The Artist’s Hands by Marty Katon

S

elf-taught fine artist Marty Katon describes himself as “Crocodile Dundee, crossed with a Wild West gunslinger,” and lives with the Native Americans and rescued animals who leap from his realistic, life-size canvases. Katon has been painting professionally for 40 years and teaches oil painting to Make-A-Wish, Angel Wings and YMCA camp kids, as well as autistic children and other youngsters whom society often forgets. “The beauty of it all is that every painting is beautiful and successful; thus, every student gains equal selfesteem,” he says. Katon also works with wildlife rescue groups, including Wild Horses in Need. His studio shelters a menagerie that includes an albino hedgehog, a bat with a broken wing, a dog named Bear and visiting raccoons. “In my paintings, my own heritage comes together,” says Katon. “I come from Scottish craftsmen, English writers, and traders who married Native Americans. Why Three Meals a Day Works

W

atermelon, America’s all-time summer favorite, delivers more than just a juicy cool-down. According to a Texas A&M University study, the summer fruit may enhance libido in much the same way that Viagra does. “The more we study watermelons, the more we realize just how amazing a fruit it is, in providing natural enhancers to the human body,” says Bhimu Patil, Ph.D., director of Texas A&M’s Fruit and Vegetable Improvement Center, in College Station. He and his fellow researchers have discovered that a special nutrient in watermelon, called citrulline, has the ability to relax blood vessels, similar to the action of common male sexual enhancement drugs. How does it work? When consumed, the body converts the citrulline to arginine, an amino acid that works wonders on the heart and the circulation system by boosting nitric oxide, which in turn relaxes blood vessels, conferring basically the same effects Viagra does in the treatment of erectile dysfunction. Although watermelon may not be as organ-specific as Viagra, it is still a great way to relax blood vessels. Even better, watermelon has none of the drug’s side effects.

eople who eat one, two, or multiple meals a day continue to debate the best plan. Now, for the first time, two new studies have examined the effects that skipping meals might have on key health outcomes. The research involved normal-weight, middle-aged adults. Two groups of volunteers consumed all of their required weight-maintenance calories in either one meal a day, or in three meals a day. Analysis of initial results showed that consuming a single meal each day is feasible for the short term; however, so-called one-mealers experienced significant increases in total cholesterol, LDL (bad) cholesterol and blood pressure, compared with the three-mealers. Further analysis showed that one-mealers also had higher morning fasting blood sugar levels, as well as higher and more sustained elevations in blood sugar concentrations and a delayed response to the body’s natural insulin, the hormone that keeps blood sugar in check. The researchers concluded that the Mom-recommended tradition of eating three meals a day is a good thing. —Source: U.S. Department of Agriculture.

Exercise Counters Insomnia

A

bout 30 percent of adults suffer from insomnia, with women and the elderly most affected, reports the American Academy of Sleep Medicine. Some people resort to prescription drugs to invite slumber. Others look to herbal relief. But there is another way to help the body relax, say scientists who have examined the link between moderate exercise and a good night’s sleep. According to the Associated Professional Sleep Societies, anxiety is a leading contributor to this sleep disorder, and a session of moderate aerobic or strength exercise can reduce the anxiety level of insomnia patients. The study reported that participants who participated in aerobic or strength exercise fell asleep 54 percent faster and reduced their wake time by 36 percent, increasing total sleep time as well. The study was the first of its kind.

EarthTalk Dear EarthTalk: I saw warnings on bags of charcoal that said carcinogens are released when the briquettes are burned. Is it safe to inhale the smell and smoke of a charcoal grill? —Joe Sliwa, via email

B

arbecue grills can be problematic for two reasons. First, both charcoal and wood burn “dirty,” producing not only hydrocarbons, but also tiny soot particles that pollute the air and can aggravate heart and lung problems. Second, the grilling of meat can form two kinds of potentially carcinogenic compounds: polycyclic aromatic hydrocarbons (PAHs) and heterocyclic amines (HCAs). According to the American Cancer Society, PAHs form when fat from meat drips onto the charcoal. They then rise with the smoke and can

The hotter the temperature and the longer the meat cooks, the more HCAs are formed. HCAs also can form on broiled and pan-fried beef, pork, foul and fish, not just on grilled meats. In fact, National Cancer Institute researchers have identified 17 different HCAs that result from cooking “muscle meats” and may pose human cancer risks. Studies also have shown increased risk of colorectal, pancreatic and breast cancers associated with high intake of well-done, fried or barbequed meats.

