Growing up, i was a Sears Wishbook kid There was nothing quite like flipping through the glossy pages to get ideas for cool presents for those on my gift-giving list as well as unique must-haves I’d jot down on my own wish list. It doesn’t matter how cold it is outside; it’s always warm and cozy in here.” Two geothermal water furnace systems keep energy costs down on this nearly 7,000-square-foot estate. The structure itself is partly responsible for keeping the warmth in, too. “People don’t know this, but wood has the highest R rating,” explains co-owner Mike Cummins. “We’re ready to downsize, but we’ll definitely build another log home, we like it so »

And we’ll install geothermal.” The flat screen TV they enjoy nightly in the great room is embedded in the stacked stone fireplace surround above the oversized (3-1/2 by 4 foot) luxury gas fireplace by Town and Country – manufacturers of the largest factory-built direct vent gas fireplaces on the market. Speakers for surround sound are also embedded in the stacked stone and in the ceiling for the total theatrical experience. The room is casually decorated with little vignettes of country life – cowboy boots, a hat and saddle sit in a corner under stairs that could have remained unused space. Antique snowshoes and old boat oars function as décor on the walls. Climb 12 log stairs and you are inside a second level loft overlooking the great room. Here air hockey and card tables are ready for play. Down the stairs and around the corner, you find the main floor master bedroom with beamed ceilings and a stunning walk-in closet complete with countertop and abundant shoe storage. Sconce lighting in the attached fivepiece en suite sets the mood for luxurious baths in the standalone claw-foot tub that sits next to a deep-set bay window. The view outside goes to surrounding forest, the red cedar gazebo and kidney-shaped swimming pool. Gorgeous Italian Zanetti Chini faucets glisten over his and her sinks and the tub. The inviting shower stall provides five body jets with handheld and rain showerheads for the full spa treatment. A commode is tucked out of sight in a separate toilet closet. The great room, loft, master suite and main floor laundry were the second addition to this sprawling 6,728-square-foot residence, costing approximately $600,000 to build, according to

The original structure was a two storey Confederation Log Home measuring a conservative 1,780 square feet in comparison. The first addition by True North Log Homes included a family room, office, fitness room where a Body Solid gym system and LiveStrong treadmill encourage exercise, and the massive five-car garage with obligatory man cave. Unique to the garage is a tremendous 50-foot long wooden engineered beam at the roofline. Rise up six easy log steps from the sunken great room and you find yourself in the kitchen of the original structure. “We updated the look in here,” says April, who recently installed $25,000 of Exotica granite on the countertops and backsplash above the cherry under lit cabinetry. A custom butcher block island and stainless steel GE appliances were also added for the gourmet cook. The breakfast bar offers three extravagant studded leather DaVinci stools lit by three Tiffany pendants. “We hang out here a lot,” says April. “Everything is open to the kitchen and dining room.” When the Cummins originally purchased the property, they found flowered wallpaper everywhere. “Multiple layers,” says Mike. “We replaced it with Ralph Lauren suede paint.” In fact, Ralph Lauren’s Colorado Double R L Ranch was much of the inspiration for the design choices the Cummins made. “It’s the look and feel we were going for,” says April. “A rustic, warm, comfortable country look.” The red steel roof of the structure is a striking complement to the warm, honey-coloured wood. “It’s so peaceful when it rains,” says April. “The wood deadens the sound and it’s just so comforting.” The kitchen looks out to the spring fed pond, (complete with dock and fountain) at the front end of the property and to the fully powered gazebo, in ground salt-water pool, eight person hot tub and ground-level fire pit on the patio. Two steps down and you are in the attached family room, the very first addition to the house, with sealed flagstone floors that match the pretty fireplace surround. White leather ottomans and recliners with plush throws offer snug spots to stretch out and grab a catnap après dinner. Up the stairs above the kitchen on the opposite side and you arrive at the second level where three more bedrooms with a full bath including a soaker tub are ready to house family or guests. The lower level below the kitchen has yet another spacious bedroom with two sofas facing a gas fireplace set in a stacked stone surround for overflow guests. While they still adore the property, the Cummins are selling this exceptional executive estate at 6166 27-28 Nottawasaga Sideroad in Clearview as they look forward and move onto their next adventure. “We recently invested in Pure Organic Food and Juice Bar in Collingwood,” says April. “We’ve partnered with the existing owners. hree years ago, Janice O’Born decided to breathe new life into the Rosemont General Store, a local landmark first established in 1846. Beyond giving the rural historic shop some TLC, she successfully transformed it into an upscale country store complete with specialty foods and groceries, take-out and prepared meals, gift items and a full service licensed cafe complete with a chef. “It’s still very much an old-time general store because you can buy anything from gum to a wedding present here,” she explains. “But now, you can also enjoy a three-course, sit-down dinner with a glass of wine.” Eager to learn more about this eclectic shop and cafe, GoodLife recently caught up with the Rosemont General Store owner Janice O’Born, store manager Martina Whittick and chef Jason Reiner.

