Many unique gift ideas Back in the house there’s more recreational space on the second floor. The media room is a large space where the family can host guests or enjoy some family time. Complementing the same lodge feel found in the rest of the house, here the ceiling is also finished in cedar. Wainscoting is also added to beautify the walls and add sophistication to the space. “It’s all maple from the trees that used to exist on the property,” said Roger. The same wood was used for the door and window trim throughout the house. In the children’s rooms the same rich maple wood was used to create a shelving ledge around each room. It was also used to create an opening, which serves as the laundry chute just outside the children’s bedrooms. “It’s one of two in the house. The second one is in the master’s walk-in closet,” said Melanie. In the master suite, there’s a large ensuite bathroom that serves as the couple’s private sanctuary. With his and hers sinks, in addition to a complete makeup counter, there’s plenty of room here for a couple to get ready. The ultimate relaxation spot in this space however, is the outdoor hot tub that rests on the couple’s private deck. Having always been quite the entertainers, the Kemble family has previously hosted a wedding reception at their residence. And with seven bedrooms in the house, they’re always able to accommodate a large number of guests. “One time we had 30 people spend the weekend at our place,” said Melanie.

Festive food matches with amazing value wines By GORd STIMMELL It’s the festive season, when family comes first in our thoughts. Of course, friends dropping by for special weekend dinners and winter evening parties also come into vogue. Lots of the feasting will focus on turkey or whole chicken, special fish dishes, aged clover studded hams, as well as racks or leg of lamb and sirloin or prime rib roasts. The best wines to accompany these should be special, but that does not mean they have to cost an arm and a leg. I am always in the hunt for the best-hidden gems at a price that does not involve a second mortgage. So today, I bring you my latest top value white and red wines. Between the five choices, they can match with almost anything you can dream up in the kitchen. You may be aware that several wines can go with a single dish. For instance, with roast turkey, a sauvignon blanc will cut cleanly through all that gravy and excite and clean the palate. But an oaked chardonnay also can go because it matches or complements the gravy and all the butter on mashed potatoes and veggies. Some folks will even match a pinot noir or gamay to roast turkey, although that is quite daring. But this lighter styled red does go with mushroom or savoury stuffing, as well as cranberry sauce. So don’t feel bound by my food suggestions. By experimenting with your own palate and different foods, you widen your taste knowledge and learn at the same time how wine and cuisine can transform one another. “We
encourage people to sample, savour and slurp their way through our tasty products,” says Alex Yuen, who owns the Collingwood Olive Oil Company with his wife, Cheryl McMenemy. Established in the spring of 2014, the downtown Collingwood business serves up more than40 flavour varieties of pure, fresh, extra
virgin olive oils and balsamic vinegars. The luscious liquids are never pre-bottled. Instead, they’re stored in stainless steel Italian fustis (vessels with spouts) which line the shop’s shelves. “All of our selections are poured and bottled fresh in our shop for you to take home and enjoy,” explains the 48-year-old business owner and trained chef. When it comes to olive oil, fresh is best. “We sell the freshest olive oils from around the world. For example, our current supply is from olives picked and crushed in the spring of 2014,” he explains. The local business utilizes alternating harvest seasons in the northern and southern hemispheres to access the most recent olive crushes, bringing customers the freshest juice available from Tunisia, Greece, Spain, Italy, Portugal, California, Chile, Peru and Australia. How does the local product match up to bottled grocery store oil? “It’s like comparing a Ferrari to a Lada,” he chuckles. “The grocery store oils have probably been sitting in vats for two to three years before being bottled and sold on shelves. The oil is old, tasteless, has little aroma and has lost most of the health benefits derived from using extra virgin olive oil. It’s edible, but that’s about it.” The local tasting bar’s products are tested twice, once in California and once in a world renowned, independent lab in Australia. “You are receiving a fresh, pure, unadulterated product of the highest standard,” he explains. Extra virgin is the highest quality and most expensive olive oil classification. “You can taste the freshness and amazing flavour. Good quality extra virgin olive oil has a grasslike aroma, tastes like fresh olives and offers a creamy flavour.” The recommended olive oil shelf date is about eight months. The couple travelled down the olive oil path after visiting friends in St. Catharines, Ontario who own a similar shop called Dellaterra. “We fell in love with their products, and felt that Collingwood could use a similar tasting bar,” explains Yuen, who is no stranger to the local food scene. “Cooking is in my blood because my parents owned and operated Collingwood’s Bamboo Terrace (the current site of Santini’s) for 37 years.” His wife, Cheryl, a full-time sales and marketing manager for Metroland Media, helps out on a part-time basis. As of late, olive oil and balsamic vinegar tasting bars have become popular with foodies. “It’s a growing trend,” says Yuen, who estimates there are about 450 similar shops in the United

