Back for its 10th year, the annual Paris to Provence festival will see Como House transformed into a quaint French town. The theme this year is ‘les plus beaux villages de France’, meaning ‘the most beautiful villages in France.’ As well as plenty of champagne and French cuisine, the weekend will include activities like a pop-up French theatre, live entertainers, croissant tossing, and the Course de Garcons Café waiters’ race.

Stonnington Symphony – Sunday Series 3 For the final Sunday Series concert of the year, conductor Michael Lichnovsky will lead an orchestra through the works of Wagner, Britten and Brahms. Thurley has firmly cemented itself as a mainstay of the Australian fashion industry, having served up locally designed eveningwear for more than a decade. Founder Helen O’Connor has taken the label from a single machine at her parents’ house to wardrobes nationwide, and is now being inducted into the Stonnington Fashion Hall of Fame. We spoke to Helen to learn more about the Thurley journey, and how she built the brand into the icon it is today. Tell us how Thurley began. I established Thurley in 2006, after returning from a scholarship at the Fashion Institute of Technology in New York. The positivity and enthusiasm of the lecturers, teamed with the electric buzz of the nearby fashion district was all the motivation I needed to give my wildest dream a chance. I started out by sketching and making samples at home on a Janome and bust form my grandmother bought me from the trading post. It quickly blossomed into a collection that I took around

I think the most important learning curves for me as a designer have been navigating the storm following the financial crisis in 2007, and the systemic shift that online shopping has created. I think the secret to both was remaining small and adapting

quickly as consumer habits changed. Another really notable change for the better has been Instagram, which has been such a transformative force for Australian brands and the industry as a whole. How did you establish your signature style? Was formalwear always the direction you wanted to take? I don’t think it was a conscious decision to hone in on formalwear, but it’s something I naturally gravitate towards. I started by

What does a typical work week entail? My weeks are quite busy. I recently returned home from selling the new collection in New York and sourcing new fabrics in Paris, then went straight into the office and started designing the new collection. Any time not spent designing is spent perfecting fits with the production team, developing new ideas and silhouettes, in sales meetings or fabricsourcing with the design team.

that I had the courage to take their advice and launch Thurley. You’re living a lot of people’s dreams – is your job as glamorous as it sounds? I remember my mentor’s words when I started out. He warned me that fashion was 2% glamour and 98% blood, sweat and tears, and he was right! You need to have a true passion and yearning to go the distance in the industry. It’s not full of rock stars and wild parties like the ’80s, but it’s so worth it for the fulfilment that creativity provides.

If you weren’t a fashion designer, what would you be doing right now? I think I would have loved to be a vet. I know they are very different pursuits, but I adore animals. The only thing that would fulfil me as much as fashion does is helping animals, particularly ones in shelters. Having been in the industry for so long, what’s an important piece of advice you can give to anyone starting out? Always follow your dreams, never ever take no for an answer, and never give up.

making formal dresses for my friends at school, and it’s something I have focused on mastering over the past decade. Who were some of your inspirations when you were starting out? My inspiration was an industry mentor, who challenged me to give my dreams a chance and start my own label. He told me I would be eating wallpaper for a few years but it would all be worthwhile in the end. I must also credit my friends, parents and husband, who always reinforced that I had something special to offer the industry. I am so glad now

What do you love most about Melbourne? As a Melbourne girl, I spent much of my youth in the Stonnington area. It holds many memories that are very close to my heart. My teenage years were spent trawling the stores on Greville Street and Chapel Street, so it’s probably where my love of fashion was ignited. My first job in fashion was at Scanlan Theodore on Chapel Street, and of course our flagship store is on High Street, Armadale. What made you set up shop in Armadale? We really wanted an intimate location for our flagship boutique, to provide a space that made our customers feel comfortable and special. I felt that the unique setting in High Street – with bridal boutiques trading alongside the best Australian fashion labels – was the perfect environment for customers seeking an outfit for a day at the races or a wedding.

Meet the Locals with Dave Nelson from Sash sliders and nuggets. “We also include some more traditional sushi rolls and sashimi,” Dave adds. We ask him to pick his number one dish off the menu: “That’s like asking who your favourite child is, but I’d have to say our spicy tuna taco. It’s possibly our tastiest dish as it has a great balance of textures. It’s also pretty healthy as it's loaded with ahi tuna and avocado.” The Sash team carefully considers all elements to ensure everyone’s experience is one to remember.

“Each dish is meant to wow the customer, from the taste and texture to the visual. Our cocktails are just as popular and unique as the food, so our cocktail bar is a big part of the concept. But we are also working hard to create a fun experience, from the music, to the service to the ambience,” says Dave.

The eccentric menu at Sash provides an open invitation to anyone willing to embark on an adventurous dining experience. The Windsor hotspot fuses Western flavours with elements of Japanese cuisine, producing unique, modern dishes with unpredictable twists. Since opening its doors, the venture has gained recognition for its quirky offering. Customers come for the crazy food creations, and stay for the Harajuku-style cocktails.

