Welcome to our fourth issue. Wow, where has that year gone!! As Gold Coast Panache Magazine is a quarterly that equates to a year of stories, photos and good times. The time certainly has flown. The feedback I receive when I am out and about from people who have read what we are producing is extremely gratifying. My dream was to produce a quality magazine for and about the Gold Coast. I think we as a team are doing that and creating a lifestyle magazine of which the city can be proud. This issue is something I am incredibly delighted with because for the first time we have done our own photo shoot for the cover story. Gold Coast born and bred Alli Simpson was gracious enough to be on the front cover and the subject of our main story. She has packed an astonishing amount into her young life which you can read about in this issue. The images by Melina Münstermann are stunning and really showcase the natural beauty of Alli. She is the most humble, grounded, incredible young woman I have met in a long time. Her mother Angie was there for the shoot too and you can see where Alli gets her work ethic and ease of manner – the apple doesn’t fall far from the tree. It was such a team effort to produce the images. Sonia Stradiotto Couture provided the gowns and outfits for the day, 5th Avenue Jewellery the exquisite gems with Natalia Louise Artistry applying the finishing touches to have Alli ‘camera ready’. A lot of fun was had by all during the day-long shoot which made for an easy time of what was a long day. On the home front Bailey has started studying law at Bond University and finished his first semester with flying colours. A lot of hard work is involved but he seems to have handled the transition from School to University very well. Zoe is now in Year 11 and loving her new school and recently attended the TSS year 12 formal with her great friend Ethan. It’s a bit hard as a parent seeing your ‘baby’ dressed to the nines in a glamorous gown with her hair and make-up done and looking years older than her age. As any parent will tell you - they grow up too fast. My husband Simon has been extremely busy at OMB Solicitors. Besides the pressures and strains of work he is also heavily involved in the construction of a new building for the firm which will be their new headquarters. Add in his community work for various charities and his involvement with the Gold Coast Suns as a board member, he is a busy man. I don’t know how he does it to be honest. Thankfully we were finally able to take an overseas holiday to Fiji as a family. It was so great to travel again, more so as a family, but the travel part is still incredibly stressful. Waiting anxiously for the results of Covid tests before you leave and then another 48 hours after arrival puts a dampener on things until you get the final all-clear. That aside, Fiji is wonderful. The people are beautiful and are so glad to see tourists back enjoying their island paradise and helping the local economy. On another note, I have just been announced as a Board member of my favourite charity Gold Coast Community Fund. Looking forward to helping so many in need here on the GC. Family, friends and love of the Gold Coast are the pillars of our Deputy Mayor’s life. Where were you born and spent your early life? I was born in Melbourne and lived there until 1984 when my husband and I bought a small tourism business at Tocumwal in NSW. Describe your childhood and your early ambitions? I had an idyllic childhood and it’s full of great memories. We were (and still are) a very close-knit family and my sister and I were taught to be polite, respectful and to eat everything on our plate (even tripe and lambs fry which still horrifies me today). It was in the days where children should be seen but not heard. My Dad was very funny and, like me, often in trouble with Mum. My sister was perfect – pretty and smart and she always looked out for me. She still does. As a girl I wanted to be many things – initially a midwife, then a craft teacher, a florist was in there somewhere too – but after starting work in the radio industry, I ended up studying for a Business Degree in Real Estate because my father bought an agency, but radio got in the way (in a good way) and I never finished the degree. What was your first job? My first job was at 3UZ in Melbourne. I started out as Secretary to the Station Manager and worked my way up through the ranks to become 3UZ’s Publicity and Promotions Manager. It was a dream job, working with the radio and television stars of the day. I learnt some valuable lessons about the media which has helped me enormously in my current role. How did you meet your husband Bill? I met Bill at 3UZ when I was 17. He was the Program Manager after a stunning career in Brisbane radio and we had so much fun in those early days going to record launches and working together to promote the station. We have shared a lifetime of happiness - nearly 40 years married - but our son Matt remains our best ever achievement. Why did you decide to enter local politics? I was working in an admin support role for Councillors when one resigned six months before the 2008 election. Council invited applications to decide the representative for the months leading up to the election. I put my name forward after gaining the support of about nine community groups in northern Gold Coast. The week prior to the decision, our former Mayor Gary
Baildon also nominated and I thought that would be the end of my chances. To my surprise, I was supported by the Council of the day and the rest is history. Best advice you have been given about being a councillor? Representation is such an individual thing and I can’t recall ever receiving strong advice. I’ve always worked hard and felt it important to be totally honest with the people I represent. When first elected, I made a pact with myself to never do lunch. Apart from a special industry gathering over the last 15 years, I’ve stuck to that pact. Strangest/funniest request from a constituent? Having to talk to a constituent’s cockatoo on the phone. That’s a standout which caused a lot of laughter through the office. Favourite way to relax? I love to read, I love the garden and I love sport. I don’t get so much time to read right now, but I do manage to spend time in the garden every week. There’s always plenty of sport on TV and I follow the Titans and the Suns and get to their games whenever I can. I’m also a keen racegoer. Were you initially surprised by the demands of the job? The job is all consuming – but enjoyably so, and I have to admit to being obsessive about it. Becoming Deputy Mayor 10 years ago added to the workload but, overall, I’m honoured to have enjoyed such a privilege in the city I love and I still pinch myself when I think of how fortunate I’ve been. You have represented Division 3 since 2007. Known as one of the fastest growing regions in Australia how do you keep pace with the rapid expansion? I’ve represented most of northern Gold Coast – and until 2020, the area I represented covered over one third of the geographical area of the Gold Coast. That has kept me busy. It’s been difficult retaining and fostering a strong sense of community due to the rapid growth and a real challenge to deliver the facilities and services necessary. Initially there was absolutely nowhere for the growing community to meet. Mums had to meet in parks and playgrounds because there were no locations for playgroup. I’ve worked hard to play a part in delivering
the Upper Coomera Centre, the Ormeau Centre, the Ormeau Sports Park, Bim'bimba Park at Gainsborough Greens – and with incredible support from the Mayor, the new Pimpama Sports Hub. We now have the very best community facilities in the city and it’s been so rewarding to have enjoyed the support of Council in delivering this much needed infrastructure. I’m sure the funding was supported because Councillors became so tired of hearing me say “What about the north!” What is your idea of a dream weekend? It’s pretty basic really – a coffee with the Gold Coast Bulletin is always a good start. We live next door to our son Matt and his wife Chelsea, so there’s often an early morning visit with family. When I’m not working I’m pretty happy to spend time at home. There are not too many weekends where there’s nothing on workwise – but I have to admit, that’s how I like it, because I love to be busy. I think everyone knows of my family’s interest in horse racing over many decades – and I do love to get out to the Gold Coast Turf Club on the occasional Saturday as well. Sundays are often for agenda reading…. That’s definitely not a dream, it’s a necessity.

ALLI SIMPSON For someone so young Alli Simpson has packed a lot into her life. The first thing you notice about Alli Simpson is her eyes. As blue and clear as a Gold Coast spring day and coupled with newly dark hair, her natural colour, it is a startling combination. Into her young life she has packed a variety of achievements and career choices. Actress, singer, participant in a documentary on homelessness, reality TV contestant, radio show host and children’s book author. It is an astonishing list but something that she accepts in a matter of fact way as something she did when given the opportunity.

Impressive as they all are, possibly the most remarkable achievement is her latest – recovering from a freak accident where she dived into shallow water that came within two millimetres of placing Alli in a wheelchair for the rest of her life. “I’ve only just come out the neck brace and the tests show that it has healed very well. I still have to be careful, it’s all stable now but it will be another five months. I have been so lucky. All I had was a stiff neck and I carried the injury around for three months without realising how serious it was. There were two broken vertebrates but it wasn’t that painful except for some tingling. I was still exercising, doing Pilates and boxing even standing on my head once. So lucky. It has given me a new appreciation of life. The radiologist who saw my X-rays could not believe that I had been living a normal life for those three months.”
settled into their new life, work, career and utilising the power of their impressive social media reach came into play. “They are all grounded, normal kids but I was very aware that while they had a large social media platform they also had to use that reach and influence for a charity or cause that was dear to their hearts. They are a voice for many of those young kids who listen to them out there so it had to be for good not evil.” It was also the catalyst to do a reality show on the family when they were based in Hollywood. High profile children and a family of Australians in a foreign land – Americans would have lapped it up but they turned down the offer. “We had meetings with many of the big networks, MTV and the like, but we didn’t really want the drama,” said Angie. “I did a couple of episodes of ‘Real Housewives of Beverly Hills’. I didn’t feel comfortable in that situation, I’m not that kind of a woman. Also it wasn’t something that would have been good for the family. There were meetings on that show about what would work to create a bit more drama which wasn’t something I wanted to do with my children. Looking back I am so glad we said ‘No’ because it wasn’t right for us.” While that reality TV journey wasn’t right, for Alli social media is something she has grown up with, understands and is understanding of the negative side of the platforms. “I honestly don’t get many negative comments and if I do I don’t engage. The number of followers has grown organically but I don’t post everyday nor do I worry about keeping score. When I have something to share that I think is interesting, or if I’m doing something that is pretty cool – a show, a song etc – then I will post. I like to find that balance and not overshare.” Of her reality TV career the one that was the most daunting was
Alli is one of three children to Brad and Angie both of whom swam for Australia. Angie, who is at the interview, explains the family philosophy. “We wanted the children to grow up authentically. By that I mean whatever they wanted to do was fine but they had to commit to whatever it was they chose to do. With all three it was about them finding that passion and then doing it.” With that understanding the three, Alli, Cody and the youngest Tom, were raised to be the best they could be. She and her brother Cody became famous for their music via YouTube. “My parents were high achievers so I guess it is part of us to give it our all. If I get involved in something it has to be 100 percent. Being super active is part of me and doing one thing would usually lead to something else which I would do to the best of my ability.” When their fame exploded the family moved to Hollywood, something that made Angie think about the dangers of living in a city with so much temptation. In total they lived there as a family for around 10 years and it was a culture shock at first. “LA is a very big city and on the day we arrived we checked into a hotel in West Hollywood and it was Mardi Gras weekend. I had to try and explain to the kids that it was a big costume party because there were some out-there costumes parading in and out of the hotel,” she laughed. Once they had

