I was thinking about softness, and how it changes your vibe. We're all very smart, very clever, very defended. We don't want anyone to see how films about animals make us cry, or our scrap booking, or all the mistakes we made and continue to make around everything in life. We don't want anyone to see that we're lonely, or frightened, or exuberant about the simplest things. We don't want anyone to see us being childlike and hopeful. So we cultivate our intellect, our opinions, our thoughts on where we've been and where we're going. Today I was in the kitchen eating what I'd cooked, when my husband walked in. I have a horrible history of burning food. There was the time several months ago when I retreated to the microwave, defeated, afraid my absent-mindedness would burn the house down (talk about repressed rage). In the last few weeks I've been trying the stove again – scheduling cooking time, staying put in the kitchen, turning on the timer, sharpening my attention, and not burning anything! I'm cured! I'm a cook! I'm not a menace, I can do this! And the ground turkey I cooked in the pan smelled very nice on my plate. And he says, alarm and accusation in his voice, "Did you burn something?" "No!" I look up at him in shock. "It smells like you burned something. Something's burned." and he walks into the kitchen. "No, no!" I defend, going for the pan, picking it up to show him, feeling five years old and incompetent. "It's just nicely brown, see?" I say forcefully, totally righteously. It's his nose that's wrong. "Well, it smells like something's burned." All of a sudden I get what I really feel. Yes, I'm five. I screw up my face and do big time mock crying and whining. "But I didn't burn it!" I wail. "I didn't... " and I go all gooey, pan in my hand, miserable. And in that second, my husband does a 180. His eyes go deep and very blue-green, he smiles so fast I'm taken aback, and he comes towards me, arms around me, "Ohhhhhhh," he says. And that's the end of it. "So, how's your day?" he skips right to his next thought, and he's standing right up against me, and we're connected, and I leap from five-year-old to grownup, from lump to goddess. Long ago, whenever this happened, I used to think it was because he was competitive and didn't want me to be big. I thought he liked me girly and the loser at chess and gin rummy. I thought he was scared of my fortitude. Now I know that's not it at all. He just likes me better soft. He likes me better where I am than where I wish I was. He likes me better human than mistake-proof. At its heart, every Phantom family car hosts a hand-assembled, naturally aspirated 6.75 litre V12 engine. This sophisticated direct-injection engine develops 531lb ft of torque more than three quarters of which is available at 1,000 rpm. The torque curve remains largely flat between 1,000 and 3,000 rpm - an important prerequisite for effortless city driving - and moves occupants from 0 to 60 in 5.7 seconds and onto an electronically limited top speed of 149mph (155mph for Phantom Coupé) where market conditions allow. Phantom’s power reserve gauge is another of those trademark Rolls-Royce design cues that always raises a smile. In operation, it casually reveals the enormous power potential at a driver’s disposal should he or she require it. But, in most circumstances, Phantom’s performance is simply a matter of seamless, effortless progress.