GoodLife: Janice, you and your husband, Earle O’Born, have been local residents for years. What led you to get into the general store business? Janice: About 28 years ago, we bought a farm that is about a five-minute drive from here. I guess you would call us hobby farmers because we rent the arable land and have 16 chickens, a llama, two alpacas and a rabbit. Anyway, we fell in love with the area and when the general store came up for sale, I decided to buy it. My husband said: ‘But you don’t know anything about running a general store, and I replied ‘No worries, I will just Google it.’ And I did! [laughs].
GL: I have fond memories of this general store because my grandmother lived nearby and used to bring me here as a child to buy candy and ice cream. I loved it back then, but I think I like it even better now. Can you explain the renovation process? Janice: The original store is nearly 170 years old, and when we first took it over it was about 600 square feet with an attached residence for the owners. It required tons of work because nothing was legal. The electrical and plumbing were outdated and the place had little insulation. After bringing everything up to code and

CALL US REGARDING FURNACE OIL refinishing all of the original wooden floors, we decided to add a 1,000-square-foot addition to house a 30-seat cafe complete with a kitchen and chef. The cafe, which opened about a year ago, is quite lovely because it offers diners a lovely view of rolling pastures. The store was built with the creative eye of my husband, using all local labour.
GL: I love how you’ve paid homage to the history of the store and local community by decorating the place with old black and white photos of Rosemont, school pictures, old auction posters and various antiques including a wooden cash register, two iron stoves and so on. It’s almost like a mini museum in here. Janice: All of the antiques and photos came with the place, and it was important for us to take care of them and put them on display. We reframed all of the old photos, and a few other items we found around the shop including a bill of sale from the 1880s. There are plenty of historic artifacts to look at, that’s for sure. Customers love it!

GL: Can you share some of the history of the building? Janice: The store was originally built as a haberdashery shop and post office in the 1848. Back in those early days, Rosemont was a stagecoach stop for weary travellers heading to either Barrie or Collingwood from Toronto. The street had three hotels and various stores catering to the needs of the travellers, stagecoach drivers and local residents. Over the years, this particular building has had several lives as a grocery store, department store, general store and post office.
GL: You describe the Rosemont General Store as ‘one of a kind, not a link in a chain.’ Please expand. Janice: We’re a friendly and accommodating country general store and cafe with plenty of character. We showcase high quality items on our shelves and give preference to local producers, farmers and artisans. The majority of our artisanal gifts, housewares, toiletries, grocery and specialty food items are made in Ontario.
GL: What’s on offer in your take-out food section? Janice: Along with specialty coffees and teas, we have various takeout food items like desserts, sandwiches, paninis, breakfast sandwiches and scooped ice cream. Almost everything is made in

