HEALTH & WELLBEING

It’s Wimbledon and for once, the weather is warm and dry so look fashionably chilled in cool summer whites. Instantly glam, we team with soft pastel green for a championshhip look. And don’t miss Spotted on the Street, where we check out your style.

Suddenly we all want to play tennis – it’s great for body and soul. If you’re thinking about giving it a go, dig out your whites and try your hand at an open day in Cheltenham

It’s going to be a scorcher with great music and weather for flip flops rather than traditional mud-soaked wellies. Cotswolds songstress Lily Allen will be on the famous Pyramid Stage on Friday, with Metallica on Saturday and Dolly Parton singing us out on Sunday.

Wimbledon

Andy Murray will be cheered on to Centre Court on Monday as he opens up the defence of his title. Seeded third and with new coach Amelie Mauresmo, can he do it again? Catch the coverage on BBC.

World Cup

Will it be tears or celebration? Keep your nerve as England play Costa Rica on Tuesday.

welcome W Who are we? Weekend magazine is published every Saturday by the Gloucester Citizen and Gloucestershire Echo newspapers, part of the Local World stable. Editor Tanya Gledhill Deputy Editor Lucy Parford lucy.parford@glosmedia.co.uk 01242 278065

Advertising Mandy Broady mandy.broady@glosmedia.co.uk 07825 724782

ELL, we asked and you told us . . . Mostly, you love the new format, the new features and the new design of your sparkling new Weekend magazine. What some of you didn’t love was the size of the TV listings. A few of you complained they were too small to read clearly. And because we take seriously all your feedback, we’ve been working this week to do something about it. We hope the solution we’ve come up with from p62 onwards meets with your approval. It’s been a busy week in the Weekend office. We’ve been talking to Jamie Oliver – he of the fabulous Jamie’s Italian in Cheltenham – about his latest protégés and plans for the brilliant Big Feastival at Alex James’ farm in Kingham. As well as cracking recipes for a family fish pie and barbecued chicken – cooked with a beer can stuck where it really shouldn’t – we’ve been sampling the shortcrust superstars at Plenty Pies in Woodchester. From salmon to Homity, squid and chorizo to Cotswold venison, they’re sold in the smartest shops the country over.

@WeekendGlos If you’re lucky, you’ll find them on the menu at a pub near you. We know you’re up to your shin pads in World Cup fever, but Wimbledon starts next week, and so we’ve asked this week’s contributors which side of the sporting fence they’re sitting on. And so not only do we delve into luxe looks for a day at Centre Court, our Jonny Whiley shows you budding Murrays and Robsons how to get into tennis in Gloucestershire this summer, as well as the best kit to buy. Wales & South West Hairdresser of the Year Scott Smurthwaite, who owns Cream in Cheltenham and Gloucester, opens the door to his amazing barn conversion in the Forest of Dean. And in our new property section, you’ll find houses to dream about – when you’ve won EuroMillions. Make the most of the longest day today, and enjoy the rest of the weekend, whatever you’re up to. This issue’s contributors were asked: World Cup or Wimbledon?

Jonny Whiley

Steve Wheeler

Helen Blow

Joyce Matthews

Mandy Bradshaw

Jonny wrote this week’s terrific tennis feature. “The World Cup has been brilliant so far but tennis has never been so exciting with a golden generation of players and the novelty of a British champion. “It’s a tough one but my vote goes to Wimbledon. “It’s my favourite two weeks of the year and “I’ll be sitting on Murray Mount with a glass of Pimm’s in the second week.”

Steve is Commercial Manager for Mise en Place, part of Creed Foodservice. He says: “I was lucky in the draw for Wimbledon this year so I’ll be at Centre Court on ladies’ final day. “I’ll be keeping one eye on who I’m likely to be watching at Wimbledon, and one eye on England’s progress in Brazil.”

Feature writer Helen stepped inside the country home of Cream hair salon owner Scott Smurthwaite for this week’s edition. A big tennis fan, it’s obvious where her loyalties lie; in fact she has tickets for Wimbledon semi-finals day. But she’s a bit of a dark horse. “I’ve drawn Chile in the office World Cup draw so I was delighted when they unexpectedly beat Spain this week,” she says.

“Definitely Wimbledon, fizz and strawberries for me,” says award-winning Weekend designer Joyce. “My 10-year-old self wanted to play tennis like Billy Jean King and practised hopelessly for hours – while himself is glued to the World Cup, barely moving off the sofa except to top up his coffee or wine . . .”

Gardening writer Mandy lives in Cheltenham with her husband and three children. When she’s not writing about glorious gardens for Weekend magazine, she’s busy tending her own plot. So is it to be World Cup or Wimbledon in the Bradshaw house this week? “Neither – I’m too busy for TV,” she says.

N a nondescript old warehouse in London’s trendy East End, there’s a secret army at work, cooking up a storm. Nile Street is Jamie Oliver HQ, from where the chef and his team of cooks mastermind his next move, or maybe not. “Everyone always seems to think there’s a massively strategic strategy,” saysJamie, laughing, “but generally, there isn’t.” It’s quite a task to count up the number of pies he currently has fingers in – there are his restaurants (37 Jamie’s Italians at last count, including one in Cheltenham, Fifteen, Barbecoa), his publishing empire (umpteen books and Jamie magazine), the Jamie At Home cookery range, his Fabulous Feasts catering business, his Fresh One production company and summer festival – The Big Feastival which he runs with Alex James at his Cotswold farm. This year’s foodie line-up includes Jamie cooking alongside other stars of the culinary world such as Mark Hix, Monica Galetti and Nathan Outlaw. He’ll no doubt sneak on to the music stage too for a jam session with Alex, in between acts such as Fatboy Slim, Jamie Cullum, Kelis and Laura Mvula. It sounds exhausting, but today, Jamie’s as fresh-faced as ever and has boundless energy. It’s reflected in his latest venture, Food Tube, a YouTube network dedicated to cooking videos; his organic, interactive alternative to normal food programmes. Since it launched last year, millions have watched clips – such as Jamie and Kevin Bacon going head to head in an ultimate bacon sandwich contest – and it’s made viral stars of his proteges, including DJ BBQ, Cupcake Jemma and Kerryann Dunlop, who have all now launched cookbooks under the banner ‘Jamie Oliver’s Food Tube Presents’. They’re currently all seated in comfy tan leather sofas on a floor of the warehouse that doubles as an office, complete with mood boards and a kitchen/studio for making Food Tube videos. “These guys smashed it,” says Jamie of why he picked the trio to have books published. “I thought, ‘June, July, barbecue, fantastic’. For comfort food on a budget, Kerryann’s just smashing it with the feedback from the audience, they really love her. And who could not love Jemma and cakes?” They make a motley crew: DJ

