I have a confession
to make. The first time I tried one of the trendy new “mainstream” ciders offered from the LCBO, I politely sipped the first half, while waiting for my host to turn their back so I could dump it down the sink. It was more than a year later, this past summer, when I was at a community event and there it was — Heritage Estate Cider. The combination of a hot summer day and my desire to support a new, locally produced product pushed me to keep an open mind and try this beverage again. What a difference. The flavor profile was clean and crisp, and I knew I needed to profile this fantastic company. Katherine takes us on a tour of several local craft cider producers, each offering a unique recipe and offered either direct or at the LCBO, just in time for fall.

eople often compliment homeowner Randy Porter on the clean lines and flawless design work his wife, Laurie, has achieved at their Oro-Medonte ranch bungalow. He grins. “She’ll tell you it’s all me. I’m the one with the ideas and, although sometimes she wonders about what I want to do, she lets me run with it.” Interior design may not be the talent one would normally associate with a man who’s had a career in law enforcement, but pigeonholing anyone is a grave mistake. People tend to be far more complex than they appear at first blush. Randy may impart an imposing presence, but the artistic streak runs deep in his family. His mother, an artist, always “fancied up homes” and the schooling was well absorbed. The Porter home is an immaculate, glistening dwelling with a decisive use of negative space. Sofas and accent chairs are leather. Tables are glass and chrome. Art is minimal. The architecture is left to stand on its own. Embellishments come in the form of the trim work: deep coffered ceilings, craftsmanstyle wainscoting (carpentry by Mark Jackson) and the addition of two pillars in the open concept great room/dining room, which are not structural elements at all, but added purely to break up any cavernous effect. The palette for the home, both inside and

The kitchen shimmers with black granite counters, Fisher Pakel appliances and wavy chrome drawer pulls. the previous owner had placed a sofa in the kitchen below the fireplace. “We thought it was weird,” says Randy. “But after a while, decided to try it. Now it’s the main hangout. We live in here.” Exiting the breakfast nook through patio doors, a long, covered veranda is where the family enjoys barbecues with friends. Equipped with motorized “Don’t Bug Me” screens (installed by Bert Balas), it’s also the favourite hangout of their 10-year-old Newfoundland Landseer, Laker, who helps keep the domain secure, along with a hightech security and camera system that is monitored 24/7. The home has four luxe bedrooms – three above grade and one below. In the main floor master, three high windows above the bed with California shutters top the wainscoting that runs three-quarters of the way up the wall. They open to allow refreshing night breezes to flow directly over the bed. This is a quiet home where you can hear the sway of the wind in the trees from the forest that

They were attempting to downsize from a Lake Simcoe waterfront property that had ballooned in size from a tiny cottage to 3,800 square feet with the three additions the couple had added. “We started looking

at properties to get ideas. We were going to build,” says Randy. “We walked in here and ended up purchasing it that day. It’s so peaceful. When you move off the water, you realize how noisy it was and how much work.” The yard and the recreation level of the new home were still blank slates, however, and where a vacuum exists, Randy targets

his attention. He began designing the pool and the recreation room. “I don’t just imagine a look,” he says. “I can actually see it completed in my mind, preconstruction.” The recipe he used for the yard was fire and water – elements that are always sure winners. A saltwater lap pool, designed by Randy and installed by Majestic Pools, is enhanced by two sheer descent waterfalls that flow out of cultured Black Rundle stonework (Owens Corning). It’s the same stonework as on the residence. Inserted in the top of the wall are two six-foot-long fire troughs that send flames licking into the air. “They throw off a tremendous amount of heat and warm the whole area.” The entire system is remotely controlled through a TP-Link System tethered to an Apple iPhone. It can even monitor chemical levels in the pool. Under-wall landscape lighting was added for additional atmosphere and 24-by-30inch travertine slab decking completes the hardscaping. To the right of the pool, a cabana with a bar and change room adds functionality. On the far side of the pool, a terrace was built with an outdoor woodburning fireplace that has a bit of the Inca Empire look to it. Here, swimmers can relax and enjoy forest views where deer roam. The brilliance of placing the fireplace to the rear of the pool is that guests are warmed from behind by the fire troughs and from the front by the fireplace, thus erasing any chilly spots. But a small section of the yard still remained bare and Randy saw the opportunity for green space that wouldn’t require lawn cutting. Artificial turf now surrounds a pleasant three-hole putting green, making the yard an adult recreational wonderland. Next to the yard, Randy took on the driveway and built a mammoth (26-feet wide by 46-feet deep) RV garage with 18foot ceilings to house the couple’s 37-foot Holiday Rambler Vacationer. (Superior Maibec siding on the structure also matches the residence.) But it was in the recreation room that Randy really unleashed his creative juices and stretched the home’s square footage to 5,400. The “party room” is the locale for the family’s renowned karaoke soirees, equipped with a 70- TV screen and Bose

