is the recreational property that boasts a commercial-grade walk-in refrigerator, but when a home is built to support two families, there’s wisdom in installing one. “It’s the first walk-in we’ve ever done,” says builder Fabio Ionta of FD Management. “The original owners asked for it. The current owners use it for wine.” Sitting at the base of The Alpine Ski Club, this 6690-square-foot, sevenbedroom, four-bathroom chalet at 122 Alta Road was built entirely for leisure. “There’s a theatre system downstairs,” says Ionta. “Slate tile throughout, all heated, everything’s heated. There’s a steam shower in the master, exercise room upstairs above the garage, wood-burning fireplace, open concept throughout. The list goes on.” Finished by Maram Building Corporation, the chalet is a post-and-beam structure with soaring ceilings and expansive windows that provide breathtaking views of the ski runs just beyond the property line. Designer Trish Matthews was brought in for the consultation. She chose hemlock for flooring and the interior doors which she styled in rustic barndoor chic. “The owners were looking at moving up to the area and were avid skiers,” says Matthews.

The island was remarkably constructed out of reclaimed material salvaged from Lake Ontario with a fantastical history. “It was part of the wharf in downtown Toronto,” says Matthews. “It was submersed in water.

“They wanted to capture the feel of a true lodge tucked away in Aspen or B.C.” Matthews used deer antlers as a theme throughout the home, from lighting fixtures to taxidermy to metal sculptures and even drawer handles. “Savoy Lighting did the fixtures for us.” Enter the foyer and the tone is instantly set by the sidelights in the door, designed by Matthews herself, the etched glass portrays rustic bare tree branches. Here, the Peacock Multi-slate floor of the entryway quickly transforms into gleaming hemlock hardwood that heralds the great room ahead. Veer to the right and you are in a private office space with a unique oblong mahogany desk and matching storage hutch. A few steps in on your left and an anteroom with a stacked stone veneer wall leads you up the stairs to the second floor master. Continue on through the anteroom and you find yourself in the east wing where the main floor master, laundry and two other bedrooms are situated. The great room, kitchen and dining room are the central gathering spot however, with slate flooring in the active cooking area and hardwood throughout the rest. Walls are peaceful Benjamin Moore Revere Pewter and the floorto-ceiling stone fireplace here is surrounded by deep club chairs. This generous kitchen was built to indulge the whims of a gourmet chef with its collection of top-of-the-line appliances including the California-built Dacor dual-fuel Discovery range with convection system and six precision SimmerSear burners. The Discovery uses an onboard IQ controller. Powered by Android, it offers WiFi Connectivity that is fully controllable via smartphone, whether at home or down in the city. The ovens even have soft shut hinges. Matthews designed the kitchen and the large granite-topped island at its core, and charged Harvest House Craftsmen in Schomberg to do all the cabinetry. Brimming with character, the wood turned out to be glorious old growth elm, which cabinet builder Peter Coulter masterfully used for the bathroom vanity in the main floor master en suite as well. The main floor master next to it in the east wing is the space in the chalet for early risers. A wall of windows and sizeable transoms that extend right to the peak of the roof flood in dawn’s early light for those who want to hit the slopes when the powder remains untouched. Two more bedrooms also exist on the main floor—one with two singles, another with a queen. The aesthetics of the tile work are worth mentioning here as the mosaic inlays move up the walls and around the shower’s entry in a flowing pattern before concluding inside the shower stall niche. Michelle’s husband and realty partner Rick designed and drew the plans. They broke ground in 2003, deciding on a slab on-grade structure with in-floor radiant heating. They first built the east wing of the house, used now as their real estate office, and lived there for a year while the rest of the house was constructed. The final result was a ranch-style home with a two-tiered tower inspired by the work of famed architect Andrés Duany, renowned for his New Urbanism development in Seaside Florida. “We call it our coastal beach room.” The couple had originally planned a single level tower to be used as a media room, but once erected, decided to go up another level to take advantage of the expansive 360-degree vistas the additional height would afford. A Celestron telescope sits at the ready for stargazing there. In the summer months, the Seips live in the treetops in their third floor tower, fittingly painted in a Benjamin Moore “Turret” tint. Come autumn, once the leaves drop, their reward is a majestic view around the river bend, all the way to the distant ski hills of Devil’s Glen. “It’s a perfect space for five o’clock cocktails.” This bend in the river was used to great effect by Rick. Each room on the main floor moves with the waterway, taking on a slightly different bearing. impression of uniquely defined separations despite the fact there are no walls constricting the spaces. In the living room, you are greeted with a Rumsford wood-burning fireplace, surrounded by quarried Wiarton grey limestone and a hand-hammered iron screen by Northern Iron. Rick cut every stone. Everything in the house is custom – the stonework, art from local artisans, and all the millwork, cabinetry and furnishings from tables to beds to shelving and kitchen islands, which were custom designed by Bruce Bateman Kitchens and Cabinetry. The home has five fireplaces in all. “We really use our fireplaces. We keep our kindling in that old firebox we got at The Royal Winter Fair.” In addition to the wood burning Rumsford, there are four other gas-fired fireplaces – one in the upstairs tower coastal beach room, two more in the master bedroom and the office and a waist-high fireplace in the dining room, which supplies ambience and warmth while dining. “We eat in our dining room every night. It’s so cozy. We really use every room in our home. Not one is for show.” The room’s large wooden table is another Bruce Bateman creation, lit by a nine-lamp chandelier, hand forged by the blacksmiths of Hubbardton Forge. Good lighting was of paramount importance to the Seips since they chose darker cabine-


