FEATURED RESTAURANT NIPPON KAI The name translates into English as Fresh from the Sea and that’s just what you can taste in any of their seven branches. This restaurant group was created seven years ago by a company that started business in 2000 supplying Japanese food products to

supermarkets and leading five star hotels. Five years later they expanded their business by diversifying into Japanese restaurants, serving a food that reflects all the country’s different styles of cuisine. They opened their first branch at Siam Paragon with a Japanese chef to create an authentic menu, to establish a central kitchen and to train their staff. Today they have six branches in Bangkok and one at Central Airport Plaza Chiang Mai. For now, their kitchen is run by a Thai chef with over 40 years experience of Japanese cuisine. To sample what they had to offer we visited their flagship restaurant on the 5th floor of Emporium shopping mall conveniently adjacent to Phrom Phong BTS station. Once you arrive in the Park Food Hall walk boldly to the back and it’s on the right hand side. CONTINUED ON PAGE 2 >>

FEATURED RESTAURANT NIPPON KAI There we discovered a restaurant that serves a very comfortable lounge style c a su a l din in g exper ien c e. The mai n dining area has a conservatory feel with a glass wall and ceiling for optimum daylight yet covered my cream fabric blinds to shield customers from the direct rays of the sun. Along the long side are granite tables for two, on one side the armchairs are fuchsia pink and on the other side beige with exotic flower. From here there is a unique view that shows almost Italianate symmetry of the garden and pond in B e n j a s i r i Pa r k . I n t h e m i d d l e o f t h e restaurant there are larger tables suitable for a family or group of friends. Above them you can notice hang cream colour lampshades with a burgundy sofa on one side and each of the two armchairs on the other: a truly relaxed yet elegant environment setting the right tone for the meal we were about to enjoy.

made, which is printed on a paper place mat in Thai to explain the meaning of the word sushi. It is to place fish or meat on the top of rice, marinated with vinegar and wrapped in a sheet of seaweed. It should be eaten with wasabi and fresh ginger, whose healthy properties kill bacteria. He went on to tell us the food presentation is very traditional, and there is no fusion sushi on

Nippon Kai’s strength is its cold kitchen, serving sushi and sashimi. Their Salmon and Saba (Makrel) comes from Norway. In fact, most of their fish comes from the cold waters of Europe simply because they find the quality better than sourced from Japan, while salmon is not a traditional Japanese ingredient, it’s the most popular item on their menu, and the group consumes on average 60 fresh salmon every month.

their menu. As the restaurant attracts a l o t o f f o re i g n c u s t o m e r s , t h e m e n u describes the dishes with the English name of the ingredient as well as photos, showing how each dish is plated.

Not everybody is comfortable with eating raw fish. If you are one of them we recommend you to try one of their best selling California Maki Rolls, originally created in America by sushi lovers who don’t like raw fish that much. All the ingredients of that dish are cooked. It’s made with crab meat, hard boiled egg and sticks of cucumber, rolled in a seaweed sheet and sushi rice. From the first bite you can taste the freshness of the ingredients; even the wasabi to accompany the soya sauce is fresh. This is served with a fresh salmon sashimi which is Special Combo #3 [order code 132-85] on Food by Phone menu. Emporium 662 Sukhumvit Rd soi 24, Bangkok 10110 Tel: 0-2259-9392

If you love avocado, their Green Caterpillar Maki [order code132-80] is a must try! It’s made with fresh salmon and avocado, wrapped with seaweed and rice, topped with thinly sliced Australian avocado. Half an avocado goes into each serving with its light fresh taste, being the dominant flavour. Another interesting one to try is Ikura Sushi [order code 132-61] with a slight variation in presentation to the previous dishes. With this one the rice is wrapped in seaweed, topped with salmon roe. The knife skills of Nippon Kai’s chef can be seen in their Special Combo #10 [order code 132-92]. This is a 15-combination of premium sashimi, salmon, hamachi (yellow tailed tuna), scallops, sweet shrimps, tuna, snapper and octopus, perfectly sliced for optimum taste and dining experience.

There is none fresher than Nippon Kai!

MANAGER OF the month David Bell This is a restaurant with the buzz of a bar, particularly on Tuesday, when their Margarita Madness offer all Margaritas at half price, and on Sunday, when as their neighbours, Cheap Charlie, are closed, they honour their bar prices.

David Bell Manager vit Road, Soi 11 1/23, Sukhum kok 10110 ng Ba Klong Toey,

On a busy night food and drink sales are roughly equal, although lunchtime food sells more. Food ordering tends to follow the gender divide. Girls snack on the tapas style dishes found on the top two thirds of the menu, while the guys are looking for something a bit more substantial, tend to order from the lower third. The majority of customers are expats from a wide range of ages from 20’s to 70’s, business is quite steady and doesn’t follow any seasonal trends. For anyone unfamiliar with the names of Mexican dishes there is a photo menu, so they can see what they want to order. They have a large Indian following due to the large vegetarian possibilities on the menu. Tacos are quick, easy to eat and cheap, so they are the best seller. Their most popular filling is shredded Australian beef with lettuce, cheese and pico de gallo. They also have a double decker, where we take the crisp shell taco wrapped in a soft tortilla with a layer of beans to cement the dish together. Charley Brown’s second most popular dish is Quesadillas filled with thinly sliced chorizo, crumbled feta and steamed fresh spinach. The Passion Fruit Margaritha is the best selling drink that started as a one night special, then got onto the drinks list by popular demand. The second most popular is Sangria, easy drinking but moorish and strong tasting. All their drinks are made with fresh ingredients. Much of the restaurants memorabilia came with the restaurant brought to Bangkok by the original owner Dan Loveland who wrote the tune “Billy Don’t Be A Hero”. Shelves of empty beer cans from around the world and on the wall behind the bar the front quarter of a Ford Torrino, the same style is driven by Dirty Harry. On the wall you can notice the artwork of 17 photos of famous Mexican that were given the Andy Warhol look and printed at MBK. The collection of Mexican sombreros is the result of an on-line trade David made with a guy in Mexico looking for Thai fisherman’s pants. Their most unreasonable customer has to be the guy who complained that a dish he ordered, had he checked the menu he would have known this. His reply was “I don’t read menus”. No problem, David changes it for something else, the easiest solution and Charley Brown’s has always had a reputation for being fair.
