“When I was decorating this space eight years ago, I didn’t find the modern furniture that I liked, so I had to custom make it all” Renovated with a contemporary style, Ken and Tammy Michaud’s residence is the perfect family home. Tammy’s years of experience as an interior decorator and her ability to anticipate upcoming trends have converged to make this a timeless gem. During one of her trips to Chicago, for example, Tammy noticed orchid planters used extensively as decorative pieces. “So I came home and decorated with orchids and then the trend caught on years later,” she said. Today, she gets her orchids and other fresh flower arrangement regularly from Joshua’s Greenery in Barrie. It was the feel of the house that inspired the redesign of this home, said Tammy. “It was all about keeping it uncluttered and highlighting the architectural beauty,” she added. In the daughter’s room, the Damask black and white bedding complements the daring black focal wall. An antique chest was repainted in white to enrich the subtle chic French country style of this room and serve as a dresser. In the son’s room, a lighter grey palette adds masculinity to the space. Similar to every bedroom, large windows bring in ample natural light to brighten the area. The same luxurious walnut hardwood floors charm all three bedrooms and are all complemented by light neutral tones of taupe and grey palettes throughout. Located just before the master suite is the second floor bathroom. Adjacent to that is the open kitchen, which was created to mimic a gourmet kitchen at an urban restaurant. The spectacular bamboo veneer floor cabinets, supplied by the Georgian Kitchen Centre in Midland, mix well with the steel shelves and stove hood. Only the highest quality stainless steel appliances were used to complete the functionality of the space. There’s also plenty of countertop space and two sinks on either sides of the kitchen. One is just beneath the window looking out to the front of the house and the other sink is part of the peninsula that faces the dining room. To add a classic flair, three Victorian style chandeliers were added above the serving bar. Located conveniently across from the kitchen on the main floor is the powder room. The custom formed and polish concrete sink adds to the industrial look found throughout the house. 

The Foucault’s Iron Orb Crystal Chandelier from Restoration Hardware is quite the statement piece in the bedroom. Mixing 19th century elegance with a rustic style, it’s the perfect wrap for the decorating style of this home.
The first bedroom to the left is the daughter’s room. Completely designed with a calming beach colours palette, this room is the perfect girl’s room. The two soft sand coloured upholstered double beds side-by-side are separated with a round metal French style end table. The soft blue paint mimics the clear waters of Georgian Bay. Above all this calmness a rich Victorian French chandelier hangs from the high vaulted ceiling. Across the hallway, a mirror image of this bedroom is furnished in a more masculine style to better suit one of their two boys’ tastes. The different shades of grey used in this room create the design interest. With a double bed by the window and a single sofa bed, this room was also furnished with the overnight guest in mind. Another boy’s room is also furnished with the same look. But this third bedroom has a stunning view of Georgian Bay and sliding glass doors that lead to the second floor deck. A neat addition to every bedroom in this house is how each closet was finished with the outmost detail. Using cabinetry by the Georgian Kitchen Centre, each closet is finished in a different shade, using the same cabinet style and all closets light up automatically when the door is open.
Between the two boys’ rooms is a second floor’s bathroom. Outfitted with a custom shower and a full-jetted system, a sit-down bench and a rain showerhead, this bathroom oozes the ultimate in luxury. “All title surfaces and the basement floors are fully heated,” said Decarli. And with this home zoned for heating, every room can be set to a different temperature, he added. Just outside the bathroom, a spacious linen closet, completed with the same design elements as all the other closets, was added. “It’s the perfect place to hold all the beach towels,” said Decarli. The technology installed throughout this smart home is absolutely exquisite. Every single room includes a seven-channel surround sound system. “You won’t be able to see any speakers though because they’ve all been built into the drywall,” he added. hen Donaleigh’s head of security Carlo Fusco joined the Donaleigh’s family, he didn’t envision what that meant as he focused on keeping his coworkers and patrons safe. Carlo works very hard, working two jobs to support his family but he never expected the love and support he has received from his 2nd family, Donaleigh’s. “I never expected anyone to go out of their way to do something like this for my family,” said the Innisfil father who also works for Canada Post. His 11 year old son Anthony became the inspiration for the pub’s 2014 calendar, the first major fundraiser for a bursary to help children with Autism go to camp. It involved his coworkers taking the time to show their spirit of fun in a series of photo shoots for the calendar, then promoting and selling it, all in a bid to create a campership fund. “It was a lot of fun but we did it to help someone we know and care about. He’s our pub dad at night. He ensures we’re safe,” said Donaleighs’ social media and marketing manager Kendra Johnson. What began as a Christmas gift for the Fusco family is already growing into something more. The calendar was a way to build the Donaleigh’s family and strengthen its relationship in the Barrie community. “We can help other children go to camp as well if we are successful” Johnson added. Since Donaleigh’s owners Don Kellett and Steve Ricalis opened the Dunlop Street pub’s doors three years ago, they’ve created a business that is more about family, community and people. It’s a strategy that’s paying dividends in an array of community groups. “We have gotten immense support from the community and we want to play a positive role in growing in it,” said Don. “We sponsor 15 ball hockey and softball teams, the Miller School of Irish Dance and Barrie Pipes and Drums. We support them because they support us. We love our community and want to give back.” He added the dance and the pipe band to tie the pub to its Celtic heritage and foster those links in the community the three of them proudly serve.

And golf is part of that legacy too, but it takes on a spirit of fun and fundraising each June with the annual golf tournament. The tournament helps raise more money towards its campership at Camp Prospect www.campprospect.com. Camp Prospect gives a safe place for children with Autism to go to camp. Don knew the work Camp Prospect founder Giancarlo Marchi has done through the years, as he’s created a place where those with Autism can spend a weekend or a week -- or longer, to learn and play while their families get a break. Don noted a week of camp for a child with Autism costs up to $1,700, due to the individual support the child needs to communicate, understand their new environment and make the most of the unfamiliar camp experience. “It’s not cheap or easy raising an autistic child, so every little bit helps,” he said. The Fuscos pay for additional speech and occupational therapy – and that’s why Carlo works an early job and his evening job at Donaleigh’s. “When I was presented with this,” Fusco said, recalling his surprise at the staff’s Christmas party, “and found out they were doing this for me, my son and our family. It was very touching.” “I didn’t expect it. Wow. You know people care, but didn’t know how much. I work two jobs and really hard for my family. I never expected anyone to go out of their way and do something to help, but my family at Donaleigh’s did.”

