“I

f I could transplant this chalet to our new property, I would,” says homeowner Valerie Baldwin, about the charming ski chalet on Highway 26 in The Blue Mountains, which she restored and renovated throughout the Covid-19 lockdown months. As avid skiers, the family had originally been looking for a rental property for the ski season but when rents skyrocketed from $18,000 to $25,000 a year as Covid struck, they decided it more prudent to purchase and invest. Long term occupancy was the original plan, so Baldwin spent gobs of money on the unseen infrastructure of the chalet. The existing concrete block foundation was repointed, leveled off and supported with an additional concrete wall to the tune of fifteen thousand. Electrical was upgraded to 200 AMP and a concrete pad laid for the hot tub. Yet another ten thousand. Next on her to do list was the very pricey five-foot deep concrete pad for a mudroom addition where she planned on housing a new laundry so she could convert the existing laundry room into a second two-piece bath. Then, a $2500 walkway slab, “So it would be walkable in the winter,” she says. And that’s all before she even tackled the interior. It was a challenging project, and not just due to the foundation restoration and difficulty getting supplies, but delays impacted virtually every con

struction and décor decision. The transformation dragged on for months as she constantly had to renegotiate incorrect appliance deliveries, snafus with permits, “nutty electrical that all needed to be redone” and an unscrupulous contractor who pocketed cash intended for other matters, but with the ski season canceled, Baldwin had that extra time on her hands and fearlessly forged ahead. Thankfully, engineer Enrique Rodriguez of Cubica Design came out, drew up plans and got all the proper permits. It’s a story told by many homeowners who were trying to renovate or redecorate during the life-altering pandemic. Exercising saintly levels of patience and lowering expectations was the only way to weather each storm. The stunning antler reproduction chandelier in the dining room that eventually arrived from the states, for instance, had the incorrect wiring and an electrician had to be brought in, again. The hot tub, which Baldwin had unearthed after a relentless hunt and was guaranteed to be in stock, didn’t arrive for another five months. “We missed the whole ski season and just got it installed,” she says. “We’ve only been in it one weekend.” Baldwin also discovered that the massive deck out back was rotting and hadn’t even been properly supported. “My dad and I took that one on,” she says, mentioning that it was one of the easier parts of the project because Home Hardware in Collingwood had free and immediate delivery. The new deck is now a sleek walk around with the hot tub embedded at floor level and shielded by a privacy screen. They even built matching planters. Around the corner, the BBQ and Muskoka chairs offer a second lounging area. But most frustrating was the fact that the fridge she had meticulously chosen was not the one delivered… twice. After the first was returned she discovered her original choice wasn’t even available anymore. In the end, she decided to just live with what she got. Counter depth was the choice. Full-sized was the compromise. Despite all the setbacks, Baldwin’s exacting standards and unremitting steadfastness managed to produce a bright, contemporary refuge that rivals any in the Georgian Triangle. Situated between the escarpment and the lake, a mere threeminute drive to Blue Mountain, five minutes to the Craigleith and Alpine Ski Resorts and ten minutes to Georgian Peaks, the location is prime. One of the best features of the property is the huge yard. With a 61 x 250 feet footprint, there is plenty of room for a fire pit, swing set, climbing

structure and zip line for the kids. The previous owner even had a chicken coop. The land is beautifully dotted with picturesque white birch, which Baldwin deliberately copied in the wallpaper for the guest room. Inside, the living room is an exercise in relaxation with a wood/white theme, comfortable sofa and cushy chairs draped in sheepskin to cuddle up in. The walkout to the deck and hot tub is accessed directly from here. An easy on/off gas fireplace delivers atmosphere with logs that are so realistic Baldwin thought they were actual wood. The ceiling beams are original but the cladding on the ceiling was yet another high-ticket item. 14

