Welcome to the Official Guide to GABS 2014, now proudly part of Melbourne’s Good Beer Week.

The Great Australasian Beer SpecTAPular (GABS) was first held at our speciality beer venues, The Local Taphouses, in 2011 when we cheekily asked a few Australian breweries to brew something special and ended up with 20 amazing beers. The event’s great success encouraged us to create a major craft beer festival unlike any other. Since 2012, GABS has been held at the magnificent Royal Exhibition Building as a 3-day celebration of craft beer with almost 23,000 people attending. This year we’re thrilled to feature over 250 beers from 150 of the best breweries from Australia and around the world. Almost 120 of these beers are brewed especially for the event. The Dan Murphy’s Market Place showcases over 30 breweries and businesses with many hosting a fantastic schedule of mini-events. We’ve also added a Cask Bar pouring local Real Ales from traditional hand pumps and there will be a carefully selected variety of food stalls selling everything from cheese, beer ice cream to American-style BBQ. The new VIP Food & Beer Experience on Friday evening is supported by Mildura Brewery and the 2 hat Stefano’s Restaurant and will feature renowned guest brewers. Fun educational seminars are returning to Coopers Craft Beer College and we’ve got a great line up of entertainment and games including Paddle Art. The Friday afternoon session is now called P.O.E.T.S Friday (Google it) and Silly Hat Sunday encourages you to join us in wearing fancy dress or a silly hat. We’re very grateful for the support of our sponsors and the tireless efforts of our organising team and family of volunteers. ENTRY PROCEDURES The entrance to GABS is via the main entrance to the Royal Exhibition Building at the Nicholson Street end. As this is a licenced event, ensure you can provide photo ID on request. The event organisers also reserve the right to check bags or refuse entry.

TASTING PADDLES Sampling is the name of the game at GABS. 85ml individual tasters are available to purchase for just 1 token ($2), and Tasting Paddles allow you to carry up to 5 tasters. Please mark beer numbers on the paddle with the chalk provided before reaching the bar. We suggest you start with lighter, more subtle tasting beers before sampling stronger and more challenging flavoured beers.

DAN MURPHY’S MARKET PLACE The Dan Murphy’s Market Place has been reconfigured to provide better access to the stalls and create a more market-like environment. Be sure to visit as many as you can and enjoy some of the cool mini-events some of the stands have organised.

VIP FOOD EXPERIENCE Presented by Stefano’s and Mildura Brewery, the VIP Food & Beer Experience takes place during the Friday evening session. It will feature outstanding guest brewers and food from the renowned two hat restaurant paired with their beers.

COOPERS CRAFT BEER COLLEGE This year, we have a great lineup of educational seminars including the popular beer & cheese matching, Q & Ales - where brewers talk about their Festival Beers - and much more. Hosted by the charismatic Pete Mitcham, CCBC is a must.

GABS and some other brewery merchandise will be available at the Merchandise Stand. Cash, card or tokens are all accepted.

There will be plenty of fun and games including Morris Men, roving entertainers, table tennis, corn-hole, paddle races and other fun stuff so be sure to get involved!

All drink and food purchases at GABS can only be made using official GABS tokens. Each token is worth $2. Additional tokens are available for sale from the Token Booths (with cash or card) or from Token Sellers roaming the festival hall (cash only). Surplus tokens are not refundable.

This will not only replenish your system, it will help absorb the alcohol so you don’t get too tipsy too quickly. No wants to witness a weak, depleted an drunk beer drinker in action.

TOLERANCE

Get to know your limits and don’t exceed them. If you feel that moment of absolute cheer, take a break, grab some water and eat some food.

LEARN SOMETHING

Sometimes there’s more to beer than just drinking it. Ask questions. Engage in discussion with mates and strangers. Read the tasting notes. Talk about what you do and don’t like. Think about what you’re drinking. Try new styles. Get educated. If all you end up with from gabs is a hangover, you’ve truly missed out.

MODERATION

GABS is about appreciating the best beers on offer and not how much can be consumed. Drink for flavour, not just for impact. Anyone wishing to treat this festival as a drinking game should have stayed at home.

When a GABS staff member or some 7 foot security guy is kindly suggesting you’ve had your limit... Realise that it’s time to go home and just leave. Any other course of action just gets sloppy. 

