With her daughter’s safety as her primary concern, Sabrina set out on a mission to create the first school in the United States that will cater to children with diabetes and other health problems such as asthma, 6

Sabrina Gardner feels it is her responsibility to help heal others, as well as herself, in her quest to help children with special medical needs. ROSEMARIE KLUEPFEL Over the holiday season, I had fallen victim to the rush to get everything done while juggling with work and family obligations. The first Saturday of December started out with the usual routine: a checklist and shopping at a local department store until the unexpected happened. While walking across the aisle looking for bargains, I heard a woman scream, “someone do something, she’s choking!” I looked up to see a young cashier, perhaps only 20 years old, clutching both hands around her neck. Without thought I jumped behind the counter and yelled “Call 911!” “Get her some water!” “Get a manager!” I started to pound my fist into her back between her shoulder blades hoping to dislodge whatever has restricting her airways. “Do the Heimlich!” someone screamed and I dutifully obeyed, wrapping my arms around the cashier’s waist. Finally, a gasp as she vomited a clear liquid and she hoarsely began to whisper and cough. As quickly as it had begun, it was over as a store manager arrived and whisked the dazed cashier away. The crowd dispersed and I was left standing there trying to remember what I had been doing only minutes earlier. I continued on with my shopping. Later when I recalled my story to a friend she asked, “What made you act when the other 40 onlookers did not?” I replied, “She was someone’s daughter and I would have wanted someone to do the same for my daughter.” I am not a hero, just a bystander. Anyone can make a difference, even me.

Extensions don’t only add length –they add volume to fine, limp or thinning hair. You can turn a bob into a long, sexy mane as long as your hair is about three inches in length. There are different ways to add extensions: braided extensions, keratin bond or woven –in. There are some that just for a temporary look-- clip -ins for that special night! Although we can’t stop the hands of time, the factors responsible for 85% of visible aging are preventable. One of the main contributors to aging skin is UV exposure, even in the winter or on a rainy day. There are other factors that influence the aging process like pollution, sleep deprivation, and smoking. It is important to be aware of these forces in our lives and to make an effort to keep our skin looking its best. Pollution- Car exhaust affects our skin in a negative way by creating free radical damage which accelerate wrinkle formation. When was the last time you looked through your jewelry box? Do you have any pieces that you rarely wear but still hold on to? Maybe a piece is broken or a little outdated. Maybe it has sentimental value but is not quite your style. Well, it’s time to repurpose those pieces for a new look! That old pendant would look great on a new chain or leather cord. Take an interesting singleton earring and build a new necklace around it. Wrap a long necklace around your wrist several times for a bold bracelet. My dear mother-in-law left a treasure trove of jewelry, when she passed away. Looking through it brought back fond memories of her. One piece in particular caught my eye, a double strand of fine crystal with the most beautiful sparkle. As a necklace, it was very dramatic and anyone in the family would be lucky to wear it. However, I saw a way to let everyone in the family wear it. There was enough crystal in the double strand to make bracelets for all daughters, granddaughters and myself. After consultation with the family, I created seven bracelets using the crystal, freshwater pearls and an accent of peridot – my mother-in-laws’s birthstone. Now we all have a keepsake from a very special lady, thanks to a “recycled” necklace.

Consider this new approach to following through on your New Year’ goals. Get a book you can write in, and list overall goals that you want to achieve. For example “I want to have more energy”, “I want to be healthier”. If your goal relates to bodyweight, avoid using a specific number. You may become too focused on that number, and if it doesn’t happen in the time frame you decided on, then it becomes selfdefeating. So giving yourself a little leeway allows you to adjust your overall goals as you progress. “I want my clothes to fit better”, “I want to feel comfortable with my body.” Every day write positive statements or goals that support your overall goals (motivational quotes are also great!). “Today I will remember to take a moment for myself”, “I will include more veggies in my meals today”, “Today I will walk for during my break”, “Just for today, I will not judge myself and I’ll find at least one thing to appreciate about my body.” By working towards your overall goals in smaller steps, they become more manageable, which makes it easier to stay on track long term. february is heart health month! By Carol Burke February is Heart Health Month and what better way to honor it than to commit to a regular exercise regime. Yep, in case you haven’t heard, exercise is good for your heart. I know, I know, you knew that already. So what are you going to do about it? Well, you know what else is in February-- Valentines Day-- also good for the heart! So why not team up with someone who is important to you and encourage them to exercise?? You may be exercise savvy, but is there someone you know and care about that is not? Say an exercise virgin? I met my first exercise virgin a couple of months ago. Great gal, full of life, but unfortunately her lack of exercise was coming between her and living that fulfilled life. After a couple of months of me tailing her at the gym, she lost twenty pounds and is on her way to becoming a “gym rat”. The weight just keeps coming off and she is able to accomplish more and more each day. She tells me she handles stress better too. Exercise can be a miracle worker, especially for those who have reclaimed their minds and bodies through physical activity. And for those beginners, start them slow; they need to get to know how good it feels to exercise before the love for training blooms. So let’s commit this February to find our own exercise virgin and transform her into a heart- healthy individual!