try and furnishings. Recessed and accent lighting has been carefully placed throughout to brighten any dark spots. Large windows with decorative transoms allow river views from virtually every room that can provide one. A pale-coloured Pakistani wool rug from Elte is also effective in grabbing light to bounce it up and away from the cherry-stained engineered hardwood. The main living area walls are a restful Benjamin Moore Fairview Taupe, which perfectly balance the burgundy red leather Bruce sofas by Canadian furniture maker Coja. A stone’s throw from the living room, you find yourself in the welcoming kitchen, with a large island stained in White Chocolate that divides the room. Above it hangs another Hubbardton Forge pendant lamp. Countertops are all granite with 1-1/2 inch square polished edges. Large slab natural Italian stone is used for flooring. “The laying of the floor was like creating a piece of art,” says Michelle, who supervised the placement of each and every slab. The backsplash behind the commercial Viking range uses the same stone as the floor but in smaller sections, bringing a unique continuity to the design. The range is flanked on either side by attractive stone columns and next to them, full-sized, built-in Viking refrigerator and Viking freezers. Functionality was key to this well thought-out kitchen. of working in a kitchen with cabinetry designed for a man of average height. To solve this common problem, they brought all of the cabinetry down to counter level, ensuring that everything would be equally accessible by a person of shorter stature. Pots and pans are tucked away in deep pot drawers. Ceiling level cabinets with in-cabinet lighting were left for decorative items. “There’s so much accent lighting. It’s just stunning at night.” It’s clear the home is richly decorated with artistic touches and mementos of their adventures. In the tower sitting room, styled in a bleached beach house chic, a large glass vase of seashells hand-collected by the couple from the Sea of Cortez reminds of a treasured escape from their productive and abundantly exciting lives. Sometime between the War of 1812 and the property’s future incarnation as a cottage resort, 66 River Avenue Crescent enjoyed a stint as a horse farm. This perhaps speaks to one reason why the home is awash in equine imagery, from artwork to sculptures to lovely silk-screened cushions. Michelle sometimes wonders if the “energy of place” is responsible for stimulating her sudden passion for horses, which apparently arose only after she moved into this dream house. Today she is an accomplished ‘reiner’, who shows and competes with her horses in Florida numerous times each year. Twice annually she also hits the dusty trail in Alberta


for an old-fashioned cattle drive with real life cowboys. For Rick, the passion for horsepower is focused on camshafts and pistons. His enthusiasm for old cars and Harleys is evident by the massive 1,450-square-foot five-car garage, complete with a tricked out mechanic’s workbench and heavy-duty car hoist. En route to that dream garage you pass through a spacious anteroom the Seips call their gallery. Their collection of prints and acrylics by Sheila Fox and Sue Tupy, as well as an amusing dinosaur bird sculpture by Valerie Tennant feed the spirit here. To the left is the master bedroom with its grand spa bathroom featuring an Azurra freestanding spa tub and roomy adjoining walkin closet. Guest rooms are on the opposite side, all prepped for visitors with baskets of plush towels and pocket doors that offer total privacy in their own wing. Despite the charm and comfort of the interior, the Seips venture outside often to enjoy their exterior location. Patios are accessible from bedroom to dining room all along the riverside. “We sit outside a lot. The wild geese migration is always a sight to see. They flock all along here. Once in Thornbury, I had trouble spotting the wine bar and ended up asking a local resident for directions. After pointing out your somewhat hidden whereabouts, the Good Samaritan added an unsolicited endorsement. ‘It’s a bit hard to find, but the place has great food and fabulous wine. It’s worth checking out.’ Pat yourself on the back for the recommendation.

Let’s begin with the story behind your offbeat location. Jennifer: Long before the wine bar, Steven (a builder by trade), along with a business partner, bought this building and renovated it. When the lease on the back space fell apart, we decided to open up that little wine bar we had always talked about. I had the wine experience, Steven had the construction and design part covered, the only missing link was the food. That’s when Shaun came into the picture as a partner. We opened up Bruce Wine Bar in 2011 and the rest is history.

Why a wine bar? Jennifer: After working in the veterinary pharmaceutical business for 20 years, I developed a real passion for grapes and became a sommelier. I’ve always loved wine, but after touring various BC wineries and discovering the fabulous wine bars of Tofino with friends, we decided to make a life shift. Opening up a wine bar made perfect sense.

The decor is quite fun and eclectic. Can you tell me a bit about it? Jennifer: Steven (who owns Thornbury-based Kingpost Builders) has a real flair for design, carpentry and renovation and he’s the mastermind behind the interior. It’s earthy, organic and full of reclaimed materials including barn tin accents, hemlock tables and whimsical ironwork. Even our green sectional couch is reclaimed. It’s from The Fly movie set. Steven’s friend was the set designer for that movie and we got it from him. How cool is that! »

For dessert, I’d go for the caramel apple waffle with an almond brittle.

I also like the A-framed ceiling, funky lighting, the forest mural and the various shelves lined with homemade preserves. Jennifer: The space is sort of quirky [laughs]. It’s an upstairs/downstairs kind of place with plenty of character and an open kitchen. The building is over 125 years old and has had many lives over the years. It was an apple storage facility at one point.

