It is almost hard to believe that this is our third issue. Since the spectacular launch of Gold Coast Panache Magazine at the JW Marriott Resort and Spa in late July last year I have been inundated with messages of congratulations and support. Yes, I think this is the premier lifestyle magazine in Queensland but the team and I are constantly striving to add great content and are continuing to improve. It is fun, bright and beautiful just the way I like it.

This year we we able to sit down and talk to the beautiful and inspirational Courtney Hancock for our cover story. One of the premier athletes in Australia, she is a champion in and out of the water. Determined and focussed when she is racing and training but away from her sport she is a woman who loves to dress up or kick back with friends and family. We are also super excited about her engagement to Nick after six years of dating – we offer our congratulations. Like so many our life has also been impacted by the Covid-19 pandemic. The Gold Coast is by nature an entrepreneurial city but the devastation that is happening across our tourism sector is heart-breaking. Good people are struggling to cope both financially and mentally so I am asking, if you are able, to please get out and support a local business. I did test positive as did Bailey our son but my husband Simon and daughter Zoe thankfully were able to avoid the disease. Given the importance of Simon’s work at OMB Solicitors, he isolated from my isolation to ensure he was able to continue his legal duties. The symptoms Bailey and I had were quite mild – headache, runny nose, and a sore throat – so it was more than bearable. I feel so very sorry for anyone who has had members of the family or friends die because of this virus. My mother Gloria is in the high risk category so we were very careful to keep her as safe as possible and away from big crowds or places we deemed may be unsafe. As a family we are undergoing some changes. Bailey finally got to have his TSS formal after three cancelled attempts. He has been accepted into Bond University to study for a law degree and he is incredibly proud that he will get the chance to follow in Simon’s footsteps. He also has a ready-made tutor at home to help with any difficult parts of his studies. Zoe is in her second last year at her new school. The change in her outlook both academically and emotionally has been enormous. It was a tough decision to make the switch but it has paid off for her which is such a relief for all of us. She is so much happier and settled. Her hope is to go on and study medicine but there is a lot of work to be done to get to that level however, I know she can do it. As a family we were able to enjoy some time at our holiday home in Pottsville over the Christmas/New Year break. It is always a special time for us and we get to create new and fabulous memories which we will always treasure.

KAREN PHILLIPS A home grown local who is doing more than her share to improve the lives of those in need in the community.

How did growing up in Coolangatta/ Tweed Heads shape you? It really was an idyllic lifestyle growing up a couple of streets from Greenmount Beach, summers spent at the beach and being involved in the local community endeavours. Having grown up locally, I am immensely proud of our region and the mature city that we are becoming. My first job was at the legendary Coolangatta Pie Shop. I was only 14 and pretended to be 15 so I could work the weekends to save for my Rotary student exchange scholarship to Canada. I learnt an immense amount about customer service and good oldfashioned values from their management. You famously entered Miss Lady Finger in the Tweed Banana Festival. Did that give you confidence for your future endeavours? Being named runner up in the Miss Banana Festival gave me enough confidence to include it in my resume when I moved to London, which in turn landed me a fabulous job. Apparently the boss wanted to see what a “Miss Lady Finger” looked like and once I was in the interview, he couldn’t decide between the Oxford graduate and the journalist from Tweed Heads, so he hired us both. I am not sure the title would earn the same brownie points nowadays, but back then applying for a job was a little different. And yes, I still have my sash! You’ve worked on some large scale projects both here and overseas. List some of those experiences and what you learnt? In launching major hotels, integrated golf resort developments and commercial projects both in Australia and overseas, there have been many highlights. For me having worked with visionary and inspiring trailblazers that realised their ginormous dreams has been very rewarding. To drive past Royal Pines Resort or the Oracle at Broadbeach all these years on, I feel immense pride knowing the original vision behind their success. Your Early Risers Women in Business organisation has been a long running success. How did it start? As Australia’s longest running business women’s breakfast series, next year will be our 30th anniversary. We’ve featured over 850 celebrities, titans of business and sporting legends and most importantly, the events have raised well over $2million for local charities. I originally managed a breakfast club for Southern Pacific Hotels

for many years. After they ceased hosting it, I didn’t want that essential fundraising for local charities and all-important networking for women in business to end. I took a giant leap and launched my own program and with the support of partners like Southern Cross Austereo and the Bulletin, here we are almost 30 years on! You’ve hosted some amazing guest speakers at those breakfasts. Who are some of the more memorable and were there any behind the scenes disasters? The awe-inspiring Jane Fonda was a stand-out. We produced the largest event for her world book tour. Over 1,300 guests gave her a standing ovation as we walked into the sold-out convention centre auditorium - it was a real goose bump moment. Jane loved the experience so much she asked her tour manager if she could stay on the Coast longer. I still have people come up to me and say how remarkable that event was, which makes me very proud. Olivia Newton-John OAM was spectacular as was Ita Buttrose AC, OBM and Dame Quentin Bryce AD, CVO and so many others. And yes, there have been some backstage antics over the years, but a professional never tells!! You were named Gold Coast Citizen of the Year – what did that mean to you? I was incredibly honoured to receive this unexpected recognition. It has been such a humbling experience and has provided me with a greater opportunity to share the importance of ‘giving back’ to different audiences. Talk about your involvement with Vinnies CEO Sleep out as a Founding Ambassador. How did it start and has it changed your outlook? Even in the current turbulent times, the Vinnies Gold Coast CEO Sleep Out was the number one charity event staged on the Gold Coast last year raising a whopping $656,561 for our homeless. It is remarkable to witness captains of industry and the community step up for this importance cause each year. Homelessness is on the rise, especially in the teenage and older women segments, and by sleeping rough for one night it shines an enormous light on this escalating issue while funding solutions for homelessness. Your corporate work used to take you around Australia before Covid. Are things picking up again? While many of my national and international speaking engagements

shifted online, live and hybrid conferences and events are back this year which is very exciting to see. For me this extraordinary time has provided the opportunity to review key business anchors. Being agile and open to new opportunities has certainly been vital. You had a very bad fall when you were overseas many years ago which dramatically affected your life and health. How have you managed to get back on track? Having that near death experience in Bali certainly blew the wind out of my sails. It changed a lot of things for me physically, like not being able to have any pressure put on my back, to no hugs and not being able to wear a bra for a number of years (which some might see as a good thing). I thank my lucky stars it wasn’t worse, just a millimetre and it would have been a very different story. Biggest influence/mentor on your career? My first client Greg Cox from Southern Pacific Hotels had a significant influence on my early business career. His wise counsel assisted me greatly, considering I was only 27 when I launched my corporate communications company. I have learned to ask for advice when needed from those with smarter business heads than mine and have received great lessons from wise and wily leaders over the years. Favourite way to relax away from work? Taking a long forest walk is one of my favourite weekend pastimes, or a ‘green bath’ as it has become known. Nature is such a wonderfully restorative linctus.

COURTZ GOLD A champion in or out of the water, Courtney Hancock talks about life, training, racing and being a better person. Statistics in sport tell us the basics. Wins, losses and not much else. Nothing about the training, grit and determination in competition nor the highs and lows that affect the athletes. Over her 16 year career Courtney Hancock has won multiple individual and team events including four Australian Surf Swim titles, two Australian Ironwoman and three Kellogg’s NutriGrain Professional Ironwoman Series titles. Add to that her fourth win late last year in what is the Melbourne Cup of her sport - the lung searing, leg burning endurance race that is the Coolangatta Gold. Those highlights never reveal the endless hours of training away from the spotlight. The early morning sessions in or on the water, the gut wrenching gym sessions and the time spent giving her body the chance to recover before doing it all again. Her training and dedication truly epitomises the loneliness of being a long distance athlete. For Courtney, her path to greatness began at Nippers at her then home club in Sawtell. “The area has a huge love for surf lifesaving and some incredible athletes come from that area. We lived not far from the club so it was a natural place to hang out, have fun and compete,” said Courtney. “Mum and dad wanted my sisters and I to be safe in the water

so the club was our playground. It probably clicked for me when I was seven and boys and girls would race over a mini course and I would aim to win every time. Some of the boys weren’t too impressed by that,” she giggled. For someone who is the true definition of a ‘water baby’ there was one event she hated. “Swimming races! I could swim but in a surf race everyone is side by side, head to toe and you always get kicked in the face so I used to hang back and let everyone go past me. I ended up going to the NSW State Titles in the Under 12s and Dad knew my fear of getting hurt. His solution was very simple – go as fast as possible and get way in front so that they can’t kick or hit me. It worked and I won so that was a defining moment. I continued training and competing and my big breakthrough was at the Aussie

titles in the Under 16’s Ironwoman. I was still 15 so in some cases the girls were almost two years older. That win was a huge thing for the Sawtell Club which I loved because they were all the people I had grown up around and who were my friends. Money was never a big consideration for me but when I turned professional I won some prizemoney which helped me to train and continue doing what I love.” Her main idols in her formative years were the legendary Karla Gilbert and Trevor Hendy. “I have been competing at the highest level for 17 years and from a young age they were my idols. I count myself fortunate that we are now good friends.” For most elite athletes what compels them to quit is not competing but training so how does she cope? “In a weird way it’s not too bad because there are four disciplines – swimming, ski, board and running – so you get to do different things all the time. It helps to keep me fresh. I was in great shape before the last Coolangatta Gold but weirdly the first two hours felt terrible. But knew I had done the work and as the ocean is my happy place I pushed through the discomfort and after that I started to feel much better. Overall it was probably the best race I have ever done because of the way I finished.” Away from her busy life Courtney has done many things. A contestant in 2016 on ‘I’m A Celebrity, Get me Out of Here…’ in South Africa. “My time was short in there but it did teach me the importance of being selfless in such an environment. Treat people around you as you would a family and don’t expect everything to be exactly your way. I’ve also started ‘Courtz Crew’, my on-line mentoring course, which is available to anyone who is interested in achieving their goals. It’s not just for athletes but is more about life balance. Also at my club, Surfers Paradise, or anywhere I try and be available to help

anyone if they ask me about my training, diet or competing. The aim of the course is to show how being a happy, positive person can have a great influence on those around you. I would have loved to have that opportunity and influence when I was young. Social media has made such a huge difference in how I can be reached too.” She came to Northcliffe SLSC, which at that stage had the best iron men and women competitors, from her home town of Sawtell and realised immediately that this was different. “There were 10 top competitors in the club and I was the youngest. My sister Bronnie came the next year to join me but I quickly realised that going from Sawtell to Northcliffe, the rivalry was going to be very different. Competition makes you stronger and better but I was really blessed to come from a beautiful family who were always there to support me. Pat O’Keeffe, who passed away five years, was my coach then and he saw potential in me plus he and my father, Richard, got on really well. Three training sessions a day and at that stage I had barely paddled a ski but ended up winning my first Australian AUTUMN • 2022 17

room. A supreme athlete competing in one of the toughest endurance sports on the planet who has never lost her connection to those around her. An uncompromising competitor who gave her all during every race and training session but once the race was done simply wants to be one of the girls and get out there and have fun. She is that rarest of people – a throwback to an era when competition was fierce but friends were made for life through that same competition.

