Even with Georgian Bay shimmering before it instead of wheat fields, this Frank Lloyd Wright Prairie-style house is right at home on the beach. Master architect Frank Lloyd Wright was probably thinking about wide, cloudless prairie skies and not the broad, blue expanse of Georgian Bay when he created his low slung, window-filled home design known as Prairie style. However, the design Wright developed to blend into a flat landscape and soften lines between the indoor and outdoor environments works quite wonderfully on a private beach

property on the Bay near Collingwood. Full of light and symmetry with a magnificent north view across the water, the Prairie style residence of Cathryn and Patrick Pender, and their little dog Millie, is a small wonder. The single level, 2,400-square-foot home has airy 10-foot ceilings that rise to a 16-foot white wooden shiplap vault over the open concept living room, dining room and kitchen area, keeping true to Wright’s wall-free Prairie GoodLifeMagazine.ca | 11

A series of balanced, high-set transom windows encircle the residence’s perimeter with a view of forest and sky from every pane. There was an old cottage and boathouse here and this house was built where the cottage stood. passed away just as the site was being prepared. A contractor who worked on our other house told me about Barry McLean. Barry is a very efficient, productive kind of guy who has finish carpenters who can do anything. I can’t say enough about Jo and Barry. It was a good combination and they were wonderful.” The couple’s wish for abundant light resulted in windows with maximum views of the water in both the master and guest bedrooms. The master bedroom, which also overlooks the side deck and guest beach house, has ample closets, storage space and opens to a spacious five-piece ensuite with glass shower, luxurious tub and tiled wall designed by Redman. The bathroom and bedroom floors are hot-water heated as are all floors throughout the home, eliminating the need for a furnace. The large guest bedroom has an adjoining bathroom that can be shared with a room across the main hallway through a second door. Currently a comfortable den, the room could easily be a third bedroom. “We usually have a northwest wind here, so we get waves hitting the rocks,” says Patrick. “You can hear the waves at night. When the water is calm, it’s often as blue as the Caribbean.” »

Patrick’s career with the Canadian Pacific Railway took the London, Ont. natives across Canada and into the United States. The couple loved living in Minneapolis, calling the winter sports-loving citizens and the climate “very Canadian”. Several preCollingwood years were happily spent in Calgary, but their little cottage in Pointe au Baril was where Cathryn loved to spend her summers. So, when the subject of retirement came up, the Penders decided to head back east and settle somewhere near the cottage. A weekend visit to Collingwood sparked an immediate attraction to the area and started the search for a local property. “I think this is the nineteenth house we have either built, renovated or bought, so we knew

what look we wanted,” says Patrick. “There is a lot of post and beam construction around and I like it, but we always liked the Prairie look of Frank Lloyd Wright. It worked out great.” The rustic Prairie style exterior of ledge rock punctuated with wood and sheltered under oversized eaves was the creation of Redman. But the boulders scattered sculpture-like on the landscaped property arrived courtesy of Barry McLean’s Shelburne farm. “I wanted to have stones, but if you go to a landscaping place the stone looks brand new,” explains Patrick. “So, one day a tractor trailer pulls up with all these boulders, some with moss growing on them. The driver says, ‘Barry McLean says I’m supposed to deliver these stones. Where do you want them?’” McLean is also responsible for the property’s breezy beach house whose white-washed pine interior, comfortable furnishings from the Penders’ travels and excellent views down the shore have guests fighting over who gets to stay there. The couple wanted the boathouse demolished to improve the view, but McLean promised to turn it into the jewel box that it is now. Butterfly bushes in the adjacent garden attract flocks of Monarch butterflies as does the milkweed by the sandy waterfront horseshoe pit, a cherished place for horse shoe enthusiasts, and Millie, to play. “There’s nothing like a hot summer afternoon and having the boys over to play horseshoes, drink beer and tell lies,” says Pender with a grin. Perennial gardens, designed by Paul Storey of Northern Roots Landscaping in Collingwood, are full of field and forest plantings like Echinacea, sedum, fiddlehead ferns, red leaf dogwood, Mountain Ash and Birch. Hydrangea and decorative grasses handsomely flank the locally-crafted Douglas fir front door designed by the Penders. The door’s trio of tall vertical windows lets the bay be seen even before one enters the house. Gardens embroider the verge of the decks that stretch across the front and up one side of the home, accessed by two sets of sliding doors and a side door. The Penders love to entertain friends on the deck, hosting casual dinners after spring arrives. In cooler weather, three large glazed pots beautifully supply heat for outdoor gatherings with tongues of flame leaping from fuel sources nestled in the pots’ tops. After four happy years the Penders have decided to move on, once again taking with them the precious mementos gathered in their voluminous travels including a »

One souvenir, though, will be easy to pack – a delicate white glass vase circled with dark swirls that was given as a thank you gift to Patrick by Bill and Melissa Gates after a spectacular train trip. “When Bill Gates built his new house in Seattle, he sold his former home to Gerry Grinstein, the chairman of Burlington Northern Railroad,” Patrick recalls. “Bill asked where to go in North America for a scenic train ride and Gerry told him take Canadian Pacific from Vancouver through the Rockies to Banff. I was

asked by my CEO to host the Gates on one of our private car trains. onaleigh’s Irish Pub in downtown Barrie is leading the way this summer, with its large outdoor patio, ice cold refreshments and delicious food. One of the keys to making Donaleigh’s the number one destination downtown has been its beautiful outdoor patio. “Patios bring people outdoors. It makes for a safer, busier street and a more enjoyable atmosphere,” said Don Kellett who co-owns Donaleigh’s Irish Pub with partner Steve Ricalis. A sense of pride and enjoyment of the downtown core are some of the many benefits of the increasing number of patios downtown. Visitors often note the beauty of downtown Barrie, whereas in the past many residents and tourists would drive through downtown with their windows rolled up. “The business owners and the residents are really starting to take great pride in their downtown and a lot of credit goes to our downtown BIA and our mayor’s leadership,” Kellett observed. Cold weather tends to see people hibernating indoors, but when things heat up they want to get out and enjoy the summer. What better place to enjoy the warm weather than on the front or back patio at Donaleigh’s. Since it’s 2010 implementation, the front patios along Dunlop Street East have become increasingly more popular transforming the downtown. The sidewalk patios make for a safe and fun, family-friendly space for Barrie residents and tourists to enjoy the summer weather. “This has been an extremely positive venture. It’s created a destination with the goal being a summertime