Bruce Wine Bar regularly wins Wine Spectator Awards. How is your passion for wine reflected in your wine list and/or guest experience? Jennifer: I always say to guests, ‘if you have any questions about the wine let me know’. My goal is to hit all price points (from $44 to $200 per bottle) with as many varietals as possible. Our wines by the glass change constantly but our bottles (over 140 different wines) are more standard. We also serve wine in beautiful glassware enhancing the tasting experience. A lot of care, thought and education goes into choosing our wines. For example, if the product is from Ontario or BC, I have either been to that vineyard or have met the winemaker. That personal connection is extremely important to me.

With respect to the menu, looks like you can come in and relax over a glass of wine and munch on a cheese and charcuterie board, enjoy a full three-course meal, nibble on a gourmet wood fired pizza or stop by for Sunday brunch. Does that about sum it up? Shaun: That’s a pretty good rundown of what we offer. Our menu changes with the seasons, and we offer weekly specials.

What’s popular? Shaun: Our mixed charcuterie boards (pate, terrine, salami and preserves) have always been a hot seller. Our seasonal salads are also fantastic and just fly out of the kitchen. And I can’t forget about our wood fired pizza.

Shaun, I understand you are a Thornbury native, a Red Seal graduate of the School of Hospitality and Culinary Arts at George Brown College, and that your cooking skills were honed at Toronto’s acclaimed Pangaea Restaurant, and at the historic Windsor Arms Hotel. Did you start in a local kitchen? as I was able to crawl into a sink [laughs]. Back then it was called Carriages, and by the time I was 19-years-old I was in charge of that kitchen. After cooking on a line for about 20 years at different kitchens in the Toronto-area, my wife and I decided to move back to Thornbury. Shortly after, I connected with Jennifer and Steve and we partnered up to open the wine bar.

What’s your food philosophy? Shaun: Simple, local and technique driven – I’m all about the basics. I make everything from scratch except for our cheeses, dairy products and mustard. Jennifer: Shaun is the real deal. He even makes his own ketchup!

We’ve heard you also cure your own bacon. Is that true? Shaun: Absolutely! We make about 60 to 100 pounds of bacon per week. We do a brown sugar and salt cure for 10 days, dry it for a day and then smoke it for six hours. We also make our own prosciutto, pates, terrines, pickles, preserves, sausages, pepperoni, sauces, dressings, pizza dough, desserts and the list goes on.

Bruce Wine Bar is a FeastOn member. Explain your commitment to using local farmers and producers, and why it’s important to develop these strong relationships. Shaun: The local food chain matters. Along with supporting the local economy and farming community, I think it’s important to know where your food comes from. We currently work with about 12 farmers and have our own plots with four of them. We also have our own 4,000-squarefoot garden a block away from here where we grow tomatoes, beans, swiss chard, kale, squash, herbs, beets, carrots, walking stick kale, raspberries, wild garlic, edible flowers and more.

What three-course dinner would you order for me? Shaun: I’d start you off with one of our delicious seasonal salads. After that, I’d suggest our fish of the day. We are really well known for our fresh fish. Along with Ontario fish, we exclusively use Ocean Wise approved products from the East and West coasts. If you aren’t in the mood for fish, I’d suggest the beast which is a rotating meat special ranging from pork to duck. For dessert, I’d go for the caramel apple waffle with an almond brittle. »

CUREd OnTaRIO TROUT

WITH HONEY, THYME AND WILD JUNIPER BERRIES (Recipe courtesy of Shaun Edmonstone, chef/co-owner of Bruce Wine Bar) INGREDIENTS:

PREPARATION:

2 lbs fresh Ontario rainbow trout (ask your fish monger to fillet, pin bone and belly 2 medium fillets)

1. In large bowl mix together salt, honey, thyme, black pepper and juniper berries. In a glass or stainless steel non-corrosive dish, place one quarter of this mixture.

3/4 cup kosher salt 3/4 cup dark Ontario honey, or maple syrup or brown sugar 1 Tbsp chopped fresh thyme 1 tsp coarse black pepper 5 crushed juniper berries

This recipe is great for parties and gatherings. Cured trout can be made days in advance, and will keep for five to seven days in the refrigerator. As an appetizer, this recipe will serve 20 to 30 people.

2. Place both fillets skin down, add remaining mixture to the top of fillets. Cover with a contact layer of plastic wrap, pressing it down directly onto the fish. You don’t want any air touching the fillets. Let rest in the refrigerator for 12 hours, or overnight. 3. Remove from refrigerator and flip fillets, so they rest in the rub meat side down. Re-wrap in plastic wrap and place back in refrigerator for about eight hours. Remove trout, rinse with cold water and pat dry. Slice thin on an angle. Serve with crème fraiche, sour cream and pickles or preserves.

How do you cater to diners with special dietary needs?

Shaun: That’s right, as soon as I come up with the specials, Jennifer pairs all of the wines.

Jennifer: We’re pretty flexible because everything is made to order. We do have glutenfriendly and vegetarian options on the menu, and we can also cater to lactose free or vegan. We do not offer a gluten-free pizza because all of our dough is made in house. For severe allergies, or strict dietary restrictions we always recommend calling ahead.

What’s your wine philosophy? Jennifer: Drink what you love, and pair when you can. In terms of pairing, certain wines can make the food taste better, and certain foods can make the wine taste better when married. But for someone enjoying a variety of dishes at one sitting, they should just drink the wines they love.