“It cost me a fortune,” Baldwin says. “It’s real reclaimed barn board, shipped from Quebec. GSH Barnwood. Canadian maple, kiln dried and all heat treated and stained. It won’t shrink or expand with changing interior or exterior temperatures.” The one thing she decided to keep was the woodgrained laminate flooring that would withstand the rigors of dirty boots and ski paraphernalia. But in the kitchen, Baldwin had her work cut out for her. She discovered that the previous owner had done much of the work himself and nothing was up to snuff. “They didn’t have any backsplash in the kitchen, and the walls weren’t proper,” she recalls. She tore out to the studs and

hung new drywall herself throughout the chalet. “Getting someone out during Covid was impossible,” she remarks. “Anyway, I love this stuff. It’s my thing. I frame and do drywall. It’s the mudding and the taping that really takes all the time.” She also hung proper cement board behind the sink and chose a grey hex from Olympia Tile for the backsplash. Thankfully the kitchen cabinet bases were sturdy so only the doors needed refacing. That was performed by One Plus Kitchens and Woodworking. But Baldwin made the kitchen even more functional by adding an island she picked up from Ikea, colour matching it to fit with the cabinets

Next to the kitchen, the dining room now has room enough to seat ten for dinner, and a narrow half-size sideboard was mounted on the wall to nicely maintain that wiggle room around the table. The bathroom was another disaster, Baldwin recalls. “It looked like someone had poured some sort of corrosive material down the toilet,” she says. She ripped out that fixture and redid all the baseboards, tile, and added subway tile for a backsplash from New Canadian Lumber in Toronto on Shaw. Moving onto the chalet’s three bedrooms, the attention to detail would parallel any in a city residence. The master is spacious enough with a tasteful light fixture and view out to the deck. The guest room is inviting with a grey upholstered headboard and the birch wallpaper. For the children, bunk beds with built in storage make weekends a fun time of togetherness. Draperies were another item that Baldwin did not skimp on. “I wanted proper linen drapes,” she says. Tonic Living in Toronto (the “Go-To for HGTV Stars and Industry Experts”) was her source. But while readying to tackle her mudroom/ laundry addition, suddenly a new opportunity presented itself. Land the family had long wanted became available, so they jumped on it. French Brasserie Opens in Kimberley

A few years ago, the culinary minds behind Toronto’s Union and Côte de Boeuf decided to breathe new life into a 19th-century farmhouse and tavern located in rural Kimberly, Ontario. While the pandemic slowed down the opening of Heart’s Tavern and Bar, which is best described as a French brasserie, the wait has been worth it. With a focus on local ingredients, seasonal influences and scratch cooking, diners can enjoy steak frites, charcuterie and bread, Paris-style sandwiches, oysters and more. The ever changing menu also showcases Southern European fare. Nestled on one and a half acres, the property also features an in-house bottle and butcher shop, a large garden (allowing for a farm to table experience) and a smokehouse used to cure its own fish, meat and more. The Pine A

compact space, with a playful and immersive tasting menu, the Pine is one of the most talked about finds for food obsessed locals. “We only have 10 seats, but we’re big on creating a memorable culinary experience,” explained Cassie Austin, age 35, who opened the downtown Collingwood restaurant in August 2020 with her husband, Jeremy, age 33, who is also the chef. Using local ingredients from Austin’s family farm (her parents own Roy’L Acres Farm) and nearby producers, the Pine serves up an eclectic menu inspired by the couple’s travel experiences and Jeremy’s employment in various global kitchens — from Italy to Hong Kong, China and more. “We enjoy telling stories that come from far away places translated by our local landscapes,” she explained. To discover why the Pine has made such a splash on the local dining scene, this Goodlife reporter recently caught up with the restaurateurs on a Saturday morning, while they were prepping for a busy evening. Over coffee (served in artistic Indonesian pottery), here’s how the conversation unfolded.

