Instinctively, we have a desire to reorganize and update our spaces, set goals, break bad habits and generally have an optimistic outlook on what the new year brings. M
ost homes do not have lake views from every room, interior décor features made from stone hand-picked in Italy, or an entire wall of back-lit, racked wine serenely overlooking a Great Room. However, there is a home on the shores of Kempenfelt Bay in Barrie that has all of these features thanks to its builder/designer. When a residential home is designed by someone who has created stunning hotel, restaurant and resort interiors, that home is bound to look something other than usual. Madison Taylor, owner of Madison Taylor Designs in Barrie, used her hospitality design background to plan and build this unique five bedroom, five bathroom home for her family. “In the hospitality industry, I had a very different design experience that included using feature walls, interesting stone and backlit displays,” says Madison, who opened her eponymous construction and design firm in 2010 after studying architectural technology to add building as well as interior design to her resume. “Those features are what I bring to a lot of my residential properties. For this house, I tried to bring in as much unique stone and displays as possible. During the build, I actually started importing my own stone slabs from Italy.” In fact, Madison made a lightning 48-hour trip to Verona to hand pick all of the stone for »

Her selections included onyx for the master bedroom ensuite’s vanity and shower, garnet speckled granite for the master bedroom, and individual pieces of agate that were bonded together with resin epoxy to create a 5-by-9-foot slab of semi-precious gemstone for the kitchen island’s counter. In the bathrooms, the designer used river rock, limestone, and a light marble called White Salt. Red onyx enlivens the stairwell. Up in the second floor loft, a desk and window sills that could have been wood were instead created from pieces of solid granite shot

She chose these particular stones for one reason – they are unique. “When you pick the stone, it guides you about picking everything else for the house,” she explains. “We picked all the types of stone we wanted for this house and decided what would go where. That’s what guided our choice of hardwood for the floors. The paint colours and the rest of the tiles and materials were wrapped around the stone, which then became the centerpiece of the house.” Madison’s plan was to create a contemporary but warm home for her family with an eye to

selling the residence in the future. The master bedroom was put on the main floor for older buyers who might want one floor living. Having a second-floor bedroom suite and another bedroom with adjacent bathroom could suit young families who wanted their kids’ bedrooms upstairs or for couples who often welcomed overnight guests. Though unique in design, the home was planned to adapt to the lifestyles of all ages and stages. When the hospitality-influenced home was finished, its interior looked exactly as Madison envisioned it. A limited colour palette allowed the abundance of Italian stone to naturally become the interior’s major feature. “We only put in a few colours, like the red in the front entry,” explains Madison, who moved into the home with her husband, young son and three lovable rescue dogs. “In the kitchen, we have some dark blue but everywhere else is fairly neutral. In the master bedroom, we did a white wall and a grey wall so that the stone would be the feature.” At the home’s entrance, Madison designed a sunken foyer with a quartz barrier step to catch blowing leaves, sand from little feet, melting snow and generally keep the outside from roving through the house. The porcelain-floored foyer opens to a welcoming Great Room with a towering stone-clad gas fireplace and light-spilling floor-to-ceiling windows stretching up to the 18-foot ceiling. To accommodate family life, the Great Room’s design included lots of room for dogs and a little boy to run before meeting furniture. The room’s contemporary double chandelier illuminates the fireplace’s quartz hearth while wall sconces and pot lights highlight the grain in the wide plank brushed white oak flooring. Like the rest of the home, this room is characterized by clean lines in both construction and furniture with a decided lack of bric-a-brac. “I like the beauty of the natural features to shine on their own, so I don’t use a lot of décor pieces or flowers in my designs,” explains Madison. “That’s how we like all of our houses to look. We like very clean lines, very simple décor but lots of features and lots of character.” Overlooking the Great Room is one of the most distinctive features of this house – the wine lounge. “When you go upstairs to the landing, you see a wall-to-wall wine display with a glass railing,” says Madison. “The wine wall is central to the house and the upper level.”

Custom millwork cabinets with backlit onyx walls and glass doors display racks of wine ready for tasting. The curved, post-free glass railing defines the wine lounge’s space and gives guests downstairs an unobstructed view of the wine wall and a comfortable space to enjoy a glass of wine together. Flanking the wine wall are two bedrooms – one a suite with private hallway, bathroom, linen closet and a Juliet balcony overlooking the water. The other bedroom is adjacent to a bathroom gilded with river rock. Beyond them, a large comfortable loft with family room sits above the home’s three car garage. The master bedroom is accessed from the Great Room through a distinctive barn board door that slides open and shut on rails. The private retreat features a sitting area with gas fireplace and lake views, two walk-in closets, oak floors and a skylight with blackout shade. The bed, designed by Madison, has live edge black walnut. The room also has, intriguingly, a builtin chalkboard. A spa-style ensuite with porcelain and river rock tile flooring has double sinks, a rain showerhead and free-standing tub with limestone ledges. In the kitchen, a large custom walnut hood with black metal details contrasts with white custom wooden cabinets fitted with black metal hardware. Four sleek silver metal pendants light the quartz counters and agate-topped island. Over the dining table, a square white chandelier illuminates evening meals. After dinner, the family can gather in the lower level theatre room to stretch out on sectionals and chairs and watch a movie. A mini servery and wine fridge also primes the space for entertaining. the tender age of 13, she worked part-time in a co-op in Orillia for a resort and hotel designer. Even then, she knew interior design was to be her career. After three years at school studying interior design and four years working for Toronto design firms, Madison decided to open her own company. But first, she learned how to build the houses she would decorate. “I’ve always cared about more than just the aesthetics of design. I like to understand how things are put together. It used to bother me when I would go on-site and talk to trades who assumed I didn’t know anything. At my company, we plan the physical house and design all the interior elements so that it functions the way the client wants. My passion is understanding how the process works from start to finish and having full control so that we can follow through the way the client planned.” After living in their unique waterfront home for two years, the family sold the house to pur-

chasers who bought it as a cottage. They also bought almost everything in the house. “We took a couple of chairs and things that were close to us and left everything else behind,” says Madison. “I sort of hoped that would happen because everything was picked specifically for that house. For the next project, we can start with a clean palette.”

A globe-trotting couple with residences in Florida and France needed a new Canadian home that fit their post-retirement life. Who knew the perfect place would be (almost) in their own backyard?