surround sound system. Lush, 50-ounce pile shag rug here rests atop heated floors. Flush wall-mounted fireplace with heatilator adds more warmth and red leather bar stools acquired from Kings Distributing add a punch of colour. Randy, who finished much of the work, also added a full kitchen, spacious bedroom and en suite with Bianca Carrara marble countertop and separate shower so the space could double as an in-law suite. This level has a roomy living room and various other sitting rooms to wander and slouch in. There’s also a gym with rubberized floor. The kitchen appliances are built in cabinetry, including wine fridge, oven, microwave, dishwasher and a full-sized refrigerator. The stainless steel and glass tile backsplash continues the home’s monochromatic colour theme. Now that the home’s square footage has suddenly risen 1,600 square feet above what
they previously downsized from, Randy has decided to give downsizing another go. This time, however, he and his partner are embracing extreme downsizing by moving into only 400 square feet. Laurie is retiring this year and Randy post-retirement business, Traffic Ticket Experts, is on solid footing, so the couple has decided to sell the Windfield property, put belongings in storage and hit the road in their luxury Vacationer, a vehicle they love. Their road trip will be a leisurely, yearlong journey across North America – a remarkable escapade sure to inspire future building plans. xceptional is the only fitting word to describe the sprawling Innisfil country estate of Dale and Brenda Clair. Of course, when the man who built it was also responsible for the construction of Great Wolf Lodge, Blue Mountain Village and Cobble Beach, one would expect nothing less. The residence, tucked behind an alarmed security gate, boasts 6,300 square feet of luxurious living space with four bedrooms, five bathrooms, gourmet kitchen and a lofted detached garage on 25 acres of prime Southern Ontario farmland. Dale Clair of KD Clair Western Incorporated is a master framer and he tricked out his own

seating area with two club chairs. During large parties, Dale says there is always at least one couple who drifts up there for quieter conversation. The games room on the lower level of the residence is full of toys including fussball, shuffleboard and pool tables and a children’s playroom for the grandkids. Storage is secreted behind barn doors here next to an additional guest bedroom and there’s even a gift-wrapping room on this level. But the pleasures don’t stop there. The residence’s private projected screening room is accessed directly down the hall from the games room, despite the fact that the theatre was built under the home’s detached garage. Dale had a passageway to the cinema tunnelled underground below the breezeway so that any noise from the surround sound system would not disturb those in the residence proper. Movie posters line the beautifully trimmed passage en route and theatergoers enjoy the full effect, passing through a velvet rope to a concession stand where they can stock up on goodies and popcorn before sinking into deep lounges to enjoy an Apple TV-supported flick. The impressive components of the cinema’s equipment are hidden behind a panelled door in the wall of the theatre in a separate enclosure to maintain a clean look and eliminate any noise from the machinery. Were this not enough fun, there’s plenty of room to roam and play on the lawns outside, including inside a kooky tree house built for the youngsters. The playhouse is entered via a topsy-turvy rope bridge reminiscent of CNE fun houses. A zip line runs off the side to carry children back down to ground level. Hidden discreetly beyond the tree line and the playhouse is the workshop, accessed by either a separate driveway or by foot on a leisurely stroll along the property’s trails. Cross over a serene bridge rising above a seasonable creek bed (constructed by Dale) and you are struck by the tremendous size of the 10,000-square-foot modern heated barn ahead. With a spacious woodworking shop, four garage bays and two hydraulic car lifts (for Dale’s passion of maintaining old cars), it is the man cave of all man caves. But then again, this is just the sort of outbuilding required for a couple with a passion to build.

t’s a catchy lyric from the Broadway musical Fiddler On the Roof, and a daily refrain for homeowners Florian and Sherry Lenders, who insist that the colours, painted across the sky at their Georgian Bay property was the determining factor in settling there permanently. “We are on a point and have so many pictures of the sunsets we’ve lost count. You just can’t capture the beauty of it anymore,” says Sherry Lenders, who rounds out her evenings in a fire lit gazebo on their street fittingly named Sunset Boulevard. The land was the original spot of the family’s summer cottage but when Florian sold his business to retire early, he razed the structure to the ground, deciding that instead of downsizing, they were super sizing. Fans of Jon Hutman’s production design for the film Something’s Gotta Give will draw comparisons between the Lenders’ new Blue Mountains residence and the hit movie’s delicious Southampton beach house. A white and ebony staircase rises to a balcony that overlooks the great room, with expansive views to the water through floor to ceiling windows. Plush blue and white club seating (Elizabeth Interiors) and cozy leather sofas (Stoney Creek Furniture) await below before an impressive fireplace. Although the span of this residence is just slightly lesser than the film’s luxurious Long Island beach house, it possesses the GoodLifeMagazine.ca | 33

same spacious casual elegance that has made Hutman’s design a mainstay for builders and decorators for over a decade. There is nothing cluttered or confining about this home. There is room to move. Steve Garrow of Dezign 2000 was the builder. During the design phase, he presented the Lenders with a basic plan of what he called “boxes” for the couple to mull over. “Steve had a lot of great ideas about ceilings,” says Florian. But the couple had an entirely different style in mind. “We’d already done extensive landscaping with thick ropes and posts lining the path to the shoreline and we wanted a post and beam look to the house. A lot of glass looking out to the lake with a nautical theme.” The Lenders went through the existing plan, room by room, picking through every possible detail from

flooring to cabinetry to windows. They moved some things around and added a bedroom. This was the moment to get every single thing they had ever dreamed of. For Sherry, a porch swing would be the defining statement for the residence, making it “inviting and relaxing.” “She’s a big fan of To Kill A Mockingbird,” laughs Florian. “She always said, ‘when we do a complete build, I’m getting a swing on the front porch.’” After about four or five different sets of plans, the steadfast builder finally landed on the right fit. Rockwood Tree Farm & Timber Frame Homes was brought in to do the post and beam work with the exposed trusses the Lenders loved. The effect of this attention to detail by the owners

It doesn’t feel enclosed.” “The barn door gear also breaks up that massive wall,” adds Florian. “It turned out even better than I imagined in my head.”