Phantom’s already sublime drive-train has also been enhanced. The addition of a new 8-speed automatic gearbox and rear differential perfectly complement the V12 direct injection engine, improving exemplary dynamics, as well as the famous Rolls-Royce promise of a magic carpet ride. Effortless is a word that perhaps best epitomises the Phantom experience, both for drivers and their passengers. So an improved user interface, as well as the addition of new driver assistance technologies, have been built on the foundation of a new electronics’ platform for Phantom Series II. The satellite navigation system, for example, has been fully updated with functions that include 3D map display with landscape topography, guided tours, as well as enhanced points of interest and composite route planning. Audio visual content, satellite navigation maps and driver information is presented on Phantom’s new 8.8 inch control centre display, underlined by eight programmable bookmarks in chrome for optimum convenience in selecting key functions. An oasis of calm, Rolls-Royce interiors are the perfect environment in which to relax and unwind in welcoming silence. But they can also be a centre for entertainment. Phantom Saloon’s theatre configuration adds two monitors within veneered picnic tables for rear seat passengers which are linked to a multi-media player, mounted in a compartment at the rear of the centre console. The inclusion of AV connectors, a six-DVD changer housed in the lower glove box and USB port in the centre console, means occupants can view separate content wherever they may be seated, front or rear. The LOGIC7TM surround sound system by Harman can create a truly cinematic experience on any journey. Seven individual sound signals are processed specifically for the car and its interior conditions using a combination of speakers that include subwoofers housed within resonance chambers in the space created by Phantom’s double floor. And coach doors with soft close function, which house Tefloncoated umbrellas to provide the grandest form of disembarkation from any motor car, whatever the weather. Nearly ten years from launch, the design team responsible for creating a modern masterpiece remain at Rolls-Royce. And for Director of Design Ian Cameron, updating a 21st Century classic would start with one priority: a harmonious, timeless design to embrace state-of-the-art technological improvements. The new, modern front-end for Phantom Series II, perhaps best exemplifies changes that are more than skin deep. Recessed behind new rectangular light apertures and re-designed front bumpers are fully LED light clusters. The signature is an elegant and dramatic bar, capturing the simple elegance of a continuously lit element, a feature complementing Rolls-Royce tail light design. For balance and proportion, this is integrated horizontally across the centre of Phantom’s four-compartment headlamp. clearly placing musical instruments, sound effects and dialogue at different depths giving the impression of sitting in row one or 20 of a concert. A stylish new chrome controller, discreetly hidden within the centre console and rear-centre arm rests when not in use, is flanked by function keys such as menu, telephone and navigation to allow easier access to infotainment functions. For Phantom Series II the telephone cradle has been replaced by a standard fit smart phone cradle which connects directly into the car antennae. The centre recess now also includes USB, Aux-in and 12V power sockets. Additionally, music can be copied directly onto the car’s hard-drive, thanks to the addition of a USB port in the glove compartment. Familiar themes begin with the famous Spirit of Ecstasy, proudly adorning each model’s Pantheon grille leaning into the wind with fluttering gown, while in side profile all Phantom family members present a long rear over-hang and classic two-to-one wheel to body height. But 21st Century design cues also delight owners, as well as those for whom a glimpse of a Rolls-Royce is a rare moment to be treasured. The interlocked double-R Rolls-Royce monogram in the hubcaps, for example, which remain upright at all times.

4MATIC Refined Road Holding By Scott Black
