H

ow do we hear our inner voice over all the mind chatter? Meditation is a great tool that can help us hear our own inner wisdom and bring us closer to the person we want to become.

Meditation can be done anywhere. Start by inhaling to the count of 5, and exhaling to the count of 5. The counting breath distracts and focuses the mind, and can be used in a repeated pattern. Try it also to help slow your heart rate from exercise.

The goal of meditation is to acquire stillness, not silence.

So if thoughts come up (and they will), acknowledge their presence and let them go peacefully, instead of trying to fight them off. Now repeat a positive affirmation, such as “I am confident”. Even if you’re not feeling it, keep saying it over and over, and eventually it will become true.

he Townwide Fund of Huntington, Inc. Annual 4 Mile and Fun Runs sponsored by Range Rover. This year the “Turkey Trot” falls on Thursday, November 24th, 2011. Each year a ½ mile fun run brings the youngest generations out to celebrate the morning.

The 4 mile race gets bigger and bigger each year with over 1400 entrants in 2009. From walkers to top-shelf runners, everyone gets together for this great event. Sponsorships and donation opportunities are available up to November 10th.

o you realize that the average Thanksgiving meal calculates to between 1,500 to 4,000 calories, depending how many times you head back for seconds. So when you’ve consumed double your daily requirement of calories in one sitting, it’s easy to see how the pounds suddenly appear around that waistline.

So, what can you do? Other trainers will tell you to cut your portions in half, and skip the gravy, dessert, and alcohol. But not this trainer! That doesn’t sound like much of a “holiday” to me. Here what I suggest instead: Plan a BIG Pre Holiday Workout -- And I mean BIG! You should challenge yourself to earn that meal! How about participating in a 10k turkey trot or a 90-minute spin class? Or try one of my favorites--Tabata™--named for exercise physiologist Izumi Tabata, who created this calorie burning workout consisting of intervals that include 20 seconds of intense exercise followed by 10 seconds of rest repeated 8 times for a total of 4 minutes per exercise.

“Intense” doesn’t adequately describe this workout as it can feel like 240 seconds of hellish burn. Exercises range from cardio, like using the elliptical machine, to lunges off of a step while doing biceps curls, burpees, push-ups, on or off a Bosu™, to squats with shoulder presses.

Post Holiday--Cardio, cardio, cardio...Select an activity you love and set a daily goal to burn an extra 100 calories per workout than you normally do.

Simply adding on a few extra minutes to your regular workouts will do the trick. Better yet, increase the intensity by raising the levels on the machines or adding some sprints or hills to your runs/walks so that you are burning those extra calories and getting a good sweat.

So, train hard and enjoy! Happy Thanksgiving!! And remember that this advice will get you through those office and family parties in December too!

T

he pursuit of being “hairless” has been in existence long before the days of recorded history. For most people, facial and body hair is more than just a nuisance.

History shows us that hair or lack of it was important for one’s status and social position. Men and women in ancient Egypt removed all the hair from their bodies except for their eyebrows. Wigs became popular and the type of wig one wore represented one’s status in the community. Many times wigs were buried in tombs beside their owners for their transition to afterlife.

Alexander the Great required that all men in his army be clean-shaven with short-cropped hair. In the Middle Ages, women plucked and shaved every hair on their forehead, eyebrows and necks. Queen Elizabeth was one of the first figures in history to make this fashion statement famous.

As society’s view on hair evolved from the prim and proper Victorian Age to that of the early 1900’s and the roaring 20’s, women were exposed to a new fashion image. Shaved underarms and legs became the

creams, which caused a chemical reaction in the keratin so that the hair could be wiped away. Evidence of depilatory creams date back to 4000 BC and contained arsenic and quicklime, chemicals that were very poisonous. In the 1940’s Nair began to manufacture and sell its depilatory cream and continues to do so today.

In the late 1880’s, electrolysis was developed by Dr. Charles Michael and was used to remove an ingrown eyelash from a patient. Today, of course, Dr. Michael’s method has been improved upon and modified to remove hair from all parts of the body.

