It is hard to believe, but with this issue we are starting our fourth year of publishing Fort Bend Christian Magazine! Our first issue was the August/September issue back in 2014, with only 28 pages. Since then, we’ve grown by almost 50%; we directly mail out to 32,000 homes, and can be picked up in 320 locations, including most churches. Our mission is to provide cutting edge stories important to today’s Christians, and interesting editorial content your entire family can enjoy. We value all reader feedback we receive, and would encourage anyone reading this letter to send suggestions, ideas, and input on how we can improve our magazine. Our primary goal is to keep our readers happy and spread a family-friendly and Godly message, and we are continuously working on ways to enhance that. The project that we are working on now is promoting our social media, particularly our Facebook page. A Family’s Journey to Healing Meet the Sebastian family – husband and wife Jeff and Tiffany, and their three children Alivia, Arica and Grayson. Besides being parents, Jeff is the general manager of Classic Chevrolet Sugar Land and Tiffany is a local RE/MAX agent. Jeff and Tiffany clearly remember the day their unborn daughter, Alivia Layne, was diagnosed with a very rare abnormality known as a cleft lip and palate, accompanied by recurrent bilateral cholesteatoma. “We didn’t want our beautiful daughter to live a life in and out of hospitals and taking multiple medications daily,” Tiffany said. “So, the search was on. We immediately began digging in and doing our own research.” In 2004, Tiffany recalled that there weren’t the resources there are today. The family started with removing processed foods from their diet. Tiffany says they are full of preservatives, GMOs, gluten, pesticides, chemicals, and other unnatural ingredients. “We then worked on cleaning out our pantry,” Tiffany said. “Starting with the boxes of wonderful convenient cereal and instant oatmeal, the pudding cups, fruit packaged in high-fructose corn syrup, and potato chips.”

They replaced them with whole foods, whole fruits and veggies, quinoa, millet, amaranth, lentils, organic crackers, chickpeas, quinoa pasta and organic spices to name a few.

“Talk about a long process, finding our diet and lifestyle fit took us nearly five years,” Tiffany said. “We’ve tried too many to mention. Now we are fully committed to an all organic, locally grown, non-GMO, chemical-free, plant-based, vegan lifestyle.” Tiffany says you don’t have to be vegan to benefit from an organic, locally grown, non-GMO, chemical-free, and plant-based diet. The switch to 100% organic and locally grown, farm fresh food they believe changed their lives forever. “Let’s just say I spend a lot of time in the kitchen,” Tiffany said about all of the home-cooked meals she prepares rather than dining out. “It’s [worth] far more than stopping the symptoms of disease and staying out of the doctor’s office. It’s experiencing a level of health that many of us have never known.” Tiffany admits it was hard and expensive to make the change at first. However, she says after the basics are covered, the local farmer is actually very reasonable. She says, hands down the time and expense associated with getting well and staying well are far less than the costs of being sick. The Sebastain family agrees the transition was a struggle, but they encourage their friends, family and community to do their best to make improvements on their nutritional choices and lifestyle. The best way they say is to take one day at a time. “It has been eye opening.” Jeff said. “Not only did Alivia get better, but our entire family had improvements from medical issues we had suffered from for years. What you put in your body determines your health and well being.” A lot of time and research has gone into the Sebastian family’s journey. To the point, where Tiffany has furthered her education in order to help other families find their own healthy lifestyle. Family, friends and even strangers reach out to Tiffany for guidance and help. Some have children and family with serious medical conditions, and others just want to live a

healthier lifestyle. “We just want people to be aware and take action in their own lives,” Jeff said. “We believe God gave us everything on Earth that we need to be healthy and to live a life of vitality.” As parents, Jeff and Tiffany believe their children are the most important stating. “If we bring them up in a healthy and balanced environment, the only environment they will know of is that one. They are the future.” Together, the Sebastain family has their eyes set on the bigger picture. As a family, they try to be the best versions of themselves daily. The Back-to-School Social Network By Dr. Rebecca Deurlein In the next month, you will be bombarded with all things “back to school.” Aside from the sales flyers and ads, you will be counseled on how to prepare your kids for the first day and how to help them get back to an academic mindset. But what is often ignored - and, ironically, WAY more important to your children - is the social aspect of returning to school. Your kids will tell you that the beginning of a new school year is a social crapshoot. Or, as Forrest Gump’s mom would say, “You never know what you’re gonna get.” Some friends haven’t seen one another in two months and are worried about reconnecting. Some fade away over the summer, while new, unexpected friendships have blossomed. Some former enemies have become friends, and vice versa. And some are in limbo, neither party knowing where they stand with the other. It’s amazing that all this change can happen over a short summer break, but it does. When it comes to kids, especially teenagers, relationships evolve and devolve at warp speed. I can guarantee you that your kids are more worried about where they stand with their peers than just about anything else. I promise you they’ve spent more time thinking about whether their friend group is still intact than they have about their summer reading assignment. So let’s tackle what you can do, as parents, to