The leading expertise of Mercedes engineers in the development of pioneering all-wheel drive concepts did not come about by accident. Mercedes-Benz 4x4 history starts as far back as 1903, since when the guiding principle has been - if you want to make better and safer headway under tough conditions, all-wheel drive is the best technology. The all-wheel drive breakthrough came in 1907. Engineer Paul Daimler, the son of Gottlieb Daimler, had been working on this drive technology since 1903. It was for this reason that he was selected to lead the team that built the first all-wheel drive passenger car with an internal combustion engine, commissioned by the German Colonial Office. It was a real monster that took shape in the Daimler workshop in Berlin-Marienfelde. The all-wheel drive automobile was based on a commercial vehicle chassis, had a wheelbase of 157 inches and a track of 56 inches. With an overall length of around 193 inches and standing almost nine feet high, the vehicle weighed in at around 3.6 tons. Dubbed the "Dernburg", it had permanent all-wheel drive and four-wheel steering to make the monstrous machine more maneuverable. Alongside a number of six-wheeled passenger vehicles with four driven rear wheels (6x4 drive principle), the 30s saw the birth of the G5. By the standards of the day, the 4x4 vehicle was state-of-the-art. It had all-wheel drive and an advanced five-speed transmission. To make it more maneuverable on rough terrain, it was equipped with manually-activated four-wheel steering. Several of these vehicles were put into service by the German mountain rescue service, with some of them still in use well after the Second World War. The modern history of Mercedes-Benz all-wheel drive vehicles undoubtedly began in 1979 with the arrival of the G-Model. At its market launch in early 1979, there were four engine options available with output ranging from 72 hp to 150 hp, as either cabriolet or station wagon with a 28 FOCUS of New York 2012
short or long wheelbase. 1989 saw a significant development - alongside the redesigned original with the internal reference "Series 461", which subsequently became the highly capable base model for utility applications, Mercedes launched the range dubbed "Series 463". With new, permanent all-wheel drive, ABS, limited-slip differential on the front and rear axles, as well as a 100 percent locking center diff, it made a very clear technical statement. Since 2001, the G-Class has also been equipped with pioneering stability, traction and brake control systems ESPÂŽ, 4ETS and brake assist. The G-Class rĂŠsumĂŠ is positively teeming with superlatives. It has won the Paris-Dakar Rally, serves as Papal transportation, wins consumer awards left right and center and formed the gene pool for the entire Mercedes-Benz SUV family line. And that's not all - with its model life of 30 years plus, the "G" is far and away the longest-serving model range in Mercedes-Benz history. Since Mercedes-Benz brought its first 4MATIC model to the U.S. in 1989, American drivers have been increasingly drawn to the handling and safety benefits of all-wheel drive. Entry into the world of Mercedes-Benz all-wheel drive coupes now begins with the C350 Coupe 4MATIC. This best-selling premium mid-size coupe comes with a host of outstanding features, including best-in-class safety and comfort equipment levels with up to nine airbags, active head restraints, automatic climate control and alloy rims, as well as the seven-speed automatic transmission. State-of-the-art driver assistance systems include Attention Assist, a HOLD feature for the Adaptive Brake system. Optional equipment includes Blind Spot Assist, Lane Keeping Assist and Parktronic with parking guidance system. Like its rear-wheel drive sibling, the C350 Coupe 4MATIC is powered by a 3.5 liter V6 generating 302 hp and 273 lb-ft of torque. Fuel economy is uncompromised by the addition of 4MATIC and remains at an impressive 19 mpg city, 28 mpg highway and 22 mpg combined.
Moving into the full-size segment, the E350 4MATIC Sedan and Wagon are now joined by the E350 Coupe 4MATIC, bringing an additional injection of refined sporting character to one of Mercedes-Benz's biggest selling models in the U.S. Like the C350 Coupe 4MATIC, the E350 Coupe 4MATIC is powered by the 3.5-liter V6 engine and offers exactly the same fuel consumption as the E350 Coupe at 19 mpg city, 28 mpg highway and 22 mpg combined. The third and final addition to the range of 4MATIC coupes is the stunning and superbly athletic CLS550 4MATIC. With 402 hp pumping from its 4.6-liter V8 engine and 443 lb-ft of torque, the formidably dynamic character of this groundbreaking four-door coupe is now even more impressive. In the GLK compact SUV, the system is also equipped with additional electronics for off-road driving. The M and GL-Class offer a 4MATIC that not only delivers safe and refined on-road performance, but also incorporates first-class off-road technology. The base version of this 4MATIC also provides the R-Class with excellent drive. In the big daddy of off-road vehicles, the G-Class, the permanent all-wheel drive is also set up to master the toughest off-road terrain. As you might expect, every single 4MATIC variant boasts extremely refined road manners and excellent handling, while providing a significant boost to active safety. Add to that good fuel economy, which comes about as the result of low weight and friction-optimized design.
