‘TROPICAL ESCAPE’ DIVER CANTINA ON THE SHORE OPENS IN HIGHLAND PARK

As the weather thaws and Midwesterners crave tropical warmth and flavors, third-generation restaurateur and longtime Chicagoan, Adolfo Garcia is pleased to bring his incredible Diver food and beverage concept from Mexico, Malibu and downtown Chicago to downtown Highland Park at 1850 N. 2nd St. The official grand opening was set for late March. Diver Cantina on the Shore offers traditional family recipes presented in a modern twist from beachside towns found in Mexico. “This is not your ordinary Mexican street food,” says Garcia, who transitioned his former Summer Inn space into Diver Cantina on the Shore to honor his culinary roots while addressing another restaurant name confusion. “I chose to bring a restaurant concept to Chicago’s North Shore and didn’t want anything to stand in the way of offering my exquisite culinary creations and cocktails to this fabulous community.” “I’m so pleased to be continuing my reach throughout the North Shore, that has always been home to me,” says Garcia, a native of Mexico and a noted designer. ”By adapting our very successful Diver concept to accommodate the North Shore crowd, we are certain Diver Cantina on the Shore will please all who dine here!” Diver Cantina on the Shore exudes authenticity at the heart of all menu offerings. This Mexican restaurant and bar offers a full menu of fresh, high-quality ingredients where the traditional family recipes are presented with a modern twist from beachside towns in Mexico, including Tulum, Sayulita and Baja. The menu offers the best south-of-the-border seasonal ingredients infused in light dishes and bold cocktails. Meanwhile, Garcia’s other restaurant, The Diver, remains open at 601 N Wells St. in Chicago’s River North neighborhood. Continued on page 44

This location surprised me because their menus, coffee cups, decor and more said Honey Jam Café, even though the outside sign said Butterfield’s. I had the corned beef hash skillet which consisted of corned beef hash, onion and green pepper over shredded potatoes and topped with two eggs any style. Two fluffy pancakes came with my breakfast, which put me over the top. Breakfast places are typically very busy, especially on weekends, and this one is no exception. Get there early or be prepared to wait. CHAI’S ASIAN BISTRO, 4748 W. Peterson Ave., CHICAGO; 773481-0008. Nice selection of Thai and Asian cuisine. Dine-in, takeout and delivery are available. Our meal included an order of edamame, some crab rangoon and a couple orders of their specialty maki rolls. The California maki roll had crab, avocado and cucumber, and the veggie roll had cucumber, mushroom, spinach and avocado. For my entrée I had the cashew chicken with brown rice. I stopped in to pick up some coffee cake. They had so many choices. I picked up a blueberry coffee cake which had plenty of topping, and one of the Seven Sisters coffee cakes that had apricot, cherry, cheese and pineapple filling. They were so good. They are known for their European-style bread, so I picked up a loaf of their seven grain bread, which was amazing. SCHMALTZ EXPRESS, 390 W. Front St., WHEATON, Ill.; 331-8063670. This is a traditional deli that serves breakfast sandwiches, signature sandwiches, hot dogs, to-go items, desserts and more. Their regular-sized sandwich is an “overstuffed,” which means it has a lot of deli meat. You can get a half-stuffed sandwich by request if you prefer. I ordered an Old New Yorker, which is Schmaltz’s famous corned beef (or pastrami) on seeded Jewish rye with Russian dressing and creamy coleslaw. I grabbed a Dr. Brown Cherry Soda to go with my meal. It was a great-tasting sandwich. TEXAS ROADHOUSE, 161 S. Gary Ave., BLOOMINGDALE, Ill.; 630-580-1277. This is a steakhouse with many locations that serves American fare, has a Southwestern feel and Texas-themed decor. I stopped at the bar to have a pre-dinner drink. The menu featured a plethora of steaks, ribs, pork chops, chicken, salmon and shrimp. Fresh and hot rolls with honey cinnamon butter were served before our salad came. They were delicious. My entree consisted of a 14oz. Ft. Worth ribeye, with a loaded baked potato and buttered corn. It was all cooked to perfection and portioned just right. We went to see “West Side Story” and decided to stop here and get a bite to eat. They are known for their wood-fired specialties. Our meal included some hummus and sun-dried tomato flatbread. Our entrée was the beef short ribs, which were tender and very good, served with whipped potatoes. WILD FORK, 2340 W. Belmont Ave., CHICAGO; 833-300-9453. This specialty grocery, where everything sold is frozen, is a meat lover’s paradise. From fish and seafood to steaks, bison, ostrich and even alligator, Wild Fork also sells appetizers, prepared side dishes and desserts. The bacon-wrapped shrimp and scallops are a standout, as is the pork loin. For dessert, the key lime pie, which has two servings per package, is a real treat and perfect for a datenight at home.

