is not there, directs focus to that which is. This use of negative space brings balance to a composition and conveys a deeper significance to the positive elements of the work. Hence the maxim,

The same holds true for design, and homeowners Chris and Stephanie Adams have intentionally utilized this principle of negative space in their design choices of minimalist décor, nonexistent clutter, and clean, tight lines to accentuate the extensive art collection situated throughout their stylish St. Vincent Street home in Barrie. The end result is a liberty of breathing space for both their collection of more than 60 works and for their busy lives. “We have art everywhere,” says Stephanie. “In bathrooms, laying on surfaces, on ledges, tables. It’s in the pantry.” The Adams, both highly creative individuals in their own right – Chris is a global software business owner and guitarist in the local rock band Sonic Coalition; Stephanie, a Realtor and aspiring actress studying improv at Second City –believe deeply in supporting the arts with both their resources and their time. In the past they’ve been participants in the Benefactors Program at the MacLwaren Art Centre and currently Chris serves on the board of The Barrie Film Festival. “All of the artwork was created by local artists and photographers,” says Stephanie. “I think it makes the space. When you’re surrounded by art, it brings out the creativity in yourself.” Although there is a gallery-like feel to their home, this deliberation of minimalist décor does not mean the home is unlivable by any means – on the contrary. An iconic Eames lounge and ottoman (circa 1956) in the great room invites a promising location for a good read of an Edward Rutherfurd tome. “I kick back and make my business calls from here,” says Chris. The sleek modern white sofa next to it, enveloped in plush cushions, frequently acts as a launching pad for their spirited seven year old and his pals. Stephanie decided to decorate in mid-century modern décor to complement the structure’s true spirit. “People want to change things and paint everything modern. I wanted it to be its true self,” she says. And what a remarkable property it is. Designed nearly 40 years ago in 1976 by a forward-thinking Dutch architect, 42 St. Vincent

St. employs ecologically progressive concepts for the home’s heating and cooling systems. The extraordinary solarium that runs from rooftop to basement of this three-storey residence is embedded with 60 tons of river rock, then topped with red brickwork flooring which performs as a natural heating element. “It’s almost like radiant heat,” says Chris Adams. “The house is situated with a southern exposure. So in the winter, sun hits the windows at the peak time. That’s why the architect picked this site. It needed a forest as well. The trees block the sun in the summer to cool the house. In the winter, the leaves are gone and the southern exposure heats the house.” Besides the obvious energy advantage, the massive solarium also serves as a potential yearround indoor vegetable garden. The owners use it for casual seating to enjoy the spectacular forest views out the windows. “I bought it because it was different,” says Stephanie. “I felt like I was in a treehouse because you are above the street. I loved all the materials in the house – the red concrete floor, the brick interior walls. I felt like I was in a forest, although I’m in downtown Barrie.” According to Stephanie, Frank Lloyd Wright, a visionary known for “bringing the outside in,” inspired the home’s structural design. The original fireplace embedded in the red brick wall in the great room was originally wood burning, and acted as an additional heat source. Built-in storage for a wood supply still remains but a former owner converted the fireplace to gas. The cozy dining room on the opposite side of that wall provides an intimate setting which tempts long drawn out dinner parties. Fresh white dining chairs with black wooden legs offset a substantial dark wood table over which a pendant lamp from a local lighting gallery hangs. “I like it because it reminds me of 1950s hotel looks,” says Stephanie. The original part of the house ended at the dining room, before a stucco extension was added to provide a larger kitchen. The kitchen offers three welcoming window seats with forest views on two sides. “Everyone who comes in here heads right for a window seat,” adds Chris. “I do it myself when I come home from work.” “The lights at night are beautiful,” adds Stephanie. Beneath each window seat is additional storage that rolls out for easy access to larger dishes. Solid cherry wood was used for this custom