Beer Can Chicken Ingredients

(Serves 6) 1 x 1.7kg higher-welfare whole chicken 4 sprigs of fresh rosemary Olive oil Sea salt and freshly ground black pepper 1 x 330ml can of your favourite beer

Method Before you start, check if your barbecue lid fits over the chicken upright. If not, don’t worry, you can lay the bird out flat. Then set the bird aside to come up to room temperature. Meanwhile, set up your barbecue for the heat canyon technique (place the coals on opposite sides of the barbecue to make two heat walls. This will create sections of hot, direct heat on the sides, with an indirect, cooler area in the middle to ensure your meat gets consistent heat. Place a drip tray inside the middle of the barbecue. Cover with the lid and allow to heat up like an outdoor oven – you want a temperature of around 175C/345F.

Pick the leaves from two rosemary sprigs and bash in a pestle and mortar with a drizzle of oil and a good pinch of salt and pepper. Rub all over the chicken. Make sure the beer is at room temperature, then pour out two-thirds of it (or drink it!) and insert the remaining rosemary sprigs into the can. Now for the tricky bit – use both hands to pull the chicken’s rear apart and carefully manoeuvre it on to the beer can. If you’re laying the chicken flat, make sure you position the can so the hole is at the top to prevent the beer from spilling out. Place the bird upright on the middle of the barbecue, making sure the legs are pointing forward so it doesn’t topple over – a comical sight – and cover with the lid. Cook for around one hour 30 minutes, or until golden and cooked through, remembering to replenish with hot coals halfway, if needed. To check if it’s ready, pierce a thigh with a knife. If the juices run clear, it’s done. Remove the bird to a board to rest

Fish Pie Ingredients

(Serves 8) Bunch of fresh flatleaf parsley 1.2 litres whole milk ¼ of a medium onion, peeled 1 fresh bay leaf 4 black peppercorns 320g frozen white fish fillets 320g frozen salmon fillets 80g unsalted butter 80g plain flour Zest and juice from 1 unwaxed lemon 300g frozen peeled cooked prawns 300g frozen peas Sea salt and freshly

for 10 minutes, then carve and serve. Enjoy the juiciness . . . wow, this meal comes with reverb. TIP: Once the chicken is cooked and resting, put some sunglasses on her and upload the photos to Instagram – a bird sitting on a can of beer in glasses will definitely get you some likes. ■ Recipe fromThe BBQ Book by DJ BBQ.

pan over a medium heat with the milk, onion, bay leaf, peppercorns and fish fillets. Simmer gently for about 15 minutes, or until the fish is cooked through. Using a slotted spoon, remove the fish to a plate and leave to cool. Carefully strain the milk through a sieve into another pan and put to one side. Melt the butter in a pan over a medium heat, then whisk in the flour, until well combined. – you may not need to add all the milk, so stop when it’s looking good. Add the lemon zest and juice, then roughly chop and add the parsley leaves. Stir in the prawns and peas and add a pinch of salt and pepper. Flake the fish into a 25cm x 30cm baking dish, spoon over the sauce and top with the mash. Bake in the oven for about 25 minutes, or until golden and bubbling at the edges. My Healing Journey

Back in 2013 a guest speaker gave a talk on making money doing something you love. A man in the audience was asked why he thought it was that he was not working in his desired field, and he replied because it was horse healing and he couldn’t envisage how to make a living at it. Sitting next to him, a complete stranger, was a man looking for some help with his horses. Charlie’s Holles’ life changed from that day and demand for his work grew. His first book, My Healing Journey has just been published, and now he is going to be the one giving a talk to an Isbourne audience on October 13.

World-class Wimbledon gets under way next week. Time for JONATHAN WHILEY to brush up his tennis skills . . . .

P

ICK up a punnet of strawberries and a pot of cream, crack open the Pimm’s and dust off those whites that have been languishing in the wardrobe – Wimbledon is nearly upon us. Two weeks of fast and furious tennis await from Monday onwards and for once we have a British male champion to open proceedings on the green, green grass of home. But let’s be honest. They’ll be many of us that spend much of our time lounging on the sofa in the company of Sue Barker over the next fortnight without giving a second thought to soaking up the sunshine and taking to the court ourselves. Whether you’re a beginner or you’re looking to rekindle the passion you had for the game as a kid, now’s the chance to seize the day with East Glos Tennis Club, in Cheltenham, throwing open its doors

for an Open Day event next week. Beginners or those who haven’t picked up a racket for years are welcome to attend with the chance to experience everything tennis has to offer. I don’t fit into either bracket in truth – I’ve be playing since 11 but I’ve only ever had one coaching lesson – with 12-time Grand Slam winner Roy Emerson in the Swiss Alps. My second lesson finds me in the rather less spectacular surroundings of Old Bath Road in Cheltenham but with 28 floodlit courts across four different surfaces – clay, astroturf, grass and hard – there’s no doubting the impressive set of facilities. Simon Corbishley, tennis manager and coach at the club for 11 years, is tasked with perfecting my technique – an unenviable job – and we’re hitting on what must be one of the most immaculately grass courts of any club in the country.