What’s your favourite wine? Jennifer: There are too many to mention [laughs]. In terms of varietals, I’m particularly fond of chardonnay, Viognier and Syrah. I love all wines, really. 36 | GoodLife Georgian Bay | Winter 2015 ■

What about special events? Jennifer: We’ve got plenty going on including $2 Corkage Tuesdays, Open Mike Wednesdays, and Live Music Fridays. Throughout the year, we also host wine tastings, visiting chef events, cooking classes and more.

What about take-out and catering? Shaun: We offer takeout pizza and offsite catering from six to 200. We also do catering pickups and drop-offs.

Beyond Bruce Wine Bar, what is your favourite foodie destination? Shaun: I’ve had great experiences at the Woodlot Restaurant – woodlottoronto.com – and at the Farmhouse Tavern (on Facebook). Both are located in Toronto. Jennifer: Two of my favourite places are SoBo (sobo.ca) and the Wolf in the Fog (wolfinthefog. com.) Both are located in Tofino, BC. I love them because all of the boxes are checked – great wine, fantastic food and an amazing atmosphere.

What’s your favourite meal to make at home? Shaun: Either a roasted chicken or a really good chopped salad bowl steak dinner. I have two little kids at home and they ask for pasta six nights a week [laughs].

You’ve got the ear of thousands of local diners and wine lovers. Anything you like to add? Jennifer: We are having such a great time with this place! A whole lot of love and care goes into everything we serve – be it wine, food or live music. he south-end Barrie butcher shop specializes in fresh and local. “We only carry fresh, never frozen, local, antibiotic and hormone free meats.” The butcher counter is stocked with premium local AAA dry-aged beef, fresh Ontario pork, veal, lamb and freerange, grain-fed chicken. PREPARATION:

1-1/2 cups cubed whole wheat bread

1. Preheat oven to 350F(175C). Spread the whole wheat bread and white bread cubes in a single layer on a large baking sheet. Bake for 5 to 7 minutes in the preheated oven or until evenly toasted. Transfer toasted bread cubes to a large bowl.

3-3/4 cups cubed white bread 1 pound (454 grams) ground turkey sausage 1 cup chopped onion 3/4 cup chopped celery 2-1/2 tsps dried sage 1-1/2 tsps dried rosemary 1/2 tsp dried thyme 1 Golden Delicious apple, cored and chopped 3/4 cup dried cranberries 
 1/3 cup minced fresh parsley 3/4 cup turkey stock 4 Tbsps unsalted butter, melted

2. In large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the celery, sage, rosemary and thyme; cook, stirring, for 2 minutes to blend flavours. 3. Pour sausage mixture over bread in bowl. Mix in chopped apple, dried cranberries and parsley. Drizzle with turkey stock and melted butter, and mix lightly. Allow stuffing to cool. Stuff in the centre ring of the pork crown roast. Place in the oven at 375F for 2 hours or until pork internal temperature reaches 165F.

VEGETABLE TORTE Recipe courtesy of chef Jim Garraway, Parkside Corner Market Chef Jim Garraway of the Parkside Corner Market in Barrie says this root vegetable torte is a crowd-pleaser.

“A few years back, I auctioned off the recipe at the fundraiser for my parents’ church and it made over $400,” says the local chef. You can serve it as a vegetarian side dish or main entrée. Garraway describes Parkside Corner Market as a general store selling everything from milk and fresh fruits and vegetables to lottery tickets and home cooked meals. The local chef prepares everything fresh on-site including salads, quiche, desserts, pasta, sandwiches, soups, ribs, chicken, various prepared meals and more. 3 russet potatoes 2 beets (medium sized) 1 large yam (sweet potato)

PREPARATION: 1. Slice all vegetables thin, keeping each vegetable separate. Layer in a greased casserole dish half of the potatoes, then season with salt, pepper and some of the Parmesan. Sprinkle with slices of onion and drizzle with some of the cream. Layer the beets repeating with the onions, salt, pepper, and some of the Parmesan and cream after each layer. 2. Layer the parsnips, layer the yams, then layer the squash and the other half of the potatoes. The top layer is just the zucchini and the rest of the cream. Cover with a lid and bake in a preheated 350F oven for 1.5 to 2 hours. 3. Test for doneness with a knife to make sure vegetables are soft. Remove lid and cover with parchment paper and press with a second insert “weighted” (you could place a cake pan or the bottom of a false-bottom tart pan on top and weight it with a heavy jar).

“This cranberry sauce is a must for holiday turkey,” says chef Richard Dauginis of Liberty North in Barrie. “Everyone just loves it.” Liberty North is a 10,000-square-foot event facility located in Barrie’s south-end. Along with full service banquet facilities, Liberty North also showcases a gourmet food take-out counter called LN to Go. 12 oz bag fresh or frozen cranberries 1-1/4 cup granulated sugar 2 whole oranges, zested and squeezed 1/4 cup orange juice 3 whole cinnamon sticks PREPARATION: 1. In a sauce pot add cranberries, sugar, juice from oranges, orange juice and cinnamon sticks. Cook on low to medium heat, stirring occasionally, until sugar dissolves and cranberries are soft, about 10 to 12 minutes. Increase heat to medium high and cook until cranberries start to burst, about 10 minutes. Remove from heat and let cool to room temperature. 2. Before serving, remove cinnamon sticks and discard. “These little cookies remind me of Ball’s Falls, which was where I had ginger cookies and pumpkin spice for the very first time,” says executive chef

Jeremy Korten. “I think I was just 10 years old and they blew my mind. My family loved caramels, so it seemed to be a natural fit!” Oliver & Bonacini Café Grill, Blue Mountain, is located in the upscale Westin Trillium House. The kitchen is led by Korten, who has a depth of experience and a commitment to local seasonal ingredients. PREPARATION: In the bowl of your stand mixer with the paddle attachment, cream together the butter and sugar. Add in the molasses until it’s completely incorporated. Add the eggs (one at a time), vanilla extract and spices, and scrape down the sides, so everything is evenly mixed. 1. Mix in the flour, baking soda and salt. Mix just until the dough comes together. Put in a bowl and cover until chilled. 2. While the dough is chilling, unwrap the caramels and pre-heat your oven to 350F. Line your baking sheets with parchment paper.

