Exercise

If you have not exercised before then you must start very gently by maybe going for short brisk walks every other day and then increasing that over a period of time. It is important to realise that physical fitness and health are not the same. Too much regular practice of Western-type of exercises such as weight training or jogging may make one fit but it does not necessarily make one healthy. Soft internal exercises like Yoga or Tai Chi are good to balance the external Western type of exercise with the internal, the hard with the soft, the yin with the yang; this is the very principle and philosophy of Chinese medicine. Sadly on most accounts this is neglected. Don’t forget to also include exercises that calm the mind. Meditation and treatments like acupuncture are very good for clearing


09 Health stress out of the mind and body. A healthy mind is a healthy body. Acupuncture combined with herbal teas is also very good in reducing cravings for food and also to speed up the metabolism leading to a reduction in weight.

Food and Diet

Food is very important for your health, eating the right amount is also important, but more importantly is eating healthy food, just because you eat a large portion of vegetables every day does not mean that that food is healthy, by that I mean is it organic? One of the huge advantages of organic foods is that they haven’t been doused in pesticides. Organic farms ban artificial pesticides. In the UK alone, 31,000 tonnes of pesticides are blasted on to farmlands every year, and 25% of food carries residues of these chemicals, created to kill pests and weeds. Non-organic fruit and veg. is covered in the stuff and it won’t all wash off. Pesticide residues turn up, not just on fruit and

vegetables, but in bread, baby food and other products. Did you know that if you consumed an average apple you would be eating over 30 pesticides, even after you have washed it? The quality of food has definitely gone down compared to the way it was back in the 50s and 60s. How can we help to change this situation? Well we can start by sourcing organic produce whenever out shopping, organic food is now less expensive than it used to be because more and more farmers are changing to organic growing and this brings the price down. The more we support the growth of organic food the cheaper it will become and eventually the nasty chemical growers will wither up and go away, they will only stick around if we keep supporting them. Attic

Conversions Converting attic space can provide a relatively low cost means of increasing useable space, relative to the more arduous options of extending, or moving to a larger building.

W

aste of space in an attic space is a huge missed opportunity. It’s a pity that so many houses built today don’t have attics that can be converted later. That to me is a missed opportunity in practically all of the 60,000 or so houses a year being built in Ireland. This is certainly typically the case with houses built by spec builders and developers, who don’t provide the opportunity for subsequent development. When building a new house, building in such a way that the attic can be converted adds only minor costs, and will be a great help when the owner decides to convert the attic, in terms of overcoming planning, reducing costs, and complying with the building regulations. There’s very little cost in doing that basic work, such as providing the headroom, floor structure, and somewhere for a stairs to go later, that can be designed to comply with fire regulations. These are basic things that are missed in house building all the time. From a sustainability point of view, we need to provide houses that can adapt over time, and can accommodate the needs of families, so the life cycle, or use of that building can go on. If an attic is convertible, it allows the possibility of two families living in a house, such as with elderly parents living on the lower level, and a young family occupying the first floor and the attic space. That adaptability is typically missed. However if you have a house, and there is an opportunity to convert the attic space, it makes so much sense. It’s the first space to look for if you want to expand.

If you look at the other options, you either move to a bigger house, or build another house, or you extend the existing house. The problem with extending, unless you’ve got a garage you can convert, is that usually the extensions are going to compromise the house in terms of daylight, and in terms of enjoyment of the garden for the existing rooms, because those rooms become compromised by extensions. Within a typical plot, whether it’s a semi-d, an existing house in the country or an older


13 problem. When you’re carrying out this work in an existing residential area, how do you get the light and the benefit of the views and ventilation through windows without taking from your neighbours. The other issue regarding daylight relates to windows at the front, which do require planning permission, as do any material changes to the front of a house.

Daylight When thinking about daylight, and windows, it’s important to avoid compromising the privacy of adjoining neighbours. There is of course the advantage of an extra view from a higher point, but one has to consider the private aspects of overlooking other people’s properties. This is only an issue at the back of houses, or at the sides. There can be ways around this, with skylight windows, because of their higher mounting and aspect, which don’t cause this

The big advantage with a roof is that you have the hemisphere of the sky above you, so you have huge opportunities of very good daylight to bring to that space. This can lead to real solar benefits. Predominantly these windows should be south facing, to get the passive solar benefits into that space, rather than north facing, which would lead to losses out rather than gains in. Larger windows on the south roof slope, if possible should be opted for. At the same time, during the summer months you have to avoid the roof over heating.

Soups are an excellent and cheap option in current climate and made even better if you’re growing your own vegetables. I have found myself taking fat and salt out of my soups recently almost a process of weaning off salt is required. It’s worth noting when using stock cubes they already contain salt therefore do not add salt to salt! Most stock cubes will recommend 1 stock cube to 450ml of water I recommend 1 stock cube to 1 Litre of water as I believe stock should only be a back round carrier flavour and in your selection of fresh vegetables the vegetables should be the dominant flavour. Fresh stocks are excellent option but can be time consuming thus I am using stock cubes in my recipes for your convenience at home.

Garden Carrot & Red Lentil Soup What a cheap and easy soup this is to make without feeling guilty. I have yet to serve this to someone who thinks it is nothing other than superb. Right away it’s a winner as it is Fat Free Vegetarian Soup, full of vibrancy, fibre and goodness! Any one that knows me will know that I love Lime zest in soup as it cleans your taste buds and give a lovely zesty zing. Serves: 12 portions Ingredients: 100g Onion 200g Carrots 200g Red Lentils 21/2 Lt Stock Water with 2 Vegetable Stock Cubes 1 Clove Garlic 400g Chopped Tomatoes (Tinned is perfect for this soup) Sprig Thyme 60g Tomato Puree Fresh Ground Black Pepper 1 Lime Method: Soak the lentil in cold water for about 20 minutes. Chop Onions, Carrots & Garlic. Put stock cube with the water on to heat. Add the Lentils, garlic, Onion and carrots followed by the chopped Tomato and tomato puree. Stir occasionally and add some pepper. Reduce the heat and simmer for 20 minutes. With a blender blitz the soup, return to the heat then reboil for 4-5 minutes. Just before service add some more fresh ground pepper and serve into each bowl some Lime zest and squeeze of juice.

Brian’s Tip! Serve with natural yogurt or lime juice. Chopped parsley or chives work well sprinkled on top. You may add bacon to this soup at the start also if non vegetarian.