First it’s volleys – an area where traditionally I’m more John McCririck than John McEnroe – and within minutes Simon has found my weakness. “You’re good when the ball is low but you’re struggling and hitting it long when it’s up high,” he says, moving my grip on the racket ever so slightly. Within minutes, making sure I keep my shoulder still through contact with the ball, I’m seeing the results with the ball peppering the baseline.

W

e move on to the serve – he readjusts my feet slightly – and we put the two together on a few serve and volleys. The grass is perfect and although I’m aware of moving like a lethargic cow on a meadow rather than Roger Federer on the hallowed turf of Wimbledon, the sun is shining and I’m enjoying myself. Footwork seems to be the key and Simon keeps on encouraging me to keep the racket out in front of me as we run through a few techniques.

@WeekendGlos

Although I’ve been playing for years and I’m at a reasonable standard he’s spotting and tweaking things in my game that hadn’t even occured to me – bad habits that have become second nature. “Keep that running line and adjust your grip depending on the ball,” he says, feeding me one ball after another to volley at the net. “On grass it’s important to keep your stance low as well and as you hit the ball maintain that, you’re a bit upright at the minute.” Sure enough when I put it all together; bending my knees a bit more, putting my racket out in front and adjusting my grip when needed, I make a perfect volley. With the sun out and the grass beneath my feet, I feel pretty smug. Inevitably, I net the next one. Simon, who lives in Bishop’s Cleeve, says that those attending the open day can look forward to “all things tennis”. “We’re doing some mini madness sessions for the younger children and for older players we’ve got a bit of cardio tennis,” he says. “It’s a chance to hit lots of tennis balls to music and it really doesn’t matter what your standard is for that either. “There’ll be lots of opportunities to hit with members. If you haven’t played for a while and you’re worried about not being too clever it doesn’t matter. “We’ll have members on hand that will take things steady and be very encouraging and we’ll get the ball machines out and there’ll be a chance to see who can serve 100mph, that

kind of thing. And finally we’re doing something called street tennis which is an innovation for us this year. “We want people to come along with someone from their street and have a go. “It will be small courts, small rackets, lightweight balls and you can come and play some double matches.” The 40-year-old hopes that those who come along will have a chance to experience “a slice of Wimbledon.” “One thing about the open day is that we’re hoping, weather permitting, to get a grass court open,” Simon says. “They are outstanding courts and they provide a great playing experience. “It’s bang in the middle of Wimbledon and if that happens it will be really exciting. “The idea of going on a grass court, to a lot of people, will be the highlight of their week and I think we’re in a lucky situation to offer that. “We’ve got to be on our game with what we’re offering and I think we are. “People have got so little time and so much pressure on that time. “We’d love someone to come down, have a great experience and then join up. I’d imagine there will be some offers on the day.” The free Open Day takes place next Saturday, June 28, from 11am to 3pm. For details, call 01242 230562. Today, from noon to 3pm, Whole Foods Market in Cheltenham is also teaming up with East Glos Tennis Club. Activities will include rally scores, hitting targets and also a beat the coach competition, with prizes to be won.

Marc Birch has been involved in a variety of businesses since leaving school but has really struck gold after following his dream to make gourmet pies. Sue Bradley discovers how his Woochester-produced Plenty! Pies are really getting noticed

F

ROM selling shoes to running a transport company and a pheasant shoot: Marc Birch’s career path has certainly been a diverse one. Yet throughout those years his love of cooking and, in particular, making pies has been a constant if not an obsession throughout this time, with the fatherof-two continuously striving to serve up creations offering perfect crispy pastry and delicious fillings. “Making pies is quite scientific,” explains Marc, who has lived in the Nailsworth area for more than 20 years. “I’ve spent a lot of time making sure that my pastry is the right thickness and the fillings are the right consistency so that the pies are perfect when they come out of the oven. “If the filling is too runny you’ll end up with soggy pastry and if you use too much you’ll blow the lids off. “Pies should be cooked so that they look appealing; they need to be a nice golden brown and they should be crispy. "One of the most recent things we’ve started to do is to add maize flour to make our pastry shorter and crunchier.” After years of praise from family and friends, Marc started thinking about taking his pie-making hobby a step further and didn’t have to wait long for word of his perfect pastry and tasty fillings to spread around Stroud and Nailsworth Farmers’ Markets. This positive reaction was enough to convince him to follow his dream and, three-and-a-half years on, Plenty! Pies is going from strength to strength with a steady growth in sales and, most recently, a gold medal and ‘class champion’ prize for his popular Breton Chicken Pie at the prestigious British @WeekendGlos

Pie Awards. The event, hosted by the Melton Mowbray Pork Pie Association, attracts thousands of entries every year. It was judged by a panel of 110 judges, including national food writers Charles Campion, Xanthe Clay and Felicity Cloake and TV chefs Andy Bates and Rachel Green. “We are thrilled to win such a fantastic accolade – it’s a tribute to our small team who care about the quality of each and every pie,” says Marc, who currently works alongside his wife, Kate, production manager Sophie Barnett and seven part-time staff at the Woodchesterbased bakery. Marc’s pies, available in a range of 150 seasonal fillings including squid and chorizo and Cotswold venison, are fast becoming a familiar sight in Gloucestershire; they’re sold at farmers’ markets in Stroud, Cirencester and Cheltenham, a number of delicatessens and farm shops and, more recently, the new M5 Services just outside Gloucester. Plenty! Pies can also be found at the Daylesford shop near Kingham and in its section of the London store Selfridges. Alongside the retail sales, more and more pubs are opting to give up the time-consuming task of making pies and instead proudly putting Marc’s creations on their menus. Among them is The Golden Cross in Cirencester, which is serving up Breton chicken, dimity, Cotswold venison, tartiflette, chicken and chorizo and slowcooked shin of beef flavours with mash and hearty gravy for lunchtime meals or weekend snacks. Plenty! Pies are also going down a storm at the recently-opened Hog in Horsley, along with the Green Dragon at Cockleford, the Fossebridge and the