Having an exam and cleaning twice a year will insure a healthy smile and hopefully, prevent the need for major work.

Understanding your dental benefits will help you receive the best care possible. Your employer’s benefits department can help explain them to you. Many dental offices have employed an insurance coordinator to help pre-determine eligibility and benefits and file claims for patients.

In general, dental insurance is a benefit offered by employers. The employer contracts with the insurance company. The dentist has nothing to do with patients’ benefits. A dentist may accept insurance (usually as partial

payment) or not. Unlike medical benefits, which require single co-pay for each visit, dental benefits are based upon the procedure. In general, preventative care such as checkups, cleanings and x-rays are covered between 80-100%. Basic care, such as a filling, is usually covered between 50-80%. Major work such as crowns and bridges are generally covered at 50% or less.

Dental insurance does not carry over to the next calendar year, so if you don’t use it, you lose those benefits. n the current state of the economy, we have noticed an increasing trend in the interest of having cosmetic surgery abroad, also known as “medical tourism”. There are many qualified doctors overseas, but is it worth the risk?

These are my 10 biggest concerns about this issue: 1. Standards of care The United States Department of Health and Human Services’ Centers for Disease Control and Prevention (CDC) warns that the quality of health care in overseas facilities may not be on par with the United States, and that foreign facilities are not always subject to the same health standards and regulations.

2. Infection The largest percentage (31%) of complications from surgeries overseas was infections and infectious diseases, such as influenza and tuberculosis, which can be transmitted by mosquitoes that Americans and Europeans would not have built up a natural immunity to.

3. Other common surgical complications need intervention Other common complications reported by patients were dehiscence (where the wound opens up), contour abnormality, and hematoma (collections of blood in the site). These issues can happen or appear at any point during the healing process, not just immediately after surgery.

4. I have a post -operative surgical problem, now what?

Personal medical insurance most likely will not cover a patient while out of the country. If a medical complication should arise, additional costs could be out of pocket.

She co-founded Spa Adriana with her husband, John, 27 years ago.

Today it is a thriving business; named one of the top 200 fastest growing spas and salons in the country by Salon Today magazine. Spa Adriana is one of the icons of Huntington Village that make Main Street so very chic.

Adrianas leveraged that success to support causes that are close to her heart. She’s played a vital role in a “shop locally” initiative for Huntington businesses. Her efforts were honored

by Long Island Business News when she was named one of the Top 50 Most Influential Women in Business.

Adriana shares her success wherever she can. She spearheads a global effort on sustainability, speaks to students about environmental responsibility, supports the Hecksher Museum, the Vanderbilt Museum, the Susan G. Komen Foundation and many other causes.

Substance and Style GEM had a chance to sit down with Adriana recently to learn more about what drives her.

How did you get started in the beauty industry?

As a child, growing up in Columbia, one of ten children, I was always creative. I loved dolls and for as far back as I can remember I was cutting and styling my dolls’ hair, crafting styles that were distinctive and interesting. In school I explored my talents for sculpting, drawing and an all-around creativity.

Although I loved art, I felt a strong need to help others. In high school I would give facials to my schoolmates and cut my friends’ hair in my mother’s basement. I always knew I wanted to work with others, but not just on a small scale. I wanted to start a business to help people look and feel good from the inside out.

I was able to channel this drive to heal and nurture others into a successful business with my husband, John. I think loving what you do, and being with people who encourage you to reach for your dreams, is what has fueled my – our – success.

What role did your family play in

your success?

I was raised by a mother who was always very interested in health and wellness. This inspired me, and it fostered my own passion for healing others, while making them feel truly beautiful. I had always envisioned running a business in which my whole family could take part. Today I work side-by-side with John. Having the love of your life alongside you, doing what he loves, too, encourages my own creativity. Our staff is family to us as well. I think our clients feel that welcoming spirit.

Where does passion fit in? Is there room for it for women today?

You must make room for your passion. After beauty school I worked in various salons, but I never felt any true sense of fulfillment; consulting and connecting with clients is what I longed for.

