and was eventually appointed to head several national psychological and mental health government agencies including the Vocational Rehabilitation and Mental Health Administrations of Washington, D.C. His wife, my Aunt Thelma, was the sweetest, kindest lady. She made the best cakes in the entire neighborhood. People would make any excuse to stop by for a slice, but everyone knew that her famous cheesecake was reserved for my Uncle Charlie. I do my best to recreate the feeling that I imagine Uncle Charlie must have had every time he ate a slice of that cheesecake; the exclusivity of it, the love that went into making it.


Your personal favorite flavor you've created so far? Orange Creamsicle. There’s something about the way the white chocolate, orange and vanilla come together that makes me feel like it’s summer, even in the middle of a blizzard. What was your first experience with puppy chow? I hadn’t lived in Fargo long when a co-worker invited me to his Super Bowl party. I didn’t know many people in town and I figured I could meet some new friends. We were watching the game and passing around snacks—the usual chips and salsa, buffalo wings, that kind of thing. Then someone handed me a bowl of these powdery squares and I couldn’t put them down! I asked what it was called and he said “puppy chow.” I was immediately hooked. How do you determine the next flavor you'll release? I study snack industry trends and try to keep an eye on what is popular. The biggest factor, though, is feedback from the local community. We are getting ready to launch our two most-requested

flavors to date, Peanut Butter Cup and our Special Edition NDSU Bison-inspired Key Lime. Both will be widely available in spring 2021. But can you keep a secret? Our Key Lime flavor is currently, secretly available at the NDSU Bookstore. What is your favorite thing about having your own business? The best part about having my own business is using my creativity to serve my community in a tangible way. What is the most challenging thing? The most challenging part is being the face of the brand, and remaining confident; knowing I don’t have all the answers. I’ve been very fortunate to have an excellent mentor (and business community in general) that I can consult with when I have questions, and that has helped immensely. What is a word that best describes you? Driven. I am not the type of person who does things halfheartedly. I jump in with ten toes. I eat, sleep and breathe Uncle Charlie’s Gourmet Snacks and plan to continue

until people all over the country are enjoying Charlie’s Chow. What advice would you have given yourself 10 years ago? A decade ago, I was working in food service, dreaming of the day when I could start my own business. I would tell my younger self to push through and focus on the elements of the job I enjoyed — the opportunity to turn a simple dish into something beautiful, the interplay of taste and texture — and know the rest was temporary. I’d tell myself that one day, all of the hard work would pay off with still hard but different work, work that I was doing for myself. Where can people find your work? COVID has taken a toll on everyone, and small business owners have been hit especially hard. Opening in the midst of a

pandemic was never the plan. We had several trade shows scheduled, which was the main way we intended to introduce our product to a larger audience. Instead, we have focused on our direct-to-consumer sales and growing our retail partnerships. Sir Innocent Nsengiyumva? Habari Gani! During this freezing February, I wanted to talk with someone who could do two things while sharing their story: irradiates warmth with their contagious smile and regale us with tales of a region where it is warm in February :-)... I think I found the right person for this ice melting task: Allow me to introduce you to Sir Innocent Nsengiyumva a third-year undergraduate at Concordia pursuing a career in healthcare. He aspires to one day serve others as a Physician Assistant proving care in underserved areas in the U.S. and globally. When he was 7, Innocent and his mother Meneliva immigrated to Fargo from Tanzania. His goals and motivations revolve around family as they are very central in his life. He wrestled for Concordia his freshman year but is now involved on the residence life team and a member of a few select campus clubs. In his free time, Innocent likes to be outside, spend time with family and friends, and practice his Spanish at local Mexican restaurants in town! Where do you call home? I consider "Home" to be a place where I am surrounded with love, connected with its people, earth and a place in which I have a sense of belonging and purpose. Fargo is a special place to me. It has been a place with a lot of "firsts" for me; first room, first bicycle, first TV, first car, first friend from (Liberia, Bosnia, and many other cultures from around the world). I have learned here that it is important to find "your people." People that understand you and people you can always rely on. We have been blessed with so many wonderful people in our lives and they are what have made this place home.

