And just like that…… Spring is finally here! These are the days we have longed for, during what turned out to be a long, cold, and uncertain winter. If you are like me, you’ve learned to appreciate the power of small changes to make everyday life more enjoyable. One change was updating my ensuite décor. A fresh coat of paint, some choice accessories, and my simple three piece suddenly feels like a completely renovated space. We spoke to designers throughout Simcoe County to get their take on what’s new, colour choices for every space, and pieces to invest in. If you are looking to enjoy an update, these experts are the best in the business to guide you along. If home renovation is on your mind, take inspiration from a fabulous mid-century modern bungalow in Barrie, where writer Dawn Ritchie interviews the homeowners, walking us through each room and the design choices to make this a real showstopper. Who hasn’t missed going to restaurants? The industry has faced tremendous challenges through ongoing closures and the uncertainty about the future. Our lovely food writer Katherine Elphick spoke to some the finest establishments in Barrie to highlight what’s new on the menu, house specialties, and signature drinks. You want to reserve a table today and support these fantastic local businesses. From grilling to baking, local farmers markets share recipes to enjoy the best of the season from rhubarb to asparagus. If you haven’t visited one of these family run businesses, this is the perfect time year to pick up what grows right here in Simcoe County. Another amazing way to shop local. For anyone seeking a change of scenery, we have the scoop from industry experts on luxury sea travel and help you determine if you are ready to set sail – and what you can expect. Water Wise

The Oya (or Olla) is an ancient irrigation technique that allows gardeners to efficiently get water directly to a plant’s roots. Made from terracotta, each pot is buried in the soil with the neck protruding, then filled with water. Moisture slowly seeps through the porous clay body and is accessed by thirsty roots instead of evaporating quickly in the hot sun. Better water conservation also means less frequent watering. Find them at: Growoya.ca

Japanese Craftmanship

Winner of four design awards, the Vermicular Musui-Kamado is the world’s first cast iron induction cooker. Inspired by traditional Japanese Kamado stoves, the design features three-dimensional heating, a floating, self-basting lid and a precision seal machined to 0.01 mm. of accuracy to lock in flavours. Debuting in 2019 in the U.S., the long-awaited Canadian launch has finally arrived at only two locations nationwide. Available in Ontario at: Williams-Sonoma in Yorkdale.

here is a quote from Oprah,” says Priscilla Nykoliation, “That your house should rise up to meet you every time you walk through the door. This house does that for us.”

EXQUISITE EYE LINES by Dawn Ritchie

The mid-century modern bungalow she refers to, lies a mere block from Kempenfelt Bay and the Brentwood Marina in the sought-after community of Tollendal. Boasting over 5800 square feet of living space on a half-acre pie-shaped lot, the home commands four bedrooms, four bathrooms, three fireplaces, a fresh, tailored bearing and spacious rooms bathed in sunlight. “All of our guests have the same reaction,” says Priscilla. “Everyone who walks in the door says, oh wow. People don’t expect the high ceilings, the greenery and the light.” But the residence wasn’t always filled with that wow factor. While the home had “beautiful bones,” as husband Bryan verifies, when the couple took possession 13 years ago the interior was “extremely dated.” “It was stuck in the 80s,” Priscilla says. “Hot pinks or navy blues with wallpaper everywhere, wall to wall and shag carpeting. But the house spoke to us and honestly, my husband and I can see beyond that.” Bryan, who is the president of a real estate development company, instantly recognized the quality of the original construction. The property was a custom-build of a preeminent Barrie developer, the late Bob Tuck, who had made it his home. “Because it was his principal residence it had upgrades made back in the eighties that homes built back then wouldn’t have had,” Bryan says. The couple bought the property, furnished a single room and moved in. They lived that way for six months while they mulled over their renovation. “We did it intentionally,” says Bryan. “It was fun. It’s like we were camping out. You could throw a football the length of the house, end to end. We didn’t have a family yet. It was just the two of us and we wanted to feel the personality of the home first instead of imposing a design on it. We found things changed over time. In fact, our plans were changing almost daily.” Once their vision fully unfolded, they set to work, stripping the house of casings and roman pillars, demolishing walls to the studs. Their objective was to minimize anything that interrupted flow while capitalizing on the valuable existing GoodLife | Barrie Spring/Summer 2020 n 11

features, like the home’s four skylights. “Everything was methodical,” Priscilla says. Solid wood doors replaced hollow interior doors. High quality European lever handles (Colombo hardware) were a stylish complement that also would allow for aging in place. Partial division walls were erected wherever appropriate always keeping the goal of a clean, airy countenance in mind. “It’s open concept but the rooms still have their own delineation,” Bryan explains. Ascend the front walkway of the residence and floating heated pavers rise before you, welcoming you in. The grounds have been professionally landscaped with in ground lighting and an irrigation system. Enter the four-foot wide Spanish cedar bespoke front door, (made by Bauhaus Doors on Avenue Road in Toronto) and you find yourself in the tiled foyer. On your left, a white floating bench, embedded directly in the wall, is the place to kick off your shoes. “I told my husband we needed a bench at the door,” says Priscilla. “So, Bryan did this. He’s creative like that.” On your right, glass doors were hung at the entry to the paneled office to allow light to flow in. Straight ahead, a cherry-colored section of wall partially separates the foyer from the great room. It matches both the front door and the bookcase on your right, which also contains a pass-through to the kitchen, permitting your view to extend unimpeded all the way to the other side 12

