What's on International Women’s Day Luncheon

Just when we thought it couldn’t get any better. Flavours festival is a one-day event celebrating different cultures and food from around the globe. Hosted by comedian Mia Stanford, the festival is free and offers craft stalls, demonstrations, workshops and performances all day in Grattan Gardens. The VIVA Youth Festival is a free annual event celebrating the importance of youth and street culture. Welcoming all ages, the all-day event includes basketball and skate competitions, dance workshops and live performances. Vintage Clothing Sale at Como House Attention vintage collectors. After a highly successful clothing sale in 2016, the Como House event is back for another run. To celebrate International Women’s Day, young entrepreneur Holly Ransom will be joining Stonnington’s International Women’s Day Luncheon as a special guest speaker. Holly was named in Australia’s ‘100 Most Influential Women’ and is CEO of Emergent, a company driving development of workforces, leadership and social outcomes. She will be leading the conversation on how we can value women and men’s contributions equally, empower girls and help women achieve their ambitions. There are few people who know the “I’ve had an ongoing relationship with the festival, so it’s amazing to be the artistic Australian jazz scene better than director for the second time,” she said. Chelsea Wilson. She wrote her first song at eight, played gigs as a teenager, studied at the Queensland Conservatorium of Music, holds a masters degree in Arts and Entertainment Management and has held international residencies at jazz clubs all over the world. In 2015, she played at Stonnington Jazz through her series Women of Soul, a string of performances celebrating female vocalists and songwriters.

Now, Chelsea hosts her own radio show on PBS and is currently working on her second album. In other words, she’s more than qualified to be artistic director of Australia’s long-running Stonnington Jazz festival, now in its 12th year. It’s Chelsea’s second year in the role and she’s pretty excited about it.

Her role is something of a dream job. Chelsea gets to book the musicians she plays on her radio show, while creating a program that reflects the diverse Australian jazz scene. “My role is having a creative vision for the festival, and continuing the legacy of the festival as a champion of Australian jazz music. This really sets the festival apart from other jazz festivals around the country.” Stonnington Jazz curates a 100 per cent Australian line-up, with the 2017 program expected to drop very soon. This year, the festival has an inclusive focus, aiming to deliver a program that will entertain everyone. “It’s a diverse range of genres within the jazz umbrella. As cheesy as it sounds, there’s something for everybody,” said Chelsea.

This year’s program includes album launches, workshops and shows designed to get the whole crowd involved. “There will definitely be performance workshops. There will definitely be events that are all ages, that kids can get involved with, that professional musicians can get involved with, that complete beginners can get involved with.” “There will be a mix of seated concerts for that traditional jazz audience where you’ll see some of Australia’s great legacy artists, but there are also elements of the program where dancing is encouraged,” she said. “Even if people think they don’t really like jazz, they can come down and find something that they’ll like.”

Leading the Way She’s managed a lifetime of achievements before 30, so what’s been her greatest accomplishment so far? “From a professional sense I don’t think I can go past what we achieved with the 2014 G20 Youth Summit. That was the first year the Youth Summit had ever managed to successfully influence the world leaders' agenda to get any of its recommendations entrenched in what the leaders signed off. To have been able to lead that process and deliver that outcome for the 1.5 billion young people that are across the G20, was certainly the most exciting professional achievement… because no one expected us to do it.” As International Women’s Day approaches on Wednesday 8 March, Holly will be hosting a panel discussion addressing gender equality issues and empowering young women.

For one of Australia’s most influential women, a chance encounter at age 10 influenced a lifelong passion for leadership and a desire to bring about change. Holly Ransom remembers shopping in a bookstore with her mum, before wandering out onto the street to find a man begging for change. “I’ve always been insatiably curious, so 10-year-old me just wandered up to him and said, 'whatcha doing?'" said Holly. “He looked up at me with a grin and said, ‘I’m trying to earn enough for a feed and a roof.’

But he chuckled and said ‘nah it’s a good day, I’m doing well.”

Let’s get pragmatic on where the barriers are that are affecting our pursuit of gender equality, but most importantly how do we be a part of the solution?” Holly said.

“Since then, my journey has been about how can I improve and develop as a leader, as a businesswoman, as a person in order to be able to make the best possible contribution to improving the lives of those less fortunate in our community.”

The biggest piece of advice she has for other young women and girls?

She’s made pretty good progress since then.

You’re never actually ready. The ducks are never going to perfectly align so that everything’s good to go.

Now 26, Holly has been named among Australia’s 100 Most Influential Women, co-chaired the United Nations Global Coalition of Young Women Entrepreneurs and led the G20 Youth Summit. She’s also CEO of her own company, Emergent, which drives the development of intergenerational workforces and leadership models. But Holly’s extensive resume doesn’t stop there. In 2016, she became the youngest ever female director of an AFL club, Port Adelaide.

