DEPARTMENT OF TOURISM REISSUES SAFETY GUIDELINE FOR PUBLIC INTEREST
Goa, April 25th, 2023: In light of the tragic incident that occurred at Keri Beach, resulting in the loss of four lives, the Department of Tourism in Goa has re-issued guideline/ advisory/SOPs to prioritize the safety and security of visitors, as well as to promote responsible tourism.

The tourists are hereby advised to book accommodation with legal hotels/villas or accommodation facilities duly registered with the Department of Tourism
Consumption of alcohol in open areas like beaches etc., is prohibited and is a punishable offense. However, alcohol may be consumed responsibly inside legally licensed premises like shacks/restaurants, hotels, etc
Tourists are cautioned against hiring private vehicles / renting cabs/bikes that are not legally registered with the Transport Department and those that do not hold a valid permit.
Tourists are advised not to entertain illegal touts or agents for booking watersports and river cruises. Tourists must insist on a registration certificate issued by the Tourism Department while booking such services and book such services only from registered travel agents or registered online portals
Begging of Alms in tourist places is prohibited, and Tourists are advised not to encourage begging in any tourist areas.
Cooking food in open areas is prohibited and may lead to prosecution and seizure of cooking items
Littering of waste in any tourist area is prohibited and cleanliness should be maintained in all tourist places.
Driving of motor vehicles, including 2wheelers on beaches, is strictly prohibited and will lead to severe action and seizure of the vehicle/arrest of the driver. Do not encourage drug peddlers or consume any narcotics substances, as such activities are banned by law and may lead to severe penalties and imprisonment
Do not drive under the influence of alcohol
Do not book services from online portals which are suspicious and unverified. Do not take selfies and photographs, without permission of other tourists/ strangers, especially while sunbathing or sea swimming, so as to respect their privacy.
Do not take selfies at dangerous locations like steep cliffs, sea rocks, etc., as this may lead to accidents.
Do not destroy or damage heritage sites by scribbling graffiti or other forms of damage to the monuments. It is our responsibility to protect our heritage for the future generation. Do not hire illegal private taxis. Insist on metered fares to avoid overcharging
Any individual, company, organization, or any other entity that is found to violate the rules set by the Government and fails to comply with the guidelines/ SOPs shall be subject to a fine of Rs 5,000, which may be increased up to Rs 50,000 Alternatively, they may be subject to legal action under Section 188 of the Indian Penal Code.
Director of Tourism Shri Suneel Anchipaka, IAS said, "We are deeply saddened by the loss of lives We previously issued an advisory in December of 2022 and are reissuing it for the public's interest. It is highly recommended that both locals and tourists diligently follow these SOPs to emphasize the importance of safe and responsible tourism. Failure to do so may result in strict penalties”

Vivek Pathiyan, a veteran in the hospitality industry, began his journey in 1975 as a bellboy at the Oberoi Hotels in Mumbai. It was Mr Homi Wadia, one of the stalwarts of the hospitality industry, who recognized his potential and encouraged him to enter the industry.
Once the GM of Hotel Oberoi also shared that he had started his career as a bellboy and had risen to become the General Manager of the hotel, which ignited a fire in Pathiyan. The rest, as they say, is history.
Mr Pathiyan stated that it was Mr Homi Wadia who encouraged him to pursue a career in the hospitality industry “If it weren't for Mr Wadia's guidance, I would have still been working in sales for a consumer company. ” When Mr Pathiyan joined the Oberois, Mr Wadia had already left the country to join a hotel in Cairo. “After that, I completed his management training at the Marriott, where I developed high-level management skills that I am proud of. These skills enabled me to successfully turn around many properties across India during my tenure. I believe that the hospitality industry is a people-oriented business, and he strongly believes in the principle of taking care of the
internal customer, which will ultimately lead to the satisfaction of the external customer,” he added.
Speaking about the challenges he faced, Mr Pathiyan mentioned that he had to overcome numerous obstacles to reach higher positions. “People do not easily allow others to rise and I had to work hard to achieve success However, I believe that facing challenges and persevering through difficult situations is the only way to succeed. Through my experiences, I have become capable of handling any situation. The hospitality industry is very challenging as new obstacles arise every day Balancing the needs of guests and team members is a demanding task that requires sharpness and quick thinking. Ultimately winning both the situation and the person in today's volatile market is a significant challenge ”

