Gulkand and Khoya Burfi Recipe Preparation Time: 30 mins Ingredients
Cooking time: 30 mins
Serves: 2
Khoya or Mawa: 500gms Ghee: 3 Tbsp Powdered Sugar: 2 cups Gulkand (easily available in the market): 2 Tbsp Cardamom Powder: 1 Tsp Almonds (cut into two): 6 to 8
Method
Take a thick bottom pan and add gulkand to it. Keep the flame on low heat. For additional flavor, you can add 5-6 fresh rose petals. Keep stirring gently until you notice soft lumps. Remove from the fire and keep aside to cool. Now, take the khoya and gently mash it with your hands. Do remember to grease your hands before mashing the khoya. It will make it soft and smooth. Add powdered sugar and mix well. Transfer the khoya mixture into a non-stick pan. Ad 2-3 tbsp of ghee and keep the flame on high for approx 2-3 minutes. Turn the flame low and keep stirring continuously. When you notice that ghee has started separating and the mixture has turned into light brown color, remove it from fire. The consistency of the mawa mixture should be thick but at the same time it should be granular with a very soft texture. If you feel that the mixture is dry, add 2-3 tbsp of ghee more and mix well. Add cardamom powder and keep mixing. Take around ¼ th of the khoya mixture and add gulkand to it and put it together in a pan and keep stirring it on low flame until you get a red colored mawa mixture. Allow the mixture to cool down. Spread the remaining mawa mixture on a greased plate with edges. Then it is the turn of the red colored mawa mixture on the top and then again a layer of white mawa mixture. Garnish it with dry fruits of your choice like almonds, pistachios, and cashew and add a bit of silver varak. Let the mixture settle down. When it cools off, cut it into square in the form of burfi and refrigerate for 10 minutes. Serve your guests and you savor it too. Happy Akshay Tritiya to you all!