house, from scratch and with love. We also have fridges full of local dairy products, eggs, and various prepared take-home meals that our chef, Jason, has prepared. Some of those items include lasagna, shepherd’s pie, soups, pizzas and our famous butter chicken, to name a few. We even make our own bread to serve with these meals.
GL: Jason, I understand you were trained at the Stratford Chef School. What’s your food philosophy? Jason: I like to keep things simple. I believe in using high quality ingredients and letting the ingredients speak for themselves. The menu is all very locally sourced. And if I can’t find it locally, I use local suppliers rather than big companies. Janice: Our wine is from Niagara and our beer 28 | GoodLife South Simcoe Winter 2015 ■
is from Barrie. We are conscious of our carbon foot print and love to buy Canadian.
GL: Let’s talk about the licensed café which offers breakfast, lunch and dinner. Can you serve up more details? Jason: Along with delicious weekday breakfast items, such as bacon and eggs, breakfast sandwiches and granola, we offer buckwheat pancakes and eggs Benedict on the weekend. For lunch and dinner our soups, salads, quiches, burgers and homemade pizzas are fabulous.
We also offer gourmet dinner options including beef tenderloin (with blue cheese, roast garlic mashed potatoes and baby vegetables) braised beef short ribs (with roast garlic mashed potatoes), roast pork loin (with orzo pasta), rainbow trout (with green pea purée and baby vegetables) and more. Martina: Although we originally started as a café, we are currently rebranding as a restaurant because our expanded food services are much more than café.
GL: What would your order for me if I came in for a three-course dinner? Jason: I’d start you off with our daily soup. Our soups are huge sellers because we make all of our own stocks and soups from scratch. For the main, you would have to have one of our wood stone fired gourmet pizzas because they are just so darn good. For dessert, I’d suggest one of our apple desserts or our famous bread pudding.
GL: Does your rural location make it easier to source from local farmers? Jason: We have great relationships with the local farmers and use as much of their harvest as possible. Along with fresh fruits and vegetables, we source our eggs, dairy products, meat, poultry and more from local farms.
GL: What do you like to cook at home? Jason: I don’t really have one favourite meal. What I enjoy the most about cooking at home is the spontaneity. There are no rules, so you can really let the creative juices flow. Last night, for example, we made this pasta with boar sausage, olives, capers, kale and tomatoes from the garden.

GL: How do you cater to diners with special dietary needs? Jason: We do have gluten-free pizzas and gluten-free wraps and bread for the sandwiches. We have a selection of soups that are vegetarian, and we always have a vegetarian entrée. But any product can be made to meet the customers’ needs from gluten free to vegetarian and vegan. The easiest way for us to accommodate other dietary needs is to call ahead and give us a bit of notice.
GL: You also offer gift baskets? Janice: We make lots of them, especially leading up to the holiday season.
GL: Your goal is to make the general store the hub of the community. Please expand. Janice: Right from the start, we decided to make this place a safe haven for the local community during power outages or storms. We invested in an extra well, a massive septic tank, a generator and propane cooking. In the event of a storm or with the area being without power for a day or more, this can be the community centre where

Storms and power outages aside, we really love the idea of being the community hub where people stop in for a coffee, newspaper or to catch up on the local gossip with neighbours.
GL: What about special events? Martina: To keep things interesting, we offer different events including live music, wine tastings, fundraising dinners, guest chefs and so on. On Nov. 21, we are hosting a fundraising dinner for the Sir Frederick Banting Legacy Foundation (SFBLF). The mission of the SFBLF is to Fight Diabetes and Preserve a Legacy with a primary focus on disease prevention and self-management.
GL: Beyond the Rosemont General Store, what’s your favourite culinary destination? Janice: I am happy with great fish and chips in London, or experiencing a fabulous culinary experience in London or Tuscany, always with local, fresh ingredients, great mushrooms, truffles, grilled fish with an organic salad.
GL: any interesting future plans? Janice: Expansion is definitely in the works. We just purchased the property on the west side next to us and are waiting for its status to change from residential to commercial. Our plan is to punch through the store, expand the dining room and double the size of our kitchen. I would love to have a space that people feel comfortable in taking a class how to make pickles, or a pizza, children's birthday parties, and perhaps a special meeting place for military with such needs as post-traumatic stress disorder. To be a community a leader, we need to make access to the kitchen friendly, not intimidating.
GL: You’ve got the ear of thousands of local readers, anything you’d like to add? Janice: One of the best things about our store is that we offer a unique shopping experience. Our mission is not to be the cheapest, but to offer quality products with excellent personal service. Beyond that, I’m very proud of the fact that we have created nine jobs in this community.