Ditching the authentic route, Sash favours fusion as it allows the team to experiment creatively. “The only rule is we have to break the rules,” laughs Dave.

We chatted to the restaurant’s co-director Dave Nelson, who runs the show alongside Kyle Stagoll.

And the offering is certainly elevated from your standard sushi joint.

“Both myself and Kyle come up with most of the crazier ideas and it’s our chef’s job to try and make them work,” he says, when asked to name the masterminds behind each dish. Dave and Kyle have recruited the epitome of a Melbourne dream team. The Sash roster boasts Ichi Ni former head chef Ken Tut, GoGo Bar’s Kyle Rose at the cocktail bar and Nobu alumnus Ralph Santos behind the scenes. “Ralph came on board this May and has really taken us to another level,” says Dave.

Options like tropical tuna and sashimi blue cheese pizza require sophisticated palettes, unless seafood and mango on a squid-ink base is a fusion you’re familiar with. For first-time diners, Dave recommends the banquet as the way to go: “[The tasting experience] takes visitors on a food journey with a chef’s selection of dishes that can’t be found anywhere else in the world.” Priced at $59 per person, the banquet is a tasty introduction to the venue’s diverse offering. On his career in the hospitality industry, Dave is most excited by the creativity process and pushing the boundaries, with “not only the food and beverage, but the fit-outs, the offerings, the video content and the brand feel.” Alongside rule-breaking creations, he places great importance on the business side. “Balancing the customer experience on the front and the financial side on the back, they are equally important as one doesn’t work without the other,” he says. As for what’s in store in the future, Dave and Kyle have already marked global expansion in the diary. “We are already building our Sydney site which is set for a late 2018 launch, and have been inspecting sites in Brisbane, Los Angeles and parts of Asia.”

Chapel Street newcomer Rebel Blue is delivering the flavours of Santorini to Windsor. Bringing a modern twist to an ancient cuisine, the menu is full of experimental takes on classics. And it’s all reflective of Rebel Blue’s playful ethos, which favours ‘fun dining over fine dining.’ Head chef Dionisios Pouliezos has curated a promising menu that boasts rebellious combinations, with flavours that honour his Greek heritage. On the menu, eggplant with slow roasted beef shoulder, saganaki and a colourful selection of cocktails have garnered well-deserved attention. Although, we think it’s the vivacious energy inside that keeps a calendar of regulars coming back.

No Melburnian is a stranger to Julien Moussi’s work. He’s already brought Tinker, Bentwood and Mob to the cafe scene, proving he knows a thing or two about great dining. Clubhouse is the latest venture to join Moussi’s archive. Sitting humbly on Malvern Road, the spacious, golf-themed cafe is only a few months old, though it’s already a heavyweight on the local brunch rotation. Alongside an offering of beloved breakfast staples, expect a colourful list of menu items like mango smoothie bowls and black forest panna cotta. But it's the blossom hotcakes and pulled pork benedict that compete for the title of customer favourite.

Among a sea of quirky Melbourne brunch spots, it’s refreshing to find a hidden gem that offers something a little different. Cue Saint James, the English-inspired cafe bringing flavours from the land of Queen Liz herself. It welcomes foodies of all backgrounds for breakfast and lunch, delivering English favourites such as chilli scrambled eggs, vanilla porridge and fish finger butties. A reserve tea selection sees green, oolong and kombucha on the menu. But it’s Saint James’ sustainable practices that have won us over. All meals are made from raw ingredients, and any organic waste is composted.

Joining the ranks of Sagra’s restaurant and rooftop bar, Pizza One has officially opened for business on Glenferrie Road. With dough made in-house and fermented for 72 hours, Pizza One’s specialty Roman-style pizza is light and crispy – but sturdy enough to hold your bubbly melted cheese. Bestsellers include pork and fennel sausage pizza paired with shaved apple, plus a delicious basil and pine nut pesto number. The menu is only available on level one of Sagra, right above the open kitchen where the smell of baking dough will hit you hardest.

Situated on Greville Street, Acai Brothers is known for attracting a thriving lunchtime crowd. If the name isn’t enough of a hint, the superfood bar specialises in acai bowls, the healthy solution for tiding over any sweet cravings. Co-owners and health enthusiasts Ben Day and Sam Carson wanted to create something that combined their love of fitness and delicious meals. Together, they’ve produced a playful selection of acai-based treats including flavours like jaffa, lemon meringue and salted caramel. To finish things off, you can wash it all down with a specialty post-workout smoothie.

An acronym for balance, energy, nutrition and sustenance, BENS is all about producing healthy treats without compromising taste. A lineup of delicious wholefood options make up its expansive menu, which is nutritionist-approved. Expect chicken and avo burgers, green power wraps, and plant-based smoothies on the bill. The goal is to change how the world views fast food, and it’s not hard to believe BENS can pull it off. Natural ingredients are ethically-sourced from local farms, while an array of gluten-free and vegan options promise meals that are good for your gut and your conscience.

