Laurinda M. Paolino has always had a love of art and design. Currently, she owns Laurinda Design, an interior design company focusing on both residential and commercial properties. She enjoys working closely with her clients to help them create the spaces that they’ve always dreamed of. She assists in color, furniture, fabric, decor selections among other things. As a designer, Laurinda is especially proud of her work designing restaurants as well as residences. No job is too big or too small for her. The photos accompanying this article show Laurinda’s redesigns of Culinary Affair, an eclectic comfort food restaurant in Cranston and The Captain’s Cottage in Narragansett. Healthy Lifestyle Recipes There are small changes you can make that will help you sustain that healthier lifestyle. For example, swapping out rice for quinoa, a healthier grain alternative, or hiding some zucchini in your brownies. Healthy food can be delicious, as long as you have the right recipes. Here is a full 3 course meal of healthy recipes to try this month!

Appetizer:

Buffalo Chicken Celery Bites Ingredients:

- ½ tsp. black pepper

- 2 cups cooked boneless and skinless chicken breast, shredded

- ¼ cup nonfat Greek yogurt (or mayo or cream cheese)

- 1 tsp. garlic powder

¼ cup buffalo sauce

- 1 tsp. onion powder

- 8 stalks celery

Cooking Instructions: 1. Mix together the chicken, garlic powder, onion powder, black pepper, and either Greek yogurt, mayonnaise, or cream cheese, and buffalo sauce. You can also use a combination of Greek yogurt and either mayo or cream cheese for a richer flavor that’s still light. 2. Cut the celery ribs into thirds. Stuff with buffalo chicken. Top with blue cheese or ranch dressing.

Chicken & Broccoli Stir Fry Ingredients:

-1 ½ tablespoons avocado oil

1. In a small saucepan, make the sauce by combining the broth, coconut aminos, lime juice, sesame oil, garlic, ginger, red pepper flakes, and pepper. Bring to a simmer over medium-low heat and let simmer for 20 minutes. Make sure to stir often and watch so it doesn’t boil. After about 20 minutes, sauce should be thickened and reduced by 2/3 and coat the back of a spoon. Remove from heat and let cool for a minute.

- 1 pound chicken breast (thinly sliced) - 2 heads broccoli, florets removed (7 cups/465 grams) - ½ cup chicken broth - ½ cup coconut aminos - 3 tablespoons lime juice - 1 tablespoon sesame oil - 3 cloves garlic, minced - 1 inch fresh ginger, minced - ½ teaspoon red pepper flakes - salt and pepper, to taste - optional toppings: sesame seeds, green onions... - for serving: quinoa, brown rice, cauliflower rice..

2. When the sauce has about 7-8 minutes left, make the chicken and broccoli. Season the sliced chicken with salt and pepper. Heat a large sauté pan over medium heat, add oil, and let it get hot. Add slices of chicken, without overcrowding, and cook 30-60 seconds per side (depending on how thick you sliced it). Remove from pan and repeat with remaining chicken.

Dessert:

Secretly Healthy Zucchini Brownies Ingredients: - ½ teaspoon cinnamon

- 2 cups finely grated zucchini

- ½ teaspoon salt

- 1 cup brown sugar

- Optional add-ins:-About a cup of chocolate chips and/or nuts

- 1 1/3 cup applesauce - 2 eggs - 2 teaspoons vanilla

- 2 cups powdered sugar

- 2/3 cup flour

Frosting: ½ cup chocolate chips, ½ cup butterscotch chips, and ½ cup peanut butter or Nutella melted together

- 1 cup cocoa powder - 2 teaspoons baking soda - 1 ½ teaspoons baking powder

3. Leave the chicken juices in the pan and add broccoli. Cook for 3-5 minutes until tender. If needed, add a splash of broth to help stem it some. Add back in the chicken to the pan and mix to combine. Be careful not to add the chicken juices as this will thin out the sauce.

4. Add in the sauce and mix well until combined and everything is nicely coated. Top with sesame seeds and green onion and serve with your sides of choice!

Given its name because of the stadium-style seating, founder, Arthur Darman, wanted every patron to feel as if they had the best seat in the house. In the beginning, the Stadium Theatre had three shows a day, seven days a week, equipped with a twelve-piece orchestra. Stars from all over came to Woonsocket, Rhode Island be apart of the Stadium Theatre culture. The rise of movie theatres led to the closure in 1990 until local citizens banded together to create the S.O.S (Save Our Stadium) fund which raised enough money to save the theatre.

With the community volunteering and donating, the Stadium Theatre was able to be restored over time, with many new programs and venues. From offering full plays such as Les MisĂŠrables, with the entirely volunteer cast, to implementing programs for the youth to develop their passion for the theater and arts at a young age to offering rentals of their elegant rooms, the Stadium Theatre has it all. They were able to expand and add a 30,000 square foot building, deemed as the Stadium Conservatory. This is home to space for costume designing, set and prop building, rehearsals, and classes. When Sheehan Psychotherapy Associates employee Ashley Marzullo began down the path to purchase the business from its retiring owner, she had no idea what obstacles and speed bumps would pop up. With the help of the RISBDC, today she stands proudly as the new owner, ready for great things. Over the two years it took to close the deal, Marzullo, 33, worked diligently with RISBDC business consultants Paul Harden and Sandra McNamara to adjust to changes and develop a solid business plan for the acquisition. Hurdles included major life transitions, the impact of COVID-19, changes to the original approved loan stemming from the pandemic, and ultimately needing to submit a new loan application to a new lender. While the original deal was structured with the owner providing a loan for 40% of the purchase price, as the deal progressed Marzullo’s bank proposed financing for 90% of the deal. Citizens Bank approved a 10-year SBA guaranteed loan and line of credit, and Marzullo also benefited from the CARES act, which authorized the SBA to make six months of loan payments—saving her approximately $47,000 in debt service.

Over the journey, the RISBDC helped Marzullo find legal counsel, develop a business plan, complete financial projections, analyze cash flow, negotiate with the seller, find a lender, develop the required loan documents, and navigate the transition period.
