hen the prestigious American magazine, Beer Connoisseur, named GABS as one of the best beer festivals in the world last year we were thrilled, especially when most of the other festivals had been around for decades. For every year since the very first GABS (aka the Great Australasian Beer SpecTAPular) at our Local Taphouse beer bars in 2011, we have always strived to make each GABS experience better than the previous one. Despite us juggling GABS with the opening of our new Stomping Ground Brewery over the past twelve months, our team rose to the challenge yet again. GABS 2016 promises a unique and fun festival experience showcasing the best breweries and cider producers in Australia and New Zealand. There are almost 500 beers and ciders to choose from – including 130 made specifically for GABS, exhibitor stands, outstanding local food, educational
experiences, entertainment and even a Ferris wheel in Melbourne. There is, quite simply, too much to choose from. While food and cider play an increasing role at GABS, beer is still king. We encourage you to step outside your comfort zone and sample a wide variety of beers you wouldn’t normally try. The reward for expanding your horizons and discovering new flavours is a fun adventure that will stay with you long after GABS 2016. GABS t-shirts and merchandise from a number of participating breweries will be sold at the Merchandise Stand. Payment is either by GABS Currency Card, cash, credit card or EFTPOS.
Smoking is not permitted anywhere within the festival hall. Smokers are asked to smoke outside the main entrance and to one side.
OTHER DRINKS
GABS CURRENCY CARD GABS has introduced an exciting new GABS Currency Card from Glownet Event Technology for 2016 to ensure maximum efficiency at the bars and stalls. All food and drink purchases at GABS must be paid for using the GABS Currency Card. No cash transactions are allowed. Currency Cards can be purchased or topped up at Currency Card stands
around the festival hall or by roaming Currency Sellers. If you would like the $2 deposit you paid for the Currency Card refunded, this can be done when you leave the venue. Please also note that, for the first time, you will be able to get a cash refund of any unused currency at one of the Currency Card stands during the festival.
In addition to beer and cider, wine, soft drinks, water and other non-alcoholic drinks are available to purchase. Free water is available at stations throughout the festival hall.
STAFF & VOLUNTEERS GABS staff and volunteers will be wearing GABS t-shirts and are easy to identify. Please respect them as many have given up their time to help you.
ACCEPTABLE BEHAVIOUR If anyone thinks GABS is a swillathon, they will only be disappointed. While GABS is all about responsible beer appreciation and education in a fun and festive atmosphere, anti-social behaviour will not be accepted.

GABS OFFICIAL APP The GABS Official App has a stack of information about all the beers and ciders at the event and tools to help you choose which beers suit your palate and expectation. There is even a Paddle Planner! The App also suggests great beer, cider and food pairings and contains the full schedule of what’s going on during the festival.

With so many incredible beers and ciders on offer, sampling a wide variety is really the name of the game at GABS. While individual 85ml tasters can be purchased, tasting paddles consisting of five x 85ml tasters are the most efficient and popular way to sample different beers and ciders, certainly at the Kegtainer Bars where the specially brewed Festival Beers are sold. To help the bar staff, please mark the drink numbers (as shown on the menus) in chronological order on the paddle with the chalk provided BEFORE you reach the bar for service. If the sheer choice on offer overwhelms you, turn to the GABS Tasting Tools on page 34 or the GABS App, which is designed to help. Empty wooden tasting paddles to help you easily carry up to five samples are free to use at the event and are available at each of the Kegtainer Bars.

