esign aficionados, Julie and Ernest Herr, enjoyed building their first custom home so much, when they sold it they decided to construct another. Needing a place to live during the process, they purchased a cozy bungalow on Aspen Way in The Blue Mountains. Moving from their spacious contemporary home was an adjustment. This new place was comfortable and warm but had twenty years of character behind it. The former owner was the father of a renown Canadian skier, and while the home was still in great shape and situated in a prime location between the ski slopes and the beach, it had been well-loved and lived in. The rear yard was dark with overgrown trees and the interior had older carpeting and roughed up hardwood flooring. “We planned on just painting it and living in it for the duration,” says Julie. But the designing urge within Ernest could not be silenced and before they knew it they were renovating the house

from the studs out. “We went overboard,” laughs Julie. “We were down to one functioning bathroom and camping out in one room.” They even had the exterior of the residence restuccoed, repainted and the driveway laid with concrete with recessed lighting and trimmed with crushed granite. Ernest, who works long hours in the manufacturing sector, enjoys design as his creative outlet, and saw the potential for a fresh, clean look with a more open concept. He also had some new ideas he wanted to try out. “He’s so cool at finding special features,” says Julie. Like the backlit onyx, he had installed at their previous residence. They pulled down walls to enlarge the kitchen. Added two huge windows spanning the length of the room and installed corner windows and patio sliders at the far end. A few trees were cleared to bring in more light, while still maintaining that forest feel.

For the main floor living room, a linear Majestic fireplace was set into a wall which was clad in concrete tile.

“It used to be a smaller kitchen,” explains Julie. “Originally it had only a small 3 x 3 window over the sink. We made the kitchen larger and added those windows on the side. Now there’re mountain views from all the windows and lots of natural light. I’m staring at Craigleith Ski Club when I’m doing the dishes.” Three different companies replaced windows throughout the entire home, including Kempenfelt and The Glass Doctors. Mad Cabinetry out of Collingwood installed the new kitchen and dining room cabinetry. The Granite Company from Alliston provided the quartz kitchen counters. Sleek grey glass subway tile was laid for the backsplash (Olympia Tile) and porcelain flooring was sourced from The Tile Shoppe in Vaughan. Appliances went in next, starting with a GE Monogram professional grade range. This choice was primarily because of the safety features. With two youngsters in the home, the Herrs liked the idea of lights on the control indicators that alerted them if any of the six gas burners were ignited. They also installed a Monogram Infrared Range

Hood with warming plate, which Julie reveals cost about as much as the range. “The design guy won that battle,” she laughs. A GE Café fridge and Monogram dishwasher completed the picture. At the far end of the kitchen, a three-seater island holds nine different storage drawers. “The peninsula is our family hub,” explains Julie. “We do everything at the island. We eat there. Do homework there. Especially if it’s just me and the kids. If everyone is home, we have a family meal at the dining table.” Directly opposite the peninsula is a large coffee bar that has been dubbed, The Daddy Station. “My husband is a coffee connoisseur,” says Julie. “He’s very specific about his beans. They have to be ground fresh every day.” Which inspires the children to frequently hide the beans just to tease him. The location of the coffee bar is spoton, sitting between the peninsula and the dining room, out of the main kitchen prep area, making it convenient for entertaining. The family uses it regularly to serve drinks and hors d’oeuvres during events. A Napoleon Torch fireplace, mounted on the wall opposite, warms the area. “It gives off a lot of heat,” says Julie. “It’s a really nice way to give some life to the house. A little atmosphere on a cool morning.” In the dining room, a six-seater harvest table awaits dinner parties. This layout suits the family because the table is always kept tidy and provides an unobstructed view from front door through to the rear patio doors to the forested yard. The sidebar in the dining room is also built in, along with a professional Silhouette wine and beverage fridge, right where you need it. A rustic contemporary nine-light pendant (Lando Lighting) dangles above. Matching pendants hang over the peninsula in the kitchen. For the main floor living room, a linear Majes-

serenity of nature. “It’s so private in the summer time,” Julie says. “When the leaves fall you can see the mountain from the living room.” One of the reasons they chose this property was because the lot was directly across from a conservation section, which meant no one would ever be building there

Another of the more expensive upgrades was the wire brushed oak flooring that winds all the way through to the main floor master. “One of the things most people don’t realize,” says Julie. “Is that the cost of your material is about the same as your labour. So, whatever you pay in materials, double that, for a renovation.” The ensuite was a complete gut with new Carrera matte tiling, heated floors, rainfall shower, vessel sink and a freestanding tub, which was a special size to fit in a standard tub opening. “It’s really comfortable and the kids love it,” says Julie.