Real old school coaching which I didn’t mind because it suited me and made me work harder. He did say something when I was 18 which I still carry with me. He said I was the only person he had ever trained who reminded him of Karla Gilbert. He was everything I could have wanted in a coach. His mantra was that if anyone said anything mean about you it was because they were worried about you. I never cried, got upset or missed a session – I simply wanted to be as good as I could be.” It’s difficult to get Courtney to give herself any praise for her multiple accomplishments but, when pushed, she gives a thoughtful answer about what makes her such an extraordinary athlete. “Dedication and training hard of course but lots of people have that although I do feel that I have a real connection to the ocean. The biggest thing besides that is I am so grateful for everything – catching a bomb wave, hard training sessions, competing – in essence it is living in the moment.” Away from the water she loves dressing up and going out. “I don’t have much time for shopping in stores but I’m a demon on-line. Any opportunity to wear heels and I’m there,” she laughed. “I tell my coaches that high heels are 18 GOLD COAST • PANACHE Magazine

good for my calves. Whatever the occasion I want to be the best version of myself.” That philosophy will also apply to life after competing. “I have quite a few things in mind which I don’t want to reveal as yet but if everything goes to plan I will have a wide variety of interests to keep me occupied. That includes mentoring and training future athletes and helping anyone I can to be a better version of themselves. Ironwoman racing has been a long, beautiful chapter in my life but I know it has to end at some point so there are things being put in place now.” Which brings us to her fiancé Nick Buchanan. “We have been together for six years now and just before Christmas he proposed on the beach (where else) and I of course said ‘Yes!’ He is such a beautiful man – tall, dark and handsome – with a great soul. We first met at the Noosa Triathlon Festival and he approached me but I, and every other woman in the room, had already noticed him. He is so humble and has no idea how good looking he is but Nick is my forever. I truly think we were fated to be together and lots of my friends have said the same thing which is lovely to hear.” Wedding plans are still to be finalised but they have found each other and will live happily ever after. How do you sum up Courtney? Tall, beautiful and with a physical presence, aura and mega-watt smile that fills a

Attending school and getting an education is an all-important part of shaping us for life’s journey. We asked some prominent women for their memories from their time in class during those formative years.

Deb Kells-Roach Where did you go to school? For my early education it was Harristown State School and then for my senior years it was Harristown State High School – both of them in Toowoomba.

Favourite subject? A bit of diversity here because I loved Home Economics and Physical Education

Favourite teacher? Mrs. Caldwell Best memory at school? Those sport days when you could pick what you wanted to do and my choice was always roller skating as I used to skate every weekend and loved it. Academic or sporting achievement? I was not the smartest or fastest but I always tried What did you want to be when you grew up? Hairdresser Is your life now what you expected it to be? I never dreamed of how my life would turn out. I have an amazing career and have just celebrated 25 years in radio with Southern Cross Austereo.

Riely Saville Where Did You Attend School? I moved around a few times but the primary school I spent the most time at was Saint Francis Xavier in Runaway Bay. In high school I went to Trinity Lutheran College for the ballet programme until achieving my dream of being accepted into the prestigious Australian Ballet School at the age of 15. I then packed up and moved to Melbourne to train six days a week. Favourite subject? English and Drama - I was a real bookworm as a kid and also loved creative writing. And of course always loved being on stage. Favourite teacher? Mrs. Western - she was an older woman, and very kind. She really believed in me and really wanted me to become a writer but I was too obsessed with ballet. Did you get any awards? High Distinctions in my Ballet Exams and two scholarships while I was at The Australian Ballet School. Sports or academic? NO! I just wanted to dance! What was your friendship group like? In primary school I seemed to stick more to having just one or two close friends but in high school I hung out with a larger group of girls who were all really lovely. Ballet school was a different beast entirely. I was very good so I was often given better roles than my classmates and even those older than me, which resulted in being bullied terribly. Tall poppy syndrome is a very serious and unfortunate issue in Australia.

What did you want to be when you left school? A ballerina. Is life how you thought it would be or better? Better!! As a child, I really had the blinkers on and I was incredibly disciplined. All I wanted was to be a ballerina and I did it! But what I didn't know was that the world of entertainment is HUGE! And I would go on to have a successful, international career working for companies like Disney, Warner Bros., Universal Studios, Kanye West, Royal Caribbean International, Dracula's Cabaret, Pink Flamingo and much, much more. I got to play all the characters I fantasised about being as a child and now I even get to boss my friends around and create my own shows - just like I used to do in the lounge room but with much bigger audiences. Where did you go to school? I went to Bingara Central School to year 10, and then Warialda High School for years 11 and 12. Love, loved it. I had a special licence to drive a battered up VW to and from school – I lived about 50 minutes away. Man if that VW could tell stories! This is in north western NSW. Bingara is a teeny tiny town of 1000. Warialda is slightly bigger and has the senior high school. It’s also home to Crusher Cleal (famous ‘80s footy player) and the Warialda Wombats – the local footie team.

Where did you go to school for primary and senior? Korowa Anglician Girls School, Melbourne, Victoria. Favourite subject and why? Sport because I was always good at all sport except netball. Favourite teacher? The Principal as I spent a lot of time in her office. Best memory at school? Being with my friends.

Favourite subject? English and Geography.

Did you get any awards at school? Yes Sports Captain.

Favourite teacher? My all-time favourite teacher is Mrs Wilson who was my kindy teacher. I can’t remember what I did last week, but I can vividly remember Mrs Wilson being the most wondrous human in my world when I was five years old.

Did you love school and why? Neither loved nor hated it.

Best memory at school? That battered up VW! Also, in Grade 12 I snuck away to watch a Violent Femmes cover band play in a town two hours away, and was underage. Midway through a set, the lead singer called my name out and I thought BAM, this is my Courtney Cox/Bruce Springfield moment as I pushed my way through the crowd to the stage. Alas, my Dad had called the club and told them to kick me out. It was a spectacular fail on my behalf.

Best friend? Had several. At school we had a close group of 6. What did you want to be when you left school? Flight Attendant. Is life how you thought it would be or better? Life is great. I have never spent my life wondering what if. I always achieved what I set out to do.

Academic or sporting achievement? Mmmm, I won a national public speaking competition in Grade 12 – at the national finals we had to run to an op shop to find a blazer at the last minute, our uniform didn’t have one!!! I was pretty nerdy at school, studied my butt off, and always got better than solid marks. I was utterly tragic on the school sporting field and swam like a rock, but I rode horses competitively and have a few grand champion ribbons I still dig out to relive my glory days. What did you want to be when you grew up? A vet and I was accepted into Veterinary Science at University but realised I couldn’t put an animal down, even when it was needed, so switched to Communications. Oh, and PS, I still haven’t grown up, so the world remains my shelled prawn! Is your life now what you expected it to be? Wow – what a question! I really don’t know what I expected life to be like. I know that I am eternally thankful for the life I have – a current husband (Ha! Ha!) who I adore, two incredible kids, three dogs and a circle of bloody stoic brilliant people to call friends. I love what I do, and get to work with truly inspiring and interesting people and places. I also get to help people, raise money when I can, and when possible, stop and let the sun shine on my face. I work super hard, and don’t expect to finish doing so any time soon.

What did you want to be when you grew up? Lawyer but I switched to banking. Is your life now what you expected it to be? Yes, but I didn’t expect the hardships along the way. Life has been great mainly and has given me trips overseas, met some amazing people and been able to attend some amazing events. I am very fortunate to be able to have these opportunities. Most of all though the amazing friendships I have made and my beautiful family. I am incredibly grateful and thankful.

Emma Bain Where did you go to school? Faulconbridge Primary School (Blue Mts, NSW. Yrs K-6), Springwood High School (Blue Mts, NSW. Grade 7), Alfred Deakin High School (Canberra, Yrs 8-10), Lake Tuggeranong College (Canberra, Yrs 11-12) . Favourite subject and why? I had better say English as I’ve made a career out of words! But I was definitely partial to Drama….what 16 year old isn’t?!. Favourite teacher and why? I had a fantastic English teacher in Year 11, Mr Gannon. He treated all his students with an abundance of respect and allowed us to ask questions and really created a fun atmosphere for learning. Best memory at school? Addressing the graduating Year 12 class as Student Representative President. It’s a great age for optimism and possibilities, and the crowd was pumped. Academic or sporting achievement? I was awarded the Caltex Medal in Year 12, recognising all-round academic and sporting achievement. I played water polo all through school, representing at state and national level, culminating in being selected in the Australian School Girls and University teams. What did you want to be when you grew up? I wanted to be a news reader, just like Sandra Sully, (who is still professionally aspirational today). Is your life now what you expected it to be? It’s funny, as you grow older you realise that all the dreams of your younger self really just add up to wanting to be happy. And if that is the measure, then I am grateful to report that life is turning out as hoped.

