FEATURED RESTAURANT YAMAGOYA RAMEN

Khun Churn

There are water features with decking and tables in front on the street side of the restaurant. There is an entrance to the restaurant on this side for guests arriving on foot from Ekamai BTS Station or equally from the opposite site for guests arriving from the car park. The decor in the restaurant is cream coloured tables with low back light wood chairs, there is also additional counter seating. A unique design feature is the large wooden cube lampshades with horizontal Japanese text cut out of the wood. On the wall beside the door from the street hangs a flame orange and gold kimono with images of White cranes in flight. On the wall directly opposite a Japanese style Singha Beer poster, a very subtle indication of the link between the restaurant and the Thai brewery.

FEATURED RESTAURANT YAMAGOYA RAMEN Ramen with a Chinese style noodle soup, which is considered as Japanese soul food, is a stable dish that is popular by old and young alike. Yamagoya Ramen is a franchise run by Yamagoya (Thailand) Co Ltd which is a local joint venture with Japanese publically listed company Y.S.Food who has 42 years f o o d o p e ra t i o n s e x p e r i e n c e a n d i s currently managing 280 Ramen restaurants in Japan. Thailand is the base to expand the franchise operation not just in The Kingdom but the rest of Asia and Australia. What defines Yamagoya Ramen from other Japanese noodle soup companies is their Kyushu-style ramen from Japan’s most southern island. The base is a rich hearty soup made by slowly simmering pork belly still on the bone for a couple of days until it comes a milky white silky, rich, gelatinous broth. And then it’s served with Chinese style wheat noodles, that has the additional ingredient kansui, an alkaline mineral water that contains sodium carbonate and usually potassium carbonate, as well as sometimes a small amount of phosphoric acid. This alkaline solution makes the dish special as it toughens the proteins in the flour to create firmer noodles which increases their springiness, and is responsible for ramen’s signature golden yellow hue. The noodles are boiled and served in different flavour soups with a variety of toppings. Here they have two signature ramen but each has its own very unique taste. The first I tasted was their Yamagoya Ramen which is served in a large blue and white bowl and is one of the best selling dishes. A fragrantly tasty noodle soup with thin slices of rolled pork, ginger, spring onions and a hard boiled egg cut into two halves and a sheet of nori. The second was Tantan Ramen that is minced pork flavoured with sesame oil.

The red colour of the soup was an indication that this was going to be more spicy. The spice wasn’t immediately noticeable as I first put the food in my mouth rather the spice made its presence known in the after taste. There are no fresh chilies in this dish, the spice comes from chilli powder and is the one of the two that will appeal to those who like to turn up the heat in the taste of their food.

Then I tasted their Katsu Curry rice, this dish has deep fried pork escallop sliced into finger size pieces that is laid against a pile of rice and served with a very thick potato and carrot curry sauce and is accompanied by a light pork soup. The Japanese rice is short grains and more dense than Thai rice, the curry sauce relatively mild with just enough spice to make the taste interesting. Finally I tasted their Gyoza wafer which is made of a thin pancake similar to a won ton wrapper which has been folded around minced pork and onions and cooked on the griddle. This is a very comfortable snack dish that’s very easy to eat with chopsticks. When you are feeling peckish and in need of a simple affordable snack, think of Yamagoya Ramen, it’s tasty and easy to eat satisfying Japanese food there.

celebrity chef Chef Sonie “I was given the nickname Sonie when I was studying in the States,” says Chef Sonie,” and I gave it to the restaurant when we opened. I was born in Okayama and studied at Osaka Tsuji Cooking School where the course covered Japanese, Chinese, Italian and French cuisine, plus how to make desserts. After the graduation I went to Nashville Tennessee in The States, first job was in Japanese Teppanyaki Steakhouse for four years, and then for the same period in a traditional Japanese restaurant. It was where I met and married my Thai wife who was studying there. When she had graduated she wanted to come home to Thailand and worked for me as I was young and wanted to experience in living in another country, so that’s how I came to Thailand. My first restaurant in Thailand was called Kims where they served a mix of Japanese and Italian cuisine. Then I worked in the Japanese kitchens of the three Montien Hotel in Suriwong and Riverside in Bangkok and also in Pattaya. “I cook in the American style sushi bar style,” he says, “the rolls are much more creative and less traditional than in Japan. One of our best selling items is Sushi Pizza. I discovered this dish while living in America, the base is nori rather than bread onto which I place a layer of sushi rice, crumbled tempura batter, a mix of shrimp and crab stick, a touch of Japanese mayonnaise, avocado and ebeko fish eggs which I then bake in the oven for four minutes.” This dish has an interesting texture combinations with the softness of the rice contrasting with the crunch of crumbled tempura batter to create warm subtle flavours. “We serve Italian Spaghetti,” he says, “with a choice of either Italian and Japanese (Wafu) sauces. One the best selling is Wafu Spaghetti, which is made of smoked salmon ebiko cream and Salmon Roe. The difference between Italian and Wafu Spaghetti is that with the Italian the spaghetti is mixed into the sauce and served, while with Wafu the spaghetti is boiled and plated first, then the sauce is poured on top.” “From our main dish selection I would recommend Alaskan snow fish,” he says, “it’s served with shiitake mushroom in a lime butter soy sauce, being a fatty fish. It’s very popular with our Thai customers.” “I want to serve dishes that are not served in others restaurants,” he concludes, “as well as using new ingredients such as Italian porcini truffle oil paste. For example with my Hotate Truffle roll I take a slice of sushi roll and top it with panfried chopped scallops and shitake mushrooms cooked in a truffle oil and cream sauce. “