entertainment district for all ages to enjoy safely,” Kellett said. Indeed, thanks to pubs and restaurants like Donaleigh’s as well as the wider revitalization efforts of Barrie Mayor Jeff Lehman and the Downtown Barrie Business Association (BIA) the downtown has become the go-to destination for residents and tourists. “Donaleighs is a great example of the success of the patio program. It creates a draw that people want to be a part of,” said Craig Stevens, managing director of the BIA “But what’s more important is the collective effect that the patios have created all together. The patio program has addressed many more elements within the downtown than may meet the eye,” he added. Upcoming summer events will keep the downtown core full to the brim, including the 38th annual Promenade Days and Kempenfest from August 1-4. Donaleigh’s will be right at the centre of the action. “There are so many festivals that Barrie puts on,” Kellett said. “Combined with Barrie Tourism and the downtown BIA, we try to use our space to do our part and show visitors a great time.” With fun rides for the whole family, games and live entertainment, these festivals and many more throughout the summer will see the downtown core celebrating in full swing, with thousands out enjoying the patios and the summer weather. Patios will be implemented even more in the future, said Craig Stevens. “Lastly, it highlights future opportunities of what our


WHISKEY BARBECUE SAUCE RECIPE {Makes: 2 cups of delicious Whiskey Barbecue sauce} Ingredients: 2 tbsp. butter 1 small onion, finely dried 1 cup ketchup ¼ cup apple cider vinegar ½ cup maple syrup 1/3 cup Bushmill’s Irish Whiskey ¼ cup Dijon mustard 3 tbsp. hot pepper sauce 2 tbsp. But a full-on renovation of the original kitchen, living room and front hall foyer of the circa 1980s residence seemed fraught with decisions and, frankly, a FOYER bit overwhelming. In that way, we were able to do it on budget and on time.” The Elliotts’ 679-square-foot main floor was divided into living room and kitchen areas by a structural wall. Despite large windows in both rooms, the spaces were gloomy and felt cramped. The living room’s deep taupe walls, black leather couches and dark brown armchairs, though chic in their day, now created a cave-like atmosphere. The light from the kitchen’s attractive glass French doors and generous bay window were going to waste. Catherine and her design team consulted with the Elliotts to find out what they wanted from those rooms. “We found the need was to change the layout to suit how they wanted to function in the space. Their family is growing and the new layout gives them the opportunity to have a larger dining space. It’s a much better layout.” With no wall between the two rooms, a new entrance for the living room and a wall built where the hallway formerly entered the kitchen, the new main floor layout creates an airy openconcept living room/kitchen with more floor space. However, the finishings make it feel even more spacious. Fresh white walls and ceilings painted in Benjamin Moore’s Abalone (#210860) appear set back and lofty. Pearly pantry cabinets, built-in by Norcab Kitchen & Millwork Co. Inc. in Barrie, give an illusion of height to a dining area accentuated by soft recessed lighting and warm maple wood flooring. Light from the front and rear windows now flood the space. The transformation is so complete that it hardly looks like the same house. “It’s completely different. It’s a dramatic before and after. It was a basic builder’s house and they don’t do any of the extra lighting when they build. It’s nice when you are designing a complete plan because you incorporate the lighting into the plan. You know where the tables and all the cabinets are going to be so it makes things much easier in that respect. The recessed lighting just cleaned things up and provides a much better quality of lighting.” The kitchen’s appliance and dining areas were switched and a custom bar with Caesarstone counter and seating was added in between. The exterior wall now sports a contemporary floor-to-ceiling split rock granite fireplace flanked by sleek custom cabinets fit flush. “We had the depth of the fireplace to deal with and we took advantage of it.” New furniture pieces were selected for the


living room’s updated look with help from their interior designer. Inviting armchairs, smooth glass lamps with white shades and a cushiony chocolate couch with punchy green and striped pillows are watched over by black and white photos of the Elliott children. “We were able to look for furniture that fit to scale,” says Catherine, whose company’s showroom allows the designers to source furnishings from all over including several unique and different lines. “That was all part of the initial budget from the planning stage and we worked within it. When it comes to selecting furnishings, that’s where we can help. We narrow the choices down to about three. Once the clients approve the plan and decide where they want the furniture, we pull out all the finishes and take them through an exercise of finding what looks they are trying to achieve and what appeals to their eye. Then we pull out three finishes that work and are within the budget. The Elliotts work full-time and travel often so this helped save them a lot of time.” In the front hall foyer, a unique mirror set behind a custom floating shelf reflects lambent light from the white walls and entryway windows. The Travertine stone floor installed in the foyer and hallway makes the space look substantially wider. “It does look much bigger but it is exactly the same size. Colour can make such a difference. Also, having a mirror cut at a local mirror or glass store makes a great change but doesn’t take much to do. Changing the railing on the staircase modernized the foyer as well.” With a gradual renovation of their home’s second floor completed before the main floor renovation, the couple now has a virtually new home. “We did the reveal, and Susan cried,” says Catherine. “It is a much more contemporary looking home now.” The Elliotts are delighted with their ‘new’ home. “I continually marvel at how the transformation of our main floor has added not only to the day to day function of our lives but more importantly the value it has added when we host our family and friends,” says Susan. “The change has been priceless and it still amazes me how much larger the main floor seems from the renovations. There is not one thing I would change.” Describing her company as a one-stop shop that creates designs and sources contractors and trades, Catherine and her team carried the

Elliotts’ project from design, through the build, to the time the couple returned home after an enjoyable stay with a daughter. “No one person can know everything so we are a team of five designers,” says Catherine. “We brainstorm ideas together. I have always had Henry Ford’s philosophy. He didn’t know how to build a car, but he surrounded himself with all of the genius that he needed to build a car. Our philosophy is the same.” For homeowners considering a renovation, here are a few suggestions from Catherine: Don’t be afraid to use white on your walls. It is a great energy colour that comes in several shades and makes spaces look bigger. If you are thinking about moving, remember it is more cost effective to stay in your home and renovate than to move. If you love the neighbourhood but can’t stand your basement, talk to an interior designer before you list. Above all, plan your renovation thoroughly before you buy a can of paint or a box of nails. “If you plan properly before you start, everything can be ordered so that when the contractor is ready, everything is ready to go,” advises Catherine. “Then you finish the project much faster and are not out of your house for too long. It’s worth investing in having the proper plans done in advance.” The Elliotts know the wisdom of that advice as they enjoy their luminous new living space at McConkey Place.

hen it comes to creating privacy in the garden, homeowners are no longer satisfied with a fence around the property line. For many years, that five-foot fence with the piece of lattice on top combined with a few strategically placed trees was the default method for creating visual separation from the neighbours.