Michelle Ertl, owner of Anchique Interiors, is passionate about reinventing the beauty of vintage pieces of furniture to better function within contemporary designs. The store’s name was created using a combination of the words antique, shabby chic and unique. “We played around with different words until my husband, Michael, came up with it,” said Ertl. Getting into the retail business of redecorating furniture was never really Ertl’s plan, she said. “As I learned more I started having people wanting to buy my pieces. One day the opportunity was there,” she added. Today, Anchique is the approved retailer of Chalk Paint™ by the world’s renowned
decorative paint expert, Annie Sloan. Unlike traditional furniture paint, Chalk Paint™ does not require sanding down or priming, making it a more convenient option. “It can be used on most surfaces and it’s great for both indoors and outdoors,” said Ertl. The store also carries a number of fabrics by Annie Sloan as well as another paint collection called Miss Mustard Seeds Milk Paint by Homestead House Paint Company. Although some of Anchique’s clients prefer to simply shop for furniture rather than do any of the painting themselves, others are sometimes curious about how it’s done. In order to cater to the latter group, Ertl offers workshops to teach adults how to update various furniture pieces to meet their different design tastes. But helping DIYers get projects done doesn’t end at work-

shops. Ertl is also a co-host for a show called Anchique It, which airs on Rogers TV in Barrie and Alliston. In every episode, Ertl demonstrates different techniques of upcycling furniture. The show also takes viewers to places where Ertl frequently finds the best pieces of furniture to reinvent. Some of these places include various auctions and second-hand stores such as Habitat for Humanity’s ReStore locations. “It’s actually a great way of giving back and helping out a charity,” said Ertl. The trend of neutral colour tones and various shades of white is quite evident throughout furniture restoration. Despite that, pieces with a bright colour like Annie Sloan’s Emperor’s Silk red is always a hit. Regardless of the colour, vintage furniture is clearly becoming a trend in home decorat-
Flooring TRENDS ing because people are seeing the benefit in the old, said Ertl. “Customers are getting that one-of-a-kind benefit,” she added. When shopping for a previously-loved item, it’s important to make sure that you like the existing hardware, as that can be pricey. Don’t let veneer damage deter you from a piece, as it could be an easy fix, she said. “It all comes down to picking a piece with good bones,” she added. *** When it comes to picking the right pieces of vintage furniture, Melanie Karas of Castle and Park also knows what it takes. Realizing the popularity of vintage furniture within today’s interior decorating trends, Karas has established her store in Barrie as a vintage wholesaler. Sourcing the best of vintage style and antique pieces, Karas and her associate Tracy Mulhall bring only quality items to the store. Unlike Anchique, at Castle and Park, Karas leaves pieces in their original condition for the most part. Despite this, Karas appreciates businesses like Anchique and understands that some times vintage pieces require some updating. “When customers express interest in doing more to a piece, we actually refer them to Michelle at Anchique,” said Karas. To source the best pieces, Karas constantly stays up-to-date on the latest trends. Looking at interior decorating magazines, attending various auctions and being active on social media inspires Karas to find the right pieces for Castle and Park. Although dark wood stains tend to sell better, walnut is the only colour that seems to always stay in style, said Karas. Dedicated to quality, Karas always filters through everything she finds and only brings back pieces of purpose. “I believe it’s only valuable if someone is going to use it,” she said. Understanding how to identify quality pieces is key to going home with the right item for the space. When it comes to upholstered pieces, it’s as simple as sitting in it. “If it doesn’t feel good and the springs aren’t tight, don’t buy it,” she said. Also remember to check for any visible crack or parts that are falling off. “Check the legs, give them a shake and make sure they’re not falling apart,” she added. In addition to sourcing vintage and antique pieces, Karas also accepts consignments at Castle and Park. “We often get some great furniture through people who consign pieces that they refinish,” said Karas. To add a personal touch to every consignment piece at Castle and Park, Karas always tries to get the story behind the piece. When
pieces are consigned, she asks the owner to tell the story of the item’s origin. “It’s a way for us to capture the special part of the piece,” said Karas. *** Another unique furniture style that is gaining popularity in the world of upcycling is steampunk. At Phill Holder’s Steampunk Factory, thousands of salvaged pieces are sourced from different dispensing locations such as the auto flea market. “I create functional pieces from things that have been discarded by putting them together to create a whole new unit,” said owner Phill Holder. Inspired by a subgenre of science fiction that involves steam-powered machinery, steampunk features the use of dark colours found in brass, copper and wood. “It’s basically the 50 shades of brown,” said Holder. In comparison to other furniture restoration techniques, Holder believes that steampunk furniture is the true art of upcycling. “It’s not just about sprucing it up,” he said. Instead he creates something new from things that are no longer of use. Holder never knows what the finished
piece will look like when he starts to work on an item. “The only thing I know for sure is how it will function,” he said. That’s why he is able to guarantee to his clients that there will never be another one like it. “Steampunk is the new art deco of our time,” said Holder, who believes that anything can be steampunked to have a more artistic and unique look. In the business of upcycling for 50 years, 10 of which were dedicated to steampunk art, Holder is able to create a variety of different pieces. From clocks to tables, chairs or lamps, he’s made it all. At his store in Barrie, customers are welcome to shop from his ready to take home collection. However, he also does commission pieces. In some cases customers will bring in a piece and ask him to steampunk it. Other times a customer may ask for him to create a clock, not sure how it will look like exactly but assured that it will function and fit the steampunk style. “If they don’t like it at the end, they don’t have to pay for it,” said Holder. Throughout his work, Holder uses a lot of large gears out of clocks. “I use a lot of watch pieces, but I never take anything out of a working clock.” He believes that the idea behind steampunk is to make use of sources that are no longer functioning. When it comes to shopping for steampunk furniture, Holder shared a few tips. It’s important to look out for quality pieces that do not feature any plastic parts. If you want quality steampunk pieces look for real metal and wood, he said. If you are feeling creative and want to try working on your own steampunk DIY project, don’t think of what it will look like when you start. “The only thing you need to know is what it is going to be,” said Holder. You should also be prepared to have a lot of parts to work with. “Don’t buy overpriced parts from eBay. Go out and pick the stuff yourself from salvage places,” he added. Truly inspired by the genre, Holder believes that steampunk pieces can fit well within a variety of decorating styles. “You really have to check out the pieces inspired by this genre, because if you haven’t you’re missing so much,” said Holder. Next time you’re looking for that one of a kind piece, consider supporting these local businesses or getting creative with a DIY project of your own.

Located in the heart of downtown Midland, Ciboulette et Cie is one delicious find. From gourmet groceries, tempting bakery goods and dairy products — to fresh salads, sandwiches and prepared meals — this local foodie haunt is worth checking out. “It’s a food gallery,” says 33-year-old chef/owner André Sanche. “We showcase quality products from local producers and farmers, and we transform them into scrumptious dishes that you can enjoy here, or at home.” Recently, this GoodLife reporter caught up with the busy chef to chat about his ever-popular Ciboulette et Cie. Over coffee and scones, he dished about everything from the shop’s rapid growth and customer feedback, to why he supports local food, small businesses and the community. Ciboulette et Cie means Chive and Company in English, correct? André Sanche: That’s right! It’s funny because people come to me with the weirdest translations [laughs]. In a nutshell, the name represents my Francophone roots along with a culinary twist. My friends helped me come up with the name. Ciboulette was the name of a character from a Franco-Ontarian play called Zone that we all read as kids.
Four years ago, you opened a tiny 600-square foot-store at this location. Today, it occupies 2400 square feet. Why the rapid expansion? AS: Most of the changes have been organic based on customer demand and feedback. We started as a small take home food shop specializing in sandwiches, fresh and frozen prepared take-out meals, soups, cheeses and a few gourmet items. Within six months, we added a pastry chef, tables, lunch service and more square footage. Today, we employ a full-time pastry chef with an assistant, have seats for 28, turn 60 to 70 covers for lunch, employ about 16 people (half of which are full-time) and have an expanded take-out and grocery department. After high school, I attended Ottawa University and received a degree in interpersonal communication. After various jobs, I became tired of working at a desk and went to chef’s school at age 24. Truth is, I had always planned on going to culinary school after high school, but was persuaded to take the university route by guidance counsellors. After my chef’s training, I worked in various kitchens and culinary firms in Ottawa. Then I decided, if I was going to work this hard I was going to work for myself! What led you to Midland? AS: My ex-wife is from the area, so through love and loss I ended up in Midland. But to be honest, Midland has become home to me over the past four years and I wouldn’t want it any other way. People from the community have taken me in with arms wide open. I truly love this area. Ciboulette et Cie is located in a beautifully restored century building. Tell me about the renovation process. AS: The building dates back to 1914. Over the years, it was home to several businesses and a few banks. When I first toured this place, it was nothing like it is now. It was covered in old carpeting and tiles, had salmon coloured walls and mirrors from floor to ceiling. Even the original hammered tin roof was hidden underneath a