Lump charcoal, made with charred wood to add flavor, also contributes to deforestation and adds to the greenhouse gases in the atmosphere. Charcoal briquettes do have the benefit of being made partly from sawdust (a good use of waste wood), but popular brands also may contain coal dust, starch, sodium nitrate, limestone and borax. In Canada, charcoal is now a restricted product under the Hazardous Products Act. According to the Canadian Department of Justice,

charcoal briquettes in bags that are advertised, imported or sold in Canada must display a label warning of the potential hazards of the product. No such requirements presently exist in the United States. Consumers can avoid exposure to these potentially harmful additives by sticking with so-called natural charcoal brands. Take Me Home, Country Roads

I

spent my youth on a dirt road. My parents’ house, while not exactly out in the country, is still outside city limits. Until recently it existed in a maze of narrow dirt roads meandering through the woods. Not any more. The county recently decided these roads needed to be paved. So they’ve been tearing them up, grading and widening them, moving telephone poles and mailboxes, uprooting trees, removing fences, encroaching upon property lines, revamping the landscape to lay down some asphalt. I don’t like it. Not being crazy, I understand it is easier to drive a car on a paved road than a dirt one. I learned how to drive (a blue minivan I named Bessie) on these dirt roads. I have driven cars, trucks, and said minivan on these roads, in all conditions, for half my life. I have dealt with the mud and potholes, the ruts and puddles in the rainy season, and the dust when it’s dry. I have learned the etiquette for navigating dirt roads too narrow for two cars to pass at once. Whoever can, based on road-shoulder conditions,

obligingly pulls over and waits; as the other driver passes, he briefly lifts his hand from the wheel in a stiff-fingered flap of salute (“Thank you kindly”), and the waiting party gives a head-bob and a raised hand of acknowledgment (“That’s quite all right”).

I have tested all theories of how to drive on a rut-ridden road. My grandfather, a mechanic, despaired of these roads. “You’re going to ruin this car flying down these rub-board roads!” he would warn my grandmother. (A rub-board is another term for a washboard, which is what my greatgrandmother used for 30 years to scrub the clothes of her eight children. You’ll never complain again about doing laundry, will you? Me neither.) And so my grandmother would slow her speed to about six miles an hour, to placate him, and they

would send a carrier pigeon to let us know, “Have just turned off main road. Be there in two days.” This is approximately how long it took them to go a quarter of a mile while driving as if through molasses, so as not to jar the delicate sensibilities of the Buick. I have friends, however, who suggest speeding over the rutted roads, to skim the surface and not actually go down in the ruts. I’ve tried both methods; neither is easy. So I comprehend that a paved road creates greater ease of driving. But aesthetically, it offends me. Do you know how beautifully luminous a dirt road is in the blue twilight of a summer evening or by the light of a full moon? The chalky white roads glow in the moonlight. And how picturesque are canopy roads and narrow country lanes bordered with phlox and pastures! Growing up, I always enjoyed giving directions to my house. It involved such landmarks as the drive-in theater and flea market, the truck stop, the railroad tracks, and the falling-down fence on the hilltop, and culminated in the phrase, “the big white house on the right just past the cow pasture.” A friend receiving these directions once said, “So we follow the sound of banjos until we see Tara?” Essentially, yes. I loved that my neighbors had chickens, peacocks, and horses; that I could hear roosters all day and owls all night; that my best friend’s mother across the street made cobblers from the blackberries we picked; and that when we cut down a palm tree, the mothers got together and made swamp cabbage out of it. I loved seeing woodpeckers, songbirds, squirrels, rabbits, raccoons, possums, and rainbow-striped skinks. Even the snakes didn’t bother me. House wrens would build nests in my mother’s ferns on the front porch; gopher tortoises

would dig burrows in the back yard. I loved smelling orange blossoms in the spring and woodsmoke in the fall, hearing crickets and cicadas and seeing fireflies in the summer, having Christmas-tree bonfires and stargazing in the winter. I loved the train horns and tree-frogs, the cows I named and tamed into eating apples out of my hand, the old man who set bags of oranges from his grove, along with an honor box, in the back of his truck by the roadside. And I loved the dirt roads in all seasons. My friends and I would take off our shoes and walk home barefoot from the bus stop. The dirt was pleasantly cool in the fall and sun-warmed in the spring, and when it rained, we splashed in the puddles. Of course, that’s also how I got ringworm one time, but that’s just part of growing up in the country. So are dirt roads. And I miss them. There’s a house now in the cow pasture, the grove is a wilderness and the old fence around it is gone, and I haven’t seen a firefly in years. I miss all that, too. Interval Semi-Fasting:

D

uring the past 10,000 years, our genes depended on a lifestyle that had a different daily caloric intake. Some days were a feast, and other days were close to fasting, especially during prolonged hunts. Most days provided a modest intake, largely from gathering familiar foods. Yet during the last 20-40 years, our daily calorie intake has become remarkably consistent, and at the same time our waistlines have expanded. For years, neuroscientists have advocated regular fasting to help prevent memory loss. Recently, a variety of studies have shown that cutting down on caloric intake might slow aging. More evidence suggests that varying caloric intake from day to day may help with blood sugar and weight control. As the evidence grows, the question is: should we all be doing a partial fast (800-1,000 calories per day) at least one or two days per week? The answer is probably “Yes,” especially for people who have trouble losing weight, have memory problems, or have problems with blood sugar control. For those with routine eating times, a semi-fasting day also gives them the chance to appreciate food more and deal with hunger in a new way. An article was written in Medical Hypotheses (Johnson JB, Laub DR, John S., 2006) called “The effect on health of alternate day calorie restriction: eating less and more than needed on alternate days prolongs life.” The authors shared their results from alternatively feeding elderly

people 900 calories or 2,300 calories every other day for three years. They compared this plan to another elderly group eating the same 1,600 calories every day. Those having the varied calorie intake showed much better health results (fewer deaths and hospitalizations, plus better weight

control and blood sugar control) compared to those eating the same calories daily. The key to this type of semi-fasting would be to meet your nutrient needs and protein requirements so that you maintain a healthy metabolism and maintain your ability to clear away toxins that are released from fat. It is suggested to pick a partial fast day regularly, and try this for a few months. Maybe a Monday, then add some Thursdays as well. Take your multivitamins and basic nutritionals (omega 3, Vitamin D-3, probiotic, digestive enzymes), enjoy three protein-fiber shakes per day, and drink more water. You can continue to enjoy a cup of good coffee and green tea each day. Your body hopefully will

appreciate the calorie intake variation, and in theory, this should make your metabolism and hormonal balance be more efficient, slow your aging process, and enhance your mental function. You may also get rid of a few pounds in the process. Here is a sample protein-fiber shake recipe you can use. In a blender, combine the following and blend until smooth: n 1-2 scoops of protein powder (such as rice/peas protein) or OptiMetabolix with 25-30 grams of protein per shake. oll out those lazy, hazy, crazy days of mind-altering heat! Summer is here, gardeners—it’s time to grab some beer (to trap slugs, of course) and head outside. This is when things really start popping, tree-wise. After the first burst of spring growth, the lack of water often slows things down for a while. But at the end of May and through June, our rains usually kick into gear and the grass grows longer than the line at the DMV. If you aren’t getting rain, the heat damages things quickly. I’m sure I sound like a broken record, but mulch, mulch, mulch and water, water, water! Just do it