The Pine has created plenty of buzz. In fact, reservations for the 20 course dining experience are snapped up so quickly that most people have to book months in advance. Did you expect that kind of response when you first opened? Jeremy: It’s funny, because when we first told people about the concept, everyone thought we were crazy. Many tried to talk us out of it [laughed]. Cassie: Despite the skeptics, we knew it would work. We went with the philosophy of ‘if you build it, they will come.’ And so far, they have. Word of mouth has been huge for us. Despite its shoebox size (10 feet wide with a 10-seat chef’s counter), the Pine is known for serving up an epic culinary experience. Can you expand? Jeremy: When people first come in, they aren’t sure what to think because the space is so minimalist and small (picture a narrow sushi-like bar with subtle Asian-inspired decor). But after the first five dishes come out, they are like… wow, these [restaurateurs] actually know what they’re doing. The food, presentation and service all live up to the idea of a tasting menu and the price we’re asking. It’s pretty rewarding to see people go from initial hesitation to really diving in and enjoying the experience. Cassie: I always tell people to sit back, relax and to get ready because they are in for an adventure. Speaking of adventures, the Pine’s menu has been inspired by your extensive travel and work experiences throughout Asia and Italy. After completing your education at George Brown in Toronto (Jeremy studied culinary management and Cassie studied food and beverage management), let’s hear about your globetrotting journey. Jeremy: As part of my chef’s training, I did a post-graduate Italian cooking program in Alma, Italy. Working for a Michelin Star chef, I was exposed to an incredible farm-to-table experience. They raised their own livestock, made their own cheese and wine, cured their own meats, grew their own fruits and vegetables, and more. After that, we came back to Canada (Jeremy is from the 28

Thornbury-area, and Cassie’s family lives in Grey Highlands) and realized we had to see more of the world. Soon after, a friend who owns several restaurants in Asian offered me a job in China (first in Wuxi and then, Beijing). Cassie: Around this time (2014), we took a trip to Hong Kong and loved it! It was great because we could both work there. Then, we came home (2015-2017) and Jeremy became head chef at Sisi’s in Thornbury for a brief stint. After that, we headed back to Shanghai, as Jeremy got a job managing a number of restaurants in China. We really enjoyed the experience and travelled every chance we got. Whether we were in Vietnam, Korea, Japan, Bali, Indonesia, Hong Kong, China or Thailand — we had one goal, and that was to explore the local food scene. During these travels, I understand you’ve found inspiration for the restaurant that you’ve always dreamed of opening. Can you expand? Cassie: We were in Bali and came across this restaurant called Locavore, which is rated as one of the 50 best restaurants in Asia. It had a very cool atmosphere and this incredible 25-course farm-to-table tasting menu. We were like… this is it! This is the kind of dining experience we wanted to offer. Then you came home and started the Pine Dinner Series at your family farm (Roy’L Acres Farm) in Grey Highlands? Cassie: In the summer of 2019, we did the dinners as pop ups and they were incredibly successful. Later that year, we came across this space in downtown Collingwood, did some major renovations and eventually opened up in August 2020. The delay was due to the pandemic (we will get to those details later in the story). I should also mention that the ‘Pine’ name comes from all of the Pine trees that are grown on the family farm. What’s the best way to describe the Pine’s larger than life menu? Jeremy: The idea is to use food that we can grow or source locally, but to put an eclectic spin on it. So, the menu is local, diverse and full of flavours inspired by our travels, especially from Asia. It’s almost hard to define because it kind of takes on a life of its own.

Why do you keep the menu a secret until guests sit down for dinner? Cassie: We love that element of surprise. Even when people ask for the menu ahead of time, we never give in. We have a sample menu on our website, so people will have some idea, but it’s never the menu we’d be serving that night. Sounds like it’s not for fussy eaters, or those with special dietary requirements. Jeremy: The experience is definitely for the more adventurous eater, so if people are nervous about an unknown menu — they shouldn’t come. There are certain dietary and allergy restrictions that we can’t accommodate, and we don’t offer vegan or vegetarian substitutions. We do, however, offer pescatarian substitutions (meat for fish, or vice versa). Let’s hear more about the connection to the family farm (which is owned and operated by Cassie’s parents, Roy and Ginny Love). Cassie: Other than proteins, and a few fruits, everything that we serve is grown at the farm, subject to the harvesting season. Along with edible flowers, various vegetables, micro greens, and more, we grow a lot of specialized ingredients, that are very difficult to source. A few examples would include: Chinese chives, okra, society garlic, and celtuse (also known as asparagus lettuce), to name a few. COVID hit when you were elbows deep into renovating this building. Between pandemic constructions delays and lockdowns, did you ever think about throwing in the Pine towel? Jeremy: To be honest, several times. There were so many unknowns, and it was a very scary time to open a restaurant. We kept saying to each other, ‘we have to get out of this’, but we really didn’t know how to stop. Cassie: Then we realized that the best way out of it — was just to get through it. Deep down, we knew that people were going to appreciate what we would be offering. And in the end, we are really glad we stuck with it. We’ve touched on the interior, but I love the feel of this minimalistic narrow space with its pine floors and counters and painted white walls (one of which is brick). Cassie: Because the presentation of the plates are so artistic, we felt the space needed to be very simple with clean lines. It has subtle Asian influences (both Japanese and Korean), but there is also a Scandinavian feel to it. 30