FESTIVAL BEERS One of the things that makes GABS unique is the 120 ‘Festival Beers’ brewed especially for GABS each year to celebrate innovation and originality. Festival Beers are sold from the two Kegtainer Bars and there is a limited allocation. Some session allocations may run out but the beer will be back for the next session. Details of all Festival Beers are available on page 36 and in the Official GABS App.
KEGTAINER BARS The Kegtainer Bars are converted 40-foot-long refrigerated shipping containers where all the Kegstar kegs of GABS Festival Beers are cold stored. It is the only place you can buy a paddle, taster or glass of these special beers made exclusively for GABS. Make sure you take in the sight of 240 beer taps attached to the outside of the Kegtainers.
STEEL’S FOOD & DRINK EXPERIENCE Hosted by Beer Diva, Kirrily Waldhorn, Steel’s Food & Drink Experience is a series of free, fun-filled seminars. Find out why great chefs love craft beer and cider so much, experience the art of beer/cider gastronomy at its best and expect the unexpected. Be prepared to roll up your sleeves and immerse yourself in these hands-on, interactive sessions. DAN MURPHY’S MARKETPLACE The Dan Murphy’s Marketplace is where breweries, cideries and related businesses showcase their products. You can buy samples or glass fills of a range of products, and have the opportunity to meet the team behind them. Many of the stands also schedule mini-events like tastings and games where you can win fantastic prizes. FESTIVAL CIDERS Introduced to GABS for the first time this year, Festival Ciders are new ciders made especially for GABS by 10 of the leading craft cider producers from across Australia. THE CRICKETERS ARMS BAR Howzat! Make sure you experience what's on offer at the Cricketers Arms Bar. You’ll be able to sample some (or all) of their five beers brewed proudly in Melbourne –

YAK ALES CARNIVALE The circus and roaming performers were a huge hit last year so Yak Ales Carnivale is rolling into GABS 2016 bigger and better than ever. THE LOCAL TAPHOUSE SOUR BAR The Local Taphouse is bringing you the biggest collection of sour beer ever showcased in Australia. With more than 25 local and international sour beers rotating through six taps over the festival you could sit there all day and never get bored. Never tried a sour before? Pucker up and join

YENDA WHEEL OF BEER For the first time, a giant Ferris wheel has been installed under the dome in the World Heritage listed Royal Exhibition Building in Melbourne. The Yenda Wheel of Beer towers 18m above the festival hall offering incredible views over GABS and inside the dome. While drinks aren't be allowed as a rule, there are Gold Glass pods where you can ride alongside an guest brewer and enjoy a private tasting while enjoying the view! All ticket proceeds from the rides will be donated to MND, Brewmanity’s charity.

THE GABS FERAL BARREL EXPERIMENT
TIME OUT TOURS Time Out magazine is running a series of fun and free tours each session at GABS. Beers and ciders will range from the easier drinking to more challenging and include a Festival Beer, a cider and three beers from the brewery stands. During these guided experiences you will learn facts about the beers and meet local brewery personalities. Your tour guides are Dave Phillips (Dave’s Brewery Tours) and Scott Dewar (Aussie Brewery Tours).
Barrel aging beers is arguably the hottest trend in global craft brewing right now. The GABS ‘Feral Barrel Experiment’ will showcase the same beer brewed by one of Australia’s leading craft breweries, Feral Brewing from the Swan Valley in WA, aged in seven different barrels previously home to the likes of wine, sherry, bourbon, whisky and tequila. You will be able to buy samples or glass fills of these beers and meet the brewers behind this unique experiment.

LET THE GOOD TIMES ROLL ‘Natural conditioning’ or ‘bottle fermenting’ is a traditional brewing technique in which beers undergo a secondary fermentation after the beer has been bottled or kegged. While there are only a few breweries that still take the time to do this, natural conditioning extends the beer’s shelf life, helps to enhance its flavour and eliminates the need for preservatives or additives.

BOTTLE/KEG FERMENTING
Yeast eats away at the remaining sugars in the beer creating alcohol and CO2. As the CO2 is trapped it naturally carbonates the beer and displaces the remaining oxygen. This maintains the beer’s integrity and removes the need for additives and preservatives.
Once bottled or kegged, extra yeast is added to begin the natural conditioning process.

Coopers encourages people to roll their bottle or agitate the kegs before serving the beer. This helps move the sediment through the beer, enhancing its flavour and giving it that signature, cloudy appearance.

The ales are held in cellar conditions for two weeks at ambient temperature while the bottle fermentation takes place.

THE SEDIMENT
Once fermentation process is complete, the yeast falls to the bottom of the bottle or keg leaving fine sediment. When that happens we know the beer is ready to be enjoyed. This is why Coopers’ ales and stouts have a ‘best after’ rather than a ‘best before’ date.