Located in downtown Barrie, Michael and Marion’s/The Side Door has been a popular downtown Barrie dining establishment for the past 25 years. “We specialized in high quality food, great service, seasonal menus and saying yes,” says Smith. 1 bottle of chardonnay 1/2 cup bourbon

3. Once the dough is fully chilled, portion the dough into tablespoons. Place each tablespoon on your baking sheet, top it with caramel and top it with another cookie. Seal the caramel by rolling the edges and roll into a ball then flatten. You should be able to fit 8 to 10 cookies per baking sheet.

Graphic artist Melanie Steadman had commuted to work in the advertising industry in Toronto for years when, leafing through a magazine, she saw a photo of a table whose edge was shaped like a tree.

L

ive edge tables, made from a single slab or two slabs cut horizontally from a tree, have outer edges left in the natural shape of the tree. The unusual table captured the artist’s imagination. “I thought, how hard could this be? I’ll give it a try,” recalls Steadman, owner of Tree Green Team at 216 Hurontario St. in Collingwood. “I thought I could find a fallen tree and have a table built. But I really had no idea of all the work involved. As the years have gone by, I’ve learned all about it.” The thriving salvaged wood furniture company now has a showroom, shop and milling and kiln facilities in the Collingwood area. Steadman takes pride in making furniture that brings life

back to trees. Her company is booked steadily with furniture orders throughout the year, and staff works seven a days week to make sure clients’ calls and emails are answered promptly. The use of ‘team’ in the company name was not a casual decision. “We really emphasize that because we all work together,” says Steadman. “We keep the company small because we want to keep things that way.” Steadman and her co-owner and partner Edwin Patino, the company’s lead craftsman, work as a team with Steadman handling the front end business including sales, advertising, communications and final inspection, and Patino managing the shop work of coordinating, milling, finishing and delivery. “It’s a family business,” says Steadman. “Most days you’ll find a little three-year-old watching intently and working beside me. Our 12-year-old helps on weekends and our eldest, Sierra, works when she isn’t ski training to live her dream of making Team Canada one day and representing our country in the Olympics.” They work with local logging companies to secure salvaged trees. The re-use and recycle aspect of the business is as important to Steadman and most of her customers as the unique beauty of the company’s live edge custom-made »

tables, counters, vanities, island tops and mirrors. Loggers transport trees to the company’s shop where they are hand milled by Patino or milled on a bandsaw. “Because we never cut trees to build our furniture, each salvage is unique,” explains Steadman. “We may be lucky enough to acquire a huge walnut or maple, cherry or ash. It’s always exciting when we mill into our logs. It’s a surprise to see the graining and character in each log.” A table created by two slabs cut from the same tree, called book matched, can be ornamented between the slabs. One showroom table is gilded with a table-length flow of quartz crystal and copper in resin. The company’s Glow Harvest Tables have glow-in-the-dark resin accents that charge in normal light and glow for hours. Live edge furniture could be described as functional art. Tree Green Team furniture is resident in private homes and cottages internationally, as well as in many corporate boardrooms. Customers include architects, interior designers and corporate office outfitters.

“We do a lot of boardroom tables, especially for Toronto offices,” says Steadman. “We make a table with two live edge slabs and a glass runner in the centre. It’s very popular with corporate clients.” About 90 per cent of Tree Green Team’s sales are made online through the company’s website treegreenteam.com. Steadman and salesperson Debby Weaver put all available stock online for clients to view. Special wood slabs, such as curly maple, single slabs and burled wood, as well as finished furniture, can also be viewed in the showroom. But most clients do not need to come to Collingwood to see the wood.

“If you call or email me, I will send you inventory images,” says Steadman. “We also encourage you to send us an image of something they like. When you fill out your wish list online, which is the confirmation order, we take apart a log for your piece and give you a completion date. Some people need to come in and physically see the slab, but the process is normally done blind. The client chooses their stain and that’s it. From start to finish, we handle everything.” Tree Green Team’s furniture creates heirloom pieces that can be passed through generations. A recent table with personal touches made for a client’s home will likely stay in her family. “The table I love best is one we made for a client who brought in a bag of stones from her father’s cottage in Scotland and a bag of stones from her home,” says Weaver. “Part of the tree used for her table looked like a river bed, and we put the stones into it with resin. I could feel the love in that table. It was stunning. Our clients are like family to us. We always give them congratulations for bringing a tree back to life.”

