About the Great Australasian Beer SpecTAPular (GABS)

“The Great Australasian Beer SpecTAPular is the most crazily ambitious thing ever attempted in Aussie beer,” James Smith (of craftypint.com) proclaimed in Time Out Magazine. The Local Taphouses run more than a hundred events each year and it is the ‘SpecTAPular’ beer festivals which draw the largest crowds. For the first time away from the venues, the Great Australasian Beer SpecTAPular (GABS) sees the Royal Exhibition Building in Carlton transformed into a massive craft beer and dining hall. Four bars will serve 60 world exclusive and new beers brewed by Australia and New Zealand’s finest craft breweries. There will also be food stalls, live entertainment and free educational seminars. Tickets can be purchased from Ticketmaster (Ticketmaster.com.au, 136 100 and usual ticketmaster outlets).

Entry Procedures The entrance to GABS is via the side entrance to the Royal Exhibition Building (facing the Melbourne Museum). Sessions run for 4½ hrs (5½ hrs on Sunday), and in order to maximise your time at the event, we recommend you get there a little early. Rest assured, best endeavours will be made to move any queues which could form before opening but allow yourself plenty of time.

All drink and food purchases at GABS can only be made using official GABS tokens. Each token is worth $2. To reduce the time in queues, we strongly encourage people to pre-purchase tokens via Ticketmaster.com.au. Additional tokens are also available for sale during GABS from the Token Booths (with cash or card) or from Mobile Token Sellers roaming the Great Hall (cash only). Tokens come in packs of 5 (for $10). They are not refundable and are only valid for GABS 2012. As this is a licenced event, ensure you can provide photo ID on request. The event organisers also reserve the right to check bags.

Beers (& other Drinks) Sixty of the best craft breweries in Australia and New Zealand have been invited to brew a brand new, original draught beer for this event. All will have never been tasted before; most will never be available again. Each session has the same allocation of kegs but beers may run out toward the end of the session depending on their popularity. Wines, Napoleone Cider, Schweppes soft drinks and bottled water will also be sold. Free water is available at hydration stations located at each bar and around the Great Hall.

Four bars will each serve the same range of drinks. They have been set up with speed of service in mind so please follow staff instructions and signage to ensure efficient operation.

Tasting Paddles and Glass Sizes Sampling a wide variety of GABS beers is the name of the game. Each beer is available in 85ml Tasters or your 380ml souvenir GABS glass which holds 33% more than a regular Pot. When you’ve sampled enough, you can have your 380ml souvenir GABS glass filled with any beer. The cost of a full glass varies by beer. Hang on to your glass as you will only receive one. There are rinsing stations at each bar and replacement glasses can be purchased from the Merchandise Stall.

Meet the Brewers Brewers who have brewed a beer for GABS will be clearly identified by their ‘2012 GABS Brewer’ caps. They love talking about their beers so don’t hesitate to bail them up!

There will be an exciting and wide variety of street/market vendors, together with a few local restaurants, selling food at the GABS Food Market. You’re encouraged to purchase your food then sit and eat at the vast communal tables in the Great Hall. All food purchases are by GABS Tokens only and the Food Market will stop serving 15 minutes prior to each session finishing. This is an alcohol and smoke free zone.

Each session will feature a live band performing on the main stage. There will also be roaming entertainers both outside and inside the Great Hall.

The VIP bar benefits include complimentary finger food and soft drink, $20 worth of tokens to purchase beer, cider and wine and the opportunity to mingle with invited GABS brewers while overlooking the Great Hall. Limited tickets for each session are for sale and it is possible to upgrade a regular ticket at one of the Token Stalls.

Staff & Volunteers Staff and Volunteers will be wearing GABS t-shirts and be easy to identify. If there is anything you need, don’t hesitate to ask one of them for help. Please respect them, they have given up their time to help you have the best experience possible. We’re always looking for volunteers so visit our website if you would like to register your interest and receive some great perks.

The Local Taphouse ‘Craft Beer College’ Four free 30 minute educational seminars are scheduled for each session upstairs at the Malt End of the Great Hall. Seminars will include ‘Q & Ales’ where a panel of GABS brewers will be available to answer your questions. A full programme of seminars can be found on signage around the Great Hall, at the entrance to the Craft Beer College as well as on our website.

How to Taste Beer When tasting a beer, there’s so much more than swilling it down, burping and saying “it’s great” or “it’s crap.” Even though tasting is an individual thing, there are a few steps, which if followed, will take your beer tasting to a blissful level. Here’s how Beeradvocate.com recommends you go about tasting beer:

LOOK ~ Take pause and marvel at its greatness before you partake of it. Raise the beer in front of you, but don’t hold your beer to direct light as this will dilute its true colour. Consider its colour, its head and its consistency.