help your kids transition smoothly into the back-to-school social network. First, do not be shy about jumping into this conversation with your children. They’re already thinking about it, so you’re not introducing a problem that hadn’t occurred to them. Start by asking, “So what do you think your friend group will look like this year?” Then sit back and Continued on page 14

listen. Try not to interrupt. Let them talk through where everyone stands with one another and pay attention to their reaction to the changes. Second, if they are having problems with a friend, share your own experiences and insights to help them work through an appropriate response. For instance, regardless of what other people might have said and done, always encourage your children to take the social and ethical high road. Everyone should have a bottom line, and they should refuse to lower themselves to actions they’ll regret later. For some, it is refusing to say a bad word about another person. For others, it’s avoiding confrontation and choosing to let friendships die slowly. Some prefer to get everything out in the open, but their bottom line is that they will avoid hurtful statements and focus on how they feel. The thing is, your kids are still figuring out who they are and what their bottom line is. As parents, you know them better than anyone, so you can advise them on ways to handle various scenarios. One caveat: Be sure to help them with responses that suit their personalities and comfort levels, not your own. Third, do not, under any circumstances, involve yourself in your kids’ squabbles or friendships. Your job is to guide your child behind the scenes, not intervene on their behalf. Your kids will gain and lose friends on a consistent basis (just as we do as adults), and they must learn how to do both gracefully. Responding appropriately to relationship changes is a life skill, and the sooner they learn it, the better off they’ll be. They

won’t learn these lessons if you “save” them from heartache or frustration. They must experience these emotions to grow and mature as adults who know how to be good friends. Fourth, on the other hand, do not tolerate any behavior that makes your child the victim of bullying, verbal, or physical abuse. It is far too common nowadays to see children resort to self-hurting and even suicide when they can no longer bear the barrage of attacks from bullies. If you sense your child is facing this trauma, you must involve the other parents, school officials, and even the police to intervene and provide support and safety for your child. If you notice your child withdrawing, becoming anxious, or exhibiting a major change of personality, you need to get to the bottom of it. Even if you feel your child is overreacting or being too sensitive, that doesn’t change the way he or she feels. Be sensitive and seek

counseling if you are in any doubt about your child’s emotional well-being. Remember that if your kids are happy in their social life, it frees them up to concentrate on academics and goal-setting. Social acceptance is a basic need you can help them meet by providing support and guidance from your own experiences. Saved: How a Grizzly Attack Led to One Man’s Peace By Dr. Rebecca Deurlein Jim VanSteenhouse went hunting for moose and instead found himself in an up-close encounter with a grizzly bear. “You want to make God laugh? Tell him your plans,” a quote VanSteenhouse - “The Bear Man” - lived first hand. And now he shares his story around Texas and beyond to encourage men to evaluate their priorities and their relationship with God. His true story is much more fantastic than fiction. It began in September, 2015, when Jim took off for a moose hunting adventure in the Northwest Territory of Canada. He was excited to hunt big game using his preferred method, a bow and arrow, in a highly remote area. Jim traveled by plane, float plane, and finally helicopter, where he was dropped into his hunting location with his young guide, Jordan. On the first day, the men noticed giant grizzly paw prints in a soft embankment. The next day, Jim and Jordan spotted a grizzly along the tree line of a nearby ridge. That night, they hustled back to camp because, as Jordan explained, “When the sun goes down, we’re on the menu.” On the third day, Jim spotted a beautiful moose and the excitement for the hunt grew. He awoke on the fourth day to cold temperatures and piled on his clothes, ready to go after that moose. That day did not go as planned. “I was sitting on a ridge with Jordan discussing how we were going to open a can of tuna, when I noticed Jordan’s stricken face. He was looking over my shoulder, white as a ghost. I slowly turned, and there was a grizzly, two to three yards away. I glanced back at Jordan to see if he had shouldered

his gun, and that’s when I felt the bear on me. I remember covering my head with my hands and rolling into the fetal position. Then I felt the bones in my skull cracking, my fingers breaking, before the bear moved down my body. I felt myself being shaken like a rag doll in the bear’s jaws, and I figured I was a goner.”

