They’re Putting on the Spritz

Italian-themed destination excels at liquid refreshments

It’s a time-honored tradition among Vegas visitors to promenade along the Strip. Depending on the direction, a walkabout can lead to discoveries that may not have been on the original travel itinerary and can take an epicurean turn. Should the route pass in front of Park MGM, the opportunity to explore Eataly Las Vegas awaits just inside the resort’s entrance next to Dolby Live.

A hard left leads to Eataly Bar, the newest addition to the Italian-style mercado inside the smokeless casino-resort. Advertised as being “where the spirit of the Amalfi Coast meets Las Vegas,” the horseshoe-shaped Eataly Bar specializes in spritzes and serves up an eye-opening espresso martini.

“Definitely, spritzes are one of the very famous Italian cocktails,” says Italian-born Luca Esposito, general manager of Eataly Las Vegas. “We do love our classics, but we work on getting creative as well. Our team is committed to come up with multiple options to make sure we can meet all different tastes.”

Options abound at Eataly Las Vegas, from fine dining at Toscana Ristorante & Bar by Eataly to the counters of La Cucina del Mercato. Eataly Bar completes a trio of bars including upscale Gran Caffè Milano and stylish L’Apertivo,

but it specializes in pizza al padellino. The crispy edges and soft, airy center can accommodate a variety of toppings such as thin, tantalizing slices of potato. (Trust us, you’ll want to try this!)

Eataly Bar’s menu offers 10 types of spritzes to meet the demand of fizzydrink aficionados. “They’re definitely loving it,” says Esposito. “I think the most common spritz that people know of is the traditional Aperol spritz. We add different ways to discover it.”

There are different ways to discover wine while visiting Eataly as well. “Each of our restaurants is designed to provide a different wine experience,” says Esposito, citing Toscana’s beverage program as being recognized with awards from Wine Spectator magazine two years in a row.

So vino served while watching dinner prepared at Chef’s Table contrasts with the presentation at La Pizza & La Pasta, where Italian cuisine is paired with 9-ounce wine carafes through March 30 during its Restaurant Fest. Eataly Las Vegas celebrates Italian cuisine year-round, though, and elevates dessert to a heavenly level. Don’t forget to take the cannoli. –Matt Kelemen

The Past Is Present

Celebrity entrepreneur’s newest Las Vegas outpost pays homage to its legendary host property in serious style

The Vanderpump clan’s first two Vegas venues were great ideas that raised the bar for hospitality on the Strip, but Pinky’s by Vanderpump feels … different, almost like it was destined to be. Opened in December 2024 at Flamingo with 32 bar seats, 166 table seats and dessert drinks garnished with Flamingo cookies, Pinky’s immediately felt integral to its property. Adult flamingos are usually shades of pink, and if anyone can incorporate pink and flamingos into a design concept that pays homage to the legacy of the historical hotel, it’s Lisa Vanderpump (whose nickname is “Pinky”).

A big part of that is the drink menu. Pinky’s is a mix of guests with table reservations and people traversing the Strip who happen upon the establishment and are drawn in by its socially friendly environment and classic décor. But what keeps everyone there are the enticing drink selections.

“The Less Depresso, More Espresso has just taken off,” said Ryan Kelly, Flamingo’s director of beverage, of the martini with the pour-over presentation that piques the curiosity of onlookers. Other favorites are the Jailbird, presented

in a brass birdcage, and the Pinky’s Pumptini, the gold flake-garnished variation on the martini featured on Vanderpump Rules

“This was all a collaboration with Pandora, who is Lisa’s daughter,” said Kelly. “She’s amazing and extremely talented, and she helps with every piece of the food and beverage menu. It was months. It was phone calls, it was Zooms, text messages, ideas, different glassware choices. Every one of our drinks is served in a different glass.”

The effort paid off, as anyone who has perused the drink menu can attest. There is some crossover with the Paris Las Vegas and Caesars venues (Vanderpump à Paris and Vanderpump Cocktail Garden, respectively), but most of the drinks are unique to Pinky’s.