Freshly poured bottles of oils and vinegars come in three different bottle sizes: 200mL, 375 mL and 750 mL. Average prices range from $13 to $28 a bottle. With over 40 flavour varieties and hundreds of pairing possibilities, the choices are endless. Along with various extra virgin olive oils, top sellers include flavoured oils such as Tuscan herb, garlic, butter and Herbs de Provence. Truffle oil and sesame seed oil also fly off the shelves. Various vinegars are also sought after. “Our chocolate balsamic, which can be used in desserts, salads and baking, is a must-have.” The Collingwood Olive Oil Company sells gift baskets and even offers private tastings for groups of eight or more people. And there’s lots to take in once you arrive. From the ducks swimming peacefully in the large pond to the free range chickens milling about the 15-acre property. “It’s a lovely setting to learn how to cook,” observes chef Philip Tarlo, who runs the Collingwood-area cooking school and onsite bed and breakfast with his wife Leanne Calvert. “We’re surrounded by apple orchards and the beauty of Grey-Bruce County.” To learn more about the four-year-old culinary school, chef Tarlo invited this GoodLife reporter into the kitchen to share his stories. Over coffee, the cheerful foodie talked passionately about everything from his love of teaching and preparing fresh food to his early days as a young chef at the Savoy hotel in London, England.

What led you to open up the Collingwood Cooking Academy? Philip Tarlo: I simply love teaching! I enjoy inspiring people to cook fresh food. That’s what I do. What classes do you offer? PT: We do lots of different courses, including Thai, Asian, cooking 101, a tour of Italy, healthy soups, appetizers and hors d’oeuvres, pasta, healthy cooking made easy, fish and shellfish 101, bread making, gluten-free, vegetarian, chocolate, date night dinners and so on. I just rhymed off the standard ones, but we can customize any kind of class you’d like. We even teach barbecuing classes outside in our outdoor kitchen, which also showcases a wood-fired pizza oven. Each class lasts about three to four hours, and it’s a hands-on experience. Class sizes range from four to 16 students, and are generally taught in the afternoon or evening.

What’s the most popular? PT: Our most popular experience is our date night dinner, which features four courses. Guests can then enjoy the dinner in the dining room with wine (which you bring yourself). Our Thai class is also very popular because we can customize it for vegetarians. During the experience, I introduce some knife skills, talk about some of the chemistry involved in cooking and touch upon food production and so on. There’s a bit of cooking 101 thrown into each experience. Let’s hear about your culinary background. PT: My twin brother, Maurice, who was also trained at the Savoy, was the reason I moved to Canada. He was living in Toronto, and asked me to buy a restaurant with him. It was on Church Street, and we successfully ran it for five years. We sold it because I wanted to move to a smaller town. I found a job in Collingwood, and I’ve been here ever since. I was the food provider at Osler Bluffs Ski Resort for over 22 years. Along with other food contracts through our catering company, High Table Catering, we also owned and operated various Collingwood restaurants including Terra Cotta Restaurant, Pine Street Cafe and Admiral’s Post Pub. During that time, I met Leanne, got married and we had three children. Seven years ago, we opened the bed and breakfast and later the culinary school. Let’s hear more about Willow Trace Bed and Breakfast, which is located on-site. Can folks stay for the weekend and learn how to cook? PT: Absolutely! We do a little bit of everything here. We have 15 acres, and are located just outside of Collingwood. We have four rooms, a pool and great walking and cross country skiing/snowshoe trails. Our free-range chickens and ducks give us lovely fresh eggs for breakfast. We also have various fruit trees, including cherry, apple, pear, peach and plum — which we readily harvest to make homemade preserves for our breakfast guests.