GOOD BEER WEEK 2016 BIGGER THAN XMAS
T
he Good Beer Week team set its sights high for the 2016 festival, and in delivering a festival packed with more than 270 events across ten days in Melbourne, it is safe to say it really has been bigger than Xmas. The intention of that goal was to get at the heart of the festive season; the anxious anticipation of the best time of year, the tingling excitement, and the indulgence of feasting, drinking, and laughing all day with loved ones. It is not to take anything away from the big jolly fella, quite the opposite. The sixth Good Beer Week festival has been about thinking bigger in order to meet the hearts, minds and palates of industry peers and loyal festival punters. At the start of 2015, there were roughly 250 Australian brewing companies (a far cry from the 11 breweries of 1990). By November, there were 300. But it’s not just nicer beer that people are crying out for. The olive oil in our pantries is nicer. People care about tasting new gelato, and take photos of the pastries eaten over morning tea. Cookbooks and TV shows about dinner parties are in an obscene abundance. People now want to explore flavour and understand the ‘why’ and ‘how’ of cuisine. It’s no longer enough to chuck some different beers on tap and call it an event. People want the story, the background, to come away having learned something 18 #GABS2016 BEER, CIDER & FOOD FEST 2016
or tried something entirely new. That always has been, and always will be, Good Beer Week’s focus. Good Beer Week venues are proud of their individuality, and know how to flourish in a festival, which makes Melbourne the perfect location for a beer week of this magnitude. Australia’s world class breweries can stand side by side with world class chefs, butchers and distillers, and make their event something to be remembered for more than just what is poured into the glass. It has been especially rewarding to see the growth of GABS over the years, from their beginnings at The Local Taphouse to filling multiple sessions on the last weekend of Good Beer Week. The partnership between the two festivals continues to grow, with GABS a valuable part of the Good Beer Week line-up each year. Spreading the word of good beer takes more than just one team, and Good Beer Week is proud to have GABS to work alongside. The Good Beer Week team hopes you have made the most of the 2016 festival, and that you have explored your own palate, whether it be through a tasting paddle at GABS, a week of beer degustations, or simply through trying a new brew at your local bar. BREWING 101 Brewers are able to create unique flavour profiles from these four key ingredients, however much like cooking, they can add in pretty much anything in they like. Think seaweed, belly button fluff, oysters, bacon, doughnuts, chilli and peanut butter. The challenge of course is to achieve a well-balanced beer as well as a striking flavour profile. So just what does balance doughnuts?
1. MALTING Dermot O’Donnell, Cricketers Arms
T
he beer brewing process is relatively simple, although making good beer is a whole other story. At its core beer is simply a fermented liquid with a layering of sugared malt and hops. Essentially, beer = water + hops + malt + yeast.
The first step of the brewing process, malting refers to the process of preparing the barley as it is unusable in its normal state. Brewers carefully malt the barley to release the starch, which will later act as a thickening agent in the beer. A labour intensive process of cracking, drying out and heating is employed to process the grains.
2. MILLING/MASHING The grain is crushed and mixed with hot water to make a porridge where

Well wonder no more, as Dermot O’Donnell, international master brewer for Cricketers Arms, tells us how! starches are converted to sweet fermentable sugars that the yeast can ‘eat’ later in fermentation. The liquid is filtered to end up as bright, sweet liquid called wort.
3. BOILING A rolling boil is carried out to sterilise the wort. Hops are added to the kettle/ copper for bitterness and flavour, and sent to the whirlpool where aroma hops may be added. This is when we late hop some of our beers like the 12th Man with the signature Cricketers Arms Amarillo hop. The wort is spun to remove solid material such as hop debris and other bits called trub. The liquid is then chilled on the way to the fermenting vessels. Finally, we dry hop our 12th Man with the wondrous Galaxy hop, giving a specially crafted soft bitterness and citrus tropical flavour. These additions can be done in the primary fermenter, in the secondary or by adding hops directly to a keg.
4. FERMENTING Now we have a liquid that has a malt character balanced with bitterness. But a crucial element is missing, alcohol. Yeast, the agent of fermentation and producer of alcohol, is pitched and allowed to ferment. Yeast and trub are removed from ales and then sent to bright beer tanks with fresh yeast and liquid sugar. Lagers are stored at -1°C for numerous days and then forced carbonated with CO2 awaiting packaging. There is no filtration used in the creation of the 12th Man brew. Removing this stage creates extra esters and flavours.
5. PACKAGING Beers are then bottled, canned or kegged, checked for quality and released for sale.