Exotic IPE Brazilian walnut flooring stretches across the great room, extending right out onto the 800-square foot deck and privacy wall. “The house flows right out to the outside,” Bryan says. “When you walk in, it doesn’t feel schizophrenic. There’s consistency in the flooring. We really built on what the house had, its foundation, and then added the warm tones.” Bryan further explains that IPE is a higher end hardwood that is three times harder than maple with a 100% fire burn rating of 40 minutes. “It’s hard to burn,” he says. “And with a dog and three kids it wears well.” Since the home was going to be their permanent residence for the long term, Bryan insisted on using top quality materials for everything, from the iconic light fixtures found throughout to the marble fireplaces and tiling. “Nothing has been skimped on,” he says. “There are no knockoffs. Everything is an original. These were deliberate spends.” Hanging above the great room’s wood burning fireplace, an original LZF Link Suspension Light, makes a strong style statement with its crisp flowing ribbon of wood veneer. Below it, black original Barcelona chairs are reminders that this is a couple who appreciates the finer things. Turn and your gaze will purposefully slip by the pass-through in that shelving unit all the way to the breakfast room 14

at the far end of the kitchen where you encounter the LeKlint 172 light pendant. Designed by Poul Christiansen in 1971, it’s a stylistic callback to the LZF pendant in the great room. Streamlined cabinetry and wall-mounted vanities also deliver a buoyancy throughout the residence leaving floors unblemished. Neither is this a home scarred by the blight of dangling plugs or cables. Everything is neat, fresh and visually relaxing. A Lutron lighting system controls everything and a whole house Sonos audio system creates the soundtrack. The kitchen is pristine with extensive grey cabinetry designed by Muti, a leading kitchen and bath designer and manufacturer in Toronto. “We entertain a lot,” says Bryan. “With a big family of five, we love to cook.” The kitchen layout is a vision of efficiency with endless storage and counter space, a Jenn Aire induction cooktop and convection oven, Liebherr integrated refrigerator/freezer and a microwave/oven combo get the job done. industrial Dutch designer, Bertjan Pot, dangles above it, finding a stylistic call back right below in round décor balls set in a grey tray on the harvest table. Grey and white is the predominant colour theme for this home with real wood finishes that help to ground the energy. Bold abstract artwork brings that welcome punch of vitality to the otherwise subdued design, (custom art created by Priscilla’s own artist mother). The principal bedroom lies on the north side of the home, with a marble-ensconced fireplace to warm the cool nights. The spa ensuite features his and hers separate sinks, a stand-alone soaker tub and impressive frameless Starphire glass walk-in shower bedecked with two solid slabs of marble,

nine feet tall by four feet wide. A linear sloped drain also holds a marble insert to cloak the drain in the floor. Two very tidy children’s bedrooms are located nearby and share an additional full bathroom. The lower recreation level enjoys a walkout to the custom pool outside, which was designed explicitly to take advantage of every inch of their pie shaped yard. On the lower level, you’ll also find another luxurious bedroom, full bath, office nook and plenty of space for lounging, rough housing, video games, fitness, and snooker tournaments. Extensive storage continues here too, including, surprisingly, sleek built in filing cabinets for the office nook. Ever conscious of visual impact, Priscilla also had the idea to add another fireplace wrapped in marble for this level. “Your eye needs to go somewhere when you come down the stairs,” she says. “And I didn’t want it going to a pool table or a couch in the distance.” A ribbon ethanol bio-fuel fireplace, which doesn’t require venting, was the solution. “We had a vision that we executed and the end result was beyond our expectation,” says Bryan. “The attention to detail, the luxury and quality have really transformed this home into something we are proud of. We hate to let it go.” While the family’s plans were always to make this their permanent residence for the long term, a business promotion has now called them to the city. 1 Forestwood Lane in Barrie is now on the market, represented by Sotheby’s International Realty Canada.