Jacqui Latimer Where did you go to school for primary and senior? Timbumburi Public School and Tamworth High School Favourite subject and why? English. I loved reading and writing and the how the written word can describe something so vividly. Favourite teacher? Mrs Vyner, my senior English teacher, was incredibly supportive and nurturing in her teaching and she taught my favourite subject. Best memory at school? My friendships particularly with my beautiful friend Karen. Despite living in different states and not seeing each other as much as we’d like, we’re still as close today as we were then. Academic or sporting achievement? I competed in

dressage throughout my childhood and teenage years. We travelled to competitions nearly every weekend and mostly to Sydney which was a 5-6 hour drive from Tamworth in those days. At 14, I won NSW dressage champion which as a country kid, was unheard of as typically a city kid would win.

What did you want to be when you left school? A journalist which I became up until I had children. Juggling children and journalism was hard as news never stops and neither do children. Is life how you thought it would be or better? I would have to say no. Growing up in country NSW, I never expected to be living on the Gold Coast. It was always a vacation spot so I’m thrilled this I where I ended up. As much as I had planned to continue with journalism, it wasn’t meant to be. I love marketing and communications, and I have an amazing job with a great company. Most importantly my two beautiful children are my world and I could never have expected to have such amazing children - I’m truly blessed. AUTUMN • 2022 21

Cassandra Stephens and Dylan Alcott – This was a bit of luck because I just happened to be at the Emporium Melbourne and saw Dylan Alcott, the current Australian of the Year, doing an interview outside the Nike store nearby. I am a huge fan and couldn’t resist asking him for a selfie and he kindly obliged.

Karen Smith and Bill Paxton – This was taken by Regina King at the premiere of ‘Twister’ at BCC Robina Cinemas in 1997. Bill was a real professional and so easy to work with but my main memory was the after party at Shooters. It was so good. Sadly Bill died in 2017 of a stroke after heart surgery. Liz Clift and Stephanie Powers – One of those magical things that happen occasionally. I was r Drive a Sony attending the World Cup Polo in Palm Springs and ended up having dinner with Stephanie Powers. She was famous for her role in ‘Hart to Hart’ which she starred in with Robert Wagner. It was a fun night. Celeste Barber and Sonya Driver – I am the founder of Eco Tan and became friends with Celeste through Instagram. She is amazing how she can get things going and we teamed up to raise money for Rafiki, a charity that supports traumatised children. - This picture was taken whilst filming a television movie “Silent Predators” in Oxenford. I was cast as a lady who had moved into a new housing development which was infested with snakes. Harry Hamlin played the Sheriff and Jack Scalia was a property developer and they were the lead actors. Both were incredibly nice and approachable. I had a great conversation with Harry as he had just married Lisa Rinna from Housewives of Beverly Hills. I had always had a crush on Jack Scalia, he was a former Jordache jeans model, and he actually invited me back to the Marriott to have a drink, but I told him “No, that I was happily married! Alfie Langer and Kristy Mehrtens – We went to Caloundra many years ago on a holiday and ate at Alfie's restaurant on the waterfront there. We were with another family, a friend from university and were having the best time. Alfie was lovely and spent a fair bit of time coming over and hanging with us and joining in. My friend has a wicked sense of humour so it was a fantastic night. I lived in Brisbane when the Broncos won their first premiership and the many finals/ premiership that followed so my mum is a massive Alfie supporter. I asked if I could have a photo taken to give to her and he was happy to do it.

Felicity Cohen and Janine Allis – I met Janine, the founder of the Boost Juice franchise juggernaut, at a digital marketing conference in Sydney. She was a beautiful and inspiring speaker. There were some key “gold nuggets” that I took away after listening to her share her own business challenges and successes. What struck me also was that it was shared with a smile and authentic kindness.

Tanya Driscoll and Deborah Hutton – This was taken when we had our place at Magenta Shores, a Mirvac Development, in 2011. They would hold dinners and the the owners on site would attend. Deborah was the ambassador for the Gourmet Travellers Dinner with Mirvac that’s how we meet her. She was a genuine and lovely lady.

Winning Magic Millions Fashions of the Field was such a thrill for me. While I do love dressing up and fashion, I originally moved to the Gold Coast from New Zealand four years ago when I turned 18 to study for my commercial pilot’s licence. After I received my citizenship - by descent through my mother - I was able to get a student loan and start as a private pilot. I now have two more CPL examinations and around 80 more flying hours to go. Once I complete my last two exams I can then sit my private licence then work further towards my CPL licence. My other great love is my sustainable swimwear and active wear label Lunaa Swim. During Covid I took a bit of a break from my flying and focused on my brand, as I was uncertain of the future of flying. It was a dream come true to be able to work on my brand I had started at the age of 16, with hopes of having it made locally and with sustainable fabric. With Lunaa Swim I decided to create limited product drops to minimise waste and over consumption. Creating quality over quantity is my mantra and products that last without colour damage and loss of elasticity/fit. The biggest lesson that I have learnt is to never give up, there were so many times where I thought, ‘Why am I still trying, what am I doing that is not working?’ I never went to business school, I simply learnt everything myself and everyone that I met I would question their successes and failures so that I could take it on board for my own business. I’ve learnt how to create a website, photograph and video products, edit videos, work with influencers, learn about Facebook and Instagram ads, find a manufacturer that is reliable and local, design my own logo and so much more. There’s always something new to learn each day, and more ways of improving. The more I’m learning, the better my brand is improving and I get a better understanding of running a small business.

I also competed in Miss Universe Australia last year, as I wanted to become a voice for younger people to start speaking up about my past experiences. From that I was asked to become an ambassador and voice for the Stand By U Foundation which supports domestic violence victims in Australia. I was able to promote the importance of feeling safe and speaking up about DV situations. The SBU Foundation have created safety devices to assist adults and children living with DV. Miss Universe Australia helped me to gain more confidence in myself so that I could help others, I ended up placing in the top 12 for which I am really grateful. I made some amazing friends along the way, including one of my closest friends, Thelma Rodriguez. She inspires me so much and taught us to wear our smile with pride, to believe in ourselves and be confident in our own skin.

This exclusivity is a result of the measures taken to prioritise ethically conscious practices throughout the entire production process. Slow fashion is the way forward. A sentimentalist at heart, Lisa loves to custom make bridal gowns, bridesmaid dresses, formal dresses, statement pieces and for other special occasions by request. HER STORY The eponymous label was born on the Queensland coastline from Lisa’s creative flair in designing for her own wardrobe. Inspired by vintage collectibles, bohemian style, free-flowing fabrics and the unusually beautiful, Lisa was often approached by curious individuals wanting to know where she shopped. Commissioned originally to create one-off pieces for clients, Lisa’s designs were gaining word of mouth acclaim. In the summer of 2006, she took a leap of faith and launched her namesake label with an exclusive, limited edition collection of original designs. The rest is history. Her designs are now loved by women all over the world.

CONSCIOUS CREATIONS The designs are made in Australia by local machinists who share the same appreciation for beautiful, well-made garments out of responsibly sourced materials. The Lisa Brown label remains one of very few Australian labels to operate in this way.

Designing Woman You started in 2006 – what was the reason for taking that first big step?

I started making my own clothes and selling to a small local boutique prior to that although 2006 was a big step for me. I participated in ‘The Source’ at Sydney Fashion Week, which is where I started to increase my wholesale clients. At one point I was supplying 70 stores throughout the country.

You pride yourself on being Australian owned and made. Why do so in the era of offshore everything and have you been amazed at the skill of your artisan machinists? I love the fact that we can keep the local artisans continuing their craft. I feel some kind of responsibility with the Lisa Brown label to keep this going, however, it is becoming harder and harder to find local manufacturers. I will keep using my skilled local machinists whilst the Lisa Brown label is alive. Do you have a particular woman in mind when you design?

No one in particular. I feel the label is based more around lifestyle. It has been described as beach to bar attire, but I would like to think the label has evolved and has a few more event pieces now. Do you have any designers or creatives who have inspired you? I love Olivier Rousteing’s story. He is such a talent. He started at 18 with Roberto Cavalli and is now the creative director for Balmain, a position he has held since 2011.

Any famous clients that you can mention?

Kate Hudson was here shooting a movie and bought one of my dresses and a necklace from the Tedder Avenue boutique years ago. I’ve also spotted Venus Williams, Kris Jenner and Aussies Delta Goodrem, Dani Minogue and Shelley Craft wearing my brand which gives me a real thrill.

Your clothes are in the main boho/vintage and very individualistic – has the creative process become easier over the years?

To be honest it has become a little harder, so much has been done before and trying to find interesting fabric has become harder during the shutdowns across the globe. I’m thinking 2022 will be a great year and hoping we all get back to some kind of normal.

Has the rise in online shopping over the past two years changed the way you market your designs?

I had my head in the sand for a while with social media platforms until a few years ago. I have had to employ someone to assist with the marketing and increasing the profile of the label. Instagram and Facebook advertising have increased our online sales significantly. I have downsized the wholesale side of the business since the early days but still have about a dozen loyal stores I supply throughout the country.

Besides footwear, are there plans to expand into other areas?

I am working on a younger label with my daughters which is gratifying and fun.

Nicole Daley Ti Amo means ‘I Love You’ in Italian. For Nicole Daley it is the perfect name for her unique brand of custom made jewellery. Born into the business is a much overused expression but for Nicole Daley it is an exact description of how she came to be in jewellery. The daughter of Bill and Pamela Hannaford, who founded 5th Avenue Jewellery, she has fond memories of her early years working in the business. “Mum and Dad had the business, along with many other interests, and at the age of five I was answering the phone in the Adelaide store. From an early age I was fascinated by gem stones, not just diamonds, and really loved the many different colours that occur naturally.”