“I think Lisa Vanderpump and (designer) Nick Alain really leaned into that,” said Kelly of Flamingo’s long, storied history. “Lisa always describes it as wanting to step back into time. I think once you walk in that door and cross that threshold, you truly do feel like you’re back 70 or 80 years ago.” –Matt Kelemen

A Very Special Treat

Speakeasy inside food hall serves some of the best cocktails in the city

It’s the purrfect hidden retreat for an adventure in cocktailing. Here Kitty Kitty Vice Den is kinda like a kitty—sometimes it’s impossible to find it. The bar and lounge really is hidden, and we’ll tell you how to find it. Just look for the Fuhu Cha Chaan Teng food stall inside Famous Foods Street Eats; you’ll see that one wall seems to open and close beginning around 5 p.m. every evening.

Inside this space, a team of top mixologists whip up unique specialty cocktails

like the punch bowl-sized Jerry Thomas Brandy Punch, pictured, made with Hennessy V.S, Grand Marnier, aged rum, hibiscus and grenadine.

Don’t sleep on the Bartender’s Choice cocktail. You’ll be asked questions based on your drinking likes and dislikes, but also the types of foods you like, scents you enjoy and movies you love, all leading to a cocktail that is uniquely yours.

The atmosphere and décor are reminiscent of a cool speakeasy one would

find tucked away in the night markets of Beijing. But be forewarned: This is a small, small space, which makes it even more of an experience, because you’ll feel as if you’ve been let into a special secret. Need advice on wine? The experts are here to help

Need help in choosing the right wine when dining out at that fancy Strip restaurant? No problem! Las Vegas Magazine ’s Ken Miller enlisted the aid of two of the Strip’s top wine experts, Dylan Amos, wine director at Delmonico Steakhouse at The Venetian, and Louis Hamilton , sommelier at Emeril’s New Orleans Fish House at MGM Grand, to answer some burning questions wine newbies might have. Have fun—and drink responsibly!

What are the best red and best white recommendations for wine newbies?

Hamilton: Chardonnay is a great white to start with as it’s not overly assertive and usually has a hint of oak, which imbibes a hint of brown spices. Pinot noir from California or Burgundy is wonderful as a first red wine because the tannin levels are usually more aligned with being smoother and elegant.

Amos: For both of these, I’m suggesting wines that won’t break the bank but are serious as well. Try the delightful white blend from Albert Boxler Edelzwicker Réserve. Crafted from grand cru pinot gris and riesling (and a few other grapes), this white from Alsace is balanced, bright and yummy. It’s

approachable for the newbie and has the sophistication for your more experienced friends. You really can’t beat Oregon for quality at all price points. Failla Willamette Valley pinot noir is bursting with red fruits and subtle spices and florals with a soft, easygoing finish.

What wine should you pair with steak?

Hamilton: A full-bodied syrah from Cornas or Walla Walla is a perfect steak pairing due to its bold structure, dark berry fruit and signature white pepper notes. Both wines have the acidity and spice to enhance the steak’s richness while balancing its char and seasoning.

Amos: At Delmonico, our go-to wine to pair with all of our steaks is the 2020 Chateau Palmer Alter Ego. The quality of tannin matches our seasoning, the minerality pairs with the dry aging, and the elegance and structure match our A5 Japanese wagyu. It’s a win/win all around.

Wine varies so much in price. What’s a great cheap, mid-price and expensive wine?

Hamilton: For an inexpensive wine, try Côtes du Rhône or Gamay Beaujo-

lais. For a mid-price wine, I like to venture into Spanish Priorat and Rhônestyle blends from Paso Robles. For an expensive wine, try 1er cru Burgundy (I like Volnay and Chambertin) or older Super Tuscan wines from Italy.

Amos: For an inexpensive wine, Portuguese whites. The bang for your buck in this category is unbelievable. We work with Luis Seabra Xisto Ilimitado, and it drinks like it costs two to three times its price. For a mid-price wine, we work with a Napa Valley cabernet called Band of Vintners. It’s masterminded by master sommelier Desmond Echavarrie and fills a gap that has been abandoned—a quality Napa cabernet that can be drunk every day. For an expensive wine, Bartolo Mascarello Barolo. An old-school stalwart that believes in blending to make the best wine every year. A masterclass in winemaking with unbelievable quality and aging potential.

