MISSION BBQ HONORS THOSE WHO SERVE
MISSION BBQ opened its doors for business on September 11, 2011. “Ten years after our world changed forever, in some small way we wanted to change it back,” said Bill Kraus founder of MISSION BBQ. “As the founders of MISSION BBQ, we strive every day to remind everyone what makes our country great—its heroes.” Two friends who were both patriotic and who believed in running a business with meaning and purpose also shared a love for great barbecue, and an idea was born. Bill Kraus and Stephen Newton set across the American landscape from Texas to Kansas City, the Carolinas to St. Louis to discover the secrets of what makes the definitive American barbecue. Bill Kraus founded MISSION BBQ with the desire to serve, honor and thank America’s heroes. The path that led him to the creation of the business included stints as a paperboy, caddy and bartender. Bill spent 25 years in the business of sports, and was a part of the original cast that built the Under Armour brand. Continued on page 20

Chicago Restaurant Week Reimagines ‘First Bites’ into ‘First Give’ Moment
Organizers at Choose Chicago celebrated the spirit of community with the launch of a “First Give” moment and donation to a worthy cause. On March 19, Choose Chicago Board Chair Glenn Eden (pictured above left) visited chef Michael Airhart (right), founder of Taste for the Homeless, and gave him a check for $5,000. This gesture represented a new take on Chicago Restaurant Week’s annual kickoff event—First Bites Bash— which traditionally features tastings from participating restaurants. Due to COVID-19 restrictions, Choose Chicago instead elected to “First Give” instead of “First Bites.” Each year, an honorary chef is traditionally featured at First Bites Bash, and in recognition of the challenges so many have had these past twelve months, Choose Chicago wanted to recognize the admirable efforts of chef Airhart and support his program. “While much has changed this year, it was so important to keep our key traditions alive, including our incredibly popular annual Chicago Restaurant Week,” said Glenn Eden, board chair, Choose Chicago. A success story in his own right, Airhart began his life’s work as an eight-year-old in a single-parent apartment on Chicago’s South Side. It was there that he learned how to cook, sew and provide for himself, two brothers and others in the city’s largest public housing development, Altgeld Gardens. Everyone came to know him as someone feeding the other kids. Little did he know that decades later, this innate spirit of hospitality would evolve into Taste for the Homeless. Airhart started the Taste for the Homeless program eight years ago and now serves more than 1,500 meals daily seven days a week at four locations starting at 5 a.m. He always has extra clothing and toiletries on hand for those in need and has partnered with North Side Housing and Supportive Services for weekly meal-giving and countless fundraising efforts. “I am honored to feed our fellow sisters and brothers as God guides me and the organization to do. I could not pull this off without God leading me, having my beautiful wife by my side, the volunteers and other organizations who come out to help in any way they can, and all the people that make donations,” said Airhart. “It is such an honor that Taste for the Homeless was chosen by Choose Chicago ... for that and more, I thank you.” Chef Mike plans to soon launch a mobile food truck, complete with a shower in the back, for Chicago’s homeless community.

White Castle, Coca-Cola Enlist Artist to Celebrate Slider’s 100th Birthday
White Castle, a family-owned business since 1921, officially passed the century mark on March 10 and became the first fastfood hamburger chain to reach the milestone. When the iconic brand and its longest-running partner, Coca-Cola, considered innovative ways to commemorate the occasion, they turned to Bryan Moss, a Columbus, Ohio, artist to design augmented reality (AR) cups for the restaurants and a large-scale mural for the home office. The three collectible augmented reality soft drink cups come alive with sound and motion when viewed through a smartphone.