Today, many homeowners think of their outdoors space as an extension of their home. Backyards have become a favoured social hub for relaxing, playing, and entertaining. But with close property lines, simply putting up a traditional fence may no longer be enough when it comes to creating privacy in these open-air living spaces. So now what? You may not be able to draw the curtains, but you certainly have options to create a hushed oasis outdoors. Think about your space as an outdoor room. Maybe it’s time to add walls, or even a roof!

A pergola is my favourite way to add privacy while creating a finished look in your outdoor space. It frames your deck or patio and allows you to reintroduce greens and colour through climbing plants or even fabric panels

Rethink your tree line Trees are still a great option to create privacy, but you have to do it right! In my opinion, too many straight rows of cedars have been planted in Canada. Nothing in nature grows in a straight line and yet we’ve planted these rows so much, that they don’t even look odd anymore. The other big challenge with trying to create privacy with evergreens is the shape of the tree. Most conifers are pyramidal in shape, meaning that they are wide at the bottom and small on top…right where you want the privacy. Instead of planting a row of cedars, try combining them with a few fast growing deciduous trees. I love using aspens with my evergreens. Here is how I add great privacy using a row of trees. First, create a line with landscape paint, string or even a hose on the ground. Start at one end of your row by placing an evergreen on the backside of your line. The next evergreen is planted two or three feet down the row on the front side of the line. The third tree in the row is the aspen, again on the backside of the line. Add two more evergreens on the front, followed by another aspen on the back and so on for the length of your privacy hedge. The aspens fill in the empty spaces around the top of the conifers and by alternating types of trees along the row, it looks incredibly appealing in your yard.

Put up a pergola A pergola is my favourite way to add privacy while creating a finished look in your outdoor space. It frames your deck or patio and allows you to reintroduce greens and colour through climbing plants or even fabric panels. Pergolas are simply four posts and some cross pieces of wood that loosely create an outdoor roof over a deck or patio. The reason that these structures work so well is actually a bit of a visual trick. The pergola overhead provides the eye a distraction. It gives the eye something to focus on so the area feels intimate and secluded. Pergolas, of course, take some planning to install. I advise my clients to choose materials that are built to last and weather our Canadian seasons and don’t require upkeep year-after-year. I love rich-looking woods, but using cedar can double the cost of the project. Lately, I’ve been recommending a new type of wood called MicroPro Sienna for my clients. It looks just like cedar, but costs significantly less. This pressuretreated wood uses a brown stain that they are able to get deeper into the wood and that protects your pergola longer, so you don’t want to have to climb a ladder to re-stain the wood every spring. Plus, it’s environmentally certified, so it won’t run toxins into your lawn.

Play with a privacy screen For the last few years, privacy screens have been the immediate fix for many condo dwellers and homeowners. Putting up a simple privacy screen between you and the neighbours has never looked so good or been so easy. With outdoor materials and fabrics, tri-fold privacy screens are a temporary decorative piece that can add colour and character to any deck or balcony. The key to maximizing the benefits of a privacy screen is to put it close to where you need the most protection but far enough away that it doesn’t crowd your useable space. Stand on your deck or patio and take a look around you. Who do you see? If you can see your neighbours, then your neighbours can see you! Try some of my suggestions at creating privacy in your space and enjoy this summer in your private sanctuary.

FResco caFé and cateRing, 105 cundles Rd w, BaRRie (705) 739-9965, FRescocaFe.ca This delightful salad is courtesy of chef Paul Christiaans of Fresco Café and Catering in Barrie. “I featured this salad during the month of may and it went over really well,” says the local chef, who also offers cooking courses at his café. If you don’t like the harsh taste of garlic, try roasting it first, he suggests. If roasting, you may need to add a few more buds for flavour. Tabbouleh is bulgar wheat with chopped mint and parsley. It can be purchased at your local supermarket. Simply follow the cooking instructions on the package. Leftover dressing can be stored in the refrigerator for up to 1 week, and can be used on other salads.

2 lemons, fine chop the rind of one and squeeze the juice of both Sea salt and fresh ground pepper, to taste

1/2 cup lemon and herb vinaigrette (see attached recipe)

Chopped fresh tarragon, to taste

PREPARATION: 1. In a blender on high, cream the dijon mustard and sugar together, scraping down the edges periodically. 2. Once the sugar grains are “creamed” (you will see the colour of the mixture lighten) add the garlic. 3. Continue to purée. Slowly add the oil ensuring that the oil incorporates with the mustard/sugar mixture. If it starts to thicken, add a little vinegar. Alternate adding both oils and vinegar until all is used. 4. On slow blend, add the lemon juice and rind until desired consistency. If it is still too thick, adjust using a little warm water.

PREPARATION: 1. In a large bowl, mix together romaine, spinach, chicken, cucumber, tomatoes, red onion, chickpeas and 3⁄4 of tabbouleh. 2. mix thoroughly with the vinaigrette. 3. Lay endive on side of bowl and place the salad contents in the middle of the bowl. 4. Top with feta cheese and sprinkle with a little tabbouleh. Enjoy!