I think this is the key to success: find what drives you, do what you love.

As a woman, what barriers have you come across during your professional growth?

The beauty industry is very open on that front. From the standpoint of building a business on Long Island,

our passion drives our success – we are passionate about beauty, and about our community and the environment. So as far as barriers go, nothing can withstand our commitment for doing what we feel is right.

What do you do at Fashion Week?

Every season John and I attend Mercedes-Benz Fashion Week in NYC. For years we were behind the scenes doing hair and makeup for many of the top designers’ shows and now I’m there in an editorial capacity and John is “front-of-house” in the media risers taking photos of all the runway action. We gather intel for our clients at Spa Adriana and bring back inspiration on the next season’s trends to our creative team at the Spa, keeping an eye on new trends in fashion and beauty.

How have you engaged local businesses?

We believe the success of one business helps ensure the success of all businesses, and the success of the community as a whole. To that end we’ve engaged local businesses through resource sharing, cobranded events and more to encourage guests to shop locally. We need to work together as a whole to keep all of us strong.

Spa Adriana recently underwent its own beauty makeover…

Yes! Spa Adriana has always been an eco-conscious, “green” business. When it was first designed we employed many of the same green building techniques used by the Mayans. For the renovation we took this green consciousness even further, using low-voltage lights, recycled steel and sustainable materials. We transformed the façade to resemble an ancient Mayan temple using man-made cements as architectural stone. Our good friends Dr. Alfonso Moralas, Archeologist and Luis Eschevres, Mayan Architect and Artisan produced wonderful Mayan art replicas.

What one thing do you think young women today need to know?

Be fiercely true to yourself. And in that you must love yourself, honor who you are, do not let anyone stand in your way. It is a commitment to give the world the vibrance that is who you are. Do not settle for anything less!

A

female voice came over the loudspeaker as the plane taxied toward the runway to begin its flight to Indiana last week. “May I have your attention please?”

Down the aisle came three attendants, two women, and one man with instruction cards, seat belt buckles and life vests in hand. Once positioned at their designated locations, the voice began instructing the passengers on the procedures to follow should there be an emergency.“ … In case there is a loss of cabin pressure, an oxygen mask will fall from its compartment. If you are traveling with small children or an elderly person, put your mask on first before attending to others.” These instructions were not new, but this time, they set me thinking. Why is it that women find time to take care of everything, but they have no time for themselves?

Each of us is given the same 24-hours in the day, so that isn’t the reason.

The answer is that it’s a mindset that we have learned. Haven’t we all been told that women are the caregivers and that it’s more important to put our needs aside for the needs of others and that it is selfish to think about ourselves first?

We may not even have been aware that we were processing these ideas, but subconsciously, we accepted them and turned them into our beliefs. Yet, on the airplane they tell us to put ourselves ahead of those small children and elderly people. Why? Because the truth is we have nothing to give to others when we don’t care for ourselves first.

Take a few minutes everyday to do something that recharges your battery and makes you feel good. Go for a 15-minute walk, meditate and enjoy the exquisite sound of silence or polish your toenails, laugh on the phone with a friend, or do whatever brings you joy. Let it be the first thing, not the last thing you do. It will quiet the brain chatter, reduce stress and energize you.

Everything else will be easier to accomplish once you have made some time for yourself.

making a positive lasting impression

T

hose who are capable of making lasting impressions on others, have a charisma that is most useful in the pursuit of success. Throughout life, the average person meets thousands of people and is exposed to even more ideas, concepts, and beliefs. The content of conversation, or the words used to convey a message quickly fade, but the impression remains. An impression is an effect, feeling, or image retained as a consequence of experience. However, like a footprint in the sand at a beach, impressions eventually fade away; a lasting impression is one that does not. Those who know how to, and are capable of making lasting impressions on others, have a level of influence over others that is most useful in the pursuit of success.