4 Tbsp butter PREPARATION: 1. In medium bowl, combine the following ingredients to make custard with eggs, milk, sugar, vanilla and cinnamon. Slice bread and soak for 30 minutes in the custard. Stir in raisins and butter. Pour into buttered baking dish (9x12). Cover with plastic wrap (yes, plastic wrap) and tinfoil. 2. Place in preheated 350F oven and bake for 55 to 65 minutes. Remove covering, pudding should be set (it should jiggle when you touch it in the centre). If needed, bake for another 10 to 15 minutes. 3. Let cool 15 to 20 minutes before serving. In the meantime, make the butterscotch sauce. 4. To serve, cut into desired portions and place in individual bowls and generously spoon warm butterscotch sauce over. Serve with your favourite fruit (depending upon the season). Most fruits go well with pudding.

5. Leftovers should be covered and refrigerated. Serves 9 to 12. BUTTERSCOTCH SAUCE: 2 cups granulated sugar 1 cup water 1 cup butter 1 cup 35% cream (whipping) PREPARATION: 1. Combine sugar and water in a large heavy bottom pan and bring to a boil. Continue to boil, being very careful (boiling sugar gets very hot) until it reaches a golden amber colour. Remove from heat and add butter. 2. Stirring to combine, sugar will bubble and foam quite a bit. 3. Return to heat once butter has been incorporated and stir in cream. Mein has been making art since she was young. “Santa Claus gave me a set of paints, and that was it,” she quips. In the late ‘90s, she switched from watercolour to acrylics and discovered a new freedom in expressing herself. “It just opened up a whole new approach for me, I’m just really more comfortable painting in acrylics. I can do what I want, they dry really fast, I love the bright, bright colours,” she says. A self-taught artist, she moved to Tottenham when she was young and enjoyed a happy childhood growing up in the comfort of a small town. While she did move away from the area, eventually she and husband, Doug, moved back and currently live in the hills north of Hockley, where she has a studio in her house. Mein has an affinity for painting old buildings, which are brought to life in her Victorian scenes. There are downtown streets lined with bustling businesses, barns, mills, and homesteads. Many local sights are also featured. There’s Lunch at the Globe, and kids playing outside the former red brick schoolhouse in Hockley. The Homecoming is of her family’s (the Urbanskis) homestead near Schomberg, and she’s painted her mother’s store, which was downtown Tottenham.
With Christmas just around the corner, it’s Mein’s prime time to get creative. “It’s a wonderful time to do inside projects,” she says. When it comes to choosing a scene to paint, it’s Mein’s talents that bring the piece to life, but more often than not the subject chooses her. Her next project, a log cabin in Mono, is already talking to her. “It’s talking to me, we actually have a date,” she says. Once she has the building to focus on, her process is simple. She’ll take photographs of the site, and make a tiny sketch on the Masonite she’s working with. From there she blocks in colour and adds in the personal touches. She says there are usually two boys (for her two sons) and the family’s former cat Fluffy shows up in all her work. She also enjoys painting winter scenes and notes that you’ll see a lot of skaters. How an unwilling resident became
Beeton’s biggest
fan
By kAthRYN Mooij Herbert (Bert) Platt was an adolescent in 1949, when his mother packed up her children and moved to the village of Beeton. Leaving the big city of Toronto was the last thing the 12-yearold wanted. I believed my mother had gone loopy,” he said. “I thought it was the end of the world.” The Platts moved in with an elderly lady on Dale Avenue and in exchange for room and board, mother and children had to care for the woman. She was like something out of Great Expectations, wearing black dresses with high Victorian collars and scaring the hell out of us,” Platt says. The village was a cultural shock. “We moved here and it was just at the end of the horse and buggy era. Our home had no indoor bathroom and there were horses in stables in town.” However, the young lad found the lives of residents to be fascinating. He often went to the House of Refuge (now Simcoe Manor) to hear the elderly reminiscing about the past. “They had the best stories and I would go and pick their brains,” he says. In the rural environment, a love of history was being sown in his heart and as he delivered the newspaper, Platt got to know everyone in town. I knew every house, their politics and their