The story of your passion for traveling... I think everyone loves to travel, or at least I would guess, so I'd say I am no different in that sense. I think my passion for traveling comes from being able to meet new people and create new memories. When I get the opportunity to travel, I am transformed into a more adventurous, outgoing and confident version of myself. I seek to build as many connections and create as many lasting memories as I can. Traveling makes me fearless, I put down my guard and become free to people and experiences.

Why should people care about worlds outside of the Midwest?

What is your vision 2030? Where will you be and why?

What are some misconceptions or clichés of your country's region? A misconception that pains me to hear and one that I would like to open people’s eyes to is the misconception around Mexico along with the stereotypes about Mexicans. There is a widespread belief that all of Mexico is extremely dangerous with lots of crimes and drugs. Well, like the U.S. and other large countries around the world, there are regions and neighborhoods that are unsafe. However, overall, it is a safe country with amazing people. There are millions of people who will never experience the culture and beauty because of the negative stereotypes that they have.

How was is it transitioning from high school to Concordia?

What did you learn growing up in between many cultures that you can apply in Fargo?

I was accustomed to navigating things on my own in high school so when I got to college things were no different. I wrestled during my first year and that helped me stay organized and disciplined with my schoolwork. The most effective motivator and source of inspiration however has been my family. Whenever I find myself struggling to find the motivation or tempted by friends and distractions, I simply remind myself why I am here, why I am doing it and that I am not just doing it for myself.

I learned at a young age from my mother and family to always respect and care for others. In many African cultures, building community and caring for others are core aspects and they serve as values that I strive to achieve in my everyday life. Here in America, I have learned the importance of celebrating individuality in addition to embracing independence. Initially, these two ways of life clashed but in the end, I came to integrate both. Both cultures have allowed me to pursue my own interests and passions in life. Each decision and

Cherishing family recipes

T

his book has seen some things. There are some pages with creased edges. A drop of liquid landed there making the writing a bit hard to read or maybe even illegible. Some pages are just barely hanging on; a piece of yellowed tape keeping them together. These are all signs this book has been well used and referenced. A book of handwritten recipes means something.

Before AllRecipes, Epicurious, New York Times Cooking and the endless blogs online, a recipe had to be tried and true before being written in the family recipe book. That means it was either shared by a loved one, a trusted friend, copied from a cookbook or magazine after being tested, perfected and determined it made the cut. This made it worthy of a page in the book and the use of your best handwriting. I remember looking through recipes written by my family members and struggling to read their swirly cursive writing as well as procuring some of the ingredients.

Many referenced brands that have long been gone from the grocery store shelves. Fortunately, in this land of abundant options, alternatives are usually quite easy to find. At least adequate ones. Though the original writer will tell you that using a different brand creates results that are not quite the same and have ultimately altered the outcome.

Sometimes I feel as if they left little bits out so no one could ever make it exactly like they did or do. These secrets were kept close to the heart. For some, a family recipe is sacred and not just for anyone’s eyes. It makes the preparer special, needed and so that no one else can make it the way they do. This may also be in their procedure, their familiarity with how to fold, just when to stop and the eye to detect that perfect level of golden brown before letting rest on the kitchen counter. I love this aspect of family recipes. If you have a family recipe book, be sure to cherish those written pages. Protect and preserve them. Select a few


recipes you’ve never made before. If the writer is still with you, ask them questions as you walk through the steps with them. Prepare them with patience and appreciation. If you don’t have such a book in your family, you could start one. These recipes don’t need to be complicated. Simply tried and true will do. I think of my mother’s homemade chicken noodle soup. I’ve made it countless times in adulthood but it never turns out like hers. I may never know the secret and that is OK. It makes a visit even more special. And now, I share with you a family recipe that is simply tasty, sweet and has been passed down through the generations. A true Midwestern classic. My grandmother’s Lemon Love Notes.

crust:

• 2c. Allpurpose flour • 1/2c. Powdered sugar • 1c. Salted butter, softened

filling:

• 1/3c. Allpurpose flour • 6 Eggs, room temperature • 2-1/4c. Sugar • 3/4c. Freshly squeezed lemon juice (3-4 lemons depending on size) • 1-1/2T. Lemon Zest • Additional powdered sugar for dusting

Instructions • Preheat oven to 350F and grease a 9x13 baking pan. • Mix 2c. flour with the powdered sugar. Cut in the butter until it resembles pie dough consistency. You can do this with your hands, a fork or a pastry blender. The mixture should resemble grains of rice. • Firmly press the dough into the bottom of the pan and bake 15-20 minutes until a light golden brown. • While the crust bakes, whisk together the 1/3c. flour, eggs, sugar, lemon juice and lemon zest until well combined. • Pour the mixture over the baked crust. • Bake the bars an additional 20-25 minutes until the lemon topping has set, with little to no wiggle in the center. • Cool completely and dust with powdered sugar. Cut into bars and store in the refrigerator.