L

andscape designer, Mark Higginson, has been creating stunning landscapes for nearly thirty years. His formal education in the field was attained through Fanshaw College where he graduated as a Certified Landscape Designer. He launched his own company, Natural Stonescapes shortly thereafter and went on to win The Landscape Ontario Award of Excellence for Residential Construction from $500,000 to $1,000,000. The company, which specializes in pools, hardscaping, and natural landscapes, operates out of Lora Bay. GL/How are you different from other landscaping companies? We’re all in house. Most landscape design companies have to hire their own architect or designer. I do all that myself. I run the crews. I organize everything so all the customer has to deal with is me. No one else. And I only do two projects at once so I can have full control and not have any screw ups. GL/ What is the average cost of a landscaping job? $100K. I don’t do much under that. Most of my jobs run four weeks to two months, depending on size. GL/What types of jobs do you do? Pools are our specialty, but we do all sorts of patios, terraces, steps and retaining walls. I do

a lot of driveways on new homes too. Stamped concrete, exposed aggregate, coloured concrete and then borders and banding and all that sort of stuff. We use granite boulders for down by the water because that’s what’s needed by beach areas and if we’re up in the hills we use limestone. Because that’s where the limestone comes from, up top. We also use a lot of jumbo flagstone. We

have vacuums that we pick them up with on the excavator, so we can pick up anything and move them wherever we want. GL/ Are people asking for more natural shapes in pools today? There are two types of pools, there’re free forms with nice free flowing radiuses but mostly I do rectangles. Really functional pools. You get more bang for your buck for swimming.

GL/Do you recommend vinyl or concrete for pools? All the pools I do are steel vinyl. I do a nice cantilevered stone coping over the edge and it makes them look like a concrete pool. I used to do concrete but concrete’s priced right out of the world. A nice steel vinyl pool you can get for under $50 thousand with all the bells and whistles. You’ll have a heater and lights and variable speed pumps, winter covers and all that kind of stuff goes with it too. The stairs are all vinyl over steel now too, so the stairs would run the whole length of the shallow end. So that’s what we’re doing a lot of now. That’s the latest craze in pools. You can sit right on the steps wherever you want in the shallow end. GL/ What are homeowners looking at to do a gunite pool? Triple that. A hundred and fifty grand. So that takes the average person out of the gunite market. You have to bring a company in from Toronto to do your gunite pool. Added cost of travel and all of that. The thing with gunite pools is the expensive maintenance. You get tiles falling off and the plaster is susceptible to chemical damage if you don’t balance your pool properly. GL/How long does a liner last? You can get 13-15 years out of it. It’s in a little track tucked up under the coping so you can’t see it. The cantilevered coping is natural stone with a guillotine edge on it. That makes it look

like rock and you hang it about an inch over the pool. It looks like a concrete pool because the coping goes around the whole perimeter. GL/What other things are people asking for today in landscape design? The big thing they want now is gas fire pits and gas fire tables. Focal points in their backyard. GL/What tips do you give homeowners when designing walkways and paths? Keep them in scale with the house. The further you bring the landscape away from the house, the more it will settle your house visually, scale wise. GL/What are the three most important things for a great landscape? A grading plan, good drainage and great compaction. The design is important of course, but you have to get rid of water before you do anything, and take care of the compaction underneath everything. If I’m doing a driveway I take all the downspouts, tie them together, bury them and run them off the property so there’s no water coming off the house whatsoever. The main thing is getting rid of water. The most expensive part of a landscape is what you can’t see. It’s the prep underneath. GL/What have you done in your own home? We have a horse farm. We’ve got 25 acres. I’ve got a 20 X 40 in ground pool. We have a hot tub built into a stone deck out back and paddocks and all sorts of stuff. GL/Do you have an outdoor entertaining area? Yes, we have a couple of them. My pool has a huge deck around that and we have a big stamped concrete deck out at the back of our place and in the front we have a courtyard. So, we have three different entertaining spots. We have a bit of everything, lots of mature trees and berms. GL/What should homeowners consider when hiring a landscaper? The best way to hire a landscaper is to go look at something he built five years ago. If it’s still in one piece, he’s good. I take people around to jobs I’ve done twenty years ago. They’re all still perfect. That’s a good sales pitch.