• i n t h e kitc h e n • Ciboulette et Cie SPRING ASPARAGUS, QUINOA & FETA HAND PIES This yummy recipe is courtesy of André Sanche of Ciboulette et Cie. “This is a new item for us,” says Sanche. “We can’t wait to showcase it for the spring asparagus season.” 1 lb (500 grams) asparagus, ends trimmed off 1/8 tsp sea salt Good grind of black pepper 3 Tbsps extra virgin oil 1 Tbsp balsamic vinegar 1 tsp chopped fresh thyme 1 Tbsp unsalted butter 1 small red onion, peeled & minced 1 clove garlic, minced 1 cup shredded kale 1/2 cup quinoa, cooked & rinsed 4 ounces (112 grams) feta cheese, diced in 1/4-inch cubes 3 sheets (8x14-inch) puff pastry 1 egg, beaten (for egg wash)
SPRING ASPARAGUS, QUINOA & FETA HAND PIES
PREPARATION: For the filling: 1. Preheat oven to 400F degrees. Toss the asparagus with the salt, pepper, oil, balsamic vinegar and thyme. Place the asparagus in a single layer on a parchment-lined baking sheet. Roast asparagus for 6 minutes and remove from oven. When cool, cut the asparagus into 2-inch lengths. 2. In a sauté pan heat the butter and add the onion, garlic and kale. Cook over medium heat for five minutes, and transfer to a clean bowl; combine with the asparagus, quinoa and feta cheese and mix together. To assemble: 3. Unfold 1 pastry sheet on a lightly floured surface. Cut the puff pastry into 6, 6-inch squares, brush edges with egg wash. Repeat with the remaining pastry sheet. Place a mound (about a 1/2 cup) of filling on the middle of each square. Pulling the edges toward the centre, fold the pastry so the package resembles a small volcano. Brush the edges of the pastries with the egg wash. 4. Transfer the pastries to a parchment-lined baking sheet, and place in a 400F oven. 5. Bake for 10 minutes, rotate the tray, and bake for a further 10 minutes or until golden brown. 6. Remove from oven and serve warm. Makes 6.

AS: We were going for a clean, fresh, yet rustic look. The building has a story, so we wanted the decor to have a story, as well. All of the wood used for the tables, benches and shelving is reclaimed from the area. White tile and various chalkboards help to create a bright and open space. What three items should I leave with today? AS: Some local milk because it’s phenomenal. We carry two local milks, one from Sheldon Creek and one from Miller’s Dairy. Secondly, you need a bottle of Bruce’s Catsup. Bruce is one of our team members and he makes the best catsup in the world. Thirdly, one of our cakes because our pastry chef Jennifer McConnell does amazing work, and it doesn’t hurt that we only use 100% butter in everything we do! What’s your cooking philosophy? AS: As local as possible. For me, local trans-

AS: It’s a three-tiered focus — local food, small business and community. They’re all so closely linked, with one supporting the other. By shopping locally and using local produce and products we are supporting regional small businesses, helping them to grow and keeping money in the community. I’m also a firm believer in helping our community by supporting local charities. Where do you find culinary inspiration? AS: I find it locally. Many farmers show up at my doorstep with fresh produce, which motivates me to turn it into innovative dishes. Furthermore, when you live in a smaller community, it’s important to keep on top of the trends. I’m constantly in the bigger cities checking things out, and keep a very close eye on what’s happening in San Francisco and Portland.
You offer cooking classes? AS: We have various classes five or six times a month, and people seem to love them. We teach both sweet and savoury, so topics cover anything from spaghetti making 101 to therapeutic bread making. Classes cost about $65 each, and are listed on our website.

Do you cater? AS: We do anything from dinners for six to weddings for 165 people. We also offer healthy lunch and breakfast boxes for corporate catering. Beyond your own place, what’s your favourite foodie destination? AS: My two favourite restaurants are both in Ottawa because I lived there for ten years and have many chef friends there. Murray StreetKitchen (murraystreet.ca) which is co-owned by chef Steve Mitton, is an amazing place. The Wellington Gastropub (thewellingtongastropub.com) led by chef/owner Chris Deraiche is also phenomenal. Locally, the Explorers Cafe (theexplorerscafe.com) in Midland offers great food and is always my go-to.

esigning your own kitchen can be a rewarding endeavour with its fair share of challenges, and that’s where Lisa LePage of RONA Midland’s Kitchen Design Centre can lend a hand. Having worked as a kitchen designer for 17 years, Lisa has the expertise and passion to successfully guide clients from a floor plan all the way to their dream kitchen. “To have a custom kitchen there’s a lot of work that needs to go into

