Erika, her husband Trevor (an industrial designer) and her corgi dog Onyx were thrilled to relocate to Rhode Island about 18 months ago, because Rhode Island is beautiful and has many interesting events. Thus far, Erika and Trevor have enjoyed exploring the beaches, natural parks and gardens throughout the state while looking for great locales for photos. Over the summer months they plan to explore more of New England in their travel trailer. Erika’s education as a photographer (bachelor’s degree in photography from Grand Valley State University), her caring, energy, enthusiasm, and expertise finding great locales for photos combine to make a great photographer and photography instructor. Erika shared some tips for doing a great family photo shoot: •

Find a beautiful location that is easy to get to. Roger Williams Park in Providence always has great scenery for the background for your photos. It is centrally located right off of Route 95 in Providence and free. Blithewold Mansion, Gardens & Arboretum in Bristol and Kinney Azalea Gardens in Kingston also provide beautiful locations for family photos. Pick clothes that are comfortable to wear. Dark clothes are better for children because they won’t show stains. Have FUN with your photos. They will always come out better when you do. Once you develop some expertise composing family photos that you and your friends enjoy, you might consider starting a side photography business: Obtain a Digital Single-Lens Reflex (DSLR) camera. Learn how to use your camera in manual mode. Start with free videos which you may find online. Advance to online

courses. Then, consider attending an intensive (but fun) retreat to fine tune your skills. Obtain Lightroom in the Adobe suite and familiarize yourself with it. Pick a style of photos which you really like and focus on developing your skills, first with your own family and later with friends and extended family. Start with activities such as family photo shoots which can easily be rescheduled as you examine your photos and find areas which can be improved. Then graduate up to simple birthdays and barbeques in which your clients will be satisfied even if photos don’t come out as well as you might like. As your skills increase, take on activities in which your clients have higher expectations such as milestone birthdays and anniversaries. Appetizer: Asian Chicken Skewers Total Time: 1 hr 50 min | Yields: 6
Ingredients: - 1/4 cup cilantro leaves - 1/4 cup vegetable oil - 1 tbs. Asian hot chili sauce - 1 tbs. light brown sugar - 2 tsp. soy sauce
- 1 to 2 cloves garlic - One 2-inch chunk fresh ginger - 1 small onion, roughly chopped - Kosher salt - 1 lb. boneless, skinless chicken thighs, cut into twelve 4-in strips
Cooking Instructions: 1. Combine the cilantro, oil, chili sauce, sugar, soy sauce, garlic, ginger, onions and 1/2 teaspoon salt in a food processor or blender and process until smooth. 2. Drain the skewers and thread a piece of chicken onto each skewer. Place the skewers in a large nonreactive baking dish and rub with the marinade mixture. Cover and marinate in the refrigerator 1 to 2 hours. 3. Preheat a grill or grill pan over medium-high heat. Remove the skewers from the baking dish and discard the marinade. Cook the chicken, turning once, until well charred and cooked through, 4 to 6 minutes per side. Serve with your favorite dipping sauce.

1. For the sauce: Stir together the mayo, teriyaki sauce, honey and cayenne in a small bowl. Set aside.

Burgers: - 8 canned pineapple rings - 1 large red bell pepper, cut into rings - 1 1/2 pounds ground beef - Kosher salt and freshly ground black pepper - Teriyaki sauce, as needed - 4 slices provolone cheese - 2 tablespoons butter - 4 onion rolls, halved - 1/2 red onion, thinly sliced - Green lettuce leaves, for topping

2. For the burgers: Set a grill pan over mediumhigh heat (you can also use a skillet).
Total Time: 4 hours 10 minutes | Yields: 20 bars
3. Grill the pineapple and bell pepper rings until they have great grill marks on both sides (or brown them in the hot skillet), about 5 minutes.