The reaction was good and we’re now working on a second one.” Her future plans now include devoting more time to acting and a collaborative health and beauty company with her mother. “It is a project that I love because it is closely aligned with Mum,” says Alli. “We have acquired Botanical Path, who make products we have previously consumed and have grown to love. Under our ownership, we have reformulated the Beauty Collagen products and added a vegan protein range to ensure that we can offer a complete variety of great tasting, health and beauty supplements. We both live a healthy and active life, with a shared passion for beauty, diet and better-looking skin. Our new range will be available on-line at www. botanicalpath.com.au and selected retailers.” ‘I’m a Celebrity…Get Me Out Of Here.’ “The one question I always get asked is why,” laughed Alli. “I am literally petrified of everything – bugs, snakes, cockroaches – but I just wanted to test myself. It’s a once in a lifetime experience and I could always just say those words and I would be gone. I ended up having an absolute blast and it was one of the best experiences of my life and made lifelong friends. Also being without my phone was a great thing. We all got to talk and communicate on a human level which was so refreshing with people I didn’t know before we went into the camp. I learnt that I am way stronger than I thought I was, handled the challenges and realised that whatever I can put my mind to, I can do.” Her singing career was not something she planned either or even thought about. “Cody and Dad would sing but my voice was saved for the shower basically. I was too nervous to even sing in front of my family. It was an approach to me when I was 15 to put down a track that got me started. Cody said there was a song that would suit me and put it to me in a way that if I didn’t like it, it didn’t need to be released. It was a surprise how much I liked the process. Hearing your own voice can be a bit daunting but with backing, harmonies and arrangements it was really cool.” Other singles followed and that foray 18 GOLD COAST • PANACHE Magazine
into music lead to Alli’s second stint in reality TV on ‘The Masked Singer’ in 2021. “Again it was quite daunting but I liked the fact that nobody could see me so I could do the performance without anybody knowing. None of the judges guessed it was me but they were all very nice and complimentary although I did have to sing ‘unmasked’ which was a bit confronting. Music was never my main focus but I loved the experience, had control because I released the songs I wanted to and at my own speed.” Of all her many talents her biggest love is radio. She presented ‘The Alli Simpson’ show on Radio Disney from 2015 for four years becoming the youngest host of a nationally– syndicated show in the United States. “Interviewing the people I like and so many celebrities and hearing their stories was great fun. There are plans underway to do something on the Gold Coast and also a web show which I can host. My thought process is that I can bring a fresh, younger audience, have similar interests and talk on a level to that demographic given my age.” The next string to her very large bow is a children’s book she co-authored with her mother Angie. “Mum had an idea about a mother/daughter book and approached Simon & Schuster. The profile Cody and I enjoyed helped. It was published in 2020 and is called ‘Clouds: Life’s Big & Little Moments’.
To sum up Alli Simpson in a few words is slightly daunting because for someone who has just turned 24, she has packed more into her young life that most do in two lifetimes. She is respectful, open, honest and completely unimpressed by all that she has achieved. There is a special relationship with her mother as there is with all her family that speaks volumes for her upbringing. She just happens to be that rarest of people - a well-grounded high-achiever. Attending school and getting an education is an all-important part of shaping us for life’s journey. We asked some prominent women for their memories from their time in class during those formative years.

Talent Agent with Reel Management representing Models, Actors, Extras and Kids. Where did you go to school for primary and senior? ? Primary Coogee South Public, Sydney NSW. High school - St. Clare's College, Waverley in Sydney which is an all-girls school. Favourite subject and why? Geography because I always wanted to travel the world, go on adventures and discover new places. And Ancient History as I was fascinated by the Egyptians and the Pyramids. Favourite teacher and why? The French teacher Sister Theresa because she spent all lesson with her back to the class writing on the chalk board, so my bestie and I could eat Twisties we had stashed in our pockets. Best memory at school? By far the lifelong friends I made. Especially the year 10 school trip to Canberra, where all the girls bonded over laughter, pranks and conversations of our high school boy crushes from our brother school Waverley College. Academic or sporting achievement? Sports was probably more important to me than academics, purely because it was more exciting. I was the House sports captain in primary school. In high school I was always competitive in swimming and athletics, regularly bringing home ribbons. I played representative netball and was a Surf Life Saver, completing my Bronze medallion and doing regular patrols at Bronte Beach in Sydney where I spent every weekend. I also learnt to surf and often went fishing with my father, bringing home the trophies in an all-male fishing competition. Anything to do with the ocean, I loved. What did you want to be when you grew up? At 16 I wanted to be an International Flight Attendant with Qantas. I still joke I don't know what I want to be when I grow up now and I'm sure I'll always be young at heart. To me success isn't how much money I make, it's more about family, friends and relationships along the way. My integrity and values and how I'll be remembered are what matter. Is your life now what you expected it to be? If so how? No, not at all. I always knew I wanted a big family. Fortunately for me I was lucky to have four children who are my world. Now my three sons are adults and my teenage daughter is the only one at school. Although I am fiercely loyal and expected to have only one marriage and live happily ever with my white picket fence, I now know that life can often throw you a curve ball. Forced to walk a different path, I am grateful for the challenges that have led me to living my best life, embracing change, passionate and excited for the future.
Byron Bourne Hair and Makeup Artist Where did you go to school for primary and senior? Trinity Lutheran Primary School and Benowa State High School. Favourite subject and why? I really enjoyed Home Economics especially the sewing part. Favourite teacher and why? Miss Challenor (year 4 teacher) who was super kind and caring. I actually just reached out to her recently to let her know she was my favourite all time teacher. And she remembered me! Best memory at school? A year 12 ski trip especially blasting Millencolin, a popular punk band at the time, and everyone singing along to it. Academic or sporting achievement? Maths award for year 12 What did you want to be when you grew up? A marine biologist Is your life now what you expected it to be? No, but I’m not surprised with the industry into which I fell. I started dancing at the age of four and did that for years and years. The whole thing - dance competitions with all the hair and makeup. All through high school, I was always interested in makeup which then lead me to become a makeup artist after I dropped out of college. I’ve gone through some pretty traumatic times which I certainly didn’t expect. But it has taught me to be stronger. WINTER • 2022 19

Best memory at school? Every Music Night and school play - ABBA, Rhythm of Life, Grease, Toad of Toad Hall, many more. Of course I dressed up. Academic or sporting achievement? Voice of Youth, public speaking and debating. All the sports. I had too much energy. I beat the school brain in English in the HSC. What did you want to be when you grew up? A nosy reporter a la Lois Lane, complete with sharp suit and sharper tongue. Have worked in TV here and overseas, covered the Olympic Games and worked for Vogue, Herald newspapers and a bunch of others. Best career choice ever.

I loved maths in high school but in my last years at school fell in love with English, especially creative writing.

Academic or sporting achievement? Winning National Toastmasters. What did you want to be when you grew up? I wanted to become an actress…now I just get to ‘act up’ with my GF’s. Is your life now what you expected it to be? It’s not how I’d envisioned because I didn’t think I’d ever want children when I was young. Favourite teacher and why? Mrs Brisbane my Home Economics teacher. We were allowed to call her by her first name in year 12 and go in the home economics room at morning break and have tea and cookies with her. Best memory at school? Doing my debutante ball in year 11. It was my first time getting dressed up and having my hair and makeup done with my friends. It was very special and something fun for school. Academic or sporting achievement? Academically I was the winner of the year 12 public speaking awards - not a surprise to those who know me. In terms of sports I won lots of age champion awards for various sports through school but the furthest I went with any was to the state finals for javelin and came 5th. Not sure it has ever come in handy though. What did you want to be when you grew up? I always wanted to be a nurse and that is what I did at university straight from school. Only change was I wanted to be a general nurse only but fell in love with mental health. Is your life now what you expected it to be? I have changed career paths several times so still a bit up in the air where I will end up, but we have three beautiful children which is more than I could have wished for. I probably didn’t expect I would ever have moved from Melbourne but it is the best thing I ever did and I have been here for 17 years now.

Where did you go to school for primary and senior? Both in Germany. Primary was Don-Bosco School in Eschweiler Germany my Senior College was Graphic and Technique, Aachen Germany.
Favourite teacher and why? I don’t really have a favourite teacher Best memory at school? My friends. My best friend from school is still my best friend despite our Art and French teacher telling us that we would never see each other again when we finished school. That nun was so wrong. Academic or sporting achievement? I was a pretty average student but my main achievement was sticking with all the speech lessons so that I can pronounce my “r’s” rather than calling all those rabbits and robins, ‘wabbit and wobin’ What did you want to be when you grew up? I wanted to be a flight attendant for a while as my father worked for an airline and we travelled quite a bit. Later on I was interested in political science. I ended up in banking and finance working in so many different areas. I got to travel around Australia, UK NZ and Ireland with work making great friends along the way. Is your life what you expected it to be? Looking back I don’t know what I really expected but I think I am exactly where I am meant to be. I am happy with my life. I have wonderful family and friends, live in a great place with time to enjoy what I have while also time to give back through the Gold Coast Local Charities Lunches
Favourite teacher and why? Mr Galizzy, he always had so much passion for teaching his students and I really appreciated all his efforts. Best memory at school? Creating an advertising video for a film festival with a whole team of students from different areas was an amazing experience and we had so much fun while doing it. It built friendships for life. Academic or sporting achievement? Winning an award for the best campaign design and being the team leader of our team. I was always average in school and sport but I was a dancer for 15 years and won a few trophies with my crew and my dance partner. What did you want to be when you grew up? I always wanted to combine photography and graphic design in one job. People always said I have to decide on one so I couldn’t do both. Today it’s my absolute passion to be able to combine both. Is your life what you expected it to be? Coming from Germany three years ago with a few hundred dollars and big dreams in my backpack I never expected to live on the other side of the world. It’s been an absolutely amazing journey and way better than I could have ever imagined.
Katy Smith-Page Where did you go to school for primary and senior? Bundaberg North Primary and Bundaberg High School. Favourite subject? Sports. I loved being outdoors and out of the school room. Favourite teacher and why? Mr Hough who was the principal and also taught us geography. Best memory at school? Sports day and being able to play everything or leaving school for ever Academic or sporting achievement? State hockey representative 1971-1981. I was also an A Grade squash player, a coach in hockey and squash in Cairns, Mt Isa and Dubai. In Dubai I was the Head of Physical education at an English speaking school. Dale Olsson Rachael Poeppmann and Keith Urban – I’ve met so many celebrities across my work life but this meet and greet I actually won. I am a member of Keith’s fan club, yes I’m a definite Keith tragic, and the club had a comp for a meet and greet which I won! It was during his ‘Light the Fuse’ tour in 2014. He was so generous with his time, so patient and lovely, and still to this day I remember how good he smelt when I got a hug. I also had a massive crush on Keith’s guitarist on that tour. I sat front row with three of my cousins and also walked away with their set list and numerous guitar picks. Best concert experience eve and I’ve still got the picks!

