I
can’t believe it’s already November! Thanksgiving is my favorite holiday and it’s right around the corner. I am truly thankful for so many things this year. Rounding up my tenure as your Chair, it has been enjoyable and I’ll miss it, but the Pfaffs aren’t going anywhere. What am I personally thankful for: my husband, David; my children, Andrew & Cate; family and friends - which most certainly includes this Club! Pasta night continues to be a huge night for our membership and it reminds me

to turn in my Pigskin Pick’ems on time each week. Besides that, our Club has a lot to be thankful for this year. We couldn’t have organized all the fabulous events and created the camaraderie without the guidance of our committee system - members and management working together to enhance our membership. Our golf, tennis, fitness, and social events were top notch! Please continue to respond to the surveys and make comments. We listen to your feedback. I hope you were able to come out and enjoy all the Cool October events, as well as support a great cause; fighting cancer. Membership has made a significant impact in Irving’s ability to care for our members and staff who are fighting this terrible disease. Thank you for your personal contributions to Cool October, including baking for the bake sale, cooking chili, sipping cotton candy topped champagne, participating in the marathons, attending the concert/party, and your generous donations. As we round up 2017, check out the coming events highlighted through out this issue of the Sportsline. 2017 isn’t over yet, we have a lot of golf and tennis to be played and fitness classes to take. Please RSVP for all the fun holiday events coming up. Your RSVP helps management be better prepared for us. One funny note... Many of you have heard, we are moving - not far, it's just three houses down the street. I am using this time to purge, for which we are all thankful. One of the things I found was an old Franklin Covey planner with guidance on how to organize your life, which I found kind of ironic as this planner was from 2003. Flipping through that old planner was pretty cute; 2003 included Andrew's 3rd month - first birthday. I got to remember lots of things, like how many times we changed his diaper that day. I even noted some of the times we went to the Club for dinner and what tournaments we played in. I really liked rereading the guidance on how to organize your life. It encouraged prioritizing your values to lead your life. Family and health have always been first for me. So I guess that's why I've always been so passionate about our Club - it is our home, family and livelihood. Thank you for making me feel so welcome and at home! Enjoy the rest of 2017! It has been my pleasure serving as your chair for the last two years. I want to congratulate Josh Weiss, your new BOG chair for 2018. Best wishes to Josh and the entire committee system in the new year - and to all of our membership! Happy New (prioritized value driven) Year and all the blessings to you and your family. Do you know Swany?
B
ob Swanson, known by most as Swany, has been an active and integral part of the club almost since he arrived, joining the club in 1989, drawn by not only the golf and fitness but members and employees alike. He appreciates that when he comes in for breakfast, Steve knows what he is going to order before he even has to say it. Born in Erie, PA and moving with his parents and siblings to Boca Raton, FL in the mid-60s he went to both Broward College and the University of Florida in 1973-1974. Eventually moving to Dallas in 1977 with then fiancé Cheryl, whom he married in 1979 and went on to have four children.

"Through the Club, and him being a neighbor, I am a good friend of Tony Romo. Played many golf rounds with him over the years, and was also his caddie when he played in tournaments and the Byron Nelson and US Open qualifiers."
We asked him why he has maintained a membership after all of this time… did it help him in business, was the club an integral part of his life, his family, more? All questions came with a resounding answer of yes! He and Cheryl raised their kids here. Not only was it easy for them since they have lived in the immediate club area, it was a place for the family, four children and now five grandchildren, to spend time together. Professionally, Swany found it easy and convenient to come by the club for a workout, grab lunch and be able to get back to work in a reasonable amount of time while he was overseeing operations at Banskton Nissan (back in the early days, Bankston Datsun). Early in his career as a dealer, he saw the benefit of being involved as a sponsor in club events, resulting in not just car sales but long-term relationships he still has today. After a number of years as a Partner in Nissan stores (eventually selling his share in 2002,) he formed Five Nine Seven LP, a real estate company that owns various tenant based income producing properties that he is still actively involved with today. What motivated Swany to stay physically active? In years past as part of Cool October, he served as Paul Earnest’s caddy, carrying his bag for 85 holes for the Golf Marathon. One year they even broke a record of 94 holes in one day, starting before sun up with glow in the dark balls and finishing as light faded. Knowing he had to be in shape to carry the bag and move quickly, he worked hard to stay in shape. In 2013, he was playing golf 5 days a week but was sidelined by a couple of back surgeries. While fitness has been a lifetime commitment, after his second surgery in 2016, he decided to approach his rehab and recovery the “right way.” This translates to his recent smart return to golf to working with trainer, Nick “Iron Man” Thurman. Going from thinking there would be no more golf, a game he has loved since working as a caddy in his youth, to a place where the hard work is paying off with Nick’s assistance. It has made all of the difference since he is now feeling stronger than ever before, thanks Iron Man! Why do you choose to be as involved in the club as you have over the years? As an avid golfer, tee times and tournaments weren’t run how he felt they should be and to make a difference and affect change, his choice was to jump in with the Golf Services committee. He said “I wasn’t going to complain if I was not involved in making the decisions.” Working up through the committee process, he eventually became the Chairman of the Board of Governors in 2006 & 2007. Afterwards he continued to be involved in the Handicap, Membership and (after receiving the award himself ) the Byron & Peggy Nelson Legacy Award Committees. If you want to catch Swany, you can find him working out with Cheryl several afternoons a week, something he says not only provides accountability but a bonus of a stronger relationship with each other. If he’s not on the fitness floor, you can find him starting to play a little more golf. Oh, and if you didn’t know, during his golf hiatus, he has become an avid salt water fisherman. He’s caught a couple of sail fish and even a 28lb Mahi. Ask him to show you the picture, it’s pretty impressive. TheSportsClubFourSeasons.com | 7