The Lenders insisted that they reflect the talents of local artisans in the region.
The primary living area on the main floor is open concept with all three rooms (kitchen, great room and dining room) connected. A steel support beam was required to bear the load. But the Lenders decided just a hint of a division between the great room and the kitchen’s working area would better define the spaces. A doubled-sided glass-door cabinet was the answer. Custom painted to achieve a distressed look with mahogany undertones and an ebony finish; it is a purposeful piece of furniture. On the great room side, the cabinet serves as a bookshelf. On the kitchen’s side, it accommodates wine racks and Florian’s extensive rum collection. The arch connector between the cabinetry incorporates an inlay of a compass at his request. “They did a spectacular job,” praises Florian. For Sherry, a plate rack was essential to display her collection of serving dishes – a design element also found in Jon Hutman’s wonderful production design. But for the Lenders’ layout it was inventively used to separate the pantry from the kitchen proper. The kitchen island countertop is constructed of mixed natural media. Leathered granite covers the wet food prep side and live edge sycamore is on the dining bar side – a real attention-grabber. The combination was inspired by a design found on the Houzz website. “We spent a lot of time researching and looking through design websites to get ideas,” says Sherry. The Lenders handpicked their slab of sycamore from the Tree Green Team in Collingwood, a group that transforms salvaged trees into handcrafted furnishings. Then, Exquisite Wood Designs, who constructed all the cabinetry in the home, laser cut the sycamore so the granite portion of the countertop would match the wood perfectly. It was sent back to Tree Green Team for finishing before the final assembly. A black granite prep sink in the island balances the whole composition. “We wanted to introduce a lot of textures into the house,” says Florian. The circular dining table is zinc-topped with destroyed leather chairs (Restoration Hardware) for seating. “We also brought in sea grass and wicker,” says Sherry. “It’s in the kitchen and the living room. same, to make it look like it matches.” “It brings consistency throughout the house,” agrees Sherry.” For the kitchen, they chose a magnificent hammered copper range hood – the Regal model from Copper Kitchen Specialists. Then complemented with striking Prismatic Glass copper pendants from Restoration Hardware and finished the triptych with copper faucets. The copper theme also carries through to teapots and serving dishes and to a retro fire extinguisher in the great room. Outside the dining room window, copper exterior lighting is also visible above the BBQ. Copper is found yet again in the main floor master bath where a show – stopping claw – foot tub with hand hammered nickel interior from Signature Hardware, creates a dazzling focal point. “It’s gorgeous,” says Sherry. “When you get in it, the water doesn’t cool down. I’m tall and I can lie in that tub and be totally immersed.” Materials used in the exterior were again installed in multiples and deliberately chosen to blend in naturally with the environment. The brickwork is a rich Eldorado Stone in Shadow Rock shade, which is dry laid, a technique of masonry craftsmanship where the stone is cemented in without grout, achieving the textural depth of stacked stone. This stonework repeats again on the great room’s fireplace, exterior planters and on the privacy wall on the deck, which was specially built with eight by eight beams, then framed out and insulated with soundproofing material to reduce noise from the adjacent residence. For interior finishes, the Lenders insisted that they reflect the talents of local artisans in the region. Georgian Design in Collingwood did all the tile work and flooring (beautiful Douglas Fir.) Oasis North from Thornbury handled the landscaping, deck and gazebo. Artwork was acquired from nearby Clarksburg. “It’s important to bring the community into your home,” says Florian. “When you have this kind of talent in your neighbourhood, you must support them.”

t’s no secret that Ontario craft cider production is on the rise. In fact, according to the Ontario Cider Association, cider (including imported) is the fastest growing category in the LCBO. Often attached to wineries, these craft cideries have become a burgeoning business. Locally, there are several craft cideries worth visiting. One has even popped up in Barrie. On that note, let’s raise a glass to local cider.

While a handful of local producers have been bottling hard ciders made from local apples and pears in the Collingwood area for the past decade or so, Heritage Estate Winery and Cidery is the first one with a Barrie address. So how does one get into the craft cider and winery game? “It all started out with our love of wine,” explains Peter, who owns and operates the orchard and vineyard with his wife, Jocelyn. Heritage Estate Winery and Cidery is located just south of Highway 11 on Penetanguishene Road. a cockapoo named Oliver – lounge nearby in the summer heat. “The original plan was to buy an existing winery, but when we realized that would be an expensive undertaking, we decided to look to our own property,” explains Peter, an engineering technologist with a business background in renewable energy. “We love this area. It’s home — in fact my family first settled in this township in the 1850s.” Jocelyn, who also works as a physiotherapist, adds: “Our

(existing) farmland already had tons of wild grapes, so we thought well, if they can grow here, why can’t other vines?” With the decision made, the couple started sowing the seeds of their boutique beverage business in 2014. Over the past two years, 17,300 grapevines have been planted, and 1,250 fruit trees (1,000 apple and 250 pear) have taken root. The farm is also home to a two-and-half-acre heirloom apple orchard, and a century farmhouse. The family focused business opened to the public this past July. The fruits of their labour have paid off and this summer Heritage Estate Winery and Cidery is now producing two boutique apple wines and two artisanal ciders, Dragon’s Gold and Eden’s Apples. “Dragon’s Gold is off-dry, has a light gold colour and has notes of caramel apples, while Eden’s Apples has citrus and floral notes and a sweeter finish,” explains Peter. “But even though Eden’s Apples is sweeter, it still has only half the sugar content of most larger commercial ciders.” Both ciders are only available in cans. “The imagery on the products is inspired by (the HBO hit series) Game of Thrones because Peter just loves that show,” explains Jocelyn. Both ciders are made with 100-percent Ontario apples and feature no additives or preservatives. And the apples for the ciders and wines will be processed on-site. “To process your own apples is very expensive, and not all cideries do it,” explains Peter, who attended Peter Mitchell’s Cider Academy at Cornell. “But we have invested a lot of money into our equipment and will be processing the apples on-site.” The local business is expecting to produce 20,000 litres of cider this year and 100,000 to 200,000 litres in 2017. Once a popular drink in North America, with farmers utilizing the apples on their farmland to make hard cider, the tasty beverage virtually vanished from the North American landscape during Prohibition. Even when Prohibition ended, the beer industry took over and cider never recovered, until recently. Today, cider is making a comeback and is the fastest–growing category of alcoholic beverages on both sides of the border … by a mile, according to the Ontario Cider Association (see Ontario Cider Association