You talk weddings. Yes, that’s me and Matchbox20’s Rob Thomas in 2000 talking about my upcoming nuptials. I was months away from marrying Mal Lees and he was newly married to his ‘Spanish Mona Lisa’, the delightful Marisol who also joined the conversation.
Dale Olsson and Sharyn Ghidella – This photo was taken at a lunch at Tattersalls Club Brisbane on International Women’s Day. Sharyn is a 7NEWS presenter, who was the MC on the day. She was so lovely and easy to talk to and I love watching her read the news.

CELEBRITY Mel Keegan Mel Keegan and Beau Ryan - Beau was one of the judges for Fashions of the Field at Doomben where I placed runner-up. He was so down to earth and very funny. Had time to talk to everyone and took selfies with anyone who asked. Just a great Aussie bloke and wonderful to know that his personality didn’t change from his TV persona. His wife was equally lovely too.
Hugh Jackman and Jessica Sharratt - This is one of Hugh Jackman and me outside the theatre in NYC when he was playing Peter Allen in ‘The Boy from Oz’. It was minus 32 degrees and my Dad (Paul Sharratt) knew one of the producers so we got to spend some time with Hugh who was really lovely. Ali Plath
Ali Plath and Dave Hughes – I met Dave “Hughesy” Hughes when he came to the radio station. He was in town doing some shows for the Spiegeltent and he did his show from our studios. He’s a massive table tennis fan and was keen for a few games, so of course I volunteered. We ended up playing table tennis and I beat him, hence the "No. 1" finger from me and "No. 2" for him. He took the defeat like a perfect sportsmen, and it will go down as one of my favourite sporting victories.

Katrina and Luca Sanguigno with Venus Williams – My husband Luca loves tennis and has won many trophies. This was taken at the Australian Open in Melbourne with one of the greats of the sport, Venus Williams. She was so lovely, nothing was too much trouble and chatted away happily to us. Such a great tennis player, so very tall and a wonderful ambassador for the sport.
Paula Duncan with Nicole Daley – This was taken at the Gold Coast Turf Club for the charity race day raising funds for Ronald McDonald House. It is called the Red Boot Race Day after Ronald’s big clown shoes and 5th Avenue Jewellers, our family jewellery business, is the main sponsor of the day which raises money to help the families of seriously ill children in hospital. Paula was one of the celebrities who supported the day. She was so lovely and I am a huge fan of hers through her many roles on television. She is showing off a set of pearls which we loaned her for the day.

My job is non-stop, continuously bustling from one day to the next and no two days are ever the same. That’s why I love it! My favourite part of the job has to be when I greet the groom then the bride before their ceremony. Each are separately nervous and excited; I know what’s about to transpire but they have not experienced it yet. Being able to reassure each person, and know how they are about to feel. There is this overwhelming sense of exhilaration in the air. Who was your early inspiration in fashion – mother/aunt/sister/ someone on TV or movies? Fran Drescher- Fran Fine! Her fashion on the show ‘The Nanny’ was something I’ve always remembered, even now. Her style had no limits, it was fun and quirky! While it’s not my style now, her character certainly empowered me to be confident in myself. Best tip you have ever received in dressing up? Tailored clothes. Ready-to-wear fashion is made from one set of measurements, and that certainly isn’t every woman’s body shape. Always alter clothes to fit you, never the other way around.

Wintour Warmth A dream came true for Liz Clift by having an audience with Anna Wintour
In her long and rewarding fashion journey, Liz Clift has met many of the biggest names in the industry. Studying in France at the prestigious Paris American Academy she was mentored and encouraged by such luminaries as Karl Lagerfeld and Sonia Rykiel so she is well used to being in the presence of greatness. However her recent meeting with Dame Anna Wintour DBE at Vogue headquarters in New York really had her pulse racing. “Over the past few years I have been a student and friend of JT Foxx, one of the world`s great entrepreneurs, after attending his business and wealth building seminars” said Liz. “One of his biggest motivations is wanting to help others succeed, especially young entrepreneurs. After I spoke on stage at his event in Johannesburg, he noticed how I enjoyed encouraging young fashion designers, especially when he saw I was surrounded by budding young designers anxious for advice on how to get into the industry. He knew I was a huge fan of Anna Wintour and as a way of thanking me went out of his way to arrange a meeting.” With high profile and very busy people nothing ever comes together at a moment`s notice and arranging a time for Anna and Liz to meet was always going to be problematic. Anna`s list of roles is extensive and time-consuming. As the Editor-in-Chief of Vogue, Global Chief Content Officer for Conde

Nast, Artistic Director of Conde Nast and the Global Editorial Director of Vogue, she is to put it mildly, very busy. “I was told an appointment would be made and then I could fly to New York. A time was set, I confirmed and I made the trip still not quite believing that it was about to happen. Her office is in the new One World Trade Centre. The security was like Fort Knox but she has the most amazing personal assistants who made me feel so at home. Even when I was sitting outside her office I had to pinch myself.” “When I walked in I was nervous as she has been described as Nuclear Wintour. I decided to just be myself and throw in some tropical elements. She was amazing, very warm and friendly. She asked if I play tennis which is one of her great passions. I told her that Aussie professional John Fitzgerald was my coach once which impressed her. ( John told me that I had the worst backhand he had seen but I didn’t mention that.) Another of her
passions is helping young designers get a start in the industry. She heads up, along with Tom Ford, the CFDA (Council of Fashion Designers America). I am helping Liz Golding on the Queensland Fashion Council with our goal of helping young creatives to get started. We spoke about our mutual interest and I gave her a proposal put together by Liz Golding including an invitation to join us for an event currently in the planning stages. Anna said she loves Australia, would love to return and would definitely give it some thought, time permitting as it would have to fit in with her Couture show schedules.” “She then suggested we take some photos and took me on a tour of the offices. At that stage she was planning the upcoming Met Gala and also spoke about dealing with digital media in this era. I was with her for an hour which given her schedule was incredibly generous and it was truly one of those pinch-me moments”
The journey didn`t end there because Liz was very excited to be invited by JT Foxx to the launch of the Paradox Museum in Oslo. She literally stepped out of Conde Nast headquarters into a taxi to the airport for and jetted off to Norway. “The Paradox Museum baffles the mind because nothing is as you expect it to be. It is an extraordinary, miraculous, phenomenal and totally unique experience. More than 30 are to be opened around the world including Times Square, Sydney and hopefully the Gold Coast.” After Oslo Liz continued her journey to Istanbul where she has her designs for leather jackets created. Then it was time to head home with a quick trip to catch up with her son Brandon in Chattanooga, Tennessee where her husband Bill’s family live. Out of all those adventures and travels it is hard to top a meeting with the Queen of Fashion. Where to next for Liz?

It is that close family connection that inspired Nicole to create Ti Amo, her own range of jewellery designs. “My father is very romantic and was always leaving gifts and special treats for mother with a cards that read ‘Ti Amo.’ Mum is Italian and it means ‘I love you’ in Italian so it simply had to be the name. Every piece is a one-off, designed and manufactured in house so it can never be repeated. I think about designs all the time and often wake up in the middle of the night with an idea or I’m making dinner and a thought pops into my head. That’s why I always have some paper nearby so I can jot down the thought.” Nicole and Darren have a unique skill set which enables them service the needs of their clientele with select items of jewellery from around the world. Morellino di Scansano has a bright red colour with violet hues. The aroma is fruity, with intense notes of wild cherry that are typical of this varietal and add a richness and pleasant sharpness. On the palate, it is smooth and full flavoured with ample body and supple tannins. Serve with: Maremma tortelli and cheeses; a wine that goes well with the entire meal.
LITORALE
Vermentino is a grape variety which gives excellent results. The colour is pale yellow with light golden hues, has a very intense fruity aroma of summer ripe fruit. On the palate there is an important aromatic note combined with a pleasant persistence. It is 'a generous and intense wine, with great structure and freshness. Serve with fish dishes, seafood and risotto.
PRIMOCOLLE VILLA CERNA
Clear and vivid ruby in colour. An intense floral bouquet, with violet and iris aromas the most prevalent. Tannins well integrated with the freshness of fruit make for a Chianti Classico with moderate ability to age. Traditional red wine vinification is used. An ideal accompaniment to grilled or roasted red meats, cured meats, and cheeses. Serve with: cheese, roasts and game.

Taste Tibet
FAMOUS CHICKEN CURRY
If you take momos out of the equation, then Taste Tibet’s famous chicken curry is definitely our biggest seller. Its name did not come about without the wild appreciation for all the joy it provides to starving festivalgoers across the land and to the fine, curry-loving people of Oxford. So here we are – the great reveal. We’ve kept nothing back, and we hope you’ll enjoy making it as much as we enjoy serving it. For the full Taste Tibet experience, pair it with basmati rice or Balep and Yeshi’s dal.
INGREDIENTS • • • • •

2 tbsp cooking oil 2 large garlic cloves, thinly sliced 2.5cm piece of ginger, washed but not peeled, thinly sliced 1 small red onion, thinly sliced 2 large tomatoes, thinly sliced ¼ tsp turmeric 1 tsp Bassar curry masala (or hot chilli powder) 1½ tbsp Madras curry powder 2 tbsp coconut milk powder 6–8 fresh curry leaves, or 10–12 dried 1 x 400ml tin of coconut milk 600g chicken breast fillets, cut into bite-sized pieces 1 teaspoon salt Chopped coriander (cilantro), to garnish – optional
Place a heavy-bottomed saucepan over a mediumhigh heat and add the oil. When it’s hot, add the garlic and ginger and let it brown for a couple of minutes, then add the onion and stir for a further 2 minutes. Now add the tomatoes, turmeric, curry masala and curry powder. Mix together and cook for 10–15 minutes, turning the heat down a little and adding about 50 ml (2½ tablespoons) of water if anything starts to catch, then add the coconut milk powder, curry leaves and coconut milk and mix thoroughly. Take your time here: you are making a curry paste, and it needs to be cooked through completely before you can add the chicken. Now add the chicken and salt. Turn the heat back up to high, stir the chicken through the sauce and cook for 8–10 minutes, adding a little boiling water – but only a little – if anything sticks. The pan should be quite dry to begin with, before the juices from the chicken start to be released, so wait a while before adding any water. After the chicken has been in for 8 minutes, check to make sure it is fully cooked. To do this, take a piece out and cut it through the middle – it should be white all the way through. If the sauce looks too thick, add a little more boiling water and stir briskly for 2 minutes. Garnish with coriander, if you like, then serve.