“Start before you’re ready. One of the biggest things women can find themselves held captive by, is this idea that they’re not ready.

If you’ve got an idea you're passionate about, if you’ve got something on the backburner that you’ve always wanted to see if you can do or have a go at, what’s one thing you can do in the next 24 hours that can step yourself towards that? Filling

1. To make the filling, combine minced 150g minced pork belly 3g salt 12g sugar 5g cooking wine Pepper (to taste) 5ml sesame oil Pinch of fresh ginger (finely chopped) Pinch of spring onion (finely chopped) 50ml chicken stock 70g aspic

Bun 3g yeast 150g plain flour 3g baking powder 10g sugar 10g lard 90ml water Oil (for cooking) Black sesame seeds

pork with salt, sugar, wine, pepper and sesame oil. Add ginger and spring onion. Pour chicken stock in gradually and then mix well.

2. Add aspic and stir gently. Cover and chill in the fridge for about 30 minutes.

3. To make the bun, soften the yeast in a little of the water.

4. Combine all the ingredients in a mixing bowl. Knead mixture into a smooth dough. Cover and rest for 15 minutes.

5. Transfer the dough onto a clean, lightlyfloured surface and roll into a long tube.

6. Cut and weigh the dough portions (approximately 22g each). Cover with plastic wrap and rest for 10 minutes.

7. Roll each portion into a ball shape. Flatten with your palm and roll each into a disc using a rolling pin.

8. Wrap a spoonful of filling in the middle of the dough disc by folding the sides together and pinching the top. Repeat this step to finish all the remaining dough discs. Place wrapped buns on a tray dusted with flour to prevent sticking. Cover and rest at room temperature for 20-30 minutes.

9. Place the buns in a pan in one single layer. Pour a mix of oil and water into the pan, up to 1/3 bun in depth. Cover and cook until the water evaporates and the bottom of the buns are golden brown. Remove the buns from the pan, sprinkle

Fresh on the corner of High Street and Seymour Avenue sits Moby, Armadale’s three-storey answer to all-day breakfast. Run by locals Christina Higgins and Stephen Svensen, the cafe merges classic Melbourne breakfast staples with Middle Eastern influences. Higgins worked under legendary Middle Eastern chef Yotam Ottolenghi, while Svensen is the ex-head chef of Pillar of Salt. The resulting menu includes cured ocean trout with beetroot labneh, chilli scrambled eggs on toast and harissa beans on poached eggs. Plus, the top level is actually a rooftop terrace, so you can enjoy your morning coffee in the sun.

If you’ve ventured to Chapel Street for breakfast, chances are you’ve seen the white brick walls of The Lucky Penny. The South Yarra cafe recently underwent a management change, with head chef Noah Crowcroft of Red Spice Road stepping in. The new menu caters for all – from the health conscious right through to the brunch connoisseurs of Instagram. The line-up includes coffee-cured salmon, Belgian waffles with fresh mango and pulled pork eggs benedict. The team is all about ethically-sourced local produce, guided by a simple culinary ethos: food tastes better when it’s in season. They’re also supporters of Free to Feed, a program which hosts cooking classes led by asylum seekers who face barriers to employment. It’s a win on all fronts.

Nothing beats finding a new eatery to quench your thirst for good coffee and satisfy your need for avo. And Dylan Whitmore has delivered. His baby, Abacus, is fresh from its Christmas opening and a contender to become your new fave. On the menu, you’ll find flat-iron steak served on volcanic rock, sardines with pickled lemons, and speck and gruyère croquettes. Unlike your standard cafe, Abacus pays particular attention to where its produce comes from. Head chef Chris Connolly spends time on local farms, sourcing the highest quality ingredients, while beehives are kept on the building’s roof to harvest fresh honeycomb. Is your mouth watering yet?

It’s hard to believe Bistro Morgan is owned and run by a 15-year-old. Morgan Hipwell, a high school student with a taste for dessert and the culinary skills to match, launched his doughnut empire in 2015. He’s been supplying Melbourne cafes with his famous loaded doughnuts for two years and has now finally opened up a permanent shop in Windsor. The opening follows a hugely successful pop-up last year, where Bistro Morgan sold 10,000 doughnuts in eight days. With flavours like Golden Gaytime, Ferrero Rocher and Rocky Road changing weekly, we’re expecting lines out the door and down the street.

