Brace yourself – it’s that time of year again! It’s time to say to goodbye to the cool fall weather and hello to biting cold. I must admit though that I’m a little bit excited about spending some quality indoor time and tackling home projects, reorganizing spaces or just relaxing with a good book and a warm drink by the fireplace. It’s also time to start chipping away at those holiday shopping lists and what better way to do so than by wandering our local shops to find the perfect gifts for friends and family. We hope you find inspiration in this issue of GoodLife with two professionally decorated dream home tours from Thornton and Innisfil, and gift ideas from local merchants. Our first tour in Thornton, we visit a stately country home with a cottage/ B&B feel that is currently on the market. This home boasts the highest standard of décor including the ultimate chef’s kitchen. Next, we visit Innisfil Estates, where my friend Lou Kelly told me about a new development we had to check out. Located in the commuter sweet spot, this stone and stucco model home has the functionality to work for both young families and retirees. Cozy perfection in Thornton

Exquisite styles mixed with sophisticated design elements create grand elegance throughout this Thornton home on 1.2 acres of land overlooking the Niagara escarpment. JJ and Trish Hochrein were fortunate to purchase this gem from an interior designer who put so much custom love into the home. However, with Trish’s passion for interior decorating, she had to have her stamp on it as well. “We did quite a bit of changes to make it our home,” said Trish. From finishing the basement to changing all the paint colours throughout the house, Trish and JJ were able to make this attractive home an even closer match to their style. Upon entering their picture-perfect home, you are immediately welcomed by calming neutral colour palettes throughout. A view of the gorgeous backyard is seen right from the

entrance. In the living room to the left of the entryway, variations of white, beige and brown hues create cozy warmth. The elegant transitional style kitchen is equipped with commercial grade appliances, including a Jenn-Air range. “My husband really enjoys cooking so it’s quite the chef’s kitchen,” said Trish. Adjacent to the kitchen next to the exterior French doors is the rustic looking dining table from Restoration Hardware’s Flatiron collection. With six vintage French chairs, also from Restoration Hardware, there’s plenty of room for the family to enjoy many of JJ’s delicious recipes. Above this rustic table hangs a chic chandelier. “It’s a smaller version of the one in the great room,” said Trish. Open to the kitchen and eating space is the two-storey high great room. This well-designed area includes various unique and luxurious design elements such as a coffered ceiling, a Juliet balcony from the second floor’s master suite and a grand fireplace from Town and Country Fireplaces that

is surrounded by a detailed cast stone mantel from Omega Mantels in Toronto. Furnished with a nautical colour palette of blue, white and grey, the great room is the main entertaining spot on the main floor. With oversized floor to ceiling windows, the beauty of the outdoors shines through. Despite the spaciousness of the area, there is still a very cozy feel to the space. “Our guests always find this room warm and inviting,” she said. The paint colours used throughout this home add a lot to the richness of the design. In the great room, a crisp shade of white was used to promote focus on all the other beautiful elements that surround the space, such as the outdoor scenery. The walls were painted with Benjamin Moore’s Cloud White and the trims with White Down. Using more neutrals, the hallways, mudroom, office and living room on the main floor were painted with Benjamin Moore’s Natural Linen. This brings subtle cream tones to the

spaces while making it simple to redecorate. The Brazilian walnut hardwood floors complement the warmer hues of these walls, while also matching well with the handrails of the staircase. Taking the stairs up to the second floor from this well-designed space leads to the master suite on the right side. Trish has furnished this space using inspirations from some of her favourite design sources, such as the interior decorating website Houzz, Restoration Hardware and a number of other high-end furniture stores. The bed was custom made by GH Johnson in Toronto, the bench was from Restoration Hardware and the footrest by the wingback chair in the corner was a smart find at Target, said Trish. Similar to every other room in the house, wainscoting wraps the walls in the master suite to add a stylish touch. Just two steps past the his/hers walk-in closet is the ensuite bathroom. With heated floors, a jetted tub and a spacious shower, this is truly the couple’s escape. Pairing nicely with the neutrals theme throughout the house, the ensuite bathroom is painted with Retreat SR2 from the Sarah Richardson collection by Para Paints. Down the hall and past the window seat are three more bedrooms. The one with the ensuite bathroom is their son’s room and the other two serve as guest rooms. Although these two rooms do not include ensuite bathrooms, they share