The grizzly had carried Jim 50 yards away and was about to go in for the kill when Jordan managed to fire the shot that stopped him. The next thing Jim remembers is thinking it must be raining, then realizing blood was pouring from his head. He inventoried his hands to find his fingers going in all directions, all of his bones broken. “Then I looked down at my body,” he said, “and it looked like I had been attacked by Edward Scissorhands. I was a shredded, bloody mess.” Because of their remote location and the rescue effort required to get Jim to a city with a hospital, he had plenty of time to think during transport. “Forget about the fact that I was already in shock from the attack. The real anxiety came when I realized I would probably die and I had no idea whether I would actually go to heaven. I was panicking thinking that I wasn’t good enough, that this might truly be the end for me. That’s when I felt the Holy Spirit move inside of me and it was as if Jesus came down and sat in the back of the chopper with me, and said, ‘Look, you’ve accepted me as your Lord and Savior. You’ll never be adequate on your own. Your adequacy comes through me.’ It was as if someone covered me with a warm wool blanket. I’ve never felt peace like that. At that point, all anxiety was gone. I watched the mountains through the chopper window and witnessed God’s glory.” The impact of Jim’s experience manifested itself during his recovery in the hospital when, for the first time in his life, he felt called to pray with the patient sharing his room. “Praying alone, yes. Praying out loud over another person? That was new to me and it was scary. But I felt called to do it, and after I finished, that grumpy man looked up at me and said, ‘Thank you. That’s the first time anyone has ever prayed for me.’” “That’s what this experience has done for me. I went from a back seat to a front seat Christian,” Jim said. “Now when I speak to men, I try to get them to see how precious life is. As men, how many dance recitals and football games have we missed? That bear ripped me apart for 90 seconds. If you only had 90 seconds left to think about it, what do you wish you would have done differently?”

Three Steps to Recover When You Fail By Pastor Robert Burdett PowerHouse Church Failure – Every man I know is terrified of this! Many men don’t pursue their dreams for a fear of failing. Many men who failed end up derailed from chasing their dreams and fulfilling their destiny. Why do men fear failure so much? What is it about failure that holds us back or holds us under? There are lots of reasons why, but if we are honest failure is just part of life. If you attempt anything your going to fail a few times. So rather than attempting to live a life without failure (which I believe is impossible), we need to focus on how to recover from failure. Its inevitable that you will make mistakes, its not about being perfect its about being able to pick back up and continue the race that God has set out for you. Here are three steps to recovering from failure. Step 1: Take responsibility “When I was a child, I spoke like a child, I thought like a child, I reasoned like a child. When I became a man, I gave up childish ways.” – 1 Corinthians 13:11 Stop blaming everyone else for the failure and just own it. Taking responsibility for our decisions is a rare quality these days. Dr. Edwin Louis Cole says, “Maturity doesn’t come with age but with the acceptance of responsibility”. The real issue with not taking responsibility is that it

prolongs the process to getting back on track. You can’t put it behind you because you keep stewing on who is to blame. The key is moving past the failure. Take an inventory. decision today to take responsibility. Step 2: Repent “Bear with each other and forgive one another if any of you has a grievance against someone. Forgive as the Lord forgave you.” – Colossians 3:13 Sometimes our failures are due to mistakes that we make. When this happens we must admit to them and reconcile with those that the mistakes affected. I have seen two extremes happen when mistakes are made. We can swing towards guilt and shame. This causes us to feel unworthy of forgiveness which leads us to shrink back and try to blend into the shadows. That is not what God thinks about you! No matter how bad you think you have blown it, God is ready to receive you back when you return to him in your heart. The other extreme is pride. When we swing this way, we refuse to repent because it may make us look weak. Pride, if allowed, can keep you from reaching your destiny. Both extremes are strategies and snares of the devil to keep you from relationship. First to keep you from a relationship with God and second to keep you from relationships with those around you. Don’t give the devil a foothold! Be quick to repent, forgive and reconcile. Step 3: Start doing the right thing “And whatever you do, in word or deed, do everything in the name of the Lord Jesus, giving thanks to God the Father through him.” – Colossians 3:17 Attitude, Attitude, Attitude! It will determine your altitude! It’s not just about doing the right thing, but its doing the right thing with the right motive. Your motive will motivate others not just your actions. Its motive mixed with actions that inspires! Make a decision today to live an inspiring life. Whatever you put your hand to, do it excellent and with a great attitude.