The Dask Culture is bringing a new atmosphere and upbeat vibe to Glenferrie Road. After arriving in mid-December, it's the only cafe in the area to offer a mix of Sri Lankan, Caribbean and South American influences on the menu. Standout menu items include slow-cooked pork belly and jerk chicken, with dishes combining the best classic and new fusion dishes from each region. Expect an upbeat atmosphere, complete with Bob Marley references decorating the interior. The arrival of a courtyard is not far off, with dinner service also on the way. Watch this space.

Contrary to what the name suggests, the Grange Road Egg Shop doesn’t just sell eggs. Launched by the team that brought you Denis the Menace (Richmond) and St. Edmonds (Prahran), the cafe is an ideal spot to grab a bite or sit down for a coffee. It’s also a good pit stop if you’re looking for a quick lunch on the go. The team’s popped together a $10 takeaway menu, covering everything from quinoa and coconut porridge to summer salads. There’s also a selection of fancy lunchtime essentials, like roast mushroom and buttermilk fried chicken sandwiches. Lunch is served.

Meet the Locals Dinner with Clinton McIver “Of course you’ll be greeted and your menu will be discussed by the restaurant manager or sommelier… but during the course of the evening you’ll definitely meet a chef or two.” The degustation-only menu offers nine to 14 servings of contemporary Australian cuisine, with the option of either the ‘Insight’ or ‘Sensory’ menu. As the name suggests, the ‘Insight’ menu is a smaller four-to-five course option, offered at lunch and dinner for $85 per person. For $155, guests can receive around eight courses from the ‘Sensory’ menu, constructed from the best produce available in season. Past inclusions have seen Wallaby tail dumplings and buffalo mozzarella ice cream on offer to guests.

It might seem an unlikely fit for Armadale, but 34-seater Amaru is changing the dining dynamic of High Street. Opened one year ago in January, Amaru is headed by ex-Vue De Monde sous chef, Clinton McIver. It’s his first solo venture and has already won big with the critics, earning a Chef Hat rating in The Age Good Food Guide 2017. But why Armadale?

“I live locally and I know there are not a lot of restaurants around the area… There’s a pretty big gap between casual eateries and anything a bit more upmarket. We’re wanting to close the gap a little bit on that,” says Clinton. A step inside the intimate restaurant feels like a step inside McIver’s dining room. The interior is warm and inviting. Blonde wood meets rendered walls with Aboriginal artworks hanging.

“A dining room is the feel that we want. We want something not too casual but we do want something that’s sleek and designfocused. Somewhere you can happily spend three hours,” he said. A small front-of-house team keeps the atmosphere personal and can occasionally result in chefs running the food. “We try to blur the lines a little between front of house and back of house.

It’s a winning recipe. The Gault & Millau Food Guide recently awarded Amaru the Best New Restaurant in Australia for 2016. For 2017, McIver has his focus set on his customers. “We already have a lot of guests who return on a regular basis. Within one year, we’ve created a pretty big following,” he said. “We love it when we have a lot of regulars, people that we know really support what we do. Being such a small room, it creates a totally different vibe in the restaurant and we can’t wait until we have every service night like that.” It’s a brave step to the suburbs for McIver, but Amaru’s got us cheering with every move.

Dining in Nepal You may have seen a new Nepalese restaurant kicking around Malvern East in the last year, schooling locals on true South Asian cuisine. Husband-and-wife team Hem Ghale and Shabnam Maden opened Nepal Dining Room in early 2015, after the name had gained recognition at markets around the city. Hem is the head chef with 18 years’ hospitality experience under his belt, while Shabnam is restaurant manager and creative director. They’re regular participants at the Queen Victoria Night Market, Moomba and St Kilda Twilight Market, to name a few. Their aim is to introduce Nepalese cuisine to a wider market, educating the masses on the region’s true food and culture.

We sat down with Shabnam to discuss everything from Nepalese culture to Pork Choila.

How did Nepal Dining Room start out? We originally owned a Nepalese restaurant in Malvern which we sold eight years ago. We wanted our regular customer base back and knew there weren’t any Nepalese restaurants nearby. We found this location in Malvern East (which was originally a retail space) and fell in love with the area.

What are you doing differently? We’re showing Melburnians how simple and delicious Nepalese cuisine can be. There are too many Nepalese-Indian fusion restaurants and we believe it has confused the market.

Your pick of the menu? Pork Choila: grilled thinly sliced pork belly, marinated in garlic, ginger, onion, coriander and lime.

Nepal is rich in culture, tradition and food, and most Nepalese restaurants in Melbourne don’t showcase a lot of popular dishes that are a huge part of Nepalese ethnic groups.

What are you currently working on? Although we’ve only been open for a year and a half, Nepal Dining Room has already earned a good reputation from our customers. We love seeing people recommend our business and we thrive on that.

Pork is a huge part of Limbu culture, which you don’t see in any Nepalese restaurants in Melbourne.