How does a recently retired, travel-loving couple make the most of Act 3?
F
or Charles and Barbara Humphrey, then owners of an elegant custom home in Horseshoe Valley, the solution came in the form of a challenge. They challenged themselves to find and purchase a new Canadian home with the same characteristics as their nests in France and Florida. The post-retirement abode in Canada had to be turnkey to let them travel without worrying about the property, have lots of living and entertaining space, and be closely connected to the great outdoors. Plus, a fabulous view wouldn’t hurt. “The challenge was to successfully downsize from our loved home in Horseshoe Valley to the flexibility of a turnkey situation without losing contact with scenery and sunsets,” explains Barbara, who readily admits she and her husband, Charles, are addicted to living and entertaining outdoors. “We wanted to create a customized living space that reflected our changing lifestyle needs in a location that ensured we had efficient access to international flights. That was a must.” After three years of considering hundreds of locations in Canada, the Humphreys met their challenge. While surfing the Internet at the Paris airport in June 2013 while en route to Canada from France, the couple found a condo in Barrie that was destined to become their urban beach house near Kempenfelt Bay. The south-facing corner condo was turnkey and had a generous terrace that gave the couple seamless integration with nature and lots of space for outdoor entertaining. The condo’s clinchers were broad vistas of the bay, gorgeous sunset views, the lively interplay of power and sail boats, and a five-minute walk to the city’s coffee shops, art galleries, book stores and other distractions that retirement gave the couple the time to relish. Though the Barrie condo’s location was ideal, the home itself needed more than a little TLC. This did not deter Charles and Barbara who, as 24 | GoodLife Barrie Edition - January February 2015 ■

self-admitted real estate junkies, have renovated and lived in eight residences in three countries during their 32 years together. “It was a very dated, in fact ugly, 25-year-old condo in a small boutique building,” recalls Barbara. “But it was directly on Kempenfelt Bay and had an extraordinary 400-square-foot terrace. We took a leap of faith and believed that a tired, very ordinary condo could be transformed into a home with a chic, urban beach house environment. Barbara hired talented designer Dianne Frederick, principal of Barrie’s Ferndale Trim and Doors and the woman they call their secret resource. Every vestige of the existing space was removed while the Humphreys decided what kind of interior design would specifically suit their nomadic lifestyle. After decades of collecting international artwork and custom designed furniture, they wanted an interior that would harmonize with their treasured pieces. virtually every aspect of their new urban beach house. “The extensive use of customized millwork combined with the presence of art in every room, including the bathrooms, delivered a home with the feel of a relaxed west coast beach house and the gentrified ambiance of an east coast cape house,” says Barbara. Custom wood paneling and fine millwork were installed throughout the condo to eliminate its drywall box look. This liberal use of natural materials, including the ledge stone accent walls in the front foyer and kitchen, holistically join the interior to the terrace’s dramatic exterior living area. Both spaces are framed by views of waterfront and wide-open sky. Measuring and designing the custom floorto-ceiling etageres required to display the Humphrey’s extensive global ceramics collection called for design innovation, as did the planning and drawing of elements for the very unconventional but highly functional kitchen. With no upper cupboards and all appliances hidden away, the kitchen’s design delivered a seamless, beautiful space for living, dining and cooking, usually by family chef Charles. The kitchen’s centerpiece, a floating white European oak island with a subtle almond Caesarstone surface, draws guests to gather, chat and savour the kitchen’s expansive view of the bay. In the bathrooms, the Humphrey’s ‘no clutter’ philosophy dictated the installation of custom cabinets and columns beside the free mount double sinks to store all items.

“The cabinets ensure that not so much as a toothbrush need ever see the light of day,” says Barbara. As well as referencing and embracing the outdoors, the high-quality natural materials used throughout the condo enhance its beach bungalow ambience. Cut stone walls in public areas, luminous limestone walls, European white oak flooring and custom glass paneled doors that disperse light all give a casual coastal vibe to the transformed condo. The decision not to install window coverings contributes to its sun-washed feel. “There is no such thing as too much light!” says Barbara, who understands the correlation between regular access to light and people’s physical and emotional health. “Our commitment to light in our lives extends to indoor lighting. We decided to install 50 LED ceiling lights in the condo. We love to follow the sun all year as we move between France, Florida and Barrie.” With the total renovation complete, the condo has become the beautiful, simple and calm urban beach home the couple envisioned. With stunning water views, an inviting terrace for entertaining or quiet tête-à-têtes, and lots of room to display their artworks and travel mementos, the Canadian base for the Humphreys’ Act 3 life gives them daily joy indoors and places to walk, socialize and savour nature outdoors. “Even the early skeptics among our friends became converts after their first visit,” reports Barbara. ”We’ve had 20 years of terrace living at our home in France and 10 years of life in the gorgeous Copeland Forest in Horseshoe Valley. But after downsizing and finding our home in Barrie, it is hard to imagine how our passion for living in spaces connected to the beauty of nature could be more successfully accommodated. From morning coffee to sundown cocktails, you’ll find us on the terrace when the weather is warm.” When winter arrives, the couple locks the door of their condo and follows the sun to the terrace at their home in the hills of the south of France or to their residence in Naples, Florida on the Gulf of Mexico. When asked which home offers the best lifestyle, Charles and Barbara say Barrie and Naples cannot compete with the food and natural beauty of southern France. But when a spectacular sunrise or sunset is delivered on Kempenfelt Bay, and the Bohemia or Barrie Bean coffee shops are serving up great java, life in Barrie stands up pretty well to that of France and Florida for this pair of globe trotters.