The refrigerator is commercial grade SubZero with two impressive freezer drawers. A pot-filler sits expediently over the range. Keeping with the clean look, the Miele range hood over the cooktop is constructed of tempered glass. “Spray it with Windex and the grease just slides off,” says Stephanie. Move past the kitchen’s large breakfast bar with comfy padded leather stools and you find yourself in the open concept family room. En route, you will pass a much loved built-in Miele espresso system installed at chest level and housed in cherry cabinetry, all conveniently plumbed in. This cherry storage cabinetry continues into the family room with a handy workstation and corner hutch at the far end of the room that pulls the whole look together. A second gas fireplace with more artwork set high on the mantle sets the mood. The family room is a relaxed setting with dark leather sectional and sizeable coffee table awash in coffee table books. A walkout to a balcony here brings in light and views of the forest landscaping. “When the leaves are gone, there’s a wonderful view of the bay,” says Stephanie, which makes Chris, a sailboat racing aficionado yearn for the spring. Exit the kitchen and you will find the butler’s pantry behind a pocket door. Inside, a secondary fridge, built-in oven, dishwasher, double sink and extra storage await use. The wine fridge is also found here, making it quickly accessible to the adjacent dining room. Move down the hall and you discover a spacious office currently utilized as a toy room. The upper level of this exceptional 6,000-square-foot home offers a soaring bird’s eye view into the great room and solarium below. “You can really get a badass Christmas tree in here,” says Chris. The upper level offers a laundry room right where you need it, an office niche with built-in oak desk, four bedrooms – two are masters – and three bathrooms with skylight tubes in each (another energy saving concept that eliminates the need for energy use during daylight hours.) The new master in the home’s addition enjoys a see-through fireplace that looks through to the spa bathroom on the opposite side. modern barn on the property, housing seven horse stalls, with ample hay storage on the second level, an office, tack room and kitchen, assists in readying the steeds for a jaunt through the property’s 13 verdant acres of trailed bush. After a good ride, horses unwind in one of the three expansive paddocks complete with a roomy outdoor horse shelter. The property has five acres of cut lawn that helps to highlight the spectacular log house that welcomes riders home. Rise up the front steps of the flagstone wraparound porch and you enter the great room, with its 19-foot cathedral ceilings and red alder floor. A rustic industrial trolley coffee table surrounded by cushy brown leather sofas calls out to tired muscles. “Every single couch in the great room is a La-Z-Boy recliner,” says homeowner April Cummins. “It’s perfect for entertaining. We love sitting in this room at night and watching the TV. It doesn’t matter how cold it is outside; it’s always warm and cozy in here.” Two geothermal water furnace systems keep energy costs down on this nearly 7,000-squarefoot estate. It was a $75,000 investment that is paying off in spades today. The structure itself is partly responsible for keeping the warmth in, too. “People don’t know this, but wood has the highest R rating,” explains co-owner Mike Cummins. “We’re ready to downsize, but we’ll definitely build another log home, we like it so much. The flat screen TV they enjoy nightly in the great room is embedded in the stacked stone fireplace surround above the oversized (3-1/2 by 4 feet) luxury gas fireplace by Town and Country – manufacturers of the largest factory-built direct vent gas fireplaces on the market. Speakers for surround sound are also embedded in the stacked stone and in the ceiling for the total theatrical experience. The room is casually decorated with little vignettes of country life – cowboy boots, a hat and saddle sit in a corner under stairs that could have remained unused space. Antique snowshoes and old boat oars function as décor on the walls. Climb 12 log stairs and you are inside a second level loft overlooking the great room. Here air hockey and card tables are ready for play. More recliners and a one-of-a-kind 1950s Belmont barber’s chair act as casual seating. “Mike restored it,” says April. “He had all the chrome dipped and put new leather in. It’s like another La-Z-Boy… so comfortable.” The elevated loft view puts them right across from the great room’s flat screen TV. “The boys can watch the sports playoffs from here without ever leaving their games,” says April. Down the stairs and around the corner, you find the main floor master bedroom with beamed ceilings and a stunning walk-in closet complete with countertop and abundant shoe storage. Sconce lighting in the attached fivepiece en suite sets the mood for luxurious baths in the standalone claw-foot tub that sits next to a deep-set bay window. The view outside goes to surrounding forest, the red cedar gazebo and kidney-shaped swimming pool. Gorgeous Italian Zanetti Chini faucets glisten over his and her sinks and the tub. The inviting shower stall provides five body jets with handheld and rain showerheads for the full spa treatment. A commode is tucked out of sight in a separate toilet closet. The great room, loft, master suite and main floor laundry were the second addition to this sprawling 6,728-square-foot residence, costing approximately $600,000 to build, according to the homeowners. The first addition by True North Log Homes included a family room, office, fitness room where a Body Solid gym system and LiveStrong treadmill encourage exercise, and the massive five-car garage with obligatory man cave. Unique to the garage is a tremendous 50-foot long wooden engineered beam at the roofline. Rise up six easy log steps from the sunken great room and you find yourself in the kitchen of the original structure. “We updated the look in here,” says April, who recently installed $25,000 of Exotica granite on the countertops and backsplash above the cherry under lit cabinetry. A custom butcher block island and stainless steel GE appliances were also added for the gourmet cook. The breakfast bar offers three extravagant studded leather DaVinci stools lit by three Tiffany pendants. “We hang out here a lot,” says April. “Everything is open to the kitchen and dining room.” When the Cummins originally purchased the property, they found flowered wallpaper everywhere. “Multiple layers,” says Mike. “We replaced it with Ralph Lauren suede paint.” In fact, Ralph Lauren’s Colorado Double R L Ranch was much of the inspiration for the design choices the Cummins made. “It’s the look and feel we were going for,” says April. “A rustic, warm, comfortable country look.” The red steel roof of the structure is a striking complement to the warm, honey-coloured wood. “It’s so peaceful when it rains,” says April. “The wood deadens the sound and it’s just so comforting.” The kitchen looks out to the spring fed pond, (complete with dock and fountain) at the front end of the property and to the fully powered gazebo, in ground salt-water pool, eight person hot tub and ground-level fire pit on the patio. Up the stairs above the kitchen on the opposite side and you arrive at the second level where three more bedrooms with a full bath including a soaker tub are ready to house family or guests. The lower level below the kitchen has yet another spacious bedroom with two sofas facing a gas fireplace set in a stacked stone surround for overflow guests. While they still adore the property, the Cummins are selling this exceptional executive estate at 6166 27-28 Nottawasaga Sideroad in Clearview as they look forward and move onto their next adventure. “We recently invested in Pure Organic Food and Juice Bar in Collingwood,” says April. “We’ve partnered with the existing owners. Sam is a raw vegan chef trained in California and, with our sales and marketing background, we have plans on expansion and franchising because there’s no place to get healthy options and I think that the market is missing that.” The Cummins have listed the estate with The Mark Faris Team.

2. In large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the celery, sage, rosemary and thyme; cook, stirring, for 2 minutes to blend flavours. 3. Pour sausage mixture over bread in bowl. Mix in chopped apple, dried cranberries and parsley. Drizzle with turkey stock and melted butter, and mix lightly. Allow stuffing to cool. Stuff in the centre ring of the pork crown roast. Place in the oven at 375F for 2 hours or until pork internal temperature reaches 165F.