In the window they had a display of pastries that all looked amazing. I had to order more than one; so, I tried a blueberry muffin, almond scone with jam and a cinnamon doughboy donut. Plus, I ordered a Hot Chocolate that was delicious. Check out their full menu, they have breakfast items, breads and sandwiches too. CHELA’S BIRRIA TACOS 1449 Indianapolis Blvd. HAMMOND, IN 219-655-4055. This is good sized restaurant. You can sit at the counter or at a table. They are known for their Authentic Birria recipe. I ordered two chicken tacos and a steak taco. The flavors were so explosive. On the menu you will find tostadas, quesadilla’s and even a Ramen Birria item. If you want to try a sampler of everything get the Super Chela Plate. DORFLER’S MEAT MARKET 1182 McHenry Rd. BUFFALO GROVE, Ill 847-459-3060. This place was a great find. It’s a meat market offering a big selection of steaks, poultry and seafood. They also have some grocery items and a deli counter where you can get sliced sandwich meat and cheeses. I ordered a few sandwiches; Corned Beef, Turkey and Roast Beef which came with choice of side. I tried the Cole Slaw and potato salad. You will find a knowledgeable staff and outstanding customer service here! DO-RITE DONUTS & CHICKEN 7451 183RD St. TINLEY PARK, Ill 708-840-6036. They are located in the Gas N Wash. It’s a gas station with the C-Store on one side and the donut shop is on the other. All the donuts looked so good and fresh. I tried a Cinnamon Old Fashioned donut which was absolutely delicious. They are also known for their Chicken sandwiches. There is some seating available to enjoy your coffee and donut or meal. HEINEN’S 2503 Waukegan Rd. Bannockburn, Ill 847-2670698. This upscale grocery store is immaculate. The aisles are spacious making it easy for you to shop. They have a beautiful bakery section, excellent meat department, deli, produce, freshly made sushi bar, huge wine section and a Wellness and Vitamin section along with all the regular grocery staples. They offer a big selection of ready to eat prepared meals, soups and salads. Heinen’s has two other locations in Illinois on Waukegan Rd.;1020 Waukegan in Glenview, and 201 S. Waukegan in Lake Bluff. JIMMY’S RESTAURANT 1440 Rand Rd. DES PLAINES, Ill 847824-2778. Full service restaurant serving breakfast, lunch and dinner and they have a bar. They offer daily specials. I usually order breakfast from here. My favorite omelet is the Spinach, Feta and Tomato. The omelet is so big and fluffy and you get plenty of feta in it. My second choice is the Extra Thick French toast. They have a huge menu. Portions are plentiful and the prices are very reasonable. Plus, they have a beautiful outdoor patio if you want to dine outside. SHELL 4758 N. River Rd. SCHILLER PARK, Ill 847-678-3110. Open 24 hours. Fill up your gas and pick up some snacks. They have a car wash there and something I’ve never seen before, a Pet Wash. They offer a lot of good munchies here. I picked up a couple snack size bags of Twizzler cherry nibs. Plus, some chips that included some Cheetos Torciditos; cheese & chili flavor Cheetos that I’m hooked on and some Andy Capp’s Hot Fries.

In a sign that people were eager to get them, cars were lined up around the block near the historic Arcada Theatre in St. Charles, Ill. 500 containers of Ron's famous meatballs, packed with fresh basil and roasted garlic, were handed out in 15 minutes. "Now that we do see somewhat of a light at the end of the tunnel, we want to let everyone know that we’re here and that it’s OK to be happy again. It’s OK to celebrate, and it’s OK to eat meatballs,” Onesti said. Additional Breaks for Restaurants in COVID Recovery Bill