25

Golden Heart near Birdlip. “Pubs are proving to be a really successful outlet for us,” says Kate. “Chefs have told us how they used to take pride in the fact they used to make their own pies, but that it would take a long time. “Some have even said how our pies are better than the ones they used to make.” Plenty! Pies uses locally-produced ingredients when possible, although, when all is said and done, Marc’s overriding criteria is that the individual elements of his pies are the best he can buy. “We like to support local businesses where possible: we use flour from Shipton Mill, near Tetbury, and a lot of our meat comes from Cam Catering Butchers and is sourced locally,” says Marc. “At the same time we get our chorizo from a Spanish importer because we regard it as the best and our free range chickens come from Devon.” Some people might regard Marc’s decision to start a business in the middle of a recession as risky, but the experienced businessman says it was the perfect time to launch Plenty! Pies. “I am a cautious businessman: I wouldn’t set up businesses if I didn’t think they would be a success,” Marc says. “I set up a successful transport business 22 years ago, during a recession, and then became involved in shoots and the hospitality that comes with them,” says Marc, who started his working life with the shoe chain Dolcis, at which he met Kate. “I started Plenty! Pies because I really wanted to do something with food: I love cooking.”

RESTAURANT REVIEW

RISOTTO

Ingredients

3 British shallots 1 clove of garlic 1tsp olive oil 75g of unsalted butter 250g good quality Arborio risotto rice 200ml of a good quality dry white wine 750ml of vegetable stock 8 British asparagus spears 150g Parmesan 1 lemon sea salt crystals Black pepper 2 tbsp of freshly-chopped chives 100ml of double cream

Method To make your risotto base, finely slice three shallots, crush and finely chop your garlic and add to a pan with the oil and butter. Allow to soften, then add your dry risotto rice and stir until the rice is coated in the butter. Add the wine to the rice and stir until it has been absorbed. In a separate pan heat the vegetable stock. When the rice has absorbed the wine add the stock a small ladle at a time, allowing it to absorb before adding the next ladle. Keep stirring the rice to stop the risotto from sticking and to make sure it cooks evenly. Continue to do this until you have used most of the vegetable stock. To finish the risotto, chop the asparagus into small pieces keeping the tips whole and add to the risotto. Add the remaining hot stock, stir together and allow to cook for five minutes. Then add the Parmesan, some freshly-squeezed lemon juice, a touch of sea salt and pepper. Add the chopped chives and the cream, serve straight away. www.british-asparagus.co.uk

The stylish interior of All Bar One in Cheltenham and below, Szechuan coated crispy calamari

he last time we tried to get into All Bar One in Cheltenham's Montpellier for a bite to eat it was so busy we had to abandon the idea. It wasn't even late, 5.30pm on a Friday night. Yes cocktail o'clock admittedly. Not wanting to be disappointed again, we decided to try a Tuesday night instead. Who would be queing up to get in there at tea time mid-week? Nowhere near as many people it turns out as we had the pick of the tables but there was still lots of atmosphere with several friends catching up. The bar is located in a great spot in Montpellier Walk overlooking Montpellier Gardens and is popular day to night. Since its refurb a few years ago it fits the young professionals market perfectly with effortlessly stylish decor including muted olive green walls and wooden tables, a sweeping staircase and bar, horse shoes mounted on one of the walls in keeping with race week and a huge framed blackboard featuring the menu. There are two spaces on the ground floor – one with the bar and high stools and a second which has long benches and lots of space to eat. We chose the latter as we were looking to order some food along with our drinks. We slid into a window seat looking out over Montpellier Street and instantly relaxed. The food is pretty laid-back too, starting with breakfast right through to steaks and burgers in the evening. There are lots of social sharing platters as well. We decided to skip starters and go for a selection of sharing plates instead (three for £14, five for £23) so our three-year-old daughter could tuck in too. If they want their own dish, there is a little ones menu available until 6pm featuring pizzettas, wok noodles and Tempura fish and chips. We ordered the houmous duo with

27

crystal bread, garlic mushrooms with toasted Lavash bread, halloumi skewers and confit cherry tomato and asparagus risotto. The houmous was an instant hit, one creamy and traditional and another version flavoured with paprika. It arrived in two mini saucepans which delighted our daughter. The short halloumi skewers were generous on chargrilled cheese and the mushrooms perfectly sauteed too, wonderful spread on the crispy bread. Even the risotto was a delightful, fresh little bowl of the classic spring dish. My husband, worried there wouldn't be enough tapas to go around, went for the Pad Thai (£8.50) which was a delicious plate of rice noodles, pak choi and sugar snap peas scattered with fresh chilli and crushed peanuts. It hit the spot. For dessert we wanted to try the Brookie and ice cream, a cross between a brownie and a cookie, but they'd sold out, so we went for the caramel cheesecake instead (£5). Our daughter tucked into the kids' favourite, vanilla ice cream (£1.95) and her eyes nearly popped out of her head when the waiter brought her a shot glass of Smarties as a treat. We also discovered on Tuesdays you can get four sharing plates and a bottle of wine for just £20 – I think Tuesday is going to become our new Saturday night. Lucy Parford Pictures: Kevin Fern