After leaving school in 1993, Nicole embarked on a rigorous round of study to learn everything she could about gems and jewellery and became a highly qualified gemmologist. “It is difficult because you constantly have to update your skills and knowledge. If you don’t you can lose your accreditation.” Jewellery was also how she met and married her husband Darren. “We used to see each other about once or twice a year at conventions around Australia and gradually a friendship ensued. He is also a gemmologist and makes all of our custom pieces in his workshop.” When Nicole came up with the idea of creating her own range of designs, Ti Amo, Darren was the perfect sounding board. The name Ti Amo was chosen by Nicole because it has such special significance. “My father is very romantic and was always leaving gifts and special treats for mother with a card that read ‘Ti Amo.’ Mum is Italian and it means ‘I love you’ in Italian so it simply had to be the name. Every piece is a one-off, designed and manufactured in house so it can never be repeated. I think about designs all the time and often wake up in the middle of the night with an idea or I’m making dinner and a thought pops into my head. That’s why I always have some paper nearby so I can jot down the thought.” Most jewellery stores are essentially retailers but it is that bespoke element that enthrals and captivates Nicole and Darren. “We love that creative process and working hand in glove with our customers to create something special for them. Ti Amo is my way of helping couples to express their love, which for me makes the design process so worthwhile.”

JW MARRIOTT DÉCOR In its original guise, the foyer at JW Marriott Gold Coast Resort & Spa was designed to resemble a colonial club. Wooden balustrades on the sweeping staircase, rattan fans slowly waving back and forth and high white walls reminiscent of a different era. A refurbishment changed the look and feel and after listening to the feedback from guests and customers a decision was made to go back to the future.

Management went back to the original architects and designers, DBI, to ‘Zhuzh’ up the 223-room resort. In the cavernous lobby, they unearthed and reinstalled the old rattan punkah fans a lovely touch in helping to reconnect the old with the new. The handsome sandstone floors were rubbed back to retrieve their lustre and then rezoned the space to include the signature JW “concierge library”. In the original design the sweeping staircase represented a waterfall and that flow fits in beautifully with greenery, potted palms and the reality of an all-natural finish of timber, stone and cane. The Gold Coast’s beaches and lush hinterland are the inspiration and the aesthetic on display fits beautifully with that template.

When Marriott International announced that it was going to refurbish and rebrand the Surfers Paradise Marriott Resort & Spa into its flagship JW Marriott brand it caused a huge stir. This was to be the first appearance in Australia of the brand following an ambitious $35 million rebrand to create JW Marriott Gold Coast Resort & Spa. Its completion in December 2020 set a new standard of luxury for discerning travellers seeking a tropical retreat in South-East Queensland on Australia’s famed Gold Coast. The opening signaled the continued expansion of Marriott International’s luxury footprint in Australia as the industry continues to see strong demand within the luxury travel segment. The rooms haven’t been forgotten in this make-over. Sun-drenched and offering coastal or hinterland views, it has a sub-tropical feel that is a natural relaxant. The shadings are again a reminder of the nearby Pacific Ocean – whites for the sand, with blues reflecting the sky and the sea and pale timber floors completing the look. Other neat and thoughtful touches are in the junior suites which house a separate living room, with a king bed and giant TV in each room. In lieu of bottled water, guests are supplied with a glass flask with a water refilling station (with ice) on every floor. The rooms are designed to be your home away from home while you can relax, unwind and think about nothing. Every detail has been seen to thus ensuring guests have a luxurious stay. There are views up and down the coast, from the bed, the stylish living room and the corner bathtub which is the size of a small plunge pool. The balcony affords a drone’s-eye view of the resort’s famous lagoon complex, with its palm trees, waterfalls and fishy coves.

How can I help? It is a phrase that Derek Fenn, Chief Concierge at JW Marriott Gold Coast Resort & Spa, has said more times than he cares to think about. Asking and helping are an integral part of his job and as a member of the prestigious international organisation Les Clefs d'Or it is a vocation he takes very seriously. Born and raised in Fiji, Derek moved to New Zealand in his teenage years to finish his high school education. Starting his first job in purchasing while finishing high school, Derek soon found his love in hospitality. Moving to Australia in 2003 with his wife, they have raised six children many of whom are also starting their working careers in hospitality. With over 35 years’ experience in Hotel Management services, Derek’s career began at the Stamford Plaza in Auckland, New Zealand before moving to the Gold Coast in 2003. Prior to his 11 year stint with the Marriott family, he has worked in numerous Gold Coast 5-star hotels. .56

Ask any concierge for a story about unusual requests and their faces will light up. Derek is no different. “I was approached by a guest to arrange their fiveyear olds birthday party. With two days’ notice and a $15,000 budget, the team and I started arranging the party. Activities included a jumping castle, toys, face painters, balloon artist, indoor rock climbing wall and

much more. Furthermore the child’s father invited all children under 10 years old staying at the hotel to join the party. It was a wonderful event and after the party had concluded, the family very kindly donated all the toys and equipment to local Gold Coast charities. Originating in France, Les Clefs d’Or consists of over 4,000 invited members, across 47 countries, consisting of the largest concierge network worldwide. Derek is so well respected within the industry that in 2019 when Les Clefs d'Or celebrated their 25th anniversary and a special award was announced in his honour. The Derek Fenn Award for Service Excellence was born and Derek had the privilege of presenting this inaugural award to Jan Svalty from the Bolton Wellington Hotel New Zealand. The Derek Fenn Award was created to honour the commitment and dedication shown within the industry. To receive such

recognition is an indication of respect within the industry. As a founder of the annual event 28 years ago, Derek attended the awards representing not only JW Marriott, but the Gold Coast as a whole. “While working as a Chief Concierge in New Zealand, I was nominated by my General Manager to send my application to the Australian Les Clefs d'Or society for a thorough interview and examination. I passed and was accepted as a new member of New Zealand. I was very humbled to have received such an invitation. You can imagine how proud I was that they have named the event after myself for my dedication to the industry,” said Derek. “I enjoy immensely the challenging experiences associated with the role. I have been known to arrange such momentous occasions as surprise helicopter proposals, last minute shopping for lavish birthday presents for guests, once I even arranged

baby farm animals to visit the hotel for the enjoyment of our guests’ children.” With so much knowledge and experience Derek is passionate about involving himself with training junior team members. Workshops are held often in Australia and New Zealand for junior Concierge team members who wish to extend their career in Concierge and career development. Whatever the job, Derek can always be relied upon to enthusiastically embrace the occasion and give his very best. It is why he loves what he does. “Front and foremost I love the guest interaction, we have many returning guests who become friends over the years. VERMICELLIWRAPPED PRAWNS INGREDIENTS •

150g vermicelli rice noodles

500g large peeled raw prawns (tails on or off, whichever you prefer)

1 tablespoon sesame oil teaspoon salt flakes

1/2 teaspoon freshly ground black pepper

500ml (2 cups) vegetable oil

2 x 250g packets of microwave long-grain white rice

125ml sweet chilli sauce

1 long red chilli, sliced (optional)

Place the noodles in a bowl, cover with water and let them soak for about 15 minutes, until soft. Rinse the prawns and pat them dry with paper towel to remove excess moisture; otherwise they’ll spit when they hit the hot oil. Don’t be afraid to get your hands dirty for this next part. Drain the noodles and place them in a bowl, then pour the sesame oil over the noodles and add the salt and pepper. Mix it all together with your hands to make sure the noodles have a nice, even coverage. Heat the vegetable oil in a wok or deep frying pan over medium heat. The oil is ready when you drop a vermicelli noodle into it and it puffs up immediately. While the oil is heating, grab a small handful of noodles and start wrapping the prawns individually – I like to go heavy on the noodles and double wrap the prawns. I just love the crunch they create and I assure you that your little humans will love them, too. Working in batches, carefully lower the wrapped prawns into the hot oil and watch the magic happen. As soon as the vermicelli noodles puff up and turn golden brown, use a slotted spoon to remove the prawns and pop them on paper towel to drain. Microwave the rice according to the packet instructions, then transfer to serving bowls. Top with the prawns, drizzle over the sweet chilli sauce and scatter with slices of red chilli, if you like.

I have no idea how they made their dish, but my version is fast, simple and delicious. I love that seafood cooks quickly, which means you can whip this up in no time.

PORTERHOUSE, PARMESAN CHIPS & CORN RIBS INGREDIENTS

This is my homemade steakhouse recipe that never fails. The smell of buttery steak will fill the kitchen, along with the aroma of the chips and sweetcorn in the air fryer. Is there anything better? If you have an air fryer this dish only takes 20 minutes to make, but don’t worry, you can also cook the chips and corn in the oven. It’s time to sharpen your knife and get cracking.