Cocktail Recipe: Fall Old Fashion 3oz of Fall Spice Infused Rittenhouse Rye Shaken over ice and strained into martini glass. Garnish with bruleed orange slice.
Fall Spiced Infused Rittenhouse Rye Batch the following: 3 Fuji apples, 2 granny smith, 3 cinnamon sticks and 3 bottles of Rittenhouse Rye Whiskey. Let marinate for 14 days. Strain out and store liquid in cooler.
Brulee Orange Slice: Thinly sliced orange piece, sprinkle with granulated white sugar, dust off, lightly torch till golden brown .
THE FARE FOR FALL TASTES Three Grain Pulled Pork and Squash Risotto Three Grain Medley 1/2 c farro 1/2 c aborio rice 1/2 c barley 1/2 small white onion, diced 1/2 c white wine chicken stock Directions: Cook farro and barley in salted water until tender; drain and cool. Add diced onion to small sauce pot and cook until translucent, add rice and lightly sweat, slowly incorporate chicken stock while constantly stirring. Cook rice until just cooked, it should have a little bit of crunch to it. Put on a pan and cool. Mix with farro and barley.
Pulled Pork 5lb boneless pork butt 2T coarse salt 2 T liquid smoke Directions: Cut pork butt into large pieces. Mix salt and liquid
smoke. Rub each piece and place in Crock Pot. Add 2 cups water, and cook until pulls apart tender; usually 5-6hrs.
Pumpkin Risotto Chopped thyme to taste Squash peeled, medium diced and roasted until tender (Kabocha, Butternut, Acorn) Parmesan cheese Butter Pulled pork Chicken stock Directions: Add 6oz of chicken stock, small handful of pulled pork and squash to a sauté pan. Bring it up to a boil, add a large handful of the rice mixture, and stir continuously until heated through. Add stock as needed if the mixture gets too thick. Add fresh chopped thyme to taste, a couple of spoonful’s of hand grated Parmesan cheese, a spoonful of soft butter and continue to stir. Season lightly with fresh ground pepper and kosher salt. Pour desired amount into bowls and garnish with herb leaves or cheese ribbons.

He took up running at 12 years old to repair the lung damage from unnecessary treatments and completed his first marathon at 17 years of age. Ke'o enjoys paddling, Krav, and building pillow forts. Also, he once free climbed a 400+ ft cliff in sneakers and jeans on South Head in Sydney, Australia.

FIT THROUGH THE HOLIDAYS

he holidays bring a unique challenge to staying fit. Delicious goodies and parties are in abundance, we are outside less, and our vitamin D access is diminished with the shorter days. To stay fit we must be especially vigilant and smart with our health routines. Here are a few tips to maintain your fitness goals this holiday season…

1) INCORPORATE STRENGTH TRAINING – Building muscle in the gym once or twice a week does more than just make you look and feel good, it also helps boost the metabolism. Every time muscle is broken down during a workout, the body has to repair it, burning extra calories to do so. 2) PERFORM CARDIO WITH A PURPOSE – Know what your goals are for doing a cardio workout. If your goal is to simply burn body fat, then you should keep your heart rate in the “fat burning mode”. Your max heart rate is estimated at 220 minus your age. The “fat burning zone” is estimated at 60-70% of your max heart rate. Keeping your heart rate in the zone of 60-70% of your max rate will help ensure you are using stored fat as energy versus muscle or stored sugar. 3) GET OUTSIDE ON THE NICE DAYS – Utilizing the outdoor track and tennis courts to do cardio on sunny days will help maintain your vitamin D stores and greatly help your metabolism.

Both our golf courses afford you many different opportunities to play a variety of shots around the green. Personally, I subscribe to the theory of getting the ball on the green and rolling toward the hole as soon as I can.

This theory is most apparent when you’re just off the green but elect not to putt. I’ll use my setup to help chip the ball over the fringe and get it to start rolling like a putt. I stand closer to the ball with a narrow stance. Then move the ball toward the back of my stance with my weight on the front foot and my hands are in front of the ball. This setup is a perfect recipe for making a chipping motion on the ball. The stroke is simply then a putting motion gently striking down on the ball. Vary your clubs depending on the amount of green you have to navigate. Control the roll of the ball and you’ll start saving more pars.

million to the Irving Healthcare Foundation in support of cancer services at Baylor Scott & White Charles A. Sammons Cancer Center – Irving, the city’s only not-forprofit hospital. Every advancement in treatment at the cancer center has been funded in part by Cool October donations. The proceeds from these events are being used this year to purchase a new head and neck scope for the cancer center and an air seal to help with robotic and laparoscopic surgeries. Use that time to get ready to play, but more importantly to test your opponent making them hit forehands and backhands to determine what their best side is. From that point, you can strategize how and when to play to their strengths and weaknesses as a priority!

RACQUETBALL LEAGUE PROGRAM SCHEDULE Monday Evening Racquetball League Scheduled for each Monday from 4:30PM – 8:30 PM, January 8th through March 26th (10 weeks). This is a round robin format for the all Racquetball levels of play. Women’s Wednesday Morning Racquetball League Scheduled for each Wednesday morning from 10:00 AM – 11:30 AM, January 10th through March 26th (10 weeks). This is a round robin format for all levels of play. Tuesday and Thursday “Early Bird” Racquetball League Scheduled for each Tuesday and Thursday from 6:00 AM – 7:30 AM, January 9th through March 26th (10 weeks). This is a round robin format for all levels of play. Arrange your own match. Saturday Morning Men’s and Women’s Doubles Racquetball League Scheduled for each Wednesday 10:00AM – 11:30AM, January 13th through March 24th (10weeks).