The M-Class and GL-Class are the vehicles that define the premium SUV segment and 4MATIC is the system that defines their superb handling both on and off the road. In both models, drive is split 50:50 between the front and rear axles. Sturdy prop shafts transfer power to the front and rear axle gear sets, while a bevel gear differential absorbs the rotational speed difference between the axles. ESP速 and 4ETS also play their part in maintaining outstanding stability. 4ETS controls the distribution of driving force via brief braking inputs, using information from the ABS wheel sensors. If these rev sensors indicate that one or more wheels are losing grip, their brakes are applied automatically. The driving force to the wheels with good traction is consequently increased in proportion with the braking force applied to the slipping wheels, thus maintaining forward drive on loose or slippery surfaces. Ongoing model revisions have kept G-Class technology up to the minute for more than 30 years and, to this day, guarantee an outstanding drive system. Back in 1979, when it made its debut, the original G-Class was equipped with a selectable all-wheel drive system that operated with absolutely no electronic intervention, as per the technology of the day. The first major model revision came in 1990, bringing with it permanent 4x4. Since 2001, the G-Class has been equipped with additional electronic control systems. Jean joined Lotus Cars at the Autosport International Show at the NEC, to celebrate the unveiling of many of Lotus Cars’s racing disciplines including the preview of the new 2011 Lotus Renault GP F1 car livery. He admits that, “I’m delighted to be partnering with Lotus. I have a lot of affection for this great British brand, and I’m confident that they will achieve great things in the future both on and off the racetrack. I’m particularly passionate about anything that brings people closer to the racing action, and the Type 125 does exactly that. It’s the ultimate race experience.” Lotus’ Type 125 track-day car is a completely new design, an exclusive, ultrahigh-performance F1-like race car complete with a Cosworth 3.8-liter GP V8 engine producing 640bhp and linked to a six-speed semi-automatic Ricardo gearbox with paddle shift. It was conceived to provide customers with as close to a F1 experience as possible without the extreme technical complications of a true F1 car.

But unlike an F1 car, an army of technicians and mechanics is not required to start the engine and keep the car running: the start button is all a driver needs to get going. Its chassis is a full carbon design compliant with the latest F1 safety regs, but it is stretched to allow for larger drivers. 25 chassis are being produced, and purchasers of the Lotus Type 125 will be able to choose from a range of liveries including the Exos concept design, or as an option, their own, bespoke livery. Price of each completed vehicle is $1M, plus works and taxes; the price includes the first year’s membership of Exos club, an exclusive private members club only for Type 125 owners. The club will run five events this year, mainly centered around the redeveloped Hethel track. The dates align with certain F1 races, to allow customers to run their cars on Saturday and go to the race on Sunday.

otus will supply the technical team to run the car at Exos events, included within the price. Customers own their cars; they can store them at Lotus during 2011 or have them at their home, race team or other suitable arrangement. Owners can also use the cars between Exos events. With Alesi’s competition pedigree, at the highest levels in motorsport, Lotus believes that he is the perfect partner for the Type 125. Jean enjoyed a successful and eventful F1 career, competing in 202 Grands Prix and collecting a total of 241 points driving for Ferrari, Tyrell, Benetton, Sauber, Prost and Jordan. He collected his one and only F1 win driving for Ferrari in the 1995 Canadian Grand Prix in Montreal. Jean Alesi is still regarded as one of the most popular drivers in the F1 paddock.