Vienna Beef, the legendary Chicago company synonymous with the city’s iconic hot dogs, Italian beef and other products, has announced Twins Gyros (4870 N. Harlem Ave., Harwood Heights, Ill.) was inducted into the Vienna Beef Hot Dog Hall of Fame. Bob Schwartz, vice president of Vienna Beef, bestowed the honor on the local vendor that has been providing exceptional customer service and quality food for 25 years. It has been a quarter of a century since Twins Gyros began its reign on the Northwest Side. It was originally started by two Chicagoland iconic Gyros operators. Hence, the name “Twins.” Two other owners took over for the next several years until Demitrios Mougolias, better known as Jimmy, and his wife, Lisa Mougolias, grabbed the reins in 2008. The husbandand-wife team rehabbed the restaurant, fine tuned the menu, and together with employees Cecilio and Jessie, helped perfect this neighborhood gem. Vienna Beef hot dogs, sausages and other products have been a part of their successful food formula from the beginning, which also features Twins famous gyros, Greek salads and chicken. In addition to their commitment to customers, Jimmy and Lisa continue to be very active in their community, sponsoring Little League and park baseball teams, charities through Ridgewood High School, area schools and churches, as well as community special events. Their daughters, Stephanie and Christina, are also “all in,” finding time to work at Twins Gyros while being active in high school sports and activities. “We are grateful for our customers, our staff, our community and suppliers like Vienna Beef who have made an award like this possible,” said Jimmy Mougolais.

11 _ Tom Colicchio Invests in Startup App for Reviews Tom Colicchio, a wellknown chef who also cohosts the popular cooking challenge show Top Chef, has choice words for Yelp. “Anything besides Yelp,” he said. Restaurateurs aren’t fans of letting everyone write online reviews about their meals. Yes, online reviews can be helpful, but they can also be woefully uninformed or fraudulent. “I mean, when you have restaurants that haven’t opened yet getting reviewed, you know something is wrong,” he said. As a restaurant owner/ investor, Colicchio has long been interested in alternatives to Yelp and other services to collect feedback from diners. He’s among several investors in restaurant software startup Tattle, which said it had raised $5.5 million in a Series A round led by Contour Venture Partners. Tattle’s software lets restaurants send online surveys to their customers to learn about what they liked and didn’t like about their meals, and the quality of the service they received. Restaurant managers can then tap the service for analysis of the feedback to uncover trends. Tattle plans to use its funding to expand its small artificial intelligence and machinelearning team, said Tattle CEO Alex Beltrani. The goal is to offer restaurateurs machinelearning tools that would let them forecast sales based on customer feedback. The hope is that Tattle can present the “complicated models” it is developing in a simple format on its user dashboard so that restaurant managers “don’t feel intimidated by some of the tech,” Beltrani said. -Source: Fortune

High-Fiber Diet May Reduce Dementia Risk We're always hearing that we should eat more fiber. It's known to be vitally important for a healthy digestive system and also has cardiovascular benefits like reduced cholesterol. Now, evidence is emerging that fiber is also important for a healthy brain. In a new study published in the journal Nutritional Neuroscience, researchers have shown that a high-fiber diet is associated with a 1/4 A reduced risk of developing dementia. In a large-scale study, over 3500 Japanese adults completed a dietary survey and were then followed up for two decades. Adults who consumed more fiber, particularly soluble fiber, were less likely to go on to develop dementia. Illinois Celebrates 50th Anniversary of Senior Food Program

In March, the Illinois Department on Aging joined the Administration for Community Living and local senior nutrition service providers to celebrate the 50th anniversary of the national Senior Nutrition Program. Since 1972, the Senior Nutrition Program has supported nutrition services for older adults. Funded by the federal Older Americans Act, local senior nutrition programs serve as hubs for adults age 60 and older. Each year in the U.S., up to half of older adults are at risk of malnutrition, and more than 10 million face hunger. Illinois’ Aging Network provides nutritious and culturally appropriate meals to older adults at more than 393 congregate dining sites. Home-delivered meals are available to older adults who are unable to cook or shop for food. With the temporary closure of in-person dining sites during the COVID-19 pandemic, the Aging Network responded to a 50% increase in need for home-delivered meals, providing an average of nearly 1 million home-delivered meals per month since March 2020. Today, many reopened group dining sites are providing packaged grab-and-go-style meals as an alternative option while demand for home-delivered meals remains high. -Source: STL News