The relief bill passed by Congress contains more benefits for restaurants than just the $28.6 billion in direct aid. The landmark COVID-19 relief bill signed into law by President Biden earmarks $28.6 billion in direct aid to restaurants. First, the basic benefits for restaurants: The bill’s biggest benefit for restaurants is undoubtedly the fund, in part because it’s aimed solely at the industry. The Revitalization Fund will be administered by the U.S. Small Business Administration. Its funding will be distributed in grants in amounts of up to $10 million per restaurant company, but not more than $5 million per location. The grants are not taxable as income. To ensure the money goes to small businesses, only places that had fewer than 20 locations as of last March 20 are eligible. Publicly traded companies are ineligible.About $5 billion is reserved for truly small food-service ventures—places that had 2019 revenues of less than $500,000. Extension of a key payroll tax break: Restaurants are the most likely users of the Employee Retention Tax Credit, a provision that allows employers to write off up to 70% of what they spent to keep employees on their payrolls despite the economic impact of the pandemic. The credit is taken against the employer’s portion of Social Security taxes, or up to $7,000 per quarter per employee. Increased PPP spending: The fund is intended to complement the PPP, not replace it. It provides the PPP with an additional $7.25 billion in available funding, presumably for second and first-time loans from the SBA. Increased food-assistance funding: Many restaurateurs are unaware that participants in the federal food assistance plan known as SNAP, for Supplemental Nutrition Assistance Program, can account for significant portions of a value-oriented operation’s sales. Grecian Kitchen has been around since 1996. It’s a family owned and operated restaurant. I’ve been dining there for over 10 years. They offer dine-in, pick-up and delivery. You can order online or you can simply pick up the phone and tell your order to a real person for pick-up or delivery. That personal service is still available from them. The staff working there does an outstanding job! From the employees answering the phones, to the delivery drivers, everyone is very friendly. During the pandemic, they had a chance to remodel and upgrade their dining room giving it a fresh new look. Coming this spring, they are planning to expand their outdoor seating by adding some tables in the front of the restaurant. This is a fast food restaurant, where family recipes are incorporated into the menu. They specialize in some of the best Greek Rotisserie chicken I’ve ever had. It’s the seasoning and marinade that gets you hooked on it. The seasoning for the chicken, Greek potatoes and Greek green beans are all family recipes. They even offer homemade rice pudding. I usually order the ½ Greek chicken with double Greek fries which are seasoned with oregano and feta cheese. You get a choice of two sides with the chicken; you can choose rice, Greek potatoes or Greek green beans. My orders have included the Greek salad, gyros sandwich, pork souvlaki, chicken kebabs, the skirt steak sandwich and the turkey burger. There are so many options. Everything I have ordered from them has been excellent. The menu includes; burgers, gyros, hot dogs, Italian beef, ribs, salads, wraps and so much more. The owner Harry Eikosidekas is very creative. He has a Burger of the Month, and a Featured item Special. Last time I was there, the Featured Item Special was Greek Nacho Fries which were fries topped with gyros meat, tsatsiki, feta, onions and tomatoes. They offer a variety of French fry choices that include cheese, Buffalo, Garlic and Greek style. They always have a different flavor creation shake on the menu. Grecian Kitchen is located at 3938 Dempster St. in Skokie, Illinois. This is a small, high-volume restaurant is located on Dempster and Crawford. Even amid strong competition they do very well. Climate Change Is Threatening Food Storage
Climate change poses significant dangers to global food supplies as rising temperatures make storage more difficult, the Associated Press reports. Food around the world is stored outside after harvest, before processing, but rising temperatures and other altered weather patterns threaten to drive prices higher as more food is lost and producers are forced to install costly equipment to protect food stores. Rising temperatures will make it easier for insects and mold to destroy grain stores in Sub-Saharan Africa, and elsewhere. In Michigan, potato farmers have long been able to rely on fans and cool air from the September harvest to late spring to keep their potatoes fresh. But the annual period in which outdoor air in the region is cool enough to store potatoes will likely drop by as much as 17 days in the next 30 years.