You’re part of the Apple Pie Trail applepietrail.ca. Describe that experience. PT: The class focuses on local apples. I teach how to cook apple pies three different ways, with three different toppings — crumble, lattice and a solid top. All of the pastry is made from scratch. We also make apple walnut bread, apple strudel and finish it off with apple crepes. We usually teach this class in the morning because it’s offered in connection with Scandinave Spa. Let’s hear about your corporate team building events and bachelorette parties. PT: We often focus on appetizers for these classes. After making all of the appetizers, we finish off the class with a cocktail party. The chocolate making classes are also very popular for bachelorette parties. What’s your number one tip for culinary students? PT: Besides eating fresh food? Be organized! Organize your menu and organize your shopping. That way, you’ll save money and prepare better food. As you’ve gone through your culinary journey, what advice do you remember the most from your own training? PT: When I was 15, I worked as a chef in the kitchen brigade at the Savoy Hotel. He said: ‘you do a job once, and you do it properly.’ That advice has always stayed with me because it’s so annoying when you have to go back and do a job twice. Why are your classes so popular? PT: They are fun and informative. My goal is to inspire people to cook fresh food, and to take control over what they are eating. Families who cook together and eat together are much happier, I believe. Food breaks down all barriers and when you cook and eat together, good conversations are bound to happen. What’s the cost? PT: Classes are generally about $75 per person. Some classes, like the fish and seafood experience, cost a bit more due to expensive ingredients. I should mention that we sell tons of gift certificates. It’s the perfect gift for someone who has everything.

What’s the secret to cooking like a chef? PT: Practice. It’s learning the technical side and then practising it. For example, holding and properly using your knives is very important. You’re a big proponent of local food, and have hosted a local culinary show on Rogers TV. How can we better promote local food? PT: Access is key. I would love to see more year-round local farmers’ markets. Secondly, I would like to see more local branding. For example, if a product is from Grey-Bruce County — I think it should be labelled that way. Branding food gives it more of a local identity. Where do you find culinary inspiration? PT: Shopping inspires me. Lately, I’ve been going crazy for the local green beans! Also, the cauliflower is just beautiful — just makes you want to take it home and cover it with cheese sauce [smiles].

INGREdIENTS:
In a large heavy bottomed pot, heat oil on high heat. Add the ground beef and cook until brown. Remove the beef and set aside.
4 Tbsp (plus 2 Tbsp) vegetable oil for frying 1-1/2 lbs (675 grams) lean ground or chopped beef 1 large onion, chopped fine 3 cloves garlic, crushed 2 Tbsp tomato paste 1 tsp chili powder (depending on the strength) 1 (15 ounce) can red kidney beans, drained 1 (16 ounce) can of crushed (or pureed) tomatoes Salt to taste 2 fresh (or dried) green chilli peppers, chopped fine (without the seeds unless you want it hot) 2 bay leaves Pinch of thyme
In the same pot, over medium heat, add two tablespoons of oil and add the onions and garlic. Sweat the onions and garlic (you don’t want to brown them) for about five minutes. Stir in the tomato paste and let cook for about two minutes.

INGREdIENTS: 1-1/2 cups cornmeal 2-1/2 cups milk 2 cups all-purpose flour 1 Tbsp baking powder 1 tsp salt 2/3 cup granulated sugar 2 eggs 1/2 cup vegetable oil PREPARATION: Preheat oven to 400F.
Add the cooked meat, and stir in the remaining ingredients. Bring to a simmer, cover and slowly cook for about 1 hour.
In a small bowl, combine cornmeal and milk; let stand for 5 minutes. Grease a 9x13-inch baking pan.
Adjust seasonings if necessary and remove the bay leaves.
In a large bowl, whisk together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs and oil until smooth. Pour batter into prepared pan.
Place in bowls and top with grated cheddar cheese and/or sour cream. Serve the chili with corn bread and honey. Serves 4 to 6.