A summer of cider . . . celebrates... Stephen Wheeler, Commercial Manager for fruit, vegetables and speciality under the Mise en Place brand at Cheltenhambased Creed Foodservice, shares his market knowledge of seasonal produce June sees the arrival of a number of English-grown vegetables and salad produce, all of which boast a splash of colour and texture to light and flavoursome summer dishes. Worcestershire broad beans are a versatile ingredient for a variety of dishes, from salads and pastas, to pesto-style dips. Not only do they brighten the plate, but add texture too. Grown in Lincolnshire, English broccoli is at its best and can add crunch to Asian-style stir fry dishes, as well as a richness to quiches. English-grown lettuce favourites Iceberg and Cos are now plentiful and are essential in salads, burgers and baguettes this summer. To make the most of June’s English salad produce, serve with red or golden baby bunched beetroots and English bunched carrots, for a colourful plate. Dessert lovers can enjoy a wonderfully sharp treat as English gooseberries grace our menus, while those with a sweeter tooth can enjoy English raspberries – perfect with ice cream, meringue, yoghurt or white chocolate. Imported fruits such asTurkish black figs and Spanish apricots are a welcome addition to the shelves in the fruit aisles. Poached pears in cider with cinnamon and cider brandy ice cream by TV presenter Ade Edmonson Ingredients For the ice cream: 500ml full-fat milk 3 cinnamon sticks 3 cloves 6 egg yolks 185g icing sugar 150ml double cream 2 tbsp cider brandy For the pears: 4 large ‘firm but ripe’ pears Juice of one lemon 1 bottle of Gloucester-brewed Merrydown medium cider 75g honey 50g caster sugar Zest of one lemon Star anise Nutmeg White pepper 1 vanilla pod

Method Ice cream is basically frozen custard. So if you’ve made custard before, then it’s easy, if you haven’t, here’s how I do it: Give the cinnamon sticks a good bashing with a pestle and mortar. Pour the milk into a pan and add the cinnamon and cloves. Bring to the boil then take off the heat and leave to infuse for 10 minutes. In another pan mix together six egg yolks and the icing sugar. Whisk together until the mixture is smooth and creamy. Strain the infused milk and gradually whisk it into the egg and sugar mixture. Keep it on a very low heat and keep on whisking patiently for 8-10 minutes until the mixture thickens. It’s thick enough when it coats the back of a wooden spoon. Pour the mixture into an ice cream maker and set it going. Whip the cream until you get soft peaks. After 25 minutes add the cream and the cider brandy. When the machine has finished, transfer the ice cream to the freezer. For the pears Peel the pears, leaving the stalks on, but taking care to peel all the way up to the stalks. Slice the bottom off each pear so that they can stand upright without falling over. Brush the pears with lemon juice to stop them discolouring and leave them to one side. Put the pear peelings in the pan and add the honey, caster sugar, lemon zest, a star anise, a pinch of nutmeg and a little white pepper. Slit the vanilla pod down its length, scrape out the seeds and put them and the pod into the pan as well, with the bottle of Merrydown medium cider. Bring to the boil then simmer for 10 minutes. Add the pears, making sure they are covered with the liquid – hold them down into the liquid/vapours either with the circle of baking parchment or a smaller pan lid. Simmer the pears for 20 minutes, then remove them to a bowl, cover the bowl in cling film and leave it in the fridge to cool. Meanwhile reduce the sauce until you have a delicious syrup. Strain the syrup. To serve, pour a little of the syrup into a shallow dish, then place a pear, standing proud and upright, bang in the middle. Add a scoop of the cinnamon and cider brandy ice cream, and you’re ready.

Pretty in pink Stunning roses and immaculate topiary surround a romantic Bisley house with incredible views

The wild types of these tall beauties, Digitalis purpurea, with tall spires of bell-shaped flowers, pop up all over the place, from the edge of farmers’ fields to overgrown railway sidings, but foxgloves can also look great in shady spots in informal mixed borders and cottage gardens. Most are biennials, that is, they need two years to bloom and then die in the autumn. But if they like their surroundings they’ll reseed prolifically.

HEN you walk into the home of awardwinning hairdresser Scott Smurthwaite, the first thing that strikes you are the animals. From Quintius, the enormous Bullmastiff who greets you slightly disconcertingly as you arrive, to the flock of pretty Jacob sheep in the field out back, to Cecil the Western Hognose snake who lives in an antique cabinet in the snug, there are beasts at every turn. But that’s Scott all over. Ever since he was a young boy growing up in Gloucester he has been fascinated by animals in all their forms. “I used to spend hours playing in the countryside and I was obsessed with animals,” he said He now spends his time running his two Cream salons in Gloucester and Cheltenham and chalking up successes in top hairdressing competitions, but he is still a country boy at heart. Indeed he bought his home near Westbury-on-Severn – a small farm with 230-year-old converted barn – because of the land that came along with it. He now keeps pigs and chickens as well as the sheep on the family’s four acres, along with three dogs, the snake and a pool full of Koi carp in the garden. “We moved here from Tibberton about nine years ago when we had Ned, our eldest son, because we needed more @WeekendGlos

Quintessentially Cotswold Ampney Knowle; right, the airy kitchen, below, the elegant sitting room

COTSWOLDS model and bikini entrepreneur Liz Hurley is selling her beloved Gloucestershire farmhouse. She’s moving to Donnington Hall, the country pile near Ledbury she bought with former fiance Shane Warne. The eight-bedroom, five-bathroom Cotswold stone house, near Barnsley, she bought in 2003, is on the market with Knight Frank in Cirencester for a cool £6 million. For that, you get almost 60 acres – and you can buy her bluebell wood and pasture seperately. Below, the sitting room; right, the pretty entrance porch