religion,” he states. Bert Platt attended Beeton Public School, which was located on Tecumseth Street. Then he went to Banting Memorial High School in Alliston. Longing for the big city, he left school in Grade 10 and headed back to Toronto where he got a job at Canadian Tire. He filled orders as he skated around the store at Yonge and Davenport. From there, he went into the finance business, a job that had him traveling around Ontario. However, after marrying Jean McKelvey of Beeton, he found his way back to the village to raise his family. With no marketable skills, the 25-year-old went to Sid Owens, then principal at Banting, and asked whether he could return to school for Grade 13. He was told it would likely be impossible since he hadn't finished Grade 10. However, Platt did earn his diploma and went to York University. Jean, working as a teacher for the grand sum of $3,300 per year, put him through university and they even managed to save some money. Platt became a history teacher for both elementary and public schools. His students would beg him to recount the stories he'd heard as a youngster. He made history come alive. In 1973, he was asked to do a pamphlet for
Beeton's Centennial. Here's the pamphlet,” says Platt, showing his 233-page book that was published and republished in 2011. It sort of got out of hand, but writing the history was like being a detective, finding new stories solving mysteries and putting the pieces all together.” He credits his wife, Jean with having a lot of patience and assistance throughout the process. Today, Platt is sometimes called “the guru of history” or “the defender of the village”. He is sought after as a speaker and is described as “passionate” about the community. He takes every opportunity to try and retain the heritage of Beeton, often advising people about the history of their homes. Platt is involved in several community groups, including the Tecumseth West Gwillimbury Historical Society, the Honey Festival, the Museum on the Boyne and the United Church. He is on the cemetery board and, in a nod to the future, is a member of FAB, the group fundraising for a new Beeton arena. The “end of the world” became a place to be loved and cherished, and Platt says he’s proud to be called “Defender of the Village”.

he cottage feels strangely quiet without the rush of weekend warriors in dripping swimming suits and the roar of the outboard motors. It’s that time when the dock is out of the water, along with the boat and the kids are back to school. Each year, as summer ends and autumn arrives, it feels like the world is starting to fade, but as you look out the window, the majestic colours of fall remind you that the change of seasons is not only inevitable, but beautiful. As autumn takes hold, temperatures drop and we get ready to gas up the snowmobiles, sharpen our skates, and lace up our snowshoes to embrace a Muskoka winter, we can also take a moment to explore some of the great seasonal beverages produced by our Ontario Craft Brewers. Most craft brewers have core brands of beer that they produce yearround, but many of them also have seasonal beer that they produce for special occasions. As a self professed “BeerSnob,” I’ll have to admit that the seasonal offerings are far more exciting to me than the core brands. With a core brand beer, typically brewers will work tirelessly to perfect a recipe, and produce the exact same consistent beer from that point on. With seasonal beer, they have license to get a little more creative, and change the taste slightly from year to year. To me this is the heart of craft brewing. That slight variation from batch to batch, always in pursuit of one-upping last year’s brew, is what transforms the words ‘craft brewing’ from a marketing term to a true art form. Native son of Muskoka, Sam Corbeil, the co-founder and brewmaster for Gravenhurst’s Sawdust City Brewing Co., takes his specialty brews as seriously as he does his legendary moustache. Turning on to Muskoka Beach Road you will see a sign that says “Winding road for 7km.” This is the inspiration behind and name for the awesome Rye Saison Seasonal from Sawdust. During the fall and holiday season, this tasty cocktail is a popular seller at Michael and Marion’s/The Side Door in Barrie. “Whether you order one up from our bar, or serve to guests at home, this sangria will add a little festive spice to your evening,” says host and proprietor Kent Smith. 1-1/2 cups cubed whole wheat bread
1. Preheat oven to 350F(175C). Spread the whole wheat bread and white bread cubes in a single layer on a large baking sheet. Bake for 5 to 7 minutes in the preheated oven or until evenly toasted. Transfer toasted bread cubes to a large bowl.
3-3/4 cups cubed white bread 1 pound (454 grams) ground turkey sausage 1 cup chopped onion 3/4 cup chopped celery 2-1/2 tsps dried sage 1-1/2 tsps dried rosemary 1/2 tsp dried thyme 1 Golden Delicious apple, cored and chopped 3/4 cup dried cranberries 1/3 cup minced fresh parsley 3/4 cup turkey stock 4 Tbsps unsalted butter, melted
2. In large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the celery, sage, rosemary and thyme; cook, stirring, for 2 minutes to blend flavours. 3. Pour sausage mixture over bread in bowl. Mix in chopped apple, dried cranberries and parsley. Drizzle with turkey stock and melted butter, and mix lightly. Allow stuffing to cool. Stuff in the centre ring of the pork crown roast. Place in the oven at 375F for 2 hours or until pork internal temperature reaches 165F.

