coffee By Kate Mullinax Photos by Song Jordan The man behind the bean Curtis Black is the man behind the bean – Battle Bean that is. He’s the straight-shooting, tell-it-like-it-is, retired Army roastmaster of Fort Lewis’ Battle Bean Coffee. He took over the roasting operation in 1999, and he can tell you all about it. On any given day, you can find Curtis roasting in the North Fort Battle Bean coffee shop. Much like the Battle Bean coffee he roasts, there’s a certain rugged-yet-approachable quality about Curtis. The curious come over to watch the roasting process and strike up a conversation that usually starts about coffee and ends up on anything from history to current events. Though he can make a lot of fancy blends, when it comes to how he takes his coffee, less is more. “I drink straight coffee. I’ve never had a latte in my life,” Black declares. “I probably drink two gallons of coffee a day.” What makes a coffee good? Well that’s up to you to decide. “You’ve got coffee snobs just like

you’ve got wine snobs. If you like the coffee, then it’s good,” he states. Battle Bean’s beginnings A woman by the name of Marlyce Toop was the genesis of selling coffee on Fort Lewis, which a few years down the road evolved into its own unique blend and brand – Battle Bean. It all started with a coffee cart inside Soldiers Field House. “It was making money, and everybody liked it,” Black says. In less than 10 years time, what began as one lone coffee cart exploded into three Battle Bean coffee shops, and Curtis Black is the man who keeps the coffee coming. He makes the coffee for the Battle Bean shops and MWR facilities on post, from the Rainier Inn to the Cascade Community Center. How much coffee does he roast? “This year, I average about 1,200 lbs. a month,” he says. From a 1-lb. roaster, to a 7-lb. roaster, all the way up to his current 20-lb. roaster, Black is upsizing to meet demand. In fact, now you can buy Battle Bean Coffee in the AAFES Main Store and shoppettes on Fort Lewis as well as McChord Air Force Base. “After the coffee shops, they’re our biggest customer. We can ship the coffee to any AAFES in the world,” he says. “Troops like it, and bring it along!

“Whenever I get a new coffee I haven’t roasted before, I use the 1-lb. roaster and roast it several different ways to see which seems to taste the best. To me, it’s about what the customers want. “Try it. See if you like it. If you don’t like it, come over and talk to me. Tell me what you don’t like about it, and I’ll see if I can tinker with it a little bit and make it more palatable,” he continues. “Every batch is different. I want it to be as consistent as possible, but I still can play with it. The good news is, if someone comes along and they want a pound of something dark-roasted or a blend, I can do that. You can’t do that at Starbucks. I can do it because I have that much control over the coffee. It’s like Burger King. You can ‘have it your way.’”

They’re going to have a hell of a time if I fall over dead or walk out.The business doesn’t stop. The operation keeps going. Somebody’s got to do it.” Two days after 2nd Ranger Battalion arrived in Afghanistan after 9-11, Black shipped 100 lbs. of Battle Bean Coffee to the troops. He ground 100 lbs. of coffee with a 1-lb. grinder. “It took a long time, trust me. I stood there with a measuring cup, constantly dumping coffee. We sent it over in 5-lb. bags. I still don’t know who got that coffee, but it got there. The guys from Fort Drum said they put it on a C-5 and dropped it somewhere in Afghanistan. Future of Battle Bean Right now Battle Bean grounds are making the rounds by word of mouth, and word travels far and fast. “I’ve got a retired doctor in North Carolina who used to work at Madigan that orders five, six, seven bags of Battle Bean a month. There’s also a lady who owns a vineyard down in Georgia whose son was stationed here eight years ago. He

took some home and she liked it, so now she calls me up and orders it. I send it all over the place,” Black says. Could Battle Bean sweep the nation? “There’s no way I could ever produce enough coffee to cover everything outside this installation. It’s sometimes hard to keep up with what we’re doing here,” he says. But the Battle Bean concept could be adapted at other installations. “They could adapt it to the Air Force and put the Battle Bean guy in a jumpsuit carrying a helmet.”

In a lot of ways, you could say Curtis Black is Battle Bean. Black says, “Me? I guess so. Nobody else knows how to do it. As far as putting it all together and what you actually have to do to keep the operation running, I’m pretty much it.

Despite the phenomenal growth of Battle Bean Coffee, Curtis wants to assure his customers understand the difference between his operation and a giant, like Starbucks. “The larger the volume you roast, the less control you have.