THE PERFECT MATCH Want to know how to pair beer and food like a pro? James Squire tells you how.

W
hat’s the first thing that comes to mind when you think about beer and food matching? Probably a pie and a lager at the footy. As good a match as that sounds, it gets much better than that. With more wonderful craft beers available to drinkers than ever before, the possibilities and combinations are growing, and that can only be a good thing. As Chuck Hahn, brewmaster at Malt Shovel Brewery says, “Sometimes we eat; sometimes we drink. But more often than not we eat and drink together.” Plenty of people talk about matching wine with food. But to let you in on a secret, you can match beer flavours with far more food characteristics than you can wine. The complementary and contrasting flavours, aromas, colours, textures, finishes, spices and heat possibilities are too good not to explore. For many, it’s quite a novelty, so James Squire has developed a few simple guidelines for how to match beer with food.
1. MATCH FLAVOUR INTENSITY Beer should uplift and enhance the flavour of the dish, not overshadow it – and vice versa. So what you want to do is make sure the flavour intensity of the beer matches the flavour intensity of the dish. The more flavoursome the food, the more flavoursome the matching beer needs to be.
2. FIND THE ‘HOOK’ To find the ‘hook’, the idea is to establish which element of the beer’s flavour mirrors a similar flavour in the food? For example, the roasted coffee and chocolate flavours of a James Squire Porter ‘hook’ onto a rich chocolate mousse or burnt caramel; the cumin and turmeric heat 24 #GABS2016 BEER, CIDER & FOOD FEST 2016
of a vindaloo curry ‘hook’ into the aromatic and spicy hoppiness of a James Squire Pilsener or IPA.
3. REMEMBER THE THREE C’S Cleanse: The alcohol and carbonation in beer work hard to cleanse your palate just in time for your next bite. This is especially handy for creamy dishes like carbonara and, you guessed it, cheese. Complement: As we mentioned before, play the beer’s strength to the strength of the food. Choose like for like, especially if you’re trying out new combinations. When you get the right match the result is greater than the sum of the parts. The flavour of both the beer and the food come through with greater intensity. In beer and food matching, 2 + 2 = 5. Contrast: For the more experienced gastronome, contrasting your beer’s flavour hook with the dish can take the experience to another level. For example, sautéed scallops with a fresh lime zest and olive oil would perfectly complement a fresh Golden Ale. But contrasting them with Amber Ale or Porter will bring the smooth, silky, slightly sweet flavour and texture of these heavier-bodied beers together with the buttery scallops – contrasting their zest.
4. FEEL FREE TO BREAK THE RULES You can never be totally wrong with beer and food as enjoyment is always the final outcome. The great thing about craft beer is the breadth and depth of flavours, so there are limitless opportunities for different food matches. Try pouring beer into stock or soup. Try basting fish in beer, marinating meat in it or frying garlic in it. The great thing about beer is that it will help enhance the flavours of your ingredients and give you a different treat.
Just like beer, cider can be an excellent pairing with food. The simplest way to match the two is by looking for dishes and ingredients that you’d cook with apples. Anything pork works well, as do cheeses. Another good approach is to try to identify the most prominent flavours in the cider and then match those in a dish. For instance, a crisp fruity cider will pair well with lighter meats like seafood, chicken and turkey. Whereas a traditional English or French-style aged cider can have bready almost biscuit-like characteristics, which match well with oysters and seafood. Just like sweet wines, if a cider is slightly sweet it will take some of the heat out of spicy Asian dishes. Also the carbonation in cider works well to cleanse the palate and scrape it clean ready for the next creamy sauce or gooey soft cheese. Something to look out for when pairing cider with food is the tannins. Much like bitterness in beer, tannins can enhance spiciness and acidity in some dishes, making them unpleasant. HOW TO TASTE BEER

Whether you are a seasoned beer taster or a novice, these tips from Australian Beer Company’s head brewer Andy Mitchell will help you fake it and make it during GABS. As with any tasting experience, it all comes down to the senses. Look, smell, taste, feel – you can even listen to the bubbles if you wish – or perhaps it’s better to just listen to the brewer.

