Considered to be the islands leading wineries, Dolianova makes some of the best wine that Sardinia has to offer and strives to safeguard the unique character the difficult climate gives to the wine. Cabert Traminer Aromatico Cabert 75cl CLASSIFICATION: D.O.C. PRODUCTION AREA: Friuli Grave GRAPE TYPE: Traminer Aromatico VINIFICATION/FERMENTATION: The wine is made by macerating the must with skins for some hours and soft pressing. The fermentation is activated by selected yeasts, average duration 8-10 days at a temperature from 15-17 degree centigrades. Cesari Amarone della Valpolicella Classico 75cl Produced in the boroughs of Negrar, Marano di Valpolicella, Sant'Ambrogio, Fumane, San Pietro in Cariano (the historic area of Valpolicella Classico production). The drying on racks of the Corvina, Rondinella and Molinara grapes until mid January and the ageing in large oak barrels and barriques, together with the long period of rest in bottles, allow us to enjoy this great wine. Suitable with red meat, game and also as a dinner closing wine. Production: Climatic trend 2009 Typical aromas of ripe fruit, fruit preserve and cherry are immediately perceived on first olfactory examination. Particularly striking is the incredible long length that lingers on the palate, when the wine displays all its strength through a warm and elegant body. It is an excellent partner to game, grilled and stewed meats, but is also as a "conversation wine". Recommend- ed drinking temperature 18-20°C. To be uncorked at least two hours before serving.

Serving temperature 12°C Harvest time within September 15 and October 15. Vinified in rosè, then takes place the malolactic fermentation. Remains in stainless steel for a period of 6 months until bottling. Rests about 2 months in the bottle before being released.

Cesari Bardolino classico DOC 75cl Dry red wine Morenic hills in front of the lake of Garda, classic zone of Bardolino, province of Verona. Corvina 60% Rondinella 15% Molinara-Negrara-Rossignola 25% Alcohol 12% Vol Garnet colour not too deep, orange brick rim. Fruity with a delicate violet aroma. Smooth, fruity dry, harmonic Goes well with pasta dishes, white meats and mild cheese. 16-18°C Harvest time within September 15 and October 15. Vinified in red skins contact maceration lasts 8 days, then takes place the malolactic fermentation. Remains in stainless steel for a period of 4 months until bottling. After a short rest in the bottle it is released to the market.

Cesari Cabernet 75cl Produced particularly from Cabernet Sauvignon grapes (plus a little Cabernet). This delightful red wine has a full and robust flavour. Cesari Lugana DOC 75cl ​Practises on the young vine shoots and thinning, limited the production to 90 quintals per Hectare. Almost the 20% of the grapes ripened on cut off shoots to enhance structure and concentration. Vinification has been carried out with soft pressing of the grapes and alcoholic fermentation under controlled temperature at 18°/20° C. “Cento Filari” lasted up to January in contact with skins for a better expression of its own potentiality. Bottling has been carried out in February. Bright straw yellow colour. Break out with intense notes of flowers and fruits. On the palate reveals a good minerality and acidity along with fullness, softness and a persistent aftertaste. Pairing It is a delight as aperitif, perfect with hors-d’oeuvre, lake fish (whitefish, eel, trout) as well as sea fish or delicate main course. Due to its own peculiarity, “Cento Filari” can be enjoyed even 2/3 years after the vintage. To be served at 8°/10°

The must obtained from the soft pressing of the entire grapes left to ferment at a controlled temperature. When spring is well underway it is bottled and then bottle- aged for at least another two months.

Cesari Soave classico DOC 75cl Classical area of Soave, Verona province Garganega 50% Trebbiano 40% Chardonnay 10% Alcohol strength: 12% Pale straw colour, with greenish hints. Pleasant bouquet of ripe fruits and hawthorn. Dry, delicate and discrete texture. Recommended with hors d'oeuvres, light pasta dishes, fish, cold cuts and poultry. Serving temperature of 12-14°C. Vinified in white and to follow fermentation with selected yeasts at 20°C temperature-controlled. After a partially malolactic fermentation, has held for 4 months in stainless steel tanks. By the law can be bottled from the next February after to the vintage.

Cesari Valpolicella Ripasso DOC Superiore 75cl The “Ripasso” technique has a history of use in Valpolicella, and consists of refermenting the wines of the same year’s vintage or that of previous years on fermented dregs of the dried grapes used to produce Amarone. Essentially, this serves to strengthen the Valpolicella, which is made from a blend of grapes consisting of about 70-75% Corvina Veronese, 20% Rondinella and 5% Molinara, and make it more robust, drawing what is left from these noble dregs. The refermentation lasts 15/18 days and the Valpolicella wine that has thus been “made over” acquires color, structure, fragrance and tannins, as well as about 1-1.5 percent more in alcoholic level than the original wine. After it is finally racked off in February and March and has undergone its malolactic fermentation, the wine is left to mature for about 12 months in barrels of Slavonian oak (80%) and French oak tonneaux (20%). Ageing is completed by resting in bottles for almost 6 months. Already from the first olfactory examination the characteristic notes of ripe fruit, fruit preserve and cherries can be perceived. Its incredible persistence is striking: it lingers on the palate, where it opens in all its power with a warm, elegant body.