Capturing Fleeting Momemts

T

he iconic red canoe reaches deep within the Canadian soul. It evokes memories of our youth. Summers spent at camp, weekends at the cottage, hardy treks through the backwood tributaries of our scenic land. Synonymous with indigenous culture, the canoe’s illustrious history is a storied one, and painter Brigitte Nowak relishes in it. “I love the look of canoes,” she says. “They’re curvaceous and beautiful. They don’t have a bad angle.” Nowak bought her first canoe at age sixteen with her hard-earned babysitting money. She has been “tripping” in them and painting them ever since. Today she owns five. Including one prized specimen built by the Hurons in Quebec in the early fifties. It leaks a little and is a challenge to use she admits, but it remains one of her most cherished possessions. She bought it purely for its beauty, and plans to have it restored. Growing up as an only child in Cambridge, Ontario, drawing and imagination was her refuge. She went on to graduate from the Fine Arts program at Guelph University, but her talents were put on simmer when she was encouraged to take a regular job. Contentment was found working in her studio in the evenings and it wasn’t until much later in adulthood that she determined it was time to dive into her artwork fulltime. Today she paints in her studio six hours a day, six days a week and in the summers at her Georgian Bay waterfront property, where she captures the romance of the cedar strip canoe en plein air. In her piece entitled, Light, Mist and Memory, a wistful mist hangs low across Georgian Bay at dawn. You can almost feel the morning shiver up your spine. Her painting, The Grey Dove, portrays viscous ripples of water flowing the length of the canoe as the bow cuts across the surface. You hear the echo of a loon’s call in the distance.

Nowak works primarily in oils, but also dabbles in egg tempera and serigraphs. Meticulously layering her medium onto the canvas, she shuns large brushes, relying only on tiny watercolour brushes. “I can get quite a lot of detail that way,” she explains. “It’s not one coat of paint and I’m done. Especially for sky and water. I’m reworking it to get the depth of colour I want. I like oils because of the richness of colour. It’s very blend-able, buttery, and sensual.” The lake itself is another of Nowak’s fascinations and she waxes poetic about how the water bends and distorts an image with the light. “The water is both a window and a mirror,” she remarks. “It reflects back on itself and yet it’s a window you can look through.” Nowak has done a series of swimmers diving and sculling just below the surface. A few of her subjects were her own children which she wanted to paint precisely at the time when they were gaining self-awareness. “They weren’t adults yet, but were just coming into their own world,” she says. “It’s a fleeting time.”

Ensnaring those fleeting moments on canvas is a theme that reoccurs in much of her work. It’s because of her approach. Her images are born of an idea, not a scene she has witnessed. “Usually I’m trying to find a feeling,” she says. “Of being alone in nature. Sometimes it’s a smell, the aroma of the leaves and the earth after it rains. Then I try to figure out how to represent that visually.” She begins taking reference photographs, observing her surroundings, and pulling it all together. This connection to the natural world may be why her work is so sought after for cottages, chalets, and corporate installations. Their themes hold fast to the Canadian ideal and the relationship between nature and the human spirit. red brick and limestone to create a seamless integration of the residence with the downtown core. Every suite in the building has ten foot ceilings and a balcony. The Penthouses enjoy thirteen foot ceilings and terraces. Suites have gourmet kitchens with stainless steel appliances, under mount sinks and soft close contemporary kitchen cabinetry with under cabinet LED lighting. Owners also have a choice of either quartz or granite countertops and they can choose from a selection of ceramic tile backsplashes. Large windows bring in that spectacular view. Smooth ceilings, designer wide plank laminate flooring, elegant interior doors with European style levers, front loading full sized washers and dryers and underground parking are all standard. Just like Nanaimo bars and poutine, Caesars are a Canadian culinary invention. With that in mind, it goes without saying that North America’s first Caesar bar should be located somewhere on Canuck turf. And it is — right here in historical downtown Collingwood. Since opening its doors in July of 2018, the 1858 Caesar Bar has served plenty of thirsty customers. With over 30 creative Caesars to choose from, the concept has been so successful that it recently moved from its original shoebox-sized location to a more spacious site across the street that can accommodate over 90 people. To learn more about this tasty concept, this Goodlife reporter recently pulled up a bar stool at the 1885 Caesar Bar with owners Steve and Vanessa Walker. After being served a scrumptious Korean Beef Caesar (topped with Korean Beef Striploin Strips), the interview got underway, and here’s how it unfolded.