5. Season to taste with sea salt, fresh ground pepper and finish with chopped tarragon. Chill.

{Serves 6} 4 medium beets (about 1 pound without greens), washed and trimmed Salt and ground black pepper, to taste 1 Tbsp olive oil 5 tsps red wine vinegar Pinch of sugar Pickling Liquid

Beet Variation and Goat Cheese Salad This lovely beet salad is courtesy of the Mill Cafe’s chef Jordan Fraser. “This beet salad recipe is a bit intricate, but worth the effort because it’s delicious,” says the local chef. You will need to prepare the beets 24 hours in advance.

1 cup white wine vinegar 1-1/4 cup water 3/4 cup granulated sugar 1/2 Tbsp coriander seeds 1/2 Tbsp mustard seeds 1/2 Tbsp black peppercorns 1 Bay leaf PREPARATION: 1. Adjust an oven rack to the middle position and heat the oven to 400F. Place all beets in a bowl, and drizzle with oil and season with salt and pepper; stir to combine. Wrap the beets in aluminum foil and place the wrapped beets on a shallow roasting pan or a rimmed baking sheet. Roast until a fork inserted in a beet comes out easily, 45 minutes to an hour. 2. Remove the beets from the oven and carefully open the foil packet. Once the beets are cool enough to handle, peel the skins. Slice the warm beets and slice into wedges; divide equally into three separate bowls. 3. First bowl of beets (puréed): purée hot beets in blender until smooth. While puréeing add red wine vinegar, pinch of sugar and season to taste with salt and pepper. Once smooth, pass through a fine strainer and let cool. Set aside. 4. Second bowl of beets (roasted): Season to taste with salt and pepper. Set aside. 5. Third bowl of beets (pickled): In a medium saucepan, combine all pickling ingredients. Bring to a boil, and turn down to simmer for 15 minutes. Shut off, strain, cool, pour over beets and cover. Allow to pickle for at least 24 hours. 6. All beets can be placed in refrigerator until ready to serve.

Stir sugar and 1/8 cup water in heavy medium saucepan over low heat until sugar dissolves, brushing down sides of pan with wet pastry brush. 2. I ncrease heat and boil without stirring until mixture turns a deep amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 8 minutes. 3. Mix in nuts. Immediately pour out onto foil, separating nuts with fork. Cool completely (mixture will harden). Set aside. GOAT CHEESE 1/2 lemon (zest and juice) 1 Tbsp whipping cream (35 per cent) 1/4 cup chopped fresh parsley 2 logs (140 grams each) goat’s cheese Salt and pepper, to taste 2 eggs 1/2 cup flour 2 cups panko flakes Olive oil SALAD 20 oz spring mix (about 16 cups) 1/2 thinly shaved fennel bulb Balsamic Dressing

PREPARATION: 4. Balsamic Dressing: Over medium-low heat, place a tablespoon of oil in a small frying pan. Add the minced shallot and let it sweat. Once sweated out, remove from heat. Place all ingredients in a blender or food processor, with the motor running add the oil until combined. Season to taste with salt and pepper. Store in refrigerator. 5. Goat Cheese: In a medium bowl, whisk together lemon juice, lemon zest, whipping cream, chopped parsley and goat cheese; combine well. Season to taste with salt and pepper. Divide cheese mixture into 12 equal parts. Roll each piece into a ball; roll each ball in the flour and lightly coat. Dip into the egg mixture, turn the ball to coat in the panko flakes, pressing the flakes into the cheese. Repeat until all cheese balls are coated. Flatten each ball gently with your fingertips into a disk about 1-1/2” wide and 1” thick and set on a parchment paper-lined baking sheet. Transfer the baking sheet to the freezer, about 30 minutes. Adjust an oven rack to the top position; heat to 475F. Remove cheese from freezer and brush with olive oil. Bake until the crumbs are golden brown, 7 to 9 minutes (longer if the cheese is frozen). Using a thin spatula, move cheese to a paper towel-lined plate and cool.

Set aside. 3. On an oiled grill or barbecue, grill salmon on both sides (approximately 8 minutes) until salmon is nearly cooked. Brush glaze over the fillets and turn over to let caramelize for another minute. 4. While the salmon is cooking, toss the salad ingredients with the dressing and place the salmon fillet on top. Garnish with chopped cilantro and toasted sesame seeds.

PREPARATION: 1. For the pickled onions: julienne red onions and place in a non reactive bowl (such as glass). In a medium sauce pan, over medium-heat add bay leaf, mustard seeds, fennel seeds, chili flakes, vinegar and white sugar. Bring to a boil. Strain pickling liquid over red onions and cool. 2. Assembly: Chill eight salad plates in the refrigerator. Remove rind from the watermelon and cut into large dice. Cut feta cheese into a large dice. 3. In a large bowl mix together the watermelon, feta cheese, olive oil and cracked black pepper. 4. Remove plates from fridge and place arugula in the centre of each plate, reserving some for garnish. Place watermelon on top of the arugula. Garnish with pickled onions, arugula, and drizzle with aged balsamic.

Attention burger lovers! Kenzington Burger Bar (KBB) in downtown Barrie is worth checking out. “For the past three years, we’ve been cranking out amazing gourmet burgers,” says owner Brandon Clark. The local restaurant features over 22 mouthwatering and creative burger combinations. Recently, this GoodLife reporter caught up with the busy 32-year-old at his popular 235-capacity (340 with patios) eatery. After settling into an open-air street front table, it quickly became apparent that Clark knows most of the people strolling by his establishment. Between friendly waves and hellos to the passersby, the young entrepreneur dished about everything from the secret to making great burgers to his expansion plans (including taking over Tropical North Surf Shop). GoodLife: Let’s start with a compliment. My 13-year-old son is a burger connoisseur, and he says KBB serves up the best burgers in town. Brandon Clark: Thanks! Our goal is to serve up some of the most creative, mouthwatering burgers this side of Toronto. GL: Judging from your impressive Trip Advisor rating, you’ve achieved your goal. BC: We’re pretty excited about our current rating [pulls out his phone to share the latest figures]. KBB (at press time) is listed as ‘number 1 out of 377 Barrie restaurants,’ and we’re working hard to maintain our rating. It’s insane how many people find us through Trip Advisor. GL: In 2007, you opened as a live entertainment venue. Why switch over to a burger bar three years ago? The current gourmet burger craze must have played a role in your decision. BC: I’ve always been very passionate about burgers. It’s the most versatile platform for food because you can customize every aspect of it. thing they like. As for the current burger craze? We definitely got in on the ground level. GL: You were only 25-years-old when you opened. How did you scrape together that kind of cash? BC: I borrowed some money from my parents and partnered up with Mark Porter. I learned a lot from Mark and wouldn’t be where I am now without his help, along with the huge amount of support from both family and friends. Two years into the business, I bought Mark’s shares and took over as the sole owner. GL: What led you down the restaurant/bar path? BC: I’ve always been passionate about food and the hospitality industry. Even my first job at 15 was at McDonalds. Later, I spent several years working as a server/bartender while attending college for computer programming and mechanical engineering. I tried the nine-to-fiveoffice-job thing, but it just wasn’t me. Working in restaurants and bars just feels like home. I love the atmosphere, the people are amazing, and every day is different. I wanted to open a