He gently wakes you, saying firmly “Come on, you said you would.” You look at the clock and realize you don’t have to get up for work for another hour. You complain, “Not again, didn’t we do it the day before yesterday.” He is insistent, and you find that after a few minutes you’re really into it. You match his pace, laughing talking and he makes you go faster and you make him go farther. By the time you race back to the apartment, you’ve accomplished much more than losing a few pounds. If you’ve ever gone for a long, challenging run or toughed it out in the weight room with your significant other, you know that sweat can bring you closer. Working out produces endorphins and endorphins give you that “exercise high.” When you exercise together and both produce these endorphins, you end up associating those positive feelings with your partner. Differences in fitness ability can cause frustration on both sides, so find a compromise. If you’re more fit than your partner, be the role model. Give encouraging words. Use healthy competition. Let the person who is going slower set the pace, because you will still be getting a good workout. You’ll be working in your heart-rate zone and burning calories, and eventually you’re both going to get to the same level. If he’s the one that’s better, understand that, and let him go ahead at the end of the run. Want to reap the benefits of couples’ workout? Here are some suggestions:

Level the playing field and start a new workout together. Start something fresh for both of you, like a class in kickboxing, yoga or weight training. This way neither one of you has an edge. You can support each other on this new adventure. What if one partner works out regularly and the other one doesn’t? In this case, exercising together will take a little creativity since an intense workout for one might be too easy for the other. To leap this exercise hurdle, you can: • Alternate weight training, spotting and encouraging each other, adjusting the weight and intensity that’s right for you and him. • Find low-impact activities you can enjoy together that improve fitness on a daily basis. We sometimes think we’ll save walking for when we can’t workout anymore, but it provides excellent health benefits and the “opportunity for long talks” is great for any relationship. Start with a 20-minute walk three to five times a week and work up to walking three miles five to six times a week. Take it slow, increasing distance by no more than 10 percent each week. • Make plans to do something special that incorporates exercise, perhaps a dance class or go hiking in the mountains. Having fitness as a common pursuits will not only get you exercising, it will lead to better diet, higher self-esteem and more energy to do and share other things. If you respect each other’s individual needs and goals, working out with your sweetie can only do you good, both individually and as a couple, so get out there and enjoy it together!

Probiotics are live microorganisms, also known as “friendly bacteria,” that help maintain the natural balance of organisms (microflora) in the human gut. They are vital for a healthy immune system, protect against disease-causing microorganisms, and aid in both digestion and absorption of food and nutrients. The normal GI tract contains several hundred types of friendly bacteria that are able to promote healthy digestion and reduce the growth of harmful bacteria. The most wellknown probiotics are Lactobacillus acidophilus, occurring naturally in yogurt, and Bifidobacterium, commonly found in the gut of breast-fed infants and thought to help confer natural immunity from disease. There are certain strains of yeast, such as Saccharomyces boulardii, that also function as probiotics.

WhaT are ProBIoTIcS uSed for? a healthy balance of friendly bacteria in the gut may be thrown off by disease-causing bacteria, fungi, and parasites. drugs (particularly antibiotics), alcohol, and toxin exposure can also throw off the delicate balance in the body, allowing an overgrowth of bacteria, yeast, or harmful organisms, with subsequent development of vaginal yeast and urinary tract infections. When antibiotics are necessary to treat a bacterial infection, the concomitant destruction of beneficial bacteria often leads to diarrhea. Probiotics can be used to replace the loss of beneficial bacteria, helping to restore normal bowel function and prevent diarrhea from antibiotic use. In addition, many immune cells reside in the intestines; overall health may be very dependent on the health of your GI system. for this reason, prophylactic daily use of a probiotic is helpful and may assist in improving overall immune function.

ScIenTIfIc evIdence In november 2005, a conference reported successful use of probiotics for the following: to treat diarrhea, irritable bowel syndrome, and the intestinal infection caused by clostridium difficile, to prevent

and treat infections of the urinary tract or female genital tract, to reduce recurrence of bladder cancer, and to prevent and manage dermatitis/ eczema in children.

hoW To Take ProBIoTIcS Yogurt is the most common food containing beneficial bacteria. other foods are miso, tempeh, and sauerkraut. fermented foods such as yogurt have been used since ancient times by cultures that report great health and longevity. When probiotics are suggested after a course of antibiotics to restore normal gut flora, supplementation in the form of capsules, powder, or liquid may help to improve gut flora more quickly than with yogurt alone. Probiotic supplements should have both a manufacturing date and expiration date on the bottle, as potency is lost after time. While some products do not require refrigeration, this will ensure maximum potency. The bottle should state “contains live cultures.” Powders can be mixed with water, applesauce, or yogurt, depending on label instructions. If yogurt is used for its prophylactic dose of probiotic, it is important to use plain yogurt as the addition of sugars to yogurt can negate the good effect of the probiotic. When taking a probiotic during antibiotic therapy, it is important to take the dose as far away from the antibiotic dose as possible and to continue to take it for at least two weeks after the antibiotic is finished. Initially, it is wise to start with half the recommended dose for the first day or two in order to minimize potential side effects of bloating or gas. Large doses are safe, as side effects, other than gas and bloating, are rare. doses vary from brand to brand and may vary from 1 billion to several hundred billion organisms per dose. Some strains are to be taken on an empty stomach with water while others may be taken with food. It is wise to follow label instructions.

SIde effecTS Gas and/or bloating are usually mild and often will abate after a period of adjustment. Since long-term maintenance doses of probiotics can improve the overall health of the GI tract, a beneficial side effect may be an increase in the bulk and frequency of bowel movements. There is a slight possibility that probiotics may react with immunosuppressant medication; those who are immunosuppressed should seek medical advice before using probiotics.