Other than your respective restaurants, what are some hot spots on the Strip for wine?

Hamilton: We enjoy La Cave at Wynn for its ambience and amazing selections. Also, Hugo’s Cellar offers a taste of old Vegas flair inside Four Queens.

Tour the valley and try these no-alcohol sips

We know you came to Vegas to frolic down the Strip, spending your days (and nights) imbibing, gaming and sightseeing. But while you’re here, why not explore further, taking a tour of the Valley’s hottest hubs and their yummiest bevs? All nonalcoholic of course—that way, you can drive yourself all over town!

Start your journey at Fine Company in Downtown Summerlin, which is a convenient stop if you’re on your way back from a morning hike at Red Rock Canyon (wink

wink, nudge nudge). Order the Groovy, a fizzy concoction flavored with tangerine, lemon cordial and mint, for citrusy satisfaction at this comfortable neighborhood hot spot.

From there, head to UnCommons to find Todo Bien, a tiki tequileria. Try the N/Alote, a unique combination of sweet corn, piloncillo, almond milk and cinnamon or have the Sundown Sipper, pictured, a delicious combination of pineapple, pomegranate and lemon.

No tour of the valley would be complete without a trip to the bustling Chinatown area, and there’s no more iconic bar than Golden Tiki. Sip the Tropical Vertigo, a combination of Kalinago Carib, ginger, pineapple and lime juice, topped with seltzer.

Paris-themed restaurant’s After Dark series highlights cocktails and entertainment

One of the Strip’s most elegant spots for brunch and dinner is now one of the coolest spots to imbibe and party into the wee small hours. Chéri Rooftop, a French-inspired restaurant that also boasts some of the most spectacular views of the Strip (thanks to its ideal location directly beneath the faux Eiffel Tower), recently launched a new party series, Chéri After Dark.

Every Friday and Saturday, Chéri Rooftop transforms into a high-energy party atmosphere, featuring live DJ performances, bottle service and curated cocktails. To really get yourself in the party mood, order signature cocktails like Margarita’s Trip to Paris, pictured, a sumptuous sip made with Don Julio blanco, Cointreau, St-Germain, Chambord, fresh lime juice and raspberry. If you’re more of a whiskey fan, the Eiffel Sour combines Rittenhouse rye, lavender bitters, fresh lemon juice and absinthe, with a Bordeaux float. Although it’s only March, Las Vegas is starting to see some more-than-decent thermometer readings. If you’re like me, you’re always looking for a little relief from warm temps, and for me, this is the go-to drink for that. This tasty cocktail has been crafted from Maestro Dobel Diamante tequila, orangecello, grapefruit, lemon and prosecco. The tequila itself is a blend of three varieties—extra-añejo, añejo and reposado—which goes through a filtering process after aging to create a crystal-clear spirit, hence the name. It has notes of honey, maple and caramel (seems fitting considering the name of the restaurant, eh?), and even a little vanilla, which create a background depth for the bright, citrus ingredients, and the bubbles of the prosecco tickle your tongue. –Nina King

Ask anyone who knows me reasonably well: My absolute favorite cocktail is the Old-Fashioned. Always has been. Always likely will be. There’s just something so timeless about something that is made with just a few basic ingredients. And one of the newest versions on the Strip has quickly become a new obsession of mine. This truly signature product at master chef Michael Mina’s newest Strip restaurant adds an apple accent, with apple brandy mixed in with Russell’s Reserve 10-year bourbon (with coconut!), mulled Demerara and toasted pecan bitters. The addition of a dried apple slice adds a wonderful, colorful accent to what is already one of my favorite Old-Fashioned versions ever. –Ken Miller