appropriately—deep watering around the drip line of young trees and shrubs every few days is the way to go. And as for your grass, don’t cut it too short—the stress makes your lawn much more susceptible to dry conditions. The temptation is always there to crop it and save time, but sandy patches and dead grass are much uglier than long grass. While on the topic of grass, the Great American Lawn is now under attack on all sides. Did you know more water is used on grass than to irrigate the food crops we grow in this country? And grass produces nothing! (Pasture and property values exempted, of course.) Here in Marion County, with our heat, sandy soils, and frequent droughts, it makes sense to eliminate as much grass as you feel comfortable with. A nice way to start is with shade or fruit trees, surrounded by a few shrubs and tough groundcover in islands of mulch. The look is compelling and requires less water in the long run than a lawn. You might find it requires less maintenance as well. Plant prickly pears, and you can both save water and eat your landscaping. At this point on the food gardening front, okra is looking good. It can certainly take the heat. Of course, it’s also slimy, prickly, and somewhat loathsome. “But,” you say, “you just have to fry it!” But really … why fry okra when you can fry potatoes? Or chicken? Or shoe leather? Before you write me off as an okraphobic hate-monger, it’s nothing personal. I’ve even planted it before in a failed attempt to hide my South-Floridian roots and fit in with my much more truly Southern neighbors. “See? Look! Okra! And wait ... look ... I have a banjo too!” Heck, I once planted it in my wife’s rose garden because she’s the only one who hates it more than I do. It’s just one of my less-favorite members of the hibiscus family. Water gardening is an attractive and cooling way you can green up a shady spot in your yard. Putting down a liner or a pre-made form isn’t particularly difficult with a friend to help, and the sound of a tricking fountain on a hot day is a delight. Be aware, however, that a pond will attract frogs. Some people hate them, but I personally love to have them around, knowing they’re busy every night devouring insect pests in my yard. Dragonflies, birds, bees, and other beneficial creatures will also flock to your oasis and bring a whole new layer of life to your yard. Many water plants are edible, including cattails, so along with a few fish, you could create an exciting expansion to your horticultural horizons. That’s all for this month. DAD’S GOLDEN STORY HOUR Kids listen with their entire being by Clint Kelly

“S

oon, the brave little tailor and the beautiful Princess Minnie were happily married. And to think it all began with seven dead flies.” So ends The Brave Little Tailor, starring Mickey Mouse. Whenever I concluded reading with those words and attempted to close the well-worn book, I was inevitably hit with a chorus of, “Aw, Dad,” as they yearned for more. Why had my offspring narrowed their book selections to so few predictable favorites? Although the kids loved it, the constant repetition got to me. I rather empathized with the darker side of the original Brothers Grimm version of the tale. It’s not that I was opposed to pulling story duty. Children take comfort in the familiarity and lasting values of classic storylines. But at reading time, temptation whispered, “What they want is your time. It doesn’t matter what you read; just read …” A brief motor racing vignette in Road & Track, perhaps, or the latest

major league baseball trade analyses from Sports Illustrated? My mind would wander. They’d scold me. “Dad! You just said the little tailor caught seven flies in a row. It’s ‘Seven flies at one blow,’ Dad.” Busted. Sadly, it wasn’t long before I was caught yet again. “Dad! It was Chicken Little who thought the sky was falling and The Little Red Hen who worked to bake the bread her lazy friends wouldn’t lift a finger to make. You always get them mixed up.” Verbal slips aside, the kids crowded closer. They jockeyed for position against my chest, listening to the whoosh of my heart, the cadence of the words, and the conviction of my voice reverberating into their inner ears, down along their spinal columns and deep into their souls. Still, given the choice between Mrs. Piggle-Wiggle or the daily stock quotations, I’m afraid that Wall Street often muscled the good woman aside.

My wife urged me to persist. “The children have me all day. If only for a half-hour every night, you’ve got a solid grip on the children. Don’t let them slip away.” Okay, I thought. Just as Mrs. Piggle-Wiggle had her magical cures for never-want-to-go-to-bedders, surely I could find a cure for my reading ennui. In fact, taking a page from the Little Tailor’s playbook, I found seven. First, I sometimes invited a “guest” reader. A Grover hand puppet and a gravelly voice kept me alert, delighted the kids, and gave those stories a fresh new lease. The second remedy was to turn off the TV, ignore the phone, and read by a lone lamplight that ringed me and my audience in a cozy glow. Third, for variety, we’d sometimes read in a “secret” place. Goldilocks acquires a new dimension when read under the kitchen table. My fourth remedy was to introduce dinner readings. “For the first course,” I’d say, “a heaping helping of Hansel and Gretel.” Tomato soup and grilled cheese sandwiches lend themselves nicely to this departure from standard fare. Fifth, I’d occasionally take a break by playing a talking book episode. It made old standbys like Tom Sawyer fresh again. As a sixth solution, when I assigned the kids parts in a story, the plot took on a dimension that would often make us giggle. Even very young children who haven’t learned to read are able to memorize well-loved passages and recite lines verbatim. The seventh remedy was to spin original tales. When I was a boy, my mother created an entire forest world populated by clever animals: Fox, the sly one; Owl, the fusty Winston Churchill; and Beetle Boy, the action hero. I took what she began and created Further Adventures from the Deep, Dark Wood. While I didn’t feel every inch the polished spinner of tales early on, neither did I abdicate the richly fulfilling role of chief reader for our little tribe. The more interest I showed

their beloved classics, the closer they snuggled. Remedies in hand, my attitude improved. I relaxed and became less attached to my “other” reading material. At story time, I soaked up the hugs, the laughter, and the love. Truth be told, I came to like having the most luxurious—and the