the main bathroom. Completed with the same Crema Marfil marble used for every countertop in this house, including the kitchen counters, this bathroom is comparable to that of a highend hotel. Both bathrooms on the second floor were painted in a classic coastal blue hue called Seersucker SR46 from the Sarah Richardson collection by Para Paints. More living space was added to this home when the Hochrein family decided to finish the basement. “We made it into a Muskoka space,” said Trish, referring to the warm colours used to decorate their walkout basement. The two red exterior French doors that lead to the backyard help frame the view of the outside. The secondary focal point in this space is the all-stone wood-burning fireplace with the rustic wooden mantel. The natural materials used to create this feature piece are clearly inspired by the Muskokan style. On the opposite end of the basement is a custom built-in storage unit. “I call it the world’s most expensive toy box,” said Trish. It cost so much to make because its sophisticated design includes a hidden opening to the electrical room. But it’s not just about practicality or storing their son’s toys, the rustic barn board used in the centre also complements the rich rustic feel found on the rest of this floor.

When they first started designing the basement, they had no idea how to keep the necessary beams without compromising the design, she said. This was their unique solution, which added so much style and coziness to the space.

Adjacent to this area is the laundry room. Spacious with plenty of room for more than laundry, it’s filled with practical storage space and a trendy style. With a farmhouse sink and high-end appliances, any homeowner would love getting the laundry done here. And the laundry chute makes the job even easier. With plenty of living space indoors, it was also important for the couple to have a good seating space outdoors. After all, they’re quite the entertainers. They often host gatherings for their friends from the city. “Some of them are here every weekend. It’s their little getaway,” said Trish.

Under the living room’s cathedral ceiling, a lofty stone gas fireplace is the focal point for a deep-seated couch and inviting armchairs.

Stroud is a gem hidden in plain sight. Attractive, welcoming and easy-going, it is located a mere five minutes from Barrie’s big city conveniences, entertainment venues and dining experiences. If you need a wider selection of city charms, Toronto is a 40-minute trip away. Residents love their easy access to Highways 400 and 11. Commuters are enamoured with the nearby Barrie South GO station. Both groups enjoy being able to go sailing and swimming or simply strolling along the shores of Kempenfelt Bay and other areas of Lake Simcoe without having to endure cottage country traffic. In the warm weather, local trails are full of hikers, bikers and walkers. After the snow arrives, cross-country skiers and sledders take over. As well as an enviable location in relation to other places, Stroud offers residents a family-friendly hometown with local schools, shopping, dining and services. Originally called Victoria after the long-ruling Queen, Stroud’s first home was built in 1830, joined by its first school in 1848 and store in 1850. A formal dining room, located close to the kitchen at the front of the house, features an innovative square glass and brass light fixture chosen by designer Nielen. “Everyone who comes into the house mentions the lights,” says Redmond. “I did too when I first saw them. Yvonne sourced all of the furniture at The Brick.” Large windows in the lower level give the space a main floor feel. Two roomy bedrooms, one currently being used as an office, are connected by a Jack and Jill bathroom with two sinks and tub. A family room with a stone gas fireplace fitted with a flat screen TV makes a cozy place for family members to watch shows or to entertain their friends. The lower level

It’s 11:30 a.m. on a Friday morning, and the Burger Bistro is packed. “We have quite the loyal following,” boasts chef Jay Klausen who owns and operates the popular burger and poutine joint with his brother Ryan, and potato farmer Trevor Downey. “We cost a bit more than your average fast food joint, but as you can see from the lineup folks appreciate that our food isn’t mass produced or processed.”

And who even knows where that meat comes from? We decided to take fast food to a different level by offering a solid, chef inspired menu. We make everything in house, using high quality local ingredients.

After touring the hip 20-seat Alliston eatery, the 34-year-old local chef, sat down with this GoodLife reporter to chat about the burger business. Over a cup of caffè Americano, Klausen dished about everything from his philosophy of cooking from scratch and using quality local ingredients, to the secrets of making great poutine.

I understand you exclusively use local meat from trusted suppliers.