SESAME CHICKEN Yeshi came up with this one here in the UK, and it has become a real crowd favourite at our restaurant and food stall. The name has stuck as it has a lovely ring to it, but the sesame element is in fact a bit incidental. There’s very little heat to this dish – the kids love it. Serve with basmati rice and Yeshi’s dal.
Combine the marinade ingredients in a bowl. Cut the chicken breast fillets on the diagonal to make bitesized strips. Add the chicken to the marinade and mix well using a fork or your hands, then cover and leave in the fridge for 1 hour. Take the marinated chicken out of the fridge. Tip the cornflour into the bowl and use your hands to massage it through the chicken so that it is mixed through completely. Pour the oil into a large wok and place over a high heat. To check if the oil is hot enough, toss in just a little bit of chicken first: if it bubbles furiously, you’re good to go. Using a slotted spoon, lift the chicken out of the bowl and carefully lower it into the hot oil. Stir gently, then let it cook for 7–8 minutes or until golden brown and cooked through, then remove and set aside. You now need to carefully pour off all but 2 tablespoons of oil from the wok. (We pour ours into a heatproof jug and leave it to cool, then it can be strained and re-used.)

For the marinade • 2–3 large garlic cloves, finely chopped • 6cm piece of ginger, washed but not peeled, finely chopped • 1 tsp salt • ½ tsp cumin seeds • 1 tsp Bassar curry masala (or hot chilli powder) • 2 tsp dark soy sauce • 1 tsp sesame oil
Return the wok, with its remaining 2 tablespoons of oil, to a medium heat. Add the garlic and chillies and stir-fry for about a minute, then add the onion and cook for a further 2 minutes – the onion won’t look cooked at this point, but this is fine as it only needs to be lightly stir-fried. Add the green and red peppers and stir-fry for just a few minutes, then return the chicken to the wok. Stir everything together for 3–4 minutes. Just before you serve up, add the tomato to the wok and mix it in well, then stir in the sesame oil and salt. Garnish with coriander, if you like, but the dish is plenty colourful without.

CHOCOLATE MOMOS
Makes about 20 momos This one is just a bit of fun. Our relatives in Tibet have no taste for chocolate, so they would probably be horrified with what Yeshi has come up with here! But the kids have a lot of fun making chocolate momos, and this unique dessert is certainly a crowd-pleaser. Plain yoghurt, to serve
For the dough, fill a medium-sized saucepan about a quarter full of boiling water and place over a low heat. Sit a heatproof bowl on top, making sure that its base isn’t touching the water. Break up the chocolate into small pieces and add to the bowl, along with the butter. Stir gently for 2–3 minutes, until everything has melted, then take off the heat and leave to cool for a minute or two. Meanwhile, put the flour into a mixing bowl, break in the egg and use your dominant hand to roughly combine. Add the slightly cooled chocolate mixture and, while mixing with your hand, slowly pour in 60ml (¼ cup) of warm water. Keep mixing and kneading until you have a ball of dough, then cover and set aside for 15–20 minutes. Meanwhile, for the filling, break the chocolate into a saucepan and add the butter and sugar, then place over a low heat. In a bowl, crush the biscuits to crumbs using the end of a rolling pin. (You could also do this in a blender and then transfer the crumbs to a bowl). Add 100ml of boiling water – and the tsampa, if using – and mix well. When the chocolate mixture has completely melted, work it into the biscuit mixture using a spatula.

90g chocolate, 70 percent cocoa 70g unsalted butter 70g caster (superfine) sugar 100g plain digestive biscuits, about 7 60g Tsampa (roasted barley flour, – optional)
Knead the dough for a couple of minutes, then divide it in half. Sprinkle a little flour onto your work surface – but don’t overdo it, as too much can stiffen the dough, making the momos harder to wrap later. Take the first piece of dough, keeping the other covered in the bowl. Roll it out into a sausage shape about 25cm long, then cut into ten equal slices, lightly flattening each one with your hand. Using a rolling pin, and making one wrapper at a time, push and pull the flattened piece of dough up and down quickly and firmly, holding it with your spare hand and turning it little by little as you go. The middle should end up a bit thicker than the outer edges, and it should fill the palm of your hand; it doesn’t need to be a perfect circle. As these chocolate momos have a nice buttery skin, there’s no need to grease or line your steamer baskets. Steam them over a high heat for about 14–16 minutes, then serve with yoghurt.

2 lemon myrtle or mint leaves

Preheat oven to 150°C. Bring dates and water to the boil in a small saucepan then take off heat, stir in bicarb soda and allow to cool. Mash the dates into small chunky pieces. Beat honey or syrup with oil, then add eggs one at a time whisking until creamy. Add almond meal, sifted flours and mashed dates. Pour into suitable cake or slice tin, and place into water bath ( a larger dish half filled with water ). This helps keeps the cake moist. Bake for 20 minutes or until cooked. For butterscotch sauce, bring maple syrup and coconut milk to the boil in a saucepan, add chopped lemon myrtle or mint. Mix cornflour with ¼ cup filtered water and add to sauce, stirring until thickened. Cut slightly cooled cake into serving size pieces and drizzle with butterscotch sauce. Serves 8

OKONOMIYAKI
For tomato sauce, heat oil in a medium saucepan and saute onion and garlic until soft and translucent. Add mirin and ginger and cook a further 10min to reduce and caramelise. Add tomatoes and water and simmer gently for 1 hour, then add mustard. Season with tamari to taste. Allow to cool then transfer to a blender and puree. Set aside until serving. Make mayonnaise by blending cashews, kim chi, rice milk, lemon juice and zest until smooth enough to pour across pancakes. Season with salt and pepper and set aside. To make pancakes, combine cabbage, kale and spring onions in a large mixing bowl. Stir in both flours and salt and mix well to bind. Beat eggs and pour into cabbage mix and mix well again. Set aside for 10 minutes to allow flavours to develop. Heat a small frypan with oil over a medium heat. Ladle about 1 cup pancake batter and cook pancakes individually, about 5 minutes each side depending on thickness of the batter. Rest pancakes on paper towel, and keep warm while cooking the remaining batter.

To serve, arrange the warm pancakes on individual plates, top with zig zags of mayonnaise and tomato sauce. Sprinkle with shredded nori. Optional, add a poached or fried egg on top of each pancake.

COCONUT POACHED CHICKEN with tropical salsa Marinate chicken in coconut milk, citrus and star anise for 1-2 hours. Preheat oven to 150ºC if poaching in the oven. Poach chicken with marinade in a tray in the oven for approx 10-12 minutes or in a pan, covered. Remove chicken from tray or pan and set aside. Heat marinade and juices until reduced to half then process in a blender to create a smooth sauce. Rinse quinoa and drain, then place in a pot or rice cooker with turmeric and cardamom, using approx. 1 cup quinoa to 2 cups water. Bring to a boil and simmer with lid on until all liquid has been absorbed. This should take approx. 12-15 minutes. Fluff the quinoa with a fork and allow to cool. For the salsa, dice fruits and tomato, mix with chopped herbs, chilli and lemon. Prepare green vegetables by steaming them lightly. To serve, slice chicken on top of the lightly steamed greens, add a drizzle of the poaching juices sauce and top with a spoonful of salsa. Serve quinoa on the side. Serves 4

One of the chilli hotspots of the world is Northern Sulawesi. Here fragrant lime leaves, lemon basil and extreme use of chilli typify the food, for heat that hits you with shouts, not whispers. Spice pastes are often used in one-to-one ratio with the quantity of meat or seafood. Rica rica is the signature cooking style, the ‘c’ pronounced ‘ch’ as in ‘chilli’, which is also what the word means. Stoke the fire to your taste, by all means scaling up the bird’s eyes. These are for heat; the seeded larger chillies are there for flavour. Other chilli-seafood dishes of the wider region to explore include prawn sambal (Indonesian versions tends to be more tomatoey than the salty-sweet Malay renditions), Singapore chilli crab (hands-on eating with a rich, sweet red sauce), and the prized spanner crabs of the Philippines island of Mindanao, doused in spicy coconut milk red-stained by annatto.

You may also like a Sour-and-spice pineapple relish: Peel, core and chunk a small pineapple. Chop 2 red chillies, removing the seeds, then grind to a rough paste with 1 tablespoon sugar and 1/2 teaspoon salt. Loosen with 1 tablespoon vinegar and stir through the pineapple. Leave to sit for 15 minutes for the flavours to mingle.
Roughly chop the aromatics for the spice paste and blitz all the ingredients together in a blender to a rough paste.

Heat the oil in a frying pan or wok and scrape in the spice paste. Fry on a medium heat, stirring often, until it is sweetly fragrant and the harsh, raw edge has gone. Stir in the tomato, spring onion, lime leaves and sugar and cook so the tomato starts to break down to a sauce. Add the prawns and simmer for about 5 minutes, until they lose their glassiness and are just cooked through and pink. Spritz in some lime juice and taste to see if any of the flavours need balancing – add more lime to brighten, or sugar and salt as needed. Serve at once.

EGG AND BACON ROUGAILLE Serves 2
Mauritius is a nation with the spice routes woven into its fabric. The island was uninhabited before the arrival of European settlers during the spice race, when the Dutch, French, then British each took advantage of its strategic Indian Ocean position. A turning point in history came when an eighteenth-century French spice trader, impeccably named Pierre Poivre, smuggled nutmeg plants from Indonesian Maluku and planted them in Mauritius and Réunion, so breaking the Dutch trading monopoly and making spices more accessible to the world than ever before. (Poivre is possibly also the one immortalised in the tongue twister ‘Peter Piper picked a peck of pickled pepper’.) The well-worn phrase ‘melting pot’ does capture Mauritian culture. A fractured past founded on trade has left a population of Indians, Africans, Chinese and Europeans, and given rise to one of the world’s great Creole cuisines. A cornerstone of the home cooking is a gingery tomato sauce called rougaille. It can enliven seafood, salted fish, sausages or, as here, be used as a base for softly poached eggs. There is an unusual clash of Western and Eastern accents – thyme meets coriander – that is typical of playful Mauritian cooking. The result is electric. Recipe: Put the lardons in a frying pan and set over a medium heat. Cook until the fat renders, then the bacon crisps. Add the onion and fry until well softened. Add the ginger, garlic, chilli, cumin and thyme leaves and cook for a few minutes longer.

Add the tomatoes and cook at a slow boil for about 20 minutes, squishing the tomatoes with the back of a spoon occasionally to break them down. The red should deepen a shade. Taste and balance the flavours with salt and a little sugar, if needed. Make dents in the sauce with the spoon and crack an egg into each one. Sprinkle each egg with a little salt and cover the pan with a lid (or a plate). Leave the eggs to steam for 4–5 minutes, until the whites are set and the yolks are still runny. Scatter with coriander and serve with flatbreads and hot sauce, if you like.