Court Ruling Clears Way for Hydroponics to Join National Organic Program A U.S. District Court in San Francisco has ruled that USDA was correct in certifying organic hydroponic operations as eligible for the National Organic Program. It was a victory for the Coalition for Sustainable Organics and a defeat for the Center for Food Safety. It represented traditional organic producers who believe that without using soil, something cannot be organic. “This case stems from an ongoing debate about whether hydroponics, a form of soil-less agriculture, may be certified organic,” wrote Chief Judge Richard Seeborg for the U.S. District Court in Northern California. Food Network Airing Cannabis Cooking Show
Food Network’s “Chopped 420” is a spin-off of the popular “Chopped” series, in which four chefs battle it out using challenging foods. As the name of the new series suggests, it will explore cannabis cookery. The host is comedian Ron Funches, and judges include chefs Esther Choi, Luke Reyes and Sam Talbot. The show is on discovery+. More Meat Eaters Want Clean Labels Even with the growing availability of meat alternatives, many Americans are reducing rather completely eliminating their consumption of animal proteins, with the added caveat that they are doing so while seeking out meat raised in more ethical manners with cleaner labels, reports Packaged Facts in the market research study “Vegan, Vegetarian, and Flexitarian Consumers.” Packaged Facts' survey data published in the report reveal that among all U.S. consumers, twice as many (49%) consider clean label options important when grocery shopping compared to 24% of those who consider clean label options irrelevant. I then fixed her our glazed salmon, which was her favorite meal and our server sang happy birthday to her and brought her a piece of birthday cake! Worst Part of Job: The worst part of the job would be if there were no more customers coming through the doors to allow me to wow them with great customer service and awesome food! Most Humorous Kitchen Mishap: When I was in culinary school at the Academy of Culinary Arts in Mays Landing, N.J., I was employed at Caesars Atlantic City. I was in the bake shop portion of my apprenticeship, and was told by Chef Pierre to make pâte à choux. I didn’t measure any of the ingredients, thinking I could create my own recipe. Needless to say, I messed up the recipe. Chef Pierre was furious! He made me stand outside of the bake shop looking through the window for eight hours until I got the technique down to make pâte à choux correctly. Favorite Food to Prepare: Homemade fresh pasta and homemade fresh pizza. What part of the job gives the most pleasure: Having the opportunity to try and develop my staff, which includes my managers, supervisors and line employees. Also it gives me great joy to have the opportunity to service and feed the thousands of customers we have. If you couldn’t be a chef, what would you be and why: I would be a foster parent. There are many children who are without parents, and I would love to be their parent and show them love and care for them. It’s a lifelong dream of mine! Best advice you ever got: Always treat others as you would like to be treated. Also to lead by example and give flowers to the ones you love while they’re still with you. Artopolis Bakery-Café Evolves to Serve Its Customers
Founded in 1999, Artopolis is a successful Greek bakery-café,-market concept that has become part of the fabric of Chicago’s Greektown neighborhood. Located at 306 S. Halsted St. in a modern loft-style space with a light airy feel, Artopolis is an upscale scratch bakery-café producing beautiful sweet and savory items. In addition to the bakery items, they also have a full bar, wine by the glass menu, specialty coffee menu and retail section featuring imported Greek foods and spirits. The business is operated by two men who have deep roots in the restaurant business: Partners George N. Reveliotis, who grew up in the restaurant business and principal of Reveliotis Law, is joined by Olympia Foods chairman Andre P. Papantoniou, who together plan to continue bringing high quality, very flavorful foods to the operation. “We use many organic ingredients as well as products from the very best producers worldwide. We want quality and service to be our hallmark, which is why we are constantly trying to improve the food and customer experience. We feel fortunate that many guests are visiting more frequently and that we are seeing new faces who are becoming regulars” said Reveliotis. Starring on the menu is their Greek country bread, which takes 3 days to create. The dough ferments on the first day, rises on the second day and is slowly baked on the third day. The dough includes several secret ingredients including Greek honey. Other remarkable menu items include their “Artopitas,” which are house- made pastry puffs stuffed with fresh spinach, spring onion, leeks, dill and feta, another filled with Greek feta and Kasseri cheeses, egg and mint, and yet another with portobello mushroom, Swiss and Kasseri cheeses complemented by sweet onion and red pepper. Their signature sandwiches are served on house-made bread and include a chicken tequila sandwich made with hormonefree chicken breast, Roma tomato, arugula, avocado mash and a tequila lime aioli. They also have chicken fajitas served on pita bread, along with the more traditional beef and lamb gyro and chicken gyro. New to the menu is their Siracusa-style pan pizza, which is a Greco-Sicilian pizza prepared on a housemade focaccia-style