HOME DESIGN

By Dawn Ritchie

What’s on the bubble for home design and décor? Six of our favourite designers weigh in

Spring has sprung and it’s that time again when spring cleaning ignites the desire for a home refresh. Eager to tackle those pesky house issues that arose during the lockdowns? We asked six of the top local designers which trends they saw coming for the new year. Here’s what they said to look for. Warmer Paint Tones “We are seeing a dramatic shift from the greys to a much warmer palette. People want comfort and warmth in their homes. The cooler grey palettes ran their course for the past ten years. Now we are headed into warmer territory with some hits of colour. Green is back and is super-hot right now. Benjamin Moore’s Grey Gardens has a bouncier look.” ~ Pamela Lynn, Certified colour expert and principal designer for Pamela Lynn Interiors. Curvy Furnishings “Look for architecturally shaped seating with rich textures, boucles mixed with velvet and leather. This will include mixing finishes. Fabric for upholstery must-have? Crypton. Don’t be afraid to go with white seating.” ~ Catherine Staples, designer

Curated Spaces “We are seeing a lot of diversity in trending aesthetics right now. Two major trends we are being asked for are: Japandi, which is essentially a combination of Scandinavian functionality and Japanese rustic minimalism that creates a simple curated space with lots of natural elements. The other is Grand Millennial, which is basically an updated take on traditional style that includes old-school design trends (skirted tables, patterned upholstery, floral wallpaper, and richly stained wood furniture) with some cool, trendy modern elements mixed in to make it nostalgic and comfortable without looking kitschy.” ~ Farrow Arcaro Design Wallcoverings and Murals “Wallpaper and Murals. They are low cost and deliver high impact.” ~ ADM Design Casual Elegance “We are generally being asked for more laidback designs as clients are now looking to make their homes comfortable and inviting rather than impressive.” ~ Farrow Arcaro Design Natural Textiles “Sustainable textiles are increasingly in demand and textile companies are really ramping up creating collections with the planet & people in mind. Boucle and mohair are very trendy right now in the furniture industry. We incorporate these trendy textiles with other classic and timeless textiles such as leather, tweed, linen and velvet.” ~ Interior Team at Madison Taylor Design Porcelain Walls “Porcelain wall treatments and counters. Hexagon or geometric tile is still really popular.” ~ Trish Matthews

Automated Shades “Window coverings are becoming less and less important. Homeowners are spending so much money on windows they are design features. Motorized blinds come down for privacy.” ~ Trish Matthews A Mix of Elegance and Simplicity “For styling built-ins, sofa tables, console tables, coffee tables etc., we like to use a mix of vases that come in different heights, have texture or have a unique shape to them. Large round moss bowls are also a trendy favorite for styling coffee tables. Stacking multiple books in piles with large wooden chain links while incorporating decorative objects, are always good and easy to do for styling built-ins, or console tables. We

Metal art and art groupings.” ~ ADM Design BATHROOMS: Touchless Faucets and Washlets “For sinks and faucets, it’s all motion faucets. Covid—don’t touch the faucet. Shower columns are also huge. Either the vintage look with exposed plumbing or modern plumbing of stainless or chrome. Washlet toilets are big. Renos are now incorporating hydro beside the toilet. Washlets wash you and give you a light show. And curbless showers. People don’t even want doors on their showers anymore.” ~ Trish Matthews Design KITCHENS: Colourful Cabinetry “We’re seeing a lot more colour in kitchens. People are much more daring with their cabinetry, straying away from the standard white kitchen. We are also designing a lot of kitchens with a more modern slim shaker cabinetry door profile.” ~ Farrow Arcaro Design Concealed Kitchens and Seamless Backsplashes “We have a lot of clients requesting concealed kitchens that can be hidden behind large cabinet doors so that they don’t have to see the mess while they eat/entertain.” Also, “slab/seamless backsplashes and countertops.” ~ Interior Team at Madison Taylor Design Layered Lighting “Good lighting and lots of it. Pot lights, island lights, under cabinet light, etc. Think about the many ways you use your kitchen and the different lighting needed for each function. Most kitchens we design have at least two sinks – one large main sink and one prep sink. We also often add a coffee station sink depending on the space. Lastly, drawers! They are so much more functional than cabinets.” ~ Farrow Arcaro Design

Scarlet Oak Landscape Management - Your One-Stop-Shop for Landscape Design, Construction and Yard Maintenance A little friendly ‘best lawn’ competition is a good thing, according to Brandon Goddard, Owner of Scarlet Oak Landscape Management Inc.The company, founded 10 years ago, has become a ‘one-stop-shop’ offering full-service landscape design/build services along with lawn and garden maintenance services. Says Brandon:“Competing with neighbours over who has the nicest lawn, or the best backyard is something we’ve seen happening during the Covid-19 pandemic when more people are taking staycations. You can be the envy of all your neighbours, friends and family this year with a professionally designed and maintained lawn and garden. Most often when we’ve built a deck or gazebo or have done a makeover on someone’s yard, that’s when the neighbours call us!” Like a good teacher, Brandon says he likes to educate clients to look at the whole picture when it comes to achieving their ideal lawn or dream backyard. “If we build a new patio or walkway for a client but their lawn looks spotty or their gardens are overgrown, or they don’t add lighting to the patio or garden space, they are not going to enjoy their backyard to it’s full potential,” says Brandon.“Curb appeal is a big deal for homeowners and often people don’t understand the cost of things. It’s important to be honest with clients and to educate them as to why something costs this much and that spending the money will expand value and pleasure for years to come. For me, it’s not about selling products or services, it’s about building long term relationships. I have done so many designs over the years and know what clients want. If however they have an idea of what their dream backyard looks like but it costs $30,000 and their budget is $10,000, then I would suggest doing the project in stages.”