CASHEW CREAM CHICKEN Serves 4-6
Here is a showcase of chicken at its most festive and luxurious and yet, pleasingly, it is deceptively simple to cook. Cashew nuts make a silky cream sauce that has sweetness from caramelised onion and a subtle but definite prick of chilli heat fortified by judicious spicing. Scattered with a flourish of glassy red pomegranate seeds, it makes a splendid party dish or rather fine picnic fare if cooked in advance and chilled so the sauce thickens.
The recipe comes from the Parsi community of India and, more specifically, from my friend and culinary anthropologist, Niloufer Ichaporia King. Parsis are the descendants of Persian Zoroastrians who set sail for India 1300 years ago and brought with them one of the world’s oldest culinary traditions. During the maritime spice trade epoch, Parsis got on well with both local suppliers and foreign buyers, acting as mediators, brokers and interpreters. Whilst adapting fluidly to a new and changing land, the community clung to its roots and you can see in this dish links to Persian and Ottoman braises such as Fesenjan and Circassian chicken. Those are made with ground walnuts but Parsis are more likely to use almonds or cashews. Korma is another similar dish, also stemming from an Indian-Persian fusion, where nuts and dairy combine in voluptuous richness. Recipe: If you are using chicken breasts, halve them. Mix with the garlic, ginger and salt and leave to marinate at room temperature for 30 minutes. Meanwhile, heat the ghee in a large casserole pan. Toss in the chillies and spices and let them sizzle. The chillies should start to turn dark, and the cardamom toasty. Add the sliced onion and cook, stirring occasionally, until soft and golden. Add the chicken to the pan and cook for 3 minutes or so, turning it in the aromatics. Barely cover with water and bring to the boil. Turn the heat right down, cover and simmer for 20–25 minutes, until just cooked through. Remove the chicken to a plate.

4 green cardamom pods 1 large onion, finely sliced 200g (1¼ cups) raw cashew nuts 140g (½ cup) Greekstyle (strained) yoghurt Pomegranate seeds, to decorate (optional)
Put the cashew nuts into a blender with the yoghurt and a ladleful of the cooking liquid. Be sure to leave the whole spices behind in the pan with the rest of the liquid, but fish out two of the chillies and add to the blender if you want some heat. Whizz to a smooth and creamy purée. Scrape the purée back into the pan with the cooking liquid and whisk until well combined. Taste for seasoning. Return the chicken to the pan. To serve, rewarm over a very low heat and scatter with a flourish of pomegranate seeds.

Receiving a brief to style the sub–penthouse at Peppers Soul on the beach at Surfers Paradise would seem like a dream job for any interior decorator. For Kellie Hobbs it was all that and more. “It was a huge honour but it was also quite the challenge. Veronica Gravolin from www.airlisting.com is handling the sale and there were so many elements to be considered to complete the brief. Bespoke art was ordered for both the living areas and the foyer. I know that nothing ever goes quite according to plan and this turned out to be true. One piece of art was mistakenly dispatched to Sydney a few days prior to install, while another was delayed because of warehousing issues due to the recent floods in Brisbane. Covid has created many challenges with furniture deliveries but we always seem to find an alternative or another option just in time. That is one of the things of which I am most proud - we have never let a client down.” As the leader of a team of Interior Decorators and Property Stylists, Kellie Hobbs Interiors specialises in modern, luxury real estate and retail interiors. Consultation, listening and forward planning are the corner stones of achieving what the client wants and to their budget. “The initial consult is extremely important. It’s where we gain the trust of the client by providing a vision of the end product and then settle on a common goal. I am often asked about favourite jobs but with something like property styling, the biggest buzz comes when a property sells for more than $100k over what the client was hoping for which means we have successfully added value. More often than not the cost of the designer will be negated in the discounts they can provide. They know what they’re doing, they understand what is going to work in your space and they know where to get it at the right price. Yo Yo No Mo Felicity Cohen talks about the incredible advances in surgical and non-surgical weight loss techniques. 1. How did you come to a career in weight loss surgery? I have always been passionate about health. I became acutely aware of the struggles and complications that so many people suffer as a result of excess weight and saw that there was a need to reach out and look for solutions for permanent weight loss. I watched my own mother fail on the diet roller coaster and then became aware of the multiple medical diseases associated with excess weight; so many of which can be resolved or put into remission with effective and sustainable weight loss. I started my career in bariatric surgical patient management on the Gold Coast in 2000. At that time it was considered to be last resort, taboo surgery. Doctors were frequently not on board with referring patients and I have witnessed a huge shift in attitude not only amongst the general population but amongst GPs and specialists slowly accepting that for many people who suffer from the chronic disease of obesity that surgery is definitely the best solution to offer a patient to live a better quality of life and free of the diseases such as Type-2 diabetes, Sleep Apnoea, High cholesterol, risk of heart disease, stroke and the list goes on.
2. How has the industry changed in the time you have been working in it? Since 2000 medical technology has changed drastically. Originally we were only able to offer the Gastric Band solution to patients. It is less and less popular as patients for many reasons do not always live well with the band; typically due to 86 GOLD COAST • PANACHE Magazine
lack of contact with a multi-disciplinary team to educate, support and manage them and not in a position to access the adjustments needed to succeed. In the last few years we have seen the introduction of the Sleeve Gastrectomy. The popularity of this procedure has grown and grown. It is a still minimally invasive or key hole surgery, there are no foreign body implants and patients achieve excellent outcomes. Weight loss results are excellent; improvement of medical conditions significant and quality of life changes all make this a very attractive option. I absolutely love the results we observe in this cohort of patients daily. I hear patients tell me consistently that their only regret is not doing it sooner. We are also able to offer mini bypass and bypass procedures. The advantage now of being a full service dedicated bariatric clinic is that we can offer the best procedure for each individual. We now have the Allurion Balloon for patients who need to lose around 10-20kgs (or sometimes more). This is exciting because it is performed in the clinic with no endoscopy or anaesthetic. There is also the Orbera balloon that can stay in place for up to 12 months and the non-surgical endoscopic sleeve gastroplasty is emerging as a favorable solution for patients not wanting to have a surgical intervention. The changes that have taken place over the last 20+ years mean that we can offer best procedure according to individual need and provide the solution that will provide lifelong results.
3. What is the part of your job that is the most rewarding? I love what I do and I am genuinely excited by my work every day. I actually surprise myself that after 20+ years I derive so much satisfaction from helping people achieve their goals.
One of the groups of patients I love the most are young woman who suffer from endometriosis; Polycystic Ovarian Syndrome and other fertility issues preventing them from conceiving and carrying a healthy pregnancy to term. Over the years we have had so many successful “WLSA Babies” it is a joy to observe happy families in the making. For many people who suffer the complications of obesity, it has just got all too much. Within 12 months they are off multiple medications; no more sleep apnoea (sleeping well and far more day time energy) they are more mobile and enjoying life every day. Seeing people who were once sitting on the sidelines of life as observers or chauffeurs to their kids transform into active parents and grandparents and doing all the activities that had always wanted to do but couldn't, is extremely rewarding to observe and share with our patients. The positive stories are endless. So many people wait a lifetime before considering surgery and then they see results so quickly and within 12 months have completely transformed themselves. That is the mix of rewards for me every day! Seeing people live life to the full is fantastic!
4. What is the part of your job that is the most challenging? I would have to say helping people overcome the fear of surgery. Yes it’s surgery but it’s one day in your life that could not only save your life but become the key to improved quality of life forever. Once people get over that first hurdle it becomes so much easier. When you love what you do meeting the challenges daily are just acceptable parts of the day. Accepting the challenges; facing them and dealing with them is the best approach. I believe in a solution to each and every problem. I’m the ultimate optimist!

5. What are some of the most exciting developments you are seeing in the weight loss surgery industry? Right now I am very excited about offering patients the newest available technological advancements in bariatric surgery. The introduction of non-surgical approach to surgery is the best development I have witnessed in 17 years. Just imagine the opportunity to perform similar procedures (like sleeve gastrectomy) without surgery! We are the first Gold Coast clinic to be offering Endoscopic Sleeve Gastrectomy. This will be day surgery only. For many patients this will be an ideal option. I think we will see more in the future that is non-surgical but with equal results as the surgical interventions.
6. When you are not working what do you like to do to unwind? I love to spend time with my adult kids and their partners and nurture the evolving relationship as a parent; enjoying every minute I spend with them. I need to balance my work and lifestyle carefully so as not end up burning out as is common for many entrepreneurs. Fitting in yoga and walking while listening to podcasts helps me unwind and relax. I love to immerse myself in a good book and can’t resist a good Netflix series.
7. What is your favourite way of staying fit and healthy? Keeping fit is essential to me to be productive and positive at work every day. I think if you keep your exercise varied you will always enjoy it and maintain it. I do a mix of gym sessions including spin classes; outdoor fitness and running. My running club community is a part of my life that I don’t think I could live without.
8. What do you love most about living on the Gold Coast? I feel like I have grown up with the Gold Coast over the last 20+ years. I am so grateful to have raised my kids here. The changes for our community are exciting to be a part of. We have more vibrant art and culture growing here every day and we are no longer just a location that supports beach culture; there is more and more to offer locals. Everything is accessible. Our active and healthy community options are fabulous for residents. I love the Gold Coast Marathon and plan to sponsor as many patients who choose to get involved this year. We have wonderful organic and fresh food markets; my favorite is the HOTA Markets. Fashion and food have also changed drastically in 20 years. When I first moved here buying a good baguette was impossible. Nothing is missing here now.
9. Describe your perfect Sunday? My perfect Sunday sometimes starts a bit later than during the week. I might walk with friends or go on a hike if possible. I love to go Stand Up Paddle boarding in good weather as this is the best digital detox! I leave my phone behind and enjoy the surroundings and being out on the water. Fitting in a yoga or pilates class is on the list of favorite Sunday activities and maybe a bathhouse soak or recovery center visit is also something I love. Tell us about your relationship with your body image? I’m like any woman I have a mixed relationship with my body. It’s a love/ hate. My body is incredible – it’s healthy and I am fit but I feel like if something doesn’t fit, my body has let me down. It doesn’t mean I have to be skinny but it means I can get through a gym class and able to breathe. So for me right now it’s about being fit not fitting into the jeans - even though that is a BONUS. Was there a catalyst – a comment, observation, or snide remark that stands out? There wasn’t a particular catalyst for the weight loss this time. I did lose a lot of weight when I had a bad breakup a few years ago and I felt great. When I slowly got back into dating, eating out and drinking wine became normalised and I started to let myself go again. I’m very much an ALL or nothing person so once I let myself go I thought, who cares, which is unlike me and then the weight came back.
can really kick-start the process. Losing those first few kilos makes you feel better and that gives you the motivation to keep going. Why do you think this didn’t work in the long term? Things haven’t worked long term for me because I have never been great with discipline. I’m and all-or-nothing person. I am great at something for three to six months, then I get bored or something will happen. I had a miscarriage and that made me want to eat and drink everything. I didn’t care if I put on weight because I was so depressed and I just felt like CRAP. Sometimes you have a breakup, lose a job or move and you lose your flow of eating healthy and going to the gym. It is then really hard to get back into the flow.
To be honest I never grew up worried about my weight. I was always slim in my teens and twenties. I had a good metabolism so I never worried about it. It was when I hit my late 30’s. I had to think about my weight so started going to the gym, working out and watching what I ate. Up until then I was always quite lucky. How many diets, procedures, exercise regimens etc have you tried?
Tell us about the process involved in the weight loss?
I have never had any procedures done as such. I have tried all sorts of diets. Not extreme though, just healthy and clean eating. I’ve done Keto, smoothie, juice and soup diets. Those sort of things were used to kick-start the weight loss. It’s the first few kilos that are the hardest to get off so if I do something extreme but healthy and get good guidance from a professional it

For me it was the medical weight loss program that included pharmacotherapy (that was an injectable medication once a week) and involved weekly visits to WLSA and working with the fabulous team including the dietitian and psychologist.