place in Barrie because it’s my hometown. GL: Did you do any burger research? BC: To get inspiration, our team travelled to Chicago to check out the food and craft beer scene. We found a couple of really interesting spots and our whole concept was based on that trip. Chicago is a great food town. GL: Let’s hear about KBB’s four-step ordering process. BC: The ordering process allows you to customize any of our 22 different burgers. First, you pick your topping combination (too many to mention), your bun (brioche, pretzel, glutenfree, tortilla wrap or grilled cheese) and then your protein (KBB beef, grilled chicken, fried chicken, ground turkey or black bean and quinoa veggie). After that, you have your choice of side dish (Yukon fries, salad, garlic parmesan fries, sweet potato fries or onion rings). KBB beef is our signature burger blend. It’s a special blend of local beef and, like everything on our menu, it’s done in house.


GL: What’s the most popular burger? BC: In terms of toppings, it’s a three-way tie between the Kenzie (fried egg, cheddar and bacon) the Rodeo (onion rings, bacon, ranch and mozzarella) and the Californian (avocado, Monterey Jack, bacon and chipotle mayo). GL: What about your outlandish specialty burgers? BC: We have a few of them, such as the PB & J (peanut butter, grape jelly and bacon). It’s actually pretty tasty and sells really well. It’s one of those weird combos that really makes sense when you eat it, but the idea of it is kind of scary [laughs]. Another fun burger is the Grilled Cheese (cheddar and bacon, served in between two grilled cheese sandwiches). It makes for a crazy meal and people love to photograph it and post it on social media. Actually, people constantly whip out their cameras when their food arrives to post our burgers and drinks online.

BC: We deep-fried chocolate bars and they are delicious! We batter them up, fry them and serve them with Kawartha Dairy ice cream. We’ve done everything from Cadbury Cream Eggs and Reese’s Peanut Butter Cups to Mars Bars. We also have a dessert poutine, featuring funnel cake fries, mini marshmallows, chocolate and caramel sauce. GL: Do you just serve burgers? BC: We have a “not burgers” menu section. Popular items include Avocado Chicken Club (grilled chicken breast, avocado, roasted red peppers and bacon), Nona’s Sandwich (fried chicken breast, marinara, mozzarella and par-

Burgers are great to play with because we can do anything we want with them, and it’s always nice to see the big smiles on people’s faces when they see them for the first time. GL: Where do you find culinary inspiration? CL: Everywhere! Sometimes we’re at the market and find a certain product that we want to work with. Other times, it could be something we see on TV, or from a random conversation about a meal someone had at a restaurant in another country. I really try to push the envelope and challenge myself every day. GL: What do you cook at home? CL: Lately, I’ve been cooking a lot of classic family-style dinners. Pastas, roasts, soups, pot pies, tacos and pizzas — really almost anything! I play around with meals and find fun ways to make familiar flavour profiles as toppings for our burger specials.

Our Kitchen Sink burger is truly a challenge and nobody has finished one yet. The Kitchen Sink (features one pound of beef, half-a-head of lettuce, one onion, one tomato, six slices of cheddar cheese, six pieces of bacon, four pieces of peameal, three jalapeño poppers, three fried eggs, poutine and onion rings on a huge onion ring bun and served with fries). It costs $40 and requires 24 hours notice. About once a week, someone attempts to eat one. GL: What’s the secret to a great burger? BC: First and foremost, you start with highquality ingredients. Beyond that, you need a good fat ratio in the patty. Never squish the patty while you are cooking it, and only flip it once. Finally, when assembling the perfect burger, it’s really important to have a proper balance of meat, bread and toppings so that one item doesn’t overpower the other items. GL: What about specials? BC: We feature a burger of the week (#BOTW) and a burger of the month (#BOTM), which we post on social media. We push the envelope with our burger specials. For example, our current feature has watermelon on it [smiles]. The #BOTM is new. Each month

GL: Let’s pass it over to KBB chef Connor Love. Describe your cooking philosophy? Connor Love: To have fun with food and make good quality meals for family and friends. I always try to keep things simple, while working

GL: How do you wash down those burgers? BC: Our big push for the summer is our expanded craft beer menu. We’ve also implemented a new cocktail program with lots of fresh juices and fabulous ingredients. It’s a really fun drink menu, featuring classic cocktails with a modern twist. Our Caesar Slider is very popular because it’s topped with a mini burger (see attached recipe). GL: KBB’s decor is pretty funky. Located in a historical building, it features exposed brick walls, a black hammered tin roof, industrial ceiling fans and a large black wooden bar. Tell me about its atmosphere. than anyone else in the room.’ We try to portray that with our food, our staff and with basically everything that we do. Our goal is to make sure that everybody leaves here happier than when they came in. Some people think we are just a late night rock and roll bar. Sure this place gets rocking late at night, but, up until 10 p.m., we’re family-friendly and even have a kids’ menu. GL: Let’s hear about KBB’s live music. BC: It’s what we’re known for. We do live music seven nights a week starting at 10 p.m. On Saturdays from 2 p.m. to 5 p.m. we feature jazz and blues with Joe Huron. GL: Any plans for the future? BC: We just purchased Tropical North Surf Shop next door so we’re in the midst of expanding. Tropical North will now become a two-level store, and we will add 150 seats to KBB. Seats will be added by pushing into the back section (of Tropical North) and by adding space to both the front and back patios. Tropical North will remain a clothing and board shop, but it will allow both businesses to be more integrated with one another. GL: Beyond the real estate, why buy Tropical North? BC: It’s where I buy all of my clothes and I do most of the board sports that the store stocks. It just seemed like a good fit. GL: Any interesting tidbits about your historical buildings? BC: They were built in the late 1800s. I know they were damaged by a big fire because during renovations we uncovered a bunch of burnt support beams. From what I understand, the buildings were once a large clothing store owned by two brothers. At some point, they had a falling out and the buildings were separated. The tenant before KBB was Reggie’s. GL: Tell me about the Kenzington Burger Truck? BC: It’s going to be all over the place this sum-