Who is your favourite celebrity chef? PT: Jamie Oliver is my hero chef. There are so many things I like about him. He’s got passion, his food is simple and there aren’t too many ingredients. He’s into good food, and he let’s the ingredients speak for themselves. I just think he’s great! What’s your favourite dish to cook at home? PT: I don’t really have favourites. I cook something different every day and I like cooking what my friends and family enjoy eating. Last night, I cooked a fish pie made with shrimp, smoked haddock, scallops and fresh cod. It was topped with mashed potatoes, green onions and cheese.

What’s your favourite food destination? PT: I absolutely love markets. My daughter lives near Kenzington Market in Toronto, so I visit that market frequently. I also like Toronto’s St. Lawrence Market. My favourite shops are fish mongers and cheese boutiques. I love seeing the whole fish and all of the different colours, flavours and aromas of the markets. Enjoying the shopping experience is a very important part of cooking. They go hand-in-hand because it’s an extension of the cooking experience. If you don’t like shopping, you probably won’t enjoy cooking. You’ve got the ear of thousands of local foodies. Anything you’d like to add? PT: Cooking should be fun! 1/2 tsp freshly grounded pepper 3 Tbsp cornstarch PREPARATION: 1. Preheat oven to 375F. 2. Combine all ingredients in a mixing bowl, incorporate well. Line a baking sheet with parchment paper. Using a tablespoon, spoon out the mixture leaving an inch between each portion. Place in oven and cook for 7 minutes. Flip, and cook for another five minutes, or until golden brown. 3. Serve warm — either plain or with sour cream or an aoili. {Makes about 30}

Courtesy of chef Philip Tarlo of the Collingwood Cooking Academy 1/2 lb (250 g) cheddar cheese, grated 6 slices bacon fried or broiled crisp, crumbled 4 oz (100 g) sliced almonds, lightly toasted 1 medium onion, finely chopped 1 cup mayonnaise (regular or light) Salt and pepper to taste 1 loaf white bread thin sliced (or 1.5 white baguette)
PREPARATION: 1. Preheat oven to 400F. 2. In medium bowl, combine cheese, bacon, almonds, onion and mayonnaise. Season to taste with salt and pepper. 3. Remove crusts from the bread (you won’t need to remove the crust if using a baguette) and spread with the mixture. 4. Cut each slice into 4 pieces and place onto baking sheets (you won’t need to slice the baguette pieces), and bake for 10 min or until brown. Serve immediately. Makes about 64 small pieces (less if using a baguette). 5. Note: prior to cooking, these appetizers may be frozen, covered on a baking sheet.

FILO CUPS 3 sheets filo dough (PC makes a really good filo) 1 cup (2 sticks) butter, melted PREPARATION: 1. Preheat oven to 350F. 2. Place first sheet of filo on cutting board and brush with butter. Place next sheet on top of buttered filo and repeat with butter. Add one more sheet of filo and brush with butter. 3. The 24-year-old Georgian College trained chef, who was born in Penetanguishene, has always felt at home in the kitchen. “I grew up helping my grandparents and mom cook everything from simple spaghetti to pies and desserts,” explains the young chef. After working his way up the cooking ladder in various local restaurants, Fournier landed at Micheal and Marion’s the Side Door in 2012 as garde manger. By the summer of 2014, he took over as head chef.

MOUSSE 2 sides smoked trout chopped (ours came from Port Carling in Muskoka) 3 cups goat cheese 5 leafs fresh sage chiffonade (chiffonade means sliced into long, thin strips) 3 Tbsp 35% whipping cream PREPARATION: 1. In a stand mixer, whip trout, goat cheese and sage until soft. 2. Add the cream slowly and whip until cream is incorporated and goat cheese is smooth, but still has some small chunks of trout.