Generally people come in with dimensions or a floor plan and there are a set of questions — we talk about if it’s a renovation or is it new construction? Are we doing any structural work, moving walls or changing windows?” said Lisa, who was trained as an architectural technologist at Fanshawe College in London, Ont. and completed further training with Ontario’s Ministry of Municipal Affairs and Housing. She also completed certification with the National Kitchen and Bathroom Association (NKBA) and became a Certified Kitchen Designer (CKD) in 2006. Lisa began her position as a CKD at RONA Midland in September, 2013. RONA Midland partner Mike Argue and Lisa worked together to upgrade the existing kitchen centre into a more interactive, customeroriented, start-to-finish kitchen design headquarters which was unveiled in February of this year. “He wanted to get away from the big box persona that comes dealing with kitchen departments in big box stores,” Lisa explained. “With my experience of running my own business for several years and being a Certified Kitchen Designer with the NKBA, we felt confident that we could both achieve the plan that we had for the new design centre.” That confidence was well-founded, with successful projects beginning right away. Lisa’s first kitchen she advised on at RONA was kitchen renovation project that incorporated olive-green-themed Kraftmaid Cabinetry, which she greatly enjoyed working on. Since that time she’s had the opportunity to help numerous kitchen hopefuls requesting everything from basic kitchens in rental units, to top-of-the-line kitchens in their forever home. For Lisa, designing a kitchen is all about envisioning the space and how it will best be used and enjoyed. “It’s really getting to know the
space, to the travel paths to door entrances within the kitchen,” she added. RONA’s Kitchen Design Centre works with customers on all aspects of their dream kitchen, on everything from the optimal use of space in cabinetry, wall colour, floor material and colour, countertop materials and styles and appliance choices. “We provide them with samples of the cabinet door style and colour, the floor material, the countertop, their paint colour on the wall, the hardware,” Lisa said. “They have little elements they can put all together and see the finished palette of colours and style with these pieces along with their three-dimensional drawings that we produce.” Working with Lisa starts with a meeting in the showroom to start the design process. The length of time needed on the designing the space and elements is different for each individual project, depending on the scope of the project for each design. The meeting process will include an in-home consultation, a site visit for measurements, site visits as construction progresses and a walkthrough upon completion. “It doesn’t matter whether you’re spending $5,000 or $95,000,” Lisa said. “We want to offer you the same design service. The same professional, experienced, knowledgeable person is going to deal with you and treat everybody the same. It’s about somebody coming in and just feeling like they’re in confident and very capable hands.” The Kitchen Design Centre’s regular hours are from Monday to Friday 8 a.m. to 5:30 p.m. and Saturday 9 a.m. to 1 p.m. Lisa is also available to meet customers after-hours at their location for consultation. or more than a decade, chef Randy Feltis has been a mainstay on Barrie’s restaurant scene. Starting with Oscar’s, a bistro he opened in 1999 at the age of 24, the local entrepreneur has become the owner/operator of two PIE restaurants (which he co-owns with Craig Russell) and the Farmhouse (which he co-owns with his wife Sarah). “It’s a balancing act, but I love the challenge,” admits the 39-year-old proprietor with a smile. Recently, this GoodLife reporter caught up with the busy multi-tasker to dish about the ever-popular PIE Wood Fired Pizza Joint and PIE 2. Conversation topics also covered his recent purchase of Barrielicious, his CityLine promotion (he’s now one of the three chefs) and PIE’s first franchise in Pickering. »

GL: What’s the secret to making really good pizza? RF: There are two secrets. A wood-fired oven is key. Once you’ve had wood-fired pizza, you’ll never want to taste anything else. Secondly, it’s the dough. To get our dough just right, we brought over pizza chefs from Italy. Over several months, these Italian dough experts showed us the tricks of the trade. GoodLife: After just eating my way through Italy, I’m happy to tell you that PIE cooks up a mean pizza. Randy Feltis: Thanks! To be honest, many people tell us our pizza is pretty darn good. Given its price point, quality and consistency, I think our pizza is world class. Good food aside, our real secret is fun. GL: Can you expand? RF: There’s nothing fancy about PIE. We beat out the fancy. We don’t want to intimidate anyone, that’s why it’s super casual and family focused. People love the music videos, our casual servers and the crazy eating events. For us, it’s all about having fun and projecting great energy. GL: The formula is working. RF: We are definitely doing something right. It was one thing to make the first PIE profitable when all four restaurants before us in this location failed. But when success repeated itself with our second PIE (located 10 minutes away on Barrie’s waterfront), we began thinking we were onto something. With our track record, we thought why not open up a location in Pickering? GL: Had you planned on franchising? RF: To be brutally honest, it was a bit of a fluke. The owner, James Picton, is from Barrie and he approached us. He had space in Pickering and wanted to know if we would open a PIE there. Craig and I have enough on our plates so we opted for the franchise route. That’s how it went down. We have a lot of faith in James because he’s already a successful restaurant guy who owns Pickering’s Bear and Firkin.
GL: How long does it take to cook a pizza? RF: Ninety seconds. It’s quick because the oven burns at 850 F. The reason we are open 364 days a year is because the oven can’t get cold. If it gets cold, it takes almost a day to get it back up to temperature. GL: What’s your most popular pizza? RF: Hands down it’s pepperoni. All the pizzas sell really well and they are obviously our strength. Fifty per cent of our entire sales (including bar sales) are from pizza. We also offer great salads, amazing appetizers, fantastic pastas, along with chicken and fish dishes. GL: What three-course meal would you order for me? RF: Let’s go with a sharing menu. I’d start with the meatball garlic bread sliders (with tomato sauce, mozzarella and bacon) because they are awesome. For pizza, I’d suggest my wife Sar-

For dessert, I’d go with the sweet balls (deep fried pizza dough topped with icing sugar, cinnamon and dulce de leche.) GL: What’s your food philosophy? RF: It’s pretty simple. Zero processed and make everything in-house. GL: What led you and Craig into the pizza business? RF: My interest in pizza making was sparked after graduating from chef’s school. I was apprenticing at this high-end Italian restaurant in Yorkville and they had a wood-fired pizza oven. Since then, the idea of owning a restaurant with a wood-fired oven stuck with me. Craig, who has been a good friend for years, supported the idea and we tossed around the concept for over a decade. Eventually, Craig came across some available space and we decided to open up that pizza joint we had always talked about.

GL: PIE recently celebrated four years in business with $4 pies for four days. How did that go over? RF: It was crazy! People loved it! We did it because we wanted to thank our customers and Barrie for being so loyal to us. Supporting the local guy is important to the success of our business and we really appreciate it. GL: I understand you bought back Barrielicious? RF: We had started “Licious” in Barrie and London in 2007, but sold them two years ago. I wanted them back because the festival was starting to decline. We’ve got things back on track and the recent Barrrielicious was intensely successful. GL: How’s business at the Farmhouse? RF: Great, it’s doing really well. We opened it a year ago and, in the beginning, there were definitely some growing pains. I’d say it took about six months for the Farmhouse to feel comfortable in its own skin. We’ve worked hard to make it successful and now it has a great identity.

GL: How do you divide your time between three restaurants? RF: After I drop off Cash (three-year-old son) at school, I make the rounds at each location. I spend a few hours at each restaurant to balance out my day. GL: Let’s hear about PIE’s fifth-annual pizza eating competition. RF: We are doing it on the Sunday of Kempenfest weekend (Aug. 3). To qualify, you have to eat a Kobi (a pizza with cheese and tomato sauce) in less than 80 seconds. People aren’t expected to win because the reigning champion, Takeru Kobayashi, ate just shy of 11 pizzas in 12 minutes last year. First place earns $3,000, plus a personal parking spot; second place earns $1,000 and third place gets $500. The top woman takes home $500. GL: What led PIE into the bizarre world of eating competitions? RF: It’s fun! And it’s the world’s best gorilla marketing. Our event has been covered by the Toronto Sun, the Toronto Star, local news outlets, the Weather Network, TSN, CBC and so on. You can’t buy that kind of publicity. Craig and I came up with the idea one day when we were just sitting at the bar. We had heard Takeru Kobayashi didn’t sign a MLE (Major League Eating) contract so he was free to eat at other venues. When we approached him about hosting an event at PIE, he loved the idea.