When asked about his greatest strength and biggest weaknesses, Mr Pathiyan replied that his greatest strength is being a workaholic and not an alcoholic “As a hotelier, I do not smoke or drink, which keeps me more active even at the age of 68, allowing me to work like a youngster. Throughout my career, I have delivered results in challenging roles at prestigious establishments such as Leela Palace in Mumbai, Orchid Hotels, where I started from grassroots, and Fern Hotels and Resorts, where I held the position of Vice President of the group, ” he said. Managing people is one of the biggest challenges in the hospitality industry, and Mr Pathiyan believes that if one is skilled in this area, the sky is the limit “At the International Centre, where I am currently working, guest satisfaction is a top priority, and I ensure that I create an experience for guests that keeps them coming back,” he added.
When asked how he copes with bad business days and keeps his team motivated, Mr Pathiyan gave a recent example of the challenges faced during the COVID-19 pandemic. “While many hotels were forced to close and lay off staff, the International Centre where I work remained open I took all the measures to motivate my team during this difficult period, including ensuring they received their salaries so they could continue to provide for their families. The hotel was converted into a quarantine centre to keep revenue flowing, and doctors were housed there,” he said
To support his team, Mr Pathiyan personally took a pay cut of 40% so that he could continue to pay his employees. These efforts helped to sustain the business for almost two years, and when the business returned, the
team was still motivated and ready to face new challenges They were confident that the International Centre was the best place for them to continue to earn a livelihood during difficult times.
According to Mr Pathiyan, upon joining the International Centre Goa, he identified the tremendous potential to elevate this property into a prominent one, which had not been previously addressed. "Upon joining, I implemented numerous alterations and renovations to the property, and today, I am proud to say that the International Centre is on par with any four-star property in Goa We offer spacious, self-contained rooms with balconies, surrounded by lush greenery, which is the cherry on top. Our facility also boasts a fully-fledged library, recreation center, and swimming pool, and all of these amenities are offered at very reasonable rates Once a guest visits this place, they keep coming back. It has also become a hub for businesses, as guests can easily move around in any direction in Goa due to the improving infrastructure. We also offer the unique facility of karaoke in our restaurants, allowing guests to sing along while dining."
When asked about the differences between Goa's tourism business and other parts of the country, Mr Pathiyan mentioned that Goa's tourism industry depends on the experiences created for the visitors, but there is still a need for government support to improve certain facilities, such as taxi services. “Compared to other states, private taxi services in Goa charge exorbitant rates, which discourage guests from visiting Sometimes the amount spent on taxi fares is more than the cost of hotel rooms. Another issue is the lack of proper beach facilities such as toilets, beach beds,

and shower services, despite Goa being known as a beach destination. If these facilities are improved, more tourists will visit Goa and boost business,” he said Mr Pathiyan also noted the need to address restrictions on music, as people visit Goa for beaches and music. While many tourism destinations allow music until late at night, Goa lags behind in this regard.
When I asked Mr Pathiyan which other hotels and resorts he personally likes besides the property that he manages right now, he replied, "In my experience, I have found that Marriott sets some of the highest service and quality standards in the world, not just in Goa but outside of it as well Having worked across the world and with many properties, I have learned a lot from my association with Marriott."
When asked about the impact of social media on the hospitality industry, Mr Pathiyan stated that he believes social media has a significant influence on people's decisions He noted that nowadays, guests tend to check out properties on social media before making a decision, which makes it an essential tool in today's world.
According to him, social media plays a crucial role in converting business, and the International Centre Goa (ICG) uses social media platforms to reach out to customers However, he also acknowledged that there is still much to be done in this area.
When asked about where he sees himself in the next five years, Mr Pathiyan laughed and said that he believes he will be back home. "I have dedicated a lot of time and effort to this industry and this will likely be my last assignment as a General Manager of a resort. However, I plan to stay involved in the industry by providing consulting services to businesses and sharing my expertise with those who need it If someone reaches out to me for help, I will do what I can to assist them I am very straightforward, so if I believe a property is not going to work, I will tell them directly to prevent them from wasting their time and money. Conversely, if I see potential in a property, I will do my best to help make it successful I am always available to guide those who need my expertise and help, and that is what I plan to do once I retire from my current position."

