Enclave, Growers and millers The grayish-green of the olive trees against the white, snow backdrop of the Sierra Nevada mountains. This snapshot takes us to a distinctive olive grove, located at 700 meters (2,300 ft) above sea level, on the skirts of this legendary mountain in the Andalusian province of Granada, in Southern Spain.

The olive grove, Venchipa, is best known as O-Med which is incidentally the name of its extra virgin olive oil.

Family owned company. O-Med is a family owned company located in Acula, Andalusia, Spain. For generations the GarciaCasas family has harvested their own olive trees. In 2005 they purchased a mill in order to produce the highest quality premium olive oil possible by controlling all of the processes from the groves to milling. Their oils have a recognizable characteristic of intense fruitiness while maintaining balance on the palate.

11 | O-Med
Production Production, O-Med extra virgin olive oil is produced only from the trees in the fields owned and cultivated by the Garcia-Casas family. O-Med is harvested extremely early in the season.

During the last half of October, test batches occur daily until Juande, the millmaster, decides it is the right day to harvest a particular grove to begin O-Med production. The early harvesting results in an intense flavor but much smaller yield. The Garcia-Casas familiy believes quality starts with the olive itself, the job at the mill is only to express what the olive creates.
The olives are processed within 1.5hours after the collecting. O-Med stores their oil in small tanks of no more than 5000 liters. These tanks are injected with nitrogen to help prevent oxidation.
13 | Production
The O-Med brand is a limited production of just 70.000 liters or 140,000 bottles each of picual and arbequina varieties. Because olive oil quality begins to deteriorate with time, everything is bottled to order. Each bottle has a best before date to ensure acidity level remains well within extra virgin requirements and O-Med’s own quality standards are passed on to the consumer.
Sustainability.
As farmers, sustainability is of foremost importance to O-Med where they have installed an incinerator which burns the olive pits, producing 40% of the energy needs at the mill.
All our products are produced with respect to the environment and nature, such as pruning and photovoltaic plants in all our farms.

Excellence.
In 2013, O-Med became one of the founding members of Qv Extra! This organization includes international producers aimed at educating consumers and differentiating high quality extra virgin olive oil. The seal of QvExtra! sets organoleptic and other physicchemical parameters such as acidity standards much more stringent than current IOC standards. The organization has grown to over 100 producers in less than 2 years.
Awards.
After years of hard work O-Med’s efforts are paying off with several very prestigious awards, being considered between the top 50 extra virgin olive oils worldwide. Every year, our extra virgin olive oils are AWARDED, with the best international recognitions worldwide, such as ‘’Der Feinschmecker’’ , ‘’Stiftung Warentest’’ , New York International Olive Oil competition, Expoliva or Olivejapan, between others.

Recommendations
Perfect to finish delicate fish dishes, all kind of salads and vinaigretes, adds flavor without overpowering dressing, like alioli. Use O-Med Arbequina for baking and desserts, including olive oil ice cream
Tasting Notes.
The Arbequina aroma is reminiscent of green banana with hints of green apple. The aromas follow through the palate, reconigzing the green fruits without ouvert bitterness. The arbequina has a soft finish, with a bit of pepper at the end.

Recommendations.
Pair the intense aroma with tomato dish, sauce or soup. Match the robustness with bitter green salads containing arugula or radicchio. Use to finish grilled meats or octopus.
Picual
Tasting Notes.
It´s aroma is categorized as medium fruitiness with tomato plant, green almond and hints of aromatic herbs. The palate gives a persistent taste or artichoke, and green walnut. The oil is balanced with a long peppery finish. Providing outstanding complexity and layers of flavour to your dish.

Smoked.
O-MED Smoked Olive Oil is an Arbequina olive oil, gently infused with the aroma obtained by olive pits burning.

Tasting Notes.
This olive oil provides fresh and sweet aromas, with a delicate touch of vanilla and caramel notes.
Yuzu.
O-Med Yuzu Olive Oil, is the first yuzu olive oil in the market. Adds unique flavors in almost any applications.
Tasting Notes.
The flavour is tart, with overtones of mandarin and orange. It reminds to a floral lime.
Recommendations.
Try it with bread dipping, or drizzling over garden salads, soups and grilled or raw vegetables. Combines perfectly with the Spanish tomato soup, salmorejo or gazpacho.
