It’s hard not to feel just a little more optimistic this time of year. The days are longer, brighter, milder and filled with the promise of the warmer days to come. People start to get out and about after months of hibernating at home. Not surprisingly, many of us feel energized and ready for a refresh — in our homes or our lifestyles. This issue should give you lots of ideas for both. We have three features about three businesses — Roost Wine Co., The Olde Stanton Store and Crow Bar & Variety. In each case, the owners had very different reasons for opening their particular business, but there was always an underlying passion for what they were doing. And so far, following their dreams has led to success, be it in creating new local wines, curating fun and eclectic items for sale in quirky, cheerful shops, or providing a venue for delicious local food, drink and music. Great insights for anyone considering starting a new business. We also take you on a tour of a renovated Collingwood chalet. What’s the big deal? Well, the reno is a dramatic departure from the owners’ usual urban style and the results are both stunning and serene — a perfect connection to the natural surroundings and just the ticket for a rejuvenating getaway. It’s a good reminder that taking the time out of our go-go-go lives to get in touch with the outdoors is intensely therapeutic. Lucky for us, this season makes that much easier.

Residents of Barrie, East Oro, Shanty Bay, Horeshoe Valley, Craighurst, Innisfill, Thornton and elsewhere can now go to instacart.ca (or on the mobile app), select their local Loblaws or Zehrs, fill a virtual cart and select a delivery window (an hour, two hours or up to five days in advance). Keeping up with seasonal tasks makes yearly maintenance manageable and keeps your home in top shape. This spring, take the time to do the following: • Clear your air conditioner. EXPERT KITCHEN HACK With grilling season just around the corner, we asked a Jeremy Korton, execute chef at Blue Mountain’s Oliver & Bonacini Café Grill, for his advice on cooking the perfect steak. “Buy well-raised, grass-fed beef. Before you cook it, pull it out of the fridge and let it sit on the counter for 20 to 30 minutes, to come to room temperature. Season it with salt and pepper. The meat will absorb the salt and start to sweat, which brings out the moisture, then put it on a hot grill. To determine doneness, mid-rare can take six to seven minutes for a striploin, or a minute or two longer for ribeye. Ribeye is my favourite and best on the barbecue because it has more fat marble, which results in more flavour. When it’s cooked to your liking, pull it off and let it rest. If you cut into it too soon, the juices will run out and your steak will be tough and dry.”

New research from the European Society of Cardiology has found that very low-calorie eating plans could be damaging for those with heart disease. After one week MRI tests showed higher heart fat content and deterioration of heart function, including its ability to pump blood. A friend from Toronto suggested she look at the Town of Collingwood. She came up to the area bought a house that day and moved within thirty days. Christine considers this to

be her wisest move ever and although moving here on her own and knowing no one -- Christine knew it would not be hard making new friends and having a great lifestyle here. Christine bought her house in the Blue Mountain area with views to the mountain and sitting on a golf course and a huge back yard for Tanglefoot! Basket Case It’s a tricky time of year. Will it rain? Will it snow? Because the answer changes from day to day, your front entrance can start to look like a clothing war zone. Thankfully, Margaret Halos, owner of Living Organized (livingorganized.ca), which serves the Barrie and Alliston areas, has some battle-ready strategies. Bin thinking: “I’m a big fan of baskets and bins,” Halos says. “In almost every closet, there’s space up top where you can put baskets of additional stuff.” Designate one for hats and mitts, she suggests. Or give each family member a basket to use. Separate seasons: “People drop too many coats, jackets and shoes in the front hall closet,” Halos says. Keep only what is in season (with maximum of three) and put the rest in bedroom closets. Rack up: If you have to keep a few footwear options at the ready, buy a shoe rack, Halos says. Then keep the taller boots on the top and shoes on the bottom. That should help keep things tidily at hand.