MARMALAdE 1 medium orange Zest from half of lemon 1/2 cup sugar 1/8 tsp cinnamon 1/8 tsp allspice 1 pinch nutmeg PREPARATION: 1. Cut orange into thin slices (roughly 1/8-inch slices), removing any seeds as you go. Stack the slices together and cut into eighths. 2. In a small saucepan, combine oranges, lemon juice, zest and water; bring to a boil. Reduce heat to a rapid simmer and cook stirring frequently for 40 minutes or, until fruit is very soft. 3. Return to a boil and add sugar and spices. Reduce heat to medium low and cook 15 to 20 minutes, or until colour darkens. Set aside, keeping warm, until ready to use or reheat before use.
3-1/2 cups granulated sugar 1-1/2 cups water Note: if you can’t find kumquats you can use a thinly sliced orange PREPARATION: 1. Thinly slice kumquats. 2. In medium saucepan over medium to high heat, bring 1-1/2 cups sugar and water to a simmer and cook until the sugar is completely dissolved to make a simple syrup. 3. Add sliced kumquats to the simmering syrup and cook until softened. 4. Strain off the kumquats and toss them in the 2 cups of sugar. Lay onto baking sheet lined with parchment paper to air dry for about 30 to 40 minutes. Remember to reserve the syrup to add to your favourite drinks like homemade iced tea, hot teas or coffees. Also, save the rest of your 2 cups of sugar to use in baked goods because it will have a delicate citrus flavour. Note: If using oranges, quarter the orange slices after they dry. 5. To Assemble the appetizer: Pipe or quenelle 3/4 to 1 ounce of mousse into each filo cup. Spoon the warm marmalade over top of the mousse. 6. Top by pushing one of the kumquats into the top of the mousse. Serve. {Makes 24}

The holiday season and chocolate go hand
in hand. With that in mind, GoodLife tracked down various local chocolatiers to learn more about their mouthwatering creations. Here’s a sampling of some of the region’s best chocolate makers. »

Owned and operated by Mark and Monica Aarden, the local sweet shop is filled to the brim with gourmet chocolates. “It’s a true European chocolate wonderland with the heavenly aroma of the finest Belgian Callebaut chocolate,” says Monica Aarden with a smile. Trained as a Master Chocolatier, teacher and pastry chef in the Netherlands, Mark has worked in the chocolate industry for the past 30 years. “He’s been in the chocolate business since he was 17,” Monica Aarden boasts proudly. “Many of the traditional recipes we use date
back to the 1800s, from the European company where Mark worked as the manager and main chocolate manufacturer.” As for the couple’s chocolate making philosophy? “We make everything on-site from scratch using the best quality ingredients. Quality comes first,” says the chocolatier. Catering to the sweet desires of every customer, Aarden Chocolates serves up various tempting treats including Belgian bonbons, signature truffles, chocolate truffles and various solid chocolates, dipped creations and barks — to name a few. “We love what we do and we both nibble away all day long,” she chuckles. Belgian bonbons are one of the chocolatier’s specialties. “They are filled with a basic ganache (ganache is a velvety smooth blend of chocolate and cream) and a variety of delicious flavours. For all our creams, caramels and ice cream, we use our own local Miller’s Dairy from Creemore.” Speaking of caramel, the shop’s top seller is chewy caramel dipped in chocolate.
Along with gourmet chocolate, the local chocolatier specializes in creating gift baskets, party trays, along with wedding and speciality cakes. The local shop offers gluten-free, peanutfree, and sugar-free chocolates. During the holiday season, Aarden’s Chocolates offers a variety of festive themed treats. From snowmen to wreaths to Santas — just about every holiday shape is covered. “We love to dress up our chocolate boxes with holiday bows,” says the chocolatier. For customers leaving with just one item? “A box of our signature Dutch truffles is a must.” Signature Dutch truffles feature flavoured butter creams. Each truffle is individually hand dipped in smooth velvety chocolate, then hand rolled in small chunks of chocolate or Dutch Brut cocoa powder. Aarden’s Chocolates manufactures, retails, and wholesales its chocolates and products are available in a variety of shops throughout Ontario.