Chef Jim Garraway of the Parkside Corner Market in Barrie says this root vegetable torte is a crowd-pleaser.
“A few years back, I auctioned off the recipe at the fundraiser for my parents’ church and it made over $400,” says the local chef. You can serve it as a vegetarian side dish or main entrée. Garraway describes Parkside Corner Market as a general store selling everything from milk and fresh fruits and vegetables to lottery tickets and home cooked meals. The local chef prepares everything fresh on-site including salads, quiche, desserts, pasta, sandwiches, soups, ribs, chicken, various prepared meals and more. 3 russet potatoes 2 beets (medium sized) 1 large yam (sweet potato) 3 parsnips 1 zucchini 1 small butternut squash 2 small onions, thinly sliced 1-1/2 cups 35 per cent whipping cream salt and pepper, to taste 3/4 cup Parmesan cheese PREPARATION: 1. Slice all vegetables thin, keeping each vegetable separate. Layer in a greased casserole dish half of the potatoes, then season with salt, pepper and some of the Parmesan. Sprinkle with slices of onion and drizzle with some of the cream. Layer the beets repeating with the onions, salt, pepper, and some of the Parmesan and cream after each layer. 2. Layer the parsnips, layer the yams, then layer the squash and the other half of the potatoes. The top layer is just the zucchini and the rest of the cream. Cover with a lid and bake in a preheated 350F oven for 1.5 to 2 hours. 3. Test for doneness with a knife to make sure vegetables are soft. Remove lid and cover with parchment paper and press with a second insert “weighted” (you could place a cake pan or the bottom of a false-bottom tart pan on top and weight it with a heavy jar). 4. These little cookies remind me of Ball’s Falls, which was where I had ginger cookies and pumpkin spice for the very first time,” says executive chef Jeremy Korten. “I think I was just 10 years old and they blew my mind. My family loved caramels, so it seemed to be a natural fit!” Oliver & Bonacini Café Grill, Blue Mountain, is located in the upscale Westin Trillium House. The kitchen is led by Korten, who has a depth of experience and a commitment to local seasonal ingredients. Menus offer extensive à la carte breakfast, lunch and dinner selections, as well as some seriously indulgent culinary experiences.
PREPARATION: 1. In the bowl of your stand mixer with the paddle attachment, cream together the butter and sugar. Add in the molasses until it’s completely incorporated. Add the eggs (one at a time), vanilla extract and spices, and scrape down the sides, so everything is evenly mixed. 2. Mix in the flour, baking soda and salt. Mix just until the dough comes together. Put in a bowl and cover until chilled. 3. While the dough is chilling, unwrap the caramels and pre-heat your oven to 350F. Line your baking sheets with parchment paper. 4. Once the dough is fully chilled, portion the dough into tablespoons. Place each tablespoon on your baking sheet, top it with caramel and top it with another cookie. Seal the caramel by rolling the edges and roll into a ball then flatten. You should be able to fit 8 to 10 cookies per baking sheet. 5. Bake in the oven for 10 to 12 minutes. 6. Note: These are best eaten the day of, but you can tickle them in the microwave for 15 seconds. 7. I liked to garnish them with simple powder sugar.