Roots music with a twist” is how Craig Smith describes his musical style. A man at one with his Gretsch Dreadnought, Smith is at his best when playing acoustic guitar and slaying us with a soulful lyric that cuts to the heart. His song, Easy Go, from his first album Not Sure Not Sure may be his most enduring signature style. Punctuated with riffs on his harmonica, it’s the kind of tune you want to listen to on a rainy Sunday morning while reflecting on your life choices over a hot cup of Joe. “Neil Young is my biggest influence,” says Smith. “Growing up and listening to my parents’ music, that can’t help but creep in. You don’t choose music. It just chooses you.” Smith’s song Wounded Heart from his second album Heavy Early is most reminiscent of the Neil Young influence, especially when he reaches into his falsetto and pulls the melody to new heights. “I think a song is really best when minimal, on a piano or acoustic guitar,” says Smith. “Simple is always best, I’ve discovered. I find that in life too. Computers allow you to polish a song till it’s shiny and bright, but you lose the heart. I’m aware of my limitations but I embrace that I sound this way. You are who are, perfectly imperfect.” Smith is working on his third album, editing down his substantial body of new songs into a list he’s comfortable shopping to record labels. I

f you missed Rebecca Stephens’ weekly performances this summer as the main stage artist at the Thursday Night Concert Series in The Village or her Nov. 18 gig at the Be The Change Documentary Series at Simcoe Street Theatre, you’ll have to settle for YouTube videos on her channel for awhile because she’s busy working on her third EP release entitled Back In The Hollow. “I want to get back to my country song writing roots,” says Stephens. “I want to lay it back lyrically and get deeper into the lyrics.” Patsy Klein, Loretta Lynn and Johnny Cash were the artists that set Stephens on the path of a pop country career. “It was always in the background at my nana’s. I love all those classic country artists, especially lyrically.” Her first EP, There Is Light, was a reflection of that fondness but after a stint in Nashville she headed to New York and laid down tracks on her sophomore album, The Fight, which eclipsed her natural, raw sound for a more produced version. “I’ve been writing a lot more personal things lately,” says Stephens. “There have been some challenging things in my life and I want to connect with my audience on a deeper, more sentimental level. I’ve been, like a lot of girls especially … well, I’ve had a lot of tough relationships and breakups.” She was also in the room with her beloved grandmother when she passed on. “It haunts me to this day.” These setbacks have honed her character and Stephens is pressing her Yahama guitar into action. Her relationship with Northwood Records out of Chatham has wrought the stellar single Where The River Flows, co-written with Matt Connell. In the past, Stephens opened for Canadian folk pop grass band The Strumbellas, The Martels, & Jillian Jensen of American Idol/X Factor fame but this year climbed towards the headlining tier herself when she became a finalist (top four) on CMT’s Chevy Tailgate Search. Her single I Need A Break landed an invitation to play at the Dauphin Countryfest in Manitoba. “Big stars were there. Miranda Lambert, Jake Owen. I got to watch their sound checks. 3 LUKEMARTIN he first time Luke Martin picked up a guitar he was 12. Surprisingly, I’m Just A Girl by No Doubt was the first tune he taught himself. “I liked the melody line of the electric guitar,” he laughs. Martin didn’t play again until he was 18 when pop punk grunge became his passion. “It was easy and all about the attitude more than the music,” he says. Today his self-taught style has crystallized into what Martin describes as acoustic folk with a ’50s sound. “I write a lot of ballads with a time signature that has a Motown influence. I’m more soul or gospel. Some say I sound like Elvis or Jack Johnson because my voice is deep, but Leon Bridges is a very accurate representation of where I am headed.” A former mixologist from Quebec, Martin quit his job to follow his dream this year and tackle a full-time music career. He currently lives at the Hope Haven therapeutic horse farm for the disabled in Markdale where he cares for horses while gigging his way up the music ladder. Martin is prepping for his first EP and was just approved by Kickstarter to raise money for the recording session. e grew up loving the heavy metal of Iron Maiden, Motorhead and Ozzy Osbourne, but today leans more toward blues, folk and jazz in his solo act. A 10-year resident of the area, Cloutier is a regular performer at Tesoro’s and The Huron Club, and also owns the local music school on Hurontario Street in Collingwood. Cloutier was raised in Orillia, then headed to Toronto to study music at Humber College before being seduced to the Georgian Triangle. “I like the environment here,” says Cloutier. “It’s a vibrant community, into the arts.” In addition to his solo act, Cloutier plays in two rock bands. His own self-titled band (Shane Cloutier Band) that plays around the area and has produced the album Scars, and his newest band, Bent Nails, formed with legendary drummer Jorn Andersen and Max Webster bass player Mike Tilka. “We just recorded a new album at Frank Marino’s (of Mahogany Rush fame) place in Montreal,” says Cloutier. “We don’t have a release date on that one yet and the album is still untitled. But we recorded 16 songs and we’ll get it down to 10 tracks.” (Cloutier also plays rhythm guitar for Mahogany Rush when they go out on tour.) ith the vocal approach of John Mayer and the heartthrob good looks of Keith Urban, it’s no wonder the girls are flocking to listen to 19-year-old Austin McCarthy’s bluesy romantic style. The 2014 Collingwood Idol winner, who burst onto the music scene only 18 months ago, McCarthy instantly became one of the top five finalists in CBC’s nationwide Rock Your Campus competition in 2014. He has since been booked as the opening act for renowned artist Kim Mitchell at The Village and for Coldjack at The Gayety Theatre. The son of veteran southern rock singers Mike and Erica McCarthy (The Mike McCarthy Band), Austin was given early Royal Conservatory of Music training as a child. The piano lessons were quickly cast aside however once McCarthy heard Stevie Ray Vaughan manhandle a fret board. He switched to guitar and by 16 was polishing his rhythm and lead guitar skills on his much-loved Martin. Songwriting came next. “When I first started gigging, I did a lot of covers,” say McCarthy. “Now I’m trying to load my sets with at least four originals. It’s more fun to play and now that I’ve gone away to school (McCarthy is currently studying at Concordia) there’s much more to write about – more life experiences. The songs come easier.” What he’s writing about is “pretty much what every 19 year old is experiencing. Trying to find their place and where they should go.” McCarthy has a busy schedule through next year, but you can find him at his regular haunts in Collingwood: The Lodge, Huron Club, Rusty’s, Bridges and The Village during the holidays. A Contemporary Twist on