What’s the cost of a 20 course tasting menu? Cassie: Depending upon the time of year, tasting menus range from $130 to $150 per person. We also offer wine (all from Ontario) pairings, which start at $65, per person. What’s the best way to score a reservation? Cassie: Reservations are all done on-line via Tock, which you can access on our website thepinecollingwood.ca. We don’t offer telephone reservations or walk-ins. Any interesting future plans you’d like to share? Jeremy: Since the response has been so terrific, expansion is probably in the cards for us. We are also interested in some other projects, such as a noodle bar, or maybe even a fried chicken place. Cassie: We really like the idea of eventually bringing the Pine to the family farm. Holiday Cookie FAV O U R I T E

ver the years, I’ve developed, tested and published countless festive cookie recipes. Do I have a few favourites? You bet, I do. Perfect for priming the holiday dessert platter, here’s a compact selection of some of my top picks. Trust me, these tried and true recipes are sure to make the season sweeter.

RECIPES

Peanut Buttercup

thumbprint cookies

1 cup, plus 3 tbsps butter, at room temperature ½ cup icing sugar 1 tsp pure vanilla extract ½ cup corn starch 1 tsp salt 2 cups all-purpose flour 24-30 small (1-inch or so size) Reese’s Peanut Butter Cups (available at the Bulk Barn) PREPARATION: 1. Preheat oven to 325F. Line cookie sheets with parchment paper. 2. In large bowl, using an electric mixer, beat butter, sugar and vanilla until light and fluffy. In medium bowl, sift together cornstarch, salt, and flour. 3. Using a wooden spoon add dry mixture to butter mixture in 3 batches; stir until dough is just firm enough to roll out. 34

Divide dough in two. Turn first batch onto floured board and knead until mixture is smooth and cracks slightly. Repeat with second batch.

4. Form balls using just over 1 tablespoon of dough for each, place on prepared cookie sheet. Slightly flatten and press one peanut butter cup into the centre of each cookie. Adjust shape, if necessary.

This delicious recipe features two of my favourite things — Reese’s Peanut Butter Cups and shortbread. Need I say more?

5. Bake for 10 minutes and then rotate sheets. Bake until just slightly brown around the edges, about 8 to 10 minutes more. Transfer to wire rack to cool completely. 6. Store in an airtight container for up to a week, or freeze for up to 3 weeks. Makes between 24 to 30 cookies.

PREPARATION:

Sugar

1. PREPARATION: In medium bowl, whisk together flour, baking powder and salt.

Cookie cutters are a must for this traditional treat. Decorate as desired with icing, coloured sugar, or festive decorative candies.

2. In large bowl, using electric mixer on medium speed, cream butter and icing sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla and zest (if desired). On low speed, beat in half of flour mixture. Using large spoon, stir in remaining flour mixture. Add a few drops of water if mixture seems too dry.

3 2/3 cups all-purpose flour 1 Tbsp baking powder 1 tsp salt 1 cup butter, at room temperature 1 2/3 cups icing sugar 2 large eggs 2 tsp pure vanilla extract 2 tsp finely grated lemon zest (optional) Water (if needed)

3. Separate dough into thirds. Pat into disks. Wrap in plastic. Refrigerate until firm, 2 hours to overnight. On lightly floured surface, roll out each dough disk to ¼-inch thickness. Using 2 ½ to 3-inch cutters, cut out cookies. Gently re-roll dough scraps. Cut more cookies. 4. Transfer to parchment-lined baking sheets, spacing cookies about 1-inch

apart. Note: cookies will maintain their shapes if you place the cookies on the trays in the refrigerator for about 10 minutes prior to baking. If you don’t plan to ice the cookies, sprinkle with granulated sugar for decoration (if desired). 5. Bake, one sheet at a time, in preheated 350F oven for 10 to 12 minutes, or until edges turn light golden brown. Timing may vary depending upon how cold the dough is. If using smaller cutters, reduce cooking time, and keep a close eye on the oven to avoid overbaking. Cool 5 minutes, then transfer to wire rack. 6. Decorate as desired. 7. Store in airtight container at room temperature up to 5 days, or in freezer up to 2 weeks. Makes about 36 (amounts may vary depending upon cutter sizes).