ith the Lora Bay golf course a chip shot away, Georgian Bay within sight and Collingwood’s famed ski hills just down the road, this chalet is a perfectly placed, all-season retreat for an active family.
When interior designer Christine Pritchard and her husband were searching the Collingwood area five years ago for their next family home, she already had a cherished vision of their new residence. “I definitely wanted something far more rustic than our current home, a chalet-style house but one that was a little different,” says Christine, whose family was moving from an ultra-contemporary home in Oakville that had been styled completely in black and white by the designer. “There are

a lot of beautiful modern places, but I wanted to do something that was a lot more traditional.” Having that vision led Christine to see the potential in an unfinished house in the enclave of elegant homes at The Golf Club at Lora Bay in Thornbury. Located near the shore of Georgian Bay in a prime year-round recreational area, the chalet-style home-to-be was a blank canvas ready to become the embodiment of Christine’s rustic residence. “When I saw the home the first time I walked in, it had this beautiful two-storey timber ceiling over the open-concept kitchen, dining room and Great Room,” recalls Christine, who owns Habitat Interiors in Thornbury. “I knew right away that it had a chalet feel. We could have done anything with it, but we wanted to stay true to the character it had initially. The style is also a reflection of this area with its trails, skiing and outdoor activities.” Drawing inspiration from the warmth and chalet look of the solid timber frame cathedral ceiling, Christine chose a soothing monochromatic palette to flow throughout the 2,684-square-foot home’s public spaces, five bedrooms, two bathrooms, powder room and lower level. The neutral colour scheme also accented the beautiful natural materials used in the chalet’s décor including a floor-to-ceiling stacked stone gas fireplace, solid wood interior doors and railings, and warm hardwood floors. In the kitchen, counters were crafted from leathered stone imported from Italy. The leathering process produces a very durable patterned stone with a matte finish. The raw stone that became the counter was handpicked by Christine in Toronto. On the same trip, she selected the unique granite slabs fashioned into countertops for the bathrooms. Creating a home from a shell of a house and honing the interior design plan to suit her family was a pleasure for the designer. “I love the challenge of finishing the design of a house to your own liking,” says Christine.

the backyard and fire pit, an exterior feature that is popular with the family year-round. Light fixtures for the chalet were chosen by Christine to accentuate the residence’s mountain house style. In the Great Room, an impressive replica antler chandelier, crafted in Calgary, is a traditional light fixture for chalets and the perfect design complement for the stone-clad gas fireplace and wide plank pine floors. Suspended over the dining room table, a chandelier composed of five faux pillar candles adds to the rustic ambience. The candles’ electric ‘flames’ can be dimmed down to candlelight wattage or turned up for brighter lighting. Graceful glass pendant lamps hang over the island in the kitchen, located midway between the Great Room and the dining room. The pendants look custom-made, but you can’t judge a lamp by its look. “These pendants were bought at Home De-
pot,” laughs Christine. “I saw them in a magazine, liked them and found them when I went to Home Depot for something else. I wanted light fixtures for the kitchen that had glass because when you have a really big fixture like the antler chandelier, you can’t overdo the other lighting in the room.” Another traditional chalet design feature is found in the master bedroom’s refinished barn board headboard. Though this headboard was ordered from California, the use of old Ontario barn board for interior design is on trend locally. Christine’s clients clamour for barn board headboards as well as barn board feature walls, hanging doors that roll open and shut on rails, and wall decorations. One client used a hanging barn board door to hide a wall-mounted television. “Any kind of barn board makes things very cozy and, in our area,

authentic boards are very easy to find,” says Christine. “You just have to find a good carpenter. We also have a lot of metal and steel workers here who hand-forge rails for the doors to hang on. They work as closet doors as well as room doors. Even if the door is non-functional, it looks like a work of art.” The transition from Oakville to Thornbury was surprisingly smooth for the couple and their three young children. But the move from an urban to a rural area was even easier for Christine who was raised in Germany amid the mountains by the Baltic Sea near the Denmark border. The Collingwood area’s ski hills, proximity to the shores of Georgian Bay and the friendliness of town life made her feel immediately at home in their Lora Bay chalet. “I like to be close to a big city, but I’m not your typical city person,” she explains. “When we moved from Germany to Oakville, it was overwhelming. I like that in a small community, people are friendly and remember your name. The customer service is superb and people from the city comment on this all the time. You matter to them and they take their time.” When asked if knowing about and having access to many great interior design products and resources make designing one’s own home easier or harder, Christine says she has loved designing all of the homes her family has lived in, so it has never been difficult. “Initially, I went to university for interior decoration in Germany,” she recalls. “When I relocated to Canada with my husband and our first two little ones, I designed our Oakville home. I have my favourite design styles, like everybody does. But I like to switch up the designs a little at each house. We’ve moved into three houses since we came to this area and I’ve loved designing each one. Designers get to see so many great things that are inspiring. Dry-aged meat is hung in a refrigerator for several weeks. When meat is dry-aged, two things happen. The first is a lot of the moisture evaporates concentrating the flavour. “It has a beefier more pronounced
flavour,” Cortese explained. Secondly the meat takes on a different texture and is very tender. “Customers notice the difference,” he said. The shop also sells a better quality of meat, unlike other stores that may choose price over quality. “We have the higher grade beef,” he said. “There’s a massive quality difference.” Along with the butchered meats, Cordino’s has a cold deli with a wide variety of carefully selected meats, cheeses and other fine, ready to eat foods and they have a hot deli which features sandwiches, salads and pastas. There are fresh baked goods available and they carry a line from Fox’s Bakery. Cordino’s also sells a variety of barbeque sauces and marinades, they sell their own line of sauces and stews, and they offer a variety of hard to find European groceries. easoned musician Don Cameron is helping his students find their musical mojo. Last year he opened Mojo Music Studio in downtown Barrie, where he offers guitar, bass, mandolin, ukulele, and song writing lessons. Along with learning how to play, his students can experience some of the many benefits that come with being a musician. “Studies have shown, particularly with children, playing music really ties together cognitive abilities, right across the board,” Cameron explained. He said students who play tend to do better academically. And music combines mathematical linear thinking with creative thinking. “Music is the perfect vehicle to tie those two together,” he said. While Cameron does have school aged students, some as young as six, he has a number of mature students as well, and the benefits of music have no age limit. “It’s a very fun, therapeutic way to keep yourself actively engaged in something,” he said. “Every time I pick up the guitar I learn something.” Music is