Most people know you as the Bistro 77 chef/ owner. Why open a second business? Jay Klausen: When the property across the street from Bistro 77 became available, we de-

JK: We know exactly where our beef, pork and chicken comes from. All of our meat is free range, and our chicken and pork are both organic. Our beef is naturally raised with no growth hormones, no antibiotics and lots of pasture feeding. We know that all of the animals are treated humanely. That’s a big one for me — I will not eat something if I don’t know how the animal was raised. I’m very conscious

of where my food comes from and I despise factory farming. Your opposition to factory farming is admirable. JK: It’s important to support local farmers who are raising animals in a humane way. If we don’t, the factory farms will just take over. The decor of the Bistro Burger Joint is fun and trendy. I especially love the cow horn door handle, the branded wooden tables, the painted skateboards showcasing each burger, the colourful chalkboard menus and the three framed brown and white cow hides that grace the walls. JK: Right from the start, we wanted to create a hip, cool, funky atmosphere with a great product and great service. Why are your burgers and poutine so popular?

What are some of your best selling items?

JK: We use high quality ingredients and everything, except for our cheese curds and hand rolled artisanal buns, is made in-house from scratch. Are we a little bit more expensive than the average burger joint? Sure, but, here’s my rule of thumb — when something is cheap, it’s cheap for a reason. You really do get what you pay for.

JK: Our Bacon & Cheese & Bacon (natural beef burger, aged white cheddar, double smoked bacon, lettuce, tomato, Dijon mustard and red wine aoili) is one of our most popular burgers. As for poutine? Top sellers include our Plain MaryJane (Ontario cheese curds, fries and red wine gravy), Get Porked! (organic pork, smoked bacon, fries, Ontario cheese curds and red wine gravy) and the Three Amigos (homemade salsa, avocado, spicy mayo, fries, Ontario cheese curds and red wine gravy).

What burgers are on offer? JK: We serve up five grilled signature burgers. Anything from the Bistro Train Wreak (a local, natural beef burger with a deep fried bun, smoked bacon, aged white cheddar, caramelized onions, lettuce, tomato, pickles and spicy mayo) to the B.B.JAY (a local natural beef burger with Woolwich goat’s cheese, pickles, lettuce, tomato, hot peppers, spicy remoulade and spicy mayo). For fish lovers, we offer Off the Hook (a local rainbow trout fish cake served with lettuce, tomato, pickle and sauce gribiche). And of course, we offer a Grazed Before Blazed (a local natural beef burger). What about your featured burgers? JK: Every couple of months, we feature a new burger to keep things fresh and interesting for our regular customers. 28 | GoodLife South Simcoe November - December 2014 ■

What’s the secret to making great poutine? JK: There’s definitely a science to it. First, you start with a good potato variety. High quality cheese curds and excellent gravy are also a must. After blanching your fries, you almost want to over cook them a bit and get them nice and crispy so they can stand up to the gravy. What would you order for me? JK: You’d have to try my favourite burger — the B.B.JAY. On the side, I would recommend our famous homemade beer battered onion rings. They are soooo good! The secret ingredient in the batter is Flying Monkeys beer, a local craft brewery in Barrie.

Shelburne-area potato farmer and businessman Trevor Downey, of Downey Potato Farms, is one of your business partners. Tell me about that connection. JK: My brother and I first met Trevor as a customer at Bistro 77. Trevor’s family has been in the potato business since 1924, so he’s what you’d call a potato farming veteran. He’s one of the biggest potato producers in Ontario, and when he was looking for a picture of a local chef to put on the cover of his potato bag — he asked me. That’s how our relationship started. Because Trevor was also our potato supplier for Bistro 77, we asked him if he’d like to be a partner in the Burger Bistro Joint. He said yes, and it just went from there. It’s really a great partnership trio — his potato knowledge, my brother’s service background and my chef’s expertise. We also sell his 50 pound bags of potatoes with our logo on them, and all of our takeout items come in our own branded potato bags. You’re a self-taught chef. What led you down the restaurant path? JK: I was cooking at a very early age. Scrambled eggs were my first speciality [laughs]. My initial foray into the restaurant business was a dishwashing job at the Mono Cliffs Inn (near Orangeville). I was 13, and I’ve been in the business ever since. I worked my way through the industry and, in 2000, my brother and I opened up our first restaurant together in Orangeville. A few restaurants later, we opened up Bistro 77 together in Alliston. Why Alliston? The real estate was affordable, and we loved the idea of owning and operating a business in a small town. We really like being close to all of the farmers that grow and supply the food for our restaurants. I enjoy owning a restaurant because the marriage of business and the creativity that cooking offers is perfect for me. »