We roll in around 11 p.m. and serve up sliders, poutine and fries. People love it! GL: Besides KBB, what’s your favourite food destination? BC: People can always find me at the North (thenorthrestaurant.com). Marco and I got into the industry in Barrie around the same time and we’ve become very good friends. I’m also a huge fan of Scoops and Cones (scoopsandcones.com), a local ice cream shop

at the Barrie Marina that serves up Kawartha Dairy ice cream. It’s always a great way to end a day while enjoying our waterfront. GL: You’ve got the ear of thousands of local diners, anything you’d like to add? BC: We’ve recently been in contact with the Food Network about a feature on the restaurant, so that’s kinda cool. I don’t know if we’ll get picked yet, but our fingers are crossed. It’s just crazy how big the following has gotten for KBB. People love our burgers, and it’s great to be recognized for some of the fun stuff that we’ve been doing. »

Created in a small lodge kitchen at Deerhurst Resort in Huntsville, Belly’s gourmet adult ice creams and sorbets are available across Ontario in more than 30 retail stores, and at select scooping shops. Starting this summer, Miller’s Dairy in Creemore will be the company’s official milk supplier. Belly Ice Cream is available locally in pints at Nicholyn Farms, the Creemore 100-Mile Store and Midland’s Ciboulette et Cie. Along with take-home containers, Local Foods Mart in Barrie sells the gourmet ice cream by the scoop from May to September. “This summer we’ll be stocked up with Belly Ice Cream,” says Local Foods Mart owner Julian Daniel. “Normally, we sell about six flavours, but this summer we’re expanding the store and adding a patio so more flavours will be on offer.” His customers tend to have a soft spot for Belly Ice Cream’s 16 Vanilla Bean, Callebaut Chocolate Straight Up and Chocolate Dipped Ontario Strawberry. Why does Local Foods Mart only sell Belly Ice Cream? “It tastes absolutely scrumptious,” explains the fine food shop owner. “Chef Shelley Westgarth makes each tub by hand, using real milk, eggs, cream, and genuine local ingredients like strawberries, maple syrup and rhubarb from her mother’s garden. Just like she says, ‘no funky stuff.’ ” Daniel adds that Hollywood A-listers also love Belly Ice Cream.

Located in downtown historic Beeton, Cremahh is an artisanal gelato company worth checking out. “I love making gelato and introducing people to the full gelato experience,” says owner Sabina Morell, who set up shop last year. Before diving into the gelato business, Morell travelled to Italy to study with some of the world’s best gelato masters. “These hard-core gelato makers taught me how to create exquisite artisanal gelato with bold pairings and inspiring recipe combinations,” she explains. Cremahh’s gelato is made fresh daily using all-natural ingredients. Local and seasonal ingredients are key. From maple syrup to local berries, Cremahh gelato takes full advantage of nearby crops. When you order a frozen yogurt at Sheldon Creek Dairy, you might spot the cow that produced the milk grazing in a nearby field. “Like all of our milk and cream products, our frozen yogurt is farm fresh, natural and local,” says Marianne den Haan, whose family has operated a dairy farm on the property since 1953. Ice cream enthusiasts can enjoy their cones outside on the patio, which features picnic tables, benches and umbrellas. ‘PEACE OF MIND FOR Wherever You Vacation, Keep Your Family Safe From Fire From cottage retreats in Ontario’s north to RVs and cabin cruisers travelling the province’s pristine waterways - fire does not discriminate. In Ontario, permanent homes, RVs, trailers, cottages and boats with living or sleeping quarters are all treated the same way. They ALL require a working smoke alarm on every storey and outside all sleeping areas.

Ontario’s Fire Code applies to ‘dwelling unit’. This term includes seasonal homes, such as park model trailers, cabins, cottages, boats, trailer homes, 5th wheels, motor homes and other recreational models, such as pop-ups.

It’s an invaluable reminder, as peak vacation season is upon us. Local fire departments, the Fire Marshal’s Public Fire Safety Council, and Kidde, Canada’s leading smoke and Carbon Monoxide (CO) alarm manufacturer, are working together, to ensure our love of recreation does not overshadow family safety. The program, aptly named, ‘Peace of Mind for Your Piece of Heaven’, is in its 8th consecutive year. “Fire safety is not just for homes. It’s for cottages, cabins, seasonal hunt camps, RVs, trailers and mobile homes too. You may have less than one minute to escape in any one of these dwelling units,” says Ted Wieclawek, Chair of the Fire Marshal’s Public Fire Safety Council. “It’s the law in Ontario to have working smoke alarms on every storey and outside all sleeping areas, in all of these spaces.” It’s a myth that smoke and CO alarms last forever. Another myth is that hardwired alarms never need to be replaced, in fact, they adhere to the same replacement rules as battery-powered alarms. “Smoke alarms must be replaced every 10 years, and likewise, any CO alarm made before 2008 should be replaced,” says Carol Heller, Home Safety Expert, from Kidde Canada. “Check the age and condition of smoke and Carbon Monoxide alarms to ensure they are working.”

If you don’t have a CO alarm, and your dwelling unit has a fuel-burning appliance, a fireplace or an attached garage, install one for your safety as is mandated under many municipal bylaws in Ontario.

Remember, all fuel-burning appliances whether they are fuelled by wood, gas, oil or propane are potential sources of CO. It is essential to maintain your fuel-burning appliances and venting, and get an annual inspection.