Recipe courtesy of chef Jim Garraway, Parkside Corner Market Chef Jim Garraway of the Parkside Corner Market in Barrie says this root vegetable torte is a crowd-pleaser.

“A few years back, I auctioned off the recipe at the fundraiser for my parents’ church and it made over $400,”

says the local chef. You can serve it as a vegetarian side dish or main entrée. Garraway describes Parkside Corner Market as a general store selling everything from milk and fresh fruits and vegetables to lottery tickets and home cooked meals. The local chef prepares everything fresh on-site including salads, quiche, desserts, pasta, sandwiches, soups, ribs, chicken, various prepared meals and more. 3 russet potatoes 2 beets (medium sized) 1 large yam (sweet potato) 3 parsnips 1 zucchini 1 small butternut squash 2 small onions, thinly sliced 1-1/2 cups 35 per cent whipping cream salt and pepper, to taste 3/4 cup Parmesan cheese PREPARATION: 1. Slice all vegetables thin, keeping each vegetable separate. Layer in a greased casserole dish half of the potatoes, then season with salt, pepper and some of the Parmesan. Sprinkle with slices of onion and drizzle with some of the cream. Layer the beets repeating with the onions, salt, pepper, and some of the Parmesan and cream after each layer. 2. Layer the parsnips, layer the yams, then layer the squash and the other half of the potatoes. The top layer is just the zucchini and the rest of the cream. Cover with a lid and bake in a preheated 350F oven for 1.5 to 2 hours. 3. Test for doneness with a knife to make sure vegetables are soft. Remove lid and cover with parchment paper and press with a second insert “weighted” (you could place a cake pan or the bottom of a false-bottom tart pan on top and weight it with a heavy jar). 4. Let set overnight. 5. Slice, rewarm and serve. These little cookies remind me of Ball’s Falls, which was where I had ginger cookies and pumpkin spice for the very first time,” says executive chef Jeremy Korten. “I think I was just 10 years old and they blew my mind. My family loved caramels, so it seemed to be a natural fit!” Oliver & Bonacini Café Grill, Blue Mountain, is located in the upscale Westin Trillium House. The kitchen is led by Korten, who has a depth of experience and a commitment to local seasonal ingredients. Menus offer extensive à la carte breakfast, lunch and dinner selections, as well as some seriously indulgent culinary experiences.

1/4 cup molasses 2 large eggs 2 tsp vanilla extract 2 tsp ground ginger 1 tsp cinnamon powder 1 tsp ground cloves 1/2 tsp pumpkin pie spice 3-1/2 cups plus 3 Tbsp all-purpose flour 1-1/2 tsp baking soda 1/4 tsp kosher salt 24 caramels PREPARATION: 1. In the bowl of your stand mixer with the paddle attachment, cream together the butter and sugar. Add in the molasses until it’s completely incorporated. Add the eggs (one at a time), vanilla extract and spices, and scrape down the sides, so everything is evenly mixed. 2. Mix in the flour, baking soda and salt. Mix just until the dough comes together. Put in a bowl and cover until chilled. 3. While the dough is chilling, unwrap the caramels and pre-heat your oven to 350F. Line your baking sheets with parchment paper. 4. Once the dough is fully chilled, portion the dough into tablespoons. Place each tablespoon on your baking sheet, top it with caramel and top it with another cookie. Seal the caramel by rolling the edges and roll into a ball then flatten. You should be able to fit 8 to 10 cookies per baking sheet. 5. Bake in the oven for 10 to 12 minutes. 6. Note: These are best eaten the day of, but you can tickle them in the microwave for 15 seconds. 7. I liked to garnish them with simple powder sugar.

This cranberry sauce is a must for holiday turkey,” says chef Richard Dauginis of Liberty North in Barrie. “Everyone just loves it.” Liberty North is a 10,000-square-foot event facility located in Barrie’s south-end. Along with full service banquet facilities, Liberty North also showcases a gourmet food takeout counter called LN to Go. 12 oz bag fresh or frozen cranberries 1-1/4 cup granulated sugar 2 whole oranges, zested and squeezed 1/4 cup orange juice 3 whole cinnamon sticks PREPARATION: 1. In a sauce pot add cranberries, sugar, juice from oranges, orange juice and cinnamon sticks. Cook on low to medium heat, stirring occasionally, until sugar dissolves and cranberries are soft, about 10 to 12 minutes. Increase heat to medium high and cook until cranberries start to burst, about 10 minutes. Remove from heat and let cool to room temperature. 2. Before serving, remove cinnamon sticks and discard. Stir in orange zest. Makes about 6 servings.

ix years ago, Paula Card set up a stall at the Barrie Farmers’ Market and began selling frozen homemade soups. “I started with four or five soups,” she recalls. Her packaging wasn’t fancy, but market goers quickly took notice of the tasty creations. Realizing she was on to something, the young entrepreneur decided to take it to the next level. She enlisted family help and jumped feet first into the soupmaking business. Today, SoupHerb Soups operates out of a 1,600-square-foot facility in south-Barrie and churns out about 550 litres per week. “We

currently have about 32 soups on our menu and a very loyal following,” explains Card, who owns and operates the family business with her husband Michael, mother-in-law Pam and father-in-law Mike. “We specialize in quality soups that are packed with flavour and cater to farmers’ markets, local restaurants and food industry retailers and wholesalers.” Eager to learn more about this local business, I caught up with Paula and Pam Card at their delicious Barrie production facility and retail outlet.