need to have your property be the envy of the neighborhood.“The first thing I would do is assess what the client’s lawn looks like to determine if it is worth saving or if we should start fresh with new sod for an almost instant new lawn. It’s important to know that if we work with an existing lawn, it may take a few years to have it looking like a golf course without breaking the bank. We offer lawn maintenance but if clients don’t have the budget, we can show them how to do the maintenance.” The aspect of the job Brandon enjoys most is designing and building patios and backyard oasis. “When we design and build backyard features, we know that the client is going to really love and appreciate the space for many years to come,” he says.“The best part of my job is hearing the great feedback from customers, and it gives me the motivation to keep doing what I am doing— making customers happy!”

Medical Aesthetics & Adjunctive Medicine Revive MD Dr. Marina Beshay

Dr. Beshay is Leading the Field of Medical Aesthetics with Specialized Skin and Wellness Treatments at Revive MD Spa The before and after pictures of clients tell the story behind the success of Dr. Marina Beshay and her revolutionary Aesthetic and Medical injections, and treatments offered at Revive MD Spa within the TrueMedica Clinic in Barrie. Dr. Beshay treats conditions and issues such as active and cystic acne, acne scars, Rosacea, sagging jowls, brown spots, aging skin, lost cheeks volume, hair loss and thinning, wrinkles in the face, neck, decollete area, hands and much more, as well as a complete sexual wellness clinic for both male and female. This will help with low sex drive; improve sexual performance in men, vaginal dryness; urinary incontinence and low orgasm in women. Revive MD Spa is no ordinary spa. Boasting a bevy of the latest state-of-the-art machines, they are at the forefront in the field of Aesthetic and Medical treatments with groundbreaking non-surgical and same-day Medical Aesthetic services. “We offer unique and specialized services performed by professionals, using the latest machines (the most advanced in the market), the best brand name medicalgrade products, the best services, at the best price,” says Dr. Beshay. “We want you to look better and feel

better—it’s an overall package. The services we provide are Aesthetic as well as Medical. We offer treatment for conditions and concerns such as acne scars, brown spots, active and cystic acne, Rosacea, sun damage, hair loss and hair thinning, chronic fatigue, loss of volume in the face, and more. On the Medical side, we specialize in Bio-identical hormone replacement, vaginal rejuvenation, Urinary Incontinence, Erectile Dysfunction in men, treatment of chronic migraines using Botox injection, PRP joints injections for arthritis pain. We are seeing amazing results! The reason I specialized in this field is that I saw so many challenging cases that I was not able to reach the desired outcome with traditional medicine.” The loss of volume or thinning of the skin and changes in the skin texture are a few of the concerns of aging, according to Dr. Beshay. “Even the bone structure can change in the face causing the appearance of sagging jowls. We are the only clinic in Barrie that has the InMode Morpheus 8 machines. Morpheus 8 provides micro needling radio frequency with microfine needles that go into the skin to deliver energy to stimulate new collagen production to remodel the face and any part of the body. This helps with stretch marks, acne and acne scars, and even helps with body fat. We also have a Radio-Frequency machine which stimulates collagen in the vaginal area that helps with vaginal dryness and

urinary incontinence and symptoms ladies have in this area.” Micro needling is like a magic wand when it comes to skin repair. “We have a new, unique machine by DermaRoller from Germany who discovered the micro-needling technique in the whole world. We use micro-needling to create micro-injuries to the face using very tiny needles that cause the body to reshape and heal itself which stimulates new collagen production and can break down scar tissue and break down fibrous tissue to stimulate the body’s natural healing process. This helps to treat scars and stretch marks, used in conjunction with the appropriate products. Using the right skin care products containing active medical ingredients is particularly important. Even if you purchase expensive drug store products, they may not have the same ingredients as medical-grade skincare products. Our Medical Aesthetician and Skin Care Consultant will find the right products for your needs.” Dr. Beshay uses injectables such as Botox for both Aesthetic and Medical purposes. “Botox injections can help reduce fine lines and wrinkles around the eyes, the forehead, around the lips, and lines on the chin and neck. We also use Botox for Medical reasons including the treatment of excessive sweating and chronic migraines. I have treated several clients with Botox for chronic migraines and I am receiving great feedback