12 oz bag fresh or frozen cranberries 1-1/4 cup granulated sugar 2 whole oranges, zested and squeezed 1/4 cup orange juice 3 whole cinnamon sticks PREPARATION: 1. In a sauce pot add cranberries, sugar, juice from oranges, orange juice and cinnamon sticks. Cook on low to medium heat, stirring occasionally, until sugar dissolves and cranberries are soft, about 10 to 12 minutes. Increase heat to medium high and cook until cranberries start to burst, about 10 minutes. Remove from heat and let cool to room temperature. 2. Before serving, remove cinnamon sticks and discard. Stir in orange zest. Makes about 6 servings.

SMOKED DUCK BREAST CANAPÉ Recipe courtesy of chef Rob Reader of The Explorers Cafe in Midland This delicious canapé is sure to impress your holiday guests. “It’s a simple hors d’oeuvre that uses seasonal ingredients,” says chef Rob Reader, who owns and operates The Explorers Cafe with his wife, Jennifer. Located in downtown Midland, The Explorers Cafe is a fun, colourful and eclectic restaurant that offers a “culinary expedition to a world full of flavour.” Established in 2006, the restaurant pays homage to the owner’s love of travel and their desire to bring the tastes of the world to Midland, while utilizing locally grown and produced ingredients. 2 smoked duck breasts (store bought or smoked as per your smoker’s instructions) 2 tart Ontario apples (McIntosh or Spy) 1 French baguettet

2 Tbsp olive oil 3 Tbsp butter 2 Tbsp brown or maple sugar 1/4 tsp dried sage 100 g blue cheese 250 mL (1cup) canola oil fresh sage leaves (optional) salt and pepper PREPARATION: 1. Preheat oven to 190C or 375F. 2. Remove fat cap from smoked duck breasts, finely dice the fat and set aside. Peel and core apples and cut into a fine dice. Slice baguette 1/2 cm thick, brush with olive oil on one side and grill on both sides (I like the black lines that grilling bread creates) or toast them in a 200C or 400F oven. 3. Slice duck breast across the grain but with the knife on an angle to make slices 1/3 cm thick and roughly the size of your baguette slices. 4. Heat a sauté pan over medium heat and add the diced duck fat. Sauté until crisp like bacon. Remove to paper towel with a slotted spoon and set aside. 5. Add butter to the rendered duck fat still in the pan and heat to bubbling. Add the diced apples, dried sage and maple (preferred) or brown sugar, a pinch of salt and a grind or two of pepper. 6. Sauté until apples have softened and caramelized. Remove from heat and allow to cool. 7. Add crisp duck fat and crumbled blue cheese to cooled apples and mix gently. Heat canola oil in a small saucepan over medium high heat to 175C or 350F. Add sage leaves a few at a time and fry until crisp and dark green. 8. To assemble, place sliced duck breast on grilled bread, spoon some apple and blue cheese mixture on duck and place on a parchment lined baking sheet. Bake 8 to12 minutes until toppings are warm and cheese is melting 9. Top with a fried sage leaf and serve warm. Makes about two dozen. Recipe can be halved for smaller parties.

rowing up enjoying the sand and water under the tropical Bermuda sun, you would think my natural inclination was not to be a cowboy. But everyone daydreams from time to time and some, like me, more than others. Sometimes you never get the opportunity to rekindle that boyhood dream. But when opportunity arises, one must leap at the chance. And that’s exactly what I did during a visit to Santa Fe, New Mexico – a place the locals have branded as a “City Different”.

Voted one of the world’s top travel destinations, the city features more than 5,700 rooms to rent, another 225 restaurants and 250 art galleries.” Santa Fe, or “Holy Faith” in Spanish, is the oldest capital city in the United States and located 7,000 feet above sea level. Nearby mountain peaks are an amazing 12,000 feet above the sea. Voted one of the world’s top travel destinations, the city features more than 5,700 rooms to rent, another 225 restaurants and 250 art galleries. Averaging more than 300 days of glorious sunshine a year doesn’t hurt matters, either. Our flight was an easy one from Toronto to Minnesota and then on to Albuquerque, New Mexico. A quick rental car and picturesque drive to Santa Fe and our true journey began. Three things quickly stood out for me as we entered “that sleepy little town”: tremendous views, a lofty altitude that can create a little headache if not properly hydrated, and the friendliness of the locals. It was the latter that reminded me of Bermuda. You can exchange the khaki shirts for cowboy boots, but it’s certainly refreshing to see how warm, charming and sincere people can be. Our first night would become a highlight of the journey, thanks to the La Posada de Santa