Cortisol has been termed “the stress hormone” because it’s also secreted in higher levels during the body’s “fight or flight” response to stress, and is responsible for several stress-related changes in the body. Cortisol is an important hormone in the body, secreted by the adrenal glands and involved in the following functions and more: proper glucose metabolism, regulation of blood pressure, insulin release for blood sugar maintenance, immune function, and inflammatory response. Normally, it’s present in the body at the highest levels in the morning and is at its lowest at night. Small increases of cortisol have some positive effects: a quick burst of energy for survival reasons, heightened memory functions, a burst of increased immunity, lower sensitivity to pain and helps maintain homeostasis in the body. Unfortunately, in our current highstress culture, the body’s stress response is activated so often that the body doesn’t always have a chance to return to normal, resulting in a state of chronic stress. Higher and more prolonged levels of cortical in the bloodstream (like those associated with chronic stress) have been shown to have negative effects, such as: impaired cognitive performance, suppressed thyroid function, blood sugar imbalances such as hyperglycemia, decreased bone density, decrease in muscle tissue, high blood pressure, lowered immunity and inflammatory responses in the body, slowed wound healing, and other health consequences, increased abdominal fat, which is associated with a greater amount of health problems than fat deposited in other areas of the body. Studies have also shown that people who secrete higher levels of cortisol in response to stress also tend to eat more food--and higher carbohydrate foods --than people who secrete less cortisol. If you’re more sensitive to stress, it’s especially important for you to learn stress management techniques and maintain a low-stress lifestyle.

Stop the press! The FDA clears Restylane® as the first filler approved for lip augmentation. After 1000s of lip enhancement injections without any hiccups, I do not think this will change the market at all. Is it good to know? Perhaps, but how will this change your life? As we age there are changes we see in the lip. The aged lip loses volume and it becomes thinner. The cupid’s bow (philtrum) becomes flatter, and the lip will actually lengthen and show less upper teeth at rest. The lip liner area becomes less defined and women often complain that their lipstick bleeds. Vertical lines in the white portion of the lip also are a common complaint. Many young people just want a fuller lip to join in the growing trend in beauty--- thanks to our idols like Angelina. Hyaluronic acid fillers are the most common filler used to correct these changes in the lip. This is a natural substance found in skin and works to trap water and plump skin, and is often found in your everyday moisturizer. Such fillers include Restylane®, Perlane, and Juvederm®. These are all FDA approved fillers for wrinkles and creases, but only Restylane® is FDA approved for the lip. Comparing these three products, Restylane has a jello- like consistency that typically lasts for six months. Juvederm® is typically my go to filler for lips, since the results are smooth and it is a concentrated form of hyaluronic acid that can last up to a year. Lip enhancement is an easy procedure that yields beautiful results. The treatment is painless (after getting the area numb) and there is little to no downtime. Should the recent FDA approval lean you, the patient, towards the path of Restylane fillers? February is National Children’s Dental Health month. It was established to raise awareness of the importance of good oral health in a child’s life by emphasizing good oral home care and regular dental checkups at an early age. In August of 2005, the Centers for Disease Control and Prevention reported that a quarter of children aged 2-5, and half of all children aged 6-11 have cavities. Establishing early intervention and good oral hygiene habits can help to reduce this number. All too often, we hear horror stories from adults about their childhood experiences. Are you missing teeth or have a badly diseased tooth? Dental implants are a great treatment option for missing teeth in the upper or lower jaw. According to a recent study, 74% of women reported that a missing tooth would embarrass them. A dental implant offers the closest replacement to a natural tooth in that it heals directly to the bone and supports a replacement tooth, called a dental crown. Dental implants have been in use for many years and are very safe. With the use of cone beam CT scanners in the office, the placement has become extremely precise. In some instances a temporary crown can be placed on the implant placed the same day. Unlike dentures or partial dentures, the advantage of dental implants is that there is no change on what one can eat and it does not need to be removed at night for cleaning. It is important to address missing spaces in a timely fashion as the most rapid bone loss occurs in the first six months following removal and the adjacent teeth can start to move into the missing space. Placement of dental implants typically occurs over a series of visits. The first visit is a consultation where your surgeon will evaluate the missing space and determine if the area is suitable for an implant. Frequently, an x-ray is taken to determine how much room is available. Following the evaluation, you are ready for placement. The placement can be performed under various methods of sedation and local numbing medication. Most patients have very little discomfort following the procedure and are back to work the next day. Your surgeon will see you for routine follow up visits and you may require a minor second procedure to attach a post to the implant. After the dental implant has healed, you will return to your dentist for the placement of the artificial tooth. With today’s technology, there is no reason to walk around with a missing tooth. A dental implant can replace the tooth with a procedure that on average takes less than a half hour and has almost no discomfort. By Joanne Bellistri The New Year brings new goals and dreams, new intentions to lose weight, new plans to reduce stress, and new motivation to eat better and exercise more. There is no better time than now to introduce yourself to the world of fresh juice. Juicing fresh vegetables and fruits is fun, easy and nutritionally rewarding. A diet high in fruits and vegetables can prevent and even cure a wide range of ailments, like cancer, heart disease and diabetes. The National Cancer Institute recommends five servings of vegetables and three servings of fruit every day. Most of us consume much less and are confused by what really counts as a serving of fruit or vegetables. To clear a few things up, a store bought smoothie drink does not count as a serving of fruit. Even most fruit and nut bars don’t stand up to a real serving of fruit or vegetables. When you buy a product that is processed, contains added ingredients and has been packaged and shipped, you are not getting the nutrients that you could be getting from making your own fruit and vegetable juices at home. You can find a good juicer for as low as $80 (up to $600 for a fancier machine). When you find a juice combination that you like, make plenty and store it in the

refrigerator for the week. My favorite morning juice is carrot, grapefruit and fresh ginger root. Another easy and delicious juice is simply spinach and green apple. When you drink a glass of these powerfully nutritious juices, you can practically feel the nutrients entering your bloodstream. The fun part is being creative and discovering the combinations that appeal to you and your family. My kids love pineapple-orange juice. We even freeze the juice to make popsicles for dessert. The leftover pulp can be used in recipes too. After a few weeks of juicing fruits and vegetables, you’ll notice more energy, better skin and possibly, a loss of a few pounds, Adding loads of fruits and vegetables into your diet through juicing is the perfect way to kick off the New Year and stay focused on your health goals.