That way, we can always watch every aspect of our businesses. We’re present all of the time — that’s what it takes to succeed in this business. Tell me about the mobile Burger Bistro Joint. JK: We have a location at the four corners in Mansfield (open May to Thanksgiving), which only serves poutine. Everything is made in-house,

and it’s the same poutine you’d get here. We also have a truck that we use for special events like weddings and corporate functions. What’s on offer for people with dietary restrictions? JK: We offer gluten-friendly potato burger buns. We thought it was fitting to have a potato bun in a potato town [smiles]. Our signature red wine gravy, which took me forever to master, is also gluten-free and vegan. We also have our Down to Earth veggie burger which is a grilled portobello mushroom cap (served battered or grilled).

What’s your favourite dish to cook at home? JK: Truthfully, I drive my wife nuts because I don’t cook much at home [laughs]. Long work hours get in the way of preparing food in my own kitchen. Having said that, I always cook when we have company. I’m crazy for braised meats, so my favourite dinner to prepare is braised short ribs with red wine jus, roasted potatoes and seasonal vegetables from our garden. Beyond your businesses, what’s your favourite foodie destination? JK: The Flying Chestnut in Eugenia (near Flesherton). Shawn Aldler, a high school friend, is the chef/operator and he uses local ingredients and makes everything from scratch. It’s a very artsy and eccentric little place, and it’s worth checking out. These are the people who I like to support — small business owners who put out a great product, while doing things a little differently. What about the future? SPICE TOMATO JAM

This delicious recipe is courtesy of chef Jay Klausen of the Bistro Burger Joint. “This jam is very versatile. You can use it as a burger topper, spread it on crackers or even put in a soup for added flavour.” Sriracha is a type of bottled hot sauce made from chili peppers, distilled vinegar, garlic, sugar, and salt.

SPICE TOMATO JAM: 2 1/4 cups peeled diced tomatoes 1/4 cup sugar 1 tsp Sriracha 1 tsp freshly squeezed lemon juice 1/2 tsp kosher salt

PREPARATION: Combine tomatoes, sugar, and Sriracha in a heavy bottom sauce pan. Bring to a boil and reduce heat to simmer. Simmer for approximately one hour or until thickened. Add salt and lemon juice, let cool, refrigerate and enjoy.

Our local farmers offer an unbelievable selection of fresh fruits and vegetables, and our pepperoni sticks and fresh cut fries always seem to be very popular items. Can you tell me a bit about the Santa booth? Santa makes a special appearance each weekend from Nov. 15 until Christmas. Parents can bring their own camera to take as many photos of their children with Santa absolutely FREE. Even more special is that each child receives a gift with each visit. Santa gives out some of his magic reindeer food, which is sure to attract the reindeer once spread out on the lawn Christmas Eve. With the holiday entertaining season revving up, it’s the perfect time for an appetizer story. With that in mind, we asked a handful of chefs and food professionals to offer up their favourite festive hors d’oeuvre recipes. The results are downright delicious!

Marmalade 1 medium orange Juice from half of a lemon Zest from half of lemon 3/4 cup water 1/2 cup sugar

The 24-year-old Georgian College trained chef, who was born in Penetanguishene, has always felt at home in the kitchen. “I grew up helping my grandparents and mom cook everything from simple spaghetti to pies and desserts,” explains the young chef. After working his way up the cooking ladder in various local restaurants, Fournier landed at Micheal and Marion’s the Side Door in 2012 as garde manger. By the summer of 2014, he took over as head chef. Mousse 2 sides smoked trout chopped (ours came from Port Carling in Muskoka) 3 cups goat cheese 5 leafs fresh sage chiffonade (chiffonade means sliced into long, thin strips) 3 Tbsp 35% whipping cream PREPARATION: 1. In a stand mixer, whip trout, goat cheese and sage until soft. 2. Add the cream slowly and whip until cream is incorporated and goat cheese is smooth, but still has some small chunks of trout. 3. Put mousse into piping bag with large star tip and chill until set. Alternatively, set bowl of mousse into the fridge to set (to quenelle later with spoons). 38 | GoodLife South Simcoe November - December 2014 ■