OUR GOAL WAS TO CREATE A VERY FUN, CHEERFUL, COZY AND SOCIAL SPACE WHERE EVERYONE WOULD FEEL WELCOME.

What led you to open a bar that specializes in Caesars? Steve Walker: I’ve always loved Caesars, so about nine years ago, I started bottling my own homemade Caesar elixir. We’d use it at home when entertaining, or give it away to impress friends. Then, one of Vanessa’s friends suggested that we start selling it. We took her advice and created Walkers OneShot — a premium handcrafted caesar mix. We started selling it at trade shows and it just snowballed from there. We even appeared on Dragon’s Den. Based on the success of Walkers OneShot, we decided to open a Caesar bar and the rest is history. What led you to choose the name 1858 Caesar Bar? SW: 1858 is the year that Collingwood incorporated. We love this town and wanted to choose a name that recognized the historical significance of this area. Along with a classic Caesar cocktail, 1858 Caesar Bar has over 30 fun and flavourful

signature Caesars to choose from — ranging from a Jamaican Jerk Caesar garnished with a Jerk Chicken Skewer and Pineapple to a Surf’ N’ Turf garnished with Lobster, Shrimp, Steak, Calabrese, Jalapeño Cheese, Pepperocini and Tomato. There’s even a build-your-own-option. That’s a lot of choice! SW: The sky’s the limit when it comes to choices. Our signature Caesar line offers 30 different flavours from around the world, and our build your-own-option is similar to building your own flower bouquet because you can choose between various meats, cheeses, vegetables, sushi and more. To keep things interesting, we develop new Caesars every couple of months, so there’s always something new and fun coming down the pipeline. Our tag line is ‘We do Caesars, not like the rest….just the Best.’

What’s the secret to making a great Caesar? SW: Walkers OneShot is key and every 1858 Caesar starts with it. After that, it’s love along with a big emphasis on local ingredients and Mott’s

Can you expand? SW: Our goal was to create a very fun, cheerful, cozy and social space where everyone would feel welcome. We’re a family friendly place and demographically we cater to everyone. Along with our alcohol infused Caesars, we offer plenty of kidfriendly virgin Caesars. Vanessa Walker: It’s designed to be a communal space where customers can strike up conversations with each other about the fun and interesting Caesars they are drinking.

What’s on the food menu? SW: We offer some shareable plates, such as dill fries, a shrimp cocktail, hummus and pita, charcuterie boards and more. Our future food plans include a build-your-own grilled cheese, and an expanded tapas menu. I’ve heard you compare 1858 Caesar Bar to a Starbucks. Can you expand? SW: We model ourselves very similar to a Starbucks because there’s no table service. You place your order at the counter and then pick it up at the counter. We fall into the quick service restaurant category or QSR. What are the top sellers? SW: Our number one Caesar for the last year has been Feeling Dill, Maple Barbecue comes in second and third place belongs to the Build-YourOwn. My personal favourite is our Korean Beef Caesar. While the traditional Caesar is vodka-based, I understand that 1858 also serves up different flavour profiles by utilizing various alcoholic beverages. What are some examples? SW: Along with vodka, we have gin Caesars, tequila Caesars, whiskey Caesars, moonshine Caesars, saki Caesars and red wine Caesars. We basically offer every kind of Caesar that you could imagine.