It is critical to create and practise a home escape plan. Make sure everyone knows two ways out of every room, if possible. Determine who will be responsible for helping young children, older adults and guests who may require assistance.

REMEMBER Laws apply to all types of residences – not just traditional homes! This includes cottages, trailers, RVs, cabins and any boat with living or sleeping quarters.

Seated on a serene knoll between the east and west ridges of the Beaver Valley, the lightfilled aerie named Hill House by its smitten owners offers myriad of stunning landscapes and magnificent water views in every direction. From the west-facing second floor deck of the three-level home, the owners sit and quietly trace the path of the sun along the mountain tops until it descends in a meltingly beautiful sunset. After dinner, they retire to the third floor’s east-facing loft furnished with cozy chairs

in front of floor-to-ceiling windows to watch the progress of the moon as it calmly travels the night sky along the ridge. It was the 360-degree view afforded by the property’s location that delighted the owners when they stopped at a for sale sign during a drive in 2000. Standing on the site was a piece of history – a modest two-storey Swiss ski chalet built by Sir John Templeton in the 1950s. The creator of the Templeton Growth Fund retreated to the chalet periodically to read, write and have

The property was later sold to actor Jan Rubes who sold it to orchard owner Sakka Dykstra. When the current owners saw the old Templeton chalet, it housed orchard workers who picked apples from the 8,500 apple trees on almost 93 acres of orchards surrounding the house on the knoll. amplify the natural light, all walls are painted white. The result is an atmosphere of airy ease, coloured by the owners’ much loved paintings. The Dancers, a large oil painting once rented and later bought by an owner from the Art Gallery of Ontario, complements the colours of the antique beech barn beams used in the home. Considering its position among the fruit trees, the 3,000-square-foot home was fittingly designed by Thunder Bay architectural firm Kuch Stephenson Gibson Malo to resemble a barn. However, the metaphor also extends into the home’s interior. All beams used in the post and beam design are authentic 100-yearold beech beams from a local barn supplied by Antique Flooring in Markdale. The tawny coloured flooring through most of the home and all stairs were made from cutting the same beams into lengths. The owners wanted an industrial but cozy feel for their scenic home and the firm supplied it, site literally unseen. The owners dealt with two architectural firms that delivered citystyle house plans. But an architect at Kuch Stephenson, who was a fraternity brother of an owner, understood their request for a small space suitable for two people with grown children and with as little in the design as possible to block the breathtaking views. a double-sided fireplace and floor-toceiling windows on every side of the house, was just about perfect. The plan featured no less than six decks, three on the main floor and three on the second floor, to enable the couple to see the sun and moon rise and set, watch storms blow in from the west, chart the many moods of Georgian Bay and gaze at their long dirt lane running through the orchards. The couple happily moved into their unique home in 2005 after watching its progress on many weekends. “It was kind of fun to see it evolve,” says one owner of the progressive pairing of contemporary, industrial elements like the foundry door from Hamilton that serves as the master bedroom door with a weathered apple ladder used by pickers long ago. Local materials were used as much as possible throughout the house including the barn beams, acid-washed zinc metal baseboards and artisan-made grates. “It’s interesting,” comments an owner. “People either love the house or they don’t because they are more comfortable with separate rooms. Every day, I get up and appreciate where I am. It’s just so magnificent and the view is so special.” The master bedroom, tucked into the second level beside the Great Room, has transom windows near the ceiling to let in the sunrise glow as well as windows facing the water. here,” she says with a smile. “It’s really a great run. We’re also very close to the ski hills for when we want to go skiing.” However, with the snow gone and apple blossom season on its way, the owners are making use of their fire pit and its surrounding Muskoka chairs on the north side of the house. The view from the fire pit of Georgian Bay and the neat rows of apple trees bordered by tall forest is wonderful all year, but particularly so in the spring when the hill is white with fragrant blossoms. The cool spring nights are also a good time to retire to the upstairs loft. “We come up here and have a cocktail at night because the moon comes up over the mountain,” says the owner. “The moon moves like the sun does. It’s phenomenal in the fall because you have the big harvest moon. It’s gorgeous. The most beautiful time for us is the springtime because all the blossoms come out on the fruit trees and it’s like being on a cloud. But the second most beautiful time is the fall when the apple pickers are here and the apples are on the trees.” While living at their hill-top home, the owners have learned to track the path of the sun throughout the year. “Every night, starting on June 1st, the sun goes right down to where the land goes down in elevation in the north,” she explains. “That’s where the sun sets. But on Dec. 21, it sets at the other end of the ridge. It’s phenomenal. We sit out and watch the sunset. In fact, I run home to make sure I see it. You make dinner and have a glass of wine, sit down, watch the sunset and chat. You enjoy nature for a few minutes, the serenity and the beauty. You can’t come to a place like this and not enjoy the sunset and the sunrise. You just can’t. when akiko currie opened her architectural firm, FoRmwoRks inc. architects, in 1989, she never dreamed that 25 years later she and her husband, keith, would also be selling unique art objects, furniture, and one-of-akind pieces of home décor furnishings from their collier street, Barrie location. But that’s exactly what happened when they opened the doors to the design boutique, Red Fox Kitsune, in May. Kitsune pronounced (Kee-tsu-neh) is the Japanese word for fox. Stories depict them as intelligent beings, possessing magical abilities that increase with their age and wisdom. The Kitsune is an important animal in Japanese mythology – a shape shifter, changing forms to become human and generally considered to be a good omen. According to Currie, these were all great characteristics for their newest venture. And, for fans of the 1970s TV series Sanford and Son starring Red Foxx, the name Red Fox Kitsune seemed a fitting homage. Combining Akiko’s architectural talents with the Currie’s combined passions for design, fun and all things interesting, Red Fox Kitsune became home to an eclectic array of beautiful, unusual, and inspirational surroundings for the home or office. Although her Asian roots have clearly influenced her style, as evidenced by some of the décor, such as the sliding barn door with charred wood design, she is quick to point out she finds inspiration everywhere. Her goal is to share those finds and her love of design with everyone. “We want people to find things they weren’t expecting,” says Currie, “things that make them smile.” Clearly, they have met that goal. As a lover of all things open-air market, I relished the street upon street of goods and was surprised they weren’t more crowded. It was the perfect reintroduction into Thai culture. It also made me realize how inexpensive things are in Thailand. The following day I had another dose of Thai culture with a visit to the Grand Palace, the Emerald Buddah, Wat Pho and Arts of the Kingdon Exhibit. By the end of the day, I was exhausted and enjoyed a casually elegant dinner at the hotel. After a good night’s sleep, we set out for Chaing Mai. Located in the northern part of the country, Chaing Mai is the most culturally significant and largest city in northern Thailand. Located amongst the highest mountains in the country, the city is encompassed by a waterfilled moat and large walls, creating a sense of history and culture. Tourists from all over the world visit this beautiful city for its festivals, open-air markets, cooking schools and, my personal favourite, elephants. The highlight of Chang Mai for me was painting with the elephants at Elephant Life Experience. Situated just outside of Chang Mai, Elephant Life Experience allows visitors the opportunity to interact with one of the most