On Making Our Toddlers “Kindergarten Ready” By Jordan Harrell My 3-year-old loves baby dolls. Very rarely do we leave the house without one hooked under one little arm, a diaper bag dangling from the other. She wants to be a “mommy” when she grows up so that she can “go to the grocery store all by [her]self” and “do the dishes.” Girl’s got ambition — which I fully intend to exploit in 5-13 years. Taking care of her babies is just about the only activity that keeps her interest longer than five minutes. I remember being alarmed at her early disinterest in learning … or at least what we think of as learning. Charlee had always loved to read, but early on, Hattie would slam the cover shut any time I even tried to crack a book. And the few times I attempted to teach her sign language as a baby, she would scream at me and yank her hands away, as if she was trying to tell me, I do not have time for silly things like this. There’s a whole world out there to explore. While she can now engage long enough to complete a book or even a few (though she asks approximately 18,000 questions per page, some completely irrelevant), she’s still not interested in sitting down and working

for long stretches. Occasionally, against my better judgment, I get anxiety about the fact that she doesn’t know many letters or how to write her name or that she still

gets that eleventeen-17 range jumbled when counting. I drive by the Montessori Preschools that I cant afford and think, “I should really work on preschool curriculum with Hattie so that she has a fighting chance…” But then I think back to my education degree and remind myself that Hattie just turned THREE, and this pressure that has been created to have my kids literate by the age of 4 and performing long-division by 5 and composing symphonies by 6 WAS NOT created by teachers or child development researchers but by the pressures of a flawed system and competitive parents. I remember one of my professors discussing the new environment into which we are sending our students. This is no longer a world in which students who “know the most” will be the most successful. Information is now immediately accessible, so education is less about “knowing stuff ” and more about creative thinking, application, cooperation, leadership skills, and all of that other intangible, “outside of the box” stuff. Guess what!? These are things cultivated in free play, not rigorous preschool curriculum. Then I think about my biblical duty as a momma: to make little, tiny Jesus impersonators. That changes things. Because Jesus is not remembered for his smarts but for his wisdom. He’s not remembered for his SAT score or for how many multisyllabic words he used in the Sermon on the Mount. He is remembered for his desperate pursuit of outcasts, his passionate cry for justice for the oppressed, and his counter-cultural inclusiveness — EVERYONE can be part of his club. What if we taught our kids that while academics are important, because working hard at everything we do is important, school is not just a means to a good career but an incredibly convenient mission field? They have an awesome opportunity to desperately pursue outcasts, passionately cry out for justice for the oppressed, and be counter-culturally inclusive — make sure EVERYONE is a part of the club. They get to BE Jesus to the lost and lonely every single day. And if schools are anything like they were 4 years ago when I taught, there are PLENTY of lost and lonely. When we push academic success at such an early age (or at any age), not only

do our children lose valuable time to play and learn through osmosis, but we can unintentionally put SMART on a pedestal, high above KIND, SELFLESS, or COMPASSIONATE. While at a bible study on motherhood, our incredibly wise mentor mom said, “When I walk into a parent-teacher conference, I push all the papers aside, and say, ‘I don’t want to know about grades. I know their grades. We can fix grades. I want to know what kind of person they are when they aren’t with me. I want to know if they are kind. I want to know if they play with the lonely kids at recess. I want to know if they sit with

the lonely kids at lunch.” What are our goals for our children? In the long run, are we just dying for them to be rich and famous? To be the CEO of a company? Is financial success at the top of our priority list? If not (or even if so), let’s just let our threeyear-olds play. Let’s all just calm the heck down about Kindergarten readiness, because if you’re worried about your baby being ready, that’s a good sign that he will be ready. Instead, let’s make sure they know that sharing is JUST AS important as counting, cooperating is JUST AS important as phonics, that we care more about them being like Jesus than we do about them knowing a lot of stuff. Let’s show our kids that we care more about them being the kindest than we do about them being the smartest. While I was agonizing over this article and trying to figure out how to say what I wanted to say, I flipped over to Facebook for a second so that I could stop using my brain for a hot second and THIS was the first thing that popped up: It was as if God was saying, YES. Local Realtor and Author Works to Remove Mental Illness Stigma and Bring Hope to the Hopeless By Jessa McClure Local Realtor, Joe Gorczyca grew up in a large family in St. Louis, Missouri. Although many of his relatives struggled with mental illness, they were always a very loving family. “Being part of a family with special needs was one of the things that formed who I am,” he said. “I grew up with a strong awareness of caregiving.” Even though he was still playing an active role in caring for some of his family members, Gorczyca got a degree in Computer Science and landed a job with Conoco in Houston, TX, where he relocated and raised his family. He later served as VP, Global HR for BMC Software and built a successful career in the Houston area. But as he contemplated plans for the future, he knew that he wanted to give back with his time and money. His faith had always played a huge part in his life and career, and as he studied Mark 12:30 (Love the Lord your God with all your heart and with all your soul and with all your mind and with all your strength), he knew God had big plans for his second act. “As a member of Second Baptist Church of Houston, I facilitate and lead a support group for individuals who are dealing with depression and anxiety,” Gorczyca said. “That’s something I do to