Can you talk about the Canadian connection to the Caesar? I understand that in 2009, the Caesar was officially declared “Canada’s Official Cocktail by Parliament.” SW: The Caesar was invented in 1969 by restaurant manager Walter Chell of the Calgary Inn (today the Westin Hotel) in Calgary, Alberta. He created the cocktail after being assigned the task of concocting a signature drink for the Calgary Inn’s new Italian restaurant. That was 50 years ago, and since then the Caesar only continues to grow in popularity. For example, according to Mott’s Clamato research over 485 Million Caesars are consumed by Canadians every year! You offer various non-alcoholic Caesars, but what about drinks for someone who isn’t in the mood for a Caesar? SW: We carry various local craft beers and ciders, as well as ready to drink cocktails.

Do you offer any specials? SW: On Wednesdays and Thursdays we serve classic Caesars and tall boy beers for $5.85 from open to close. What were you doing before the Caesar business? SW: I was working in the automotive and recreational vehicle dealership industry in sales, management and later ownership. Throughout this entire journey, Vanessa has owned a local pest control business called OxiSix. 1858 Caesar Bar seems to have a very large social media following. I can only assume that customers get a kick out of taking photos of drinks and posting them? VW: Our Caesars are definitely photogenic. As soon as people get their drinks, the phones come out for photos. It’s so fun! Let’s hear about your merch section. When service people or other individuals come to the door, verify their credentials by asking to see some identification. • Get a home security system. Mulled Wine 750 mL bottle red wine Peel of 1 lemon and 1 orange 4 to 6 cloves 1 cinnamon stick 1 cup water 2 dashes nutmeg ½ to 1 cup sugar (to taste) 1 oz brandy (optional) Garnish: Orange and a cinnamon stick 1. To a saucepan, add one 750 mL bottle bold red wine, the peel of 1 lemon and 1 orange, 4 to 6 cloves, 1 cinnamon stick, 1 cup water, 2 dashes nutmeg, ½ to 1 cup sugar (to taste) and 1 oz brandy (optional). Matcha, Raspberry & White Chocolate Chunk Cookies Makes 6

Prep time: 15 minutes Bake time: 14 minutes Cookies should be simple, fun and delicious, and these are exactly that! Matcha green tea is the best quality green tea you can buy and it is considered a superfood due to its antioxidant properties. You don’t need much of this magic powder to impart a wonderful hint of flavour and a beautiful green colour to these chunky cookies. 125 g / 1 1/8 sticks unsalted butter 225 g / 1¾ cups plain/all-purpose flour 1 teaspoon fine salt 10 g / ¼ oz. matcha powder ¾ teaspoon baking powder 90 g / ½ cup minus 2 teaspoons caster/granulated sugar 90 g / ½ cup minus 2 teaspoons soft light brown sugar 1 egg

Toppings

60 g / 2¼ oz. white chocolate bar (the thick kind) 60 g / 2¼ oz. fresh raspberries, roughly torn in half Baking sheet, lined with greaseproof baking parchment. Melt the butter in a saucepan and leave it to cool completely. Preheat the oven to 220°C/fan 200°C (425°F) Gas 7. Sift the flour, salt, matcha powder and baking powder into a large mixing bowl. Add the caster/granulated sugar and soft light brown sugar and stir until evenly combined. Add the egg and the cooled melted butter and mix with a wooden spoon until the mixture comes together into a soft dough. Divide the dough into six equal portions and roll into large balls (or 12 medium balls if you want to make smaller cookies). Space the balls of dough out on the prepared baking sheet (they will spread as they bake) and flatten them down a little with your fingertips so that you can fit the toppings on. Break the white chocolate roughly into large chunks and dig three large chunks lightly into the surface of each large cookie. Gently push 2–3 fresh raspberries into the surface of each cookie. Bake in the preheated oven for 14 minutes. These cookies are unbelievable when served warm and almost straight out of the oven, but transfer them to a cooling rack if you are serving them as afternoon treats with a cup of tea or coffee.