Why is cider so popular? “People are rediscovering cider for obvious reasons,” muses Peter. “It’s delicious, refreshing, more thirst quenching than beer, gluten-free and has about 30-per-cent less calories than beer.” As for the apple wine? “It’s beautiful,” says Peter. “We make both a still and a sparkling apple wine.” The difference between cider and apple wine is as follows: if it’s below 7-per-cent alcohol it’s considered cider. Above 7-percent alcohol is classified as wine. Apple wine production is expected to be about 2,000 litres this year, with grape wine somewhere between 5,000 and 10,000 litres. While the cider business is getting off the ground first, Peter says Heritage Estates is both a cidery and winery. “We’ve got lots of great wines planned for the future,” he explains. On the white wine front, grape varieties include Vidal, Geisenheim, New York Muscat, Osceola Muscat and Frontenac Gris. For red wines, the grape varieties are Baco Noir, Geneva Red, Lucy Kulmann and Marquette. Vanessa McKean, from the Town of Blue Mountains, is the resident winemaker. So far, the business seems to be chugging along nicely. “The vineyard is taking hold, and we are really enjoying ourselves,” says Peter. Their biggest challenge is unpredictable weather. “A late spring frost is our biggest enemy.” The couple also credits its success to the tremendous support of friends, family, vendors and contractors. They have big plans for the future. Along with increasing production levels, a renovation of the existing farmhouse is in the works. “Our goal is to turn it into some kind of an event centre,” says Jocelyn. “We want to embrace the community and invite them onto our property.” Open from Tuesday to Friday, noon to 6 p.m., Saturdays, noon to 5 p.m., and Sundays from 1 to 4 p.m. for retail sales. Supporting Ontario craft cider makes sense Not only do Ontario craft ciders taste great, craft cideries bring many benefits to all of rural Ontario from Windsor to Ottawa, Collingwood to Prince Edward County and everywhere in between. (Ontario Craft Cider Association) There are currently 202 jobs held within the 19 cideries in Ontario. That is projected to increase to 350 positions by 2018, not including an additional 220 jobs that would be created in the industry and among its suppliers. In 2008, there was one craft cidery in Ontario; in 2014, there were 19 craft cideries, with more on the way. Cider is the fastest-growing category in the LCBO, but 77 per cent of all cider sold is imported. It’s time to support local. According to the report prepared by the George Morris Centre, the Ontario cider industry will be using 10 per cent of all apples grown in the province by 2018. With projected Ontario sales of $35 million by 2018, Ontario craft ciders will bring the province $2 million in tax dollars paid to local, provincial and federal governments, not including income taxes. Total payroll including benefits would total $12 million for the cider industry and its suppliers. Ontario cider is recognized globally. Tasty things are happening at the Thornbury Village Cidery. Not only is the boutique beverage company serving up an award-winning natural cider made with 100-per-cent fresh-pressed local apples, its landmark manufacturing building is getting a makeover. Built in the mid-1880s, and then reconstructed (after a fire) in 1932 by John Mitchell of Mitchell Brand Apple Products, the historic building was one of the first large apple processing facilities in Canada. Since 2007, it has been home to the Thornbury Village Cidery. “By this fall, our goal is to have the building open for tastings,” says Danielle Giroux, vice-president of marketing for Colio Winery, which purchased the cidery earlier this year. Renovation plans also include a large onsite hospitality centre with a patio, a new production facility for its craft brewery, Thornbury Craft Brewery, and a retail shop. Up until now, the facility wasn’t open to the public.
Thornbury Premium Cider is the flagship product of Thornbury Village Cidery. “Our cider is carefully hand-crafted and each bottle contains about five local apples,” she explains. “Using the finest apples that the local orchards have to offer, it’s an easy drinking, light, crisp and refreshing cider. It has a very dry and pure taste and it’s not too sweet.” The cider pairs well with various foods, but is especially great with chicken, salmon, seafood, pork and various cheeses, she explains. This fall, Thornbury Village Cidery will release a spiced apple cider and towards the holidays, a cranberry apple cider will be available. Thornbury Village Cidery will be open to the public this fall (timing will depend on the renovation schedule) for tastings. See website or call for details. Depending upon the time of year, five to six ciders are on offer, ranging from dry to semisweet. Flavour varieties include apple, grape-apple-pear, pear, raspberry-apple and more. The most popular cider is 66 Pick Up. “We’ve won a few golds with it at international cider competitions,” quietly boasts Fischer. Why cider? “Hard cider is the hottest market going right now,” he explains. “The market is growing about 60 to 70-per-cent per year right now, eclipsing both the wine and craft brewing industry in terms of growth.” Along with daily complimentary tastings, the winery can host special events for up to 35 people. long with serving up farm fresh comfort food to hungry diners, the Farmhouse Restaurant in Barrie has gotten into the wedding business. Heck, they even have an in-
house wedding officiant to marry lucky couples. “When we started doing weddings, people would constantly tell us they couldn’t find anyone to marry them,” explains chef Randy Feltis, who owns and operates the local dining establishment with his wife, Sarah Jackson. “So Sarah, who is always one step ahead, went out and became a wedding officiant. How cool is that!” To get the full scoop on the Farmhouse’s foray into the wedding market, GoodLife recently caught up with Randy and Sarah at their popular eatery overlooking Kempenfelt Bay. What kind of wedding does the Farmhouse specialize in? Randy: Since we’re located in a historic red brick century building, the venue is perfect for relaxed, non-traditional weddings with a rustic atmosphere. And we don’t just do dinners, we can also do cocktail parties or brunches. Are brunch weddings popular? Sarah, along with being a restaurant owner, actress and model, you now wear the hat of wedding officiant. Let’s hear about your foray into the latter. Sarah: As Randy mentioned, it’s really hard to find wedding officiants these days. Part of the problem stems from the fact that the City of Barrie stopped offering their justice of the peace wedding services. So with all of these weddings at the Farmhouse, I decided to take it on as a business venture — a bit of a one-stop-shopping wedding experience. Turns out, officiating has turned into this amazing hobby and I love it. I got my licence last year, which allows me to do nondenominational and same sex weddings all across Ontario. It’s pretty great! The acting has helped me with the weddings — I just kind of get into a role and do it.