1/8 tsp cinnamon 1/8 tsp allspice 1 pinch nutmeg PREPARATION: 1. Cut orange into thin slices (roughly 1/8-inch slices), removing any seeds as you go. Stack the slices together and cut into eighths. 2. In a small saucepan, combine oranges, lemon juice, zest and water; bring to a boil. Reduce heat to a rapid simmer and cook stirring frequently for 40 minutes or, until fruit is very soft. 3. Return to a boil and add sugar and spices. Reduce heat to medium low and cook 15 to 20 minutes, or until colour darkens. Set aside, keeping warm, until ready to use or reheat before use.


Filo Cups 3 sheets filo dough (PC makes a really good filo) 1 cup (2 sticks) butter, melted PREPARATION: 1. Preheat oven to 350F. 2. Place first sheet of filo on cutting board and brush with butter. Place next sheet on top of buttered filo and repeat with butter. Add one more sheet of filo and brush with butter. 3. Cut the filo into squares (6-inches by 4-inches) and push into muffin tin to make cups, leaving an empty space between each cup. 4. Bake for 6 to 8 minutes or until en brown. Remove from oven and let cool.

4. Strain off the kumquats and toss them in the 2 cups of sugar. Lay onto baking sheet lined with parchment paper to air dry for about 30 to 40 minutes. Remember to reserve the syrup to add to your favourite drinks like homemade iced tea, hot teas or coffees. Also, save the rest of your 2 cups of sugar to use in baked goods because it will have a delicate citrus flavour. Note: If using oranges, quarter the orange slices after they dry.

Festive food matches with amazing value wines By GORD StiMMEll It’s the festive season, when family comes first in our thoughts. Of course, friends dropping by for special weekend dinners and winter evening parties also come into vogue. Lots of the feasting will focus on turkey or whole chicken, special fish dishes, aged clover studded hams, as well as racks or leg of lamb and sirloin or prime rib roasts. The best wines to accompany these should be special, but that does not mean they have to cost an arm and a leg. I am always in the hunt for the best-hidden gems at a price that does not involve a second mortgage. So today, I bring you my latest top value white and red wines. Between the five choices, they can match with almost anything you can dream up in the kitchen. You may be aware that several wines can go with a single dish. For instance, with roast turkey, a sauvignon blanc will cut cleanly through all that gravy and excite and clean the palate. But an oaked chardonnay also can go because it matches or complements the gravy and all the butter on mashed potatoes and veggies. Some folks will even match a pinot noir or gamay to roast turkey, although that is quite daring. But this lighter styled red does go with mushroom or savoury stuffing, as well as cranberry sauce. So don’t feel bound by my food suggestions. By experimenting with your own palate and different foods, you widen your taste knowledge and learn at the same time how wine and cuisine can transform one another. It’s also fun to see how your guests react to various wine and food combinations!

in hand. With that in mind, GoodLife tracked down various local chocolatiers to learn more about their mouthwatering creations. Here’s a sampling of some of the region’s best chocolate makers. »

Owned and operated by Mark and Monica Aarden, the local sweet shop is filled to the brim with gourmet chocolates. “It’s a true European chocolate wonderland with the heavenly aroma of the finest Belgian Callebaut chocolate,” says Monica Aarden with a smile. Trained as a Master Chocolatier, teacher and pastry chef in the Netherlands, Mark has worked in the chocolate industry for the past 30 years. “He’s been in the chocolate business since he was 17,” Monica Aarden boasts proudly. “Many of the traditional recipes we use date back to the 1800s, from the European company where Mark worked as the manager and main chocolate manufacturer.” As for the couple’s chocolate making

philosophy? “We make everything onsite from scratch using the best quality ingredients. Quality comes first,” says the chocolatier.