How old were you when you first started to think about your weight/look in a particular way?
They have doctors, nurses, dietitians, psychologists and they all speak to you and know where your head is at and why you want to lose the weight. Why did you put it on in the first place? Where you are going what you can do to maintain the weight. Because losing the weight isn’t that hard once you are on the injections, it does supress your appetite, eating smaller portions and it just naturally dropped off. It was easy to go back and say I have put on a few kilos, what should I do? Having access to the psychologist and dietitian is amazing.
Why has it worked and why has it been successful? I was very diligent. The first few kilos came off quickly and that was a great incentive. I did get food delivered that was delicious. I was eating three small portions a day as that is all I wanted to eat so it has been really successful for me. Total weight loss so far? I am super happy with my 10 plus weight loss so far. I would like to lose more but I unfortunately got COVID and stopped the injectable medication. What I noticed is without this help I did get my appetite back and of course a few kilos crept on. I am now back on the injectable medication and the weight is coming off again. How are you going to sustain this change? You can’t just do weight loss injections – you have to exercise and when you eat it has to be healthy food choices. I also do Pilates, Hot Yoga and walk 4 times a week. It is important to maintain fitness, especially at my age with osteoporosis.

The Cognitive Behaviour Triangle was created to explain how and why we think and feel the way we do. This triangle shows that our thoughts affect how we feel which in turn affect how we behave. For many people it is a massive struggle to manage their thoughts, they constantly worry, can’t switch off, or analyse every detail of what has happened. Their past experiences have led them to always feel pessimistic.
Each one of us has over six thousand thoughts every day. If we can gain more control over these thoughts, it allows us to feel better and then consequently behave in better ways. Being able to manage our own mental wellness is vital and yet people often don’t realise they need support until there is a crisis.
Ask yourself questions about your thoughts?
One of the best places to start managing your mental wellbeing is by examining and gaining awareness of your own thoughts. Most people live day-to-day never taking notice of their thoughts. “It’s in my head so it must be true.” However, this is not true. Our thoughts are influenced by our emotions, our mental health, our past experiences, our fears and more. Just because we think it, does not make it true! An easy way to decide if you’re being reasonable is to ask yourself what you would say to a friend if they told you what they were thinking. When it comes to giving advice to a friend, we are usually much more understanding, more honest and less biased.

Raised in Gympie, the Gold Coast based singer/songwriter and multiinstrumentalist, Chris Hutchison (a.k.a. HUTCH), embodies an inspired intertwining of gold-mining country grit and laid-back, coastal charm. Both in person and through his music an overlapping of two worlds is ever-present. Upon the release of his newest single, “Let it Go”, HUTCH masterfully marries an unmistakable country twang with a catchy pop backbone that makes you think that this isn’t his first rodeo. Wind back the clock to the heyday of MySpace in 2006 and a 17 year-old HUTCH was blowing up online with a style of country music that was somehow distinctly Gold Coast. Harnessing this sheer volume of support, he hit the studio and emerged with an album that seemed to resonate throughout the entire community. HUTCH’s style in these early days paid homage to the pop sensibilities that were part of his soundtrack of growing up: Fleetwood Mac, INXS, Eric Clapton, The Police (Sting in particular), though it was the guitar idiosyncrasies and pure emotion of John Mayer that really drove his sound forward. Packaging these diverse influences into a captivating set, HUTCH sold out what is now the fabled HOTA theatre on the heels of his trailblazing debut album. At only 18, he filled 2000 seats to showcase his unique form of country. It was only natural that HUTCH went on to catch the eye of various Australian and international sensations over the next few years, cutting his teeth in the industry as the opening act for the likes of Guy Sebastian, Thirsty Merc, Shannon Noll and Damien Leith. As life goes, however, a career on the road gave way to a family, and HUTCH sidelined his exploits in the limelight to pursue a successful path as a wedding singer and DJ on a slightly smaller stage for the better part of 15 years. Although he was constantly performing and enjoying a life enveloped in music, HUTCH eventually accepted that the big stage was the ultimate goal. He went back to the studio in 2019 to realise that lifelong dream and released “The Truth is Out”, a passionate maturation on his original sound and an instant hit on the Australian country charts. NATALIA LOUISE ARTISTRY Natalia Louise Sanguigno When did your passion for make-up begin? Art was something I really enjoyed at school and that translated to experimenting with special effects makeup when I was 13 years old. Mum bought my first Sephora eyeshadow palette on a trip to New York and that’s when my love of everything makeup began. Special effects followed - doing Halloween style cuts and wounds - and I then decided to do a short prosthetics makeup course during the school holidays when I was 15. This led to me enrolling at the Australian Academy of Cinemagraphic Makeup in Brisbane to complete a Diploma of Screen and Media in Specialist Makeup Services, which I completed whilst in years 11 and 12 at high school. The experience at AACM was truly amazing and when I graduated, I was excited to be the recipient of the ‘Innovative Makeup Artist Excellence Award’ for my work. Were you inspired by someone or an event? My love of movies firstly and a fascination with how films are made. Watching various high profile, special effects make-up artists and then seeing behind the scenes videos on set and how they created special effects makeup for films. These videos helped motivate and inspire me to want to work in the industry. Favourite part of transforming someone? When it comes to special effects, I love it when I receive a brief and must plan out all the elements to complete a character. Creating prosthetics is wonderful, and I especially love the sculpting process. It is such a good feeling when something you have visualised comes to life and is reflected on film or in a photograph. You’ve worked on some films recently. Tell us about the experience, people you worked on and what you learned? I have recently worked on a few, soon to be released, independent films and really enjoyed meeting the crew and actors. They have been fantastic experiences, as I have been able to see firsthand how film sets operate. Working on set with other artists has helped me expand my skills and learn some of the tricks of the trade. I love the team environment on set as well because everyone has a passion for film making and we are all working towards the same goal of creating a successful production. Being on set is such a buzz and it has increased my passion for film making and working in the industry. What direction would you like your career to go? I would like to have a long and successful career in special effects make up in film and television. Travelling the world, working on big budget productions and maybe one day be Head of a Makeup Department on a feature film would be a dream come true. Dream gig? My dream would be to work on a Disney or Marvel film, as I am a huge fan. Any mentors who have helped you along the way? My mentors are all the incredible teachers at The Australian Academy of Cinemagraphic Makeup. They have always supported and encouraged me creatively to be the best of my ability. I will always be grateful to have been able to learn from them. Anything else you would like to highlight?

KRUZ CREATIONS AND MEGAN RICHARDS Cyclone Meegs Determination, drive and an unshakeable belief have propelled Kruz Designs to the top. If there was a way to plug people into a power grid, Megan Richards, or Meegs as she prefers, fizzes with enough energy to power a street. Words machine gun out of her in a high speed flow as she talks about her business, future plans and explains how she manages to fit so much into a single day. “My first foray into business was with a very good friend but after a time we realised that we needed to go on separate journeys. There was no animosity just understanding that we had different ideas and motivations. Photography has always been a huge interest of mine and I taught myself by doing courses, watching, experimenting and using my creative eye to capture images that will resonate. Kruz Creations was founded in 2019 and at first I was doing mainly product photos. My mantra was ‘There’s no way that I am failing’ so whatever it took to make the business successful, all hours, seven days a week, I was going to keep working as hard as possible to achieve my dream.” In a perverse way the restrictions of Covid helped the launch as people looked online for products and services. “It was astonishing how quickly things took off. I had a full time job at first and would then work on the business until all hours. The quick success allowed me to quit and concentrate totally on Kruz Creations. Client work, product photos, E-commerce, E-books, and graphic design were all part of the mix. The huge response was so gratifying and wonderful which allowed me to employ
and then expand my team to meet that demand. We were pre-booked months in advance. One of the catalysts was a strong social media presence and through that we then launched products under the Good Vibes clothing label. That has been incredibly successful too and I have a lot of fun sitting around thinking up new ideas to produce new items for our customers. We are also providing support for the mental health charity LIVIN, a topic that is very dear to my heart.” The range of services Meegs and her team now offer is as long as your arm. Photography for almost everything, business branding, social media packages, web design/ creation and Instagram brand kits are just some of her many offerings. “Every day I start off with a check list of things that have to be done. I consider myself lucky because my background before this was finance/bookkeeping so I understand how to run a business and make it successful. Now I get to utilise all my creative energy in my own business and work with amazing people around Australia. It really is a dream come true. THINGS YOU SHOULD KNOW WHEN YOU SEPARATE For some people, relationship breakdown and separation can be sudden and unexpected. That trauma can trigger a very human ‘fight or flight’ response. In those moments it is normal to feel quite paralysed, unable to decide what to do. What should be done, even when the mind goes blank? In this day and age people have wealth in the form of electronic assets – cryptocurrencies and Non-Fungible Tokens – which can have associated physical wallets, and old fashioned cash, precious metals, jewellery and artwork in physical form. Take possession of these things, and the devices on which they are stored, and put them somewhere safe (e.g. a safety deposit box). 5. Secure electronic records.

The communication you have with your friends and confidantes and your family lawyer, need to be private. Change your email passwords, and add 2-factor authenticators to logins. That way the questions you are posing, and the advice and guidance you receive, are for your eyes only.

