Sieve the flour, salt and spice into a mixing bowl Then with your fingers, rub in the butter, lard or margarine until the mixture looks crumbly. Add the sugar and dried fruit. Pour in the beaten egg adding milk if it seems a little dry and stir to make soft dough Roll out the dough on a lightly floured work surface to approximately 5mm thick Cut into discs with a 4-5cm cutter Grease a flat griddle pan or heavy frying pan lightly buttered and place over a medium heat. Bake the Welsh cakes on the griddle, turning once, until golden brown on both sides but still a little soft in the middle. Dust with caster sugar while still hot