This wine always retains its close relationship with the Castello di Nipozzano terroir. Nipozzano 2010 is a ruby red colour with purple highlights. The nose delivers fruity notes dominated by ripe black cherry, marasca cherry and a delicate hint of forest underbrush. Floral notes of violet and fresh notes of licorice combine with spicy aromas of clove and nutmeg. The palate has a pleasing entry with broad tannins and lovely texture. Fresh and full bodied; reveals a remarkable correspondence between fragrances and flavour and a notable persistence. Leone de Castris Salice Salentino Riserva Rosso DOC 75cl Leone de Castris offers wines of intense character. This richly styled Salice Salentino, made primarily from hand-harvested Negroamaro, is named after the matriarch of the family - Piernicola's grandmother, Donna Lisa. Donna Lisa is also the name given to Leone de Castris high-end hotel and restaurant, Villa Donna Lisa, where they host guests and Italian and foreign delegates who come to visit the winery. Mionetto Prosecco DOC Treviso 75cl The history of Mionetto, the oldest winery in Valdobbiadene, started in 1887 when the master winemaker, Francesco Mionetto, began to bottle and sell the wine from the area, Prosecco, in and around Feltre. The small company was launched towards success and Francesco, after having bought and matured the best wines of the hills, started delivering them further away from his town in small casks that expert carters of the period brought everywhere. ENJOY WITHIN: One year after bottling. ALCOHOL CONTENT: 11% vol TOTAL ACIDITY: 5.5 - 6.5 g/l. SUGAR CONTENT: 9 - 15 g/l. Mionetto Rosè Frizzante 75cl Bright and lively cherry red reflections, a delicate and fragrant bouquet with hints of fruit and a touch of rose, raspberry and marasca cherry, leading to a fresh and elegant palate of sweet red fruit. Serve as aperitif, or with white meats and grilled fish. In 1946 a modernization process was undertaken. This would be the event that would distinguish the company, as it still does today. In the early 1960s, the first automatic bottling lines of the semi-sparkling Prosecco wine were introduced. The finishing touch of tying a string over the cork, reintroducing the original tradition of the farmers of the area, was done by hand to prevent its uncorking during the natural fermentation of the typical bottled Prosecco wine. Mionetto converted the production of Prosecco from bottle fermentation to autoclave fermentation definitively in 1982 by choosing the Charmat method which better preserves the flavours and fragrances of the a grape variety so rich in aroma and fruity scents such as Prosecco"

Nobili Falanghina del Beneventano Wine IGT 75cl Falanghina del Beneventano IGT. Falanghina is made from it's grapes harvested during the second week of September when they have reached the peak of aromatic maturation. After the selection and harvesting, the grapes are sent to the fermentation at controlled temperature. This process brings out the traditional and ancient flavor of this nectar. The characteristic of the vine gives the wine its notes of straw yellow color with intense perfumes of white flowers. Falanghina grapes 100% Color: Light straw yellow with greenish reflections. Valentini Trento DOC A. Valentini Brut 75cl This wine takes its name from Arminio Valentini, the first Trentino sparkling wine maker, as testified in the journal Strenna Trentina in 1899, which published an advert for his Champagne. It is produced exclusively from Chardonnay grapes cultivated on high-lying hills and in line with traditions of the classical method of bottle refermentation. Of straw-yellow hue, with light golden nuances. Elegant and long-lasting perlage. Persistent bouquet with fruity notes, complemented by yeast and bread crust flavours. Fresh and full, harmonic, sapid, long lasting and elegant on the palate. Vineyards selected (low yield) are located in the opposite areas of Volano. Colour: yellow with golden nuances characterized by the vivacious perlage. Bouquet: olfactory sensations which recall fruity and floral notes, along with a light note of yeasts. Taste: vivacious and harmonic, dry, fresh, full and rounded structure, a perfect balance between softness and acidity. To be served at: 6-8°C in wide Champagne flutes.

Villadoria Barbaresco DOCG 75cl Barbaresco D.o.c.g. Grape variety: Nebbiolo 100% Barbaresco, Neive, Treiso and part of San Rocco Seno d'Elvio d'Alba. The Cappallotto Estate in Serralunga d'Alba has special ministerial authorization for the vinification and ageing of Barbaresco Nebbiolo outside the production area. VINIFICATION: The hand-harvested grapes are destemmed and soft crushed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. Maceration lasts about 25 days. AGEING: The legally required ageing period is two years, and takes place in 30 and 50 hl Slovenian oak casks for about one year, after which it is finished in the bottle for several months. Sensory properties A garnet red colour with a delicate, appealing, intense bouquet, reminiscent of violets and dry roses, alcohol-soaked cherries, vanilla, tobacco, truffles and pepper. The taste is full, robust, austere but velvety and harmonious.