Traditional Design It’s not hard to pick out the stately Edwardian home owned by the Lexes. While the red brick exterior and wraparound porch is a hallmark of other similar grand houses in Collingwood,

ecorating the outside walls under the porch’s roof are tall, tiled landscapes and flowers, brilliantly coloured and shimmering in the late fall sunshine. They are the work of Anke Lex, who began working with clay while the family was in Mexico 18 years ago. “I saw this bowl, and I just knew that’s what I wanted to do,” she said. “I had never touched clay before. I always had an appreciation for the arts, (but) the first time I started working with clay I realized how relaxing and meditative it was.” She attended classes with her young daughter, Nina, and when the family returned to Canada in the spring, Lex began taking workshops. She says her “real breakthrough” took place while she was enrolled at the Sir Sanford Fleming of Applied Arts and Technology’s School of the Arts program in Haliburton, where she learned art fundamentals and ceramics, graduating with a diploma in creative visual arts. These days, Lex splits her time between making functional stoneware and tile murals in the maiolica style. Her tile murals start out as acrylic paintings to work out colour and design; from the painting, Lex makes a template and hand cuts irregular-shaped earthenware tiles. The tiles are allowed to dry, which gives a small amount of warping to emphasize the handmade look. »

In recent years, her mosaics have been of flowers – tall, whimsical pieces featuring brightly coloured flowers ‘growing’ from vases. After a few days, the tiles are bisque-fired, glazed with while maiolica glaze and painted with coloured stains and oxides. Gold lustre is added to the tile after the glaze firing in order to get more detail and richness, followed by a third firing before they are glued to a backboard and, in some cases, grouted. She started out doing landscapes, mostly of Georgian Bay from different lookout points. “There was one from Osler Bluff, where we would always go as a family,” she said. “It captures the feeling of it, and the more you visit a place, the more it becomes part of you, and it reflects in your art.” In recent years, her mosaics have been of flowers – tall, whimsical pieces featuring brightly coloured flowers ‘growing’ from vases. painting, using heated beeswax, and incorporating her tile mosaics. “It feels really cool, it’s really addictive, and I love how you blend the colours,” Lex said. “I wanted to combine the two, which is challenging because they are such strong mediums. I want to play around with that in the future, maybe use more earthy colours, clay and blend it with beeswax.” Lex came to Canada from West Germany with her family in 1981. Her parents were ready to retire and wanted a piece of land to call their own. There was also continued uncertainty in Europe, divided in half between The West and Soviet spheres. “In the late ‘70s, people were still very much afraid of a war (between The West and Sovi-

et Union),” said Lex, whose two brothers did mandatory service in the military. “It was more of an adventure than anything.” She and her husband, Richard, moved to Collingwood in 1987, the year her daughter was born. The couple also has a son, Bowie. She began to immerse herself in the local arts scene about 15 years ago, opening her Ceramica de Anke studio gallery in 2003 in space behind the former Bank of Montreal building. Her studio and showroom are now in her home. She and Richard have also undertaken several restoration projects in the downtown, notably the Tremont, which had been purchased by the municipality in 2005 ostensibly to be torn down to make way for a parking lot. The Lexes purchased the three-storey former hotel in 2009, investing about $1 million in or-

Some of her tile mosaics are streetscapes of the downtown. “I probably wouldn’t study those buildings that deeply, and look at all the architectural details, if we hadn’t been in them and restored them. It’s all connected ultimately.” The mosaics are “a traditional design, but the way I do them you would never think of them as a traditional design – it looks very contemporary.” Lex counts among her influences other ceramic artists, such as Gertraud Möhwald and Betty Woodman – the inspiration behind her tall flower pieces – and Matthias Ostermann. Ostermann, who died in 2009, was her biggest influence, and she learned the maiolica technique from reading his books. “When I finally had the opportunity to take a weekend workshop with him, it was fabulous. I looked at his images, and I knew that was what I wanted to do,” she said. She has applied for a month-long residency program in Germany for next fall, with a project proposal to recreate that community’s surrounding landscapes and heritage buildings in maiolica tile murals. “It’s right in the heart of the downtown, and people come by and see what you do, but you have to have a project, and you do a show after. I never did pottery while I was in Germany, so it would be exciting to see how they approach things.” She jokes that she doesn’t have as much time as she once had for her art, “but I didn’t want to give it up.” “My inspiration is from just anywhere – it just hits me. I always liked a lot of traditional designs, and I like to give it it a contemporary feel … blending it to make it my own. Before I was a potter, before I knew what this technique was, I knew I wanted to do that. It wasn’t just pottery – it was the maiolica that drew me.”