During the holiday season, Aarden’s Chocolates offers a variety of festive themed treats. From snowmen to wreaths to Santas — just about every holiday shape is covered. “We love to dress up our chocolate boxes with holiday bows,” says the chocolatier.

Belgian bonbons are one of the chocolatier’s specialties. “They are filled with a basic ganache (ganache is a velvety smooth blend of chocolate and cream) and a variety of delicious flavours. For all our creams, caramels and ice cream, we use our own local Miller’s Dairy from Creemore.”

For customers leaving with just one item? “A box of our signature Dutch truffles is a must.” Signature Dutch truffles feature flavoured butter creams. Each truffle is individually hand dipped in smooth velvety chocolate, then hand rolled in small chunks of chocolate or Dutch Brut cocoa powder.

Pieces include the engine, box cars and a caboose. “You can make it as long as you want and fill up the cars with treats.” Decorated like an old fashioned candy shop, the Chocolate Shop features an onsite kitchen. “All chocolates and fillings are handmade, hand dipped, and made with the finest Belgian Callebaut chocolate. “Our goal is to satisfy the chocolate needs of all of our customers,” she explains. Along with holiday-themed goodies, the local shop is best known for its chocolates and truffles. “You pick an empty gold box and fill it up with your favourites.”

Handcrafting each mouthwatering truffle creation, the local chocolatier uses original recipes and the highest quality cocoa from Venezuela and Ecuador. “My premium chocolate is superior in taste because it’s based on point of origin,” explains Richards, who started the company four years ago. “Approximately 80 per cent of the world's chocolatiers and manufacturers are using commercial grade cocoa from the Ivory Coast. I only use cocoa from Central America and the Amazon Rain Forest where only premium chocolate originates. Our cocoa is chosen from within the top one per cent of the world's finest cocoa.” Heading into the holiday season, Richards will have plenty of delectable creations on offer. “I start really revving it up around October,” he explains. Theobroma’s top sellers include a signature ice wine truffle (made with premium, milk chocolate ganache containing award winning Inniskilin’s cabernet franc icewine enrobed in the highest quality, premium dark chocolate) and the Master Chocolatier’s personal favourite — a savoury, chewy caramel and sea salt milk chocolate truffle. Maureen Joyce By Maija Hoggett To Maureen Joyce, the sky isn’t merely blue. It’s cerulean, or one of the other shades of blue in her art kit. “It’s like learning a second language, “Joyce says when you start dreaming in a second language you know you’ve captured it and that’s sort of how I feel. Once I start looking at things differently…I think I’ve got it.” Joyce is a co-founding member of the Bradford West Gwillimbury Studio Tour, and a member of the Society of York Regional Artists, South Simcoe Arts Council and Artists at the Gibson She has always loved art, but as a little girl wasn’t encouraged to pursue it. Instead, she focused her creativity into decorating tables at the holidays or making clothes for her children. “I even taught a macramé class one time to keep the creative juices flowing,” she laughs. Before discovering her own artistic ability, she also spent 21 years working at the McMichael Canadian Art Collection in Kleinburg.

Signing up for a watercolour class 15 years ago has changed the way Maureen Joyce sees the world. “I guess what I was doing is quietly filling in a little void in my life without me being aware of it,” she said. “I was just gathering information.” It wasn’t until she was being treated for throat cancer and wasn’t able to talk for months that she decided to pursue painting. “When you do that you really have to draw yourself inward cause you can’t communicate in other ways,” she said. “It gave me time to reflect and think about what I wanted to do, and I thought, well, if I get through this I want to do some art. That’s really the beginning of my art.” Walking into her first art class in Bradford was terrifying, but it didn’t take long for her to get comfortable. A 15-year veteran artist, she’s passionate about what the experience draws out of her, and other artists. She says getting really tuned into the creative process is a beautiful experience. “The energy just flows through you, it goes down through you through your hand and onto the paper. It’s a wonderful place to be. You just have to learn to block out the rest of the world

and shut down your mind,” she says. Most paintings are inspired by nature. Her canvases portray everything from the changing pink of a peony, to carefully mixed blues and greens capturing a stream in the forest. One of her favourites is called Christmas Memories and depicts her husband, son and grandchild carrying trees through the snow. Her work takes shape through photographs she takes; sometimes it’s two or three photos pieced together that make a canvas complete. Other times it’s an image she sees and translates into a canvas. Perhaps the greatest labour of love is a scene from rural Newfoundland she painted in acrylic. It captures a house being moved over water from one side of the town to another. Without a picture to work from, she pulled it together from her husband’s memory. She’d sketch something and he would suggest things to move around or change until it looked just right. “I picked his brain and asked him 100 questions,” she quips about the piece that took two years to complete.