2. Beware synchronisation. Modern devices are so clever that they talk to each other. An email you send, or something you save to the cloud on one device, may be available on other devices. Is your partner able to access, in mirror form, everything you are doing on and saving to the device you are holding right now? If so segregate the devices so that they are no longer synchronising with each other. That way you are not ‘watchable’.

Ensure that you have a copy of all your own data, and any data which might be relevant to your financial situation, stored on your own separate device or in your own separate server.
Think about how your finances are arranged. Can your partner log into your internet banking (or that of your business) and effect transactions on your accounts? If so, a password change might be in order just to ensure that the only transactions being undertaken on your accounts are those authorised by you. RULING CLASS Compliance by a body corporate is not a black and white argument.
Within any strata community (including your own Body Corporate) you will find lot owners and occupiers who sit on each side of the fence – should there be more or less regulation, by-laws or committee interference within your Body Corporate? What creates the "best" community living environment? The unwieldy and often complex nature of the Queensland strata legislation provides plenty of stories (good and bad) about community living. As most are aware, members of bodies corporate (as well as the committee who serve the lot owners) are made up of ordinary members of the public. They are not solicitors, accountants, or experts in body corporate management. Consequently, I find it fascinating (specifically, when dealing with a piece of legislation that provides for self-management) that some individuals believe strict compliance with the Body Corporate and Community Management Act ("BCCMA") and associated modules is essential for the day to day operation of the strata scheme.
In fact, it is only in very specific circumstances where the Court or Adjudicator will invalidate a general meeting or resolutions passed at such a meeting based on a failure to strictly comply with the strata legislation.
Although, strict compliance with the BCCMA and associated modules may be best practice, there are several District Court and Adjudicator decisions that confirm substantial compliance with the extensive legislation is sufficient. "Commissioner's Office for Body Corporate and Community Management ("BCCM-Office") (being the exclusive, consumer based body corporate dispute jurisdiction) receives a staggering number of applications which argue that either a lot owner, committee member or the Body Corporate has failed to strictly comply with the strata legislation and, as a result, the applicant is seeking to invalidate a general meeting, or a resolution made at that meeting.

Some examples include: •
a lack of quorum
•
a completed voting paper being given to another person to hand to the secretary, if prejudice is sustained by voting lot owners
•
irregularity with respect to a secret ballot

In the case of The Body Corporate for ‘One The Esplanade’, this issue of substantial versus strict compliance was raised by a lot owner unhappy with a decision of the Body Corporate. The owner of a couple of lots within ‘One The Esplanade’ raised the following non-compliance points: The lot owner only received one notice and agenda of the meeting in the mail. The owner did not receive a second notice of agenda for the AGM addressed to the owner. The owner owned two (2) lots within the Body Corporate and wanted to received two (2) copies of the agenda for the AGM.

The owner submitted that he was unable to vote regarding the recording of a new “set” of by-laws as a full copy of the by-laws were not posted in the mail with the notice and agenda of the AGM.
LEGAL
It is correct that the BCCMA requires written notice of the AGM to be given to “the owner of each lot”. Consequently, the strict compliance is that the lot owner (as the owner of lots 45 and 46 within the building) ought to have received two copies of the notice and agenda for the AGM. Unsurprisingly, this argument by the lot owner was unsuccessful. The lot owner had notice of the meeting, attended the meeting, cast his vote at the AGM and was not prejudiced in anyway due to the failure of not receiving two voting papers. Consequently, the Adjudicator determined that substantial compliance with the legislation was sufficient in that circumstances. With respect to the lot owner’s second argument, it was not disputed that there was a proposal for a “new set” of by-laws to be adopted pursuant to a motion in the AGM. Prior to the holding of the meeting, the Body Corporate agreed that the there was a failure because it did not circulate the “new set” of by-laws with the notice and agenda of the AGM. As soon as its failure was brought to the attention of the agent of the Body Corporate (it's BCM), the Body Corporate rectified the issue by sending a full copy of the “new set” of by-laws to each and every lot owner as additional information. The position of the Adjudicator was to dismiss the allegations by the lot owner because: • The lot owner could not show that any of the lot owners (including himself) suffered any real prejudice at the AGM. A number of lot owners attended and voted at the meeting, the applicant voted at the meeting, the applicant was the sole person to raise a concern with the BCCM–Office by way of its application and no other lot owner (who were all invited to make submissions) raised any prejudice that they have suffered as a result of the “late notice” of receiving the “new set” of by-laws separate to the notice and agenda of the AGM. • The applicant lot owner also failed to raise the irregularity prior to the meeting and consequently, the Adjudicator considered there might have been a waiving of the right to strict compliance with respect to the notice provisions. This situation simply highlights that a Body Corporate is not infallible, but that it must act reasonably in the performance of its general functions and duties. Code of conduct as contained in the BCCMA do not demand administrative perfection, however, the committee does need to try and undertake best practice towards complying with the legislative requirement of BCCMA and appropriate regulation modules.

PASSIONATE PEOPLE Passion is a powerful driving force. When you’re a passionate person, you wear your heart on your sleeve. Being a passionate person is challenging, sometimes heartbreakingly so. It means you lead with your heart, and you put it on the line more often than most.
Radio isn’t the only thing Ali is passionate about, having performed stand-up comedy all the way to the Queensland Raw Finals, and also performing in several recent theatre productions. “I was lucky enough to be in a few musicals while in Hobart – ‘We Will Rock You’ and ‘My Fair Lady’ were the big ones. I danced for many years as kid, and it was really special for Mum to be in the audience. There is nothing like being a part of a musical, I’d love to continue performing here if I’m able to get a role.” Away from radio and performing, sport has played a massive part in Ali’s life. She represented all the way to the Australian Women’s and Mixed Open touch footy teams. “I’ll give most things a go when it comes to sport, although it was only recently I finally had the opportunity to play AFL and cricket for the first time. I distinctly remember crying to my Mum when I was a kid because my three brothers were allowed to play cricket and I wasn’t because I was a girl. It might have taken me until I was 42 but I finally got there.”
Ali Plath Triple M Gold Coast breakfast announcer As a busy mother of four working as a breakfast radio announcer, Ali Plath certainly has a LOT to juggle. “Prioritising the right things in the right order is not my strong point. I’m very happy to leave the pile of clothes to be folded for one to up to 365 days if the opportunity for a catch up with a friend presents,” she said. “Connecting with people is my passion, it’s one of the biggest reasons I love working in radio. Luckily, I have a (mostly) forgiving family!” Ali loves the excitement of radio and that, “no two days are ever the same. Banter and harmless fun and stupidity are some of life’s greatest joys and I’m a firm believer that there’s not enough playtime for adults.” Ali’s journey to Triple M Gold Coast has taken her from the Redlands to Hobart to the Sunshine Coast before she landed her dream gig here at the end of last year. “It certainly hasn’t been a quick process getting here, but nothing this good should come too easy right? I started volunteering in community radio back in 2014 at Bay FM in Thornlands and I’m sure I was TERRIBLE! However, it did get my foot in the door with the serious radio gurus and in 2017 I landed my first big gig at Triple M in Hobart. At the time I was really scared and didn’t know if I was cut out for it, but I knew with all my heart that I’d never forgive myself if I didn’t give it a red-hot crack. Although it wasn’t our initial plan, I ended up living away from my family and doing the FIFO thing for three years. I have a very supportive family and I would not be where I am right now without them.” 98 96 GOLD COAST • PANACHE Magazine
Now settled in at 92.5 Triple M a huge smile appears on Ali’s face when asked what she thinks of her two co-hosts. “Flan is the most hilarious, adorable, Womble-like bestie you could ever have. He loves a hug, you can tell him anything and you definitely won’t get him off the phone in under 45 mins. Spida is equally the most hilarious, protective, GIGANTIC brother. He’ll be the first one there if you’re ever in strife. I honestly feel so lucky to have them both in the studio every day.” Ali is happy to call the Gold Coast home. “It’s quite bizarre because I grew up in Brisbane, but I’ve got this real feeling that I’ve finally landed at home. I just feel at peace here. I’m super happy in my job, plus I have long term high school and touch footy friends here. I’ve now been raising kids for 19 years and for a very long time I’ve dreamt of a paid radio career. I want to make myself, my (now ex) hubby and my kids proud. I couldn’t be more grateful for the sliding doors that have led me to where I am right now.”

Belinda Dawes General Manager Gold Coast Bulletin Why do you love the Gold Coast? What’s not to love? Friendly people, the lifestyle, restaurants, beaches and shopping. Living and working on the Gold Coast has enabled me to have a far greater life/work balance family wise which I love. You have worked in media for most of your career – what is the attraction? It’s such a diverse and fast paced world. No two days are ever the same which keeps you on your toes. Another bonus is the different industries and senior executives you get to interact with along the way. I’ve learnt so much and also had some amazing opportunities through working in media. Highlights include a trip to Vienna for a radio conference for five days, hosting clients at countless concerts and sporting events and many other great experiences. It’s an industry where you work very hard, have lots of fun opportunities along the way and make lifelong friends.
You have a wide variety of connections in the city – how do you think your connections can help in your new role? I’m hoping my network of friends and associates will continue to bring things to the table that they care about and that they think need attention. Together I think we can continue to work with them and help to make a difference in the city. The Gold Coast is on the cusp of becoming something very special. It’s important that everyone is aligned using our individual strengths and talents so we can continue the rapid growth and innovation for the Gold Coast. Describe your new role? My new role is fairly complex however in a nutshell it’s all about growth in revenue and readers, to increase the benefits for our clients either as traders or consumers. It’s about growing partnerships and relationships in the city to ensure we advocate for the Gold Coast and ensure we get the attention and share of voice we deserve. Every city needs a strong local newspaper that will fight for local issues. The Gold Coast Bulletin has been the voice of the city for more than a century and will continue to focus on those issues for the long term betterment of the city.
You left News Corp Aust for Southern Cross Austereo and spent eight years with them. Why the decision to come back to print media? The digital scale of News Corp is what appeals to me along with how important the Gold Coast Bulletin is in the community from an advocacy perspective. The Bulletin can make a difference through driving various campaigns that will help the people of the Gold Coast. I am so passionate about this city and where we are going as a community. Emilee Hembrow SISTER ACT Where were you born and what sort of an upbringing did you have? “I am a born and bred Gold Coaster who has enjoyed the best of both worlds. I consider myself to be very fortunate. Our family travelled a lot and I attended an international school for high school which resulted in me having friends from all over the world.” You have two sisters and two half-sisters – how did that effect you growing up and surrounded by so many females? “Having so many sisters has been the best thing ever. My sisters are my best friends and because I have so many there's always one to hang out with when I am free.” You have stated previously that being an influencer was never really a goal. What was the catalyst for change? “It started primarily because of the reaction I received and when I saw that I could use the platforms to earn a living and be flexible with my hours, it was an easy decision. It gave me the freedom of working from wherever I was, whether that be overseas (as I used to travel a lot) or working from home with my kids. Also I liked the way it enabled me to just be myself and connect in a real way with my followers.”

