FEATURED RESTAURANT Indus Indus is located on the former site of the Whole Earth. When the healthy vegetarian restaurant went bust, the Sehgal family took over the 1960’s art deco standalone wooden house with its own garden. They slowly

renovated the property. The result is an Indian dining spot with three elements; a n e l e gan t din in g ro o m , a Mo gh ul inspired cocktail lounge and a large outdoor tropical garden. The interior is decorated with an antique black water kettle, fine Indian art, exquisite brass water pipes and intricately carved window shutters and doors from the summer palace. Forget any preconceived notions you may have about Indian food here from day one they have served light health cuisine. To achieve this goal they brought Kashmiri Chef Sonya Sapru, author of international bestselling recipe book “Zaika”, to craft the menu. FEATURED RESTAURANT INDUS Chef Jimmy has been with Indus since they opened in 2004. He was trained by Chef Sonya to cook her style of Kashmiri cuisine. Instead of using the traditional Ghee they have opted for the more healthy option of rice bran oil as it reduces cholesterol. Each recipe has been carefully prepared, based on the ingredients being used, so that each dish is unique, health conscious and delicious.

Kashmiri Rogan Josh [95-30] was brought to Kashmiri by the The Moghul’s and the dish gets it’s reddish colour from ground Kashmiri chilies which have a mild taste. Another Indus signature dish, a tender mutton curry delicately simmered in a blend of Kashmiri spices made with Chef Sonya’s personal recipe. In keeping with their culinary philosophy the gravy is much lighter than other examples of this curry found elsewhere in Bangkok.

The menu takes guest on a culinary journey through the Northwest Frontier that was once the Indus Valley civilisation. The cooking methods used then remained virtually unchanged today. All tandoori items are prepared on long metal skewers lowered into large clay ovens and cooked over burning charcoal which are slowly turned by skilled chefs until cooked to perfection. The chefs s t ar t mak i ng the i r curri e s e arl y i n the morning, first checking the produce freshly arrived from the market. Spices are freshly ground and several base gravy sauces are slowly cooked throughout the day and constantly being tasted and adjusted to get unique irresistible curries.

Spicy Goan Prawn Curry [95-101] curry is a light coconutty curry from south-west India with layers of flavour, depth of tartness with a hint of sweetness from the onion and coconut balanced by the sourness of tamarind. There version has a light almost soupy texture wi th a de l i ci ous s mooth taste that is sympathetically mild. The pieces of prawn are both large and generous.

From their starter selection we recommend you to try Indus Kebab-e-Malai [order code 95-86] an Indus signature dish and the most popular dish on the menu. A moist tender chicken kebab, where the meat has been marinated in yoghurt, cream, cheese and spices. Amritsari Machli Tikka [95-157] cubes of sea bass dipped in spiced gram flour, marinated and carefully lightly cooked to just the right point. Indus has their fish delivered fresh every two days. Spiced Lamb Kati Roll [95-5] shredded lamb wrapped in a thin egg Ramali a ‘handkerchief’ thin flat bread. Neatly and uniformly rolled and wrapped in waxed people. The filling is very compact and as the meat is shredded it’s easy to eat without causing the wrapping to unroll. The taste is pleasantly spiced yet not over powering.

Their bread menu lists 20 different Indian bread all home made with our meal we tried Jalapeño Naan and the more spicy Paranta Murchi (chili). For dessert a must try is the traditional Indaian dessert Pistachio Kulfi served as a scoop in individual orange Le Crusset casserole dishes, cross cultural food presentation that works perfectly. The restaurant opens at 8.30pm. That’s just in time for office workers to enjoy their breakfast platter before they start their business day. A plate of eggs sunny side up, bacon, sausage and a slice of white toast, accompanied by either orange or lemon juice freshly squeezed and a mug of freshly brewed coffee. As Bangkok is a city where people live their lives on different timelines, it’s available throughout the day. By mid morning there is a steady demand for croissant, freshly squeezed orange juices and coffee. Lunch can start early, guests ordering salads and sandwiches from 11.30 am, as they do well into the afternoon. The classic Quiche Lorraine, a fixed menu item is always popular. There is always a minimum of one vegetarian quiche being served, it could be the mint and goat’s cheese tartlet or the newest addition a tasty pumpkin and Emmantal cheese. Whichever is available will be served with a crisp green salad. “We are very lucky to have staff that care for the customer, the business and have been with us for a long time,” says Chef Nok. “We don’t have a static customer profile, it’s different during the week compared to the weekend. Monday to Friday 60-70% of our customers are expats whose in the 30-40 age range who are looking for a light healthy snack post yoga and pilates. At the weekend it’s different, at these times we have many more Thai families. They come in between 10am - 3pm for brunch style meal. We currently close at 8pm but are working towards staying open later in the near future.” The food style is essentially French bistro. Croque Monsieur - classic grilled ham and cheese sandwich is one of the popular menu items. They also serve it in two variations: Croque Madame topped with a fried egg and Croque Mademoiselle topped with a slice of tomato. Tartine, a slice of toasted baguette, is another popular snack item for customers to dip in their French-style morning coffee bowl. French Onion Soup was created as a breakfast dish for the workers of Les Halles vegetable market after their nightshift. Here it’s popular with a different nightshift crowd, clubbers on their way home looking for a hangover cure. Cafe Tartine serves freshly brewed coffee with a splash of caring customer service.

The Royal Ploughing Ceremony

This highly ceremonial Brahmin event that marks an auspicious beginning to the new planting season every year. Presided over by The Lord Chamberlin. He leads two sacred oxen in a ploughing ritual around the Royal Field as they sow rice seeds onto the ground.