AGITATE ~ Swirl your beer gently in the glass. This will pull out aromas, slight nuances, loosen and stimulate carbonation and test head retention. SMELL ~ Around 75% of what you experience is through your sense of smell. Breathe through your nose with two quick sniffs, then with your mouth open, then through your mouth only (nose and mouth are connected in the experience). Enjoy its bouquet.

TASTE ~ Many beers benefit from being sampled at temperatures higher than commonly dispensed. We encourage you to warm the beer in your hands and note the difference. Start by sipping the beer. Let it wander and explore your entire palate. Let your taste buds speak. Note the mouthfeel, the consistency of the liquid’s body, and breathe out during the process of tasting. Try to detect any sweetness, salty flavours, acids and general bitterness. Think about what they are, or what they are similar to. Beer tasting is very much an individual experience, and everything about it is highly subjective. There are no beer experts, just beer drinkers with opinions! What is Beer? The basic ingredients of beer are water, a fermentable sugar source (grains such as malted barley), hops and yeast. All beers can be broadly classified into three main categories: Ales, Lagers and Hybrids. The key distinction of ales is that they are brewed using top-fermenting yeast, at warmer temperatures and with more rapid fermentation. They usually: ~ Include more complex flavoured beers ~ Tend to be fruitier than lagers ~ Include hoppy (bitter) beers ~ Have a pronounced taste and aroma ~ Are best served unchilled to allow their full flavour and aroma to come out Lagers are brewed with bottom-fermenting yeast which ferments more slowly and at colder temperatures. They usually: ~ Include lighter tasting beers ~ Tend to be more carbonated or crisp ~ Tend to be smooth and mellow ~ Can also be hoppy and bitter ~ Have a subtle, clean, balanced taste and aroma ~ Are served more chilled than ales Hybrid beers are those that don’t fit neatly into either the ale or lager category.

Quick SpecTAPular Tips EAT ~ This will not only replenish your system, it will help absorb the alcohol so you don’t get too tipsy too quickly. No wants to witness a weak, depleted and drunk beer drinker in action.

TOLERANCE ~ Get to know your limits and don’t exceed them. If you feel that moment of absolute cheer, take a break, grab some water and eat some food.

LEARN SOMETHING ~ Sometimes there’s more to beer than just drinking it. Ask questions. Engage in discussion with mates and strangers. Read the tasting notes. Talk about what you do and don’t like. Think about what you’re drinking. Try new styles. Get educated. If all you end up with from GABS is a hangover, you’ve truly missed out.

MODERATION ~ GABS is about appreciating the best beers on offer and not how much can be consumed. Drink for flavour, not just for impact. Anyone wishing to treat this festival as a drinking game should have stayed at home. TIME TO GO ~ When a GABS staff member or some 7 foot security guy is kindly suggesting you’ve had your limit… realise that it’s time to go home and just leave. Any other course of action just gets sloppy.


Empty wooden Tasting Paddles will be handed out in the bar queue and you can purchase 5 tasters for 5 tokens ($10). Individual tasters are not available for purchase.

We suggest you start with lighter, more subtle tasting beers before sampling stronger and more challenging avoured beers. Drinking water between samples is a great way to help clean the palette.

5. Tuatara ‘Double Trouble’

1. Croucher ‘ANZUS’ A style first brewed in England and exported for British troops in India, this is in the American style, which is a hoppier, ‘bigger’ beer. Having discovered the punchy nose of Australian Galaxy hops, Croucher wanted to make a ‘hop bomb’ combining them with complementary NZ and US hops.

Just like adding ‘Imperial’ to a beer name, ‘Double’ means more of everything. This fi rst brew from the brewery’s new site showcases over-exuberant hop use. The brewers say this is about as big as it gets. Expect extreme bitterness, balanced by big malt sweetness. Beer for those who worship the hop! STATE / REGION

7. Emerson’s ‘Kashmir Pilsner’ Hailing from Plzeñ, Czechoslovakia, and what most mass market lagers pretend to be, Pilsners are aromatic, subtly malty, crisp and refreshingly bittered lagers. 9. Golden Bear ‘Manly Impulse’

13. The Mussel Inn ‘Smoking Swine’

Owner and brewer Jim Matranga was keen to bring to GABS a Californian flavour, which he explains as hops, hops and more hops, and a depth of malt flavour. Expect a clear, orangey-yellow ale with aromas of fruit and forest, citrus and pine notes. The bitterness is strong but balanced.