When most people think of the Arctic, they think of ice and wildlife. Visiting the villages was like stepping into a whole different world. Inuit culture in the Canadian Arctic has left little to no physical evidence; there are no pyramids, palaces or temples, yet the culture has been around for four millennia. The greatest achievement of the northern people is that, for many generations, they survived Arctic winters and thrived in a country regarded by many as uninhabitable. The Northwest Territories and Nunavut cover an enormous area, nearly a third of Canada, yet the entire population would barely even fill a standard football field. Scattered across the coastal areas of the region are small Inuit Communities. Few have populations numbering more than 1,500, and, despite the introduction of snowmobiles, satellite communication and video, they remain faithful to their traditional hunting culture. On each of my trips, I try to buy at least one thing from the local towns and people. This time I decided to buy a pair of handmade seal slippers and mittens. I had the unique opportunity to watch my slippers and mitts being made and was in awe at how careful the local people are to ensure that the entire seal is utilized. Leaving the village behind, we once again ventured into the icy wilderness. I started each day aboard the Sea Adventurer by waking up every day at 3 a.m., in full sunlight, to have a cup of coffee with the first officer on the bridge. It is amazing the things you can see and the stories

you can hear when the rest of the world is asleep. In addition to my early morning conversations, I also took full advantage of the ships lecture series. Never one to sit in a classroom, I was blown away by how much I appreciated and learned from the lectures available onboard. Lectures included everything from wildlife biology and drawing to photography and ornithology. Spending two weeks on board with some of the best photographers in the world is a truly humbling experience. I am always amazed at how much can be learnt from the people you are travelling with. For example, I met a fantastic professional wildlife photographer named Mike Beedell, who has a vast and intimate understanding of the landscape and how to photograph it. Also aboard was John Houston who lived in the Arctic as a child and is an awardwinning writer, director and producer of Canadian and international documentary films. In addition to photographers, bird lovers also flock to the Arctic and for good reason. Visitors are often struck by the abundance of bird species found in this glacial environment. Although most spend their winters in the warmer southern climates, in the summer the vast ice landscape is home to more than 100, mostly migratory, bird species, including the peregrine falcon, ringed plover, snowy owl and the fulmar. Although I am not an avid birder myself, I can admit that there is something magical about the birds of the Arctic. As one can only imagine, my bucket list is quite extensive. With that said, one of the experiences


near the top of my list is to photograph a polar bear in its natural environment. Having grown up in Bermuda, the idea of such a large mammal living in such a frigid climate, and on a sea of ice nonetheless, has always been inconceivable. I couldn’t wait. I finally managed to fulfil my dream while out on the bridge with the first officer, early one morning. I had my binoculars focused and waiting. All of a sudden there he was; one of the most amazing mammals to walk the earth. What a fantastic surprise, and a wonderful opportunity to put my photographic skills to the test. Polar bears are the largest living landbased carnivore in the world. The largest males can weigh up to 800 kg and can reach 13.5 feet in length, about the same size as a compact car. They can be seen alone, but often form groups of two to 20 and sometimes herds of a few hundred are seen in areas where prey is aggregated. These magnificent animals are built for the cold. Their coarse outer fur is made of translucent hairs that allow ultraviolet radiation in. The fur also serves as a wet suit, trapping in heat when the bears swim and their small rounded ears minimize heat loss. What an incredible animal and an amazing experience! Throughout the voyage I couldn’t help but realize how lucky I am as a Canadian to live in such a vast and diverse country. Many people don’t ever get to experience all that this beautiful country has to offer. It is a destination that most people don’t even think about, but it’s right on our doorstep and is something that should be on everyone’s bucket list.