Let’s set the scene for folks who have never been to your shop. The storefront is full of freezers packed with various frozen soups. The soups are organized neatly in alphabetical order and a menu lists all soups with a dietary legend. everything is made on-site in the back kitchen. Pam: The front is set up like M&M Meats. The soups are sold frozen in half-litre containers for $6 and 1 litre for $12. You thaw it, heat it and eat it. We also sell two or three hot soups for take out and feature daily samples.

Paula, you have a background in personal training, massage therapy and physiotherapy. What led you down the soup-making path? Paula: It started with homemade baby food that I made for our oldest son. When friends and family would come over and see our freezers full of neatly organized baby food in Ziploc

bags, they suggested I somehow turn it into a business. I settled upon soup and asked my mother-in-law Pam, if I could use some of her recipes. Pam used to own a popular deli in Barrie about 20 years ago called Delilicious, so she has lots of great recipes. SoupHerb Soups started at the Barrie Farmers’ Market and three years ago we moved into this building. The rest is history.

When did Pam get on board? Paula: Pam became a partner after our second son was born. With two babies at home, my husband Michael (works full-time in Toronto) and I realized I couldn’t make a proper go of it on my own. Michael and his father are also very much involved in the day-to-day operations. Everyone pitches in to help when they can. We have about nine staff in total.


How many soups are on offer? Paula: We hover around 35. We have our year-round mainstays, but we also offer some seasonal soups like cream of asparagus, sweet strawberries and cool cucumber. Right now, we are making black bean and pumpkin and butternut squash. It’s forever changing depending upon the harvest.

What are the top sellers? Pam: Red lentil, sweet potato kale, potato leek and stilton, spicy Thai, sweet potato Thai, chunky chicken and split pea.

What’s your personal favourite? Paula: I have a few [smiles]. Depending upon my mood, it varies between roasted vegetable, spicy Thai, red lentil and sweet potato Thai. Pam: Hands down, it’s spicy Thai. It’s my ultimate favourite. I love the julienne carrots, the bamboo shoots, the peas, the rice and the little chunks of chicken. Yum! The funny thing is that I didn’t even like soup much until I got into this business.

What’s the secret to making great soup? Paula: Quality ingredients, time and love. One of our biggest sayings around here is ‘let it love,’ which essentially means, giving it the time it deserves to reach a full and balanced flavour. You can’t rush soup making. A proper cooking method is key. Pam: We make all of our broths in-house, so that’s really our secret. Our vegetable broth, for example, has a real earthy deep flavour because we juice our own carrots to make it tastier. We also use reverse osmosis water from Aquamart, which is very clear and fresh.

Why do people love soup? Pam: What’s not to love? It’s a healthy comfort food that’s heartwarming. Paula: It’s fast, healthy and easy — as long as you buy it from us [laughs]. Soup also makes you feel satisfied without feeling uncomfortably full.

Can you explain the recipe development process? Paula: The first recipes were family recipes from Pam’s old deli. Over time, we’ve added to the roster by scouring the Internet and checking out magazines. We find interesting recipes and tweak them like crazy until they become our own. We honestly get inspiration from everywhere. Our spicy Thai was born after I ordered a spicy Thai

soup at a restaurant. It was so terrible that it became my mission to develop an amazing spicy Thai soup. And we did! Pam: We will literally work on soups for months to get the taste just right. Good soup making is a true science!

What’s the final test for the soup before it hits the menu? Pam: The soup must have depth of flavour. It needs a tasty beginning, a savoury middle and a subtle lasting finish.

SoupHerb Soups are thickened with vegetables rather than cornstarch or flour. Can you expand? Pam: We thicken our soups with vegetables because it makes the soup healthier and tastier. The goal is for our soups to be both tasty and healthy.

When did you move into this facility? Paula: Almost three years ago, and it’s already too small. At any given time, we have about 700 to 1,000 litres of soup on hand.

Where else is your soup available? Pam: The Barrie Farmers’ Market, the Collingwood Farmers’ Market, the East Gwillimbury Farmers’ Market, Nicholyn Farms (along with frozen containers, they also sell it hot), MacLaren Radio Cafe (sells it hot), Clancy’s Meat Company in Newmarket, Nature’s Best in Barrie, Barrie Hill Farms (seasonal), Georgian Health Foods with locations in Collingwood and Wasaga Beach and most recently through Farm Gate Fresh (an online food delivery service for farmers’ market products). It’s always sold frozen in 500 mL, or 1-litre paper containers, or 4-litre packaging as wholesale. We sell it frozen because we don’t use preservatives.

SoupHerb’s extensive menu caters to various dietary restrictions. Can you offer up more details? Paula: We offer various gluten-sensitive, vegetarian, vegan and lactose-free options, which are labelled on our menu. We will even personalize a pot of soup for a customer within reason (for example, replace chicken with tofu). But the customer has to buy the whole batch, which works to about 12 to 14 litres.

Do you eat soup at home? Paula: We never tire of it, and we always eat soup every day for lunch at work. The kids also get red lentil soup packed in their lunches

once a week. We will also eat it for dinner, if I’m too busy and don’t have time to cook anything else.