Aphrodisiac foods can have a direct impact on your sex life, affecting hormones, brain chemistry, and energy and stress levels. Some foods have psychoactive properties, others arouse because they are psychologically suggestive, and some can actually increase blood flow to the genitals. No matter, because all of these foods are healthy and good for you too! Share these aphrodisiac foods with that “sexy someone” and find out if there is any truth to all of those ancient myths. Asparagus - An English herbalist from the 17th century, Nicholas Culpepper, wrote that asparagus “stirs up lust in man and woman.” Apparently for a good reason: asparagus is a great source of potassium, fiber, vitamin B6, vitamins A and C, and thiamin and folic acid. The latter is said to boost histamine production necessary for the ability to reach orgasm in both sexes. Almonds -Through antiquity, almonds were regarded as fertility symbols. The aroma of almond supposedly arouses passion in females -- or so thought the poets and scribes. The scientists say that almonds provide high doses of vitamin E, magnesium and even fiber. Avocados -The Aztecs called the avocado ahuacuatl, or “testicle tree.” The Catholic priests in Spain found this fruit so obscenely sexual that they forbade it. We love that avocado is rich with folic acid, vitamin B6 and potassium. Bananas- Think about sex when you wrap your lips around this phallus-shaped fruit because bananas deliver potassium, a nutrient key to muscle strength. So when you orgasm, the contractions will be super-intense! Basil-- This herb has a fantastic aroma that is said to have an aphrodisiac effect; it is also very stimulating. Using sweet basil in a pasta sauce will be sure to get your heart racing! Maybe this explains why Italians are so romantic! Chocolate - Cocoa contains the chemical phenylethylamine, a stimulant that conjures just the sort of subtle feelings of well being and excitement that make sex seem like a great idea. Girls love chocolate, so enjoy a taste of dark chocolate everyday! Figs - This sexy fruit has long been thought of as an arousing stimulant, and an open fig is believed to emulate the female sex organs. Figs are reported to be Cleopatra’s favorite fruit, and the ancient Greeks held them as sacred and associated them with love and fertility. Garlic-This bulb is chock-full of allicin, an ingredient that will increase blood flow. So, whip up an extra-garlicky dish and make sure you eat it with your partner! Oysters-- These sea creatures may be thought of as an aphrodisiac because of their high zinc content, which helps produce sperm and increases libido. Raw oysters are best served with a glass of chilled champagne for a truly romantic meal. Red Wine-- Besides relaxing you faster than a neck rub can, red wine contains resveratrol, an antioxidant that helps boost blood flow and improves circulation before and during intercourse. In a separate bowl mix; 4 egg whites 1/2 cup sugar *In a saucepan, put sugar, cornstarch, salt, milk, egg yolk. *Low-med heat stir consistently until thick. *Remove from heat; add butter & vanilla and fold & cool. In another bowl beat egg whites and sugar until fluffy peaks. *Fold in egg white mixture to cooled custard. *Layer cream, banana, cream, and banana. *Beat heavy cream into whipped cream for topping of the pie. As I said, “I use a graham cracker crust”. You can also use a ready bake pie crust; just bake as directed before filling with custard. This recipe makes enough custard to make 2 pies; sometimes with the extra custard, I add shredded coconut. Fill a crust and toast shredded coconut for the topping. You get 2 nice pie out of this recipe.

Solving The Puzzle of

food alergies

Did you ever have food allergy problem? Are you concerned about your child’s food sensitivity? It is normal that toward certain foods, everyone displays different levels of sensitivity. However, when someone is overly sensitive to certain foods, the body may experience abdominal discomfort, bloating, gas, diarrhea or even misbehavior. Different children from the same family can show food sensitivities in various ways. According to Dr. Russell Blaylock, one of the most important connections between nutrition and our health is how nutrition affects our behavior. The common signs of food sensitivity are listed as the following: abdominal pains, allergies, anxiety, asthma, attention deficit, cough, constipation, diarrhea, eczema, fatigue, frequent colds, ear infections, headaches, hyperactivity, irritability, low energy, running nose, skin rashes, sneezes, stomach aches and more. The most common culprits of food allergies are dairy and gluten, which is a large protein molecule, which comes from gluten-containing grains such as wheat, spelt, rye and barley. People who suffer from gluten intolerance, also known as Celiac disease, can benefit from eating a gluten free diet. Further causes of foods allergies are refined white sugar, chocolate, peanuts, eggs, corn, tomato, tree nuts, soy and various food chemicals/additives such as MSG, Aspartame, other sugar substitutes, artificial food coloring and food preservatives. To find out what causes your child’s food allergies, you need to start to keep a weekly food journal. Write down every food item for breakfast, lunch and dinner daily. Also record your child’s behavior, including any sign of food sensitivity. This observation will help you identify the possible sources of food allergies. In addition, it will lead you to make a correlation between the causes and consequences of your allergies. This is a first step in solving this food allergies puzzle. It may take a while, lots of patience and dedication, but it is possible to resolve the problem of food allergies. I have seen and helped many clients successfully remove their food allergies in my nutritional counseling career.