from all of them. One client told me that at the beginning of every winter her migraines always get very bad, but this winter was the first time in years that she never had migraines at all. It doesn’t take them away completely, but the injections really help reduce the severity and frequency of the migraine.” Skin Boosters are also injectables - most often used to hydrate and rejuvenate the face and neck to help reduce wrinkles and sagging skin. “Skin Boosters also improve the overall texture of the skin and are particularly beneficial to rejuvenating thinning skin on the back of the hand. Radiesse injectables have a calcium component so we use that to create the jawline as well as cheeks and for overall correction for younger, more vibrant looking skin. In the case of smoker’s lines around the lips, often a combination of treatments is recommended such as the use of Botox, Skin Boosters and microneedling to help reduce the lines.” With spring just around the corner, Dr. Beshay mentions that the clinic has a body contouring machine that can help reduce cellulite. “It’s a non-surgical procedure that breaks down the fat in unwanted areas and removes it from the body through waste,” she explains. “We also offer laser hair removal. For those wanting instant results over a weekend, the Forma machine uses radio frequency to treat fine lines on the face and neck giving clients a lifted look and a glowing appearance in a remarkably short period of time. If you are looking for a relaxing day, come for your Facial treatment, you deserve it. Our OxyGeneo machine is rated as Canada’s #1 Facial.” To illustrate how unique Revive MD Spa is, Dr. Beshay is one of only four doctors in Ontario who are certified to offer Bio-Identical Hormone Replacement Therapy (HRT) Pellets. She travelled to the U.S. and trained with Dr. Charles Runels and Other experts who specialize in Functional and Integrative Medicine, PlateletRich-Plasma (PRP) Therapy and Bio Identical Hormonal Therapy. Dr. Runels is the inventor of the medical procedures The O-Shot ® (Orgasm Shot®), the P-Shot® (the Priapus Shot®) and the “Vampire” shots including the Vampire Facial®, Vampire Facelift®, Vampire Breast Lift® and Vampire Regrowth®. “PRP involves taking a blood sample which is spun in a machine to remove the red blood cells and what is left is a rich plasma that’s golden yellow and full of elastin, collagen and a multitude of growth factors which can be injected back into your body,” says Dr. Beshay. “PRP has been shown to help with tissue rejuvenation, new tissue growth and new volume in certain areas of the body. It’s like your body treating itself to heal. The P-Shot is for sexual performance enhancing and improvement in men and helps with the size, girth and can help clients regain or improve their sexual wellness and overall satisfaction. The O-shot plays a fundamental role in vaginal dryness and urinary incontinence problem that many ladies have even at a younger age.” By analyzing the patient’s hormone levels in the blood, Dr. Beshay can treat medical conditions like generalized fatigue, as well as provide preventative medicine. “With HRT, patients receive prevention against prostate cancer in males, breast cancer in females, osteoporosis, cardiovascular disease and believe it or not, this can help protect against memory loss and dementia. Studies are available to show how natural hormones can help not only to treat the symptoms after they start, but also to prevent the problem from happening. My goal is to treat the root cause and not just put a Band-Aid on the problem. When I got into Aesthetic medicine like Botox and filler injections, I looked at the bigger picture - how to make my patients feel good on the inside and look their best on the outside.”

While it’s not important to remember the names of the machines or the names of the procedures, what is important to know is that Dr. Beshay offers her clients highly specialized, advanced treatments using the latest technology, backed by years of experience and a money-back guarantee on most procedures. It’s worth the drive to Barrie! Clients come from across Ontario to seek treatment with Dr. Beshay. “Once patients find us and see all of the truly unique and specialized services we provide, they are happy to make the drive from Ottawa, downtown Toronto, Vaughan, and Richmond Hill; especially when they see the amazing results achieved,” says Dr. Beshay, with pride. “If you are not completely satisfied with your procedure, you can come back for a second treatment, or we’ll give you your money back on most procedures.” Revive MD Medical Aesthetics & Adjunctive Medicine is located within Dr. Marina’s TrueMedica Medical Clinic 411 Bayfield Street, Barrie, 705-712-3737, www.ReviveMedSpa.ca

BARRIE HILL FARMS 2935 BARRIE HILL ROAD, SPRINGWATER (705)728-0571/barriehillfarms.com Best known for its farm fresh asparagus, Morris Gervais of Barrie Hill Farms was happy to share this tip for enjoying the local crop. “Barbecuing is my favourite way to enjoy asparagus during the busy harvest season. It’s quick, easy and delicious,” said the local farmer whose family has been operating the farm for over 50 years. Along with pick-your-own and ready picked asparagus, Barrie Hill Farms has seasonal picking fields loaded with strawberries, raspberries, blueberries, asparagus, apples, pumpkins and more. A fully stocked farm market and bakery is also on-site. Here are some delicious ways to enjoy grilled asparagus courtesy of Barrie Hill Farms and the Ontario Asparagus Growers’ Association. For more tempting recipes visit barriehillfarms. com or asparagus.on.ca.