In truth, the sole purpose of any weekend home, be it a ramshackle cabin in the woods or a luxury Collingwood townhouse at the foot of the ski runs, is a place of retreat — a refuge to cast off the stresses of the city and reconnect with your wilder nature. Fresh off the recent purchase and decoration of a town bungaloft in Collingwood, Stef Edwards and David McVicker realized the retreat they had just designed didn’t answer these criteria. The shelter wasn’t large enough to accommodate their frequent weekend guests, and the palette of cool greys and whites didn’t provide enough of a departure from their Aurora condo. Reassessing their choices, they decided to switch gears completely, unload the property and pursue a more rustic getaway that spoke to their weekend sensibilities. It was a bold move, but it was also a risk the couple was more than willing to make. “I didn’t want the same modern grey themes,” Edwards says. “I wanted something that is warm and comfortable and really brings the elements of the outside in. I wanted people to come into the space and feel comfortable and homey.” Events would unfold quickly. The sale would include all furnishings while the hunt for the new chalet was on. “My girlfriend found it,” Edwards says. “She showed me the brochure at Thanksgiving. The next day we went to the open house and fell in love with it. It feels like you’re outside. We saw it at 2 p.m. on Thanksgiving Monday, and at 8:30 p.m. we had an accepted offer.” The new chalet features a grand stackedstone fireplace, rivers of wood and a rustic character that whispers simply, “Relax.” It also increases their living space by 1,200 square feet, expanding their bedroom count to four — room enough to lodge all friends and family with ease. “You can see Georgian Bay from the master,” Edwards says, “and the ski hills from so many rooms. It’s like you’re living in nature.” Delighted with their new acquisition, Edwards and McVicker called upon their go-to designer, Niche Décor, a full-service custom design and retail operation in Aurora, to handle the chalet’s interiors. Shima Yazdan, vice-president of operations, knew her clients’ tastes well, having designed most of their residences. “They’re stylish people who love entertaining and living in a beautiful space,” Yazdan says. But this new chalet was for pure recreation. There’d be skiing gear, parties, dogs and guests. Yazdan brought in a deep Gia sofa for the living room in a durable polyester blend made

They needed a large lounge, a spot to put the feet up — no refined finishes that don’t hold up.” Yazdan paired the sofa with inviting sink-into them Eleanor club chairs in brown leather, then dressed everything with chunky pillows and throws. A hide throw rug, shadowbox coffee table and freeform teak nesting tables completes the tableau. “Our big philosophy is ‘Love where you live,’” Yazdan says. “Your home should be a reflection of your personality, who you are. You need to be comfortable in your space. No cookie-cutter templates.” Steps behind the sofa, the Libations Bar Cabinet is the spot to refresh drinks during parties. Bar cabinets are a growing trend. The clutter of glasses and spirits is tucked away behind bifold louvered doors that deliver a clean look when not in use, but unleash party glitz when appropriate. On the opposite side of the living area, beyond the entryway’s oak-and-iron stairwell, you’ll find a compact kitchen and dining area. Yazdan brought in the rustic Couture dining table that seats eight, with three different seating profiles to choose from. There’s one to suit every temperament: for squirmy children, bench seating made of seared oak with live edge; castered upholstered end chairs for heads of household; and three leatherette Halden chairs that provide durability for active guests. The art on the wall, entitled Solitude, is a custom-framed depiction of tree branches printed on glass and paper that generates a 3D effect. Above the table, a 16 Edison-light pendant lamp hangs from nautical ropes. It matches another dangling over the main stairwell. Most of the artistic touches throughout the home are intentionally organic in nature. Twigs, tree accents and small bird nests are found everywhere in art pieces and in actual form. Do you have any Open Permits on your home with the local municipality? Do you have a survey? unchtime is winding down at the Crow Bar & Variety in Collingwood. Four tables remain with diners noshing on artisanal pizzas, mixed-appetizer platters and local grass-fed burgers, complete with some of the tastiest russet fries around. In the corner, musicians set up for tonight’s show on a stage

with a red velvet backdrop and a neon sign that reads “Music Saves.” The decor is hip and interesting, with brick walls, reclaimed-wood communal tables, an open kitchen and a long bar fashioned out of tin from a vintage barn. The place has a cool vibe, and frankly, I want it to be my new hangout.

Opened in July 2017, “Crow is committed to delicious food and drink, welcoming hospitality and great live music,” Jennifer Vipond says.