GLATT, PeANuTS AND SLuMBeR PARTIeS By Brandie Shaw When my daughter asked to have a slumber party, I offered to give her $500 and grind cupcakes into the carpet myself. No? In desperation I blurted out ,“How about a pony?” For that I received the ultimate teen display of distain, -- the eye roll. Since pizza is “like sooo lame”, Missy wanted to have spaghetti and meatballs. Hubby fancies himself quite the aficionado de meatballs. Missy flashed him the doe eyes, and he agreed to make them for her party. I picked up 5 lbs. of chopped meat for “Attack of the Teens”; when Missy reminded me that two of the girls keep kosher. I put the beef in the freezer to throw out later when it gets grey and icy and ran to the kosher butcher. Afterwards, Missy cheerfully exclaimed; “Good news! Indira G is coming too. She’s Hindi.” “Holy Cow! Why are we making meat balls?” I chirped in the dulcet tones the neighbors so enjoy as I was on the way to buy ground turkey. To get her Dad to make separate batches, Missy worked him over with the doe eyes, lip pout and a big “I love you daddy!” rendering him powerless to resist. He did mutter something about “balls” that I am glad I didn’t hear. For dessert, Missy wanted cupcakes. One of her guests is a vegan and allergic to peanuts and another has a gluten allergy. How hard can it be to find cupcakes made without, eggs, milk or flour and baked in a peanut-free facility? Life as a parent doesn’t get any easier, but it will always be challenging.

get your relationship back on track By Suzanne Wachtel, CSW Having a relationship filled with love connection, communication, intimacy and good sex should not be a fantasy; it should be a reachable goal. In fact the connection and communication can be better than ever! Follow these steps to get your relationship back on track! STEP 1: RE-NEGOTIATE Make a list of the things that you love about your partner (no more than ten) and then make a list of all the things that you need your partner to work on or change for you to be happier in your relationship (no more than ten.) Read the list to each other and LISTEN! Forgive and forget. HOW ACCEPTING ARE YOU AS A PARENT? By Hillary Call, LICC Volunteer Even when parents “accept” their child’s coming out, there are often double standards for how accepted his or her dating is…and how parents “accept” this in their homes. When a young person comes out, many families work hard to be supportive. Then they go into a frozen period, thinking, “We’ve acknowledged it. It’s OK to be gay, just go be gay out of my sight.” Young people then don’t have the opportunities to explore their sexuality as any teen should be able to. Dating becomes secretive. Where can gay youth be themselves? To hold hands, sneak in a kiss? “It’s so important to have those early dating experiences because there’s supervision, and limits to learn,” said Pete Carney, director of Pride for Youth, a project of the LICC. Without those opportunities it’s tough to develop critical decisionmaking skills. Poor choices can be the result. “Risky sexual behavior becomes a factor. Or young teens dating people much older because they have a car, or an apartment, to go to,” said Carney. All teens need the same privileges whether they’re gay or straight. TO PUNISH OR NOT TO PUNISH? THAT IS THE QUESTION! By Dr. Laura Ness Deciding how to modify your child’s problem behaviors can be a difficult decision. Parents frequently use punishment, such as taking toys, computers, and/or privileges away. However, research on rewarding a child versus punishing a child for his/her behavior indicates that rewards are more effective than punishment. In fact, rewarding good behavior, instead of punishing bad behavior, often corrects the behavior more rapidly because it is easier for a child to understand what they did right rather than what they did wrong. Punishment is usually given by parents as a way to satisfy their own frustration and anger. Punishment typically curbs the behavior in that moment, however it does not teach the child why the behavior was wrong or how to correct it. Kneeling on the child’s level and looking him/her in the eyes will help you to appear less intimidating, creating a more optimal state in which he/she can learn and understand. Demanding that the child look at you while you are yelling and screaming, i.e., “look at me when I am talking to you!” will likely scare the child. It is natural for anyone to look away from the source of his or her anxiety/fear. When you yell, scream, and/ or threaten your child, you are creating an atmosphere in which they cannot learn the lesson you are teaching. Calmly explaining to the (also calm) child what he/she has done wrong will create an atmosphere in which the child will retain the information more efficiently. Modeling appropriate ways to handle problems, especially anger and frustration, affects behavior more than punishment ever will.

preparing students for the SAT exams Got Stress? With the holidays behind us and the looming semester change just ahead, many parents and their children are experiencing a certain level of stress. For those parents with children taking the SAT, their stress is elevated. The students feel the pressure from many different directions. They feel it from their parents who just want to see them do well. They feel it from their peers because no one wants to be in the bottom of the class in test scoring. And they feel it from their teachers and principals who want to look good. For some students hearing so much about this test makes them terrified of failing, let alone scoring well enough to get into the college of their choice. Let’s take a real look at how we can prepare our students for this important exam considering that there are only four more SAT test dates left until the end of this school year. While some anxiety can be motivational, too much stress/anxiety can undermine a students’ confidence and affect their performance. • Start studying a week before the exam, cramming before any exam can leave your child exhausted and more stressed out than before. • Be sure to take advantage of practice tests. Becoming familiar with the format and style of a test can reduce anxiety.