Simple Sauces to Dress Up Ontario Asparagus Ontario Asparagus is the first field crop of the season, signalling that winter is over and spring is here! Thankfully, this versatile vegetable is fast and easy to prepare. Try it grilled this year, either on its own or topped with a tasty dressing. To Grill: Preheat grill to medium heat. Trim 1 pound (454 grams) of Ontario asparagus and toss in a large bowl with 1 Tbsp olive oil, 1 clove of fresh minced garlic and season with salt and pepper. Carefully place asparagus spears on hot grill. Frequently rotate asparagus until tender. Depending on the thickness, barbeque for approximately 10 minutes. Then, add some pizzazz with one of these homemade dressings! Fresh Green Herb Dressing Mix 1/2 cup salad oil, 4 Tbsp white wine vinegar, 1/4 tsp salt, dash cayenne, 1/8 tsp pepper, 1 Tbsp each of the following fresh minced herbs: parsley, basil, chervil and oregano. Lemon Butter Sauce Combine 4 Tbsp melted butter, 2 Tbsp lemon juice, and 6 Tbsp liquid from cooked asparagus altogether and serve over hot cooked asparagus. Sour Cream Sauce Combine 1 cup sour cream, 1 tsp prepared mustard, 2 tsp lemon juice, and 1/4 tsp salt. Heat over very low heat, stirring occasionally until warm. For variation, 1 cup mayonnaise may be added, if

desired. Serve over hot cooked asparagus. Hollandaise Sauce In blender jar, combine 2 egg yolks and 3 tsp lemon juice and whirl at high speed until blended. Continue to blend, remove cover, and slowly add 1/2 cup melted butter and a dash of salt. Pour into serving dish and serve lukewarm. If made ahead, place dish in warm, not hot, water and stir occasionally to warm. Makes about 3/4 cup sauce. Dill Yogurt Sauce Mix ½ cup plain Greek yogurt with ¼ cup finely chopped fresh dill and a squeeze of fresh lemon. Garlic Sauce (Toum) Pulse peeled cloves from 2 bulbs garlic (raw or roasted) and 1 tsp salt in a food processor, occasionally scraping down sides of bowl, until it forms a paste. With motor running, very slowly drizzle in ½ cup oil, then ½ teaspoon lemon juice so mixture thickens and turns white and creamy. Repeat 3 times with additional amounts of the oil and lemon juice until well incorporated, 5 to 8 min. Add 2 Tbsp of ice water and blend until smooth.

Maple Glazed Salmon with Asparagus (or fiddleheads) “Spring always has us excited about new crop maple syrup and asparagus,” said Lynda Van Casteren of Nicholyn Farms. And this recipe makes great use of these tasty ingredients. You can also use fiddleheads (in place of asparagus). Maple Glaze: 1/4 cup soy sauce 2 Tbsp maple syrup 2 Tbsp fresh cilantro, chopped 2 Tbsp sweet chili sauce Salmon: 2-6 oz salmon portions 1/4 cup maple glaze 1/2 cup asparagus tips (or fiddleheads), rinsed well 1 tomato, diced with seeds and pulp removed 1 shallot, finely chopped 1 clove garlic, finely chopped 2 Tbsp olive oil 2 Tbsp parsley, chopped

PREPARATION: Maple Glaze: In small bowl, mix all ingredients together. Salmon: Preheat oven to 400F (190C). Marinate salmon in glaze for 10 minutes. Remove salmon from marinade and place on a baking sheet lined with parchment paper. Bake at 400F for 10 to 12 minutes. While salmon is cooking, blanch asparagus (or fiddleheads) in salted boiling water for 30 seconds. Remove, drain excess water, and place them in a warm sauté pan. Lightly sauté the fiddleheads with all the remaining ingredients for 2 minutes, or until heated through. Remove salmon from the oven and allow to rest for 3 to 4 minutes. To serve, arrange the sautéed vegetables onto two plates and place the salmon on top. Serves 2.

LEARNING TO

SCUBA DIVE WITH YOUR KIDS When Tammy Noxell’s son Colby Coles was 14, he mentioned that he’d like to learn how to scuba dive, Tammy tucked the idea away and, the following Christmas, surprised him with scuba lessons at a local dive centre in Burlington. “I think Colby had seen a show on scuba diving on YouTube and that got him interested,” says Tammy. “You should have seen the look on his face when he opened the course book and saw our payment registration for scuba diving lessons. His reaction was priceless! At first, I

was just going to book lessons for Colby, but then I thought it would be a wonderful thing for us to do together. I am a single mom, and this would be a way to spend more time with him.” Though, she admits being somewhat nervous at first. “I was a little overwhelmed by the thought of breathing underwater, but I pushed past it,” admits Tammy. “The instructors were right there with me, encouraging me that I could do this. Colby was also amazing, he would say ‘you can

MAKE IT FUN AND SAFE

Robert Shannon, owner of Oakville Divers, offers tips for a safe and enjoyable diving vacation. Wear a wetsuit. Even though the water temperatures are warm, if you’re diving twice per day every day of your stay, you can feel cold even in Caribbean. Wear a dive computer that you can rent or purchase. It calculates how much dive time you safely have remaining which can prevent decompression sickness, also referred to as “the bends”. Buy a high quality mask and snorkel if you plan to dive regularly, rather than rent. This is a more sanitary option and it ensures you have properly fitting and functioning equipment.