Fe Resort and Spa, located two blocks from the historic downtown plaza in the heart of Santa Fe, New Mexico. It is an intimate village of 157 adobe-style suites and rooms, with a mixture of Old World and Spanish Colonial charm. On arrival we were and given a tour of the resort that helped make our stay a comfortable one, including a stint at the spa, This recently updated 4,500-square-foot spa and beauty salon has been visited by Hollywood’s top box office draws, and offers indigenous treatments and facial rooms, a fitness centre and heated outdoor pool and whirlpool. The food at the La Posada is exquisite, thanks in large part to Chef Todd Hall, who was behind the world’s first four-star Mexican restaurant – La Hacienda in Scottsdale. He oversees the Julia Restaurant and The Patio Restaurant, located in the 19th Century residence of one of the city’s pioneers and a favourite gathering place. Dinner at the Julia Restaurant was an experience with the flair of the Staab mansion and overlooking the scenery admiring the horses in the corral, the open spaces and snow-dipped mountains. Fonda, Santa Fe’s most cherished landmark hotel, which combines illustrious character and ambiance, ultimate luxury and historic integrity. This 80-year-old, three-diamond hotel features original artwork set in an historic pueblo-style building on Santa Fe Plaza. The site has been home to an inn for nearly 400 years and official records show a “fonda” or inn among the first businesses established in the early 1600s. What followed was two days of what must be my favourite pastimes – shopping and food. It started with Back at the Ranch Cowboy Boots. Wendy Lane isn’t the first to fall in love with Santa Fe and probably won’t be the last. After working for years in women’s readyto-wear in New York, Wendy made the move to Santa Fe and opened Back at the Ranch Cowboy Boots on East Mercy Street. Although locals shop at her unique shop, she caters to the tourist trade. She sells both custom boots that she encourages her customers to help design, in addition to used boots that go well with faded jeans, denim shirts, western belts and buckles and hats. It gives tourists that “I belong here” look while enjoying their Santa Fe stay. Boots are made with the most fabulous of colours and designs. Wendy, in fact, works with a Texas bootmaker who supplies her with the custom boots. Any style can be

Finally I stumbled across a store window that looked to be right out of a John Wayne movie. The sign said O’Farrell, Santa Fe. The owner Scott O’Farrell makes the best cowboy hats in the land. For once I was speechless looking at his collection for men, women and children alike. They come in all shapes, sizes and styles. Scott took the time to explain just how these cowboy hats are created and in the end I had to have one made for me.

Many visitors, including myself, believe that cowboy boots only come in brown and black. Funny enough, nine out of every 10 shoppers at Back at the Ranch believe that when they walk through Wendy’s door. By the time they leave, nine out of every 10 shoppers know differently! A highlight of any trip to New Mexico is a visit to the Santa Fe School of Cooking, founded in 1989 by Susan Curtis. Under her direction, the school achieved international acclaim. Located at 125 N Guadalupe St., Santa Fe, Nicole Curtis Ammerman, Susan’s daughter and director of
operations, has expanded the school’s roster to include restaurant walking tours and increasing exposure to local Santa Fe restaurants. The school’s staff and chefs bring varied backgrounds and special interests to class, including professional restaurant service and catering, college culinary arts instruction, award-winning cookbook writing and restaurant consulting. Susan herself has coauthored several cookbooks, including The Santa Fe School of Cooking Cookbook, Tacos and Salsas and Southwest Flavours. There are regularly scheduled classes that cover the hands-on experience as well as the demonstrated classes but the one with the greatest intensity must be the Southwest Culinary 3-day Boot Camp. It is very interactive
and ends the day with a meal. The final meal serves as an exam prepared for some of Santa Fe’s best palates. Special events include hands-on corporate team building classes, family reunions, wedding showers and salsa making contests.