Along with holiday-themed goodies, the local shop is best known for its chocolates and truffles. “You pick an empty gold box and fill it up with your favourites.” Top sellers also include puddles – creamy chewy caramel covered in milk or dark chocolate (flavours are plain, pecan or peanut butter), various barks, various types of fudge, roasted marshmallows, sponge toffee and a selection of candy. “We also sell a lot of chocolate dipped double stuffed Oreo cookies.” All of the chocolate and most of fudge is gluten-free. The local shop also offers up wedding favours, along with treats for baby showers, birthdays and other special occasions. And if a Chocolate Shop customer could only purchase one item? “A box of chocolates in our signature gold box would be my recommendation.”

Delectable festive offerings include edible gift baskets, chocolate sleighs (filled to the brim with goodies), chocolate Christmas trees, chocolate snowmen and chocolate Santas. “The Christmas trees and sleighs make delicious centerpieces and are perfect hostess gifts,” explains Chafey, who has owned the local business for almost a decade. The chocolate Christmas train is also very popular. “Our customers love it,” she says. Festive shapes include Santas, snowmen and Christmas trees to name a few. A hollow chocolate candle surrounded with truffles is a new product for this festive season. Featuring a flameless votive, it makes the perfect centerpiece during dinner. “And then everyone can enjoy the chocolate for dessert.” Hollow chocolate festive cupcakes with a truffle inside are also fun for dinner gatherings. For business clients, Chelsea Chocolates even makes edible corporate logos. And more chocolate goodies stock the shelves. From A to Z (in chocolate letters), sumptuous truffles, delectable chocolate bark, and chocolates featuring delicious cream or wine fillings, Chelsea Chocolates features the highest standard in chocolate creations. “We are proud to make all of our chocolates by hand with homemade fillings using fresh cream, butter, high quality flavourings and the finest in Belgian chocolate,” explains Thompson, who took over the business in 2010 from its original owners Shaaron Pynn and Gail Sargent. Keeping abreast of the latest chocolate trends, the local company is now offering chocolate from coco beans grown in two countries close to the equator — Santo Domingo and Tanzanie. “It’s a very rich, high quality chocolate which takes on the flavours from the environment it was grown in,” she explains. The title is impressive, as just a handful of Canadian chocolate makers share the sweet honour. And Theobroma Fine Chocolates taste as good as they look. Handcrafting each mouthwatering truffle creation, the local chocolatier uses original recipes and the highest quality cocoa from Venezuela and Ecuador. “My premium chocolate is superior in taste because it’s based on point of origin,” explains Richards, who started the company four years ago. “Approximately 80 per cent of the world's chocolatiers and manufacturers are using commercial grade cocoa from the Ivory Coast. I only use cocoa from Central America and the Amazon Rain Forest where only premium chocolate originates. Our cocoa is chosen from within the top one per cent of the world's finest cocoa.” Heading into the holiday season, Richards will have plenty of delectable creations on offer. “I start really revving it up around October,” he explains.