However, research shows that I should probably be prescribing dark chocolate bars to accomplish my mission. Chocolate is made from the seed of the cacao tree. The nibs at the hearts of the seeds are ground and liquefied into the pure chocolate form, chocolate liquor. The liquor is separated into cocoa solids (the nonfatty component) and cocoa butter (the fatty part) which is bitter and chalky on its own. Cacao creates health magic via components like

theobromine and powerful antioxidants called flavonols. But it needs some fat and sweetness to make it edible. Dark chocolate is much better from a health perspective than its sweeter relative, milk chocolate, and most research studies use dark chocolate. Yet, even dark chocolate can be high in calories, so eat in moderation, up to four ounces per week. So what can chocolate do for you? 1. Healthier Hearts. Dark chocolate has anti-inflammatory properties, which decreases cardiovascular risk. It’s also associated with lower blood pressure and lower LDL “bad” cholesterol. 2. Fewer Strokes. A Swedish study found a 20 percent reduction of strokes in women who ate 1.5 ounces of chocolate once or twice per week (about the size of a Hershey bar) compared to another group who had less than one third an ounce. 3. Weight Loss. Dark chocolate seems to reduce cravings for sweet, salty and fatty foods. It also contains enough fiber to help consumers feel fuller longer, reducing food intake and helping with weight loss in the right circumstances. 4. Decreased Diabetes. A study done in Italy in 2005 suggested that chocolate improves insulin sensitivity, which may minimize risks for diabetes. 5. Better Skin. Flavanols in chocolate can decrease sensitivity to UV radiation, protecting from sunburns and future wrinkles. Don't throw away your sunblock yet because it should still be part of your daily routine. 6. Lose the Cough. Theobromine in chocolate can soothe the vagus nerve running through the chest. This nerve can be responsible for the long-lasting ticklish cough that persists even after you’ve recovered from your bad cold. Chocolate works almost as well as codeine cough syrup, with far fewer side effects. 7. Stay Smart. Harvard Medical School did a study, showing that two cups of hot chocolate per day improved cerebral blood flow and reduced cognitive decline in elderly patients. Chocolate also helps people feel more awake and alert.

9. Clearer Vision. A small university study showed improved blood flow to the retina, giving vision a boost. 10. Better Sex. A study published in the Journal of Sexual Medicine reported higher levels of desire, arousal and satisfaction for women who ate chocolate daily. This is thanks to a substance in chocolate called phenylethylamine, which stimulates a positive endorphin rush. Look for organic chocolate if possible, with a cacao level of over 70 percent. This indicates a higher concentration of healthy flavanols. Avoid chocolate with a label that says alkali processed, also known as “dutching,” as this reduces flavanol levels. Also avoid soy lecithin, if possible. Check out my favorite local brand of chocolate, Widman's. Their flagship store is just off 13th Avenue in South Fargo. The owner Carol, is an absolute delight! I discovered another great local brand from Fergus Falls, Minnesota, called Terrior Chocolate at the Red River Farmer's Market. It's worth a visit to their website, TCChocolate.com. Other brands to check out include Pascha, Sweetriot, Taza, Askinosie, Vosges, Theo, Giddy Yoyo, Chocolove, Green and Black’s, Valrhona, Alter Ego and Endangered Species. Certain Godiva, Lindt and Ghiradelli bars fit the criteria too. You’ll still want to read labels, as some processing differs for different bars in the same brand line. I’ve seen some of these brands locally at ShannaLee, Zandbroz, Barnes and Noble, Natural Grocers, Hornbacher’s, Cashwise, Family Fare, O’Day Cache and TJ Maxx.
