Republic Day special Tiranga Dhokla Republic Day and Independence Day are the two days when all Indians get freshly instilled with the feelings of nationalism and patrotism. Though we simple Indians hardly can do anything great with the feeling, but atleast we feel proud to be an Indian. Just like in todays' busy world we need to mark special days for showing our love for lovers, husbands, wives, parents and almost every other relations, these two days in India give us opportunities to bring up our deep-seated love for country to the surface. Different peoples have different ways of portraying their love, I being a bong, any form of love gets better expressed by me through food. We just had our Republic Day; and drenched in the patriotic feeling, I decided to start our day with tasty Tiranga Dhokla. Its quite easy to make and is very tasty apart from being a feast to the eyes. Here goes the recipe for you too.
IngredientsIdly batter- 750 gm Oil- 2 tbsp Fruit Salt or Eno-2 tsp Orange colour- 5 drops (Alternately you can use 2 tbsp of red chilli paste for natural orange colour if you don't mind the heat.) Blanched Spinach and coriander paste- 4 tbsp For tadkaOil- 1 tbsp Rai- 1 tsp Green chillies- 3 (Cut lengthwise) Curry leaves- Few
Procedure1. Take the idli batter and add salt and oil. Mix well. Next add fruit salt or ENO and again mix thoroughly. 2. Divide the batter into three equal parts. In one part, add the orange colour and mix. In another, add spinach paste and mix. 3. Now give water to boil in a idli making pot. Take a dhokla steamer with a little higher lid and grease it. 4. Now pour the green batter and steam it for 5 minutes. Remember it is not for cooking it entirely but just to set it such that it doesn't get mixed up with the layer of other colours. 5. Now pour the white batter over the green one and again steam it for another 5 minutes. 6. Finally pour the orange batter and give a final steam for 10 minutes. Open the lid, insert a knife to check if done. If the knife comes out clean, its done. Put of the heat and allow it to cool down. 7. In a meantime, prepare the tadka. Heat oil in a tadka pan. Once hot, add rai. It will splutter. Then add curry leaves and green chillies. Fry for a minute and then immediately spread over the dhokla. 8. Now cut the dhokla into squares and serve. A healthy and tasty recipe to start a National holiday. Have fun.
