HARD ROCK CASINO OPENS IN GARY

The Hard Rock Casino Northern Indiana celebrated its opening May 14 with a legendary Guitar Smash (pictured above left) featuring Tito and Marlon Jackson, Mark McGrath of Sugar Ray and Pete Wentz from Fall Out Boy. Musicians Kym Mazelle, Crystal Taliefero and Deniece Williams, all of whom are Gary, Ind., natives, also participated, as well as Hard Rock International COO Jon Lucas; Chairman Marcellus Osceola of the Seminole Tribe of Florida; and Matt Schuffert, president of Hard Rock Casino Northern Indiana. The $300 million casino and entertainment destination includes a 200,000-square foot entertainment complex with a massive gaming space, five food venues, an on-site sports book, a retail shop and a 1,954-seat Hard Rock Live performance venue. The Jackson family, also from Gary, is featured prominently throughout the property. The impressive 37-foot-tall guitar marquee at the entrance to the building is modeled after Joseph Jackson's famous guitar that changed the world and was the start of the Jackson 5. Upon entering the casino, guests are greeted by a spectacular guitar chandelier artwork modeled after that same guitar.

EDISON PARK INN, 6715 N. Olmstead Ave., CHICAGO; 773-7751404. When I’m in the mood for a great cocktail in a friendly bar, I love to visit the Edison Park Inn. The drinks are good and the staff is friendly. They have a bowling alley on their second floor available for private parties, and if you are there at the right time, you might even see a ghost! The space dates back to the 1920s and some say there are friendly spirits that live there. There are stories of employees hearing bowling pins being knocked down or things moving, even when the place is empty. FARMER’S BEST MARKET, 23 W. North Ave., NORTHLAKE, Ill.; 708562-5800. This is a beautiful full-service grocery store. Their produce section is impressive. In one of the display cases, they had a big selection of cut-up packaged fruit along with a selection of cut-up ingredients to make guacamole. They offer a lot of Mexican specialties and interesting items. They have a huge meat department, a big selection of tortillas, tostadas and chips. I had to get a few different brands to try. They have a good-sized bakery in the front of the store. JIM’S ORIGINAL, 1250 S. Union Ave., CHICAGO; 312-733-7820. Open 24 hours, this is a Chicago fast food institution. They have been around for over 80 years. It’s a no-frills place. Walk up to the window, place your order and stand outside and eat it or eat in your car. I’ve done both. They have one of the best Maxwell Street Polish sausage sandwiches I’ve ever had. It comes with mustard and grilled onions and sport peppers served on a soft bun. The flavor is incredible. Their pork chop sandwich is really good too. I ordered both and they come with fries. JET FOODS, 998 Army Trail Road, CAROL STREAM, Ill.; 630-3200022. Recently opened, this grocery store offers fresh produce, meats, hot bar and deli, a coffee bar, lots of grab-and-go items and more. The Jet Fuel Coffee Bar grabbed my attention as soon as I walked in. They serve specialty coffee here and ice cream in the warmer months with plenty of seating and HDTV. There are lots of sales in their flyer; I saw plenty of weekly deals and specials. Every staff member I interacted with was friendly, from the deli clerk to the checkout cashier. The store manager informed me there were full-slab rib specials during the summer, which sounded great to me. I will be back to shop here more often. JUNEBUG CAFÉ, 4944 W. Irving Park Road, CHICAGO; 773-8530911. This cozy coffee shop, with locations in West Town and Portage Park, offers a little taste of New Orleans with its chicory coffee and heavenly beignets, which are 3 for $5. They also serve sweet tea; gumbo; and handheld meat and veggie pies, which come with a zesty sauce for dipping. The veggie version is a puff pastry packed with red beans and rice, Monterey jack cheese, green pepper, onion and spices. I can’t wait to go back. MAGGIANO’S LITTLE ITALY, 4999 Old Orchard Ctr., SKOKIE, Ill.; 847933-9555. They never disappoint. The food and service are always spot-on here. They start you off with warm bread, olive oil and cheese. Plus, the portions are ideal for sharing or taking leftovers home. I’ve dined there a few times this month. The first time I stopped in for lunch and had the lunch combo which was a salad; I chose the Maggiano’s salad, which had bacon, blue cheese, onion and house dressing with a half sandwich. I ordered the meatball sandwich. When I went for dinner, I had the stuffed mushrooms, Maggiano’s salad and the lasagna. NICKY’S OF BEVERLY, 10500 S. Western Ave. CHICAGO; 773-2333072. I went on a Saturday afternoon and the place was very busy. The team behind the counter offered friendly, fast and efficient service. The menu is huge and is written out on a chalkboard on the wall. I ordered the gyro dinner, which came with gyros, two pitas, salad with feta and olives, fries and tzatziki sauce. That container was pretty stuffed, more than enough for two people. I also ordered some onion rings. The food was great! They have a Milk Bar at the end of the counter with tubs of ice cream too. Very tempting!