• Get a good night’s sleep because lack of sleep contributes to anxiety. • Eat well, especially a healthy breakfast, as it sets the tone for the body and how it reacts for the rest of the day. Be sure to exercise because physical activity can reduce stress and tension. • And of course, come early and well prepared. This alleviates the worry of the smaller things and focus on the exam itself.

For instance, you can cover a plain wooden frame with scrapbook papers, ribbons, embellishments, bling, and flowers--add a photo--and you created something unique and special! You can also take the glass out and create a scrapbook page to add to the frame. Those items can then be displayed throughout your home or given as gifts. cooking with wine! By Laurie Maniatis Now that the holidays are behind us we have to look forward to serious winter weather and maybe a little more time in your home. This time of the year always presents a quandary for me. I long for comfort foods and yet the early winter signals to my sensible self that it’s time to lighten up on the meals and the calories. That’s when cooking with wine makes a great compromise. Many lighter dishes can have a warm and rich taste profile by adding wine into the recipes. A small quantity of wine will enhance the dish and give it that earthy quality we associate with comfort foods. The alcohol in the wine evaporates while the food is cooking and only the flavor remains. There are many wines available, but which are the best for cooking? These are a couple of don’ts: • Don’t cook with a wine you wouldn’t drink. If you don’t like the taste of a wine in the glass. You won’t like it in your dish • Don’t use “COOKING wine” found in the supermarket. “Cooking wine “ (an invention launched during prohibition), is loaded with salt, and tastes horrible. • Don’t use a super premium wine for cooking. A good quality wine will give the same nice flavor to a dish.

Cooking tip: Use wine to deglaze the pan, which means adding a liquid after pan cooking to get up all the tasty bits.

Thinking about a new you or maybe a little less of you in 2012? Does the same resolution apply to your beloved dog or cat? I frequently speak with pet owners about what they feed and how much. When asked how many calories their pet consumes daily, many have no clue. Calorie counting and portion control is as important for pets as it is for us in managing weight. Our pets do not open the bag or can of food and scoop out an amount, we do! Calorie counting for a dog or cat is like “Weight Watchers” for pets, and it’s easier than you think. If your pet is a little on the hefty side, you need to know its current weight and then determine a target weight appropriate by breed, age, health and activity level. How? Consult your veterinarian or try an on-line pet food calculator. All pets are different, but once you have your pets target weight you can calculate daily calorie requirements. For example, a typical moderately active dog weighing 25lbs. consumes 681 calories per day. Pet food labels tell us the amount of calories in a cup of dry food or in a can along with feeding guidelines for the diet. There are many animals that conjure up negative feelings at the mere mention of their name. That famous Jim Stafford’s song which proclaimed, “I don’t like spiders and snakes” was a hit for a reason, but there aren’t many people who really don’t like with frogs. From anyone who sang along with Kermit on the issues of being green to princesses kissing their way into relationships with handsome princes, most frog stories are upbeat and end on a very happy note. In nature, frogs are not so innocent. In fact, they are aggressive predators swallowing prey with a single gulp. Some are even deadly, like the poison dart or arrow frogs of Central and South America. The toxins released by these brightly colored jewels of the rainforest have long been utilized by native people to hunt animals high in the canopy of the rainforest by rubbing it on the tips of their arrows or darts. Research shows that the poisons are

actually manufactured by the frog after a series of food chain events. Ants eat poisonous plants, frog eats ants, and people use toxins, thereby showing an example of nature in harmony. However, in captivity frogs are raised on insects that do not produce deadly results, making them safe, easily handled by people and interesting vivarium subjects. Their dazzling colors quickly win over their owners, making them prized possessions and centerpieces in homes and offices. Maybe frogs can replace diamonds as a girl’s best friend?!

new season, new kitchen By Robert Schene With a new season ahead of us it is time to think about kitchen renovations. Kitchen cabinets could take up to six weeks to get from the manufacturer and another four to seven weeks to finish the job. How about a new bathroom in your home? FEEDING LONG ISLAND By Hillary Call It’s likely you know someone who’s going hungry today. More than a quarter of a million Long Islanders fall into the low-income category. In today’s economy anyone can become low-income very quickly. That means your neighbor, kids at your children’s school, even your own family – we’re all at risk. Randi Dresner, president and CEO of Island Harvest, takes this personally. “One in ten people on Long Island are food insecure. Children go to school without breakfast. Some leave school on Friday and don’t get a decent meal until they return on Monday,” said Randi. “There are kids struggling to help their parents put food on the table. That’s not fair. We have to help. That’s where Island Harvest comes in.” Island Harvest started as a one-woman operation in 1992. Founder Linda Breitstone was enraged when surplus food from a local convenience store was simply thrown out at the end of the day. A soup kitchen located down the street needed that food, but there was no system in place to bring the two together. So Linda packed up a cooler with the food, loaded up her station wagon and made miracles happen. In just over a decade Island Harvest has become Long Island’s largest hunger relief organization. Tireless volunteers deliver 8.5 million pounds of food and goods to a network of more than 570 food pantries, soup kitchens and other non-profits engaged in feeding Long Island’s hungry. Like Linda, Randi Dresner is also a “connector:” someone who has a knack for bringing the right resources to bear on this urgent problem. In her ten-year tenure at Island Harvest, Randi increased food collection from 2.2 million pounds to a staggering 8 million.