Sarah: We did a Farmhouse wedding with one of our chefs from PIE in Collingwood. (Randy and Sarah own and operate five PIE Wood Fired Pizza Joints with business partner, Craig Russell). I married him and his (now) wife and they had the reception upstairs. It was so nice! Since then, I’m now doing about 15 a year. It’s such an honour to share this special experience with people. Randy: She’s even marrying our friends’ Marco and Courtney from The North at their cottage this weekend (this interview took place the day before that wedding this past summer). I’ve witnessed a few weddings that Sarah has done and she’s really good at it! It’s all just so awesome. [Smiles]. Sounds like a lot of fun! Sarah: Since there are often nerves around weddings, my goal is to make it a very stressfree, easy-going type of ceremony. The ceremony can range in time from three minutes to 20 minutes, depending upon what couples want. I love officiating weddings because I’ve been able to witness so many exchanges of love, commitment and passion. I just can’t wait to do my next one!

Randy: It’s much more affordable because off-site catering can be expensive! For example, the moment you go off-site you are looking at $25 to $30 per hour for cooks and servers. We have everything here at the restaurant, so you don’t have the rental fees of glassware, plates, etc. From that standpoint, it’s easier and more affordable to have the bridal group come here. With respect to the food, it’s really nice to be able to offer high quality restaurant fare, rather than buffet or banquet style. Sarah: It’s a one-stop shopping experience because we have makeup artists on-site, and we can also bring in hairstylists, photographers, florists, specialty linens, decorators, limo drivers and so on. And I can marry the couple!

Why the name the Farmhouse? Randy: When we first opened in 2013, we decided to name the restaurant the Farmhouse because the building reminded me of my aunt and uncle’s century home. Let’s hear about your live-streaming officiant services. Sarah: I’m just working on this, but hope to have it up and running soon. If couples have friends or relatives from out-of-town who can’t make it to the wedding, I will wear a GoPro so the ceremony can be live streamed (through Skype) to people watching remotely. It’s pretty cool because no one really sees the wedding from the angle of the officiant.

Let’s chat more about the food. Randy: We can do whatever you want — from a bacon and eggs brunch to a five-course dinner. What’s really great about our menu is that guests get to decide what they want to eat, rather than one set meal. In most cases, we give our guests three choices for meals and two choices for dessert. And we have a great kids’ menu, too! Oh, and we even do late night pizza orders from PIE, which is super popular. What’s your food philosophy? Randy: It’s comfort food done well with local ingredients. Everything is made from scratch, including our hollandaise for our famous eggs Benedict. We even smoke our own meat! Everything we serve is food you’d find at a family restaurant, but we up it a notch. Our greens are grown on-site and we specialize in offering fresh and sustainable farm food, so locally grown and Canadian produced is very important to us. Along with our meat and poultry, all of our seafood and fish is Canadian farmed, including our oysters, mussels and halibut.

HOLLANDAISE SAUCE This delicious recipe courtesy of chef Randy Feltis from the Farmhouse makes the perfect topper for eggs Benedict. serves: 4 Preparation time: 5 minutes Cook time: 10 minutes special tools: stainless steel bowl and a great whisk ingreDients: 4 egg yolks 200 g butter 1/2 tsp grain mustard 10 drops fresh lemon juice Splash hot sauce Splash Worcestershire Salt and pepper PreParation: 1. Place butter in pot on medium high heat, simmer until milk solids start to toast at bottom of pot. Remove and let rest. 2. While butter is toasting, whisk yolks to soft ribbon stage in a small bowl. Slowly whisk hot butter into ribboned egg yolks. Should take a few minutes. Add salt, pepper, hot sauce, mustard, lemon juice, and Worcestershire. 3. Serve right away or cover with plastic wrap and hold for up to 30 minutes.