Any secret techniques? “Well it wouldn’t be a secret then, would it?” Black laughs. “I can’t be giving out the trade secrets on it or they’ll go home and do it themselves, or maybe tell Starbucks. There aren’t a whole lot of secrets. It’s just a matter of doing it. Roasting is not total science. Unfortunately, it is one of the busiest times of the year for highway traffic and alcoholrelated traffic injuries or fatalities. In fact, one of the most dangerous times to be on the road is between Thanksgiving and New Year’s Eve due to alcohol-related traffic accidents. Since alcoholic beverages are often served during this season, it’s wise to plan in advance to ensure a safe time for yourself, family and friends. Listed below are several tips to help make this a safe and hopefully accident-free season.

6-oz frozen lemonade concentrate 1 1/2 cups water 1 pint lemon ice cream 12-oz ginger ale Combine first three ingredients in blender , and process until smooth. Spoon into pitcher; stir in ginger ale. Makes 5 cups.

Blushing pink soda

• Always ensure there is a designated non-drinking driver for each person or group and that seatbelts are worn by all occupants.

• Children should be instructed never to ride with a driver who has been drinking.

Lemon frappe

1 cup apricot nectar 2 cinnamon sticks 4 small orange peel strips 4 small lemon peel strips 3 cups apricot flavored tea Combine nectar, cinnamon sticks and peels in a saucepan and simmer over low heat for 1-2 minutes, stirring occasionally. Add tea and stir ingredients together. Remove cinnamon sticks and peels, and pour into four cups, adding brown sugar.

• Be aware that if you drink carbonated beverages with alcohol or carbonated alcohol preparations, the alcohol will reach the blood stream faster.

• If you are at a friend’s home, think of sleeping it off until sober.

3/4 cup unsweetened pineapple juice Half a banana 2 to 3 packets sweetener 1 teaspoon lime juice 1/4 teaspoon coconut extract 3 to 4 ice cubes Combine ingredients in blender, and blend on high for 30 seconds, until smooth and creamy. Makes one 12-ounce serving. Variation: Use 1/2 cup strawberries instead of banana; add 3-4 ice cubes

Apricot tea

• Provide plenty of food so guests won’t drink on an empty stomach. When there is food in your stomach, alcohol is absorbed more slowly into the blood stream.

• Don’t allow others to drink and drive. If necessary, take their keys.

Tropical-not-a-colada

Ensure there are nonalcoholic beverages, like the tropical-not-a-colada, available for designated drivers at your holiday party.

8-oz crushed unsweetened pineapple drained 1/2 cup mashed strawberries 1 quart chilled strawberry soda 1 quart vanilla ice cream Combine fruit, 1 cup strawberry soda and 1/2 cup vanilla ice cream in blender, processing until smooth. Divide mixture evenly into six glasses. Add 1 scoop of ice cream and 1/2 cup strawberry soda to each glass.

Wave bender recipe 1 oz orange juice 1/2 oz lemon juice 1 tsp grenadine syrup 5 oz ginger ale Pour juices and syrup into a cocktail shaker half-filled with ice cubes. Shake well and strain into a glass of ice cubes.Top with ginger ale and stir well.

It’s a race to the finish line Saturday, Dec. 12 at Eagles Pride Golf Course. Join Fort Lewis Sports, Fitness & Aquatics Branch for the Santa Shuffle and Reindeer Dash. Runners can choose between 10K and 5K distances, and children ages 6-14 can enter the Reindeer Dash, the 2K youth run. Participation in both races is free if you register by Wednesday, Dec. 2 (visit FortLewisMWR.com). After this date, a $10 registration fee is due, and registration closes Wednesday, Dec. 9. The race is open to everyone. The first 100 registered runners to show on race day will receive a race T-shirt. Awards will be given to the top three male and female finishers in each age category – Santa Shuffle: 19 & under, 20-29, 30-39, 40-49, 50-59, 60+ and the Reindeer Dash: 6-8, 9-11, 12-14.

Another day ... 0500: Baby up, changed, fed. Two-year-old up, changed, fed. Five-year-old up, fed, dressed. Dishes. Laundry. COFFEE!! No shower. Walked dog, drove car pool. Fed, changed baby. COFFEE! Commissary trip, paid bills, car pool. Lunch for kids. Appointment at Madigan and shots for baby! Screaming children. Home. Naps (them, not me). COFFEE! Played with kids (dress up!). Made dinner, fed kids, fed dog. Dog found mouse in house. Dog barked. Kids screamed. Removed mouse. Calmed family. TV time. Ahhh! Relax? NO! Wind storm. Power outage! Read stories to kids by flashlight. Baby fussy. Kids tired. Power back on. Fed baby, changed baby. Gave kids baths. Kids to bed. Dished. More laundry. E-mailed mother-in-law. Picked up toys. Shower? Nah, why bother? 2346: Asleep on sofa.