room,” said Scott, 44, who shares the barn with wife, Sarah, Ned, nine, and younger son, Jesse, seven. “I needed to be close to my salons but I also wanted to be in the countryside with a decent amount of land, so this area seemed like our best bet. “I like being here because I have such a busy life at work, talking with clients and running the business, and I like to get away from it all when I come back home.” Scott started Cream 15 years ago in a small salon above a shop in Gloucester and now employs more than 40 staff across the two salons. Born and brought up in Gloucester, Scott is now recognised as one of the top regional hairdressers in the country. When he and Sarah bought the barn it had been owned by a businessman who had modernised it at great expense but never really lived in it. “It was very flamboyant and had a brand new Italian marble kitchen among other things, but it wasn’t our style so we gutted the place and really turned it back into a traditional country barn again,” said Scott, who grew up in Tuffley. Scott and Sarah have used reclaimed oak beams and bricks to create a cosy kitchen, complete with a range cooker and large oak table dominating the room. They also extended the space to give them more room for their growing family and for Scott’s ever-growing collection of memorabilia which includes items from his rather unusual collection of taxidermy. These include a kestrel displayed in a cabinet in the upstairs hallway, which Scott found dead in the field and brought home to be stuffed. “It was such a beautiful bird it seemed a shame to leave it there,” he said. Another item is a stuffed mole which his wife bought him for his birthday one year and a pike that is over 100 years old, which he discovered in an antiques shop. Taxidermy vies for space on the walls with Scott’s collection of art, ranging from watercolours to prints and sketchings. Most of the pieces include animals in one form or another. “I like to collect art and old things, it is a hobby of mine,” he says. “I also have a collection of brass items, including several hunting horns.” The barn is long and thin, with each room leading on from the next and separated by areas that the couple have made into places of interest rather than just being another hallway. Leading on from the kitchen is the snug, where Cecil the snake lives, surrounded by antique furniture, comfy wingback chairs and large windows which lead out on to the patio, with the garden and fields beyond. room for the boys,” he said. One of the two fields is given over to a flock of Jacob sheep, although Scott rotates them to keep the grass down. There are also enclosures for the grumpy Tamworth sow and the collection of chickens, which provide the family with enough eggs to eat and sell. They also have an area given over to an allotment, which produces fresh vegetables for the family. He has also created a wild area where the boys can study nature, as well as a play area with a climbing frame. “I created a cricket pitch in the field for them, where they could play with their friends,” he said. Next to the allotment is the huge pool of Koi carp,

lined with old Bath stone. The pool is kept aerated by an old French antique water pump, which shoots out water. Sharing the outside space with Quintius are Jack Russell Lula and a cocker spaniel, Fig, all who keep the family healthy with long walks in the countryside. “We plan to stay here for the foreseeable future, although I think Sarah would prefer to be closer to the centre of things,” said Scott. “I like being in the middle of nowhere and would have preferred a really remote location, but Sarah wanted to be in a village, which is why we chose this barn. “It’s the ideal place for me to forget about work and get back to the countryside and my animals.”

Clockwise from above, Rookwoods is famous for its roses; head gardener Owen Vaughan, the quintessentially English house

T

HE anticipation of visiting a favourite garden after a gap of some years is always tempered with a nagging doubt. Will the years have treated it kindly; is the memory of its past glory reliable? That there will have been changes is inevitable: gardens unlike most art forms are living creations and never stand still. What is important is that in the midst of change the spirit of the garden is preserved. Driving up to Rookwoods it seemed at first as though little had altered. The gravel drive swept around in front of the beautiful Cotswold stone house, which was cocooned in a

mass of greenery and ended at a row of weeping pears, giving an elegant full stop to the approach. Roses were beginning to bloom in the borders and the air was heavy with the scent of philadelphus. Yet, closer inspection reveals that the garden near Bisley is showing signs of age, rather like an old friend that has let herself go. Thugs have been allowed to colonise borders, some of the trees are reaching the end of their life and there is an air of tiredness in parts of the planting. It’s a situation about which owners Des and Rosemary Althorp are perfectly aware and plans to rejuvenate the almost three-acre garden are already

well under way under the leadership of head gardener Owen Vaughan. Owen, who arrived at Rookwoods last September, recognises the task he faces: “It’s been a well-loved garden for some time. I’ve got to return it to what it once was.” Sensibly, he’s spending the first year tackling the urgent jobs but essentially watching the seasons unfold and getting the feel of the garden before making any drastic changes. “It’s the first year I will have seen it flowering so it’s as much of a surprise to me as for the visitors.” Among his first tasks were pruning the roses; the garden has around 150 different varieties ranging

from shrubs and hybrid teas to ramblers and climbers. Many had become congested over the years and bringing them back under control has been a long process with a handful still to be tackled. “Fortunately I love pruning roses,” says Owen. It’s easy to spot the borders that have been dealt with. Against one of the lovely outbuildings shrubs that narrowed the drive have been cut back or removed, a gnarled old pear has been freed from choking ivy and a stunning pale lemon rose, ‘Leverkusen’, now rises up out of a mass of soft white with artemisia, Cerastium tomentosum, or Snowin-summer, cistus and daisies punctuated

One of England’s most romantic gardens is getting a makeover, Mandy Bradshaw discovers

romance blooms gardening by mauve Jacob’s ladder, Polemwonium caeruleum. Nearby, another border of shrubs was considered beyond salvage and has been replaced by a new planting of cistus, thalictrum, roses, tree lupins and wisteria. It’s a combination that echoes the very best of Rookwoods as I remember it from years ago: masses of roses, their skirts lifted high by wooden frames and their ugly legs hidden by swathes of herbaceous in pastel shades, all given definition by carefully clipped box. It is the box that presents possibly the biggest challenge. Blight has hit the garden hard and many of the hedges are probably beyond salvage.

Owen is investigating alternatives, including yew for the bigger pieces of topiary, and considering attempting pruning to restore some plants. The loss of the box, particularly at the front of the house where it pins back borders of alliums, peonies, lilies and roses, would be a hard blow. “You can’t imagine a Cotswold garden without box in it.” Other changes have been forced by time: the old cedar near the house had to be felled and the ‘light bulb’ pruned apple trees nearby are also past their best. Removing them would give an opportunity to rethink that area of the garden.