According to a review of 200 children’s books by David Anderson, Ph.D., and Mykol Hamilton, Ph.D., fathers appeared about half as often as mothers. ithout hormones, the body’s chemical messengers affecting every human biological system, nothing works correctly. Testosterone, in particular, is critically important for male development, starting in the embryo, through puberty and into old age. After reaching peak levels in a man during his mid-to-late-20s, his testosterone level begins a slow decline. From the age of about 35, it drops by about 10 percent per decade for the rest of his life, accompanied by a slight increase in estrogen levels. While women experience physical markers when they enter menopause, there is no specific point at which men typically enter andropause, the less extreme male version of the change of life due to low hormone production. Test First Hormones travel the bloodstream in bound and unbound (free) forms; only the free ones activate various body functions. When evaluating a man, a doctor will typically order a blood test for total testosterone, combining both forms.

Older men often can show a normal total testosterone level, but have a low level of free testosterone. A saliva test brings clarity, because saliva only contains free hormones. Fifty-plus-yearold men with low free testosterone who show signs of hormone imbalance should consider natural supplementation, even when total testosterone is normal. hat have you learned from your recent explorations into the nature of reality? Like you, I have been looking for solutions for all health problems— preferably quick ones. It is always true: what you seek you will find as you open to it and believe it will come. The patient is now toxic. Besides being costly and painful, the quick fix is most likely not effective in the long run. When you fix a symptom, rather than discovering and responding to why it is there and what it is telling us by being there, we lose an important opportunity to move forward in solving rather than just suppressing or

removing a symptom. Fortunately, it is possible to do both. It is not always quick, although it can be. You can decide to respond to your symptoms as opportunities to learn and to develop your strength, health, and confidence. You may discover you can heal anything with food, Qigong, sound, or whatever works for you. You may discover the knee surgery can be avoided by you making different choices. Of course your insurance won’t pay for it. Are you interested in investing in your future aliveness? The big thing with the quick fix is that you still have the problems the body was trying to tell you about when it developed the symptoms. You could get involved and find out what is causing your health to deteriorate and do what it takes to regain your health. People call me all the time and tell me that what they have is incurable. The Great Cholesterol Hoax by Dr. Michael J. Badanek, DC, BS, CNS, DACBN, DCBCN, DM(P)

I

am dismayed and shocked as to how the American consumer has been led by the nose to slaughter by the “medical” field on the witch hunt to reduce cholesterol. Cholesterol is NOT the bad guy which is causing heart disease, strokes and the like. On the contrary, cholesterol is absolutely necessary for proper human function. We in the “civilized” world of the U.S. have totally lost sight of the real causes of these dreaded diseases. Cholesterol is absolutely necessary for proper function of the body, and when tampered with by medications then disastrous outcomes occur, such as cancer, immuno-compromise, neurodegenerative diseases, and psychoses. The American public is being systematically poisoned by pharmaceutical medications in the reduction of cholesterol levels. The sad conclusion is that many editors of medical journals have little interest in the pursuit in this debate. Besides, the inaccuracies, the misinterpretations, the exaggerations, and the misleading quotations, not to mention the fraudulent manipulations of the data in this research area, are so numerous that today it’s up to consumers to look outside the box and find the real truth about this controversy. Much has happened since drastic changes in laboratory diagnostic values occurred in 1999-2000. Many more studies have appeared that contradict the current views. What is