CHECK
Once the beer is in a clear glass, give it a good look. Hold the glass in front of you and look at its colour. Pay attention to its consistency, colour and the head on the beer. Don’t hold the beer to a light, as the colour of the light will interfere with the real look and colour of the beer.

SNIFF
Most of what you experience when you taste something is smell. Don’t believe us? Hold your nose and taste something. Then taste it again normally. You will notice a huge difference. Take a deep sniff of the beer to fill your nose with its aroma. This will give you a basic idea of the smell and the taste before you drink it. Sniff but don’t inhale the beer through your nose. You’re bound to choke and make a scene and no one wants that!

FEEL
At this point, you should be noting the consistency of the beer in your mouth (called mouthfeel) as well as some of the basic flavours in the beer. While the beer is still in your mouth, breathe out through your nose. This action, called retro-olfaction, will be similar to your initial smell of the beer, but should be slightly different due to the temperature difference of the beer. At this point, notice the different flavours of the beer, including sweetness, bitterness and acidity/tartness. ‘Feel’ refers to mouthfeel, not the feel of pouring the beer over your head, sticking your fingers inside your glass or stroking a keg.

SWIRL
Gently agitating your beer in the glass allows the smells trapped in the beer to escape. This prepares the beer for the next step. Swirling the beer also helps you see the colour and head retention, or how well the head on the beer stays in one piece – this head also traps some of the aromas for you to taste. The emphasis is on gently. Don’t go splashing everyone around you. That is the best way to lose friends quickly.

TASTE
Take a small sip of the beer. Remember that you are trying to experience the beer, not down it like at a party. Swish the beer around in your mouth so all your tastebuds get their turn with it. Don’t guzzle, scull, or drink out of a shoe.

OVERALL IMPRESSION
How does this beer make you feel? Do you want to drink it at the beach with a salty mouth? Would it taste delicious with dessert? When do you want to drink this and do you want to take it home with you? It’s not just the beer making an impression on you. You are making an impression on the beer. Treat it with respect. Enjoy it. Savour it.

GABS HOTTEST 100 AUSSIE CRAFT BEERS OF 2015
THE GABS HOTTEST 100 With more votes than ever before, the GABS Hottest 100 Aussie Craft Beers of 2015 was the biggest yet. A great way to see what the nation is drinking, here is a look at who made the list and some interesting trends to keep an eye on.

tone & Wood Pacific Ale reclaimed top position on the GABS Hottest 100 Aussie Craft Beers poll, knocking Feral’s Hop Hog off the top spot for the first time since 2011. However, the big mover was Pirate Life, which less than a year since launching, managed to secure two spots in the top five, coming in at number three with its IIPA and number four with its Pale Ale. Pirate Life’s session beer, Throwback IPA, also came in at number 11. “It was a fantastic result for all involved at the brewery,” said Pirate Life’s Michael Cameron. “We

have opened in excess of 200 new accounts around the country resulting from the top 100.” The poll, now in its ninth year, revealed some interesting trends, with hoppy IPAs and pale ales continuing to resonate with drinkers. Canned beers are also on the rise, however it seems lagers still have a long way to go with only two making the list. The GABS Hottest 100 Aussie Craft Beers poll began as a bit of fun for staff and customers at The Local Taphouse craft beer venues in Melbourne and Sydney back in 2008. Now, proudly supported
by Crafty Pint, Australian Brews News and Dan Murphy's, the annual poll attracts thousands of beer lovers who vote for their favourite Australian craft beers of the year. Once the votes are tallied, the results are announced on Australia Day when they are counted down at Hottest 100 Official Venues around the country, and on websites and podcasts. This year, an impressive six beers made especially for previous GABS festivals made the Hottest 100. BrewCult’s Milk and Two Sugars was crowned Beer & Brewer People’s Choice Best Festival Beer last year and was voted number 14 in the Hottest 100 Aussie Craft Beers of 2015. BrewCult’s Steve ‘Hendo’ Henderson tells us what it’s like to be a winner. Q DID YOU EXPECT MILK AND TWO SUGARS TO BE SO SUCCESSFUL?