500g red royale potatoes, peeled and cut into 1 cm thick chips

80ml olive oil

2 tablespoons salt flakes

3 sweetcorn cobs

1 tablespoon smoked paprika

80g salted butter

3 garlic cloves, peeled

3 x 200–250 g porterhouse steaks

2 sprigs of rosemary

3 tablespoons grated parmesan

If you don’t have an air fryer, preheat your oven to 200°C. Place the potato on a baking tray and drizzle over 2 tablespoons of the oil, along with 1 tablespoon of the salt (I like my chips salty, so feel free to use less salt if you prefer). Toss to combine. Cut the sweetcorn lengthways through the core, making sure each corn rib has a little core attached to keep the kernels together. Rub 1 tablespoon of the oil over the corn and sprinkle with the smoked paprika. Add them to the tray with the potato. If using an air fryer, crank it to 180°C and cook for 20 minutes. Alternatively, transfer to the oven and cook for 30 minutes, or until the chips and corn ribs are golden and crispy. Meanwhile, heat the remaining oil in a large frying pan over high heat. When the oil starts to smoke, add half the butter and let it melt. Add the garlic cloves and steaks and cook for 2 minutes, then flip the steaks over, add the remaining butter and salt, along with the rosemary sprigs, and continue to cook for 2 minutes, basting the steaks with the melted butter. The steaks will be medium–rare, so feel free to cook them for longer if your family prefers them a little more well done. Remove the steaks from the pan and rest, covered, for 3–4 minutes. Don’t discard the buttery juices in the pan! Remove the chips and corn ribs from the air fryer or oven and divide among serving plates. Scatter the parmesan over the hot chips and drizzle the corn ribs with the juices from the pan. Slice up the steak and transfer to the plates. Time to dig in. AUTUMN • 2022 63

SPINACH-WATERCRESS SOUP Soup for breakfast! This recipe is incredibly simple and really delicious—and it just so happens to be vegan and jampacked with a ton of dark greens. We love the combination of watercress for its peppery bite and super health benefits, and flat-leaf, vitamin-packed spinach, but feel free to experiment with other greens like kale, swiss chard, or even dandelion greens. The crispy garbanzo garnish can be made 5 days in advance (and it also makes a great healthy snack). The rest of the recipe takes about 15 minutes to make, which keeps things nice and simple. Easy like Sunday morning.

INGREDIENTS

1 can garbanzo beans, drained and rinsed; aquafaba (bean soaking liquid) reserved 2 tablespoons plus 2 teaspoons olive oil, divided 1 teaspoon ground sumac Kosher salt and freshly ground black pepper ½ teaspoon coriander seed 2 cups sliced leeks, about 2 small leeks (white and light green parts only) 2 ½ cups water, plus additional as necessary 1 bunch flat-leaf spinach, stems included, roughly chopped 1 bunch watercress, stems included, roughly chopped Flaky sea salt (we love Maldon), for serving (optional)

Make the crispy garbanzos. Preheat the oven to 240°C. Measure out 1/2 cup of the garbanzo beans and set aside. Place the remaining garbanzo beans on a small rimmed baking sheet and pat dry with a paper towel. Drizzle with 2 teaspoons olive oil and shake the baking sheet to coat. Season with sumac, and salt and pepper. Shake the baking sheet again to distribute the spices evenly. Transfer to the oven and roast until the garbanzos are crispy and golden on the edges, 20 to 25 minutes, stirring halfway through. Reserve for serving. (Crispy garbanzos can be made up to 5 days in advance, stored in an airtight container at room temperature.) Make the soup. Meanwhile, heat a large pot over medium-high heat. Add the remaining 2 tablespoons of olive oil, swirl to coat, and add the coriander seeds and leeks. Season with salt and pepper and sauté, stirring occasionally, until softened and just beginning to brown, 4 to 5 minutes, reducing the heat as necessary to prevent burning. Add the aquafaba, reserved 1/2 cup garbanzo beans, and water. Raise the heat to high and bring to a boil. Add the spinach and watercress to the pot and return to a boil. Cook, stirring, until the greens are wilted, about 1 minute.

Transfer mixture to a blender and blend until the soup is very smooth, adding additional water 1 tablespoon at a time if necessary to thin to your desired consistency. Season to taste with additional salt and pepper. Serve. Ladle soup into 4 bowls and top with the crispy garbanzos, freshly cracked black pepper, and flaky sea salt. (The soup should have a brothy consistency. Since we are not straining it, some separation may occur—just stir until fully combined before serving.)

DREW’S HARISSA SPAGHETTI INGREDIENTS 1 package chickpea spaghetti (we recommend Banza) 3 tablespoons olive oil, divided 5 cloves garlic, peeled and grated ¼ teaspoon red pepper flakes 1 tablespoon onion powder (optional) 2 pints cherry tomatoes, halved 1 tablespoon dried oregano (optional) 1 tablespoon dried parsley (optional) Kosher salt and freshly ground black pepper 3 tablespoons double-concentrated tomato paste 2 to 3 tablespoons harissa paste, plus additional to taste ½ cup chopped basil, plus additional for serving Cook the pasta. Bring a large pot of water to a boil over high heat. Season with 2 tablespoons salt. Add the spaghetti and stir to ensure that the pasta does not clump together. Boil until just al dente, 6 to 7 minutes. Reserve 1 cup of the pasta cooking water and drain the noodles. Rinse the chickpea noodles under cold water until completely cool. Set aside.

I guess if someone was to ask me if I had a signature dish, I’d say this one! Although I’ll note that this is a question I never thought I would receive, because until the last few years, my answer would’ve been “call for takeout.” But this is a dish I can confidently whip up anytime, anywhere. I love that it all comes from pantry staples, like canned tomatoes and dried oregano. Or you could make yourself look like a fancy pants and buy fresh cherry tomatoes and fresh basil and simmer that garlic like a real chef! But the key, no matter, is the harissa. It’s a Tunisian spice that you squeeze out of a tube, and the result is this smoky and delicious flavor I fell in love with.

Make the sauce. Meanwhile, heat a large saucepan over medium-high heat. Add 2 tablespoons of olive oil and swirl to coat. Add the garlic, red pepper flakes, and onion powder, if using. Saute, stirring, until the garlic is fragrant, 30 seconds to 1 minute. Do not let brown. Add the cherry tomatoes and dried herbs, if using, and season with salt and pepper. Continue cooking until the tomatoes begin to break down, 4 to 5 minutes. Add the tomato paste and harissa paste and cook for 3 minutes more. Taste the sauce and season with salt, pepper, and additional harissa paste, if desired. (The pasta sauce can be made up to 3 days in advance. Store, covered, in the refrigerator before reheating in a skillet.) Serve. Add the pasta to the sauce, along with 1 to 2 tablespoons of pasta water to thin, if necessary. The sauce should be thick and concentrated, but just loose enough to coat the noodles easily. Cook for 1 minute more, tossing to combine. Add the chopped basil, gently fold to combine, and divide among serving plates. Serve immediately, topping each portion with a drizzle of olive oil and additional basil. AUTUMN • 2022 65

BAKED RICOTTA Prep time: 10 mins Cook time: 30 mins Serve it either as a sort of dip, hot out of the oven, or leave it to cool to room temperature and then cut it into wedges with a salad, some bread and perhaps a plate of paper-thin pink prosciutto.

INGREDIENTS 500g fresh whole-milk ricotta 3 eggs 1 cup (100g) grated parmesan cheese 1 tsp thyme leaves, plus extra to garnish ½ tsp sea salt A few good grinds of black pepper Preheat the oven to 200°C. Grease and line a 20cm spring-form tin with baking paper. Combine the ricotta, eggs, parmesan, thyme, salt and pepper in a bowl and whisk until smooth. Pour into the tin and smooth the top. Pop the ricotta into the oven and cook for 30 minutes or until golden and puffed. Top the baked ricotta with the extra thyme and set aside to cool to room temperature. Serves 4–6

PEACH SCROLLS WITH AMARETTO GLAZE INGREDIENTS

Prep time: 30 mins, plus overnight proving

1 cup (320g) chilled Peach and honey butter or your favourite fruit jam

Cook time: 25 mins

1 egg 2 tbsp double cream Basic sweet dough 4 cups (600g) plain (all-purpose) flour, plus extra for dusting ¼ cup (55g) caster (super fine) sugar 3 tsp (20g) dry yeast ½ tsp ground cardamom A pinch of salt 2 eggs 1 cup (250ml) lukewarm milk 175g butter, softened, plus extra for greasing Amaretto glaze 1½ cups (185g) icing (confectioners’) sugar ¼ cup (60ml) thick (double) cream 2 tbsp amaretto liqueur (or brandy, lemon juice or water) For the dough, briefly mix the flour, sugar, yeast, cardamom and salt in an electric mixer fitted with the dough hook. Whisk the eggs into the milk, add it to the flour mixture and knead for 5 minutes. Add the butter, a tablespoon or so at a time, beating well after each addition. (You can also do the kneading by hand – combine the dry ingredients on your work surface, make a well in the centre and then add the milk and egg mixture and butter and knead for about 8 minutes.) Place the dough in a lightly oiled bowl, cover with a tea towel and leave in a warm place for 1 hour or until doubled in size.

Peach and honey butter: Prep time: 20 mins Cook time: 55 mins Makes about 4 cups

INGREDIENTS 1 kg peaches or other stone fruit, chopped ¼ cup (90g) honey ¼ tsp ground cinnamon 1 vanilla bean, split lengthways A pinch of sea salt Juice of 1 lemon

Combine the peaches, honey and cinnamon in a large, deep saucepan. Scrape the vanilla seeds into the pan and add the scraped pod. Add ¼ cup (60ml) water and stir well. Cook over medium heat for 15 minutes or until the peaches have collapsed completely. Discard the vanilla pod, transfer the peach mixture to a blender (or use a stick blender) and blitz to a puree. Add the salt and lemon juice, to taste – add a little at a time, testing after each addition until you have the perfect balance of sweetness and acidity. Return the puree to the pan and cook over low heat, stirring often, for about 40 minutes or until the mixture thickens and reduces. Pour the butter into sterilised jars, seal and refrigerate for 3–4 weeks.