Chef Baig's journey began at the Taj President Kolavam, where he honed his skills as a chef He then moved on to the Middle East, where he worked for several five-star hotels for 14 years. Chef Baig's sense of adventure led him to work on cruise ships, and he also worked for a few years in Dubai before the recession of 2010 led him back to India
Chef Baig's wife is a local Goan, and they decided that Goa was the best place for their family. Chef Baig worked at the Park Hyatt for a few years before being promoted and transferred to Park Hyatt Chennai. However, it was difficult for his children to adapt, so he moved on to Zuri White Sands Resort, where he spent 11 years taking up the position of Executive Chef, and after all these remarkable experiences Mohammed Farooq is serving Azaya Beach Resort with all new liveliness. In a recent interview with Chef Baig, he revealed that his love for cooking started when he would entertain guests in his home. He finds joy in serving and making people comfortable, which is what prompted him to take up cooking as his career.
Chef Baig has been at Azaya for only 20 days, and he is already enjoying the beautiful property and the opportunity to meet new people and guests. He believes that the concept of Azaya is unique in Goa, and the standards they follow are above 5-star. The food menu is different, and the infrastructure and interiors are exceptional
Chef Baig's signature dish is the naan with keema and fried egg on top. He plans to introduce this dish for breakfast at Azaya, and he promises that the recipe he uses for the naan will make it absolutely soft and enticing As for the current menu, he recommends trying their Guacamole, which is a crowd favourite.

When asked about his favourite cuisine, Chef Baig, who is a continental chef, admitted that his favourite cuisine is Indian. He particularly enjoys cooking Mughlai dishes As for his comfort food, he loves Mangalorean cuisine, especially fish curry and gassi.
Chef Baig's biggest strength is that he is a good team player, and he admits that his weakness is that he is sentimental. When asked about how he kept his team's momentum going during the low phase of COVID-19, Chef Baig revealed that he was not with his team at that time. However, he kept busy with drawing and sketching.
In a rapid-fire question round, Chef Baig revealed that in five years, he sees himself as an entrepreneur or a General Manager The weirdest thing he has put in his mouth is a fresh oyster, and the five kitchen tools he cannot do without are a knife, apron, duster, cap, and water.

When we arrived at the property, Mr Romel greeted us as the GM, Mr Rajesh Kumar ji, was not available on the property. Mr Romel showed us around the property before leading us to The Regency, a fine dining restaurant at La-Paz Gardens Beacon. He mentioned that The Regency is a multicuisine restaurant and that they also serve a special Fish Thali with Kingfish fry, which is in high demand. We observed that many people were indulging in the Fish Thali and some were also ordering Continental and other cuisines. Overall, the atmosphere made us eager to satisfy our appetites.
Before leaving Mr Romel introduced me to Chef Anthony from Goa Velha who is the Executive Sous Chef at La-Paz Gardens Beacon has over 18 years of experience in the hospitality industry and has been working at La-Paz Gardens Beacon for the past 9 months. Chef Anthony is specialised in Goan and Continental and he prepared some delectable dishes for our team during our visit to the restaurant for a review.

After we finished the starters, the main course arrived, and the first dish served was Stuffed Chicken Breast. The chicken breast was sliced in the middle and stuffed with boiled spinach, cheese, salt, and black pepper. After the marination, it was grilled and served with lavash bread, giving it a beautiful presentation The dish was accompanied by boiled vegetables and mashed potatoes on the side.
Following the Stuffed Chicken Breast, which was already quite heavy, the next dish to arrive at our table was the Lobster Thermidor, a stuffed lobster that our team members enjoyed thoroughly. According to Executive Sous Chef Anthony, the recipe for Lobster Thermidor is quite simple. This classic French dish involves cooking the lobster meat, removed from its shell, and mixing it with a creamy blend of cooked mushrooms, shallots, and the Thermidor sauce. The preparation begins with heating olive oil in a pan with garlic, onion, and the lobster meat removed from its shell. It is then stuffed back into the lobster shell and baked in the oven with a cheese topping before being served hot. The dish is accompanied by boiled vegetables and mashed potatoes.