“It gives us potential and possibilities,” says Owen, who manages the garden with one part-timer. “It’s incredibly exciting.” What has not changed is the essence of Rookwoods. Its seclusion and envy inducing views make it one of the most romantic Cotswold gardens and, though its beauty may have temporarily faded a little, it is still a delight to visit. And it’s Owen’s enthusiasm that will carry Rookwoods on. Already he has started to revamp the vegetable garden, is clearing algae from the wildlife lake and has plans for new planting around

Stinton vase steals the show

Italian terracotta group by Bartolomeo Pinelli

Top price for three

Italians A

RARE 19th century Italian terracotta figure group by the artist Bartolomeo Pinelli sold for £9,500 at a Cotswolds auction – smashing its £1,000-£1,500 estimate. The 35cm-wide, hand-potted piece, depicting three women arm-in-arm on an oval base inscribed Pinelli F Roma 1833, came up for sale at Moore Allen & Innocent in Cirencester. The hammer price set the tone for the day, where a 19th century Maori jade hei-tiki – an ornamental pendant – sold for £5,800, thought to be the most paid for a hei-tiki at auction in recent years. Despite some damage to the fertility symbol, collectors were enthusiastic about the piece because it was still attached to its bone toggle. In the jewellery section, an 18 carat gold Rolex Oyster wristwatch fetched £3,100, while an 18 carat white gold three stone diamond ring made £2,800. A carved figure of a bird

@WeekendGlos

perched upon a rock within a French 18 carat gold and enamel decorated mount in the manner of Fabergé sold for £2,200. A four-metre wide part silk Ispahan carpet, with the central panel in a starburst motif, sold for £2,500. The furniture section was dominated by a large collection of Arts & Crafts pieces by the designer Fred Gardiner – an apprentice to Ernest Gimson, one of the leading practitioners of the Arts and Crafts Revival. The 14 pieces for furniture were made for Mr and Mrs Cecil Young as wedding presents in the late 1940s, and together the suite achieved £16,580. The best individual results included an oak sideboard for £2,200 and a walnut bedroom cabinet for the same amount. Two wardrobes sold for £1,700 each, while an oak side table fetched £1,400, and a walnut side table and a bedstead made £1,300 each.

A STUNNING hand-painted vase by J Stinton has sold for an impressive £800. The Royal Worcester vase, which is decorated with images of Highland cattle, stole the show at Severn Stoke Village Hall, Pershore. The sale, by Griffiths & Charles, saw a number of interesting bids. Two wooden church pews were sold for £170 and £90 respectively, and other furniture including an antique diskette made £120. Porcelain and pottery were popular with Royal Worcester Evesham Ware reaching good prices. One of the most interesting lots was a Clarice Cliff Bizarre Range blue chintz biscuit barrel from the 1930s, which made £120. Gold jewellery still commands reasonably high prices and two 9ct gold watch chains made £410.

James Patterson and Marshall Karp return with a gripping second helping of the crime-fighting adventures of detectives Kylie MacDonald and Zach Jordan. The duo are on-hand to tackle sensitive cases that involve the rich, powerful, and often famous, members of New York’s society. When a body is found spinning on a carousel at the heart of Central Park, dressed in a Hazmat suit, it is discovered that the female victim is not only a high-influence political operator with vast political connections and wealth but she is also the fourth victim of a serial killer.

Translator Iona Kirkpatrick has been given a pile of seemingly unimportant letters and diaries by a publisher. They belong to a pair of lovers: exiled punk musician Kublai Jian, who is in a detention centre in Dover, and his girlfriend Deng Mu, a poet, who is desperately trying to track him down. Gradually, Iona unravels their story, from their first meeting at Beijing University in 1989 to the pro-democracy Jasmine Revolution of 2011. She is captivated by their story, but the lovers seem to be drifting apart. Iona wants to reunite them, but time is against her.

Maud has forgotten something. The problem is she isn’t sure what. She isn’t sure why her daughter sighs at her so often, why she has bruises up her arm or why her cupboard is so full of tinned peaches. As age fogs her mind, the details of Maud’s life because frustratingly hazy and unsettled. However one memory remains, the most upsetting of them all: Elizabeth is missing. Emma Healey’s debut novel masterfully alternates between hilarity and heartbreak, giving us a poignant insight into the mind of a person suffering from this most confusing of illnesses.

X Factor runner-up Rebecca Ferguson tells Helen Blow that she’s embracing motherhood

T

HERE are more strings to Rebecca Ferguson’s bow than her soulful voice that so captivated X Factor audiences almost four years ago. With a new album on the drawing board and her beauty salon doing well, the Liverpudlian singing star has now started a series of children’s books. And if that wasn’t enough, she’s also unexpectedly three months’ pregnant with her third child and trying to work out how she’s going to fit everything in around that. “It was a surprise,” says Rebecca, 27, already mother to Lillie May, nine, and Karl, eight. “I’ve had to plan my year, something I wouldn’t normally do.” Within that plan is an appearance at a Forest Live concert at Westonbirt Arboretum tomorrow, when she will be playing al fresco to a host of fans, surrounded by trees. “I’m looking forward to it and hopefully the weather will be good. I’ve played a similar venue before so I know what it’s like and I enjoy it.” After wowing the likes of Simon Cowell and mentor Cheryl Cole on The X Factor in 2010, Rebecca went on to record her first album, Heaven, released a year later. The album, a mix of soul, pop and blues and co-written by Rebecca, was praised by critics and heralded her as a new star in the musical firmament. The following year Freedom came out. “It was quite a different sound for me, a bit poppier, but it was good because it showed a different element of my music,” she said. Meanwhile she’s got her third album to work on, which she will be doing over a

period of 10 days in Los Angeles later this month. Since announcing her pregnancy after collapsing while performing live on daytime TV show Loose Women, Rebecca has completed the first of her children’s books and is hoping they will be published before long. “Being pregnant again though has made me realise how much I love being a mum and it has also opened my eyes to different ventures,” she said. “I’ve just finished writing them and I’m hoping to get them published this year. “I’ve been working on them for a few years, even before I went on to The X Factor and I’ve really enjoyed writing them. “What happened was that me and the kids used to make up funny stories and I thought I would write them down so we could read them together. “I remember story books being a bit of a chore when I was young but these are just jokey and fun.” Rebecca admits her life has changed beyond recognition since X Factor but has managed to stay grounded. “I do work hard but I also try to be there for my kids whenever I can; that’s really important and family life to me is really important.” She is also the epitome of modesty when compared with the likes of such musical legends as Aretha Franklin. “I used to find it really strange and push it away but now I accept the compliments but I do not think I am there yet,” she says. Tickets for her gig at Westonbirt tomorrow night cost £36.30. Call 03000 680400 or buy on the night.