also a wonderful way to express emotions and deal with stress. “It’s therapy. Music really puts creative order to your interior world,” said Cameron. “That’s how I make sense of this world. It keeps me grounded, and I love doing it.” And it can help develop social skills. “Particularly for young people, that’s a real galvanizing thing for them,” he said. Cameron has over 30 years of experience in the music industry. He is a patient teacher and works hard to make everyone feel comfortable. “I know it can be intimidating,” he said. “So I always make students feel really welcome. This is their place, this is their space.” He has developed his own unique and effective teaching methods, and he uses the students’ favourite music and songs to help teach in a fun and involved way. “It’s always a really positive experience,” he said. he philosophy of Jeevanaya Wellness is based on Ayurveda, a 5000 years old holistic practice of healing from India. Ayurvedic treatments use natural lab tested & certified oils and herbs to prevent illnesses, treat certain ailments and improve overall quality of life. “The difference between the Ayurvedic therapies and other massage therapies is that treatments are customized using different kinds of oils for different doshas,” said Jeevanaya Wellness owner Anita Kaur, who is a qualified Ayurvedic therapist and a consultant, trained through a traditional Ayurveda school in India. Doshas, commonly referred to as Vata, Pitta and Kapha are biological energies we all are born with, a specific combination of physical, mental, and emotional characteristics. “They are like our fingerprints, every person is unique,” she said. Factors such as poor diet, environment, relationships and stress can disturb their balance. Ayurvedic treatments aim to restore that balance.
There are a wide variety of treatments offered at Jeevanaya Wellness including Abhyanga or Body Rejuvenation Massage, Shirobhyanga or Head Massage and Kati Vasti or Lower Back treatment. In the kitchen, the dough machine is whirling, fresh bread is baking, homemade Italian sauces are simmering — and partners Lindsay Weiss, age 25, and Alexander “Cicco” Scalercio, age 31, are going over the daily liquor and grocery list. “We’re just getting ready for another busy day,” says Weiss as she sits down to chat with a visiting GoodLife reporter. She then adds with a chuckle, “Sorry, I never have any pockets, so I have to tuck this shopping list into my shirt so I don’t forget anything.” And just like that — the interview ice has been broken. Over the next hour, the young entrepreneur dishes on everything from the secrets of great Italian cooking and opening a second Cicco’s location in Barrie’s southend (the original restaurant is in Minesing) to Cicco’s family’s love of food, wine and family.
What led you two into the restaurant business? Lindsay Weiss: In 2006, Cicco and his cousin opened up Giancicco’s in Minesing. Their family is from Calabria, Italy and good food, good wine and great conversation have always been key to their way of life. Spaghetti & Meatballs In 2012, Gian and Cicco parted ways and I became involved in the business. We were in our early days of dating, and I had fallen in love with Cicco’s family’s culture and food. The idea of running a restaurant was perfect because I come from a business family, and I studied it in school. Because of my infatuation with the business world, my dad said: ‘If you love it that much, than you should become a partner.’ I went for it, renamed it Cicco’s Ristorante — and the rest is history.

Then you opened a second location in Barrie’s southend on December 31, 2013. Why the expansion? LW: We did some rebranding with the Minesing location, brought in some new menu items and the business really took off. We decided to take it to another level and opened a second location. We’re young, and still have lots of drive and passion. It just felt right.

What’s on offer at Cicco’s? LW: We specialize in homemade Italian food. The dishes are old family recipes that Cicco’s family, including his mother and grandmother, have grown up with. The food is just so good! Having said that, we’re always searching for new and interesting menu ideas. Because most of the dishes are made from old recipes passed down from Cicco’s family in Italy, kitchen staff have to sign a non-competition clause to ensure the recipes stay at Cicco’s. We even have some old family photos on the walls of Cicco’s ancestors cooking. Who’s cooking in Cicco’s kitchen? LW: Cicco, Cicco’s mother Dora, and his sister Melissa. They split their time between the two locations. Their culinary training has been passed down through the family for generations. We also have a red seal chef with 20-plus years experience, along with a great team of experienced kitchen professionals.

In 2012 The North moved into its existing larger two-storey Victorian building with private party rooms for catering and special events. Sounds like a real family business. LW: Absolutely! From my side, as well. My mom, Deb Barnes, supplies some of our vegetables during the growing season. She owns an organic farm in the Kawartha Lakes. I’ve always been around food. My first job was sorting potatoes for a local farmer. Your Aunt Vickie is also well known within the food industry. LW: That’s right. My aunt, Vickie Kerr, created Miss Vickie’s Potato Chips (now owned by Frito-Lay). She just wrote a cookbook called: Miss Vickie’s Kitchen, which we proudly display at Cicco’s. What’s the secret to great Italian cooking? LW: For us, two things: love and simplicity. Let’s hear about the menu. LW: Everything on the menu is homemade with the freshest ingredients available and all cooking is done on-site. We are a scratch kitchen. We make all of our own dough, sauces, salad dressings, sausages, salads and desserts. We also hand fillet, bread and stuff our own chicken and veal. Because our volumes are so high, the only thing we don’t make is our noodles.
What are the house specialties? LW: My two personal favourites are the Manicotti (homemade crepes stuffed with spinach and a four cheese blend, covered in a homemade tomato sauce and served with garlic bread) and the Sausage Piato (homemade Italian sausage, sautéed mushrooms, onion and red pepper on a bed of rosemary potatoes, drizzled with a sweet balsamic reduction and served with a house or Caesar salad). We are also known for our pizzas, panzerotti, lasagna, sausages, pasta sauces, and our Caesar salad dressing. We move our Caesar salad dressing, a house secret, like crazy!

Love and passion is our model. Both of your locations are set in local neighbourhoods. Why? LW: We love getting to know our customers. A neighbourhood setting helps us to really connect with our diners. It’s a great setting for casual dining. I just noticed that your coffee mug reads: ‘She’s building her empire.’ Considering your young age and business ambition, it seems apropos. LW: I ordered this for myself because I thought it was fun [laughs]. From a very young age, I’ve always wanted to run my own business. I went to school for finance, and have worked in the pharmaceutical industry, but my goal has always been to have a business. When I was 10, I remember thinking I needed a box to keep my stuffed animals in to protect them and their value. I even drew up a business plan with crayons [laughs]. When I met Cicco, everything just
fell into place. Just thinking about everything that we’ve done with our restaurants gives me goosebumps. Passion is a big part of our success. We love what we do, and we look forward to coming into work each day. What about diners with special dietary needs? LW: We’re pretty flexible. Our motto is: if we have the ingredients, we’ll make it. We also offer gluten-free dough, which we order in, for our pizzas and panzerotti. Our stuffed chicken entree can also be prepared without gluten. For vegetarians, most of our pastas can be made without meat. What about specials? LW: Every day, we offer a large pepperoni pizza (dine-in or take-out) for $9.99. strips and then into a uniform dice. Place into a mixing bowl. 2. Cut red onion into comparable diced sizes and add to the mixing bowl. 3. Finely chop garlic cloves and add to the mixing bowl. (For quicker results, you can use a garlic press). 4. Add salt, pepper, olive oil and balsamic vinegar. 5. Separate basil leaves from stems, stacking on top of each other and roll; cut crosswise and thin. Add to bowl. Note: for best results, let mixture marinate for 24 hours. 6. Preheat oven to 350F. With a rolling pin, stretch out dough to desired size. Place on a flat oiled baking sheet and place in oven. Bake for 5 minutes and flip dough. Remove from oven, and top dough with bruschetta mix and feta cheese. Bake for another 5 minutes. Cut to liking, plate and serve.