How can you make a lasting impression? Think back to your own experiences in life and think of the impressions that others have made on you. If you carefully think about this, you will discover three key circumstances: 1. Strong emotion. The stronger the emotion, the stronger the impression. To make a lasting impression on someone, they must feel some kind of emotional connection. The anti-smoking commercials use exsmokers with holes in their throats to get the public to feel fear. Beer commercials show people having fun to make us feel good while seeing their product. Of course, your approach to getting others to feel strong emotion can certainly be less manipulative.

2. Use of imagery. People remember best in pictures, not words. For example, one of the most effective techniques for remembering numbers is to convert the numbers into words, then convert the words into mental

pictures. The more outrageous the imagery, the more memorable it becomes.

3. Differentiation. The law of contrast states that which is different or unique makes a greater impression than that which is ordinary. We notice the one light bulb that is burned out more than we notice all the light bulbs that are not.

The impression is what is left over when the words and details have faded. Be creative and stand out from the crowd in a positive way. Practice leaving people with positive lasting impressions and when the time comes, they will remember you, your advice, and/or your product.

Warning SignS of Suicide Reality TV made headlines this summer when one of its own took his own life. Unfortunately, suicide happens far too often: it is the third leading cause of death among adolescents and young adults.

You can make an important difference, and perhaps save a life, by recognizing some of the warning signs: • People struggling with suicidal thoughts may say, “I want to die” or “I want to sleep and never wake up.” They may exhibit sadness, cry, take risks or silently withdraw from friends or activities. Changes in sleeping patterns or appetite, a loss of energy or a drop in grades may signal something may not be right.

• Urgent warning signs include a sudden lift in mood or if a person gives away prized possessions. Listen for specific plans or access to means.

• If you think someone is suicidal, ask directly.

Indicate that you are worried and fear they may be considering suicide. Using the word “suicide” says you’re not afraid to talk; it may help them feel comfortable enough to confide in you.

• Listen to their concerns without judgment. Let them know help is available and offer to go with them. Tell someone you trust.

How do we prevent this from occurring? Turning complaints into requests is an easy way of keeping the focus on what you would like to happen, rather than what is wrong or what is not happening. The key is in negotiating a solution that will prevent or resolve a conflict.

Another tip to remember; it’s not always about you! When your partner expresses a feeling or issue, it comes from their reality and it’s authentic to them, and it’s not always about you! If we would simply accept our partner’s point of view and agree to disagree, most arguments will be stopped dead in their tracks.

here is a crisp snap in the air. The leaves are just beginning to turn. Indian summer is doing her final dance, and I’m getting excited about lighting a fire and digging out that yummy chenille throw with the pom-pom trim that I had made last winter. As we look forward to warming up indoors, we need a little seasonal sprucing to set the tone for the coming months. How can we cozy up the home for the holidays without making a serious investment? What little decorating tricks can turn a space from summertime sparse to seasonally sensational?

Treat your home the way you treat your own wardrobe, by layering your favorite pieces to create a warm comfortable look. Layer a smaller Persian wool area rug over that lightweight sisal. Replace those summer buds with a gorgeous bunch of eucalyptus sprigs and hydrangeas that are just turning that aubergine color. Pillow covers could be changed to zippy tangerine-orange tones or deep russets to bring in some autumnal warmth. Just as you wear different

jewelry in cooler months, use the same formula when accessorizing your home. Replace the stone washed candlesticks with beefy brass hurricanes. A few colorful coffee table books scattered about in the color way you’ve chosen can make a bold statement.

As our living space changes with the season, we may want to consider new window treatments.

A simple drapery treatment on a chunky walnut pole with some acorn finials might be a nice change to existing lightweight panels or overdone swags and jabots. In the bedroom, a change of bedding and a swap of that cotton Matelassé for a coverlet with texture will change the mood. Layering a woven throw at the base of the bed will surely be a warm and welcome addition too.

Activities such as watching TV with your “lap lizard” or coaxing your kids to do their homework by letting them hang with their “study buddy” has quickly propelled Bearded Dragons into the main stream pet world and into households across the country.