Filled Mini Yorkshire Puddings

Prep time: 12 minutes Bake time: 15 minutes There is nothing more classically British than a Yorkshire pud! These are bite-sized but pack a punch from the creamed horseradish and the peppery watercress. For a vegetarian alternative, you could substitute the toppings for chopped roasted (bell) peppers with a sprinkle of feta. Vegetable oil, for oiling the pan 40 g/generous ¼ cup plain/all-purpose flour ½ teaspoon fine salt ½ teaspoon freshly ground black pepper, plus extra to serve 1 egg, beaten 50 ml/3½ tablespoons whole milk

To serve

4 tablespoons crème fraîche 2 tablespoons creamed horseradish (or to taste) 2–3 large slices leftover roast beef (or from a deli) Small handful watercress sprigs 12-hole non-stick mini muffin pan. Preheat the oven to 220°C/fan 200°C (425°F) Gas 7. Pour ½ teaspoon of vegetable oil into each of the 12 holes in the muffin pan and place in the hot oven for 5 minutes to heat up. Sift the flour, salt and pepper into a bowl and stir together. Make a well in the centre and crack the egg into the well. Beat in the egg with a whisk, gradually incorporating the flour until smooth. Gradually add the milk and whisk in until the batter has no lumps and all the milk has been incorporated. Carefully retrieve the muffin pan with the hot oil from the oven and divide the batter between each hole, approx. 3 teaspoons into each. Cook in the preheated oven for 15 minutes until the Yorkshire puddings have risen well and are golden. Transfer to a cooling rack to cool. For the horseradish cream, mix the crème fraîche and creamed horseradish together, adding more horseradish to suit your taste. Set aside. Cut the roast beef into 12 pieces. To assemble, make a little cut in the top of each Yorkshire pudding and tuck a slice of beef in vertically. Spoon ½-1 teaspoon of the horseradish cream over the top. Garnish each Yorkshire with a watercress sprig and finish with a little freshly ground black pepper. Serve immediately.

Red Velvet “Cup” Cakes Makes 8

Prep time: 30 minutes Cook time: 45–50 seconds These aren’t so much cupcakes as cakes cooked in a cup! We only use beetroot/beet powder to create our red velvet sponge, which can easily brown when baked, but there is no danger of that with this cooking method! 90 g/ ¾ stick unsalted butter, melted and cooled 1 UK large/US extra-large egg, at room temperature 90 g/scant ½ cup caster/granulated sugar 1 teaspoon vanilla extract 18 g/scant ¾ oz. beetroot/beet powder 2 teaspoons cocoa powder 110 ml/scant ½ cup sour cream 2 teaspoons baking powder 85 g/scant 2/3 cup plain/all-purpose flour Easy cream cheese frosting 100 g/1 stick minus 1 tablespoon unsalted butter, softened 40 g/3¼ tablespoons caster/granulated sugar 2 teaspoons vanilla extract 235 g/generous 1 cup full-fat cream cheese Edible flowers, to decorate Piping/pastry bag with a large star-shaped nozzle/tip (approx. 2.5-3-cm/1-1¼-inch) 8 microwaveable glass or ceramic mugs, approx. 6-cm/2½ inches in diameter and 10 cm/4 inches high Put the melted butter, egg, sugar and vanilla into a large bowl and mix well with a wooden spoon. Mix in the beetroot/beet powder and cocoa powder. Add the sour cream and mix in. Finally, sift in the baking powder and flour and mix thoroughly. Rest the mixture at room temperature for 10 minutes. Divide the mixture evenly into the heatproof glasses or mugs, about 60 g/2¼ oz. per cup, it should take up about a third to half of your cup. Don’t be tempted to overfill as these sponges rise a lot! Level out the tops with the back of a spoon. Cook 2 cups at a time in the microwave on maximum power (900W) for 45–50 seconds, then leave to cool. (If your microwave doesn’t go that high, cook your sponges for 10–15 seconds longer). Set aside to cool. For the easy cream cheese frosting, put the butter, sugar and vanilla in a mixing bowl. Beat with a hand-held electric whisk (or use a stand mixer with the paddle attachment) until light and fluffy, scraping down the bowl a few times. Mix the cream cheese in slowly just for a few seconds. Make sure you don’t overmix as the frosting can become sloppy. Put the frosting into the piping/pastry bag with the starshaped nozzle/tip. Pipe a large swirl on top of each sponge to cover. Decorate with edible flower petals and serve with spoons.