diving excursion To help you plan for your next scuba diving expedition, we talked to diving expert and owner of Oakville Divers, Robert Shannon. Raised by parents who had a dive shop in Mississauga (which his brother subsequently took over), he has been diving since he was six years old. Since 1988, Shannon has been providing scuba diving instruction in Oakville, as well as top quality dive gear. LOCAL DIVING Contrary to what many people may think, there are plenty of scuba diving hot spots here in Ontario, according to Shannon. In fact, he has a boat in the Oakville harbour that he uses to take his students for dives at a nearby shipwreck in Lake Ontario. With proper gear, such dives are possible every season of the year, including the winter. “People are actively diving all year long here,” says Shannon. “If you’re nice and warm, you’ll do more diving. Buying a dry suit keeps you warmer. It uses air as an insulator, and you can get lock on dry gloves for extra warmth.” Most of the major dive sites are three to four hours drive from the GTA, according to Shannon, including Brockville and Kingston. Fine gold and especially fine silver is selling for waaaaay over the actual precious metal value. Canadian 99.99% pure 1-ounce maple leaf coins are currently seeing premiums of around 25-30% above the actual silver value.

But what about non-pure silver coins like these? Most Canadian circulation silver coins from the mid 20th century are composed of 80% and 20% copper. Because most coins like this are quite common, they are not numismatically Bill Le Boeuf Jewellers important to collectors; and because they are 52 Dunlop St. W., subject to sales tax they can be more difficult to Barrie On sell as investments for non-collectors. It is also 705-728-3343 BillLeBoeufJewellers.com illegal for anyone to melt and recycle the silver from Canadian coins. So we need to be a little more creative when it comes to finding homes for our non-bullion silver Canadian coins. Scenic eclipse in Jeddah, Saudi Arabia

TO CRUISE OR NOT TO CRUISE What you need to know today

by Barbara Ramsay-Orr I am a big fan of cruising. Over the years I have written about my experiences on every kind of ship, from two-cabin barges that ply the canals of France, to river boats, to yachts - and right on up to the mega cruise ships. Though I have my personal favourite kind of voyage, I can honestly say that every cruise has had its pleasures, some addictively so. My last cruise was in December 2019, shortly before the pandemic ramped up and my next will be, hopefully, late August of this year. Today the decision to cruise has taken on new layers of difficulty. It’s paramount to be aware of the 48

48

n

pros and cons of sailing in these constantly changing times, and the implications of our decisions, both morally and practically. Here’s the latest information from industry experts and frequent cruisers to help you decide if, or when, you will book a cruise.

Safety Concerns on a cruise Cruising has taken a bruising during the pandemic, perhaps receiving more damage than any other segment of the travel industry. Some would argue unjustly so. Cruise ships are required by the CDC (US Centre for Disease Control) to report all incidents of Covid, while hotels and attractions are not, so it is understandable that it seems that outbreaks happen more on ships than elsewhere. But recovery is happening. Cruise Lines International Association (CLIA) reports that “ocean-going cruise lines have welcomed more than six million guests onboard since resuming operations in July 2020.” One of the reasons that cruisers are getting back on ships is the enhanced Covid protocols that have been instituted by many of the cruise lines. Most ships require all passengers and crew to be vaccinated. I personally would not sail on a ship that did not require proof of vaccination and not all of them have instituted that requirement. That’s something that should be verified before you book. Erik Elvejord, director of public relations for Holland America Line, sees cruising as the safe choice for these times. “Cruise ships offer a highly controlled environment with science-backed measures, known testing and vaccination levels far above other venues or modes of transportation and

travel, and significantly lower incidence rates than land. We know our protocols are working to protect our guests, our crew, and the communities we serve. For us, it means preparing to have our entire fleet return to service by June 2022.” This includes ships in Alaska, Europe and Canada/New England that offers guests options to cancel and rebook at a later date if they are more comfortable with this option. David Swanson, an award-winning travel and cruise writer, has been on five cruises since July 2021 and, on most of the cruises, felt safer than he did in his hometown of San Diego. “Everyone on board had been vaccinated, the ships sailed at about 60 per cent capacity and there was the option of outdoor dining.” There were ports on one of his Caribbean cruises where the passengers were limited to ship-organized excursions, with no interaction with the population. “But we did visit lovely places in our ‘bubble’” he explains. “If you are willing to go along with the protocols, a cruise can be a safer option than independent travel. There is a sense of security when you put travel arrangements in the hands of someone you trust.” A cruise can make moving from one country to the next less fraught, as Swanson discovered. “For those who wish to visit multiple countries while Covid still lurks, protocols for transiting from one country to another are still evolving and may involve looking for test sites and keeping track of changing protocols.” While traveling via Heathrow to Athens last summer, he was misinformed by airlines on what was required. Meanwhile, on a ship, Swanson advises, “The cruise line manages entry requirements and protocols which can make multi-country travel easier than independent travel right now.”