This is something I don’t ever want to have to think about. So, I will give you a vision into my world with a quick spin of the kaleidoscope. Paying it Forward & Letting My Passion Fly that would be the best description I could give you. To describe everything that I am about would take me more than this article can hold. I live a double life with that many may not know. By day, for the past 14 years I’ve made my living as a Licensed Physical Therapist Assistant. To be a part of the healing process in people’s lives, and being a part of making them whole again … Who wouldn’t feel passion behind this? By night and any other unscheduled moment in a day, I am a promoter and photographer. I have always loved photography, and 4 years ago I decided to pursue it on a more professional level. I came up with this crazy name Passionfly Photography, it has branded me with the motto … “Let Your Passion Fly”. I can’t say that I have any specific category of photography that I appreciate more, only that I love what I see through the lens, and get a jolt of inspiration every time I review images that leave footprints on the lives of those that were captured by my shutter. I’ve always loved music, but never had a true appreciation for it until I began consistently listening to live music. The vision of musician’s passion heard in a voice, with a strike of a drum, or a lick of a guitar purely amazes me. Thank you to all the musicians that have given me a different vision of music than I ever thought would be possible for me. You have let me feel your passion through the eye of my lens, and I love it! I am a social butterfly, and always have been. Do I need to be the center of attention? No… But, do I want to be standing in the wings feeling the same passion & excitement they do, yet in my own way? Of course! So, by the click of my shutter and my tenaciously viral ways on the internet … I’ve created a completely different angle with my passions. I may have created a monster with the amount of knowledge that I have bestowed upon myself, not because I have to… But, because I want to. People often ask me if I sleep. The answer would be: not too much. But, how can I when I have so many visions and ideas that I want to share with the world, and continue to pay forward whatever I can to help others? This has now compiled into the multi-faceted way that I promote local & national bands, organizations, events, and so on. Assisting others in the undying need for social media awareness of anything and everything that has a good meaning to it has become yet another passion of mine. Thankfully for others who do not have vast knowledge of social media, marketing, or advertising I have now become a search engine of information without them having to click the “on” button of a computer search for it. Somehow with all of this I have become very well-respected for my passion and professionalism to a point that I now create/manage many social media portals to increase the public awareness of the musician’s passion. Somewhere along the lines of all this, I have now become a booking agent, a band manager, fan page moderator, and all around “superwoman” of assistance. 34 FOCUS of New York 2012
I am now embarking on a new adventure with something that I didn’t really ever know could or would be possible. I was fortunate enough to have been able to meet another very driven, hard working, and passionate person who envisions a lot of the same things I do, but he is the musician I am not. So, we have collaborated together on a new business concept to help musicians everywhere … If they have the same drive, dedication, passion, willingness and want to succeed. Over the next few months we will be creating the master plan to create plans to help musicians create their own success with greater professionalism and respect for their talent. Thankfully I appreciate the passion, drive, dedication, and understanding of others that I know that I’m not in this to make a lot of money or become famous. I’m fine with being behind the curtain, as long as the appreciation does not go unsaid. A “Thank You” goes a LONG way, but if you don’t say those two words, how does anyone know that you truly appreciate what they did for you? Dreams don’t have to be something we wish would happen … Make them come true! Go the distance and Stand Strong for what you believe in! oga is big business, one that is largely considered to be a luxury. To Passport to Prana founder YuMee Chung, this didn’t seem right. Chung, a Canadian lawyer who entered the legal profession with the hope of bringing about social change, took her first yoga class on the recommendation of a friend because she was experiencing back pain and numbness in her arms from too many hours in front of the computer. She had been running from doctor to doctor and from body worker to body worker looking for a way to alleviate the work-induced discomfort. Lasting physical relief did not come until she found yoga. After working for a few years as a lawyer and taking yoga classes, Chung realized that her yoga teachers were doing a better job of touching people and changing lives than she was as a paper pusher. So, she decided to open a yoga studio. She juggled that career and law practice until she became too busy to do both. In the end, yoga was the obvious choice. The transition from lawyer to yogi was a huge personal and professional decision. Chung had to face losing the security of a six-figure income and a robust benefits package in lieu of an uncertain future. However, she realized that it was more important to live a healthier, more engaged life in the present moment. After making the jump to yoga instructor, Chung came to the realization that there had to be a way to remove the barriers to entry and make yoga more accessible to the average North American while bringing the yoga community together around a common project. In 2005, she started Passport to Prana as an experimental, collective marketing idea designed to introduce people to the practices of yoga by acquainting them with the yoga studios and teachers in their cities. Knowing that many yoga studios offer a discounted or free first class, and that all yoga studios are keen to meet new students, Chung simply formalized the idea and created structure around the idea of a yoga crawl.