Cartoonist teaches Manga to kids
As
a kid, Bob Kain was almost sent to the principal’s office for drawing cartoon characters.
Now, at 82, he’s helping guide other young artists in the world that has left Saturday morning’s loveable characters such as Tweety and Sylvester, Porky Pig and Bugs Bunny behind. “In school, I was always in trouble because I wouldn’t do the math or the various courses I was taking. I’d spend all my time cartooning,” said Kain, the artist behind Chirp, the cute character that graces the cover and stars in the Owl magazine for preschoolers by the same name. He and Chirp enjoyed all sorts of adventures during their 13 years together, which began after Kain retired from a career that spanned decades in advertising. He has magazines and books chronicling his adventures with Chirp, but he has closed that book, too, and is now retired for the second time. Kain began by studying art at the Ontario College of Art and Design and then the School of Visual Arts in New York City. After graduating, he started sending his drawings to magazines all over North America. Working in his little apartment in Toronto, he made a living in a genre that was entertaining newspaper readers each day and also came alive on the big screen and then on television. 68 | GoodLife Barrie Edition - January February 2015 ■
Kain enjoyed Al Capp’s L’il Abner, a comic strip about a hillbilly family in the American south, as well as Walt Disney animator Walt Kelly’s Pogo Possum, whose adventures in the swamp were hits with newspaper readers through 1950s and 1960s, as he applied his hand to cartooning for commercials. He had his own animation studio, Video Art Productions Ltd., where he led a team of 15 staff and 25 freelance artists who produced works for government, the CBC and TVO. In 1993, he closed that studio in a bid to retire. That’s when Chirp came along and kept him company for more than a decade. When he’s not drawing, he’s reading about the genre and watching what others are drawing. “Comics have changed so much. They used to be continuity strips. One day, at the end of the strip, someone would shoot the hero and the next day, you’d look to see if the bullet killed him. “Today, (cartoons) are more a joke a day. I don’t think there’s many good cartoonists today.” Kain is now working to share his love of drawing with a new generation that wants to learn cartooning because of what they’ve seen in videogames and graphic novels. He applied himself to studying Manga and mastering it. He’s teaching it in after-school classes across the region, although he admits he still is trying to sell comic strips, including one based on him and his wife. Those who are taking his classes, which are being offered as an after-school program on Mondays at Collier United Church in Barrie starting in February, are drawing the world a little differently. “With Manga, you have to really be able to draw the human form really well,” he said, adding the characters with large eyes, small noses and spiky hair fill many graphic novels that appeal to kids and teens. Kain also teaches after-school classes in Collingwood at All Saints Anglican Church, at the Orillia Museum of Art and History and at the Midland Cultural Centre.

For 17-year-old Samantha Lark, asking for directions during a Georgian College campus tour led to a first-place win in the Students4Soup Challenge. “Turns out, the person I received directions from was Marcia Woods who happened to be running the (Students4Soup) event. She suggested my high school enter a team,” Lark explains. “I thought it would be fun, so we did, and we won.” Lark shares top honours with her Brock High School (located in Cannington) culinary teammates Ruth Rennie, 17, and Alex Sherman, 17. Together, the trio created an Autumn Roasted Vegetable Bisque (with caramelized apples). “It was a really fun experience,” says Rennie. “We were so nervous, but it was great.”

In October, the Students4Soup Challenge invited local high school students to hone their soup-making skills. Their culinary goal was to create an original soup made from locally sourced ingredients. The award ceremony and final competition was held on Dec. 5 at Georgian College. Eleven teams, involving 36 students and their teachers, competed. These finalists were whittled down from more than 100 participants. “It was an exciting opportunity for students and educators in the Simcoe-Muskoka (and Durham) Region to experience the thrill of competition,” says Marcia Woods, a Georgian College business teacher and CEO of ei•ei•eat, the tech startup behind this event, gearing up for the spring launch of their local food app. (The ei•ei•eat app is a social mobile platform that connects people and places in the local food ecosystem). The competition was stiff. The soups were judged on the use of local ingredients related to taste, presentation and originality. “The scores were just so close,” says Lynda Van Casteren of Nicholyn Farms, who helped judge the gourmet event. “All of the soups were amazing and it was tough picking the three finalists. and learning where their food comes from.” Fellow judge Julien Ross, an executive chef at Bigwin Island and part-time culinary instructor at Georgian College, also enjoyed the event. “There was lots of talent in the room, and I was impressed with how motivated the students were. They took the competition very seriously.” Ivars Rasa, executive chef/owner of Ivars Catering, also sat on the judging panel. “It was a great event and I liked all of the soups. Even though the kids were nervous, they seemed to really know what they were doing and enjoyed the event.” The high school teachers involved in the event also had high praise. Sean Griffin, a teacher at Bradford District High School, escorted at team of four students to the challenge. “Our team made a Spicy Roasted Carrot Soup. The kids had a great time developing the recipe and learning about the meaning of purchasing food within a 100-kilometre radius.” Teachers at the event even discussed the idea of developing a Soup4Students curriculum unit leading up to next year’s competition.

Plenty of prizes were awarded to the competing students. The top three teams received a set of knives worth $500 courtesy of CCI, along with gift certificates from local restaurants that will be serving the winning soups this month. (See sidebar for full details). First place team members also received free tuition for one semester in Georgian’s culinary program. Second place was awarded to Nottawasaga Pines Secondary School in Angus for its Beet and Apple Soup with Horseradish Cream. The team was made up of Julia McCrea, Amelia Lambert, Shania Rice and Kerstyn Dobbs. Third place went to Stayner Collegiate’s
Vegetarian Dream Mix/A Modified Tomato Soup, created by students Renata Phillips and Caitlin Rafters. Why serve up the challenge? “Teens are a powerful sector of our population with a huge influence on household food purchases. They’re also developing eating patterns that may stay with them for a lifetime,” says Woods. “The Students4Soup Challenge connects students with their local food supply, provokes a conversation around the health and economic benefits of local food, and provides exposure to potential food industry career opportunities.”