With that growth came new, good problems: how do you store all that food? What about refrigeration? Expanding delivery requires a fleet of trucks, and so on. Randi tackled these needs, too, by crafting initiatives that tripled revenue. She also implemented a business model where 97 cents of every dollar went toward supporting programs. And she didn’t stop there. Under her wing Island Harvest has implemented new advocacy, education and outreach programs. She’s also expanded the volunteer staff. As a result of her efforts, Island Harvest has been rated a 4-Star Charity by the nation’s largest charity watchdog, Charity Navigator, for four years running, an honor held by only 7% of those they monitor nationally. “Get the Food out” One of Island Harvest’s biggest challenges is turning food around quickly “Once we take food in, we get it out within 24-48 hours. That’s an unusual thing for a food bank,” said Randi, who noted that traditional food banks can take much longer to complete that turnover. What this means is that Island Harvest can deliver food that’s fresh, such as fruits, vegetables, meats and milk. “We’re not just feeding the hungry. We’re feeding them nutritious food, healthy food,” she said. New ways to FiGht huNGer Under Randi’s direction, Island Harvest has been tackling hunger in targeted and strategic ways. There’s a Weekend Backpack Program that gives kids who depend on school breakfasts and lunches food for the weekend. The Summer Food Service Program serves a similar purpose. A mobile food pantry delivers food directly to hungry people in their communities. The Operation: HOPE mobile food pantry feeds veterans and their families. “MeaNt to Be” “There are no coincidences in life,” she said. “In Yiddish it’s called bashert, or ‘meant to be.’ I think we’re guided along our path, that we have experiences leading us to our own personal calling. Working to help others has always been my passion. Fighting this good fight at Island Harvest – especially side-by-side with our volunteers, who are so passionate about this important mission – was meant to be.”

If you have ever applied for a department store card, credit card or even gas card you know your approval usually comes down to one thing: your FICO credit score, the Fair Isaac Corporation. Your credit score is a three digit number based on many criteria. Paying bills late, having accounts in collection, judgments, liens, bankruptcy, foreclosures, high balances on revolving debt and even too many inquiries negatively impacts your credit score. The opposite is also true: good payment history, low balances, and no defaults will cause your score to be higher. Typically, unless a person has lost employment, incurred an illness or unforeseen financial hardship, a low credit score can be equated to a lack of discipline. That doesn’t mean you should start canceling your credit cards actually, that may lower your score even more since, credit history is also a factor in determining your score. Cancel the credit and you lose the payment history. Instead, limit your spending, pay down high balances, always pay your bills on time, don’t open too many credit lines and don’t let anyone run your credit report unless absolutely necessary. The na tionwide consumer reporting companies: Equifax, Experian and TransUnion are required to provide you a free copy of your credit report once a year if asked. Visit www. annualcreditreport.com or call 1-800-322-8228 to get your copy. Check your report for accuracy, understand the ramifications of the negatives and strive to improve your score. The scores range from 300 to 850 depending on the reporting agency. Your credit score will most likely determine the interest rate you will pay on credit cards, mortgages, leases and insurance policies. Your score may even determine whether some employers view you as a good risk in the hiring process. A higher credit score equates to financial stability.

KEY LEgAL ISSUES FOR START-UPS By Lisa Renee Pomerantz Many people who start their own businesses are very skilled and knowledgeable at providing the goods or services they plan to sell, but have no experience in dealing with the legal issues involved with business ownership. Understanding what these issues are and addressing them proactively can help start-ups maximize their chances for success. A basic issue for start-ups to address is the applicable regulatory environment. For example, certain businesses or professions have licensing or credentialing requirements. In others, especially where public health or safety may be implicated, such as childcare or food preparation, there are laws and regulations that govern a business’ operations. Standard operating procedures must be established to ensure ongoing compliance with these requirements. A second issue to address is whether the founder wants to conduct business as a sole proprietorship or as a business entity such as a corporation or limited liability company. Once the form of business entity has been selected, a name must be selected and applicable documentation prepared and filed, including agreements among the participants in the venture. A failure to prepare a shareholder, partnership or limited liability operating agreement can easily lead to the company’s demise. The start-up also must establish agreements with other players who are key to the business’ success, including lenders, suppliers, employees, customers and subcontractors. Care must be taken to ensure that these agreements are consistent and complementary with each other. For example, if a company is reselling products provided by a manufacturer, it needs to ensure that the warranty it provides its customers is consistent with the warranty provided by the manufacturer.

W-2 Sticker Shock By Joan Bubaris, CFP® Wait...I made that much money? Don’t go into shock. You know each week various taxes are withheld from your pay, but when you see the year end totals you may ask yourself, “Where does it all really go?” Let’s break it down: There are 20 different boxes on your W-2… Here are the ones that may need some explaining: Box 1 shows your gross income minus any contributions made to an employee sponsored retirement plan i.e. 401k, 403b. Skip ahead to Box 12b to see how much you contributed towards your retirement. Having automatic withdrawals from your pay is a disciplined way to save and saves you (and your employer) the amount that is withheld. Box 2, the elephant in the room. This is the amount you paid to the Federal government. This amount is based on the W-4 form you filled out when you were hired. It asks your marital status and how many deductions to take. Many people will have the maximum withheld. This strategy will many times entitle you to a large refund. Accountants will say, “You just gave the government an interest free loan for the year.” However, some people like getting a fat refund check, but others will