help in reaching out to others who don’t have somebody to talk to or don’t know where to get help.” He said it is especially important that the individuals who come to the support group get a Christian perspective because it’s a true foundation for those dealing with mental illness. Because of his family history and work with those at the church, Gorczyca also authored a book called “Brain Pain,” that tells the story of his family’s history and offers ways to understand and cope with the challenges of mental disorders. “I wanted to write the book to say that people need to talk about this and seek help,” he said. “I want to remove the stigma attached to mental illness.” He is also actively involved in raising awareness, especially amongst his extended family. His five grown children and seven grandchildren all live in the Houston area, along with several of his nieces and nephews. He wants them to be educated on mental Continued on page 29

disorders so they can be supportive of family members with special needs. Joe equips others by offering the verse, “I can do all things through Christ who strengthens me,” (Phillipians 4:13).

“That’s been very helpful to people who ask, ‘what’s God say that can help me?’” he said. Along with his work supporting others who are struggling with mental illness, Joe also works as a Realtor, helping those who are making major life changes. “People buying or a selling a home are often looking to move because of a major life change or a family need,” he said. “Once I help them with this process, I donate a portion of the money to the Depression and Bipolar Support Alliance of Greater Houston.” Gorczyca said God places families in his path, both through his work with his support groups and in his real estate career that can benefit the most from his experiences and expertise. “I recently shared with a [client] about my work with the mental health support groups and that it was something really special to me,” he said. “The client said, ‘you are a God send.’” The man explained to Joe that his brother was struggling with mental illness and was no longer able to live on his own and would be moving to an assisted living facility. That meant he needed to sell his home quickly. “He asked if I could help him, and I said, absolutely. This would be very special to me to help you out,” he said. FBCA Alumna Emily Parker placed as the third runner-up in the Miss Mary HardinBaylor Pageant, and she did it while wearing a high heel prosthesis. In 2007, Emily’s leg was amputated below the knee, and she was fitted with a prosthesis. With physical therapy, she was able to regain mobility and independence. The pageant took place last fall and involved several weeks of preparation.

In June, Mothers and daughters from the National Charity League, Inc., Lady Bird Chapter (NCL, Inc.) hosted a Philanthropy Bus Tour for new members to learn more about the Philanthropies in Katy and how to get involved.

Standing on the word of God: Pastor Manuel Mukes By Dr. Rebecca Deurlein Sometimes it takes coming full circle to bring you to your knees. For Pastor Manuel Mukes, it took walking in his father’s footsteps to realize he’d be better off following in the footsteps of his father God. Pastor Mukes, who with his wife Tanika leads Bound 4 Glory Ministries, is a man who made a conscious decision to step away from his past and devote his life to God. When Mukes was just 2 years old, his young father was shot and killed in the midst of a life of alcohol and crime. Athough Mukes grew into a young man with an entrepreneurial spirit and a football scholarship that offered a better future, his father’s life had put him on a path seemingly destined for destruction. Like his father, he drank. Like his father, he surrounded himself by false friends who convinced him to leave his education behind in favor of a start-up record label. When Mukes had a son who turned two years old - the exact age he had been when his father was shot and killed by a “friend” - Mukes himself was shot, also by a “friend.” “And I still have the bullet to prove it,” said Mukes, “here in my chest where it lodged after entering through my back. At that point, I knew I needed to change my life, that I couldn’t continue to repeat the mistakes of my father.” Blessedly, Mukes had an

angel on his side. His sister had carried his picture in her Bible for years, praying for him every time she opened the Word. She had repeatedly invited him to church, and now he finally accepted. It was at that service, brought to his knees by a life of violence, that Mukes became a Christian and dedicated his life to a greater cause. Still in the record label business, Mukes was offered a huge deal with a label that no longer reflected his lifestyle and beliefs. He turned down the deal and instead created his own label, Bound 4 Glory and Beyond, producing Christian music in all genres. He thought this would be his new life path, but Hurricane Katrina had other plans. When New Orleans was devastated by the hurricane, Mukes and his wife and family packed up and relocated to Houston, along with 25 other displaced Louisianans. They left behind a church and Bishop they had loved but found another they appreciated in Lakewood. However, lacking transportation to and from church for their entire group, they decided to meet at Mukes’ home. Led by a friend of Mukes and Tanika, who had been Continued on page 40