Ross Kenrick from Brisbane’s Bacchus Brewing returns to GABS this year with the added pressure of defending his title of People’s Choice Best Festival Beer at GABS 2013. His White Chocolate and Raspberry Pilsner delighted taste buds throughout the Royal Exhibition Building and took out the title against tasty competition. Bacchus’s White Chocolate and Raspberry Pilsner is Ross’s natural evolution of an existing brew. “One of our most popular and unique beers is our White Chocolate Pilsner and my favourite ice cream is white chocolate and raspberry so when we were invited to enter GABS it was a natural choice for me to try and take our Pilsner to the next level”. As a craft beer drinker Ross is impressed at the array of beers on offer at GABS. “Where else can you sample such a range of creativity over one weekend? The quality and diversity of flavours on offer is incredible. When you’ve been once you won’t ever want to miss it again.” 2014 will see Bacchus roll out another dessert inspired beer - Sex, Drugs & Rocky Road. “We’ve tried to put a Darrell Lea Rocky Road into a glass. The beer has a purple hue of Turkish Delight and is layered with flavours of chocolate, peanuts, marshmallow, cherries, Turkish Delight and hazelnut.” It represents another unique beer on the long list of Bacchus’s beers that even the most seasoned Untappd user would struggle to keep up with.

1. MILLING & MASHING Grain is crushed and mixed with hot water to make a porridge where starches are converted to sweet fermentable sugars that the yeast can ‘eat’ later in fermentation. The liquid is filtered to end up as a bright sweet liquid called wort.

2. BOILING A rolling boil is carried out to sterilise the wort. Hops are added to the kettle/copper for bitterness and flavour then sent to the whirlpool where aroma hops may be added and the wort spun to remove solid material (hop debris and other bits called trub). Finally, it’s chilled on the way to the fermenting vessels.

3. FERMENTING Now we have a liquid that has a malt character balanced with bitterness. But a crucial element is still missing: Alcohol. Yeast, the agent of fermentation and producer of alcohol, is pitched and allowed to ferment. Yeast and trub are removed from Ales and then sent to bright beer tanks with fresh yeast and liquid sugar. Lagers are stored at -1C for numerous days, forced carbonated with CO2 awaiting packaging.

4. PACKAGING Beers are then either bottled, canned or kegged, checked for quality and released for sale. Unlike most beers, Coopers Ales are packaged then stored for at least 10 days while a secondary fermentation occurs and the bulk of the carbonation takes place. WHAT IS BEER?

HOW TO TASTE BEER

The basic ingredients of beer are water, a fermentable sugar source (grains such as malted barley or wheat), hops and yeast. All beers can be broadly classified into 3 main categories: Ales, Lagers and Hybrids.

When tasting a beer, there’s so much more than swilling it down, burping and saying “it’s great” or “not for me”. Even though tasting is very subjective, there are a few steps which, if followed, will allow you to get more out of your tasting experience. Here’s how Matilda Bay recommends you go about tasting beer:

The key distinction of Ales is that they are brewed using top-fermenting yeast, at warmer temperatures and with more rapid fermentation. They usually include more complex flavoured beers, are fruitier than lagers and include hoppy (bitter) beers and are best served less chilled to allow their full flavour and aroma to come out. Lagers are brewed with bottom-fermenting yeast which ferments more slowly and at colder temperatures. They usually include lighter tasting beers that tend to be more carbonated or crisp and are often smooth and mellow. They can also be hoppy and bitter but often tend to be more subtle and ‘clean’. Lagers are usually served more chilled than ales Hybrid beers are those that don’t fit neatly into either the Ale or Lager category.

LOOK

Take a moment to look at your beer before you taste it. Raise the glass toward, but not directly at, the light as this can dilute its true colour. Consider its colour, clarity, head and consistency.

AGITATE

Swirl your beer gently in the glass to allow aromas and ‘volatiles’ to loosen and escape and also stimulate carbonation and test head retention.

SMELL

Around 75% of what you experience is through your sense of smell. Breathe through your nose only, then with your mouth open, then through your mouth only (nose and mouth are connected in the experience). Take in and enjoy its bouquet. What does the aroma remind you of?

TASTE

Many beers benefit from being sampled at temperatures higher than commonly dispensed. We encourage you to warm the beer in your hands prior to tasting and note the difference. Now sip the beer. Resist swallowing immediately. Let it cover your whole palate and listen to your taste buds. Think about the mouthfeel, the consistency of the liquid’s body. Think about all the flavours in terms of sweetness, salt, tartness and general bitterness. Think about what they are, or what they are similar to. Why not have a go at describing each beer you taste? Here are some helpful descriptors below.

HOP

When describing beer, it’s helpful to think about the different ingredients that go into beer and what they might bring to the flavour. Here are some useful beer tasting descriptors often associated with each ingredient:

FLAVOUR & AROMA: pine needle, citrus, summer fruit, passion

MALT COLOUR: pale, straw, golden, amber, caramel, deep red, brown, black FLAVOUR: honey, bready, caramel, biscuity burnt toffee, coffee, chocolate, toasty, roasty BODY: thin, medium, full, thick, chewy

Gose is a historical style from Leipzig in East Germany and is currently undergoing a revival. Head Brewer, Darren ‘Doc’ Robinson has taken his mid-Spring seasonal from 2013 (Electrolyte // Gose) and amplified it to create an Imperial Gose (aka Electrolyte Forte).