With so many followers does it seem a bit surreal having so many people following your everyday life? “Having so many followers has become normal if that makes sense. I'm used to it now and love my followers and how they have supported me throughout the years. They feel like friends to me, I try to message back as many as I can and chat to them in my comments.” How do you handle the occasional negative comments? “Thankfully I don’t get many which is great but when I see the occasional one I ignore it.” You announced the loss of your baby at 30 weeks which was heart-wrenching. How have you coped and how have you managed as a family with that news? “I focus on all the amazing things I have to be grateful for and appreciate life a lot differently now. In life good and bad things happen, it's evitable, I choose to grow from the situation, to a better mum, a better wife, a better person. Life is short and I know god has a plan, I trust in him. My family and support system has been amazing."
You have partnered with you sister Amy to launch SSkin in Bundall. Where did the idea come from, what is it and what are your plans? “The business came about due in part to the pandemic. We have experienced the best in the business in Los Angeles but couldn’t travel so Amy and I decided to open a clinic which featured many of the latest cosmetic therapeutics we had experienced there. Everything from IV drip treatment to injectables, facials and NAD+ injections. It is part of our plan to provide Gold Coasters with the best services in the world. We want SSKIN to be something totally unique and affordable in its approach. The plan is to get the Bundall clinic running smoothly and then we want to do something very exciting with more clinics. Our treatments start at $89 for a facial and we go all the way up to $1995 for an all-over non-surgical lifting service. The hottest new product in America is Intravenous Vitamin Therapy (IV) drip infusion, a treatment which delivers nutrients directly into a vein. That will take 45-minutes and cost from $250. They have become a hot-ticket item for bridal parties, girls’ day out or even an opportunity for a group of friends to get together with champagne and food platters and have some fun.”

It’s the study of the planets and stars and their position at the exact moment of a birth and how they influence various life stages. It’s a powerful tool that can help identify and unravel the complexity of life cycles and assist with understanding relationships on both a personal level and globally. Q. Will it be able to map out my future? A. The only way a future is determined is by you creating it. You need to work on yourself first and foremost and address your own challenges, only then can you be equipped with the knowledge and tools to springboard into a positive direction. An astrology chart can identify the current planetary aspects, also known as transits, which are impacting an individual’s chart. Astrology can certainly help you better understand your strengths and weakness, so you can put in a positive action plan to reach your potential. Q. How exactly do you see what’s in a chart? A. It’s quite an analytical process as a chart is determined by the position of the planets on the time, date and place of a person’s birth and this configuration paints a ‘picture’. In other
words, it reveals individual strengths, weaknesses and inborn talents. The role of the astrologer is to be nonjudgmental yet encourage the best version of self. Q. Astrologically speaking, what is currently happening globally? A. Pluto is in the final stages of being in the sign of Capricorn and so we are starting to see the imploding of a global crisis from corrupt governments controlled by large corporations and even the undermining of our own value systems. We are in an era of doubt and warfare and a pandemic. Yet as in all cycles of life this too shall pass as we can reflect on historical events and learn from past mistakes. Q. Does a chart change as a person gets older or they move into different stages in their lives? A. Absolutely. As planetary shifts are part of the astrological process, each individual will be affected and touched by whatever transit is happening in their chart at any given time. These cycles can be challenging or rewarding, however it is important for an individual to understand how a particular transit is affecting them and therefore they can be in a better position to address the issues of concern. Information is a powerful tool. Astrology can be used to help manoeuvre the individual through their life cycles with less trauma and a greater understanding for the best outcome(s). Q. What types of people are consulting you? A. The younger generation are particularly tuned into astrology, but so too is a wider circle of people, many of whom are getting more in touch with their spiritual side and looking within for answers. HOW DID YOU MEET? We met at the wedding of our good friends Lauren and Steve on Waiheke Island in New Zealand in late 2016. The bride had been trying to match us up by sitting us next to each other at the wedding, however as fate had it we met and shared our first kiss following a prewedding beachside gathering the night before!
HOW DID HE PROPOSE? Dave proposed on Mount Washington during a trip to British Columbia in February of 2020 (right before COVID hit!). Dave got down on one knee during a morning alpine walk and had arranged a photographer to hide in the trees to capture the surprise moment. He even had ‘Marry Me’ written in the snow in maple syrup!
WHERE DID YOU GET MARRIED AND WHAT WAS THE MOST MEMORABLE MOMENT OF THE DAY? We were married at the gorgeous The Valley Estate in Currumbin Valley. The most memorable moment was when we entered the reception area as husband and wife for the first time. The Valley Estate has an incredible mezzanine balcony overlooking the grand reception area, which sets the scene for a grand bride and groom entrance from above, down the staircase. ‘Signed, sealed, delivered I’m yours’ by Stevie Wonder was played as we entered a room full of our loved ones who were up singing and dancing.
HENS AND BUCKS DAYS/NIGHTS?
WHERE DID YOU GO FOR YOUR HONEYMOON?
We didn’t have one! However, as we had interstate guests we had pre-wedding events prepared at The Star and the new hotel, the Dorsett Gold Coast, the Thursday and Friday prior to the wedding which ensured by Saturday, everyone was well acquainted and well into the swing of things.
Following the wedding we enjoyed several days in the Barossa, South Australia. We stayed at a magnificent cottage on Maggie Beer’s property, which is situated in the middle of an orchard. We would highly recommend this accommodation to anyone visiting the Barossa. We then flew to Hamilton Island to stay at Qualia. As parents to two young kids, this was the perfect relaxation we needed! Our highlight was our charter to Whitehaven beach on our final day, where Qualia sets up champagne on the beach for your arrival to soak up every last minute of wonder.
WHAT WAS THE STANDOUT MOMENT OF THE DAY? We were so lucky to have our good friend Ange Anderson marry us. It meant the world to us to have her as part of our day in this way, and her attention to detail was above and beyond every step of the way! Another beautiful memory will be Dave and his 81 year old father on the dance floor at night’s end.
BEST ADVICE FOR OTHER COUPLES? Everyone warns you that the day will go quickly, but we don’t think anything, or anyone can prepare you for just how fast it will go by!! Be in the moment as much as is possible! Also, having an all-purpose wedding venue ensures a wonderful relaxing transition for guests from ceremony – to garden party – to reception. 111 WINTER • 2022 113

MAD HATTERS TEA PARTY Family fun over the Easter long weekend when the JW Marriott Gold Coast Resort and Spa hosted a Mad Hatters Tea Party. Delicious cakes and savoury treats were on the menu as young and old enjoyed a fabulous themed feast. RED BOOT RACE DAY Ronald McDonald House is something nobody wants to use. Its purpose is to keep families together by providing accommodation and support while their seriously ill child is receiving treatment. To help with the ongoing demand the Events Centre at Aquis GCTC was the scene for an epic fundraising race day. Over $200,000 was donated, money which will help to ease the anguish of the families supporting their sick child.

BRISASIA FASHION FESTIVAL

A feast of spectacular fashion was served up at the inaugural BrisAsia Fashion Festival showcasing a bevy of local talent with a particular focus on Brisbane-based Asian fashion designers. Presented by Brisbane City Council and coordinated by local fashion identity and stylist Liz Golding, the one-day festival was comprised of two impressive runway shows attended by Brisbane’s die-hard fashion fans. Guests enjoyed a buzzing pre-show party before taking their seats for a dazzling display of fashion and style. The first-time event, a part of the annual BrisAsia Festival, featured collections from design labels including Akira, Moreno Marcos, Murriiquu Couture, Joteo Studio, Anannasa, Hestia, Luna + Sun, Pagoni Jewellery, Liz Clift International and Sajo Designs. AN EVENING WITH ST HUGO AT EMPORIUM HOTEL The wines of the St Hugo label were the star of the night at Emporium Hotel South Bank’s exclusive An Evening with St Hugo event. With a backdrop of stellar views from the posh hotel’s Level 21, a select gathering of wine aficionados were indulged with some of the Barossa Valley winery’s best drops including their St Hugo Barossa GSM as well as both the Eden Valley Riesling and the EV Chardonnay, all complemented by delicacies from Emporium chef James Gallagher. Azra KUJOVIC *************************** Are you a born and bred Gold Coaster? I was born in Sarajevo, capital city of Bosnia Herzegovina, and migrated to Australia with my family in 1994 and grew up in Mermaid Waters. What school did you go to? I was educated in Europe. In Australia, my senior high school years were at Merrimac State High. During my High School years I became involved in community service and became a president of a youth club for five years and have received Citizenship Award for community contribution. I was elected to visit the Brisbane Parliament House to meet the Premier of Queensland Hon. Rob Borbidge and to deliver a speech in Parliament House 'I Have a Dream' on the vision for the future of Australia and lessons of war, love and hope. Where do you work? Whilst attending Griffith University I worked at Myer and progressed to team leader role. I then joined Louis Vuitton Moet Hennessy (LVMH) group working for DFS Galleria luxury duty free retailer in Surfers Paradise as sales manager. I progressed through the ranks of DFS and was the youngest General Manager at the age of 27. I was then promoted to General Manager DFS Galleria Customhouse in Auckland where I stayed for four years. I returned to the Gold Coast and took up the role of Gold Coast Manager at TAG Heuer, still part of the LVMH group. Why Do You Love TAG Heuer? I have now been with TAG Heuer for five years. For more than 160 years the company has a rich history in Swiss watchmaking combined with a zest for innovation. I have always had a great appreciation for history and the art of watchmaking and the brand has had a lasting impact via innovation and design since 1860. Whatever you do... do it with love and know that choices we make lead the life we live and remember to put service above self and have compassion for one and all. Thoughts on social media? Great paradox... both positive and negative. The responsible use and moderation is a must but more education is needed for younger generations to raise awareness on pros and cons. What do you love about living and working on the Gold Coast? I have lived in Europe, Middle East and New Zealand but the Gold Coast is where my heart is anchored. Gold Coast provides a great lifestyle, beautiful contrast of beaches and hinterland and access to world-class educational facilities and infrastructure without the hustle of big city living. Most of all, Gold Coast has many incredible people and a great sense of community spirit that make this a truly remarkable city to be part of, live in and cherish.