PREPARATION: 1. In a small bowl, mix together the spices. Set aside. 2. In a small saucepan, heat 1 tsp oil on medium heat. Add apple, brown sugar, and cinnamon; cook until apple become soft. In a large saucepan, heat 1 tsp oil on medium heat. Add the garlic and onions; cook until the onions look translucent. Add carrots, bell peppers and sweet potato. Add vegetable broth and spice blend and stir well. Bring the mixture to a boil and add the bay leaves. 3. Once the mixture has boiled, simmer the soup with lid off for at least 20 minutes and vegetables are very tender.

beeT and aPPLe SOuP WITh hOrSeradISh cream {Serves 6 to 8 with side-dish servings.} 9 medium beets (about 2-1/2 pounds) 1 medium sweet onion, chopped 1 medium potato, peeled and chopped 1 small cooking apple, peeled, cored, and chopped 3 (14.5 oz) cans reduced-sodium chicken broth 1 Tbsp apple cider vinegar Salt and black pepper, to taste 1 carton (8 ounce) sour cream 2 Tbsp prepared horseradish 1/4 tsp cayenne pepper
PreParaTIOn: 1. Peel the beets and cut each into 1-inch pieces, reserving one beet to make skillet beets (see below). 2. In a 4-quart pot, combine the chopped beets, onion, potato, apple, and broth; bring to a boil. reduce heat, and simmer (covered) for about 25 to 30 minutes or until tender. remove from heat, and cool for about 5 minutes. 3. Transfer soup, half at a time, to a food processor. cover; process until smooth. you can also puree the soup with an immersion blender. return to soup to pot and stir in vinegar. Season to taste with salt and black pepper, and heat throughly. 4. for horseradish cream, in a small bowl combine sour cream, horseradish and cayenne pepper; stir about 1/2 cup of the cream mixture into the hot soup. Set aside remaining cream mixture. 5. To serve, ladle soup into bowls. Top with a dollop of the remaining horseradish cream and skillet beets, if desired. Serves 6 to 8 with side-dish servings.

Winter Wines Our lovable Canadian winters are custom made for skiers, snowmobilers and snowmen makers. The rest of us seem to develop thinner and thinner skins as we age. But everyone can use wines to get through the winter. January and February are a time for comfort food, roasts, stews and hearty fare that keep our internal furnaces fuelled. I do have a confession. Despite losing my insulation (read: fat) as I age, I still venture out on the deck in February to fire up the barbecue among the snowdrifts. I just love the smell of charred steaks and ribs. For those of you who really hate winter and should have gone to Florida, maybe my wines are not for you. Feel free to escape reality in wonderful expensive wines, but beware, as price is no guarantee of quality. Instead, I go for what is actually in the bottle, not on a famous label. Personally, I have discovered that if you search through hundreds of wines you are bound to come up with value whites and reds that taste like $20 or more but cost far less. I reject about 80 per cent of the thousands of wines I taste, including everything from $8 to $300. The decider is value. If I rate a $100 wine as an 89/100, forget it. We have lots of wines in the $20 or less category that score 89 or 90 and are amazing value. So here are a few of the gems I joyfully discovered among the masses of crass vino populating our shelves. Some of my winners are newcomers; others are new, improved vintages of classic value leaders. I hope you find something here you adore that will help you face any polar vortex.

n afternoon or evening at Canvas and Cabernet is as much about stopping, focusing and relaxing as it is a about music, fine wine and art. The trendy new concept provides a fun and unique night out in Barrie for those who are experienced artists and many who have never picked up a paintbrush. It’s a two-hour break from the hurried rush of life into a spa-like experience that relaxes the mind and inspires creativity that may have been locked away or unrealized until now. Music, good food and wine add to the ambiance as budding artists receive instruction and create their first painting. “It is so amazing to see the transformation when people start to paint,” said business owner Cyndi Taylor. “It’s very interactive and inviting for all, with people in the class learning from the experienced artists and having so much fun. It’s a wonderful time to talk about other things than work and responsibilities.” As the unique and colourful creations take shape on canvas, Taylor says she truly enjoys watching

participants transition to the environment, relax and enjoy the break from their hectic reality. “About halfway through each class, you can actually see a shift,” she said. “Voices change, laughter changes and everyone seems to let the kid out. It’s really quite wonderful.” Fully licensed, Canvas and Cabernet is a Wine Lounge serving more than 100 choices, as well as Traditional Old Fashioned Cocktails and a European style menu of charcuterie and specialty cheeses and chocolate. Featuring premium liquors, beer and non-alcoholic beverages, there is something for everyone to enjoy. In addition to beverages and food, Canvas and Cabernet offers a two-hour instructional paint class for the non-experienced painter. Seven classes are held each week. While initially the target audience is small groups of women gathered for a birthday party, baby shower or other life event, Canvas and Cabernet is about creativity and Taylor is hoping to hit the road to bring the concept to home parties. She is also planning to hold Art in the Park sessions in the future and will be developing a new program for children. With a background as a decorator and seam-