One son just graduated from college on a football scholarship, realizing the dream Mukes himself had started 20 years before. Tanika is now ordained and shares responsibilities with Manuel, and the children have served in the ministry alongside their parents. Politics As It Should Be By Gary Gillen Many Americans are frustrated by the slow pace in Washington. We elected Republican majorities in the House and Senate and a Republican President because this nation so desperately needs change. The liberal media has made much of the fact that the current administration, in the first six months of its term has not “repealed and replaced” the job killing Obamacare and rewritten the tax code. Those promises, therefore, were “lies.” They don’t want the Trump administration to succeed so they aren’t telling you that the Democratic Party, in its inexorable move to socialism, class warfare and identity-politics, has ceased to be a “loyal opposition” and has become the party of resistance, even though it hurts the very Americans they claim to want to help. No one dislikes the staggering premiums or the breathtaking deductibles Obamacare has wrought more than I do. I feel for my employees who have insurance but cannot afford to use it. The Democrats created this monster by forcing it down our throats without discussion, debate or even letting us read it. It is now failing in a most dramatic fashion with one third of all counties in the US having only one health insurance provider. No competition means higher premiums and deductibles. As of this writing the Senate has approved only 46 of the 178 appointees

Trump has submitted to the Senate. By this time in his first term Obama had 183 confirmed. Our government agencies are, by and large, run by Obama appointees and the Senate Democrats are using parliamentary games to stop or slow the appointments process. Obama administration put in place without Congressional input, without legally required public comment and without concern for the jobs, industries and lives those regulations destroyed. Our previous President bragged he would rule with “a phone and a pen” while our current President wants to use the Constitution and Congress. The way it was meant to be; messy, slow, open and even painful. Our forefathers envisioned government that guaranteed the right of minorities to be heard but the majority’s right to govern. Sadly, Congress has transferred much of its authority to Federal agencies rather than make tough choices. This enabled President Obama to make sweeping changes by royal fiat. The courts have already begun to turn back some of the most egregious of those rules and the Trump Administration has begun to roll back many as well. This might be an appropriate time to educate our young and remind ourselves that governing isn’t instant like Amazon or Uber, and it shouldn’t be. Government should be slow and deliberate. Our representatives should consider, think and debate. They should hear the minority viewpoint and consider their concerns but they should not surrender to the popular or trendy. The majority should rule. Our constitution starts simply, “We the People.” The words “elite, East Coast, or Liberal” do not appear yet those of us in “fly-over” country seem to be dismissed and ignored regularly. We should also remind our children that they will not always get what they want. Perhaps they should consider

Recipe: Mexican Tempeh Quinoa Salad Ingredients • 1 cup quinoa • 2 cups water • 1 tbsp. olive oil • 1/2 onion, chopped • 1 red pepper, diced • 1 (8-oz.) package tempeh, diced into bite-size pieces • 1 cup salsa • Juice from one lime • 1 tsp. cumin • 1/4 tsp. cayenne pepper • 1/4 tsp. salt • 1/4 tsp. pepper • 1 (15-oz.) can black beans, drained and rinsed • 1 cup fresh corn • 1/2 cup cherry tomatoes, halved • 2 tablespoons fresh cilantro • Salt and pepper, to taste • 1 avocado, diced

Directions 1. Place the quinoa and water in a covered pot on high heat. Once it starts to boil, reduce to simmer and cook for 20 minutes or until the water is absorbed and the quinoa is fluffy. 2. While the quinoa is cooking, prepare the tempeh. Heat the oil in a pan on medium heat, and add the chopped onion. Cook for 5 minutes. 3. Add the diced red pepper, tempeh, salsa, lime juice, cumin, cayenne pepper, and salt and pepper.

4. Cook the tempeh mixture, stirring occasionally, for about 15 minutes. 5. Once the quinoa and tempeh are cooked, pour both into a glass bowl and mix together.