GL: How does Kobayashi do it? RF: He says he just never feels full. It’s funny because I’ve actually spotted him eating pizza 30 minutes after competing. He will be chatting with some reporter, look down and see the pizza, and start eating it. After the show (where
GL: What do you cook at home? RF: Simple food that’s real. We just cook regular stuff, like pasta, and we’re big fans of Johnny’s Seafood. We don’t get too complicated at home — just a nice piece of fish with lemon and capers, a starch and some veggies. he eats nearly 12 pizzas), we always take him out for dinner and he will put away three or four courses. No problem. It’s just crazy because the guy only weighs about 128 pounds. GL: Do you and Craig compete? RF: Craig always enters and he doesn’t do too badly. He usually scarfs down about three pizzas. I just watch from the sidelines.
GL: Let’s talk about Cityline. RF: I just got a promotion, so now I’m one of the three (official) chefs with Massimo Capra and Jason Parsons. I took over Michael Bonacini’s spot because he moved over to CTV. It’s a huge honour to be working with these guys. GL: How do you serve folks with special dietary issues? RF: We have a gluten-free shell for pizzas. It’s the only thing that we don’t make in-house because we don’t want to cross contaminate. We also have gluten-free pasta. Vegetarians like us because we make everything to order and we have great salad options. GL: What’s your favourite food destination? RF: The Cheese Boutique (cheeseboutique.com) in Toronto (near the Kingsway) is the most wonderful place in the world. GL: Last year, PIE was featured on the Food Network’s “You Gotta Eat Here,” hosted by John Catucci. What was it like? RF: It was awesome, overwhelming and beyond crazy. I had heard about the “Catucci” bump restaurants experience after the show airs, so we wanted to be prepared for the crowds. I did my research and called about 12 different restaurant owners featured on the show to hear about their experiences. After listening to their stories, we prepared like mad to get ready. We ordered more cutlery, hired more staff, put our best people on. But when it hit, it was through

I’m sure we helped the Barrie economy that weekend [laughs]. GL: What about specials? RF: Every day, we offer a lunch special for $9. We also do large party specials (10 or more people) with set prices: $15 per person is pizza for everyone, $20 per person is pizza and salad, and $22 per person is pizza, salad, appetizers and pasta. We just keep firing out food until you tell us to stop. Also, every night after 8 p.m., you get a free pizza (with tomato sauce and cheese) when you order a 32-ounce beer. GL: What does the future hold for PIE? RF: Our goal is to keep having fun while putting out a consistent, high-quality product. More locations are also on our radar.

This delicious recipe is courtesy of chef Randy Feltis of Pie Wood-Fired Pizza Joint. Preparation time: 60 min Serves: 6-8 Tools (baking trays, food mill, mixing bowl) 6 medium Yukon gold potatoes 3 large eggs, beaten 1 cup grated Parmigiano-Reggiano cheese 1 Tbsp salt 1 Tbsp pepper 1 tsp nutmeg 1 litre all-purpose flour (sifted) 1/4 cup butter Grated Parmigiano-Reggiano cheese, for topping Chopped fresh parsley

PREPARATION: 1. Roast potatoes on baking sheet in a 350F oven until tender, remove and cool. Cut potatoes in half, remove insides and process through a food mill or ricer and place into a mixing bowl. 2. Add eggs, Parmigiano-Reggiano cheese, salt, pepper and nutmeg. Next, softly add half the flour and gently knead the dough. Slowly add the other half to make a firm dough ball. Let rest for 10 minutes. Divide the dough into 1-inch snakes and cut into nubs. Dust and let rest on baking trays. 3. Bring a large pot with water to a boil. Once the water boils, add the salt. Then turn the heat down to bring the water to a gentle simmer. Poach the gnocchi in several batches. Once the gnocchi floats and comes to the surface of the water (takes less than 2 minutes), immediately scoop it out of the water with a slotted/perforated spoon and place it in another baking sheet to prevent it from sticking together. 4. On low heat, melt 1/2 cup butter in a skillet and add the cooked gnocchi. Pan-fry the gnocchi for about 8 minutes in the hot butter until slightly browned and crisp. Transfer into a serving dish and sprinkle with a generous amount of grated Parmigiano-Reggiano cheese and chopped parsley.

Log Cabin in the woods
Once the site of an historic Muskoka hotel, Montcalm Point is now home to a traditional log cottage with upscale style.

A
t the turn of the 20th Century, Muskoka was in the bloom of what was to be a booming tourist industry. Farmers lured north by land claims promising fertile fields looked for other means of making a living when those fields proved to be full of granite outcrops and giant pine trees. Many farm families started taking in guests who ventured north to enjoy Musko-
ka’s beauty. Small hotels appeared around the big lakes as the steamships delivered more and more enthralled travellers. On Lake Muskoka, gorgeous natural points of land with stunning vistas were quickly occupied by these hotels. Walkers Hotel and Glen Echo were joined by the Montcalm Hotel, built on Montcalm Point. Business thrived during the steamboat years, but as tourists
became cottagers and cars became common, the little hotels disappeared. Today, there is no trace of the Montcalm Hotel at Montcalm Point, but the four-acre property still hosts plenty of guests, as well as family members, within the solid log walls of a luxury cottage. Patrick Brigham owned an island on Lake Muskoka when he saw the Montcalm Point property in the Walker’s Point area over 20 GoodLifeMagazine.ca | 85

Even without knowing its history, he knew the point was a very special place. “I had been looking at the property for a long time,” recalls Brigham, who shares the bungalow-style cottage with mate Deborah Fisher and his two 20-something daughters. ”It was probably the best point on the Muskoka Lakes, at least I thought it was. So, I thought it would be just spectacular to get hold of if it ever came up for sale.” Brigham decided to find out first hand if that option was in the offing. ”The owner said, ‘If you make me an offer, I’ll take it, but on the condition that I first ask all of my six children if any one of them wants to buy the property,’” says Brigham. “He did ask them and none of them wanted to buy it, probably because it was too expensive even back then. 86 | GoodLife Barrie Edition - May June 2014 ■
So, I ended up buying it.” Constructed in 1986 of Northern Ontario pine and B.C. fir logs, the 4,600-square-foot cottage, with its handcrafted, scribe-fit log joinery and warm, golden hues blends peacefully into its natural surroundings, while the professionally landscaped gardens ornament the property with billowy bursts of colour. The traditional log style was what Brigham envisioned when he first walked Montcalm Point’s impressive shoreline and saw the perfect spot to build his family’s summer home. “I wanted the cottage to look like Muskoka and to look as though it had always been there,” says Brigham. “Everything turned out as I hoped. It is really magical. When you go inside the cottage, because of the warm colours of the logs and the wood, it glows. And since the
cottage faces south, we get sun all day long.” Architect Larry Parker drew up plans for the log home that would replace an older cottage already on the point. But an existing dock, now about 60 years old, was left in place as an homage to the past. It was here that the RMS Segwun would dock to let crew unload passengers’ baggage before staff took it up to the hotel. With the design plans in place, Brigham then contacted the go-to builder in Muskoka during the 1980s: Ernie Taylor. “Ernie Taylor did the foundation and finished all the interiors and exteriors,” says Brigham of the skillful builder who figured out how to wrap the cottage around the gentle point, while incorporating the structure into its granite rock shelf. “He is a wonderful builder. Ernie Taylor is really the genius behind our cottage. He comes

A hanging rectangle of cross beams inset with small pot lights imaginatively lights the kitchen’s work area. Off of the kitchen, an intimate dining nook with a stone fireplace makes for cosy family breakfasts.