Gently turn the dough out onto a lightly floured surface and pat it into a disc. (This is a sticky dough, so you might need to wet your hands.) Place the dough on a tray, cover and refrigerate overnight. On a lightly floured surface, roll the dough into a large rectangle. Generously spread the peach and honey butter or jam over the dough. Starting with one of the long sides, gently roll the dough into a large sausage shape. If it feels a bit sticky and warm, pop it into the fridge for 10 minutes before proceeding. Grease a deep roasting tin with butter. Cut the dough into nine rounds and tuck them into the tin, then cover and leave to rest for 30 minutes (just enough time to set a table outside and get the coffee ready). Preheat the oven to 200°C. Whisk the egg and cream together and brush it over the scrolls. Bake for 25 minutes or until the scrolls are puffed and golden. For the glaze, whisk the icing sugar, cream and amaretto in a bowl. Let the scrolls cool for about 10 minutes before spooning the glaze over the top. Serve the scrolls warm with coffee. Makes 9 AUTUMN • 2022 67

CREAMY POTATO BAKE INGREDIENTS Serves 6–8 This dish is full of oozy, creamy luxury with the flavours of onion, chives, bacon and mustard. It’s a special occasion dish that encapsulates the spirit of comfort baking. 3 garlic cloves, crushed ¾ teaspoon sea salt 600ml pouring cream 1 teaspoon dijon mustard 3 teaspoons mayonnaise 2 teaspoons cornflour (cornstarch) 950g peeled potatoes (see Note) 400g onions or 4–6 spring onions (scallions), finely diced 3 teaspoons chopped rosemary or oregano 200g rindless bacon, diced 100g tasty cheese, grated

Preheat the oven to 170°C. Grease a 25 x 35cm baking dish, 8cm deep. In a bowl or jug, whisk the garlic, salt, cream, mustard, mayonnaise and cornflour until smooth. Cut the potatoes into 6mm slices. Drizzle 50ml of the cream mixture into the base of the dish. Layer one-third of the potato over this, then top with half the onion, sprinkle with half the herbs and then one-quarter of the bacon. Pour 180ml of the cream mixture on top. Repeat the layers. Top with the last of the potato and drizzle on the remaining cream mixture. Sprinkle on the last of the bacon and top with the cheese. Bake for 1 hour, or until the potato is cooked. Leave to stand for 10 minutes before serving. Note The potatoes do not necessarily have to be peeled. CHICKEN, HALLOUMI and roasted capsicum parcels SERVES 6 The flavours of the Middle East feature in these mouthwatering parcels. For this recipe I buy bottled roasted red capsicums (peppers). While you could prepare your own, it is a time-consuming step. 12 ready-rolled filo pastry sheets (from the refrigerated section of the supermarket) 125ml extra virgin olive oil 1 egg, lightly whisked 50g sesame seeds

TO MAKE THE FILLING Prepare a spice mix by combining the paprika, cumin, coriander, cardamom, sumac, salt and sugar. Cut the chicken breasts into 5cm strips and place in a bowl. Sprinkle with the spice mixture and then mix well to coat evenly. Heat the oil in a frying pan over medium heat and sauté the chicken for 2 minutes each side. Remove to a plate. Place the halloumi in the same pan and fry for 1–2 minutes on both sides, or until golden brown. Remove from the heat. Pat the capsicum halves dry with paper towel and cut into 4cm strips. In a bowl, whisk the yoghurt, cream cheese, garlic, cornflour, chilli sauce, lemon juice, extra cardamom, extra sumac and salt until the mixture is smooth.

TO ASSEMBLE FOR BAKING FOR THE FILLING 2 teaspoons paprika 2 teaspoons ground cumin 1 teaspoon ground coriander ¼ teaspoon ground cardamom, plus a large pinch extra ¼ teaspoon sumac, plus a large pinch extra ½ teaspoon sea salt ½ teaspoon white (granulated) sugar 500g skinless chicken breasts 30ml extra virgin olive oil 160g halloumi, cut into 6 mm wide strips 250g roasted red capsicum (pepper) halves 200g natural or Greek-style yoghurt 50g cream cheese, softened 1 garlic clove, crushed 3 teaspoons cornflour (cornstarch) 2 teaspoons sweet chilli sauce 2 teaspoons lemon juice pinch of sea salt

Preheat the oven to 200°C. Line a large baking tray with baking paper. Place one sheet of filo on a lightly floured surface, then brush with some of the olive oil. Fold in half. Brush another sheet with oil, then fold in half and place on top of the first folded sheet. Spoon a scant ¼ cup of the yoghurt mixture onto the filo, leaving an 8mm edge dry. Top with one sixth of the chicken strips, halloumi and, finally, the capsicum strips. Brush the dry edge with the whisked egg to seal, then carefully roll up to enclose the filling. Place on the tray seam side down. Repeat to make six parcels in total. Mix 2 teaspoons water into the remaining whisked egg and brush over each parcel to glaze. Sprinkle with the sesame seeds. Bake for 20 minutes, or until the parcels are golden brown and crisp. AUTUMN • 2022 69

LIFESTYLE AND SLEEP TIME IN BED SHOULD EQUAL YOUR EXPECTED SLEEP NEED

If we could bottle a good night’s sleep, it would be the best-selling supplement on the market. So, how do Aussies measure up on the scale of good sleepers? Recent research conducted by YouGov in partnership with MELOTIN MR has revealed that 50 percent of Australians struggle to fall asleep at least once or more each week. Even more alarming is the fact that close to two-thirds of the population have stated stating their poor sleep quality has caused a loss of motivation to continue enjoying the things in life that bring joy. With only 14 percent of Australians "very satisfied" with their sleep quality, half of the respondents also acknowledged that the issue didn't just involve trouble falling asleep at least weekly, but in their ability to stay asleep, which for a quarter of the sample occurs nightly and at least once per week for two thirds. "These results indicate that unfortunately, the mental and physical knock-on effects of poor sleep can lead to more poor sleep, resulting in a vicious cycle," said Emeritus Professor Dorothy Bruck, Sleep Health expert and Sleep Psychologist.

"When you are sleep deprived, your brain will become foggy, making it difficult to concentrate and make decisions based on rational things like risk and reward. In addition, a more negative mindset in those who are fatigued can make it less likely that you'll do the things that we know help with getting a quality night's sleep, such as getting outdoors in the sunshine or exercising. Sleep-related fatigue can also rob you of your ability to feel more present, positive and connected with the ones you love," she said. The research comes as melatonin, (a naturally occurring hormone responsible for regulating one's sleepwake cycle), previously only available with a prescription, was downscheduled from prescription only to pharmacist only by the TGA on 1st June 2021. This makes it available as a shortterm treatment for primary insomnia in patients aged 55 years and older. "About half of those surveyed in the 50 to 64 age group reported being dissatisfied with their overall quality of sleep, compared to 42 percent of the total survey sample, while this age group was more likely to report a negative impact on mood and behaviour compared to other age

groups” said Professor Bruck. "We now understand that getting older can result in lower nocturnal melatonin levels, meaning that melatonin can be an excellent option for older adults with low melatonin levels. In addition, these supplements can help improve sleep quality, especially in those with agerelated primary insomnia. “The survey also showed that a bad night's sleep disproportionately affects mood in older Australians. From a physical point of view, we also know that ongoing poor sleep habits can have serious and lasting impacts on our health, increasing the incidence of cardiovascular disease, weight gain, diabetes and even memory issues," explains Professor Bruck. "It's vital that you speak to your pharmacist or healthcare practitioner if you're continuing to struggle with poor sleep, in addition to practising good sleep habits."

WIND DOWN BEFORE BED "Try and give yourself at least one hour between any stimulating evening activities and bedtime. Turn off screens that emit bright light, particularly the cool blue light that suppresses melatonin.”

AVOID STIMULANTS "Beverages such as coffee, tea, cocoa and some soft drinks contain caffeine should be avoided close to bedtime. If you have difficulty sleeping, a good rule of thumb is no caffeine after lunchtime."

ROUTINE IS GOOD, ESPECIALLY A GETTING UP ROUTINE TIME "Waking up in the morning at the same time will prepare your body clock to fall asleep at reasonable and similar times each night. Try not to sleep in longer than one hour past your regular wake up time on weekends. Any longer can disrupt your body clock and lead to sleep deprivation."

ENSURE YOUR DAYTIME ACTIVITIES INCLUDE SOME EXERCISE AND SOME NATURAL DAYLIGHT "Enjoying natural sunlight will improve your sleep at night as it will help your body clock and assist healthy melatonin levels that are needed for a night of good night sleep. Earlier parts of the day are best and a great excuse to do some exercise - try and avoid highintensity activity before bed."

HOW YOU THINK ABOUT YOUR SLEEP IS IMPORTANT "Brief awakenings are a very normal part of sleep, especially as we age. In fact, our research found that the vast majority, 94 percent of those in the 57+ age group, report wakefulness overnight Many people feel they spend large parts of the night awake, frustrated as their minds tick over, but in fact, they may be moving in and out of light sleep. Move away from feelings of frustration and relax the mind in these

times. Think 'rest is good' and don't watch the clock."

TIME IN BED SHOULD EQUAL YOUR EXPECTED SLEEP NEED "If you are a poor sleeper, do not spend longer in bed than you need for sleep, such as 7-8 hours. Too long in bed tells your body that it is OK to drift in and out of sleep. Instead, going to bed later at night may be the single best thing to help reduce your wake time during the night in bed."

NAPS CAN INTERFERE WITH NIGHT-TIME SLEEP "Taking longer naps throughout the day or falling asleep in front of the TV can reduce your sleep 'drive' at bedtime, making you feel more awake during the night. A short afternoon nap is OK but naps longer than 20 minutes or evening naps can be a problematic pattern to get into."

ELIMINATE EXTERNAL DISTURBANCES IN YOUR BEDROOM "If you are a light sleeper or have trouble returning to sleep, try and reduce or avoid persistent disturbances that can come from light, pets or snoring partners. Consider earplugs, eye covers and better curtains."

AVOID ALCOHOL Many people think a glass or two of wine helps them relax and fall asleep more quickly, but the reality is that alcohol interferes with the natural sleep patterns and makes it more difficult for your body to stay in a sound sleep cycle. So in the morning, you'll likely feel tired and reach for a stimulant like coffee, starting a stimulant relaxant cycle we want to avoid. If you're struggling with your sleep patterns, talk to your pharmacist or healthcare practitioner. It's crucial to address contributing medical conditions like sleep apnoea or nocturnal reflux. CREATING BEAUTY ON A BUDGET TRANSFORMATION OF A QUEENSLANDER By Pat Chiene deck and ageing paint had something to do with it. We put an offer in and shortly after, it was accepted. Initially we rented out the property through a local agent. Sadly, the tenants had not taken care of the house and it desperately needed some TLC by the time they moved out. So without another thought, I put on my renovator’s hat and quickly got to work on doing a fast 3-month makeover so we could quickly get the property back on the market to rent out.