crust, made with four cheeses, fresh basil, organic Greek oregano, San Marzano tomatoes and choice of toppings. Additionally, as dine-in restrictions continue to loosen, Artopolis plans to add many more dishes such as the Greek chicken platter that comes with grilled free-range chicken, Greek fries, Greek salad and their special bread. Cargill to Invest in Soy Processing Cargill plans to invest roughly $475 million in its U.S. soy processing capabilities, including modernizing the plants to make them more efficient and expanding operations at its network of crush facilities, the company said in a statement. Some of the improvements include faster unloading of oilseeds and loading of products, increased capacity and improved logistics. All of these efforts are aimed at getting Cargill’s customers quicker access to soybased ingredients. Phillips Edison & Company (PECO) announced that it has executed a 2,384-square-foot lease with Dave’s Hot Chicken, which will be the newest addition to Naperville Crossings in Naperville, Ill.,and the first Dave’s in the Chicago market. “We’re excited to bring Dave’s Hot Chicken to the Chicago area, and Naperville Crossings is the perfect launching point for the brand in the market,” said Raj Patel, president of the Hari Group, which owns the franchise. “As a lifelong Naperville resident, I’m excited to bring Dave’s Hot Chicken to the town I love—the restaurant will be a perfect addition to the popular shopping center.” The co-founder, Dave, is a chef who trained in Thomas Keller’s Bouchon restaurant organization, and he came up with a simple process: take the best quality chicken, prepare the chicken in a proprietary brine, and after deep frying, top the most tender chicken in the world with one of seven signature spice blends. Dave’s Hot Chicken is a Los Angeles-based restaurant chain named for co-founder and chef Dave Kopushyan, who started selling hot chicken during a parking lot pop-up in East Hollywood with four childhood friends in 2017. Matt Idzikowski owns three restaurants in downtown Rockford, Ill., and says he's struggling to hire employees. “It’s a challenge right now,” says Idzikowski. “Not only to train new people from scratch with no experience because that takes time, but just even getting people in to apply.” But he says another major issue he’s facing is enticing people to come back to work when they may have steady unemployment benefits. Lola Renner is the owner of Josef’s in Rockford and says she’s encountering the same issue. This low staffing issue put her in a bind recently. “Most of our customers have already been vaccinated and are coming out like crazy. We’re turning tables left and right away because we don’t have the staff to take them. Which is not a time restaurants can afford that because we’re trying to get back on our feet.” -Source: WREX
Former President of Kendall College Heading to NRA The National Restaurant Association has hired Texas Restaurant Association CEO Emily Knight as chief collaboration officer and EVP of industry relations, a newly created job intended to strengthen the association’s voice in speaking for restaurants of all sorts, including small independents. Coming from one of the industry’s largest state associations, Knight is also expected to help strengthen the ties between the national organization and its state affiliates. She describes her mission at the National Restaurant Association as “coalition building and driving change,” and sees the job as “a role that would bring us together with one voice.” Part of that focus will be on improving communication among all constituents and parties within the National Restaurant Association. Knight started her career in Pizza Hut’s Management Training Program, after earning a degree in hospitality management from Boston University. She served as a catering manager of a hotel, but most of her career has been spent in education. Prior to taking the top job at the Texas Restaurant Association, she served as president of Kendall College in Chicago. She holds a doctorate in higher education from Walden University.

KFC Partners with Meals On Wheels to Help Seniors Kentucky Fried Chicken is donating one million pieces of chicken, this time dedicating its worldfamous secret recipe to support seniors across the country who have been adversely affected by the COVID-19 pandemic. As part of this initiative, KFC is partnering with Meals on Wheels America to help provide meals to homebound seniors. From now through May, KFC U.S. is donating boneless, skinless chicken breast filets to local Meals on Wheels programs in select markets that Meals on Wheels programs will cook and deliver to seniors. Along with a one-time product donation to Meals on Wheels America from KFC U.S., KFC franchisees across the country will, dedicate a case of chicken per restaurant to cook and provide to seniors in their communities. Each local restaurant will determine where that donation is directed. The Simple Greek, a build-your-own, Mediterranean fast-casual franchise founded by Marcus Lemonis of CNBC’s “The Profit,” has been acquired by WOWorks, the parent company of Saladworks, a national fast-casual salad franchise. WOWorks acquired two other brands in 2020, including Garbanzo Mediterranean Fresh, a fast-casual Mediterranean restaurant, and Frutta Bowls, a fastcasual concept serving superfood bowls, fresh fruit smoothies, oatmeal bowls and more. When the “World’s Most Magical Celebration” begins Oct. 1 at Walt Disney World Resort, surprises await guests during the 50th anniversary event.