Sounds like the Farmhouse is a good spot for any type of event. Sarah: Absolutely! We do lots of end of life celebrations, birthday parties, anniversaries, baptisms and graduations. It’s nice because we can either open up the entire restaurant, or offer smaller private rooms. The Farmhouse is located in a building that’s just shy of 100 years old, so there is certainly lots of character in this structure. From my old history files, I discovered that it was originally built in 1907 to house the Allandale Railway YMCA, which offered overnight accommodation to the railway men awaiting their next run. Years later, it became the Crazy Fox Bistro. After sitting abandoned for several years, Mark Porter purchased it in 2007 and undertook a
$1-million renovation to restore the building to its former beauty to house Shutters restaurant, and later Beaches. Interestingly, the building is rumoured to be haunted by a cleaning lady who was murdered here years ago. Legend has it that she likes to rattle the glasses and turn the TVs off and on. Have you had any paranormal experiences yet? Randy: We have employees that swear they have seen her in the window. And once, there was a menu stuck to the window and when we pulled it off it left a skull mark — so there are little things like that. But I’ve never seen it. Truth is, I would actually love to see it. Wouldn’t you? It would be so cool to be having drinks with friends and be able to say… well, I’ve seen a ghost [laughs]. Sarah: Awhile back, I was working

It’s open 24/7 and Sarah and I always make a point of going there when we are in Miami. It’s an iconic place that does breakfast, lunch, dinner and late night and it’s busy all the time. It serves up fresh food, fresh juices and big Benedicts. The News Cafe is just that place where you eat great food and over look the water, and I want the Farmhouse to be that for Barrie. You know, that comfortable place that’s open seven days a week, where everyone is welcome. W
hen I was working on the Ontario Craft Beer Guide with my co-author, Jordan St. John, I fell in love with Ontario all over again. In particular, the parts that are a good drive away from Toronto. To be fair, it wasn’t a particularly hard sell. My family has had our cottage up in Port Sydney since the ‘90s and I have fond memories of long drives in lakeside towns, hearty meals in local diners, quiet nights on the porch and some really choice sunsets. But despite the familiarity with the region, exploring the area by its breweries allowed me to take a more lasting and informative look at the region I thought I knew and got me to rethink the role breweries play in an area’s identity. Outside of the more central cities the breweries are spaced out from each other a little more, requiring almost a full day to get to them all. When you do get to them you realize each brewery has a very different story to tell on why they started, why they brew beer, and what keeps them going. And sampling some of their beers certainly doesn’t hurt either. Here in Muskoka, chartered touring company Brew Tours helps tell those stories while sampling some of the best beers each brewery has to offer. in March of this year, Brew Tours is the brainchild of Patrick Kelly and Piers Simpkin, two folks whose love of beer and the stories behind it led the pair to take a drastic shift in careers from the music business. Their initial tour package, “The Muskoka Edition” includes stops at three of the region’s breweries; Sawdust City Brewing in Gravenhurst, Muskoka Brewery in Bracebridge, and Lake of Bays Brewing in Baysville. Also included is lunch at the famous Griffin Gastropub in Bracebridge, known as much for its excellent food and beer selection as it is for being the organizer of the annual Session Toronto and Session Muskoka beer festivals. Starting and ending at Sawdust City, Brew Tours take on the classic wine tour model, driving to each of the breweries, providing a first-class tour of each facility and setting you
up with samples of the unique and delicious beers that made them famous. However, if you want a little more of a weekend vacation (and with the warmer months leaving, I don’t blame you), the Weekend Warrior package is your best bet. It includes a Muskoka Edition tour and a weekend rental of a kegerator, complete with a keg from one of the three breweries. For a little more of a spa-cation, Brew Tours also offers the Lethal Ladies package, which is the same as above including local spa options. It should be said, though, that Muskoka isn’t the only region with brewery tours happening. The Bay Studio Tour
highlights north Simcoe artists The Bay Studio Tour, featuring local artists from the towns of Penetanguishene and Tiny Township, along with guest artists from the surrounding area, runs Oct. 1 and 2. The studios and galleries are located on or near the beautiful shores of Georgian Bay. This year’s tour features 28 artists displaying their work during the tour at various locations. ust like turkey and stuffing, the Images Studio Tour has become a Thanksgiving tradition for the Barrie and Orillia area. Every Thanksgiving local studios and artists throw open their doors to showcase masterpieces. This year’s tour runs Oct. 7 to 10 in Barrie, Horseshoe Valley and along the shores of Lake Simcoe up to Orillia. One of Ontario’s longest running studio tours, Images is an artist-run, juried event where visitors can discover art and enjoy the beautiful fall colours of Simcoe County simultaneously. Participating painter Wendy Bermingham, who has taken part in the tour since 2006, is keeping her family tradition alive by following in her father’s footsteps. “My father had also been on the tour from 1995-2004 but sadly passed away in the summer of 2005,” she said. “The studio, (Stop E) is in the family home where my mom, Marilyn Lockhart still lives. In 1995, for the tour, my dad built a beautiful gallery in the house equipped with professional lighting and picture hanging equipment which I use to display my approximately 20 to 25 paintings.” Although Simcoe County is not
Bermingham’s primary residence, most of her reference work comes from the family property “The tour has a large following with some serious collectors and has some of the top artists in Ontario,” she said. “We get almost 200 people a day for four days through our studio to appreciate and buy our work. How can you beat that?” The self-guided tour features painters, potters, sculptors, photographers, wood turners, jewellery and clothing makers. The 2016 edition will feature more than 25 artists and crafts people exhibiting their work over the four days at 19 different stops. Quilter Jennifer Houlden will be making her first appearance on the tour this year. “I know many of the artists in the tour and have had many say that I should apply so this year I took the plunge,” she said. “Being in a tour challenges me to create and explore new avenues of design for my work. Participation in the tour increases my exposure to other artists and their mediums and also the sharing of my art with others.” The Images Thanksgiving Studio Tour runs Oct. 7 to 10 from 10 a.m. to 5 p.m. daily.