Cat-Su Sando quickly became one of Chicago's most unique restaurants following its opening in fall 2020. Born from chefs Will Schlaeger (Next, Saison, Blackbird) and Shawn Clendening’s (Oriole, Saison, Blackbird) mutual regard for Japanese cuisine and culture, the craft Schlaeger and Clendening are continuously constructing is distinctive in that it honors the Japanese ideals of precision and grace, while simultaneously infusing moments of their own authentic joy and light-hearted humor. The culinary team draws inspiration from Yoshoku, a Western-influenced style of Japanese comfort food derived from the turn of the century. Schlaeger and Clendening’s take on the katsu sandwich, a dish most indicative of Yoshoku cuisine, inspired the two to share their take on Japanese food with Chicago. The concept opened as a cloud kitchen in fall 2020 with plans for a brick-and-mortar location later this year.
Milwaukee’s Five O’Clock Steakhouse Celebrates 75 Years In honor of their 75th anniversary, the Five O’ Clock Steakhouse will sponsor monthly fundraisers and promotions. Each month they will support a different community organization as a way of saying thanks to the people that helped them thrive since 1946. Five O’Clock specializes in serving the finest steaks and seafood paired with a notable wine list and classic cocktails, as well as outstanding personalized service. Five O’ Clock Steakhouse is the only supper club left in the Midwest region. The term “supper club” refers to a specific dining style in which the guest begins with a cocktail at the bar, where they are greeted by a host who takes their order. Moving to the dining room, the table is set with salad, warm bread and a relish tray complete with olives, pickles and hot peppers. The evening ends with entertainment, making dinner last into the night. Five O’Clock Steakhouse is at 2416 W. State St. in Milwaukee.
Jimmy John's hits the road The first food truck for the Jimmy John’s brand is rolling through Danville, Ill. Franchise operator Patrick Wampler, who owns and operates six stores, is piloting the food truck at a local college and a sports complex, according to a report at The News Gazette. After being in a different career for 24 years, I had an opportunity to partner with a friend at a restaurant. As I learned the business and incorporated my sales background, it was time to open The Dogfather.
Q: What makes Dogfather Hot Dogs unique? A: The Dogfather was built with the image of family and community. Using my marketing and sales experience, I want to make a place that people felt comfortable and feel like family. We care to remember people's names, families, and everything else in the community. You don’t get that kind of attention anywhere else.
Q: Congrats on the latest award you won! That's a big deal, tell us a little about it. A: The Dogfather was just voted Best Gyro and Best Hot Dogs in Chicago by the readers of The Daily Herald! What I have learned being in this business is that people LOVE their Gyros!

Distillery in Scotland Hires Dog in Order to Help with Quality Control Dogs have further solidified their position as our best friend: A well-trained pooch in Scotland has been employed by Grant’s Whisky as a quality control expert to help the distillery make better booze. Rocco, a one-year-old cocker spaniel, has started working at the Grant’s facility in Girvan, a town in South Ayrshire, Scotland, tasked with sniffing imperfections in the wooden casks where the whisky is aged and reporting the problem to Chris Wooff (yes, that is his real name), Grant’s associate global brand director, according to Scotland’s Daily Record. “The sense of smell of a dog like Rocco is 40 times stronger than a human’s, and we’ve specially selected and trained Rocco to pick up the scent of anything that’s not quite right as the whisky matures,” Wooff told the paper. “Rocco’s ability to ‘nose’ a very large number of casks in a short space of time means he is a fantastic addition to our team of craftsmen.” -Source: Food and Wine

A 200-year-old bottle of wine that was supposed to be sipped by the famously short French military leader Napoleon Bonaparte sold for $30,000 at an auction. The sweet South African vino — a blend of “ripe and raisined” red muscadel and pontac — was slated to be sent in 1821 to the island of St. Helena, where Napoleon had been living in exile, according to the Cape Fine & Rare Wine Auction house in Stellenbosch, South Africa. But he died in May of that year. It was snapped up by a mystery bidder from the U.K. at the auction in South Africa. Despite its age, the wine is still believed to be drinkable because it was re-corked in 2019 to preserve flavor.