stress, she says her ability to see details made the transition to art and painting a smooth road. “I just sat down and started painting. It was just like making another garment, but I was creating with paint instead of fabric.” Canvas and Cabernet is a welcome addition to the Barrie Downtown and has something for everyone. Guests can enjoy the atmosphere and enjoy wine and charcuterie, with specialty breads, cured meats and cheese and chocolate. The lunch menu provides panini and salad choices. Painting classes are held in the afternoon from 1:30 p.m. to 3:30 p.m. and evenings from 6:30 to 8:30. The classes are vibrant, the sound system is professional and the music is inspiring. Classes are instructed by the featured artist in a step-by-step format giving plenty of time to visit, sip wine, chair dance and just have fun for $50 per person. “After two hours of fun and transformation, you leave with a signed piece of art that is totally unique and wonderful. Everyone does the same thing, but they never look the same,” Taylor explained. “There are as many interpretations as there are people in the class and as they start
mixing paint and each person creates their own unique masterpiece … that’s the magic.” Transformation seems to be a fitting word to describe Taylor’s life. Once an interior decorator and seamstress, she traded her sewing needles for acupuncture needles and a career in massage therapy and acupuncture. Opening her own business in downtown Barrie is her dream come true. The idea for a high-end wine bar and painting gallery came to her while she was on vacation and she knew she was on the right track when her daughter purchased art supplies as a birthday gift – a sign that something truly magical was about to happen. “It was a big sign for me. She said I had mentioned that I wanted to try painting six months ago, but the art supplies were a sign and in less than a month I was incorporated,” she said. “My first painting class was a baby shower and I haven’t looked back. For dairy farmers John and Marie Miller, the decision to bottle their own milk was rooted in family history. “My great-grandfather, Sam Bisset, is credited with being the first Canadian dairyman to sell milk in a bottle back in 1896,” proudly explains John Miller of Miller’s Dairy in Creemore. His mother’s family was also in the milk processing business, manufacturing butter and ice cream in Goderich. “We’d thought it would be fun to carry on the tradition.” And so they did. In July 2012, the Millers opened a milk bottling facility next to their dairy barn. Today, about 35,000 litres of milk produced each month (roughly half of the milk produced at the farm) is bottled at their on-site dairy, while the rest is sold for external processing. “Our eventual goal is to have all of our milk bottled here,” explains Miller, as he tours this visiting reporter around the milking facility. The original family farm dates back to 1860. All milk produced at the farm is sold to Dairy Farmers of Ontario. “For Miller’s Dairy, we sell the milk to Dairy Farmers of Ontario on paper, buy it back on paper, and then transfer it through our unique piping system to our bottling plant,” he explains. Miller’s Dairy products include whole milk, 2% milk, 1% milk, skim milk, chocolate milk, 35% cream, and 10% cream (half and half). All products are sold in glass bottles, quart (946 mL) and half gallon (1.89 mL) sizes. “We’ve chosen to market our fresh Jersey milk in glass bottles to return to a more environmentally responsible method, providing consumers with the freshest milk possible. Milk stored in glass bottles maintains a more constant temperature and therefore, keeps that fresh Jersey flavour,” explains the farmer. John and Marie are the fifth generation of Millers to operate the Creemore farm, Jalon Farms, which has been a dairy farm for more than 50 years. The 1,200-acre dairy and crop operation is home to over 240 purebred Jerseys. Marie, an elementary school teacher, also has farming roots, as she grew up on a purebred Holstein farm near Cookstown. Family members and a committed team keep the diverse operation running smoothly. With two delivery trucks on the road, Miller’s

Dairy products are sold and used in over 90 locations including stores, restaurants and cafés (see website for locations). Along with reviving an old family tradition of bottling milk, Marie says the timing was right to start up Miller’s Dairy. “People want fresh local products,” she explains. And consumers love the taste. “Jersey milk has a real sweet flavour and a smooth taste.” It’s also more nutritious compared to other milk on the shelf. According to the American Jersey Cattle Association, reported by the University of Tennessee Institute of Agriculture, milk from Jersey cattle offers the greatest nutritional value providing 15 to 20% more quality protein and 15 to 18% more calcium. “The cows themselves make the milk more nutritious,” she explains. “It also has higher levels of Vitamins A, B, B1 and B2. There’s also a different amino acid in the milk, which makes it easier for people with an intolerance to milk to digest.” In coming months, Miller’s Dairy will provide the ice cream base for the popular Belly Ice Cream Company (bellyicecreamcompany.ca,) an artisanal gourmet ice cream maker based in Huntsville. The Creemore farm, incidentally, is as neat as a pin. And the cows seem relaxed and happy to produce milk. “The team at Jalon Farms take such good care of our girls,” says Marie. “In our barn, we believe that happy cows give more milk so the girls sleep on mattresses and walk around freely with fresh food and water always available.” Customers take a keen interest in the cows. “We regularly post photos of the girls on our Facebook page and people love it.” Every July, Miller’s Dairy hosts Miller’s Dairy Day, an open house for customers to meet “the girls” that provide the fresh Jersey milk house on the farm. » For more information, visit millersdairy.com or follow Miller’s Dairy on social media.

SHELDON CREEK DAIRY When Marianne den Haan, age 26, and her sister Emily, age 24, decided to help run their parents’ dairy farm, they needed an innovative idea. “We realized there was a huge market for minimally processed milk because people kept driving to our family farm asking for it,” explains Marianne den Haan. An on-site dairy and bottling facility was the solution. “It was a pilot project offered by the Ontario Dairy Farmers, so we decided to go for it,” explains the young farmer and former teacher. “For our family, it was a great way to bring the next generation back to the farm.”

In May 2012, they began selling bottled milk from their Loretto-area family farm. The 400acre farm has been in operation since 1953. Along with pasteurized whole white milk, Sheldon Creek Dairy products include: whipping cream (it’s 45% and chef’s love it), sour cream, eggnog (seasonal), artisanal Greek yogurt, chocolate, strawberry (seasonal) and skim milk — to name a few. “Our newest product is kefir, which is a probiotic yogurt drink, and it’s selling really well,” she explains. “Our yogurts are spectacular because they’re naturally strained through a cheese cloth.” During the warmer months, the dairy makes and sells gourmet frozen yogurt made with their Greek yogurt. “Like all of our milk and cream products, our frozen yogurt is farm fresh, natural and local.” The farm milks 55 Holstein cows, which produce up to 12,000 litres of milk per week. The farm’s cattle are consistently in the top 10 in Simcoe County and the office walls are lined with multiple awards from Holstein Canada, and other Ontario farming organizations. “Our cows are clean, happy and well fed. They graze on grass in warm months and receive hays, grasses, and silage grown on our own farm during snowy winter months.” While Marianne looks after the processing and bottling plant, Emily (who attended