im Paget likes to take risks in his art. He will spend months painting a perfect picture, carefully adding detail to trees, modifying colours to find the right tone, and placing each stroke with care. Then Paget will smear paint on top of the picture in round shapes and sweeping lines, capturing sunlight, gestures of shapes and images. In the end, fine detail peeks through the shapes for a painting that shows more the longer it is admired. “After I’ve done a certain amount of appraising the landscape, there’s a point where I decide to jump off from something rational into something more fundamental,” said Paget, talking about his paintings that feature this gesture drawing later. “It means sometimes obliterating what you’ve done, but I will take that risk.” Paget, 71, is a master painter, educated at Ontario College of Art (now OCAD-U) and from a long line of landscape painters. He has spent his career teaching art at college and university level, working as an artist in residence and exhibiting his work in Toronto area, Collingwood and The Blue Mountains. Paget’s most recent show, entitled Beauty in Simcoe County, was on display at L.E. Shore Memorial Library in Thornbury for the month of October. Studying under art masters such as Carl Schaefer, John Alfsen and Fred Hagen, Paget developed a preference for landscape and figure painting. “The figure was well-represented and welltaught,” said Paget. “I had teachers quite versed in the figure, and that brushed off.” He says the image of man and woman became of interest to him in a sense that he enjoyed searching for his own representation of the spirit of the human being. “It’s incumbent on you to find your own way to reflect the quality of man,” said Paget. Throughout his career he has strived to work on the development of technique, alongside the development of his own mind, turning to philosophy, poetry and theology to inspire his pieces. 56 | GoodLife Georgian Bay Winter 2014 ■
Finding light in life & landscapes By Erika Engel “All artists are trying to balance that equation,” he said. Often Paget will show this balance in a single painting with a detailed, realistic landscape painting overlayed with what he calls gesture drawing, which is quick, elaborate scribbling of shapes and contours. Sometimes the overlay is a figure, other times it is light patterns and shapes. “It’s become a human utterance,” said Paget. “It’s an imaginary overlay of powerful components. It’s another painting on a painting.” As a senior artist, Paget has seen many changes in the art world. He has seen the emergence of abstract expressionism and an art world growing to include more mediums, subjects and artists than ever. “There is so much out there that is wide-ranging and speculative,” said Paget. “For the average person, it is hard to make sense of it ... There’s something out there for everybody. If one was going to be positive, that includes art that is dissonant, difficult to listen to, look at and read ... some of it is abrasive.” But the art world, he said, reflects the world of those who admire the art. “People are concerned about our time, the people and future,” he said. “It can be dark, but for others, it’s exploratory.” Paget has his own collection of pieces he created during two years of research into World War II. In his decades as a painter, he has done his own exploring, but he has chosen the beauty around him as his subject matter. Living in Glen Huron helped him see the positive efforts of man. Spending months in a field, capturing each leaf and branch in a forest, and the wings of the birds above has inspired Paget. “The light at the end of a lifetime of speculation is worthwhile,” said Paget. “I know what is problematic and dark, but I do not dwell on it.” Paget has his own working studio in Collingwood, but currently does not have any pieces in public shows. My life has been filled with amazing experiences and I’ve had the chance to travel to some of the world’s most exotic and remote locations. Last year I had the once-in-a-lifetime opportunity to visit the Antarctic. It was a life changing experience. When the opportunity arose this spring to visit the Arctic, I just couldn’t turn it down. I had seen penguins, now it was time to see polar bears. Travel affords one the opportunity to experience different cultures and climates in a unique way that would not be possible otherwise. I have been travelling my entire life, but it has only been over the past 10 years that I have really begun to appreciate the art of capturing what I experience on film. One photograph can tell a story that would be impossible through any other medium. I could write an entire novel and still never elicit the emotional response that one photo can have. My family can attest to the fact that my camera has become not only one of my most prized possessions, but also my obsession. I am not obsessed with getting the ‘right’ picture, but instead cannot wait to capture as much as I can through one single image. The Arctic is truly a photographer’s paradise. With its unique, vast and often stark landscape, it takes a well-trained eye to truly appreciate and capture the beauty of ice. I wouldn’t call myself a master, but I was certainly going to give it a try! My Arctic adventure, much like my Antarctic one, presented a number of clothing challenges. Choosing the right clothing can be the difference between life and death in the Arctic. Thankfully I had the gear from Canada Goose and the tutelage of the company that made the whole trip possible, Adventure Canada. Having booked my Antarctic trip with Adventure Life and having had such a life-changing experience, who better to see the other pole with than the same company. With 95 per cent of its landmass covered by a blanket of ice up to 3-kilometres thick, Greenland is the largest island in the world. Habitable land is located on the east and west coastlines of this beautiful country. From Greenland, we boarded the Sea Adventurer and headed toward the Canadian territory of Nunavut. With a 118-passenger capacity, the Sea Adventurer is one of the only vessels in the world specifically constructed for expedition voyages to the far reaches of the Arctic. Her ice-strengthened hull permits her to glide easily and safely through ice-strewn waters that are not accessible to conventional cruise vessels. The Sea Adventurer has advanced communications and navigation equipment and newly installed state-of-the-art Sperry Gyrofin stabilizers. She is a handsome expedition vessel, done in the style of great ocean liners when ships were ships. With lots of varnished wood, brass, and wooden decks, the ship has new outside cabins, with lower beds and private facilities. Along with state-of-the-art Arctic expedition equipment, the Sea Adventurer is also made for comfort, boasting a bar, library/ card room, gymnasium and gift shop.
After a few days of travel, we arrived in the Canadian territory of Nunavut. Nunavut became Canada’s newest territory April 1999 and is located in the Eastern and Central Canadian Arctic. At approximately 200,000 hectares, Nunavut is the largest native land claim settlement in history. When most people think of the Arctic, they think of ice and wildlife. Visiting the villages was like stepping into a whole different world. Inuit culture in the Canadian Arctic has left little to no physical evidence; there are no pyramids, palaces
or temples, yet the culture has been around for four millennia. The greatest achievement of the northern people is that, for many generations, they survived Arctic winters and thrived in a country regarded by many as uninhabitable. The Northwest Territories and Nunavut cover an enormous area, nearly a third of Canada, yet the entire population would barely even fill a standard football field. Scattered across the coastal areas of the region are small Inuit Communities. Few have populations numbering more than 1,500, and, despite the introduction