Barry’s Downtown Prime at Circa Resort & Casino

When Wilson Barrera, bartender at Barry’s Downtown Prime at Circa Resort & Casino, was creating this new cocktail, he wanted to add a rim, but something different than just another sugar-dipped rim (as delicious as those are). So he added a brush of raspberry compote, and—man oh man!—does that little unique touch send this slightly sweet and well-balanced cocktail over the top. I couldn’t put it down between sips. The blend of Grey Goose Strawberry essence vodka, lychee syrup, Aperol, lime juice and egg whites is sent into another level with that simple touch of sweetness. And forgive me for breaking the rules (I know we’re picking one cocktail), but I can’t help mentioning that Barrera promises he’ll also make you the best espresso martini of your life, so now you have two reasons to visit! –Kiko Miyasato

Kenjiro Yanagi

Shaking up the fun in downtown Las Vegas

Kenjiro Yanagi, flair bartender at OneBar at Golden Gate, is representing Las Vegas in the USBG Shake It Up Flair Competition at the Las Vegas Convention Center during the Bar & Restaurant Expo from March 24-26. Yanagi is one of five finalists who will perform a five-minute flair routine and create an original cocktail, all in the hopes of winning and going on to rep the U.S. in the world championship in Cartagena, Colombia.

On the regular, though, you can catch

Yanagi at OneBar, where he’s been hoing his flair bartending skills for almost a decade. Tack on another decade to his flair career, which started in Peru. “I was studying bartending in Peru and my teacher was the first flair bartender in Peru,” Yanagi says. “So I saw him flipping bottles and I was like, ‘I want to do that!’ I tried and tried and told him, ‘One day I’ll be better than you!’”

where I am from. I used to reluctantly say North Dakota because I felt not so good about answering, like I wasn’t from a cool place like New York City or L.A. But I had a guest tell me, “Never forget where you come from and own it!” So now I let my NoDak accent fly and let that small-town hospitality shine through!

Where are some of your favorite places to drink in the city? Silver Stamp, such a great concept, and I love beer. The Golden Tiki, it checks all the boxes for a great tiki establishment.

“Over the years we traveled a lot (for research and development),” says co-owner Yassine Lyoubi. “You always want to go out, try new stuff, and one of the restaurants that was on our list for the longest time was Eleven Madison Park.”

Manhattan’s critically lauded Eleven Madison Park had four-star fine dining and drink cart service that Lyoubi fell in love with and inspired the amenity at Barry’s. Precision mixing of regular or top-shelf selections, including a tequila variation, in the dining room stokes curiosity among guests who wind up ordering tableside service themselves.

Curiosity is what leads guests of Bellagio to find The Vault, an upscale, sophisticated speakeasy hiding in plain sight on the casino floor. There are no signs, but there is a symbol on the entrance’s exterior that guests with reservations are directed to. The interior is dark, intimate and luxurious, with sophisticated music playing through the sound system at conversation-friendly levels.

It’s a setting worthy of the heavy-bound menu of cocktails, written by an anonymous author with Pulitzer-worthy prose.

Read about offerings like the Vapor Trail Old-Fashioned, made with Japanese whiskey, served in a translucent cover filled with maple smoke and poured in a spinning glass: “Like a mystery unveiled, the enclosure lifts to reveal an enthralling elixir, meticulously crafted to deliver a richly satisfying multi-sensory experience.”

Speaking of such experiences, after perusing Omega Mart, the surreal grocery store with a fantasy backroom area inside AREA15, visitors have the option to stop in Datamosh, a cyberpunk’s vision of a speakeasy with a menu of specialty cocktails, spirits, beer, wine, hard kombucha and mocktails.

Datamosh’s Meowjito blends white and golden rum with guava for its spin on the mojito. Vodka-based Happle Juice keeps the doctor away with apple liqueur, apple juice and apple blossom bitters. Paloma Pop!! mixes tequila with grapefruit, while Orange Dream blends vodka or mezcal with orange juice and vanilla whip.

Immersive visual venue Arte Museum eschews alcohol for the options provided by its ARTE CAFE. After traversing the attraction, a teahouse experience awaits. Drinks and desserts are served in a relaxing environment on tables that double as media art, with images that move and react with the motions of a teacup.