While not intrinsically a ‘renovator’, I have always enjoyed the challenge of finding a property that I can put my stamp of approval on and transform from a house lacking lustre to something I’d want to live in. As fate would have it, the perfect “transformer” was located on the very street I’d drive along each day, as I’d drop my daughters to school. There it was - a gorgeous, traditional 4-bedroom, 2-bathroom, 80-year-old Queenslander with three-metre high ceilings, generous oversized decks, and a good-sized backyard pool. The location had immediate street appeal, a corner block with a stunning mature poinciana tree at the entrance to beautifully frame the house. The house had been on the market a while when we made an inquiry with the agent. I suspect the blue exterior and somewhat tired and dated interior, missing door shutters, deteriorating 84 GOLD COAST • PANACHE Magazine

Having renovated and built residential properties in Sydney and on the Gold Coast, I was conscious of budget blowouts and keeping in mind that the safest bet was creating mass appeal for others wanting to come and live here. We were able to successfully keep within a budget of $50,000 by planning meticulously ahead on an excel spreadsheet, shopping for materials at builders’ recycling yards, negotiating with trades, supplying materials and doing what work we could ourselves, buying off-the shelf where we could, and savvy styling and the end of it. Having a love for styling, I studied staging and project management before I ventured out and established my own staging business, Luxury Property Staging, also working in with other property stagers as a consultant. This property is a perfect example where I collaborated with another staging expert, award-winning stylist Grace Fuss from Dapper Interior Transformations, to create the perfect look.

JORDAN SMITH AND ALINA SUVORINA Diana Ross had a hit song in 1980 with ‘Upside Down’ which included the lyrics – ‘Upside down, Boy, you turn me inside out, And, 'round and 'round’. It could easily be the theme song for ‘Resplendence’ an acrobatic duo that was created by local talents Jordan Smith and Alina Suvorina. They were guided by the talented world-famous Ben Nicolody and former aerialist and now show producer Sue Porrett. They first got together in 2018 after finishing their separate dance and acrobatic training and decided to develop their Adagio Act to a higher level. In 2019, ‘Resplendence’ professionally debuted their act at The Pink Flamingo Spiegelclub in Broadbeach. Having lived on the Gold Coast for the majority of their lives, for Jordan and Alina this was a dream come true to have the opportunity to be able to perform locally in front of their friends and family. Whilst performing has been their main focus for the last two and a half years, they haven’t just been hanging about. The duo has kept themselves busy - Alina is studying for a Bachelor of Environmental Science at Griffith University while Jordan is a highly sort after acrobatic and aerial coach on the Gold Coast. Always seeking to increase their repertoire of tricks, the duo have recently developed a new and incredible death-defying roller skating act which they will be debuting in the new show ‘The Glitz’. ‘The Glitz’ will hit the stage at The Pink Flamingo Spiegelclub in March and ‘Resplendence’ will perform over four shows every week.

AMANDA ABATE AND STEVE TITMUS Seven Up -The local Seven News Gold Coast weeknights from 5.30pm. After only a short time together on the set of Seven News Gold Coast, Amanda Abate and Steve Titmus have settled into their new role as co-presenters of the local news. It’s yet another high in a year of amazing highlights for both. Steve’s was when daughter Ariarne achieved her Olympic dream winning two gold, a silver and bronze medals in Tokyo added to by the excitement of seeing Ariarne’s coach Dean Boxall and his sideline antics. For Amanda, 2021 has also been an amazing year. The arrival of her first child Bobby, with husband Brent Beauchamp, was the best possible way to start the year. For a first time mother she has taken in her stride the demands of balancing motherhood and being back in the news room and broadcasting five nights a week. The partnership of Amanda and Steve is another high-profile chapter in Channel Seven’s continued coverage of news and events in our wonderful city. A new series, Gold Coast Uncovered (available on 7+), charts the highs, lows and amazing people and events that have shaped the Gold Coast over the past 62 years. “It will be an education for some and a trip down memory lane for long time locals. I am so proud to be able to host this unique look back at our history,” said Amanda. For Steve the documentary shows how we got to where we are today, plus the game changers and events all helping to provide a unique insight into who and what we are today. “While I know quite a bit about the Gold Coast, this uncovers some of the great characters and early significant projects that molded the Coast. It’s a deeper dive into the coast’s DNA. It is

great entertainment and shows things such as how the theme parks came to be,” said Steve. One example is the Jack Evans Pet Porpoise Pool which was originally intended to be ocean baths but visitors flocked to see dolphin feeding in one pool and have a close encounter with sharks in the other. Unfortunately wild weather sometimes caused the sharks to be washed in with the dolphins so the attraction was moved to the mouth of the Tweed River. At the northern end of the coast one of our original entrepreneurs Keith Williams was entertaining tourists with skiing exhibitions at Surfers Paradise Ski Gardens on the Nerang River at Carrara. He would later move the Ski show to The Spit at Main Beach and create the coast’s first major theme park Seaworld, combining the ski shows, marine animal’s exhibitions and thrill rides. 1958 was a big year when South Coast Town was renamed the Gold Coast and the following year was proclaimed a city. Gold Coast City’s first hi-rise Kinkabool started a tower trend and developers clamored to build high-rises to service the rapidly expanding tourism market and local residents who all wanted to holiday or live by the surf. Through the late 1970’s John Longhurst saw the trend and began developing Dreamworld on a large parcel of land in Coomera, opening his unique theme park in 1981. Others who shared the vision for the Gold Coast included Christopher Skase who defined a new level of luxury hotel accommodation and residential living by building Sheraton Mirage in the late 80’s. Mike Gore, switched from selling cars to developing Sanctuary Cove which he opened with The Ultimate Event, starring Frank Sinatra,

One of the biggest Gold Coast early influencers on our city’s perception was Sir Bruce Small. He started nationally renowned Malvern star bikes in Melbourne and moved here in 1958. He became Mayor on the back of the campaign slogan ‘Think Big Vote Small’. He’d bought and reclaimed 200 hectares of land behind Surfers Paradise developing Isle of Capri and parts of Bundall. As Mayor he was an influential and flamboyant PR machine, regularly touring Australia, New Zealand, Philippines, Hong Kong, Japan and Singapore with the Meter Maids in their gold bikinis promoting the virtues of his beloved Gold Coast as an international tourist destination. As mayor he also knew how important it was to protect the beaches and their pristine reputation as the backbone of a burgeoning tourism industry. His efforts to marshal 5000 civilians and 190 soldiers to fill and position sandbags along the beachfront to combat the effects of cyclones and wild storms added to his popularity. He also earned the nickname ‘Boulder Bruce’ for his efforts to install boulder walls to protect vulnerable beaches – many of which still in place today. Canals were ground-breaking in the 50’s literally. Alfred Grant and Karl Langer pioneered the Floridian concept. Rio Vista and Miami Keys were the first canal estates and today the city has canals that measure 260 kilometers in length - nine times the length of the famous canals in Venice, Italy. The city has also been the perfect breeding and training ground for many high achieving athletes and significant sporting events. It is difficult to fit the achievements of household names Wayne ‘Rabbit’ Bartholomew, Mick Fanning, Mick Doohan, Trevor Hendy, Grant Hackett, Sally Pearson and the many other legends that have competed from here into one article. The Gold Coast has also earned a solid reputation as an events mecca with the Australian Surf Lifesaving titles, Indy, V8 Supercars, Magic Millions, Sanctuary Cove Boat Show and national sporting teams the Titans and Suns. The Commonwealth Games in 2018 cemented the city’s reputation world-wide as a region that can host large scale events. It was perfect preparation for its role in the 2032 Summer Olympics. “These significant people and fundamental pieces of history over the past 50 years laid a striking foundation for the city to continue to grow. We can all look forward with anticipation and excitement to see what the next 50 will bring,” said Steve. AUTUMN • 2022 91

WHAT IS A WILL? Your Will is probably one of the most important legal documents you will ever sign. Put simply, your Will states what you want to happen to your assets when you pass on. With proper estate planning, OMB Solicitors will ensure that your right assets go to the right people at the right time. A Will must appoint somebody, called your executor, to carry out your wishes. They effectively step into your shoes when you pass and distribute your assets to the beneficiaries. Your Will must also be in writing and signed in the presence of two independent adult witnesses. Those witnesses must not be beneficiaries named in the Will. Although that sounds fairly straightforward, if your Will is not prepared correctly it risks being invalid and your wishes not upheld. Whether it be your first Will, or it's time to review your existing Will, we recommend you update your Will at least every three years or whenever a major event occurs in your life, such as: • • • •

You have married or divorced since making your last Will You have entered into a de-facto relationship A beneficiary named in your Will has died If one or all of your executors have died or

The ramifications of dying intestate can be very time-consuming and stressful for your loved ones and is almost always legally more expensive if that person had a valid Will. What is more, their assets will be distributed in accordance with estate laws and not their wishes or their estate administered by the Public Trustee. For example, a substantial part of one's estate could be transferred to an estranged spouse

Talk about your school course choices – dux of business at St Rita’s College – and how it prepared you for the corporate world. Doing hands-on practical work at school was always my thing. Very early into my senior years I knew what I enjoyed doing and where my strengths were, so I started to explore how I could turn that into a career. I found Business and Social Studies so interesting. I understood them well and very quickly because it felt like ‘real world’ work to me. There was great support from my school. I would venture out one day a week during year 11 and 12 to Brisbane North Institute of TAFE to seek extra qualifications. Business was always my favourite subject, it was just natural understanding for me, which led me to being Dux of the class in both years 11 and 12. By the time I was ready to graduate high school and enrol in university, I had four certificates in hospitality, events, tourism and business.