Nope. Like all my GABS beers, I make them purely for fun. As a brewer, GABS is a chance to let my hair down. I’m very stoked to be amongst some amazing company as a GABS People’s Choice champion and Hottest 100 place holder and I look forward to creating more awesome Festival Beers in the years ahead.
Q HOW DID YOU COME UP WITH THE IDEA FOR IT? I was having a beer with my good mate (and publican of my local) Alex from The Alehouse Project. We were talking about coffee beers and I’d been meaning to release a milk stout for some time. Turns out he’s good friends with Dave and Zoe from Axil Coffee Roasters and he made the introduction.

Q WHAT GOES INTO IT?

When we were doing the blending for the bench trials with the 20L pilot batch, we were trying to work out how to get a balance in the beer. The coffee was meant to balance with the milk stout. In order to achieve this, we used both espresso and cold steeped coffee. When we scaled up the recipe to production size, we realised that it takes over 3,000 shots of espresso and about 120L
Maybe, it’s rare that we do a GABS beer that we re-release as they are often very challenging to make. As a thank you to our loyal fans for Milk and Two Sugars reaching number 14 in the Hottest 100, we re-released our first GABS beer, Acid Freaks Balsamic Baltic Porter, which I brewed in collaboration with my brother Ian from Lirah Vinegar in Queensland.
Q HOW IMPORTANT IS GABS? I can’t think of an event that stands out on the global craft beer stage in terms of the number of new and unreleased beers and the calibre of those beers than GABS. I remember the first GABS, which was held at The Local Taphouse in St Kilda in 2011. There were only 20 new beers, which was unheard of back then and 30 minutes after opening there was a queue down Carlisle St! It shows that Steve and Guy’s concept had legs and it’s great to see GABS move to the Royal Exhibition Building, then Sydney and now Auckland. It’s simply not possible to brew a new beer for every festival so it’s great that GABS exists as a festival where it’s all about new beers.

Q WHAT ARE YOU BREWING FOR GABS THIS YEAR? BrewCult’s Festival Beer for GABS 2016 is called ‘Gingerbread Maniac’. It’s an 8 per cent ABV gingerbread stout. It has loads of biscuit malt and our good friends at Grounded Pleasures have teamed up with us to supply the ginger and cinnamon from Sri Lanka, as well as more vanilla beans than I’ve ever seen in my life. We’ve also kept with the gingerbread theme and have used local honey so technically, for the beer geeks out there, this is a braggot too.

The Pink Boots Society was founded in the USA STAND and aims to empower women beer professionals to advance their careers in the Beer Industry through education. The Australian arm of this society regularly brings together women to brew unique and one-off beers during open brew-days. Mike Neilson, founder and brewer at Panhead, STAND combines his love of cars, bikes and beer in both his brewery and all of their branding. Mike describes himself as a bit of a bogan, but he's a bogan that brews award-winning beers and has plans to make Panhead one of the biggest craft breweries in NZ. Since 2013 Panhead have continued to expand in their Upper Hutt home, and in 2015 took home a haul of four gold medals in the NZ Brewer's Guild Awards.

Founded by three guys named Matt, they were STAND told to dump their first ever of contract brewed beer because it was too bitter. However the beer known now as "Bitterbitch" went on to win People's Choice at annual Wellington beer festival Beervana. William Smith & Sons is Australia’s first certified STAND organic cidery, built at the farm in the Huon Valley (Tas) where William Smith started orcharding in 1888. The orchard is run by Andrew, the 4th generation of the Smith family to farm in the Huon. All of their ciders use only fruit grown on their farm where it’s all crushed, fermented, aged and bottled. In 2015 Willie Smiths were awarded Best Cider and Best in Show at the 2015 Cider Australia Awards.