interesting and awe-inspiring animals on the planet. Although tame and trained, the elephants are in their natural habitat set in the beautiful and tranquil hills surrounding Chang Mai. This unique experience gave me the chance to step into the river with the elephants, spend time with their trainers (manhout) and learn about their reward-based approach to encouraging the elephants to paint. Each elephant is different and has a different style of painting. Overall, my Elephant Life Experience was wonderful and I came home with a beautiful souvenir, an elephant painting. A must for anyone lucky enough to visit northern Thailand! The following morning I departed on Lao Airlines for my first trip to Laos. Bordered by Burma and China to the northwest, Vietnam to the east, Thailand to the west and Cambodia to the south, Laos is the only landlocked country in Southeast Asia. With a rich political history, Laos has recently become a popular destination for tourists, specifically students taking a year off to travel. Ground arrangements in Laos were hosted by the Ministry of Information, Culture and Tourism. I was picked up at the airport and went directly to the Villa Santi Resort and Spa. Similar to Thailand, I had dinner and some

“My Elephant Life Experience was wonderful and I came home with a beautiful souvenir, an elephant painting” shopping at Luang Prabang’s Night Market where hundreds of vendors display and sell their handmade handicrafts. I also took the opportunity to have another massage, it cost me $10 CAD and was one of the best massages I’ve had in all my years of travel. The following day I did a boat trip to visit Pak Ou Cave and Whisky Village, as well as Wat Visoun, the site of the impressive That Makmo Stupa. With its beautiful rounded domes, That Makmo Stupa was originally constructed in the early 16th century and is filled with hundreds of small Buddah images made from precious metals and crystal. If you’re looking for a place to get away from it all and just relax, this is the place. Laos is laidback, with fantastic and friendly people, great food and amazing architecture. The sense of history and the vibrancy of the country blew me away. Next on the itinerary was a flight to Hanoi, Vietnam. I wasn’t sure what to expect from Vietnam, but I was nicely surprised. Vietnam was exactly as I had pictured it: rice patties with oversized straw hats to block the sun and ox carts pulling goods. Although similar in certain ways, Laos and Vietnam are vastly different. The streets of Hanoi are an adventure. No stoplights mean you take a chance as soon as you step out on to the road. The food in Vietnam is excellent, the shopping is amazing and the people are friendly and welcoming. Vietnam offers beautiful beaches, gorgeous lakes and vast mountain scenes. I spent the first evening at Emeralda Resort and was impressed by the size of the rooms and the first-class service. 90 | GoodLife Barrie Edition - July August 2014 ■

While in Vietnam, I visited caves used as a hospital and to store ammunition during the war. I also took a daylong boat trip to visit Ha Long Bay-a UNESCO World Heritage Site. This unique bay has breathtaking views of crystal blue water and limestone pillars jutting out from the sea. The unique environment of the area created a biodiversity that includes greenery, ocean and seashore systems. Wildlife, birds and sea life are abundant here, making it a popular tourist destination. After a whirlwind and wonderful trip to Laos and Vietnam, it was back to Bangkok before returning home. Once back in Bangkok, at the Sukhothai Hotel, I couldn’t leave without having one last massage. Thailand is very safe, has great restaurants and five-star hotels with everything a traveller would need, including world-class golf courses. As a destination, or a stepping off point, Thailand has so much to offer. If I was to do it all again, I would do it the exact same way: start in Thailand, continue on to Laos and then end with a relaxing holiday in Vietnam.

In 2012, we were the Canadian Classic Barbecue Champions.” And the list of awards goes on. The team consists of Micheal, his 10-year-old son Aidan and mother Nancy. “We call ourselves three generations of awesomeness,” he laughs. Blowin’ Smoke has been competing for about four years.

Custom cuts and specialty orders (including a full brisket) can be accommodated. Along with fresh meats, ready-to-grill options are also on offer. “We really want to be known as Barrie’s barbecue headquarters,” he explains. From stuffed chicken breasts to marinated grilling steaks and pork chop explosions your barbecuing needs are covered. “Our dryaged steaks are the number one top seller.” Beyond the butcher counter, the two-yearold business features a cold deli, European groceries, baked goods, pastries, a freezer section full of prepared meals and gourmet delights, a coffee bar, a fresh produce counter and a hot deli counter. “Some of our specialty items include our famous veal sandwich, our amazing meatball panini, our award-winning pulled pork sandwich and our delicious lasagna. Along with barbecue trophies, the walls are also graced with Nancy’s father, Frank Cortese’s professional boxing photos. “My dad passed away almost 25 years ago, but was a great boxer in the 1940s throughout Canada, the US and Europe,” she explains. “Due to the fact that the media could never get his last name right, he fought under the stage name, Frankie Cordino. The shop is named in honour of my father.” Looking to the future, customers can enjoy an expanded hot deli menu and a larger variety of deli sandwiches. “It’s kind of fun, as many of our new sandwiches will be named after select loyal customers,” explains the local chef, who also teaches culinary arts and business at Humber College. Smoked ribs, smoked chicken and various salads have also been added to the lineup. Customers can either take-out or dine-in. Even butchery classes are on offer.