Patrick Brigham owned an island on Lake Muskoka when he saw the Montcalm Point property in the Walker’s Point area. Even without knowing its history, he knew the point was a very special place.

Flagstone paths crisscross the property, leading guests down to the dock and to the boathouse as well as back to the cottage. Granite stairways lead to the upper and lower stone terraces where friends and family can enjoy sunset views at day’s end. The boathouse, also designed by Ernie Taylor, is flanked by a deck made for parties. Including the dock, there is about 3,000 square feet of room to mingle and lounging space for up to 20 people around the bar and on a resort-style couch. For Irina Gretchanaia it’s all about colour. The Barrie artist paints real-life items and scenes, but makes them more stunning and bright by experimenting with colour. “The colour is what fascinates me. When I am looking for something to paint, it has to be something that I can work with the colour,” she said. “Flowers are my latest thing, but even if I do landscapes I always try to find the pop of colour.” Gretchanaia said you can’t really see a relation between her pieces unless they are all in a room together, then it becomes clear that colour is the link. The Russian-born artist is currently trying to make painting her full-time profession, although her day job as a counter-manager at Dior is another form of artistry. “It seems to be a natural extension for me. I paint faces. That’s why I’m good at it, playing with colours comes so natural to me.”

Gretchanaia first got into painting while studying fashion marketing at Ryerson University. She was taking art classes to improve her portfolio, when she fell in love with oil painting after seeing how easy it was to manipulate the colours. “I have done watercolours and experienced different media,” she said. “I found that oils is something that I always come back to.” Her fashion background clearly comes across in her pieces, most prominently in her flower paintings. Her flowers look like flowing fabric. “Flowers are so delicate and transparent in the light you can always see the texture and the colours that are intertwined together,” she said. “With the flowers, you start from something so small but there is such a variety of colour in one little thing it makes it so much more interesting.” Gretchanaia creates her pieces from reference photos so she can make them look more realistic. “It’s almost like painting a portrait. I would be very
comfortable to throw things on a canvas, but I always find it’s not detailed enough,” she said. But her passion for painting has become a bit of an inconvenience, especially on road trips. “My husband has a motorcycle and when we are on the road, my eyes are looking for more things to paint,” she said. “Now I’m yelling stop so I can take a photo. You never know what you’re going to see.” In the coming months, Gretchanaia is looking to take her art to a new level. She recently returned from a show in New York City. “New York was for me to step out of the box and expose myself on a bigger market,” she said. “It’s my biggest show so far. It’s for me to see where I can fit in the bigger market going international.”
Gretchanaia has been at Kempenfest in the past and has shown at the Edge Gallery in Barrie. While most of her shows have been outdoors, Gretchanaia is looking forward to working with more galleries. “The problem is that I sell work so fast, I’ve never seem to have a collection,” she said. “I work full-time so it’s hard for me to get a collection together not being a full-time artist.” Gretchanaia is hoping to make painting her full-time profession in the future. “I’d like to spend more time with it to create more, travel more and be inspired more,” she said. “Painting is what I love the most.” For more information, visit irinagretchanaia.com.

Playing with glass and light Story and photography By Jennifer Harker Sunlight streams through the windows of Linda Bennett’s studio, illuminating her stained glass and releasing bursts of colours across the space. Georgian Bay’s inspiration is mere steps from her Tiny Township studio, making it wonderfully conducive to her work: “We live in such an amazing place,” she said. Bennett lifts a new fused bowl from her industrialsized kiln. Examining it carefully, she is clearly excited by the results of her work. “I started back in the ’80s. My very first one was for my bathroom window. I took a course. Once I did one, I thought, ‘I can do that.’” She eventually launched the Glass Attic Studio, pursuing the craft as a full-time passion. The largest piece she’s ever tackled was a 48-square-foot window. “I had to build an extension on my work table for that one,” she recalled of the traditional leaded glass and copper foil piece.

For the past six years, she’s been experimenting with fusing and kiln-formed work. Sandwiching copper sheeting between layers of glass results in uniquely individual pieces. As well, Bennett creates new materials by layering coloured glass together, firing and smashing the slab, and then putting it back in the kiln to create “puddles” that can be used for jewelry or embedded into other pieces. “I’ve been playing,” she said of the versatile fuse style. “I schedule a play day once in awhile.” While she lets her creativity and imagination run rampant on her own designs, Bennett said she loves custom commissioned work. “It’s still one of my favourites to get to work with people, to take their ideas and turn them into something – especially when they don’t have a clear vision. It’s vague and I get to engage people in the process.”

tern, and the type of glass used. She recently discovered powder and frit. “It’s essentially crushed glass that lends a painterly-type effect to glass. You can layer it like paint.”

By Katherine Elphick Hankering to eat more local food? Foodland Ontario’s recipe collection is well worth checking out. From apples to zucchinis, when it comes to preparing dishes featuring in-season fresh local ingredients, I haven’t met a Foodland Ontario recipe I didn’t like. With a mandate to promote all the “good things that grow in Ontario,” Foodland Ontario serves up recipes online at www.foodlandontario.ca and through brochures distributed four times a year at various grocery stores. Culinary inspiration can also be found in its calendar, which now includes “how to” videos for each month’s recipe. Foodland Ontario commissions various professional home economists, food specialists and chefs to develop recipes for the tasty marketing program. “We provide recipe guidelines for them to follow with the focus on developing recipes featuring inseason, fresh, local ingredients,” explains public relations specialist Joan Fraser. The objective of the website and booklets is to celebrate local food and educate Ontario consumers about what’s in season, find storage and helpful tips for maximizing flavours and to help them incorporate more Ontario food into their menus. Why eat local food? “Buying Ontario food is good for you and your family, local communities and the environment,” explains Foodland Ontario manager Denise Zaborowski. “We all have a role to play in buying local. MEDITERRANEAN ASPARAGUS AND TOMATO Simple is often the best treatment, particularly when you have freshly picked Ontario asparagus. Try to buy similar sized stalks for an attractive presentation and for even cooking. This can be doubled or tripled and served at an early summer buffet or barbecue. It’s wonderful with all grilled meats. 1⁄2 tsp (2 mL) dried basil 2 tbsps (30 mL) red wine vinegar 1 tsp (5 mL) Dijon mustard 1 tsp (5 mL) liquid honey 1⁄2 tsp (2 mL) salt 1⁄4 cup (63 mL) olive oil 1 lb (454 g) Ontario asparagus 1 Ontario greenhouse tomato seeded and diced 1⁄4 cup (63 mL) Parmesan or Asiago cheese, freshly grated Fresh basil leaves optional PREPARATION: 1. In small bowl, whisk together vinegar, mustard, honey, salt, basil and pepper; slowly whisk in oil until smooth. Set aside. 2. Break asparagus. In large pot of boiling water, cook asparagus until bright green and tender-crisp, 2 to 4 minutes (depending on thickness of stalk). Drain and chill under cold water. Drain well and place in shallow dish. 3. Sprinkle tomato over asparagus. Pour vinaigrette over top and shake dish to coat. Let stand at room temperature for up to 1 hour. Garnish each serving with Parmesan and fresh basil leaves (if using). Serves 4.