Beyond soup, what’s your favourite type of meal to prepare at home? Paula: I love making dinner, so at our house we try to eat around the world. Last night was Indian food, the night before was Mexican, and then it’s homemade pizza night. On Sundays, we often have a Portuguese roasted chicken. I love the idea of exposing the kids (aged four and six) to different culinary flavours and experiences. Pam: I love making roast beef with Yorkshire

Sounds like your business is chugging along nicely. Are there downsides to soup making? Paula: Having to always wear nasty hairnets [laughs]. And always smelling like a mishmash of garlic, onions and more after working the kitchen shift. If I don’t have a chance to shower after work, our six-year-old son, Jack, will literally say to me, “Mom, go take a shower because you smell like onions.”

What about specials? Paula: We offer a ‘soup snob’ loyalty card where you can buy 10 and get one soup free.

Beyond SoupHerb Soups, what’s your favourite culinary destination? Paula: Some of my favourite places to eat in Barrie are Bohemia, the Lazy Tulip, the North Restaurant and at home, of course.

What about the future? Pam: Expansion is definitely in the plans for this year because we have outgrown our current facility. Either we add a night shift, or move to a larger space. Paula: We are also working on developing a recipe book showcasing how you can use our soups as a base for various other culinary dishes.

It took a bit of friendly coercing, but Pam and Paula Card agreed to share their recipe for sweet potato kale soup with goodLife readers. “this is a very easy soup to make and it tastes great,” says Pam Card. 4 tbsp olive oil 6 cups chopped sweet potatoes (peeled and cubed approximately 2x2 inches) 1/2 tsp garlic powder (or use fresh) 1 cup yellow onion, chopped

1 cup leeks, chopped 2 garlic cloves, minced 1 jar roasted red peppers (separate juice from peppers and set aside) 4 cups vegetable broth 1 cup water 1 cup (or more) kale, chopped Salt & pepper to taste

PrEParatIoN: 1. Place sweet potatoes in a roasting pan. Using 1 tablespoon of the olive oil, lightly coat the sweet potatoes and sprinkle with garlic powder. roast at 400F for 45 to 60 minutes, or until fork tender. Set aside. 2. In a large pot, heat 3 tablespoons of oil over medium heat. add and sauté onions, leeks and garlic until tender stirring often. Dice up strained roasted red peppers and allow them to sauté in the onion and garlic mixture. once vegetables are cooked through add the roasted red pepper juice from the jar and roasted sweet potatoes. allow flavours time to love! 3. add broth and water and bring to a boil. once boiled, purée the soup in a blender or food processor, adding water or broth if it’s too thick. once soup is processed add chopped kale, salt and pepper to taste. Serve hot with anything you like. Enjoy.

portfolio|Laurena Green Each piece usually contains six different layers, she noted. “Much of the background is enhanced with watercolour and the minute details are embellished with needlework,” she said. “The drying time between stages allows me to work on another piece at a different stage using a different medium.” Green admits it was her parents who helped her turn her natural talents into a career. “I was very focused when colouring and to keep that interest going my parents enrolled me in art and pottery classes from the age of five onward.” Green was only six years old when her mother taught her the art of sewing. While attending Dunbarton High School in Pickering, the budding artist took as many art classes as she could. “It was a fantastic group of teachers who were dedicated to developing a program that included separate courses with focuses in

painting, drawing, graphic design, history of art and fashion,” she said. “They encouraged and supported me through a self-exploration of fibre art in my OAC year. I was completely immersed in art through those formative years.” After high school, Green earned a Bachelor of Applied Arts in Fashion Design and Production Management from Ryerson University. “My training continued, working in the fashion industry and then later building costumes over the course of 10 years for the wardrobes of The National Ballet of Canada, The Stratford Festival and Mirvish Production’s Seamless Costumes,” she said. When Green moved to Barrie six years ago and left the world of costuming behind, she looked for a new outlet for her creativity. She landed on fibre art. Green said she admires the works of Lizz Aston, a fibre-based artist from Toronto. “Some of her work involves cutting and

Some of the beautiful detailed work they complete tests even my high level of patience. Having the knowledge of traditional needlework and styles throughout history allows me to incorporate inspiration from them into my design work.” Green is also the co-owner and instructor, with artist/ choreographer Susan Kendal, of Spool Lounge on Lakeshore Mews in Barrie. They offer classes in hand and machine sewing and fibre art and much more.

hen judging a culinary challenge, one must arrive hungry. With that in mind, I drove my growling stomach to the Barrie Fair to eat my way through the Egg Farmers of Ontario Road to the Royal (Agricultural Winter Fair) Chef Challenge in late August. With the sweet aroma of funnel cakes in the air, I made my way past tractors, a canine show, the midway and stalls of chickens, sheep and cattle before arriving at the culinary stage. As the chefs busily prepared their stations, I caught up with event host and award-winning chef and grilling guru Ted Reader. As always, Reader was super friendly and happy to serve up the event details. “Along with highlighting local talent, the competition challenges the chefs to use fresh local ingredients to create delicious dishes on stage,” he explained. “It’s about having fun and being creative.” The chefs compete in two 30-minute rounds – one for an entrée and one for dessert. Each dish has to include “secret ingredients” selected from locally grown or produced food products and provided to the chefs at the start of the event. “I tell the chefs to give it their all and make it tasty,” said Reader. “How they get from A to Z doesn’t matter; all that matters is that it tastes delicious.” The chef lineup included Dennis Thornton, chef at Urban Dish Grill & Wine Bar (and last year’s Road To The Royal Champion at the Barrie Fair) and sous chef Mike Saunders; Karen Latanville, chef at Davidson’s Country Dining and sous chef Nancy Guthrie; and Marco Ormonde and sous chef Spencer Boight. While preparing his station, Thornton admitted to having nervous energy about the event. “I definitely tossed and