COLLINGWOOD’S Best Kept Secret C

ollingwood’s Canadian Mist Distillery began producing fine Canadian whisky in 1968 and internationally renowned whiskies in 1971 after spirits powerhouse Brown-Forman bought the operation. However, the downtown distillery itself remains rather unknown. “We seem to be the best kept secret in town,” says David Dobbin, general manager of Canadian Mist Distillery at 202 MacDonald Road. “It’s a wonderful company. It’s a small distillery with 31 employees and a quality manager who has been here for over 30 years. Many people have been here for a long time and have an immense pride in what they do. We had a gentleman

retire 2 years ago with over 44 years of service. It’s fantastic to have that kind of continuity and pride in the operation.” Venerable American-based Brown-Forman, which produces best sellers like Jack Daniels whisky and Finlandia vodka, created its Canadian Mist whisky primarily for export to the U.S. market and Collingwood whisky for both the Canadian and American markets. Both products are made with fresh Georgian Bay water, locally sourced corn, rye and malt, and aged in toasted, flame-charred oak barrels to create their unique flavours. Collingwood whisky was launched in its eponymous birthplace in August 2011 after

three years of preparation for the new super premium Canadian whisky. At that time, Collingwood was the first new North American whisky to be launched in a decade. “Brown-Forman had been in the bourbon business for a long time and developed a super premium bourbon called Woodford Reserve that was very successful,” explains Dobbin. “They thought why don’t we come up with a super premium Canadian whisky, something really special that stands out from everyone else? The largest market for Canadian whisky is the United States. But in Ontario, whisky is a pretty busy shelf at the LCBO. Canadian whiskies have a long history of being a popular

drink in Canada in general, and in Ontario in particular.” Dobbin notes the taste of a fine whisky is challenging to describe because each taster finds subtle differences in the flavour of the same whisky. The aroma of a high quality whisky, discovered by ‘nosing’ or sniffing a drink, can also be very complex. “For a good whisky like Collingwood, a real aficionado would nose it from a distance and then close in to get the different aromas being released,” explains Dobbin. “If you warm it or add water to it, other aromas are released. You look for something on the nose that makes you say wow, this is something great. A good whisky

has a taste with an absence of harshness and a finish at the end that tastes a bit different.” The impressive oak barrels used to age Canadian Mist and Collingwood have a huge influence on the whiskys’ unique flavours. Under Canadian law, distilled whisky must be matured a minimum of three years in wooden barrels. Brown-Forman is the only spirits company in the world that makes its own barrels. The company owns stave mills that cut raw lumber into staves, and two cooperages that turn the staves into metre-high barrels that hold about 200 litres. Dobbin feels the importance the barrels play in the process is often overlooked. “Colour is extracted from the wood, and the barrels themselves are toasted and then charred by flame,” explains Dobbin. “There is a complex reaction that occurs within the barrels that has a high impact on the flavour of the final product. We have a strict policy on how long a barrel can be used. You could use a barrel, in theory, for 50 years, but there would be no flavour left. So, we use the barrels a limited amount of times and then re-sell them. There is actually a huge used barrel market around the world.” In 1870, George Garvin Brown founded Brown-Forman in Louisville, Kentucky. The company is still owned by the Brown family who, after five generations, is still very active in the publically traded business. “The original Mr. Brown was a pharmaceutical salesman when whisky was mainly sold in large containers like barrels,” says Dobbin. “There was a problem with adulteration – people would take whisky out and put water in the barrel. He came up with the idea of whisky in a sealed bottle.” Whisky sales in Canada tend to go up once the weather turns frosty and people welcome a warming drink. However, Collingwood whisky is also popular in cocktails during the summer season. In fact, super premium Canadian whisky sales are growing strongly across North America – up over 16 per cent during the last 12 months. “What we call brown spirits are growing in general right now, but whisky is clearly a growth category,” says Dobbin.

WHAT IF YOU HAVE A HEART ATTACK?

O

ne minute Mark Thompson was watching a soccer match on television and the next he was ����� �� ��� ������ ���� ���� ������� for his life.

It was a battle he came very close to losing. The 41-year-old Barrie chef had a heart attack, known as the ‘widow maker.’ Thompson’s artery was completely blocked and he arrived at Royal Victoria Regional Health Centre (RVH) via ambulance with no vital signs. ����� ��������� ���� ������������ him seven times and broke 11 ribs performing CPR. They never gave up and after almost two hours they found a faint pulse and with it, hope. Mark’s survival depended on a trip down the highway to the closest advanced cardiac centre for angioplasty, a ��������� ��� ������ �� ��� �������� in North Simcoe Muskoka. It was a risky ride for a man whose life was hanging in ��� �������� “Don’t get me wrong, if it wasn’t for RVH I wouldn’t be alive. But they need the ����� �� ����� ��� ����� ���� ��������� “They need to be able to do angioplasty here and not have to ship a patient to another facility. That doesn’t make sense to me. Every person deserves the

right to get the care they need in the ������ ����� ���� ������ When it comes to a heart attack, time is muscle. Every minute you wait for treatment, your heart muscle is dying. But if you have a heart attack in North Simcoe Muskoka, most people can’t get to a cardiac centre fast enough to receive the gold standard of care treatment within 90 minutes. Last year ����� ������ �� ��� ������ ������� a severe heart attack. Only 76 were close enough to a specialized cardiac centre to receive immediate lifesaving treatment. Think about what that could mean to you; to a loved one. Instead, patients in North Simcoe Muskoka receive the next best thing medication at their community hospital to, hopefully, dissolve the clot causing the heart attack and then transfer to an advanced cardiac care centre outside ��� ������ ��� ���������� North Simcoe Muskoka is the only region in the province that does not have an advanced cardiac centre. We don’t think that’s right. So, RVH is working closely with the provincial government to develop an Advanced Cardiac Centre which is set to open in early 2017.