CHICKEN AND MUSHROOM ENCHILADAS A delicious and simple dinner your family will love. 2 Ontario onions, chopped 2 cloves Ontario garlic, minced 2 cups (500 mL) sliced Ontario mushrooms 2 tbsps (25 mL) vegetable oil 2 tsps (10 mL) chili powder 1/2 tsp (2 mL) each dried oregano and salt 2 cups (500 mL) diced cooked Ontario chicken 2 cups (500 mL) shredded Ontario cheddar cheese 1/3 cup (75 mL) low-fat Ontario sour cream 2 cups (500 mL) mild or medium taco sauce 10 medium flour tortillas PREPARATION: 1. In large skillet, cook onions, garlic and mushrooms in oil over medium-high heat, stirring frequently, until softened, about 5 minutes. Add chili powder, oregano and salt; cook for 15 seconds. Remove from heat. Stir in chicken, 3/4 cup (175 mL) of cheese and sour cream; mix well. 2. Spread 3/4 cup (175 mL) of the taco sauce in 13 - x 9-inch (3 L) baking dish. Spread about 1/4 cup (50 mL) filling down centre of each tortilla; roll up, folding in ends. Place, seam side down, in dish. Spread remaining taco sauce over top; sprinkle with remaining cheese. (Recipe can be prepared to this point, covered and refrigerated for up to 8 hours. Let stand at room temperature for 30 minutes before baking.) 3. Cover and bake in 350°F (180°C) oven for 25 to 30 minutes or until heated through.

PREPARATION: 1. In bowl, combine strawberries, granulated sugar and cornstarch. Set aside. 2. Combine cream cheese, icing sugar and vanilla; mix well with wooden spoon until smooth. Set aside. 3. On lightly floured surface, roll each pastry sheet into 10-inch (25 cm) square (if necessary). Using 4 -inch (10 cm) round cutter, cut out 12 rounds (4 rounds from each sheet). Arrange on parchment paper-lined baking sheets. 4. In bowl, beat egg yolk with 1 tsp (5 mL) water; brush over edge of each round. Dollop heaping tea spoon of cream cheese mixture in centre of each. Top with scant tablespoon strawberry mixture. Fold in half to form half moon shape; pinch edges to seal. 5. Garnish: Lightly brush each half moon with egg wash; sprinkle with a little granulated sugar. With tip of paring knife, cut steam vents in centre of each. Bake in 375°F (190°C) oven for about 25 minutes or until golden brown. Let cool slightly on baking sheets then place on cooling racks. Sprinkle with icing sugar. Servings: 12.

At home on Roberts Bay When longtime Muskoka Realtors Bob and Marnie Clarke decided to make cottage country their home, building their own place came naturally. By Patti Vipond | Photos By Bev McMullen

ou could say that Muskoka real estate brought them together. Bob Clarke was in his early 20s when he started coming north to girlfriend Marnie’s family cottage on Mary Lake in Port Sydney. During a boat ride on Lake Vernon in 1987, the couple saw a man hammer a For Sale sign to a tree on Big Island. They asked the man about the price, and it was right. So at 24 years old, Clarke became the owner of 2,000 feet of shoreline and 50 acres of land that were later subdivided into seven lots. With the proceeds from the sale of the properties, Bob and Marnie bought their first cottage lot on the Joe River. A post and beam cottage, largely built by the new cottagers, soon followed. Since then, the Clarkes and their two daughters, Darby and Kelcie, have cottaged on the big lakes – Muskoka, Joseph and Rosseau – for over 30 years. They’ve also found cottages for clients through Bob’s Royal LePage office in Port Carling. In addition, the couple also builds and renovate cottages as Clarke Muskoka Construction and Program Management. So it was natural that when they planned two years ago to make Muskoka their full-time home that the Clarkes would design and build their own residence. Roberts Bay on central Lake Joseph was ultimately the place where both wanted to live. “I always choose a property by looking at the shoreline, seeing its shape and its features, and from the view,” says Marnie, who is a licensed real estate agent, specialize in interior decoration and home staging. “Bob looks at the property and sees where the cottage would be built. We both loved this property.” The two-year building project for the 5,500-square-foot home finished at summer’s end last year with the addition of gently rolling lawns and colourful flower beds. The exterior is clad in the Clarke’s signature traditional red, black and white colour palette that extends to the boathouse and its living quarters. Guests arrive at a wooden front door flanked by vertical screens that let air in or are enclosed with narrow glass doors designed by the Cutter Brothers in Port Carling. Inside, the home is cosy and calm thanks to a neutral colour scheme on walls, slip-covered couches, cabinetry and accent pieces. Wide GoodLifeMagazine.ca | 107

windows in the living room, kitchen/family room and dining room bring in gorgeous views of a flagstone terrace with fire pit and the lake beyond where a dock festooned with red Muskoka chairs is ready for those who want to relax. “Though it’s a large place, it doesn’t feel large,” says Marnie of the five-bedroom, fourbathroom house. “That’s what we liked about the design. It still feels cosy. When we were designing the cottage, we picked things that we liked. For instance, we felt there was no need for everyone to have a gigantic bedroom, and Bob wanted working cupolas instead of decorative ones to let light in.” Another of Bob’s design ideas was to have two master bedrooms to accommodate families who may live there in the future. “We decided to have two master bedrooms because we found that younger couples want to be on the same floor as their children,” explains Bob of the second-floor master across from two smaller bedrooms. “Later, the parents don’t want to be near their kids, so there is a master with ensuite on the main level.”
“Though it’s a large place, it doesn’t feel large,” says Marnie of the five-bedroom, four-bathroom house. “That’s what we liked about the design. It still feels cosy.

Large consignment pieces surprisingly found in Florida look right at home on Roberts Bay. An impressive armoire created from reclaimed wood and decorated inside with antique-style equestrian art looks like it came out of an old Ontario homestead, but came from the Sunshine State. “The consignment shops are everywhere down there and so much fun to go through,” says Marnie. “The huge hutch in the dining room was a find that we wanted to put somewhere fantastic and it fit in here.” In a different sense, the lower level home theatre/man cave, complete with bar and ample seating for eight people, was also a find. “This room was a mistake,” laughs Bob. “When the excavation was being done, they were supposed to stop digging at four feet since it looked like it was all rock. But, it wasn’t. All I wanted was a mechanical room, but it’s a fun spot that was done by Muskoka Home Theatre. We’ve never had a room like this before and we’re happy with it.” The fun continues upstairs in an all-purpose room over the home’s attached two-car garage with heated floor. A pinball machine from Bob’s youth and three other vintage machines wait to be played. The room is a favourite of the Clarkes’ daughters and their friends not only for the pinball action, but for stairs that lead directly to the pantry with its beverage fridge and down to the theatre room. Both parents and kids love the mutual privacy when guests are up for the weekend. “This is my favourite room of the house,” says Marnie. “It was supposed to be a games room with a pool table, but we found a couple of times the kids and their friends ended up sleeping on the couches up here. So I said to Bob that maybe we should use it as a bedroom and everything-else room.” The bathroom off of the impromptu bedroom features red accents in the floor tiles, vanity and shelving, reflecting Marnie’s love of red. Her eye for detail is expressed in all the home’s bathrooms from the hand-made animal tiles from Pratt and Larson in the girls’ bath, to the multiple moose statues in the master ensuite that she found at Chapters. The cottage is framed at its east and west ends by two floor-to-ceiling granite fireplaces, one in the living room and the other in the Muskoka