turned a bit last night,” he confessed with a chuckle. “But it’s all good.” Thornton enjoys cooking in black box competitions because it keeps him on his toes. “We brainstormed ahead of time about base recipes we can use for the event. Even though we don’t know what the secret ingredients are, we come in with a game plan and go from there.” Chef Karen Latanville took a similar approach. “We spent about two weeks preparing for this competition,” said the chef. “We have our entrée and dessert recipes ready to go. The challenge will be figuring out how to incorporate the secret ingredients into the dishes as best as we can.” With the competition underway at 1 p.m., Reader announced the much-anticipated three secret ingredients — 2014 Royal Agricultural Winter Fair’s Grand Champion Raspberry Chocolate Jam, President’s Choice Woolwich Dairy goat cheese and Ontario eggs. Then the chefs got to work. The competition was fierce and the judges (including yours truly) had a tough time tallying the scores. But in the end, Ormonde was the front runner. Despite the win, the cooking competition had a shaky start for the local chef and owner of the North Restaurant in Barrie. He arrived minutes before the match, brought incompatible pans for the induction cooktop (other competitors lent him equipment) and had to contend with a fussy oven. 70 | GoodLife Barrie Edition November December 2015 ■

But he didn’t seem too stressed by the culinary roadblocks. “We had some challenges, but we made it work,” admitted Ormonde who competed with sous chef Spencer Boight. “It was on-the-spot cooking and it was fun.” Ormonde won for his rack of lamb entrée with a mushroom, raspberry and chocolate jam jus (served with goat cheese gnocchi and baby summer vegetables). For dessert, he served up a first prize duo plate featuring a half eggshell filled with fresh berries and a raspberry and chocolate jam sabayon and a phyllo banana and berry custard tart. Along with the Barrie Fair, the Royal hosted culinary competitions at other regional fairs and festivals. The winners of these competitions will participate in the final round of the Road To The Royal Chef Challenge at the Royal Agricultural Winter Fair in November. The 93rd Royal Agricultural Winter Fair was Nov. 6-15 at Exhibition Place in Toronto. For more information, visit www.royalfair.org. PrEParatIoN:

250 grams smoked bacon, sliced into small piece 2 cloves garlic, chopped 1/2 medium onion 2 tbsp brown sugar tabasco sauce, to taste (optional) 1/2 cup brewed coffee 1⁄8 cup apple cider vinegar 1⁄8 cup maple syrup black pepper

PoRK TeNdeRLoIN WRaPPed IN PRoScIUTTo 1 pork tenderloin, trimmed Bacon jam (see attached recipe) 8 -10 pieces prosciutto, thinly sliced 2 tbsp vegetable oil salt & pepper

1. In a non-stick pan, fry the bacon until lightly browned and just starting to get crispy. 2. Fry the onion and garlic in the bacon fat on medium heat until translucent.transfer the bacon, onion and garlic into a heavy bottomed pot and add the rest of the ingredients except for the water. 3. Simmer for 2 hours adding 1/4 of a cup of water every 25-30 minutes or so and stirring. 4. When ready, cool for about 15-20 minutes and then place in a food processor. Pulse to a somewhat smooth texture.

PrEParatIoN: 1. Marinate the pork in the bacon jam for 1 hour. 2. Preheat your oven to 450F. Line a baking sheet with foil and set a wire rack on top of it. 3. rinse and pat dry the pork tenderloin. Season with salt and pepper. then wrap tenderloin in prosciutto. 4. heat 2 tablespoons oil over medium heat in a skillet or braiser. Brown each side of your tenderloin, approximately 5-7 minutes per side. transfer meat to wire rack set in foil lined baking sheet. Bake until meat registers 145F, approximately 15-18 minutes. 5. Meanwhile make the cheese fondue. 6. allow tenderloin to stand for a few minutes before slicing.

Veer to the right and you are in a private office space with a unique oblong mahogany

Continue on through the anteroom and you find yourself in the east wing where the main floor master, laundry and two other bedrooms are situated. The great room, kitchen and dining room are the central gathering spot however, with slate flooring in the active cooking area and hardwood throughout the rest. Brimming with character, the wood turned out to be glorious old growth elm, which cabinet builder Peter Coulter masterfully used for the bathroom vanity in the main floor master en suite as well. The main floor master next to it in the east wing is the space in the chalet for early risers. A wall of windows and sizeable transoms that extend right to the peak of the roof flood in dawn’s early light for those who want to hit the slopes when the powder remains untouched. Two more bedrooms also exist on the main floor—one with two singles, another with a queen. They share a four-piece bath with slate flooring, dual sinks, granite countertops and gleaming multi-coloured mosaic tile in the bath. he cottage feels strangely quiet without the rush of weekend warriors in dripping swimming suits and the roar of the outboard motors. It’s that time when the dock is out of the water, along with the boat and the kids are back to school. Each year, as summer ends and autumn arrives, it feels like the world is starting to fade, but as you look out the window, the majestic colours of fall remind you that the change of seasons is not only inevitable, but beautiful. As autumn takes hold, temperatures drop and we get ready to gas up the snowmobiles, sharpen our skates, and lace up our snowshoes to embrace a Muskoka winter, we can also take a moment to explore some of the great seasonal beverages produced by our Ontario Craft Brewers. Most craft brewers have core brands of beer that they produce yearround, but many of them also have seasonal beer that they produce for special occasions. As a self professed “BeerSnob,” I’ll have to admit that the seasonal offerings are far more exciting to me than the core brands. With a core brand beer, typically brewers will work tirelessly to perfect a recipe, and produce the exact same consistent beer from that point on. With seasonal beer, they have license to get a little more creative, and change the taste slightly from year to year. To me this is the heart of craft brewing. That slight variation from batch to batch, always in pursuit of one-upping last year’s brew, is what transforms the words ‘craft brewing’ from a marketing term to a true art form. Native son of Muskoka, Sam Corbeil, the co-founder and brewmaster for Gravenhurst’s Sawdust City Brewing Co., takes his specialty brews as seriously as he does his legendary moustache. Turning on to Muskoka Beach Road you will see a sign that says “Winding road for 7km.” This is the inspiration behind and name for the awesome Rye Saison Seasonal from Sawdust. Unlike many other fall seasonal selections, Winding Road has no hint of pumpkin or spice; nor is it a dark porter to be sipped while hunkered down by the fire. This is a bold Saison. Designed to take you down a winding road of flavours starting with subtle hops with just enough bitterness, middling with rich malt, before leading to a finish that is an awesome mix of the two flavours.