Although taking them for a walk in the park will certainly attract attention, it is strictly optional, and when those cold winter days start howling, you might be glad you opted for a stay indoors pet rather than a cute furry four-legged mammal that demands so much other attention. The gasoline in the tank keeps the fuel pump cool. Take away the gas and the fuel pump runs hot and has a shorter life. If you have an older car that has accumulated dirt and rust at the bottom of the tank, keeping a full tank can help your fuel burn cleaner.

Keep your car in shape. y mother told me only one thing growing up that I had to be, or should I say NOT be. What my mother told me was to “never be financially dependent on a man”. She never told me to be a doctor, lawyer or a teacher. In fact, when I signed up for Accounting at Suffolk County Community College out of high school, I was afraid of getting in trouble because my mother had told me to sign up for Liberal Arts, until I figured out what I wanted. If you knew me in high school, you might’ve expected me to choose horticulture or equine studies, never accounting.

Her advice has shaped all of my decisions throughout my life, including the dating days and career planning to follow. Her statement has also caused issues with men that weren’t comfortable with an independent, careerminded and financially secure woman. Of all the lessons my mother has taught me and continues to teach me, this is by far the best one. It gave me the fire and fight in my

t this time of year, many companies plan their holiday parties. The company representative meets with the catering hall or restaurant sales director to select a venue, reserve the date and time, plan the menu, and specify seating arrangements. The facility prepares a contract for signature, which is often signed without further thought. While deposit and minimum guarantee requirements are reasonably imposed by the facility in consideration for reserving a room for the customer’s affair, other provisions may unexpectedly shift certain risks to the customer, or fail to guarantee the customer the arrangements selected.

For example, a force majeure clause, which is designed to protect the facility against liability for failing to perform in the event of a blizzard, hurricane, or other act of nature, may be broadly defined to include problems that are within the facility’s reasonable control, such as heating or air conditioning system malfunctions. Moreover, some contracts not only protect the facility from liability in the event of a force majeure event, they actually permit the facility to retain payments made for services, even if the caterer has to cancel the event. Also questionable are clauses purporting to make the company representative who signs the catering contract personally liable for the company’s obligations.

Other clauses of potential concern are those permitting the facility unilaterally to: raise prices if its costs rise, move the event to another room, or make menu substitutions. Talk about these concerns with your caterer before you sign a contract for services.

o you know that your body is actually an amazing healing vehicle?

Your body is gifted in self-healing and dedicated to repair any sickness, injury or damage. If you have a health problem that you do not want to recur over and over again, you’d better pay attention to good nutrition. Good nutrition will provide your body with durable long-lasting material to make the repair work last.

I have the privilege to observe how people heal themselves. Joann became my client after she experienced a problem that caused her stomach pain whenever she sneezed. A CAT scan showed that there was a hole in her belly. In April of 2005, she had an umbilical hernia surgery, which included a mesh to fill up the hole. The umbilicus, or belly button, is a natural weakness in the abdominal wall where hernias commonly occur.

After the surgery, she did not feel right, and she still had pain on her right side.

The General Surgeon prescribed an intravenous CAT scan and the results were all negative. She proceeded to her OB/GYN and got a vaginal ultrasound and a gallbladder with results all negative. At this point, she was searching for an Internist and for some reason, she came across my name in the nutritionist list, and contacted me.

I started Joann on supplements to boost her nutrition and within a week she no longer had pain. She could not believe it. She came to my weekly classes with a smile, but did not tell me the great results, until two months later. It took two months to convince her that her abdominal pain has vanished for good.

Since then, her family has moved away to Queens, but she still comes back to visit me from time to time. Every time she comes, she always brings a bouquet of flowers to show her appreciation. This is a picture of her with her husband. Her husband has another healing story to share. You will find their complete stories in my book, “Healthy Eating Wholesome Living”. hanksgiving will soon be upon us. I know we love a bargain and traditionally many wine merchants have great specials the weeks before the holiday.

Just don’t wait too long because the day before Thanksgiving is the busiest day in a wine retailers year! Finding the right wine to match all the tastes and complexities of a Thanksgiving can be a daunting task.

I’m going to give you the lowdown on the one red wine that will pair best with your Thanksgiving meal.