4. Season the ground beef and form it into 4 equal-size patties. Cook them over medium heat on the grill for 4 to 5 minutes on the first side, then flip them over and add a splash of teriyaki sauce on top of each one. Place a slice of cheese on each patty and let it melt while the burger cooks through, about 4 minutes longer. 5. Butter a griddle or separate skillet set over medium heat. Place the rolls cut-side down and cook until brown, about a minute. 6. Spoon a little bit of the sauce on both sides of the rolls and allow it to soak into the bread. Place the patties on the bottom buns and top each with 2 pineapple slices and some red onion slices, bell pepper rings and lettuce. Top with the top buns and smush it all together. Serve with extra sauce for dipping.
Ingredients: - 1 c. (2 sticks) butter, softened - 1/2 c. granulated sugar - 2 1/2 c. all-purpose flour - 1/2 tsp. kosher salt
Filling: - 2 (8-oz.) blocks cream cheese - 1/2 c. granulated sugar - 1 large egg
- 1/4 c. sour cream - 1 tsp. pure vanilla extract - Juice of 1 lemon - 3 c. blueberries
Crumb Topping: - 1/2 c. (1 stick) melted butter - 1/3 c. granulated sugar - 1 c. all-purpose flour - Zest of 1 lemon
Directions: 1. Make crust: Preheat oven to 350° and grease a 9”-x-13” pan with cooking spray. In a large bowl using a hand mixer, beat butter and sugar together until light and fluffy. Add flour and salt, mix until combined.Press into prepared pan and bake until lightly golden, 20 minutes. Let cool while making filling and crumb topping. 2. Make filling: In another large bowl, beat cream cheese and sugar together until no lumps remain. Add egg and beat until combined, then beat in sour cream, vanilla, and lemon juice. Fold in blueberries. 3. Make crumb topping: In a small bowl, mix together melted butter, sugar, flour, and lemon zest until mixture resembles wet sand. 4. Pour filling into cooled crust, then top with an even layer of crumb topping. Bake until topping is golden and center is just set, 40 minutes. Hearthside House 6 7 7 G r e at R o ad , L i n c o l n , R h o d e I s l an d Looking to take a step back in time? Visit the Hearthside House in Lincoln, a historic federal-style house built by Stephen Hopkins Smith in 1810. Come visit a unique 2 1/2 story house with a gable roof and impressive ogee curves directly above beautiful circular attic windows. According to popular folklore, Smith, a Quaker, used his $40,000 lottery winnings (the equivalent of almost $800,000 today) to build a house to win over a young socialite from Providence. On a buggy ride along the Great Road, the young woman exclaimed, “Why, what a beautiful house, but who would ever want to live way out here in the wilderness?” Heartbroken, Smith brought the young lady back to Providence. He never married, lived in the house, or spoke of it again. The name of the house originated in the early 20th century when it was home to the nationally-renowned hand-weaving
business “The Hearthside Looms.” In 2001, a group of citizens formed “Friends of Hearthside”,” a nonprofit organization whose purpose is to serve as stewards of the house and help preserve the property. The Friends of Hearthside places high value on the enhancement and protection of the community’s quality of life. Hearthside is listed on the National Register of Historic Places, as well as the Great Road Historic District. To ensure preservation standards are properly followed in any restoration work, Friends of Hearthside works closely with the RI Historical Preservation Commission. Restoring and repairing this home is completed with great care for its historical integrity and preservation for future generations. Now an award-winning museum, Hearthside House is open between March and December for guided tours and historicallythemed events and exhibits. The majority of Hearthside’s collections are donations and loans, as the eleven different owners over the history of the house left behind no original furnishings. The house represents a rich and diverse history, telling the stories of the many different families who lived there over the past 200 years. Step into past decades and experience interpreters dressed in period attire, sounds from the Edison phonograph, the smell of bread baking, and the warmth of this enchanting home. Friends of Hearthside is celebrating its 20th anniversary in 2021! Come learn about the captivating stories about the families who called this beautiful place home.