Smoked beers generally have a distinctive smoke flavour from using malted barley dried over an open fl ame. In this beer, however, the brewers smoked manuka leaves using manuka sawdust. Expect hints of smoked manuka, ginger and Turkish delight. Plenty of sweet biscuity malt, a spice character and a smooth finish.

The brewers were keen to showcase Kiwi ingenuity using Kiwi fruit before Australia could claim the fruit as our own! This Belgian-style Witbier is infused with Zespri Kiwi fruit and has Cascade hop additions for additional citrus fruit influence. Stouts evolved from Porters and are fuller and creamier with more body. When a brewery offered a Stout and Porter, the Stout was always the stronger (it was originally called a ‘Stout Porter’). In the UK golden or summer ales were developed in the late 20th century by breweries to compete with the pale lager market. Head Brewer Brennan Fielding wanted to brew something “distinctly Queensland”. Thinking of suntans and bananas he created a ‘tanned’ wheat beer. While ‘Uncle Dunkel’ boasts a healthy mahogany tan, it still has prominent banana notes with the added richness of toasty accents from the dark roasted wheat malt.

Saisons were originally farmhouse ales brewed in Belgium’s French-speaking region. They were made before hops became commonplace so other spices were used. This version is darker and more malt driven - rich Belgian specialty malts and stewed dried fruit give a smooth balance and the fi nish is dry and crisp.

This is LBC’s first ever Porter. The beer is almost black with a tan head and traditional English hops add bitterness to balance the malty character. Think mocha, dark/black chocolate, espresso, dusty, earthy and you have an idea of the considerable depth of flavours. Dangerously sessionable.

18. 4 Pines ‘Beetroot Belgian Ale’ In Belgium sugar beet is used by the brewer for candy sugar to impart flavour and to produce higher alcohol beers. 4 Pines used their own method to extract the sugar from beetroot instead. Shawn Sherlock loves experimenting with farmhouse ales and an oak-aged, higher ABV version "seemed like fun". Expect a dry finish, unusually light body with funky, farmhouse yeast character. The beer was brewed in two halves with extended contact with French and American oak barrels. Very drinkable despite its ABV.

20. Doctor’s Orders ‘Plasma’ White IPAs are an emerging hybrid beer style. The grain bill is similar to a strong Belgian Witbier which explains the colour but the lack of botanicals, a different yeast and excessive hop use deliver the opposite. Brewer Matt Donelan says this beer is the ultimate recycling project: 1 used Christmas tree = 15 kegs of beer. Tree bark, needles and tips were all added to a Pale Ale rather than hops. The result is a slight ‘spruce’ flavour bitterness with a fresh ‘pine’ aroma.

There are Dry Stouts, Imperial Stouts and Sweet Stouts but Grand Ridge’s Phil Rutjens thought the combination of sarsaparilla flavours in a beer with delicious malt character would work well in his Sarsaparilla Stout. Sarsaparilla and liquorice roots were used to complement the malt flavours in lieu of one of the hop additions.

Richard Watkins brewed this because “everybody has had a run in with a sour blonde!” A sour, easy drinking blonde (not Pure Blonde). Gentle phenolics are balanced by lacto sourness and mild spice. 18 month old beer was blended with 18 week old beer blended with 18 day old beer! STATE / REGION

The ‘Secret Alt’ is a hoppier, more alcoholic version of the traditional Alt (or ‘old’) beer style originally from Düsseldorf in Germany. Extended cold conditioning and a cool ferment combine to create a clean, crisp ale with a light hoppy nose, good malt background and a dry fi nish.

Using wild bush honey and a single hop variety (Bramling Cross), this ale is unfi ltered, unpasteurised, keg conditioned and has no added chemicals. It’s an all-natural real ale, deep golden amber with rich honey flavours and aromas.

Beer writer and brewer Willie Simpson brewed a hybrid of two of his regular beers. Expect a complex riot of roasty notes, molasses, rum-soaked prunes, Belgian yeast spiciness and considerable alcoholic grunt. Ebony Elephant and Black Trunk were rejected as names - the first sounded like a Hollywood baby name and the latter a porn site.

Taking some inspiration from the Belgian Trappist brewery Westmalle’s table beer, which is only consumed by the monks, this collaboration ale (between Little Creatures and White Rabbit) was fermented in open tanks and is dry with a good level of bitterness, backed up by ‘noble hop’ aroma and a subtle dry hop character.

Foreign Extra Stouts were brewed bigger than normal for a long journey, often to the tropics. The roasted and crystal malt give a perfect combination of coffee and chocolate flavours.