This sweet topping dresses up any cookie.

Short on baking time? Easy to use, pre-made white and coloured cookie icings can be purchased at the Bulk Barn and most grocery stores. 2 ¾ cups icing sugar 1/4 cup hot water 1 tsp light corn syrup 1/4 tsp pure vanilla extract (omit for a whiter icing) Food colouring (optional) Water (if needed) PREPARATION: 1. Combine all ingredients. Mix until completely smooth using hand whisk. Add drops of water or small amounts of icing sugar if necessary to ensure a slightly fluid, but spreadable consistency. Spread icing on cooled cookies. Be sure to place festive candies, or coloured sugar sprinkles (if using) on icing before it sets. Makes about 1 cup. GoodLife | Georgian Bay Winter 2021

Chocolate Crackle

These chocolaty delights are always a hit on any cookie tray. 1 ½ cups all-purpose flour ¾ cup unsweetened cocoa powder 1 ¼ tsp baking powder ½ tsp salt 1 tsp ground cinnamon ¾ cup butter, at room temperature 1-1/4 cups granulated sugar 1 large egg 1 tsp vanilla ¾ cup high quality semi-sweet chocolate chips 1 cup icing sugar (for rolling cookies in)

PREPARATION: 1. In medium bowl, sift together flour, cocoa, baking powder, salt and cinnamon. 2. Using an electric mixer, cream butter and granulated sugar until light and fluffy; beat in egg and vanilla. Using a wooden spoon, gradually stir in flour mixture and chocolate chips to form a soft dough. If it’s too dry add a few drops of water. Form dough into 2 balls and flatten into disks. Wrap in plastic wrap and refrigerate for 2 hours, or overnight. 3. Remove dough from the refrigerator.

4. Preheat oven to 350F. Line baking sheets with parchment paper. Using 1 tablespoon of dough, shape into 1-inch balls, flatten the top, just slightly. Roll in icing sugar until fully coated. If any dough is visible, roll again. Bake cookies until sugar coating splits, about 12 to 15 minutes, rotating halfway through. 5. Cool on baking sheet for 5 minutes before removing to wire racks to cool completely. Store in airtight container up to 1 week, or freeze up to 3 weeks. Makes about 45 cookies.

PREPARATION: 1. Preheat oven to 350F. 2. Spread almonds in a single layer on a baking sheet. Toast 5 to 7 minutes, or until fragrant and light golden brown. Set aside. 3. Grind 1/2 cup toasted almonds in food processor. Set aside. 4. In large bowl, whisk together flour, cocoa, salt, baking powder and baking soda. 5. In another large bowl, using an electric mixer cream butter and sugar together until light and fluffy. Add eggs (one at a time) and vanilla and almond extract, beat until well blended.

Carefully transfer and arrange slices, cut side down, on 2 parchment paper lined (or un-greased) baking sheets. Bake about 15 minutes or until firm. Transfer to racks and cool completely.

s the holiday season draws closer, the business and corporate community will soon be scrambling to hunt down the perfect gift for co-workers, clients and employees. Giving wine as a corporate gift is surely one of the most popular ways to show your appreciation and thank those you do business with. While wine may be the perfect professional gift, the challenge is knowing which wine to choose – a tough task on any day, let alone as a special holiday thank you gift. The key to giving wine as a gift on behalf of your business is not only to tailor the gift to the recipient’s tastes, but also to make the gift feel special. With corporate culture being re-defined, an opportunity exists to be more supportive of certain movements and to embrace some of the more socially responsible choices that many consumers are now pledging. If you rarely talk about wine with your employees or coworkers, then you may not know which styles they prefer. This is why tailoring your choice to a specific cause can help break down a

few of those barriers. And if all else fails, there’s always the tried, tested and true ultra-premium options that no one would ever say no to, that is as long as you’ve got the budget for it. Wineries whose operations are certified sustainable, organic or biodynamic recognize the value of those practices in the marketplace, and they promote their sustainability to varying degrees.