inflate their deductions on their W-4 form in order to receive extra in their pay check. Beware! If too little is withheld, you will owe the IRS money and possibly receive a penalty for under withholding. Consult with your tax preparer before you submit a new W-4. Box 3 is your total gross income. This is the amount used when calculating how much you pay towards Social Security seen in Box 4 and Medicare seen in Box 6. Paying into Social Security and Medicare entitles you to benefits upon retirement; current age is 62 for social security income and 65 for Medicare medical coverage. You are also entitled to these benefits in the event you become disabled. I hope you will have a better understanding of your W-2 when it comes in the mail this year. But if you don’t you’re in good company. An interview with Tricia McDermott Founder/Producing Artistic Director Airmid Theatre Company Despite arts advocacy groups’ efforts to prevent the decline of arts inclusion, the budgetary solution remains to be that the arts are perceived as an amenity. To challenge that notion, my blog First Online With Fran interviews ordinary people doing extraordinary things in The Arts to make our world a richer, deeper, better place to live. The Founder and Producing Artistic Director of the Airmid Theatre Company, Tricia McDermott shared her thoughts and vision for women in the theater and how the work at Airmid enriches our community. Although Trish, professional actress/director/literary manager, was adamant about never starting her own theater company, she felt compelled to promote classical works of women playwrights when the opportunity arose. Founded in 2000, Airmid Theatre Company creates a safe home for women artists, igniting broad public recognition of the

essential contribution women have made to the worlds of theatre and dramatic literature. One of Airmid’s missions is to establish the history of playwriting by women by professionally producing their work with actors of both genders, and to thereby broaden discussions of women’s roles today. Trish commented on the value of the arts particularly the theater: “Theater lands in a very unique place. it makes people well-rounded. And no matter what time you start your child off or even yourself and get involved in theater, you get an opportunity to collaborate with people and create a team.” Airmid has an intern program with high school and college age students. Trish feels strongly that theater enriches the community. She comments, “The community has to be engaged. For me, there is a great affinity to finding a spiritual life within the theater. Whether it’s as a participant or as an audience member, whether you’re participating in the actual creation or the experience of it, there’s a communion that happens. And you find yourself engaged with people in a way that you don’t in any other art form.” Airmid continues its search for performance space and is presently looking at sites both on the South and North shores of Long island. Sweet Suzi and her band, Sugafixx, are igniting the blues world with a sultry, red-hot sound that’s part Stevie Ray Vaughan, part Pat Benatar, a healthy dose of Janis Joplin and all rock-n-roll, baby. Born Suzi Mary Esposito and hailing from Lindenhurst, this fiery blueshound is one of the strongest female vocalists on the scene, belting out rumbling vocals that come from deep within. Unmistakable-like her personality, which is as powerful and sweet as Sweet Suzi and Sugafixx’s sound. Sweet Suzi & Sugafixx is made up of John Puglisi on guitar, Joe Pagano on bass, Ronnie Sciascia on drums and of course, Sweet Suzi with a firm grip on the mic. “John and I came from different sides of the tracks. When we first met our musical chemistry was undeniable. We got together and the music was magic,” she said. They played together for a while then found Joe and Ronnie. “My band is amazing. We gel together. It’s the best band I’ve ever had.”

MakIng hER Way The music biz isn’t an easy road to take. a single mother of two wonderful kids, Suzi understands that sometimes life can get in the way of your dreams. “But that’s not an excuse,” she said. “Whatever it is that you love to do, you can always find a way to make it happen. For me, there’s always a jam I can join in, my writing is an outlet, and it all fuels my lyrics which come from what’s going on in my life.” her mother helps with her children as Sweet Suzi & Sugafixx tour the country, helping to satisfy her fans’ sweet tooth for blues that rock. “My mom had been helping me fulfill my dream for 18 years,” she said. “I couldn’t imagine doing anything else.”

“LyRIcS ShoULd BUILd SELF-ESTEEM” There’s no denying that Sweet Suzi & Sugafixx is far, far from the bubblegum pop that skyrockets scantily clad, saccharine starlets to fame and über-fortune. There’s a lot of talent out there, Suzi says, but there’s a responsibility, too, to help young people build self-esteem. “I adore Lady gaga because she’s smart and funny and talented,” she said. “I like vocals that have substance. Lyrics sometimes negate women. We should be building girls’ confidence with music.” her advice to women trying to make it: “Be open-minded when it comes to music,” she said. “Listen to the old stuff. Listen to what your parents and your grandparents listened to. It’ll open your eyes.”

Decorate the plate with strawberries, make your loved one some hot cocoa and you’ll get guaranteed kisses and not just the Hershey kind. Heavenly Heart Shaped Pancakes • 2 1/2 cups all-purpose flour • 1 cup (6 ounces) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels • 1 tablespoon baking powder • 1/2 teaspoon salt • 1 3/4 cups milk • 2 large eggs • 1/3 cup vegetable oil, plus more for the griddle and cookie cutters • 1/3 cup packed brown sugar • 3-inch heart-shaped metal cookie cutters (optional) • Powdered sugar DirectionS COMBINE flour, morsels, baking powder and salt in large bowl. Combine milk, eggs, oil and brown sugar in medium bowl; add to flour mixture. Stir just until moistened (batter may be lumpy). HEAT griddle or skillet over medium heat; brush lightly with oil. Pour 1/4 cup batter onto hot griddle into the shape of a heart; cook until bubbles begin to burst. Turn; continue to cook about 1 minute longer or until golden. Repeat with remaining batter. (For perfectly shaped pancakes, brush inside of cookie cutters with oil; place on griddle. Pour about 1/4 cup batter into the cookie cutters and cook until bubbles begin to burst. Remove cookie cutters. Turn; continue to cook about 1 minute longer or until golden.)
