“When we came up with this concept we focused on three time zones in our 24 hour operation,” says Executive Chef Matt Rubens. “They are breakfast, daytime dining for families and pre and post clubbing. Sukhumvit Soi 11 was an obvious choice.”
FEATURED RESTAURANT ANGEL CITY DINER “When I was putting the menu together,” he says, “I wanted dishes from east to the west coast of the United States. Our beef and cheeses are all imported from Australia, to ensure a truly authentic American flavour our policy is to work with high quality ingredients and sell our food at an affordable price. Likewise to ensure we keep that commitment, our corned beef and pastrami is made in house. “ I started with the diner’s Monte Christo sandwich, an American take on the French Croque Monsieur, a grilled ham and cheese sandwich. The American variation uses French toast with an additional filling of turkey and and Swiss cheese. The French is more savoury this is more sweet with a garnish of cinnamon apple jam. I also tried a Reuben, a homemade corned beef melted Swiss cheese and a horseradish heavy Russian dressing served on toasted rye bread and served hot. Burgers are their best selling food item. The Angel burger is made with a 200gm Australian Angus patty, ground to the same recipe for all Eclipse outlets to ensure authenticity. Its topped with bacon, blue cheese, caramelised onions,tomato and mayo with melted cheddar and Swiss cheese. Jean-Sebastian Cardeau
Born in the Ivory Coast. He spent time growing up in Sengal before the family relocated back to Marseilles, France. Later Jean-Sebastian Cardeau graduated in drumming and percussion from the Musicians Institute in Hollywood, California. Few mothers would regard being a punk rock drummer as being a real job. It was little surprise when Jean-Sebastian’s suggested he found a job that would pay the bills. Not an unreasonable request so despite having never boiled and egg he decided to enrol at Le Cordon Bleu in Paris. He was heavily tattooed with punk hair and multiple body piercing, not exactly their normal student profile, but then on the positive side he was clearly highly creative. Giving him the benefit of doubt the administration felt he should at least be given a chance, while at the same time feeling he wouldn’t last the first month. In his first week he asked his instructor how to peel an onion and what type of knives should he buy. He was a quick learner, after two years he was in the top three in his class, the only French student, and the only one with zero previous cooking experience. From not exactly the best start he graduated as a diploma student. This obliged the school to get him placement in some very nice restaurants. The problem was he just didn’t like the vibe of a formal restaurant kitchen. He found he was much more comfortable working in pastry shops. Fate took him to Holland to focus the music side of his career, to do some studio work and perform in some concerts. That, of course, didn’t occupy all of his time so he contacted a culinary placement agency. He got a week’s work in an up-scale retirement home where he was far from impressed by the menu he was asked to cook. He came up with his own menu that was within the budget. It proved so popular that for the first time residents asked for a second helpings. In many ways he is a bit of a misfit a chef, not in the way he cooks, that’s flawless, but rather in the way in which he works. He doesn’t like to delegate and hates waiters due to their lack of professionalism, in his eyes they are a barrier between him and his customers. Having first visited Thailand seven years ago he discovered that in general he feels comfortable with the country and the people. Three months ago he came up with the business model of cooking two or three simple French dishes just for home delivery. The model works for him as he can cook the food he likes: simply cooked quality food where the customer can taste the true taste of the protein ingredient. He finds the quality of chicken and pork in Thailand is excellent. On his balcony he has a rotisserie that can cook up to 12 chickens at a time. He roasts, then seasons them with just a little salt, pepper and butter. Local potatoes he finds taste bitter; his solution is to boil them first to purge that taste, dice them and then fry them in butter. When roasting his pork its essential the meat isn’t in direct contact with the meat tray, so he sits the on a bed of sliced onions. “First thing in the morning I roast four chickens,” he says.”When I sell them, I roast another four which takes an hour and half. I only sell chickens roasted fresh that day. I want to offer my customers good French food, made with quality ingredients, cooked in simple way.”

It is customary for residents to visit the wat or Buddhist temples to pay their respects to Buddha.
