Supporting someone who is very ill can be emotionally challenging. Stay calm and avoid reacting defensively or aggressively, even if your loved one’s words hurt you. If your emotions start to overwhelm you, take a moment to step outside, breathe and regain your composure. Return to their bedside when you’re ready.

Offer comfort

Kind words can go a long way toward soothing someone at the end of their life. Express your love, thank them for the positive impact they’ve had on your life and reminisce about the memories you’ve shared. MAPLE SUGAR BELGIAN (LIEGEOISE) WAFFLES

Ingredients

Servings: 4-6

• 2 1/8 cups flour

• 1/3 cup maple sugar

• 2 pinches salt

• 2 tsp dry yeast

• 1/2 cup lukewarm milk

• 4 tbsp medium eggs or one whole egg and one egg yolk, beaten

• 1 cup unsalted butter, tempered, cut into pieces

• 1 cup maple flakes

Directions

1. In a stand mixer, use the dough hook attachment to mix the flour, maple sugar and salt.

2. Dilute the yeast in the warm milk and add to the dry mixture. Add the eggs and mix until the dough comes away from the bowl. Add the butter piece by piece and mix on medium speed until smooth (about 10 minutes).

3. Cover the bowl with cling wrap and let the dough rise until it doubles in volume (about 1 hour).

4. Once the dough has risen, turn the dough hook to low speed while adding the maple flakes.

5. Put the dough between two pieces of parchment paper and roll out to a thickness of 3/8 in. Refrigerate for 30 minutes.

6. Use a cookie cutter to make 4 in circles, or to the size of your waffle iron.

7. Preheat waffle iron to medium.

8. Put dough circles into the waffle iron and cook each about 2½ minutes, depending on your appliance’s power.

GOOEY BROWNIES

Ingredients

• 1 cup unsalted butter, melted

• 3/4 cup cocoa powder

• 1/2 teaspoon salt

• 1/2 cup flour

Directions

• 1 1/4 cups white sugar

• 1 teaspoon vanilla extract

• 2 eggs

1. Preheat the oven to 325 F. Line an 8” x 8” square baking pan with parchment paper, lightly oiled.

2. 2. Melt the butter in a saucepan over low heat. Remove from the heat and add the sugar, cocoa, vanilla and salt. Mix well and let cool for about 10 minutes.

3. 3. Add the eggs one at a time, mixing well between each addition. Fold in the flour.

4. 4. Pour the mixture into the dish and bake for 25 minutes or until a toothpick comes out clean.

5. 5. Cool and cut into 16 pieces.

MACARONI AND CHEESE BITES

Golden, chewy and crispy, these cheesy bites are sure to please little ones and grown-ups alike!

• 2 cups uncooked macaroni

• 1 cup flour, divided

• 2 cups grated sharp cheddar cheese

• 1/4 cup cream cheese

• 1/2 teaspoon garlic powder

• Salt and pepper, to taste

• 1 cup breadcrumbs

• 1 cup store-bought marinara sauce

Directions

• 1/4 cup butter

• 1 cup 15% cooking cream

• 1 cup grated Gruyere cheese

• 1/2 teaspoon smoked paprika

• 1/2 teaspoon mustard powder

• 2 eggs

• 2 cups vegetable oil

• A few fresh basil leaves

1. In a large pot, cook the macaroni in salted boiling water according to the package instructions. Drain and set aside.

2. In the same pot, melt the butter. Add a 1/4 cup of flour and whisk to combine. Cook for about 3 minutes, until the roux is golden brown.

3. Add the cooking cream a little at a time, whisking constantly. Add the cheeses gradually, allowing them to melt between each addition. Add the spices. Season with salt and pepper to taste and remove from the heat.

4. Combine the cooked macaroni and the cheese sauce. Pour the mixture into a large shallow dish. Place in the refrigerator and let stand for at least one hour.

5. Put the remaining flour, 2 eggs (lightly whisked) and breadcrumbs into 3 separate bowls. Set aside.

6. Using your hands, shape the cooled macaroni and cheese into balls. Coat each ball, first with flour, then the beaten egg, and then the breadcrumbs. Set aside on a plate.

7. Heat the vegetable oil to 350 F in a large pot. Fry the balls in small batches for about 5 minutes, until golden brown. Set aside on a clean cloth or paper towel. Repeat until all balls are fried.

8. Garnish with fresh basil and serve immediately with marinara sauce.