The wine is PINOT NOIR. This wine has subtle undertones of earthiness that are supported by lovely plummy and cherry notes. This is a light bodied wine that will pair well with turkey (both light and dark meat) and mashed potatoes.

Red wine is good for you. At Long Island’s own Stonybrook University (in a study of 2291 people over 4 years) they found that moderate use of red wine cuts the risk

he latest news about chocolate is that it is good for you. There is evidence that chocolate offers a number of health benefits that may be good for your heart.

Dark chocolate has antioxidants, the same ones found in red wine and green tea, which are found to be beneficial to your overall health. You only need about one and one-half ounces of dark chocolate per day. The natural chemicals found in chocolate include xanthine, which is similar to caffeine. Other compounds like theobromine and phenylethylamine can stimulate your central nervous system and relax the bronchi of the lungs and your blood vessels. You’ll only find small amounts of these chemicals in chocolate, but it is enough of a reason to feel good about indulging in a luscious treat every day. Remember that the quality of chocolate makes a difference, so treat yourself to the best tasting, homemade, fresh chocolate that you can find and realize that life can’t get any better than chocolate!

suggests that the body is not so easily fooled, and that sugar substitutes hold no key to weight loss. This may possibly explain why, despite a plethora of low-calorie foods and drinks, Americans are heavier than ever.

In universities across the country, multiple studies on the effects of sugar substitutes have demonstrated in rats and rabbits that there is still weight gain with sugar substitutes. The likelihood is as high as 41% that one can become overweight substituting chemicals for sugar in your diet. This is not only bad news for our waistline, but for our overall health: • Some sugar substitutes have been linked to potential cancer risks • Negative effects on the liver, kidneys, and other organs • Stimulating cravings • Gastrointestinal problems • Developmental problems in children and fetuses • Headaches Additionally, people often complain about bloating and distention.

So before opening your next diet soda, buying “lite” yogurt or sugar free ice cream, think about the potential ramifications. I carry in my bag the old fashion packs of brown sugar. Whenever I crave a little sweetness in my coffee or tea, I know I am not putting by health in jeopardy by adding the “real” stuff. Be Smart and Be Healthy!

Last December, during a “Good Morning America” interview, Dr. Oz offered some simple-to-follow tips to those interested in keeping slim during the holidays.

Relax This Holiday Season!

The holidays are approaching and stress levels are rising.

As busy as we are in our daily lives, we still need to make time for shopping, wrapping, decorating, entertaining and attending parties. With shorter days and longer to-do lists, it’s inevitable that stress levels go up. At times it’s difficult to stay close to the essence of the holiday, because we are overwhelmed and tend to experience more stress than holiday cheer. Wouldn’t it be nice to be stress free and embrace the holidays? Try these holiday de-stressing tips and hopefully you’ll enjoy your new celebratory mood this year.

Simplify: constantly remind yourself that you are making it more complicated because you want it a certain way, not because your family and friends expect it.

Re-evaluate family traditions: if making seven different fish dishes is too much, start a new tradition.

Do less: less is more. Kids appreciate their gifts more if there are fewer gifts and everyone enjoys meals that are simple and delicious.

Delegate: enlist support from family and friends. The holidays mean more when you connect and share with your loved ones. Ask for their help with cooking, wrapping and decorating.

Recharge your batteries: define what relaxation means to you; take a bath, go to the gym, do yoga, etc. Make time for recharging your batteries every day.

Lights: turn on the lights, light candles or go for a brisk walk in the sun. Light has a dramatic effect on mood.

Laugh: watch a funny movie with the family, play a board game with the kids or tell funny family stories. Make time for fun.

Breathe: when you feel stressed, remind yourself why it’s important to feel relaxed and breathe. Inhale deeply through your nose for 7-8 seconds, hold for 4 seconds and then exhale for 7-8 seconds.

Embrace the holiday season, relax and enjoy!