n afternoon or evening at Canvas and Cabernet is as much about stopping, focusing and relaxing as it is a about music, fine wine and art. The trendy new concept provides a fun and unique night out in Barrie for those who are experienced artists and many who have never picked up a paintbrush.
It's a two-hour break from the hurried rush of life into a spa-like experience that relaxes the mind and inspires creativity that may have been locked away or unrealized until now. Music, good food and wine add to the ambiance as budding artists receive instruction and create their first painting. "It is so amazing to see the transformation when people start to paint," said business owner Cyndi Taylor. "It's very interactive and inviting for all, with people in the class learning from the experienced artists and having so much fun it's a wonderful time to talk about other things than work and responsibilities." As the unique and colourful creations take shape on canvas, Taylor says she truly enjoys watching participants transition to the environment, relax and enjoy the break from their hectic reality. “About halfway through each class, you can actually see a shift,” she said. “Voices change, laughter changes and everyone seems to let the

artists: Jennifer Houlden | quiltsbyjen.ca Q. When did you get your start in the art world? A. I’ve always been interested in creating with my hands. As a child, the creations were many and varied, using an abundance of different mediums but as an adult my passion for textiles surfaced. With inspiration from the many varied places I have lived, the prairies, the Arctic, the Australian Outback and here in Oro-Medonte, my art has grown and developed. Officially the first art show I entered was the Women’s Day International Art Show at OMAH in 2012 but unofficially I have been creating art ever since I took up quilting and textile design since 2002. Q. What is your specialty? A. My specialty is creating the illusion of movement within my designs whether the designs are landscapes, abstracts, flowers or pieced quilts. I create this illusion of movement using different construction techniques and a balance of lines, hue and value with a variety of textiles, fibres and embellishments. Q. Can you talk a little bit about your creation process? A. I am constantly viewing the world around me whether it is inanimate objects or living things. The quilt may end up being realistic or abstract – usually I know before I start the construction but sometimes

it changes midway through the design. The creation process starts with an image in my head, then drawings on paper and finally the fun part of transferring the design into fabric. This transfer into fabric can be a lot of trial and error until just the right fabrics and textiles are found and work together to create the look I want to achieve in the piece. Finally, after the fabric selection is made, the piece comes alive with thread and embellishments. Q. How do you decide on the patterns and designs in your quilts? A. Some days it is easy and other days not so easy – there are so many ideas running around in my head that I don’t think I have time in my lifetime to make them all. I see ideas for quilts everywhere I look – nature, architecture, geometric designs, even Kleenex boxes. Presently I am working on a series that is inspired by tissue boxes – yes, that’s right Kleenex boxes. Tissue boxes have become very artistic and colourful in recent years and I’ve always thought they would be great quilt designs. Now I am making quilts that are inspired from these boxes and will have the series ready for the tour. It’s a lot of fun to merge two different box designs and see what develops in my studio.

Wendy Bermingham | wendyberminghamart.ca Q. When did you get your start in the art world? A. By the time I was nine years old, I knew I was going to be an artist. I had the support of my family, as my father, the late Ron Lockhart, was an artist and an art director working in Toronto. In 1985, I graduated from the Ontario College of Art and Design and then I worked as a graphic designer for around five years. I got married, moved to Pickering, had three kids and lost myself in motherhood for about 12 years until one day in a magazine I read a quote written by Mark Twain that went like this, “Twenty years from now you will be more disappointed by the things that you didn’t do than the ones you did do.” Very wise words indeed and it made me realize I was letting my dreams of being an artist slip away. So, in September 2003, I started painting. I picked oil painting because my dad was an oil painter and so were all the masters (like Monet, my favourite artist) plus it was something I could do at home and still be there for my kids. Then, in 2014, after nine years of quietly painting in my studio and plein air, I was asked to do an interview with fellow artist Allan O’Marra. He encouraged me to get out of the studio, join art clubs and enter my work into juried art exhibitions but most importantly he told me I was good. So I signed up for art clubs and entered shows, and things just exploded after that! 84 | GoodLife Barrie Edition - September October 2016 ■
Q. Can you talk a little bit about your creation process? A. I specialize in the landscape using oils with a love of trees and their glorious shapes, textures and lines. I work on canvas and wood panels in various sizes ranging from 8-inches x 8 inches to 36 inches x 36 inches. I’m attracted to the abstract quality and design of trees and the lines and shapes created by their branches. I delight in the exploration of the texture of my subject and the texture of the paint. I search for an expression of movement using lines, squiggles and creative brushwork. I would describe my work as realism with an impressionistic twist. My future aspirations are to move to an impressionistic style with a realism twist. Q. And you do plein air painting as well? A. I’m an avid plein air painter where I paint on location, finishing each painting in about two hours. I do this at least once or twice a week depending on the weather and the season. I’ve painted all over Ontario and internationally. In early September, I will be painting up north in Killarney for four days and, in the works, is a painting trip to Lake Superior also at the end of the month.