Her business concept was (and still is) simple: sell a multi-studio yoga pass that offers customers one free class at each of the participating studios in a given market at a too good to be true price. In the United States, each card costs a maximum of $30 per city, making the cost of each class about a $1 depending on the region, versus the average big-city yoga class, which can cost upwards of $18. The benefits are clear: consumers get a smorgasbord of studio options to try and studios get exposure to a broader customer base than they could develop on their own. Says Chung, “Passport to Prana gives everyone, including absolute beginners, a great way to try out the yoga studios where they live, work and play, no matter what their income level, age, or level of fitness.” In seven years, this relatively straightforward idea has grown to include multiple cities throughout Canada and America. The engine behind Passport to Prana’s growth remained Chung, joined by her business partner Rajen Gandhi, with their singular strategic vision. Approaching the entire venture from a ‘collaborative, not competitive’ perspective, Chung and Gandhi continue to encourage growth through ethical practices and a winwin mentality. Most of the profits from the sale of the actual passports get funneled back into the studios offering the free classes, and despite the popularity of the program, passport prices have remained reasonable. An online yoga portal is also part of their program. Anyone who purchases a Passport to Prana will receive an electronic card that is processed by the yoga studio just before class. Established in 2006, Nihan Altuntaş designs unique one-of-a-kind knitwear’s. She explains how she started: I have always had a passion for creating and designing. I never liked pattern books or reproducing brand sweaters. I would design authentic knitwear by improvising with needles, sometimes not even knowing what the result would be. So I’ve realized that crafting was my lifelong passion. The appreciation and approval from so many over the years, for all of my hard work is the basis of my motivation to improve myself in this field. I love working with my team as we develop the brand. Today, thanks to the internet I have lots of international customers & friends. By time, all the great and supporting e-mails that I get every day, made me dream a new fashion brand called “Nihan Altuntas”. This support encourages me for bigger steps with my future plans. I'm thrilled with the idea that somewhere in the world, someone is actually warmer, in a woolen sweater designed and knitted entirely by my hands. I may knit in a traditional way like grandmothers do. It allows my designs to have a very personal touch. But I don't like my designs to have that “Hand knit” look. I feel so happy when people ask my customers, “Where did you buy this sweater?” rather than “Did you knit the sweater by yourself?”.
I feel very delighted when I hear how many people ask my customers that question. I believe, it really shows the quality of Nihan Altuntaş designs. Living in a hectic and very dynamic metropolitan area; everybody is in a hurry and time is of high importance. Generally, when you have an evening planned after work, we don't always have enough time to go back home to change. I think, living a city life affects my style; I mean you can save time because, Nihan Altuntaş designs are also wearable for any occasion. I love exaggerated forms; for example not to knit something as a collar but a collar in a different form. As a result, sophisticated sculptural silhouettes also become comfortable and wearable in ordinary day knitwear’s. During both creation and knitting the most important thing for me, and each design would be unique and authentic. If I see any similarities between my work and any other designs I stop work immediately. At this point, I show no mercy to my work because people trust me. Thus, they turn my authentic designs into their own exclusive apparel; by selecting their own color and material taste.

Her first collection called “Illustrations in motion”; showcases her collection of 11 different types of garments with her personal illustrations. Agglomeration of complicated shapes, when one emerges, the other vanishes or they interchange into geometric human forms. Choosing The Right Accessories For Your Home

Art work is a great accessory which creates a strong focal point that defines a space and can reflect your personality. Keep in mind that art and mirrors do not need to hang on a wall. They can be set on a mantel or leaned against a wall to create a more casual feel. The final step when designing a room is selecting accessories to complete the look. When choosing the right accessories it is important to use the principles of interior design. In addition to incorporating scale, color, texture, repetition and rhythm, accessories should reflect your personality and create an inviting atmosphere.

