The main course was Pan-roasted Mediterranean Branzino coated with a pine nut crust and served with a white wine with fine herbs. Branzino, often referred to as the region’s sea bass, has a mild flavor and is sweeter than most popular Mediterranean fish. The fish was perfectly cooked with a firm and moist texture that contrasted with the pine nut crust and the harmonious balance of flavors of the wine and herbs in the sauce. With the first two courses I enjoyed a Chilean Sauvignon Blanc, one of five white wines on a list a delightful affordable sips at onlyTHB 100 for a reasonable pour. I then moved on to an Italian Sangiovese, again from a choice of five red wines at the same affordable price. A crystallized raspberry gratinate was served before the warm oven fresh chocolate pudding with molten dark chocolate inside perfectly matching with the accompanying vanilla ice cream. As my espresso was served Chef Mario produced a bottle of Mirto Rosso, a sweet liqueur made from the myrtle plant which grows freely in Sardina. a hospitable gesture to conclude a delightful southern Italian dining experience.

Born in Thailand, Sukit Utisvannakul’s mother is Korean and his father Thai. After graduating from Chulalongkorn University with a bachelor’s degree in chemical engineering he was happily working as a project sales engineer with Universal Absorbents & Chemicals. That all changed when a year ago his mum asked him to give up his job and become manager of the family restaurant Salro Man in the Korean Plaza in Sukhumvit Soi 12. “I was initially reluctant to give up my career of choice to help my mum,” says Sukit, “and some of my friends questioned what I was doing. But I decided I would never know if it was for me if I didn’t try, so I took a week’s vacation to give it a go. To my surprise I found that I was happier in the restaurant than I had been in my office. Moving into the restaurant business allowed me to explore my creative side. I re-designed the restaurant with an emphasis on lighting to create more private space for guests. And although I don’t normally cook on a daily basis, I did venture into the kitchen to develop new dishes and to arrange a blind tasting with my friends (mostly Korean) to come up with the right flavors. “Korean’s prefer their style of fried chicken,” he says. “It’s different from the American variety. We marinate the pieces of chicken in a mixture of apple and pear, but the most important flavor element come from two sauces. Yangnyeon, a typical Korean dipping sauce with taste elements that are sour and sweet with a touch of spice. Korean chillies have a more intense flavor without the fire found in the Thai variety, which we combine with cinnamon and fresh black pepper. The second is Korean Terikayi made with soju, our country’s vodka-like rice liqueur, soy sauce, brown sugar and a dash of honey.” “I approached friends back in Korea who run Korean-style pizzerias,” he says. “They are working with us by sharing their recipes so I can introduce Korean style-pizza to Bangkok in June. They are vegetarian to suit the Sukhumvit customer profile. We take a New Yorkstyle thin crust base. Top with a New York-style tomato sauce using local vegetables to which I have added Korean chili for an authentic taste which is more sour with a subtle flavor and less fire than is typical in Thailand. Our Mozzarella comes from Chiang Mai. I am introducing a sweet potato pizza with a corn and mashed sweet potato topping. I combine boiled sweet corn pan-fried caramelized onions and black olives with roasted and mashed sweet potato with just a dash of cream for a smoother texture. “Fried chicken and pizza are as popular with Koreans as with Thais for casual celebrations with friends. Our innovations are in response to customer demands. My objective is to create a Korean tavern or pub serving creative modern Korean dishes. “Our signature beverage is Soju infused in house with ginger, vanilla bean and apple,” Sukit concludes. “We sell it as shots for a taster, or 250 ml bottles.”