the University of Guelph for Agriculture) takes care of milking the cows and farming the crops with their father, John. “My mom (Bonnie) is a jack-of-all-trades and helps us all out,” says Marianne, as she takes a break from cream production. Dressed in a white scrubs, a lab coat and sporting a hair net, rubber boots and latex gloves, the young dairy farmer jokes: “I have the best outfit ever.” Fashion aside, den Haan says the philosophy at Sheldon Creek Dairy is to do things the way nature intended. Along with producing and bottling the milk completely on their farm, they leave it as close to raw milk as you can buy. It’s pasteurized at 73C for 16 seconds. “Sheldon Creek Dairy milk is not homogenized. Since we leave our milk in its natural form, people who have had issues drinking milk or milk allergies have been able to drink our milk,” explains den Haan. “It also tastes delicious!” Carrying on the family tradition offers a tremendous sense of pride for the local dairy farmers. “My Opa and Oma started this farm, then my parents took it over, and now the reigns are being passed down once again. Our small family farm has come full circle and we are so proud of that,” she explains. Products can be purchased at various independent grocery and specialty food shops across Ontario, or right at the farm. If visiting the farm, guests are invited to take in some fresh country air and farm life. You might even spot the cow that produced the milk grazing in a nearby field. “Our dairy has glass windows so folks can see how our milk goes from farm to bottle,” says the local farmer. “People love watching us process our milk and dairy products.” Additional local food items line the on-farm store’s shelves. “Visiting our shop is like visiting a winery,” says den Haan with a smile. “First-time visitors get to sample all of our delicious farm fresh dairy products.” Every summer, the local dairy hosts an annual Day on the Farm. “It’s a really exciting time to be involved in agriculture because people want to know how their food goes from farm to table. The Family Day Weekend on Feb. 14-16 features familyfriendly activities in the village and on the mountain, including horse and wagon rides, live entertainment and kids’ scavenger hunts. March Break events happen March 14-22 with discount lift tickets for students, daily live entertainment, magic shows and interactive drumming. Many people don’t enjoy visiting the same destination more than once. Others enjoy going to the same familiar spot year after year. I would say that I fall somewhere between those two categories. I enjoy revisiting past destinations in order to gauge how the world and the people in it have changed. I first visited the city of Rio de Janeiro more than 20 years ago and was looking forward to going back this year shortly after the FIFA World Cup. The Rio I remember had amazing beaches, fabulous weather and food that was out of this world. The shopping and nightlife were an attraction in and of themselves. I was excited to see what about this amazing city had changed and what had stayed the same. Rio de Janeiro is the capital city of the State of Rio de Janeiro and is the second largest city in Brazil. Having once been the capital of the country, Rio is now one of the most populated and popular tourist destinations in the world. Located in the southeast of the country, Rio is surrounded by beautiful beaches on one side and pristine forests on the other. The tropical climate makes Rio ideal to visit at any time of the year.
I arrived in Rio and spent the first couple of nights at the beautiful Quinta Azul Boutique Pousada. The Quinta Azul is the perfect place to stay after a long flight. The staff was extremely friendly and helpful, and the hotel is quaint and welcoming. Following the Quinta Azul I moved on to the Rio Orthon Palace. The Rio Orthon is in a perfect location. At approximately 15 metres from the beach, this hotel has phenomenal service, air conditioning (trust me, you will need it when it is over 100°F), and a great buffet breakfast with everything you could possibly want to keep you going. Not one for wasting time, my first few days in Rio were spent touring the nightlife, sightseeing and, my personal favourite, exploring the flea markets. The flea markets in Rio are the perfect place to do some shopping. For lunch, we went to Confeitaria Colombo – an incredible restaurant that dates back to 1894. This historical restaurant boasts beautiful rosewood furniture, Italian marble countertops and Belgian mirrors. Throughout its long history many an artist, politician and royal have graced its tables. If you ever find yourself in Rio and are looking for something to do, I highly recommend having GoodLifeMagazine.ca | 99

Sightseeing in Rio offers an abundance of spectacular sights including beaches, mountains and rainforests. In addition to its natural attractions, Rio is also home to one of the most recognizable statues in the world. Christ the Redeemer was inaugurated in 1931 and is now one of the Seven Wonders of the World. This awe-inspiring statue was created from soapstone and cement and provides spectacular panoramic views of the city below. Touring the cities and countryside, and seeing the wonderful sights is only one small part of the travelling experience. One of the most integral parts to a successful trip is the people you meet along the way. Over the years, I have been fortunate enough to meet some fantastic people while travelling the world. One such person was our driver while in Rio. Sonia was a master at her job. She spoke six languages and was immensely knowledgeable about all of the sights she took us to. Not only was she an amazing tour guide and driver, but she was a perfect representation of what I’ve come to love about the people in Brazil … friendly, welcoming and warm. After exploring Rio we were off to the preserved Portuguese colonial town of Paraty, with Sonia

behind the wheel. Renowned for its beautiful coastal mountains and historic town, Paraty has become a popular tourist destination. While in Paraty, we stayed at a small boutique hotel called Casa Turquesa. With only nine rooms, Casa Turquesa boasts picturesque charm and modern comforts. Not to mention the breakfast was breathtaking and always consisted of fresh baked goods straight from the oven. Located close to the bay, the hotel is a short trip from anything you wish to see or do in Paraty. Paraty is definitely a place you would want to stay and explore while in Brazil. The town has cobbled streets and a multitude of restaurants to choose from. If given the choice, I would have opted to stay in Paraty for a few more days. I had the opportunity to see the surrounding area by Jeep and was taken into the mountains to see magnificent waterfalls. We finished off our trip with a couple of days on the beautiful island of Ilha Grande. Now
known for its unspoiled beaches and rugged tropical beauty, Ilha Grand was at one time closed to tourists or settlement because of its history as a leper colony and a high-security prison. The prison was closed in 1994 and it wasn’t long until tourism was booming. I spent the few days I was there exploring this undeveloped oasis. I quickly discovered the restaurants along the beach and enjoyed fresh barbequed fish, while sipping an ice cold beer and watching the ocean; you can’t get anything better. While on the island, I stayed at the beautiful Sagu Mini Resort. Surrounded by rainforests and waterfront, the Sagu Mini Resort offers panoramic views of the bay as well as air conditioned rooms and beautiful furnishings; the ideal way to spend the last few days in paradise. The Rio I once knew is now just as bustling and beautiful as ever. With its eclectic charm,
and unending list of things to do, Rio makes the perfect destination for anyone hoping for an adventure or just a trip to explore a new city. If you really want to make the most of your stay in Brazil, I would highly recommend visiting the countryside and islands. You won’t be disappointed. My trip to Brazil was hosted by Adventure Life, the same company I travelled with to Antarctica. They are professional and always deliver a fabulous and unique trip.