particularly interesting and surprising is that a steadily increasing number of studies have found that high cholesterol is beneficial, probably because it protects against cancer and infectious diseases. The anti-infectious effect of cholesterol is particularly challenging because a host of observations have documented a strong link between infections and cardiovascular diseases. At least 100 scientific reviews on this subject have been published, but hitherto no one has been able to explain how the infections interact with the processes that lead to atherosclerosis and cardiovascular disease. The main obstacle is most likely that for half a century we have been brainwashed to believe that cholesterol is the bad guy. How can high cholesterol be bad and at the same time protect us against factors that are harmful to our vessels? The cholesterol campaign has done immense harm. It has contributed to the epidemics of obesity and diabetes, as well as the widespread medication of mankind. Millions of healthy people are converted to patients taking cholesterol-lowering drugs, and if the official guidelines were followed in the future, most adult people and even many children would take them for the rest of their lives. But only a very small minority gain benefit from these drugs. Worse is that their side effects, many of which are seriously debilitating and even fatal, are grossly underreported. There are countless cases of secondary side effects of lousy memory, weak muscles, sexual dysfunction, bad tempers, and—most distressing of all—heart failure, just to name a few. Heart failure is now climbing statistically due to

the increased number of prescriptions of statin drugs being administered. Isn’t it funny that the medication that is supposed to reduce heart disease actually precipitates it? Did you know: n that cholesterol is not a deadly poison, but a substance vital to all the cells of all mammals? n that your body produces three to four times more cholesterol than what you eat? n that the production increases when you eat only small amounts of cholesterol and decreases when you eat large amounts? n that heart patients haven’t eaten more saturated fat than other people? n that stroke patients have eaten less? n that people with low cholesterol become just as atherosclerotic as people with high? n that high cholesterol is not a risk factor for women? n that high cholesterol is not a risk factor for people older than 65 although by far most heart attacks occur after that age? n that the effect on cholesterol of the low fat diet is trivial at most? n that most of the cholesterol-lowering drugs are dangerous to your health and will shorten your life? n that the new cholesterol lowering drugs, statins, do lower heart disease mortality, but this is because of effects other than cholesterol lowering? Unfortunately, they also may destroy your muscles and your mind, make you impotent, and produce cancer. n that most of these facts have been presented in scientific journals and books for decades, but the proponents of the diet heart hypothesis never tell

them to the public? n that the cholesterol campaign creates immense prosperity for researchers, doctors, medical journals, drug producers, and the food industry? I guess your answers to these questions is “No,” and you are not alone. According to a Gallup poll taken many years ago, half of all Americans worried about fat and cholesterol and most of them had guilt feelings when they ate food they liked. Apart from the fact that worrying about your health is bad for your heart, all this stress and anxiety is unnecessary. The cholesterol campaign is medical quackery of the first order. Conflict Resolution Strategies for Couples by Marie Glasheen

O

ften, in our most personal and intimate relationships, there is great opportunity for growth through conflict. Couples who are committed to their partner learn that conflict is a natural part of engaging closely with another human being. It can lead to deeper trust and an even stronger sense of commitment. However, if unchecked, or repressed, it can also lead to bitterness, anger, and strain in a relationship. In order to resolve conflict in the context of personal growth, intimacy, and trust, here are some basic conflict resolution strategies that work. Listening so that others feel understood One of the greatest human emotional needs is to feel heard and understood. When we are committed to providing an environment of care and concern in our relationship, the most loving thing we can do for our partner is listen. One important quality of listening is empathy. Empathic listening means that we take the time to hear what our partner is saying while suspending our personal agendas. This does not mean that we become passive or give in to our partner in a way that feels disempowering. It simply means that we are able to hear from a clear, objective space before responding to what has been said. We can ask our partner how understood they feel in terms of a percentage. If they say that they feel 80

percent understood, we can then ask them to repeat or restate the aspects where they do not feel heard, until they feel 100 percent understood. Commitment to full understanding is a characteristic of true dialogue, rather than simultaneous monologues.

In some circles a “conversation” is understood as a vocal competition in which the one who is catching his breath is called the listener! Genuine dialogue is devoted to full understanding as a foundation for transforming conflict into closeness. Assertive communication in conflict resolution When we learn to communicate assertively, we approach the heart of the conflict in a clear and direct manner. Sometimes in intimate relationships, we tend to avoid stating how we feel because we do not want to hurt the other person. Sometimes, we go to the other extreme and want to dominate and control the other person. There are many styles of