The next dish that came to our table was Veg Lasagna and it was prepared in multilayers. Vegetable lasagna is an Italian dish that is typically made with lasagna noodles, various vegetables such as zucchini, eggplant, bell peppers, onions, and spinach, and a combination of tomato sauce and cheese. The vegetables are sautéed or roasted before being layered with the lasagna noodles and sauce, and the dish is typically baked in the oven until the cheese is melted and bubbly It is a popular vegetarian alternative to traditional meat lasagna.
Chocolate Blueberry Mousse
As we have done with the main course we were served with the desserts, the Chocolate Blueberry Mousse this time. Chocolate
Blueberry Mousse was a delicious dessert made with a combination of chocolate and blueberries. The dessert typically had a layered composition with a chocolate base layer followed by a layer of blueberry mousse and then another layer of chocolate mousse on top.
We also had the pleasure of trying out The Regency's speciality, the Goan Fish Thali, which came with rice, curry, fried kingfish, kismoor, and sol kadi. This thali is a complete meal in itself and is loved by both locals and tourists Th f h f d k f h

I was invited to The Fame to experience their food and service, and the great ambiance. Upon my arrival, I was welcomed by Ms. Charmaine, the PR and Marketing Manager, who guided me to the restaurant and offered comfortable and cozy seating. Shortly after, Chef Rodney joined us and our journey to a new culinary experience began.
Chef Rodney shared that at The Fame, they aim to offer not just delicious food, but a holistic dining experience that combines exceptional service, a delectable customcurated menu, and a great ambiance. The team put a lot of effort into the planning, discussion, trials, and testing of the food to ensure that it meets the highest standards Additionally, The Fame also caters to guests with Jain and Vegan dietary preferences.
Chef Rodney stated that the menu options are currently limited as the restaurant is still in a trial period. The menu will be expanded gradually based on guest preferences As we progressed, the chef provided us with a brief description of each dish served during our visit to the Fame.
SALAD WARM RED QUINOA IN APRICOT
The meal began with a serving of Warm Red Quinoa in Apricot Salad. This salad includes braised red quinoa, a protein and fiber-rich grain mixed with creamy feta, topped with fresh avocados, and green salad comprising romaine lettuce, iceberg lettuce, rocket lettuce, braised prunes, candied walnuts, and sliced olives. The salad is served warm and seasoned with various herbs and spices, resulting in a unique flavor It is a healthy and delectable dish that is perfect for those seeking a light and nutritious meal.
SPANAKOPITA
The following dish presented to us was a traditional Greek dish Spanakopita consisting of spinach, feta cheese, onions, and garlic mixed with pastry fillers. Spanakopita is a popular Greek savoury pie made of perfectly flaky phyllo dough with a comforting filling of spinach and feta cheese nestled in The dish is accompanied by a black garlic dip and cherry tomato sauce.

PANEER MAKHMALI TIKKA
Malai Broccoli Cutlet is a vegetarian appetizer made with Broccoli minced and mixed with Indian spices, fresh cream, and cheese. The mixture is shaped into small cutlets and shallow fried in butter until crispy and golden brown. The combination gives the cutlets a creamy and rich texture, while the broccoli provides a healthy twist to the dish and is served with the herbed yogurt dip. The Malai Broccoli Cutlet is also served with mint chutney
The next item that arrived on the table was Paneer Makhmali Tikka which is a very simple dish made up of tender paneer marinated with yellow marination using Indian spices such as saffron and it was filled with dry nuts and dry fruits The Tikka is cooked in the clay oven and served with the coriander mint dip.

The second dish in the main course that was served was Kolkata Style Aloo Dum Biryani. Kolkata Style Aloo Dum Biryani is a popular dish from the Indian city of Kolkata. It is a fragrant and flavorful rice dish made with long-grain basmati rice, potatoes, and a variety of spices The baby potatoes are cooked in Garam Masala and onion gravy tomatoes and basmati rice.
After we finished the main course, we were presented with a dessert called "Nature Delight". The presentation on the plate replicated a forest scene, with a wooden log filled with cream, pistachios, and prunes The mud was created using chocolate soil, and the bushes were fashioned from mint leaves dusted with gold dust. The mushroom stem was crafted from coconut cookies dipped in white chocolate, and the raspberry mousse served on top was like a perfect mushroom umbrella Overall, it was a creative and visually appealing dessert that tasted delicious.

Starting a new home business is never easy, and Amanda faced her fair share of challenges Building a customer base was the most daunting task, as she had just moved to Goa and barely knew anyone. However, with the support of her family and friends, she overcame this hurdle, and her brand, 'Hope & Faith,' became a hit. What sets Amanda's brand apart is the fivestar quality products at pocket-friendly rates She understood the impact of the pandemic on people's livelihoods and wanted to offer affordable prices without compromising on quality.