NICK’S BARBECUE THE PLACE FOR RIBS
It all started when Nick Andricopulos’ grandfather opened a Malt Shop & Hamburger restaurant in the 1940s, which eventually became Nick’s Fat Boy in the ‘50s and ‘60s. The Roseland neighborhood restaurant closed in the 1970s. After working as a bread salesman and learning from his customers, Nick decided to revive the family business. In 1986, he opened his first restaurant in Burbank, and Nick’s Barbecue was born! Nick’s is known for their barbecued baby back ribs. The full slab rib dinner comes with choice of three sides. They have two kinds of sauces to go with the ribs: Nick’s Original and Nick’s Hot & Spicy. Both were delicious, and they sell bottles of sauce to go. Nick’s specialties include: barbecued chicken, barbecued rib tips, barbecued pulled pork and barbecued brisket. Favorite Food: Grilled cheese and ripe tomato on caraway rye bread with tomato soup. Memorable Customers: One of our regular customers at Praga came in about three times a week and always had “whatever I felt like making.” It kept both of us from getting bored, and I found myself looking at the markets and whatever food publications for new ideas. He had to relocate for work and sent me a new chef coat after he was settled in. He was definitely the most memorable. Worst Part of Job: Missing out on events with family and friends. Most Humorous Kitchen Mishap: Just a couple of years into my career, I was working at a restaurant so small that the only fryer we could accommodate was a pot of oil on the stove with a thermometer that needed constant maintenance so that it remained at a steady 350 degrees. On a slower night, another cook and I got to chatting and didn’t realize the oil in the fryer pot had started to flash and was soon on fire! My co-worker, Wendi, grabbed the pot, confident that the only option was to throw the burning oil outside. I swung the door open wide for her (because I agreed 100% with Wendi’s decision), and she proceeded to toss the oil across the grass behind the restaurant. As it was late summer and hadn’t rained in a few weeks, the grass immediately caught fire! We then took off our aprons and chef coats and raced around the yard, smothering each splotch where the oil had splashed while onlookers at the town’s train station probably wondered if they should help. We finally put out the last of the flames, went back into the kitchen, filled up the pot with fresh oil and were casually chatting in our T-shirts when the chef/owner walked in the front door for service a few minutes later. Favorite Food to Prepare: Cassoulet What part of the job gives the most pleasure: Cooking! The physicality of cooking on the line and seeing first-hand the pleasure people experience while eating my food is one of the most cathartic I know. If you couldn’t be a chef, what would you be and why: Writing for TV. I grew up with “The Simpsons” and before cooking came along, I was sure I’d be writing for them one day. (It’s) not too late!! Best advice you ever got: “Burn ‘em,” a chef’s advice in reference to pretty much anyone or anything that bothered me. I never did (on purpose), but it helped me realize that most things aren’t worth going to extremes over. By the way, this chef had actually burned me at least once, and he was not one to emulate in many, many cases. Other than family, who was your greatest culinary influence? One of the first chefs I worked with, Chef Roland, really took me under his wing while I was in culinary school and helped me learn the “why” part of cooking. I received a lot of step-by-step instruction in my school training, but he helped me see it all play out in real-life situations. He also drilled in me the fundamentals of mise en place and organization that I have used in every aspect of my life since.

Americans Spent Less on Food in 2020, Report Says In 2020, Americans spent $156 trillion on food, 5.3% less than in 2019. It was the first such year since 2009, when the economic downturn commonly known as the Great Recession was under way. The Doris Kelley Christopher Illinois Extension Center will serve as the future home of Illinois Extension, uniting six state extension offices currently on campus into one space. The center, which will be integrated into the open spaces of the Arboretum, will serve as a bridge between discovery research conducted at the U. of I. and the translation of that work into communities around the state. Illinois Extension, the flagship outreach effort of the University of Illinois Urbana-Champaign, offers educational programs in all of Illinois’ 102 counties. This center will serve as the gathering space where statewide extension and 4-H efforts come together. After graduating from U. of I., Christopher spent her early career working for Illinois Extension, teaching home economics to adults and 4-H youth in DuPage County. Americans bought a record $56.5 billion of organic food last year, an increase of nearly 13% from 2019, as shoppers flooded grocery stores due to stay-at-home orders during the pandemic, said a survey released by the Organic Trade Association. Certified organic food accounted for almost 6% of grocery sales. “The pandemic caused abrupt changes in all of our lives,” said Laura Batcha, OTA chief executive. “We’ve been eating at home with our families.” The OTA said food sales “are expected to stay on a strong growth path in 2021,” although not as rapid as in 2020, the fastest rate in a decade. The survey was released as part of the Natural Products West Expo. Sales of organic fruits and vegetables totaled $20.4 billion, accounting for more than one-third of all organic food sales and 15% of all fruits and vegetables sold in the country. Sales of organic meat, poultry and seafood surged by 25% during 2020, to $1.7 billion. Outbreaks of COVID-19 at packing plants slowed U.S. meat production last spring and resulted in high meat prices for most of the year. Consumers are likely to continue their pandemic patterns of shopping online and preparing meals for themselves, said a trade group for grocers, hailing “this new era of athome meals.” Drawing on research into grocery shopping habits, FMI-The Food Industry Association said 58% of shoppers are eating at home more frequently and 49% said they are making their own meals more often than before the pandemic. What Do the Letters on Fire Extinguishers Stand for? The letters on fire extinguishers stand for the class of fire it can help extinguish. The commonly found red fire extinguisher has three letters: A, B and C. n A Class A extinguisher can put out ordinary combustible fires such as wood and paper. n Class B extinguishers are for use on flammable liquids fires such as petroleum, gasoline, oil, paint, propane and butane fires. n Class C extinguishers are suitable for use only on electrically energized fires. n An ABC fire extinguisher is a multipurpose fire extinguisher. It can extinguish multiple different types of fires with a multipurpose dry chemical that smothers the burning materials by separating the fuel from oxygen in the air. Class K Fire Extinguishers for Commercial Kitchen Fires. Even though the ABC fire extinguisher may be able to temporarily put out the cooking fire, the Class K fire extinguisher with its wet chemical agent will help make sure it does not reignite. Unlike the common Class ABC multipurpose fire extinguisher, there is a requirement that Class K fire extinguishers must be placed within 30 feet of the cooking line. Also, all fire extinguishers must be properly mounted. So, back to answering the original question: A Class K fire extinguisher should be used to put out a cooking fire, especially in commercial kitchens. The menu offers traditional Greek cuisine. You will find skordalia (a Greek garlic spread), salads, pastitsio and moussaka, Athenian pork chops, lamb chops, roast leg of lamb, kebabs and fresh seafood. They have four types of gyros: original, chicken, pork belly and hand stacked steak and lamb. They are open for lunch and dinner and also offer catering.