relating that become more pronounced in the heat of a conflict. Assertive communication offers a solution to working through the conflict while remaining in personal integrity and respecting the relationship. This style of communication means that we are neither being passive, allowing the other’s needs and desires to come before our own, nor aggressively attempting to make ourselves and our needs more important. It is an appropriate balance of stating what happened for us, how we feel about it, and what we would like to experience differently. This is solution-oriented communication; as with any skill, it takes consistent practice to execute well. Another aspect of speaking assertively is using “I” statements. In other words, we are taking responsibility for our personal experience and stating “I feel” or “I experience” rather than blaming, criticizing, or even stating “You make me feel this way.” An example of an “I” statement is “I feel insecure, and then I resent you when you come home late because I don’t know where you have been.” This sounds very different than “You’re so inconsiderate and irresponsible, and you make me furious when you come home late,” which places all the power and responsibility in the other person’s actions. When we learn to take responsibility in this way with our language and our way of being, we are empowered to create the relationship we want. When we learn to listen with empathy in order to understand, and communicate assertively to be understood, we establish a rich ground for building intimacy and trust in the heart of conflict. Smoked Salmon Mousse

Ingredients: 6 oz. smoked salmon 2 large eggs 3 tbsp. lemon juice 5 oz. heavy cream 2 tbsp. chopped fennel 2 tbsp. chopped parsley 4 tbsp. chopped dill 4 tbsp. chopped scallions

Directions: Separate egg yolks from whites; beat whites until stiff; set aside. Using blender or food processor, pulse salmon into a paste; add egg yolks, lemon juice, 4 tablespoons of cream, fennel, parsley, dill and scallions, pulsing for a second or two at each ingredient’s incorporation. Remove paste, scraping down processor/ blades, into a medium bowl. Beat remaining cream into stiff peaks, FOLD into salmon mixture. Then FOLD in beaten egg whites Cover; chill the mixture for an hour.

Chiropractors, often called upon to undo the damages of travel, understand its causes. Fortunately, they also offer a full itinerary of informative tips to help us avoid the pains and strains of getting from here to there.

art of the problem is prolonged sitting, which “can wreak havoc on the body,” explains Dr. Scott Bautch, a member of the American Chiropractic Association’s (ACA) Council on Occupational Health. “Even if you travel in the most comfortable car or fly first-class, certain pressures and forces from awkward positions can result in restricted blood flow.” Dr. Daniel Hillis, in Naples, points out: “Our bodies are designed to move. To avoid backaches and other muscle strains inflicted from long periods of sitting, it’s important to have proper support and to move around whenever possible.” The ACA suggests treating travel as an athletic event. Warm up before settling into a seat and do a destination cool-down, by taking a brisk walk to stretch the hamstring and calf muscles. Further, try these tips as the ticket for a more comfortable trip.

IN THE CAR: Adjust the seat so that you are sit-

ting as close to the steering wheel as comfortably possible. Knees should be slightly higher than the hips. Place four fingers behind the back of your thigh at the point closest to the knee. If you cannot easily slide your fingers in and out of that space, readjust the seat.

Use a back support to help reduce the risk of low-back strain, pain or injury. Its widest part should be between the bottom of your rib cage and waistline. Exercise your legs while driving, in order to reduce the risk of swelling, fatigue or discomfort. Open your toes as wide as possible and count to 10. Count to five while first tightening calf muscles, then thigh muscles, then gluteal muscles.

To minimize arm and hand tension, hold the steering wheel at

approximately 3 o’clock and 7 o’clock positions, periodically switching to 10 o’clock and 5 o’clock.

Do not grip the steering wheel.

Instead, tighten and loosen your hold to improve hand circulation and decrease muscle fatigue in arms, wrists and hands.

While keeping your eyes on the road, vary your focal point, to reduce the risk of eye fatigue and tension headaches.

Take rest breaks. Never underes-

timate the potential consequences of fatigue to yourself, passengers and other drivers.

IN A JET: Stand up straight and feel the spine’s normal “S” curve. Then, use rolled-up pillows or blankets to maintain that curve while sitting in your seat. Tuck a pillow behind your back just above the beltline and lay another pillow across the gap between your neck and the headrest.

Check all bags heavier than 5 to 10 percent of your body weight. While lifting carry-on bags, stand directly in front of the overhead compartment, so the spine is not rotated. Do not lift bags directly over your head or turn or twist your head and neck in the maneuver. While seated, vary your position occasionally to

improve circulation and avoid leg cramps. Massage legs and calves. Bring legs in and move knees up and down. Prop your legs up on a book or a bag under the seat in front of you.
