Ingredients

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 cups fresh spinach leaves

1/2 cup fresh cilantro leaves

2 green chilies, chopped

1 onion, chopped

1 tomato, chopped

2 cloves garlic, minced

1-inch piece of ginger, grated

1 tsp cumin seeds

1 tsp coriander powder

1 tsp garam masala

1/2 tsp turmeric powder

1/2 cup heavy cream

Salt, to taste

3 tbsp oil

Method

In a blender or food processor, puree the spinach, cilantro, and green chilies until smooth Set aside Heat the oil in a large skillet or Dutch oven over medium-high heat.

Add the cumin seeds and saute until they begin to sizzle.

Add the onions, garlic, and ginger, and saute until the onions are translucent

Add the tomatoes and cook until they have softened Add the coriander powder, garam masala, turmeric powder, and salt, and cook for 2-3 minutes.

Add the chicken pieces and cook until they are browned on all sides.

Add the spinach puree and cook for 5-7 minutes, stirring occasionally.

Add the heavy cream and cook for an additional 2-3 minutes

Serve hot with rice or naan