Beach BBQ, Chrishi Beach, Nevis

Do your Research Before any booking, know exactly how the cruise line will take care of its passengers should problems happen. While it is important to know the vaccination proof and testing of a cruise, it is equally important to research what the cruise line will do if you or other passengers test positive for Covid. Not all cruise lines are equal. SilverSeas, for example, chartered a jet to fly positive-testing passengers to the embarkation port and put them up in the Ritz Carlton. No one wants to be left in a port to stay in a youth hostel or worse, be left to make their own arrangements. Cruisers should also research cancellation poli-

“SMALLER MEANS THAT THE FEWER PASSENGERS ALLOWS FOR MORE CAREFUL CONTROL OF MASK WEARING, SOCIAL DISTANCING AND TESTING.“ number of future cruise credits out there, issued to those who had to cancel, with passengers will be eager to use them.

Moral and Ethical considerations

cies should they test positive after booking, but before embarking. Most cruise lines are offering credits for future cruises if Covid disrupts your plans. Fran Golden, a prodigious cruiser and award winning travel and cruise writer, reminds us that there is also a degree of personal responsibility. During a cruise to Antarctica with Abercrombie & Kent, she kept to her own personal ‘bubble’, even though most passengers were very good at social distancing. “I loved the cruise. They did so many things right. The mask requirements were rigidly enforced and we were updated every morning about port information and Covid status.” Some cruise passengers, who tested positive after they arrived at the port in South America, were even turned away while one passenger, who tested positive after leaving port, spent ten days quarantined in the cabin. Golden advises, “Do your homework before you book. Ask all the questions. What happens if you get sick? What is the vaccine/mask/social distancing policy? What are the rules at the destinations? Every cruise line has their Covid policies on their websites, so have a close look at them. You can also check your ship’s status on the CDC website.”

Be Flexible Both Swanson and Golden have one mutual piece of advice: “Don’t fall in love with your itinerary!” The Covid sands can shift in a second, and ports of call can change pretty quickly if there are cases on board or if the conditions in the port have worsened. Don’t book your cruise because it visits St. Barts, your dream destination. It may not happen. Golden completed only half of a circumnavigation of Iceland when the ship was forced to return 50

50

n

to Reykjavik because of anWesterdam outbreak. in “ItGlacier was still Baya remarkable and enjoyable cruise, but it was not the itinerary that we had expected.”

Choose to Cruise Small Smaller means that fewer passengers allows for more careful control of mask wearing, social distancing and testing procedures. On a Viking ship, Golden reports that they were tested daily. The large numbers of passengers on mass market ships means a lot more exposure. “The mega ships are often the choice for passengers who are looking forward to partying and dancing, but that party ship thing may be drastically curtailed now.” Smaller also means that the ships are more agile and have more choices of smaller ports that can be substitutes. Adrienne D’Annuncio, manager of the SeaDream Yacht Club, Charity & PR tells me that small yachts are a popular choice for hesitant cruisers. “SeaDream Yacht Club resumed sailing in late June 2021. We are currently successfully sailing both yachts in the Caribbean. Indeed, some guests have been hesitant to travel, and we have been flexible with changes & cancellations, while others are anxious to sail and just want to enjoy a holiday.” The small size of its twin yachts appeals to those who are uncomfortable with crowds.

Cruise Bargains Both Swanson and Golden think there are some good cruise prices if you book soon, but cruise analysts predict a price surge and increased demand in the second half of 2022. If Covid conditions continue to improve, those who love to cruise will be anxious to set sail again. Golden points out that there are also a huge

Pandemic worries aside, there are other issues to consider. The cruise industry has been criticized in recent years for its negative impact on the environment. The industry has, however, implemented changes, with more on the horizon, that minimize the environmental effects of cruise ships. Many ships have banned single use plastic, and most lines are investing in new technologies to reduce their footprint. Hurtigruten, the world’s largest expedition cruise operator, has invested heavily in green technology, and is considered the world’s greenest cruise company. Its next step involves powering its ships with liquefied biogas – a fossilfree, renewable gas produced from dead fish and other organic waste. Cruise lines are also paying attention to destination stewardship. Continued collaboration with local communities in the destinations that cruise ships visit remains a critical focus for the cruise industry.

Bottom Line If you decide to cruise, be cautious. Do your research. Read about other cruisers’ experiences (AllThingsCruise.com has passenger reviews and reports). Choose small ships, like the SeaDream yachts, Windstar’s small ships or Scenic’s new exploration yachts, over big ones. A river cruise is also a good option. Be prepared for last minute changes. You might also opt to stay closer to home - Viking is launching its Great Lakes Expeditions for Curious Explorers cruise in Spring of 2023. “If your heart is set on visiting a specific port or country, a cruise may not be the best option for this moment,” says Swanson. “But if you’re fully vaxxed and you can go with the flow when plans evolve, cruising seems like one of the safest, least stressful travel options available as we ease our way out of the pandemic.”