hen purchasing accessories it is imperative to select the correct scale for your room. For instance a small paper weight on a large table or a large floral arrangement on a coffee table would not be the best option. An area rug is one of the most important pieces in any room; it provides a foundation and defines the space in a large area. You can use the rug to incorporate pillows with colors and textures that bring the eye from the floor to the sofa to make a connection. When introducing accent colors using a variety of decorative objects can have an impact. As an example, the three daisy chain vases in the photo to the left are simple but gives an extra punch of color without being overwhelming and provides visual stability for a room. While symmetry tends to convey a formal tone, asymmetry communicates a more casual feel. This, however, is not set in stone. For instance, if you hang a cluster of mismatched framed mirrors on a wall and then border the grouping with two larger rectangular mirrors, it creates a visual interest and prevents a cluttered look.
If you have collections of small items, group them together and use risers to achieve different heights. A grouping of nicely framed family photos of different sizes will create a wonderful conversation area on an end table (a candle will accent this perfectly). When placing family photos a rule of thumb to keep in mind is that formal pictures look better in a formal room, casual pictures in casual room. If you want a dramatic look – go large. Consider the vases on the console table to the left. Because of the tall ceiling this space can handle the oversized glass containers with tall dried grass. Using coffee beans adds a great texture not to mention the terrific aroma. Table top books work well on a large coffee table in addition to generating great conversations. Plants and floral arrangements bring an organic element and go with just about any style room. Decorative coasters are a must when entertaining in your home. In addition to the small accents, your guests will feel comfortable knowing where to place their drinks. These are just a few design tips and remember accessioning your home is like accessorizing your clothing – it will reflect your style and personality. In short, it will project who you really are as a person. Have fun when selecting your accessories and don’t be afraid to step out of the box. And remember sometimes less is more!

Film News
Project London is a special effectsrich science fiction movie about a grief-stricken young man who joins a ragtag resistance force and engages in epic battles against Joint Command to avenge his father and save the planet.
Nebraska Higgins (early 20s) leads a normal, easy life in Seattle and works as a mechanic at the Joint Command Control Tower. Joint Command is Earth’s global police and military force established as a union between old Earth governments and Nalardian refugees and powered by their technology. Nebraska’s life is uncomplicated and routine, and most of the planet is peaceful and prosperous. Today, he has agreed to take his friend’s son, Christopher (8-ish), on a tour of the Tower. Their visit is horrifyingly interrupted when a Joint Command-powered robotic exosuit and the iconic, heroic exosuit known only as Arizona fight on the narrow Tower ledge. Arizona sheds its armor to reveal its pilot…Nebraska’s father. While attempting to protect the vulnerable Nebraska and Christopher, Nebraska’s father is vaporized. Grilled Salmon Over Lentil Salad with Walnut Vinaigrette This healthy, delicious meal is easy to make and easy to enjoy. Eat it for lunch, dinner or even a picnic. Canola oil in the marinade and vinaigrette allows the zingy taste of the Dijon mustard and fresh herbs to come through. Canola oil also provides heartsmart omega-3 fat along with the salmon and walnuts.

Ingredients: 4 salmon fillets (4 oz/125 g portions), skin removed
Marinade
2 Tbsp Dijon mustard 30 mL 2 Tbsp canola oil 30 mL 2 sprigs fresh tarragon, pulled and roughly chopped 1 clove garlic, minced
Lentil Salad
1 cup dry brown or green lentils, rinsed 250 mL 1 bay leaf 2 garlic cloves, peeled and smashed 1 rosemary sprig 1 medium carrot, finely diced 1 celery stalk, finely diced 1/4 cup red onion, very finely diced 60 mL 1/4 cup parsley, finely chopped 60 mL 1 Tbsp chopped tarragon 15 mL
Walnut Vinaigrette
2 Tbsp red onion, minced 30 mL 2 cloves garlic 1 Tbsp Dijon mustard 30 mL 1/4 cup rice or champagne vinegar 60 mL 1/2 cup canola oil 125 mL 1/2 cup walnuts, toasted and coarsely chopped 125 mL 1/4 tsp pepper 1 mL

Instructions: 1.In medium bowl, combine mustard, canola oil, tarragon and garlic for marinade. Place salmon in marinade and gently toss until thoroughly coated. Place fish in resealable bag in refrigerator for at least 1 hour. 2.Heat grill to 375 °F (190 °C), when it’s too hot to hold hand above coals for more than 5 seconds. 3.In 5-quart pot, bring 3 cups (750 mL) of water to a boil. Add lentils, garlic cloves and rosemary sprig. Cook lentils until just tender, about 30 minutes. Strain in colander. 4.In plastic bowl or cup with fitted lid, combine red onion, garlic, mustard, vinegar, canola oil, walnuts and pepper. Shake until thoroughly mixed and emulsified. Season with pepper. 5.In large bowl, toss lentils, carrots, celery and red onions together. Stir in enough vinaigrette, about 1/4 cup (60 mL), to coat lentil mixture and store rest in refrigerator for up to one week. Toss in fresh parsley and tarragon. 6.Spray grill rack lightly and cautiously with canola oil cooking spray, then carefully place salmon fillets on hot grill 2 inches (5 cm) apart. Cook on each side 3-4 minutes at diagonal angle to grill rack for professional-looking grill marks. Remove salmon from grill and serve over lentil salad. Garnish with lemon wedges, if desired. Yield: 4 servings. Serving size: 1 fillet.