Collingwood’s Best Kept Secret

ollingwood’s Canadian Mist Distillery began producing fine Canadian whisky in 1968 and internationally renowned whiskies in 1971 after spirits powerhouse Brown-Forman bought the operation. However, the downtown distillery itself remains rather unknown. “We seem to be the best kept secret in town,” says David Dobbin, general manager of Canadian Mist Distillery at 202 MacDonald Road. “It’s a wonderful company. It’s a small distillery with 31 employees and a quality manager who has been here for over 30 years. Many people have been here for a long time and have an immense pride in what they do. We had a gentleman retire 2 years ago with over 44 years of service. It’s fantastic to have that kind of continuity and pride in the operation.” Venerable American-based Brown-Forman, which produces best sellers like Jack Daniels whisky and

Finlandia vodka, created its Canadian Mist whisky primarily for export to the U.S. market and Collingwood whisky for both the Canadian and American markets. Both products are made with fresh Georgian Bay water, locally sourced corn, rye and malt, and aged in toasted, flame-charred oak barrels to create their unique flavours. Collingwood whisky was launched in its eponymous birthplace in August 2011 after three years of preparation for the new super premium Canadian whisky. At that time, Collingwood was the first new North American whisky to be launched in a decade. “Brown-Forman had been in the bourbon business for a long time and developed a super premium bourbon called Woodford Reserve that was very successful,” explains Dobbin. “They thought why don’t we come up with a super premium Canadian whisky, something really special that stands out from everyone GoodLifeMagazine.ca | 95

Canadian whiskies have a long history of being a popular drink in Canada in general, and in Ontario in particular.” Dobbin notes the taste of a fine whisky is challenging to describe because each taster finds subtle differences in the flavour of the same whisky. The aroma of a high quality whisky, discovered by ‘nosing’ or sniffing a drink, can also be very complex. “For a good whisky like Collingwood, a real aficionado would nose it from a distance and then close in to get the different aromas being released,” explains Dobbin. “If you warm it or add water to it, other aromas are released. You look for something on the nose that makes you say wow, this is something great. A good whisky has a taste with an absence of harshness and a finish at the end that tastes a bit different.” The impressive oak barrels used to age Canadian Mist and Collingwood have a huge influence on the whiskys’ unique flavours. Under Canadian law, distilled whisky must be matured a minimum of three years in wooden barrels. Brown-Forman is the only spirits company in the world that makes its own barrels. The company owns stave mills that cut raw lumber into staves, and two cooperages that turn the staves into metre-high barrels that hold about 200 litres. Dobbin feels the importance the barrels play in the process is often overlooked. 96 | GoodLife Barrie Edition November December 2015 ■

“Colour is extracted from the wood, and the barrels themselves are toasted and then charred by flame,” explains Dobbin. “There is a complex reaction that occurs within the barrels that has a high impact on the flavour of the final product. We have a strict policy on how long a barrel can be used. You could use a barrel, in theory, for 50 years, but there would be no flavour left. So, we use the barrels a limited amount of times and then re-sell them. There is actually a huge used barrel market around the world.” In 1870, George Garvin Brown founded Brown-Forman in Louisville, Kentucky. The company is still owned by the Brown family who, after five generations, is still very active in the publically traded business. “The original Mr. Brown was a pharmaceutical salesman when whisky was mainly sold in large containers like barrels,” says Dobbin. “There was a problem with adulteration – people would take whisky out and put water in the barrel. He came up with the idea of whisky in a sealed bottle.” Whisky sales in Canada tend to go up once the weather turns frosty and people welcome a warming drink. However, Collingwood whisky is also popular in cocktails during the summer season. In fact, super premium Canadian whisky sales are growing strongly across North America – up over 16 per cent during the last 12 months. “What we call brown spirits are growing in general right now, but whisky is clearly a growth category,” says Dobbin.