Here a few of Dr. Oz’s suggestions: 1) Try to keep track of everything you eat in a food diary. Dr. Oz says that 50% of us gain two pounds from Thanksgiving to New Year’s Day. So it’s good to keep a diary just to keep yourself in check and also to get a good idea of where in your diet you may need to cut back if you notice that you are gaining weight.

2) Think about eating healthy snacks before you go to the holiday parties. Dr. Oz recommends a handful of nuts and low fat cheese to curb your appetite before you go because they’re both healthy and satisfying.

3) Dr. Oz recommends weighing yourself regularly during the holidays to check if you are maintaining a healthy weight.

4) Watch what you drink, recommends Dr. Oz. A holiday glass of eggnog contains a hefty 450 calories, so you may just want to limit your intake of the eggnog or skip it all together.

If you drink alcohol at parties, stick with the “light” beers or wine spritzers and think about adding a splash of lemon or cranberry to enhance color and taste.

5) Finally, if you find yourself eating a little more than usual at holiday time, Dr. Oz recommends exercising more vigorously the next day to burn off the extra calories.

Tossed with broccoli rabe and pasta, it makes a terrific, hearty main meal.

Ingredients 1/8 tsp table salt, for cooking pasta 2 tsp olive oil 1 cup(s) (chopped) onion(s), chopped 1 Tbsp minced garlic 3/4 pound(s) uncooked lean ground beef (with 7% fat) 2 1/2 tsp fennel seed 28 oz canned crushed tomatoes, fire-roasted recommended 1/4 tsp table salt 1/2 tsp crushed red pepper flakes 1/2 tsp dried oregano 12 oz uncooked whole-wheat pasta, penne rigate suggested 1 pound(s) broccoli rabe, ends trimmed, cut into 1 1/2-inch pieces Instructions Bring a large pot of lightly salted water to a boil.

Meanwhile, to make sauce, heat oil in a large nonstick skillet over medium-high heat. Add onion and garlic; cook, stirring frequently, until onion is translucent, about 6 minutes. Add beef and fennel seeds to skillet; cook until browned, breaking up meat with a wooden spoon, about 3 to 4 minutes.

Stir in tomatoes, salt, red pepper flakes and oregano; bring to a boil.

Reduce heat to medium-low and simmer until slightly thickened, about 10 minutes.

While sauce simmers, add pasta to boiling water and cook according to package instructions, adding broccoli rabe to pasta water 5 minutes before pasta will be done; cook until pasta and broccoli rabe are tender.

Drain pasta and broccoli rabe; return to pot. Add sauce; toss to mix and coat. Yields about 1 1/2 cups per serving.

Notes This recipe is also great with lean ground turkey instead of beef.

This makes the area near Cancun and especially Isla Mujeres, Mexico a mecca for sportfishing enthusiasts. Isla Mujeres is listed in Sport Fishing Magazine as one of the world’s top 10 locations for sailfish, with a particular event being unique to the area.

Atlantic sailfish come to the area in the thousands during the winter months chasing swarms of sardines to feed upon. This makes catch-and-release fishing, which allows sportfishers to enjoy the hunt and catch of these fish then release them back into the wild, an amazing thrill. In Isla Mujeres, anglers generally catch a dozen or more sailfish per boat in a single day of fishing.

“French food is too rich for me”, so it has been said my many a health-conscious diner, but at Brasserie Cassis guests will experience many healthful choices as they taste the freshness and simplicity of the foods of the French countryside. The dishes are creative, lighter versions of traditional French favorites, like colorful tuna Nicoise salad, which is accompanied by greens and beans and red ripe tomatoes, mushroom-filled omelets or crepes, or roasted chicken served with tender haricots verts. You can be sure to discover “good eats” here, as the menu abounds with bright, flavorful choices.

Brasserie Cassis and brings a warm touch of Gallic charm and superb French food to the Plainview Center, at 387 South Oyster Bay Road. Its ambience and décor are reminders of the bistros of the Parisian Left Bank with ornate ceiling moldings and large antique mirrors. The stage is further set with stunning globe chandeliers, vintage posters, a zinc bar top, and comfortable cherry-colored leather banquets.