Why would you want to live anywhere else but the Gold Coast! FAVOURITE PLACES TO SEE/DO/EAT ON THE COAST? I love going to The Glades in Robina and playing golf with mates Mat Rodgers and Greg Bird, and I’d have to say my favourite place to eat is at Jimmy Wahs in Burleigh. But nothing beats being at home with my family on our farm in Tallebudgera. HOW DID YOUR FOOTBALL CAREER BEGIN? When I was in high school I joined my first football club, Burleigh Bears. In 2001 when I finished high school, I joined the Brisbane Broncos and played with them for the next nine years. I then moved south to play with the Sydney Roosters and Canterbury Bulldogs. Cowboys, we won the premiership in 2015 and I decided to retire at the end of 2016. During my career I also represented Australia and played five series of State of Origin for Queensland. WHAT WAS THE BIGGEST LESSON FOOTBALL TAUGHT YOU? Small things turn into big things. If you do the basics right they turn into great results. If you take shortcuts, they can turn into big mistakes. I like to say from little things big things grow (good or bad).

HOW HAS YOUR LIFE CHANGED FROM FOOTY PLAYER TO RADIO HOST? IT WOULD HAVE BEEN A BIG TRANSITION, HOW DID THAT HAPPEN? I was signed to play with the North Queensland Cowboys in 2017, but in the 2016 off-season I got asked to go to Brisbane and do a demo for radio… I didn’t even know what a demo was! I told a couple of stories, had a few laughs and two weeks later I got offered the job. It was a really hard decision for me, to leave a career and let go of the identity of being a footy

YOU ARE ONE OF 11 AND A FATHER OF EIGHT, WHAT IS IT LIKE HAVING SUCH A BIG FAMILY/FATHERING EIGHT KIDS? It’s the best thing in the world having a big family. I was always taught in life, nothing worthwhile ever comes easy. Being a father of eight isn’t always easy but it is by far the most rewarding thing that has ever happened to me. I am so blessed to have a fantastic wife and beautiful kids. They are my wealth.

ON A DAY OFF/WEEKEND, WHAT WOULD WE FIND YOU DOING ON THE GC? Usually on a weekend I’ll go for an early morning surf or fish with my son on Palmy Reef. Then we are back on our farm riding motorbikes, travelling around the GC together or riding the horses on the beach.

He has been stripped of his HRH (His Royal Highness) status, royal duties and other patronages and titles by his mother, Queen Elizabeth 11. Royal sources are quoted as saying the Duke may also be asked to “put his Dukedom into abeyance” due to the humiliation of the settlement of the case brought against him by Virginia Giuffre which was to be heard in a New York court. His future looks bleak according to his astrological transits for this year. His civil court case where he was to face sex abuse allegations by Virginia Giuffre has been finalised by a large settlement in Ms Giuffre’s favour. Virginia had instigated proceedings against Andrew as a result of her alleged sexual abuse by him of her when she was an ‘underage female victim’ and wanted vindication for herself and others. Purely from an assessment of Andrew’s astrological transits the question is: Can he redeem himself and resurrect his already tattered reputation? As with all things "this too shall pass" but unfortunately for the so called Prince his journey for the next couple of years is set to be one of extreme difficulty on many fronts. In his birth chart he has a Piscean Sun with his Moon in Scorpio - this indicates to an astrologer that he is

somewhat secretive and coupled with a seductive personality. His Piscean Sun is squared by the planet Pluto giving him a very strong wilfulness and an infatuation with power – it has been widely reported that he continually got away with breaking Buckingham Palace security protocols as one example. A VIEW FROM THE GOLD COAST Welcome to 2022... Over the past eighteen months there has been an extraordinary number of reports in the media about the incredible growth in the property market around Australia. To drill this down further to our part of paradise, the Gold Coast has the 3rd highest regional growth nationally. More space, flexible working conditions and affordability has successfully tempted property buyers to Australia’s regional areas, fuelling a surge in property values and drastically reducing selling times. CoreLogic’s quarterly Regional Market Update released on 14 February 2022, shows Australia’s 25 largest noncapital city regions continued to achieve unprecedented increases in value. Over the 12 months to January 2022, 24 regions recorded double-digit annual growth for houses, with 18 regions notching up gains in excess of 20%. The median dwelling value across the combined regions jumped 26.1% in the year to January 2022, outpacing the combined capital city dwelling growth rate of 21.3% for the same period. The Southern Highlands and Shoalhaven region in NSW recorded the highest annual regional

house value growth in the 12 months to January 2022 at 38.2%, followed by Queensland’s Gold Coast (36.3%) and the Sunshine Coast (35.4%). HAVE PROPERTY PRICES PEAKED? Most banks and economists are indicating that property prices have peaked, values will plateau, with downward pressure towards the backend of 2022 and into 2023. Most banks are predicting a correction of 10% in 2023. At the coalface of our business across all Queensland offices and locations we’re still seeing strong demand from buyers, BUT with a leaning towards normalising. In other words, we are starting to see less numbers at open homes and days on market starting to increase – albeit small increments. If I had to use an analogy, we’re still driving really fast down the freeway, but not as manic as previous periods. With many factors on the horizon [Increasing interest rates, General Election, and political uncertainty in Europe], one can only believe 2022 has the potential to throw a few curve balls. We divided the guest list between the ceremony and the reception, so no matter what happened, we would get married with just immediate family as the witnesses. The reception was also just a dinner - no dancing - and we didn’t have perishable things like a wedding cake.

WHAT WAS ONE OF THE MEMORABLE MOMENTS OF THE DAY? Getting ready together and then heading to the ceremony together. There was no aisle, no music, and no nerves - just us.

BEST ADVICE FOR OTHER COUPLES? Going from engaged to married in six weeks, we had to be content with near enough was going to have to be good enough. In the end, it was better than good enough - it was everything we could have ever wished. In short, keep the wedding about you, and don’t be worried if things aren’t perfect. We had the happiest day.

It retains the same overall design integrity through the use of the finest materials and timbers available. Princess’s design team have designed the cockpit arrangement and bathing platform to maximise the levels of outdoor living space as seen on larger vessels, with practical access from both sides of the transom to both cockpit and side decks, and an elongated canopy which provides a comfortable shaded area to escape the heat of the sun whilst being in a position to fully appreciate the yacht’s balanced performance. Patio doors enclose the deck saloon to create a climate-controlled sanctuary, featuring a U-shaped dining area with sideboard opposite concealing a TV

Further forward, the helmsman and navigator are perfectly positioned in bespoke twin helm seats with clear sightlines through the single-pane windscreen, while a large solid opening roof section with integrated glazing above offers the total flexibility of an open boating experience. Below deck a bright, modern open galley with a bespoke moulded sink, two-zone ceramic hob, combination microwave/convection oven and full height fridge/freezer is situated opposite a generous U-shaped seating area, which can alternatively be replaced with a third two-berth cabin. Four guests enjoy two beautifully appointed cabins that are filled with natural light from the extensive hull glazing, with a full-beam master stateroom situated amidships. The V50 is designed for year-round cruising with flexible spaces and innovative design solutions to maximise cruising comfort and outdoor enjoyment. SIBLINGS OPENING The end result of three years of planning, consultation and investing for renowned restaurateurs Peter and Tracey Cianci. Their dream was to create Siblings Kirra, an open-air restaurant on the old Pizza Hut site overlooking Kirra Beach. The façade of the 1920s kiosk has been retained but internally is a space designed to make you feel as though you are dining on the beach. It is truly something very special. PASPALEY VIP LUNAR NEW YEAR EVENT Celebrating the Lunar New Year and the Year of the Tiger, Vlushe Lounge’s Mitch and Selina Wan hosted an intimate group of VIPs at Paspaley’s luxurious Brisbane boutique at QueensPlaza. As guests sipped Perrier-Jouët, Paspaley designer João Vaz, regaled them with how Paspaley’s magnificent pearls are cultivated off WA’s Kimberley coast and how he creates the magnificent pieces for which the luxury brand is renowned. Guests were then whisked by Maseratis to a decadent 14-course Omakase Experience degustation at Takashiya at Emporium Hotel served up by the acclaimed Japanese restaurant’s revered executive chef Takashi Nami. The board and the entire organisation from staff to players are passionate about delivering a great men's and women's football programme in the AFL. Honestly it is so much more than that for the Gold Coast Community - it has been about growing the game in Queensland and being an integral part of our wonderful and fast growing city.

Covid protocols permitting, I love to travel with the team to some away games as you can really get a feel of the closeness of this playing group and the determination they have to succeed. Best game for me was a couple of years ago when we beat Carlton at home and Jack Bowes snapped a left foot goal in the last 30 seconds to steal the game. The jubilation and joy was amazing. THE PEOPLE MOST IMPORTANT TO YOU ARE? My immediate and extended family who I am lucky to have all living on the Gold Coast. THE KEY TO HAPPINESS? Good health and the ability to look positively at life. PEOPLE THAT KNOW YOU, KNOW YOU LOVE? Keeping active. I love being being involved in physical activities be it surfing, going to the gym, running, swimming or anything else and what better place to do it than on the Gold Coast. THE BEST ADVICE YOU HAVE EVER RECEIVED? Don’t worry about what other people think of you.

WHAT IS YOUR GREATEST ACCOMPLISHMENT? My family and building the best law firm on the Gold Coast. THOUGHTS ON SOCIAL MEDIA? Highly overrated and quite frankly dangerous. Too many people believe everything they see on social media and it is not a true reflection of a person’s life nor can you judge success on the number of likes you get. THE MEANING OF LIFE IS…. Enjoy your time, because it is the one thing that you can't get back. You can’t borrow it or buy it - you are given a set amount so use it well.