You’ve successfully operated Bruce Wine Bar for seven years, what led you to launch Crow Bar & Variety? Jennifer Vipond: The timing just felt right to open an interesting venue in Collingwood. We have owned this building for over a decade, so we decided to renovate it and create something in Collingwood that was all about food, booze and great live music. Steven (who is also a local builder) has this amazing ability to create an interesting space.

I understand it’s also hyper-local. SE: That’s right, just like Bruce Wine Bar, we source as many local ingredients as we can. We live in an amazing agricultural region and we try to support the local farmers and producers whenever possible.

So food, booze and great live music is the driving philosophy? JV: Crow is a very serious live music venue, but first and foremost, it’s a restaurant that serves amazing food from an ever-evolving menu with a focus on seasonal and local

How would you describe the menu? Shaun Edmonstone: It’s fun and approachable, with an eclectic mix of bites, entrées and sharable things. Everything is made in-house — and I mean everything. We make all of our pizza dough, desserts, bacon, pepperoni, sausages, sauces, dressings, mayos and so on. We even make our own ketchup.

What are some of the most popular items? SE: The pizzas are super popular. They’re a Roman style, so a bit different than the woodfired Neapolitan style we serve at Bruce. The local grass-fed burger and fried organic chicken also just fly out of the kitchen. Other hits include the charred Napa Caesar salad, the grilled pork chop (served with squash and potato dumpling, mustard and apple purée), and the chickpea fritters — the last two items are my favourites.

JV: The truth is that everything on the menu sells really well. Let’s hear about your craft cocktail bar. JV: Our bar is a craft cocktail playground. Our dedicated craft bartender, Luke Martin, uses ingredients to fuse the perfect concoctions. Along with making his own ice, all of the bar ingredients from fresh juice to bitters and syrups are made in house. Grand Theft Pineapple and Let the Wookie Win are two of our most popular craft cocktails.

As a trained sommelier, I’m sure you take the wine pretty seriously. JV: We offer about 20 reds and 15 whites by the bottle, and about five whites and five reds by the glass. Our wines change frequently, but they’re always unique and approachable. As for craft beer, we have plenty of it both on tap and by the bottle. There’s a table currently doing a tasting lunch with wine pairing a few seats down, can you tell me about it? JV: It’s a 40th birthday party. Shaun created a special menu for them, and I did the wine pairings. As each course is served, I present the selected wine and discuss how it enhances the flavours of each dish. We love accommodating special requests like this. Do you have a happy hour? JV: We offer a daily happy hour from 3 pm to 5 pm. ously. We have a great sound system and a small-but-functional stage. We are very fortunate to have the talented Craig Smith, a local musical treasure, running the stage. Tell me about the Crow Sessions. SV: On select Tuesdays every month, we’ll be presenting various artists in an early dinner-show format. Our first show with Tom Wilson was a sellout success. We were also approached by Danny Michel to host his School Night Mondays (made famous at The Dakota Tavern) for the month of March. Check out our website because we’re always planning something. Music is also a big part of Bruce Wine Bar. Tell me about your strong connection to sound. SV: I’ve always loved music and it’s been a huge part of my life. There’s something about musicians that’s so compelling to me. I love listening to their stories, and I’m so impressed by how hard they work on their craft. Before we even owned the restaurants, we held house concerts at our home. To this day, we still have house concerts once a month. Any interesting future Crow plans you’d like to share? Y

ou’ve got to love a store where you are guaranteed a free sample of superb homemade fudge on every visit. Thirty flavours, your choice. Fans of The Olde Stanton Store at Blue Mountain Village return for what is generally agreed to be the best fudge ever. However, they also come back for the store’s rustic, modern mix of eclectic giftware, charming home decor items and its good-time vibe. Owners Marie and Len Swidersky, their son Nick and store manager, Kim, specialize in making everyone who enters the store feel welcomed and appreciated. “Do you want to try the dark chocolate fudge with sea salt?” Marie asks two women who have come off the slopes for a little retail therapy. “It actually lowers your blood pressure. Just kidding — it doesn’t really. Hold your hand out and I’ll give you a sample.” With its board-and-batten exterior and stone chimney, The Olde Stanton Store appears to be a historical building. It isn’t, but the interior is a vintage barn, complete with wide plank floors, metal ceiling and wooden rafters. The barn used to stand near the couple’s first Olde Stanton Store on Airport Road near Mansfield, Ont. Len, who is an accomplished encaustic and acrylic artist, rebuilt the barn inside their store for an oldtime, mercantile look, and added a mezzanine. The second floor displays a variety of large prints and unusual home

