1 cup water

½ cup fresh grapefruit juice

2 sprigs fresh rosemary

4 slices fresh ginger

1 tbsp grapefruit zest

1/2 cup fresh grapefruit juice

Instructions

Grapefruit Rosemary Simple Syrup

Add all the ingredients for the syrup in a small pot and bring to the boil. Reduce the heat and let it simmer for 10 minutes.

Remove from the heat and let the syrup steep and cool for about one hour. Store it in a glass bottle or glass jar and keep refrigerated for up to one week. * If you don't like grapefruit zest can be removed through a fine mesh strainer if preferred.

Closing your summer pool for the cold months ahead is a crucial task to ensure it remains in good shape through the winter. The first step is to thoroughly clean the pool. Begin by removing any debris such as leaves and twigs with a skimmer net.

Next, brush the sides and bottom of the pool to dislodge algae and other deposits. After brushing, vacuum the pool to collect any remaining debris. It's also important to clean or backwash your pool filter according to the manufacturer's instructions to ensure it operates efficiently throughout the season.

Once the pool is clean, you should balance the water chemistry. Use a water test kit to check the levels of pH, alkalinity, calcium hardness, and chlorine. Adjust these levels as needed to prevent an acidic environment over the winter, algae growth and protect your pool equipment. Ideally, the pH should be between 7.2 and 7.6, alkalinity between 80-120 ppm, calcium hardness between 200ppm-500ppm and chlorine at a minimum level suitable for winterizing.

Adding winterizing chemicals such as algaecide will help prevent algae growth during the off-season, and if your pool plumbing is prone to freezing, consider adding pool antifreeze to protect the lines.

Lowering the water level in the pool is another essential step. Drain the water to just below the returns or according to the level recommended by your pool manufacturer. This helps prevent water from freezing and causing damage to the skimmer and plumbing.

Additionally, remove all pool accessories like ladders and diving boards, and store them in a dry place. Disconnect and drain all hoses, then store them in a location where they won't be exposed to freezing temperatures.

Winterizing the pool equipment involves draining the pump, filter, and heater. For a cartridge filter, remove and clean the cartridge before storing it in a dry place. To prevent freezing and potential damage, use a blower to remove water from the pool's plumbing lines.

Once the pool and its components are prepared, cover the pool with a suitable cover-whether it's solid, mesh, or winter cover. Ensure the cover is securely fastened to prevent it from blowing off or becoming damaged by harsh weather.

Finally, keep an eye on the pool area throughout the fall and winter. Regularly check the pool cover and surrounding area to make sure everything remains intact and that the cover stays secure. By following these steps, you'll ensure that your pool is well-protected and ready for use when summer arrives again.

A Colourful Celebration of Love, Inclusion and Identity

Stratford Festival’s La Cage aux Folles is a lively and touching show about love, family, and being true to yourself. Directed by Thom Allison, this colourful musical by Jerry Herman and Harvey Fierstein is both fun and meaningful.

The story is about Georges and Albin, a gay couple who run a drag nightclub in St. Tropez. Things get complicated when their son, Jean-Michel, gets engaged to the daughter of a strict politician. As Georges and Albin try to look like a traditional family, the show mixes humour with heartfelt moments and impressive performances.

Sean Arbuckle and Steve Ross stand out as Georges and Albin. Arbuckle portrays Georges with charm and humour, while Ross gives a powerful performance as Albin, especially in the song “I Am What I Am.”

The ensemble cast brings extra energy and laughs, and the choreography by Cameron Carver is full of excitement, especially in the lively “La Cage aux Folles” number. The set and costumes, designed by Brandon Kleiman and David Boechler, are vibrant and fitting for the nightclub setting.

David Beckham’s Single Shroom Pizza

ingredients

8 ounces pre-made raw pizza dough, room temperature

1/4 cup marinara or pizza sauce

Few pinches of red pepper flakes (or as desired)

4 Ounces mozzarella cheese, patted dry to remove excess moisture

1 perfectly grilled chestnut mushroom

Directions

Install the Accessory Frame in the bottom level of the unit, then place the Pizza Stone on top with the ninja logo in the front right corner.

Turn left-hand dial to select PIZZA, then use the right-hand dial to select NEAPOLITAN, and set time to 3 minutes. Select START/STOP to begin preheating (preheating will take approx. 25 minutes).

On a heavily floured work surface, stretch and toss dough by hand into a 10-inch circle about 1/8 inch thick.

Evenly cover dough with pizza sauce, leaving a ½-inch edge for the crust. Then evenly sprinkle with red pepper flakes and top with sliced mozzarella.

Recently, David Beckham took to social media to share a new video of him crafting the perfect pizza using his Ninja Woodfire™ 8-in-1 Outdoor Oven. In a playful nod to the surprising popularity of his recent documentary, where he prepared just one mushroom, the video features Beckham humorously grilling a single chestnut mushroom while preparing and assembling his margherita pizza. True to form, the pizza is completed with just one mushroom after being pulled from the outdoor oven.

When unit is preheated and ADD FOOD and PRS STRT is displayed, open door, slide a floured Pizza Peel under the pizza and transfer to the hot stone. Close door, select START/STOP, and cook for 3 minutes. If more time is necessary or a darker pizza is desired, increase the time using the right-hand dial.

When cooking is complete, open door and remove pizza with peel. Place a single, perfectly grilled mushroom in the center of the pizza. Let rest for 5 minutes before cutting and serving.