Villadoria Barbera d'Alba Superiore DOC Almèi 75cl Barbera d'Alba Superiore D.o.c. Almèi The grapes come from the hills around Alba. The geological conformation of the land and the exposure of the selected vineyards result in high quality grapes. During harvest grapes are selected for the Superior designation. VINIFICATION: The hand-harvested grapes are destemmed and soft crushed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. Maceration lasts about 20 days. AGEING: After malolactic fermentation, the new wine is decanted into second and third passage small French oak casks where it ages for about a year. SENSORY PROPERTIES Ruby red. The bouquet is rich in wild berry, spices, cinnamon, pepper and vanilla scents. Ageing gives it a warm, velvety, robust taste in the mouth, as well as a light boiseí​ note.

Villadoria Barolo DOCG 75cl Barolo DOCG Grape variety Nebbiolo 100% The grapes come from vineyards on mid-altitude hills situated in Serralunga d’Alba, which are wholly owned by the Lanzavecchia family. The terrain is made up of calcareous marl. VINIFICATION The hand-harvested grapes are destemmed and soft crushed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. Maceration lasts about 25 days. AGEING The legally required ageing period is three years, and takes place in 30 and 50 hl Slovenian oak casks for about 30 months, after which it is finished in the bottle. Sensory properties A garnet red colour with a delicate, appealing, intense bouquet, reminiscent of violets and dry roses, alcohol-soaked cherries, vanilla, tobacco, truffles and pepper. Villadoria Dolcetto d'Alba DOC Furèt 75cl Grape variety, Dolcetto 100% The grapes come from the hills around Alba. Among the areas of provenance we mention Madonna di Como, in Alba and Diano d​ŰŞAlba. The geological conformation of the land and exposure of the selected vineyards result in high quality, desirable grapes. The hand-harvested grapes are destemmed and soft crushed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks at a maximum of 20°C. Maceration lasts about 10 days. Ageing A vintage wine, it is ready for bottling at the beginning of the year after harvest. Deep ruby red. Marked almond and violet scents on the nose. In the mouth it is winey, fresh and slightly bitter, as is typical of this variety. Accompaniment A wine for every day, it goes well with all courses, from appetizers to uncomplicated main dishes. Villadoria Gavi del Comune di Gavi DOCG 75cl Gavi del Comune di Gavi D.o.c.g. Grape variety, Cortese 100%. Production area and characteristics Grapes for this wine come from the Gavi hills in Alessandria province. The exposure of the mid-altitude hill vineyards and the composition of the terrain (calcareous marl) ensure the production of high quality grapes. Grapes are harvested by hand and then directly very soft crushed. Fermentation takes place at low temperature without contact with the skins to emphasize the aroma. A vintage wine , it is ready for bottling at the beginning of the year after the harvest. Straw-yellow colour with light green hints. The bouquet is rich in floral and fruity scents. The balanced acidity and good flavour typical of the terroir of provenance give it an appealing freshness in the mouth.

Villadoria Langhe Rosso DOC Bricco Magno 75cl Grape variety, Nebbiolo 100% The grapes come from carefully selected vineyards in the Langhe and Roero areas. The geological conformation of the land and exposure of the selected vineyards result in the production of high quality, desirable grapes. The hand-harvested grapes are destemmed and soft crushed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. Maceration lasts about 20 days. After malolactic fermentation, the new wine is decanted into small French oak casks where it ages for about a year. The wine completes its ageing in large 88 hectolitre casks for a further two years. Ruby red with garnet hints. Violets, rose, vanilla and cocoa scents on the nose. Warm, robust, velvety, soft and persistent on the palate with a harmonious, enveloping finish. Ageing gives it a marked boisè note.

Villadoria Moscato d'Asti DOCG 75cl Moscato d'Asti D.o.c.g., Grape variety: Moscato 100%, Production area and characteristics: Grapes for this wine come from the Serralunga d'Alba hills, an area favoured for the production of Moscato for both the terrain, rich in calcareous marl mixed with clay, and the exposure of the vineyard. Grapes are harvested by hand and soft crushed. The must is cooled immediately to a temperature of around 0°C and clarified. Fermentation takes place in temperature- controlled autoclaves. Fermentation is interrupted by refrigeration when the wine reaches an alcohol content of around 5 degrees and 100 grams per litre of residual sugars. Sterile filtration and bottling follow. Straw-yellow colour with golden hints. Fine perlage and persistent foam, with a bouquet rich in aromatic orange- blossom, peach and apricot scents. Its natural vivacity makes it pleasantly sweet and fresh in the mouth. It goes well with all desserts; ideal for celebrating special occasions or to end the meal at any time.