s our nights grow cooler and we reluctantly dig out the sweaters, there are still plenty of reasons to celebrate the season that lies between swimming and skiing. It’s apple harvest time! Now in its ninth year, the Apple Pie Trail is a self-guided culinary food trail with 40 fabulous whistle stops from Creemore to Meaford that celebrate the scrumptious Ontario apple. Apple production drives much of the economy in the region and while the trail goes year-round, the fall is always the highlight because the picking season is in full swing and fall colours are at their peak. Kristin Ellis of The Blue Mountain Village Association, the group that publishes the trail’s map, says “Grey County is the most concentrated apple growing area in Canada. Each of the 40 trail stops have been thoroughly screened to ensure that vendors and farms are either cooking or working with local apples.” BY DAWN RITCHIE
40 DELICIOUS APPLE-INSPIRED TRAIL STOPS There are six major vicinities along the scenic trail route and conquering one or two towns per day may be the best way to approach this embarrassment of riches. At the southern end, there’s the Creemore & Stayner leg. A little further north brings you to the Collingwood, Craigleith and Blue Mountain Village trail. The Beaver Valley – just to the west is the heart of the applegrowing region – and not to be missed, the Clarksburg, Thornbury and Meaford destination that lies at the north end of the map and offers a winery as well. To help visitors manage all the excitement, The Blue Mountain Village Association is now working on creating daily itineraries to curate visitors’ adventures. PLANNING YOUR ITINERARY A typical day trip could start with breakfast at a café with apple pancakes before heading to an artisan’s gallery to view exhibits of paintings and jewelry with an apple orchard theme. Next, onto a cidery or honey house to acquire some Apple Cinnamon Creamed Honey for the pantry. Later browse through a local cheese shop that serves apple smoked cheddar and stir the appetite for a lunch of curried apple and ginger soup. After lunch, a pit stop at a local coffee shop for a caramel apple latte

PICK YOUR OWN Two pick-your-own orchards are cited on this culinary trail: T&K Ferri Orchards and Farmer’s Pantry, both in Clarksburg. T&K Ferri (Trail Stop #21) is an award-winning orchard known for it’s high intensity planting system. The Farmer’s Pantry (Trail Stop #22) is activity central with tons of things for the kids to do. ACTIVITIES There the family can enjoy a wagon ride and game of mini-putt in the orchard, visit a petting zoo, negotiate a rope maze and blow off steam on a sand mountain. There are candy apple dips and calf roping … and for the adults, the lovely market to peruse. But everywhere along the trail there are activities to be enjoyed. A cooking class in Creemore is at The Mad Maple Country Inn (Stop #1.) SAMPLE A NEW APPLE VARIETY But perhaps the best part of hitting the Apple Pie Trail is the opportunity to sample a vast variety of different apples from Ginger Golds, Jersey Macs and Paula Reds to Ambrosias, Tolman Sweets and Russets. Many consumers have only ever eaten four or five types of apple, because that’s all grocers carry, when in fact there are more than 7,000 types of apples grown worldwide. The Apple Pie Trail thankfully has its fair selection, including the rare and fabulous winter apple, the Red Prince, grown only in Thornbury. Exclusive to Binkley Apples, a sponsor the Apple Pie Trail, the Red Prince was brought over from Holland. No one else in Canada has the rights to grow or distribute it. This royal Red Prince is a cross between a Golden Delicious and a Jonathan, and while it is picked in the fall, it won’t ripen until January or February. It needs to be “cellared” for three months to develop its sweet and tangy flavour profile, much like a fine wine does. Pick up a Red Prince Apple Pie at the Thornbury Bakery Café, (Stop #31 on the trail.) The bakery is even generous enough to supply itsrecipe. ORGANIC APPLES Those seeking organic apples will definitely want to pull in to The AppleTop Farm (Trail Stop #23) in The Beaver Valley, open every day 9 a.m. to 5:30 p.m. (except Tuesdays) from September to October. Only seven minutes from Clarksburg (two concessions down,) AppleTop is the only certified organic grower currently on the trail. They have 27 acres of apples and sell Paula Reds, McIntosh, Galas, Empires, Cortlands, Ambrosia, Jona Golds and Northern Spy right

This is the trail stop where free (yet priceless) educational sessions on organic growing are offered. It’s a casual lesson about good stewardship of the land according to grower Helena Johnson. “People are really curious about what we do,” she says. “So we take them into the orchard and let them ask questions.” Johnson insists that apples should be handled with care. “Apples should never touch the ground and should be picked carefully. Two vineyards on the trail offer hard cider and an outstanding “Ida Red Frozen to the Core” dessert wine (Georgia Hills Vineyard: Trail Stop #20). For kids: apple slushies (Ravenna Market: #19) and ice pops (Currie’s Farm Market: #10) are to be found along the route. PIE FROM SCRATCH! Getting down to the ‘core’ ingredient of the Apple Pie Trail is of course that iconic Canadian dessert. No day trip would be complete without filling the shopping bags with

CINEPLEX GRAND OPENING Cineplex celebrated the grand opening of its newest location in Barrie. Located at 507 Cundles Road East in the new North Barrie Crossing commercial development, the new theatre is over 31,000 square feet and features over 1,550 seats and eight screens. The theatre includes the city’s first UltraAVX auditorium featuring high-back rocker seats that can be reserved in advanced, as well as two rows of D-BOX Motion Seating which move in concert with the action on screen.

HOCKEY NIGHT IN SIMCOE COUNTY Hockey Night in Simcoe County saw celebrity skaters from the NHL on the Barrie Molson Centre ice with a handful of Simcoe County residents Aug. 11. The annual charity event, organized by Ontario Progressive Conservative leader Patrick Brown, raised $203,500 for Georgian Bay General Hospital, Royal Victoria Regional Health Centre, Orillia Soldiers’ Memorial Hospital and the Barrie Colts Community Fund.