Bane or benefit — that’s what restaurateurs have wondered the past few years every time they see a delivery service driver pick up an order. Are they investing in future customers or further eroding small profit margins? The large third-party delivery service (TPDS) vendors (i.e., Grubhub) control over 80% of TPDS market share and cost local communities millions of dollars every day. Commission rates, over 30%, are unsustainable and jeopardize the existence of independently owned restaurants. Not only do they charge high commissions, they gather customer data from the restaurants. From this the TPDS roll out ghost kitchens, competing with the independent restaurants they serve. Already operating successfully in large markets, GoLoCo operates a TPDS model that focuses on providing a low-cost, quality customer service delivery model for and owned by local independent restaurants and drivers. GoLoCo facilitates the development of a cooperative and provides it with IT, back-office support, marketing and driver fleet to provide delivery services, at lower costs. By forming restaurant-owned cooperatives, independent restaurants are able to create their own delivery services. GoLoCo’s mission is to create, manage and provide technology infrastructure to locally owned restaurant franchises so that they can wean themselves from the national delivery providers. Cooperatives can reduce the effective commission rates from 30% to 40% .-.:::::::-;:::_,__ to less than 10%, provide superior customer service, protect customer data and preserve the market for farmers seeking to market their products to the segment of the restaurant sector that uses them. Since independent restaurants comprise the vast majority of the sector that utilizes locally sourced products, it’s important to protect these businesses in order to preserve the market for local farmers. The GoLoCo delivery model isn’t hypothetical or a business plan: They are operating and displacing the VC/big money backed players in every market they’ve entered - such as Las Vegas; Tampa, Fla.; Knoxville, Tenn.; and Omaha, Neb., to name a few. Molson Coors to Eliminate Plastic Six-Pack Rings

Over the years, breweries large and small have dreamed up six-pack ring alternatives, though in the end, the primary switch brewers have made is returning to traditional cardboard packaging — especially in regions like the United Kingdom where major brands like Budweiser, Guinness, and Coors have all ditched their plastic for paper. Now, Coors is moving that initiative across the pond. Coors Light recently announced plans to become “the largest beer brand in North America to move away from plastic rings” by investing $85 million “to begin the transition to fully recyclable and sustainably sourced cardboard-wrap carriers later this year.” Coors Light is America’s second best-selling beer brand after Bud Light. From there, Coors Light’s parent company — Molson Coors — is planning to switch their entire North American portfolio to cardboard wrap carriers by the end of 2025. White Castle Expands Its Robotics Deal

Fast food hamburger chain White Castle announced plans to further expand its work with Miso Robotics and install Flippy 2 in 100 standalone locations. The announcement is the latest milestone for the partnership, which began in 2020 with the deployment of the original Flippy to a White Castle in the Chicago area. Following an upgrade to Flippy 2 in 2021, White Castle's commitment to Miso's technology was cemented after seeing an immediate positive impact on daily operations and the productivity of its team members.

Changes Its Name to 'Stoli' Outside of Russia

One of the world’s most iconic vodka brands will be officially changing its name (outside of Russia, at least) due to Russia’s recent invasion of Ukraine. Stolichnaya Vodka — the version produced by the Stoli Group — will now simply be called Stoli Vodka. Stoli Group wrote that this rebrand ending its use of the full Stolichnaya name came as a “direct response to Russia’s invasion of Ukraine” with three factors playing into the decision: “the founder’s vehement position on the Putin regime; the Stoli employees determination to take action; and the desire to accurately represent Stoli’s roots in Latvia.” The dissolution of the Soviet Union began a still-ongoing debate over whether Stolichnaya remains a Russian stateowned brand or if it became a private entity — and both sides make a version of the vodka. In Russia, Stolichnaya Vodka is state-owned and that “Stoli” will keep the full name. But for most of the rest of the world, the United States included, Stolichnaya Vodka is produced in Latvia by the Luxembourg-based Stoli Group, controlled by the exiled Russian billionaire Yuri Shefler. “We have made the decision to rebrand entirely as the name no longer represents our organization. New Amtrak locomotives — made in the U.S. and cleaner, faster and more fuel efficient than predecessors — recently began service pulling the famous Amtrak Empire Builder train westbound from Chicago to Seattle. Locomotives 301 and 302 are among the first of 75 locomotives being delivered through 2024. These ALC-42 locomotives are an important part of Amtrak’s sustainability initiative and are considerably more environmentally friendly than their 1990s predecessors.