For a sky-high drinking experience, there’s no beating the Happy Half Hour at the High Roller at The Linq Promenade, where an open bar can be reserved and enjoyed as the observation wheel makes its 30-minute rotation. Up to 25 people can be served in a cabin that reaches an altitude of 550 feet and provides unparalleled views of the Strip, as well as a drinking experience that is truly distinctive.

As you order that cocktail, take a closer look at the ingredients— you might find global spirits with a whole history and traditions. Here are a few you might encounter, and some that might be more visible this year.

Tequila is one of the more wellknown global spirits, sourced from blue agave grown around Tequila, Mexico, and surrounding regions, produced there from the late 1700s. Its popularity has grown exponentially, and you’ll find it in the Spicy Cucumber margarita at Rosa Mexicano at Miracle Mile Shops at Planet Hollywood, where reposado tequila has been infused with jalapeños and serranos, or the Smoked Maple margarita at Emeril’s New Orleans Fish House at MGM Grand with Montezuma tequila and barrel-smoked maple syrup.

Mezcal is also distilled from agave. (In fact, tequila got its start as mezcal, but now uses di erent methods of production.) Although it has a characteristically smoky profile, that is just part of the charm, says Tim Weigel, a

mixologist at Circa Casino & Resort who will be leading a session at this week’s Bar & Restaurant Expo in Las Vegas. “It is quite versatile even though the public perception is that it is just a ‘smoky tequila.’” Find it at Swingers Las Vegas at Mandalay Bay in the Paloma Prima with Dos Hombres mezcal, Aperol aperitivo, Fever-Tree sparkling grapefruit soda and lemon juice; or at Crush at MGM Grand in the El Diablo with Mezcal Verás, Amaro Montenegro, hibiscus, morita chili pepper and lime juice.

Another desert spirit is sotol, a clean, bright spirit made from the plant of the same name. Those plants take 25 years to mature, and each produces only one bottle of sotol. “Sotol is really making some inroads. It responds well to vegetal and herbal ingredients, giving you that desert flavor while providing a drier option that the public clamors to be served,” says Weigel.

It’s certain you’ve heard of rum, but what do you know about it? Sugar cane-based spirits have been made for

thousands of years in the Southeast Asia island nations. Rum made its way to the Caribbean by the 1700s, where an association with sailors became well-known. It’s now distilled in many locations, including Zacapa, Guatemala. That’s where Zacapa Solera 23 was born in 1976 for the 100th anniversary

of the town. The rum is distilled from the first pressing of the sugar cane, and woven petate bands around each bottle help support more than 700 textile producers. Try it in The Fireside Fashioned at The Tangier at SAHARA Las Vegas, which features Zacapa Solera 23 rum and Licor 43. An unusual option for a rum experience is the Fruit & Pebble with Diplomático Planas rum, Taylor Fladgate tawny port and Fruity Pebbles syrup at Glass Bar at Planet Hollywood.

Similar to rum is cachaça, a fermented, sugar cane-based spirit dating from the 1500s that is wildly popular in Brazil. Sip it in The Modifier at Bazaar Mar at The Shops at Crystals.

Taste two separate Japanese ingredients in the TLM at Golden Gai at The Venetian, where sake, the classic rice-fermented beverage, and Suntory’s Haku vodka are mixed with lemon and lychee juice. Haku vodka is filtered through bamboo charcoal, yielding slightly sweet tones. Japan has also gained recognition in the spirits world for its whiskies. The earthy spirit can be experienced at Resorts World Las Vegas’ Carversteak in the Sakura Harmony, with Tenjaku blended Japanese whiskey and Matsui Shuzo umeshu (a Japanese plum wine).

Next, seek out Liquid Diet and taste some of the strangest concoctions a mixologist could cook up. If you’re feeling bold, order the horseradish shot, which comes with a tomato chaser. To end this night you’ll need to make a reservation at Seven:45, an R&B speakeasy that only admits 40 people at a time.