of snowmobiles, satellite communication and video, they remain faithful to their traditional hunting culture. On each of my trips, I try to buy at least one thing from the local towns and people. This time I decided to buy a pair of handmade seal slippers and mittens. I had the unique opportunity to watch my slippers and mitts being made and was in awe at how careful the local people are to ensure that the entire seal is utilized. Leaving the village behind, we once again ventured into the icy wilderness. I started each day aboard the Sea Adventurer by waking up
every day at 3 a.m., in full sunlight, to have a cup of coffee with the first officer on the bridge. It is amazing the things you can see and the stories you can hear when the rest of the world is asleep. In addition to my early morning conversations, I also took full advantage of the ships lecture series. Never one to sit in a classroom, I was blown away by how much I appreciated and learned from the lectures available onboard. Lectures included everything from wildlife biology and drawing to photography and ornithology. Spending two weeks on board with some of the best photographers in the world is a truly humbling experience. I am always amazed at how much can be learnt from the people you are travelling with. For example, I met a fantastic professional wildlife photographer named Mike Beedell, who has a vast and intimate understanding of the landscape and how to photograph it. Also aboard was John Houston who lived in the Arctic as a child and is an award-winning writer, director and producer of Canadian and international documentary films. In addition to photographers, bird lovers also flock to the Arctic and for good reason. Visitors are often struck by the abundance of bird species found in this glacial environment. Although most spend their winters in the warmer southern climates, in the summer the vast ice landscape is home to more than 100, mostly migratory, bird species, including the peregrine falcon, ringed plover, snowy owl and the fulmar. Although I am not an avid birder myself, I can admit that there is something magical about the birds of the Arctic. As one can only imagine, my bucket list is quite

Presented by extensive. With that said, one of the experiences near the top of my list is to photograph a polar bear in its natural environment. Having grown up in Bermuda, the idea of such a large mammal living in such a frigid climate, and on a sea of ice nonetheless, has always been inconceivable. I couldn’t wait. I finally managed to fulfil my dream while out on the bridge with the first officer, early one morning. I had my binoculars focused and waiting. All of a sudden there he was; one of the most amazing mammals to walk the earth. What a fantastic surprise, and a wonderful opportunity to put my photographic skills to the test. Polar bears are the largest living land-based carnivore in the world. The largest males can weigh up to 800 kg and can reach 13.5 feet in length, about the same size as a compact car. They can be seen alone, but often form groups of two to 20 and sometimes herds of a few hundred are seen in areas where prey is aggregated. These magnificent animals are built for the cold. Their coarse outer fur is made of translucent hairs that allow ultraviolet radiation in. The fur also serves as a wet suit, trapping in heat when the bears swim and their small rounded ears minimize heat loss. What an incredible animal and an amazing experience! Throughout the voyage I couldn’t help but realize how lucky I am as a Canadian to live in such a vast and diverse country. Many people don’t ever get to experience all that this beautiful country has to offer. It is a destination that most people don’t even think about, but it’s right on our doorstep and is something that should be on everyone’s bucket list.