Tips: The marinade doesn’t have a lot of acid, so it’s perfect for marinating the salmon for up to 10 hours before grill-
ing (or broiling). Consider placing the salmon and marinade in a resealable bag before work and cooking it when you get home. As another time-saver, the components of the lentil salad may be made up to a day ahead and tossed in the vinaigrette at the last minute or 2 hours before serving. As a quicker alternative, use 1 1/2 cups (375 mL) canned, rinsed lentils or black or small red beans instead. 74 FOCUS of New York 2012
Broiled Trout with Lemon Oil & Oven-Grilled Vegetables The star of this recipe is delicious lemon canola oil, which should be a staple in any pantry. It may be used on fish, in salad dressings, on roasted vegetables and just about anywhere you would use canola oil. Here, it makes this simply prepared broiled trout with vegetables a healthy and tasty weekday meal.
Ingredients: Lemon Oil
1 cup canola oil 250 mL zest of two lemons, about 2 Tbsp (30 mL) 2 small zucchini, cut in half lengthwise, then cut into 1/4-inch (0.5-mm) thick diagonal pieces 1 pint grape tomatoes 1 medium red onion, cut in half and thinly sliced into half moons 4 garlic cloves, peeled and smashed 2 sprigs rosemary 1 Tbsp balsamic vinegar 15 mL 2 Tbsp lemon oil 30 mL 1/2 tsp salt 2 mL 1/2 tsp freshly ground black pepper 2 mL 4 rainbow trout fillets (6 oz/170 g each), skin removed 2 tsp lemon oil 10 mL 4 sprigs fresh rosemary, 2 inches (5 cm) long 1/2 tsp freshly ground black pepper 2 mL lemon wedges for garnishing

Instructions: 1.In blender, combine canola oil and lemon zest. Process until smooth, then strain through fine mesh strainer. Store in refrigerator in airtight container or covered jar for 1-2 days. 2.Preheat broiler. In large bowl, combine zucchini, grape tomatoes, red onion, garlic and rosemary. Drizzle vegetable mixture with balsamic vinegar and lemon oil. Toss, then sprinkle with salt and pepper. Spread vegetables in single layer on baking sheet and place 4 inches under broiler for 10 minutes or until vegetables are tender crisp and browned. Halfway through cooking time, toss vegetables. 3.While vegetables are cooking, prepare baking sheet with foil and canola oil cooking spray. Place trout on prepared baking sheet. Sprinkle both sides with pepper and place rosemary sprig under each fillet. Drizzle each fillet with 1/2 tsp (2 mL) lemon oil. Place fish under broiler for 7-8 minutes or until fish is opaque and flaky. 4.Carefully lift trout from pan with spatula and serve with vegetables. Yield: 4 servings. Serving size: 1 fillet.