room where Marnie loves to spend time. The Muskoka room’s stone floor is heated to extend the room’s seasonal use and Weatherwall sliding panel windows quickly close over screens to shut out the cold. “The fireplace in the Muskoka room has been amazing,” says Marnie. “I love the crackle of a wood fire.” At the waterfront, the boathouse’s one-bedroom living quarters sits on a broad deck that could easily handle any summertime party. But smaller groups can dine and relax downstairs inside the boathouse. A dining table and chairs, and cushioned seating area with wet bar adjacent to three boat slips are lit naturally through two glass garage doors can be opened for indoor/outdoor leisure time. Boats are pampered with an automatic hydraulic system that raises them out of the water when not in use. But the technology does not stop at the boathouse. A system installed by Muskoka Home Theatre controls music, lights and televisions throughout the cottage and boathouse. “Everything can be run off of an iPod or iPad, or a small touch screen on the wall,” explains Bob. “When we pull up to the boathouse, we can pop the garage doors, turn on the lights and then turn on the path and cottage lights. There is also remote access. We can leave the Lake Joe Club and open the garage doors, turn on the lights and turn on the heat.” “Even I can use it and I’m not a techie at all,“ laughs Marnie. Settled into their new home and enjoying the serenity and comfort that results from a well designed layout (and from some serendipity), the Clarkes’ traditional cottage also has a classic Muskoka staple. A model of a mahogany gentleman’s racer sits atop the master bedroom dresser. “I bought it a long time ago at Winners,” smiles Marnie, “so that Bob has his wooden boat.”

In terms of locally sourced food, there’s perhaps no entrée better than fish, caught fresh from the lakes of Muskoka. Fishing in the summer is a relaxing sport with every opportunity to not only pursue the best locations as you skip across the lake, but also sunbathe in the July and August heat. Here are some quick ways to prepare your catch for a great feast. Prime time
PICKEREL NUGGETS
MUSKOKA BEER BATTERED FISH INGREDIENTS 1 cup of all-purpose flour 3 tablespoons baking powder 1 1/3 bottles of your favourite beer Fish fillets (pickerel, pike, lake trout) Oil for frying (canola or vegetable) METHOD Season fish with salt and pepper. Combine dry ingredients in bowl. Pour in beer and whisk together (lumps are okay). Dredge the fish in flour and then place in the batter (fish must be floured so batter will stick). Heat pan with oil in it to 350°F. Take fish out of batter and place in pan and fry for 3-5 mins, depending on size of fillets. Get them nice and golden brown.
TARTAR SAUCE INGREDIENTS 1/3 cup relish or 1 pickle, chopped 1 cup mayonnaise 2 ounces capers, chopped Juice of half a lemon Pepper to taste METHOD Mix all ingredients together in a bowl. You can add some pickle juice as well.
INGREDIENTS 1 pack cajun fish crisp 1 pack reg fish crisp 1 big zip lock bag 1 egg Lemon wedges ¾ bottle of beer Pickerel fillets Oil for frying (canola or vegetable) METHOD Mix fish crisp in zip lock bag. Cut pickerel up into bite-sized pieces. Add egg to beer, whisk. Add fish chunks to beer and egg let sit 5 mins, then drain off as much liquid as you can. Put chunks into zip lock bag with fish crisp and shake really well until the fish chunks are coated. Heat fryer to 350°F and fry until crispy and golden brown. Serve with fresh lemon wedges

It’s been said that the sun shines on New Zealand before anywhere else since every new day in this small, remote locale is something to cherish. And take it from me, this slogan has been evident long before director Peter Jackson opened the world’s eyes to the country’s beauty in his Oscar-winning Lord of the Rings trilogy.
By Bart Card Air New Zealand makes the trip even more appealing with three non-stop flights each week between Vancouver and Auckland. The travel time is a little over 14 hours, whereas previously the flight from Vancouver to New Zealand totalled an average of around 20 hours via LA. Now business class passengers are treated to a luxurious direct flight aboard Air New Zealand’s fleet of Boeing 777-200ERs that feature lie-flat beds, vast entertainment options and award-winning food and wine. Star Alliance partner Air Canada will also be code sharing on this service. Also this service provides a convenient one-stop route for Canadians travelling to many Australian destinations and minimizes the requirement of transiting through the U.S. Checking into the Hilton Auckland is a great way to start too as it is positioned at the end of Princes Wharf on the Auckland waterfront, offering a great view across Auckland’s inner harbour. The development is a transformation of six utilitarian Second World War vintage cargo sheds. A ferry ride followed to Waiheke Island, home to an eclectic mix of winemakers, olive growers and white-collar executives who commit to the weekly commute to downtown Auckland. What a beautiful day visiting the likes of the Mudbrick vineyard and restaurant, and Stonyridge, whose owner and winemaker Stephen White is the pioneer behind winemaking on the island. The former Round the World yachtsman is also the maker of the country’s most expensive wine, the Stonyridge Larose, which is one of the world’s top cabernet blends. An island country in the southwestern Pacific Ocean, New Zealand comprises two main land masses – the North Island, known for its beaches and the South Island and its magnificent mountains – and numerous smaller islands, most notably Stewart Island/Rakiura and the Chatham Islands. The indigenous Maori named New Zealand Aotearoa, commonly translated as The Land of the Long White Cloud. The Realm of New Zealand also includes the Cook Islands and Niue, Tokelau and the Ross Dependency. New Zealand is notable for its geographic isolation, situated about 2,000 kilometres (1,250 miles) southeast of Australia across the Tasman Sea, and its closest neighbours to the north are New Caledonia, Fiji and Tonga. Maori have a rich and dynamic culture, which captures their age-old connection with the spiritual and natural worlds. Through their whakapapa, they continue to identify with this connection by way of their mihi (greeting). They will name their maunga (mountain), their awa (river), their marae (meeting place), their waka, their iwi (tribe) and their tipuna (special ancestors) within the mihi. Te reo Maori is a living language spoken by about a quarter of the Maori population in New Zealand. Approximately half of those speakers are under 25. It is a Polynesian language similar to other Pacific languages, such as Hawaiian and Tahitian, which possesses a unique poetry and musicality. Maori is one of the two official languages in New Zealand. Much of contemporary New Zealand culture is derived from British roots. It also includes significant influences from American, Australian and Maori cultures, along with those of other European cultures and, more recently, Polynesian and Asian cultures. The music and cuisine of New Zealand are similar to that of Britain and the United States, although both have some distinct New Zealand and Pacific qualities. The locals certainly love their country but are friends of Canada as well. They tell me that our country is just as breathtaking, from Vancouver to Newfoundland and everything in between.