Between Night and Day, Lorfords, Tetbury AWARD-winning contemporary artist Dan Llywelyn Hall is exhibiting 45 of his dynamic new works in Tetbury this month. The collection, Between Night and Day, features watercolours, drawings and oil paintings. The vibrant, modern paintings promise to be quite a contrast among the antiques and decorative works typically found at the antique dealers Lorfords. Travel is a big part of Dan’s work with reference to how travellers absorb different aspects of cultures both at home and abroad. His recent travels have taken him to Iraq, France, Crete, Turkey and the Canaries. “It’s always a great insight into humanity when you witness tourists pass by a place of great cultural significance,” he says. “Very few really stop to look and think meaningfully about what it is that they are witnessing.” The exhibition runs until July 5 with entry from 9.30am to 5.30pm from Monday to Friday and 10am to 1pm on Saturday. Entry is free.

watch OUT FOR Under Milk Wood

EVERYMANTHEATRE, CHELTENHAM

OWENTeale – best known for his role as AlliserThorne in blockbuster HBO series Game ofThrones – stars in an adaptation of Under Milk Wood. First written by Welsh poet DylanThomas as a radio drama, it is considered by many to be one of the greatest plays of its kind. Both a play and a poem, it offers an unforgettable journey into the roots of language and the soul of Wales. This new production, directed byTerry Hands, marks the centenary of the poet’s birth in 1914 and the 60th anniversary of the play’s British première. Owen is co-producer on the project and First Voice (the narrator) and the play gives him a chance to show

the lighter side of the actor’s repertoire. “Under Milk Wood is much closer to home,” he says. “To play AlliserThorne I had to strip any sense of humanity and humour from the role. “I love DylanThomas, I grew up with his words,” he said. He speaks fondly of the production and has strong faith in the show. “It’s like attending a party,” he said. “A party you’re going to be glad to be invited to, when it comes to the end you’ll be sad to have to leave”. Under Milk Wood is at Cheltenham’s Everyman Theatre fromTuesday until Saturday. Performances take place at 7.45pm. Tickets cost from £14 to £26. Call 01242 572573.

¹QDO word COLUMNIST SALI GREEN

I

’VE heard the phrase ‘Guns don’t kill people: people kill people’ and it’s ridiculous. Guns DO kill people. And if someone is out of control and goes into a classroom of children and starts shooting, he (it’s generally a he) will mow down a lot more people a great deal faster with a firearm. If he was in possession of a knife there would be a high chance someone could disarm him before he’s managed to shoot the whole class. I know knives, and cars, and dogs, and a multitude of things kill people as well as guns, but it’s a fact that guns do the job quicker and en masse. As you know, firearms are tightly controlled by law in this country, and we can be proud of that. Eighteen years ago after a brutal killing spree Australia too had a moment of national unity and with overwhelming public support brought in a public health policy that has saved lives. A third of the guns in Australia were handed in to the government in 1996/97 in a buyback scheme. Polls found that as much as 90 per cent of the public approved of the stricter gun laws. There had been 11 gun massacres in the decade preceding 1996, but there have been no mass shootings since and a 65 per cent decline in firearm suicides. This is a source of national pride for the Australians: ‘A nation founded by convicts gave back their guns.’ – Julia Baird, Sydney journalist . Australians have been warned to think twice before travelling to the United States because they are ‘15 times more likely to be shot dead’. There is a gun for almost every American. I know there are a lot of grey areas/‘genuine reasons’ to own a gun and all that, but we can’t argue with the results that stricter gun laws clearly show Down Under, and nor can the USA, so why do they not want to follow suit? It’s been estimated that if the United States had a buyback of similar proportions, about 90 million fewer guns would be

circulating. And then there’s South Africa. The current case of paralympian Oscar Pistorious on trial for allegedly shooting his girlfriend, for example. Oh and do you think a black man over there accused of the same thing would have been given such a fair and detailed trial? Don’t even get me started on that. Gun killings are futile and horrendous. They are happening to children in classrooms that should be completely safe and carefree. They are happening to teachers who devote their lives to helping these kids grow and learn. I know we have plenty of our own issues and we are far from perfect, but I wish America would wake up, man up, and do something.

my ideal

What will you eat? Will you go out or stay in? We like to cook, so a mixture of the two, but nothing beats Dave’s Sunday roast.

Where would you go?

I love popping to places like Bourton-on-the-Water.

WEEKEND...

What time will you get up and go to bed?

I like to make the most of a day off so up about 9am and bed probably 1am.

How often do you get to experience your ideal weekend?

Sadly not that often as my work usually falls on a weekend, but when I do get the time I always try to fit in as much of the above as possible.

MISSY MALONE

Malone’s Vintage will be at the Vintage & Craft Fair at Blackfriars Priory, Gloucester, today from 11am-5pm. Entry is £1, children free.

BURLESQUEARTIST What will you do?

My ideal weekend would start with a pot of tea and eggs Benedict. Saturday would be spent wandering around a little local town or village that I haven’t visited before – I love exploring new places. Then a lovely steak dinner at Grid Iron in Cheltenham, rounded off with drinks with friends, perhaps at a gig or cabaret show. Sunday would start bright and early with a good rummage at a car boot sale, flea market or vintage fair, then a lazy Sunday lunch with all the trimmings and finished off curled up in front of a movie at home.

Who will you spend it with?

I would spend it with my fiance, Dave, with a few friends thrown in for good measure.

What will you read?

I will read Weekend magazine, of course, while enjoying breakfast.

What will you listen to?

My home and life is filled with music. I love vintage sounds and classic rock and roll. If I’m chilling at home I’ll play something like CW Stoneking and in the car we always blast something like AD/DC. If we were to go to a gig, my choice would be some fun rockabilly like Rev Horton Heat.

Will you watch TV and if so, what?

Dave and I love the Walking Dead series. I also have a huge obsession with these terrible antiques and Storage Hunters programmes. @WeekendGlos