Express Yourself The annual Expressions exhibition is a chance to shine a light on Stonnington’s talented young people. This year, hair and makeup students from Melbourne Polytechnic are tackling diversity in the beauty industry through an exclusive exhibition. Ahead of the showcase, we sat down with three students to find out what diversity means to them.

How do you think the beauty industry could better represent diversity? By including more skin tones in foundation ranges. That topic is something that always causes a shakeup in the beauty industry. Especially when a foundation/concealer line is hyped up and there are only seven to 10 shades. What beauty brands do you think represent diversity well? Fenty Beauty and Huda Beauty represent diversity well, because both companies offer 40 shades in foundations and concealers. Who inspires you? I don’t think I have a particular person that I am inspired by, but beauty gurus on YouTube like Lauren Curtis and Nikkie de Jager made me fall in love with makeup and inspired me to start experimenting.

If you could change one thing about the beauty industry what would it be? I think the industry is changing rapidly and becoming a lot more representative of women from all walks of life. It’s incredibly refreshing and reassuring to know that diversity is being embraced both in campaigns and cosmetic products. I wouldn’t so much change one thing about the beauty industry, but I would make sure that more brands are going in this inclusive direction. What beauty brands do you think represent diversity well? Fenty Beauty, Milk Makeup, Glossier. How do you think the industry could better represent diversity? By doing its best to make sure no community is being underrepresented. A great way to do so is through campaigns and editorials, which are wonderful and creative ways to celebrate all the different methods in which beauty can be defined. Where do you see yourself in five years? Painting faces and living in a warm city.

SIMONE LYONS What does diversity mean to you? When people from all over the world come together without judgement. How do you think the beauty industry could better represent diversity? The industry could make a bigger effort to produce a better colour range for all skin tones. While some brands do this well, a lot do not offer a big enough range.

What beauty brands do you think represent diversity well? I think that Cover FX, Make Up For Ever and NARS have a good colour range, these brands are just some that I have used in my kit. There are many more out there. Who inspires you? Too many people to name! I take most of my inspiration from online fashion magazines and things I see in everyday life. Where do you see yourself in five years? I’m hoping to be a head makeup artist on fashion editorials, commercials and campaigns.

The store prides itself on its unique madeto-measure approach, promising guests excellent service from start to finish. We took some time to chat with director Miles Wharton, who shared invaluable advice on dressing up and running a business. What do you enjoy most about men’s fashion? It's your chance to dress how you like and showcase a little bit of your personality. We live in a world where people judge you straight away from appearance. Dressing well is a great way of turning heads and making a statement about the person you are.

What do you love about South Yarra? Everything is at your doorstep. I live in South Yarra and find that you never have to leave the area. The restaurants and bars are fantastic. To name a few, France Soir, Yagiz and South Press are my favourites. Tell us about your collaborations with Rolls-Royce and Christian Louboutin. Being able to produce tuxedos for one of the biggest brands in the world was a special moment. We created two different tuxedos inspired by the Rolls-Royce Black Badge Wraith and the Rolls-Royce Dawn. We sold out of 30 limited-edition tuxedos of each design. We also produced a 1/1 Christian Louboutin jacket with studs from the brand’s shoes on the chest pocket of our jacket. It was for the launch of Christian Louboutin’s Sydney menswear store in November last year.

Wedding guest: Add a little flair to your outfit without upstaging the groom. Try a nice, bright tie and pocket square with a subtle check suit. Black tie: Means wear a tuxedo! Too many men think they can wear a navy work suit to a black-tie event. Wear a classic black tuxedo with a bow tie. If you want to opt for something a little fancier, try a dark navy fabric with black lapels.

What are the most common mistakes people make when suiting up? Getting ill-fitting suits. If you’re not an expert, ask for guidance so you can get a suit that fits you properly. If you are a larger man, choose a plain fabric as opposed to checked. This will help create a slimmer silhouette. For men on a budget, what’s your suggestion for finding a quality suit? The fit of the garment is essential. Try to get a suit to fit as well as you can. Go with a quality English or Italian cloth, if budget permits. Advice for anyone wanting to get into the industry? Be ready to work hard! Don’t be afraid to take risks and don’t let people get you down. There will always be people hating on your ideas, you just need to remember the reason why you started doing what you’re doing.

Has this always been your passion? From a young age I was always passionate about fashion and tailored suits. I’d spend all my pocket money buying the best clothes I could afford. I never thought I would end up in the industry, but always tried to look well-dressed. The tailoring venture has been like no other. Being able

to create a business I live and breathe has been the most rewarding experience.

Any tips on dressing for specific occasions? Work: Keep it classic, don’t overdress for your job as you want to stand out for good reasons, not be the clown of the office. I’d suggest a classic French navy suit, white shirt, white pocket square and a textured/ brighter tie.