rowing up enjoying the sand and water under the tropical Bermuda sun, you would think my natural inclination was not to be a cowboy. But everyone daydreams from time to time and some, like me, more than others. Sometimes you never get the opportunity to rekindle that boyhood dream. But when opportunity arises, one must leap at the chance. And that’s exactly what I did during a visit to Santa Fe, New Mexico – a place the locals have branded as a “City Different”. Santa Fe, or “Holy Faith” in Spanish, is the oldest capital city in the United States and located 7,000 feet above sea level. Nearby mountain peaks are an amazing 12,000 feet above the sea. Voted one of the world’s top travel destinations, the city features more than 5,700 rooms to rent, another 225 restaurants and 250 art galleries. Averaging more than 300 days of glorious sunshine a year doesn’t hurt matters, either. Our flight was an easy one from Toronto to Minnesota and then on to Albuquerque, New Mexico. A quick rental car and picturesque drive to Santa Fe and our true journey began. Three things quickly stood out for me as we entered “that sleepy little town”: tremendous views, a lofty altitude that can create a little headache if not properly hydrated, and the friendliness of the locals. It was the latter that reminded me of Bermuda. You can exchange the khaki shirts for cowboy boots, but it’s certainly refreshing to see how warm, charming and sincere people can be.

Our first night would become a highlight of the journey, thanks to the La Posada de Santa Fe Resort and Spa, located two blocks from the historic downtown plaza in the heart of Santa Fe, New Mexico. It is an intimate village of 157 adobe-style suites and rooms, with a mixture of Old World and Spanish Colonial charm. On arrival we were and given a tour of the resort that helped make our stay a comfortable one, including a stint at the spa, This recently updated 4,500-square-foot spa and beauty salon has been visited by Hollywood’s top box office draws, and offers indigenous treatments and facial rooms, a fitness centre and heated outdoor pool and whirlpool. The food at the La Posada is exquisite, thanks in large part to Chef Todd Hall, who was behind the world’s first four-star Mexican restaurant – La Hacienda in Scottsdale. He oversees the Julia Restaurant and The Patio Restaurant, located in the 19th Century residence of one of the city’s pioneers and a favourite gathering place. Dinner at the Julia Restaurant was an experience with the flair of the Staab mansion and overlooking the scenery admiring the horses in the corral, 102 | GoodLife Barrie Edition November December 2015 ■

the open spaces and snow-dipped mountains. The following two days we stayed at La Fonda, Santa Fe’s most cherished landmark hotel, which combines illustrious character and ambiance, ultimate luxury and historic integrity. This 80-year-old, three-diamond hotel features original artwork set in an historic pueblo-style building on Santa Fe Plaza. The site has been home to an inn for nearly 400 years and official records show a “fonda” or inn among the first businesses established in the early 1600s. What followed was two days of what must be my favourite pastimes – shopping and food. It started with Back at the Ranch Cowboy Boots. Wendy Lane isn’t the first to fall in love with Santa Fe and probably won’t be the last. After working for years in women’s readyto-wear in New York, Wendy made the move to Santa Fe and opened Back at the Ranch Cowboy Boots on East Mercy Street. Although locals shop at her unique shop, she caters to the tourist trade. She sells both custom boots that she encourages her customers to help design, in addition to used boots that go well with faded jeans, denim shirts, western belts and buckles

Wendy, in fact, works with a Texas bootmaker who supplies her with the custom boots. Any style can be ordered, but she prefers the nine and 10-inch tall peewee of the 1940s and ’50s with delicate inlays, colourful stitch patterns and narrow, square box toes. Many visitors, including myself, believe that cowboy boots only come in brown and black. Funny enough, nine out of every 10 shoppers at Back at the Ranch believe that when they walk through Wendy’s door. By the time they leave, nine out of every 10 shoppers know differently! A highlight of any trip to New Mexico is a visit to the Santa Fe School of Cooking, founded in 1989 by Susan Curtis. Under her direction, the school achieved international acclaim. Located at 125 N Guadalupe St., Santa Fe, Nicole Curtis Ammerman, Susan’s daughter and director of operations, has expanded the school’s roster to include restaurant walking tours and increasing exposure to local Santa Fe restaurants. The school’s staff and chefs bring varied backgrounds and special interests to class, including professional restaurant service and catering, college culinary arts instruction, award-winning cookbook writing and restaurant consulting. Susan herself has co-authored several cookbooks, including The Santa Fe School of Cooking Cookbook, Tacos and Salsas and Southwest Flavours. There are regularly scheduled classes that cover the hands-on experience as well as the demonstrated classes but the one with the greatest intensity must be the Southwest Culinary 3-day Boot Camp. It is very interactive and ends the day with a meal. The final meal serves as an exam prepared for some of Santa Fe’s best palates. Special events include hands-on corporate team building classes, family reunions, wedding showers and salsa making contests. ne minute Mark Thompson was watching a soccer match on television and the next he was for his life.

It was a battle he came very close to losing. The 41-year-old Barrie chef had a heart attack, known as the ‘widow maker.’ Thompson’s artery was completely blocked and he arrived at Royal Victoria Regional Health Centre (RVH) via ambulance with no vital signs.

Instead, patients in North Simcoe Muskoka receive the next best thing medication at their community hospital to, hopefully, dissolve the clot causing the heart attack and then transfer to an advanced cardiac care centre outside Â?

North Simcoe Muskoka is the only region in the province that does not have an advanced cardiac centre. We don’t think that’s right. So, RVH is working closely with the provincial government to develop an Advanced Cardiac Centre which is set to open in early 2017.

On November 5th, 123 donors, and guests gathered for the inaugural event Women’s InTuition, raising $373,050 for scholarships supporting female students at Georgian College. This private event included booths showcasing the courses available, a cocktail reception along with a special performance by Canadian Juno award winning artist Chantal Kreviazuk.