decor items, like oversized clocks, woven rugs, one-of-a-kind lamps and striped hammocks. The couple bought the first Olde Stanton Store in 1978 as a gallery for Len’s artwork and sculpture. He renovated the boarded-up building and opened for business in 1980. Though they initially sold only Canadian-made items, it became apparent more was needed. Spanish glassware and other international products were soon added to the mix. In time, the couple opened stores in Primrose, Churchill and Alliston. Launching a venture at Blue Mountain Village was a major decision. “We were worried about doing it, but we’ve never looked back,” Marie says. “It’s a lovely place to be. On March break, the Village is packed and we’re ready for it. At first, finding the right inventory for their stores was a matter of trying something and seeing if it sold. It’s a method that still works today. “Len and I just worked at trying to find things people wanted,” Marie says. “Sometimes we’d find something didn’t sell at all and we’d be shocked. Then we would try something else and it would fly out the door. Eventually, they opened stores in Primrose, Churchill and Alliston. “In our stores, we really care about people,” Marie says. “If we didn’t, we wouldn’t want to do this. Whenever I go and talk to high school classes about operating a store, I tell them that it is important to thank customers as they step through the door and when they tell us how much they like the store. Up here in Blue Mountain, we have a lot of fun because people are usually here on holiday. They are having lots of fun and you want to make sure they have a great tiime.” The main floor of The Olde Stanton Store is a treasure trove of giftware and home decor finds. Birdhouses, pillows, Canadiana, candles, cottage crafts, garden items, quotation signs, jewellery, as well as locally made gourmet wine jellies and jams, are just a sampling of what’s on the shelves. In every nook and around every corner are new things to discover. With her artistic eye, Marie creates splendid displays that wind around and through the store. Art prints are popular for chalet and cottage decor, including the folk art-inspired work by artist Sam Toft. During the cold weather, scarves, hats, sweaters and gloves are in high demand. Texting gloves allow tweets and email to be written without freezing your fingers. In the Kids Corner, furry palm-sized animals, huggable stuffies and snappy socks, as well as toys and games, await the little ones. Jewellery made from upcycled silverware by a Collingwood couple, a recent arrival and a hit, nestles beside the fudge counter. One of the most recent additions to the store’s offerings is singer-songwriter Marie’s new CD Like Water, recorded with guitarist Fred Smith. The cover features Len’s drawings and graphics by the couple’s daughter, fine artist Jessica Tamlin. Marie has been known to grab her guitar and head outside to serenade customers as they stroll by in summer. The Olde Stanton Store’s feel-good vibe is apparent at the couple’s other stores in the Village — Go Fish Go and The Happy Valley Candy Co. Both stores’ friendly customer service and wide-ranging, just plain fun merchandise add laughter and deliciousness to customers’ lives. Go Fish Go, with whimsical outdoor signs carved by Len, stocks a fresh assortment of t-shirts, clocks, salt lamps, leather bags, magnets, clothing and kitchen linens embossed with the occasional naughty word. Sock designs range from collages of kittens to Prime Minister Justin Trudeau. The store’s colourful graphic drawings of Blue Mountain ski runs are by Jessica. “My son Alex does such an amazing job at Go Fish Go,” Marie says. “There are lots of hand-made items and different, quirkier things here. Nick does fabulous work at the Olde Stanton Store.” At the Happy Valley Candy Co., a blizzard of candy brands plus multiple flavours of popcorn create a paradise for kids. “We get gallons of kids in here and have to pick up loads of candy every week from our suppliers,” Marie says. “We have the best-tasting popcorn. There are summer movie nights once a week in the middle of the village and we take a popcorn machine outside for people.” The Olde Stanton Store, like the other stores in the Village, is open 365 days of the year. That’s just fine by Swindersky. “Even on Christmas Day, people are skiing on the hills and we want to be here for them,” she says. “We feel at home here and want people to have a really nice time. If you run into an old grouch in a store, it can sort of ruin your holiday.