Technomic Launches TIndex to Track American Food-Service Industry Technomic released the first TIndex (Technomic Index), which is designed to provide a benchmark to help analysts and industry leaders track the health of the food-service industry in the United States. The TIndex is a built using a variety of data sets available to Technomic, including operator transaction, consumer visit tracking and distributor sales information. The data is then weighted and evaluated to align with a representation of the total food-service industry. “We have been tracking the foodservice industry since 1966,” explains Joe Pawlak, managing principal at Technomic. “The TIndex allows us to provide a snapshot of industry health built on years of historical data and industry expertise. This month, the TIndex is showing the beginning of a recovery for the industry, as vaccinations increase and states begin to ease COVID-19 restrictions. Throughout 2020, the TIndex remained below 85, but we have seen a consistent uptick since January 2021.” Technomic will release the TIndex every month, beginning with March 2021, and has historical TIndex data starting with the beginning of 2020. The TIndex is the Technomic’s index on the total U.S. industry, reported monthly, comparing performance to the same month in 2019. The TIndex includes inflation and allows for industry growth analysis on a year-overyear basis for the same month. Arthur Treacher’s Many of America's favorite restaurant chains from the 1970s have fallen by the wayside, living on only in our memories. One such relic of that era has recently announced a comeback: Nathan's Famous said it's planning to revive the iconic fishand-chips chain Arthur Treacher's. According to QSR Magazine, Arthur Treacher's will be relaunched as a ghost kitchen, with plans to open physical restaurants down the line. The once widespread chain, which is credited with bringing authentic-style fish and chips to the American fast-food scene, had as many as 800 restaurants during its peak. Food Network renewed the Crookshosted series for its sophomore season nearly a week after it wrapped its first. “Chef Boot Camp” follows Crooks as he helps three restaurant chefs, who have been nominated by establishment owners, to spruce up their lackluster skills and performance in the kitchen. With their jobs on the line, Crooks takes them through a series of grueling food challenges to determine who has the talent and passion to succeed and who is better off leaving the restaurant for good. The National Safety Council urges all Americans to plan ahead and practice defensive driving over long weekends and road trips this summer. “Many people choose to travel by car, which has the highest fatality rate of any major form of transportation based on fatalities per miles traveled,” said Mark Chung, vice president, roadway practice at NSC. Tesla Files for Restaurant Trademark
Tesla CEO Elon Musk is looking to enter the restaurant business, according to a new trademark application with the U.S. Patent and Trademark Office. According to the May 27 filing, the electric vehicle manufacturer is looking to introduce restaurant services, pop-up restaurant services, self-service restaurant services and takeout restaurant services. The USPTO notes that the application is “awaiting examination” and will be reviewed by an attorney approximately three months after the filing date, or Aug. 27. The application features a drawing of Tesla’s iconic “T” logo, which would be trademarked for use by the restaurants. Electrek, the first to report the story, notes that the company has also recently applied for trademarks for the word and company stylizing of Tesla. Musk has been teasing the plans since 2018, when he tweeted “gonna put an old school drive-in ... at one of the new Tesla Supercharger locations in LA near the 405.” -Source: Fox Business
